Autumn is here! Warm up with these three cozy recipes that you'll be sure to fall in love with! SEPTEMBER 2021 | 11


Pumpkin Galette with Blue Cheese Ingredients: 1 pre-made pie crust 2 tbsp honey 1 tsp flour 1/2 cup pumpkin, diced 1/4 cup Maytag Blue Cheese, crumbled

2 tbsp olive oil 1 tbsp thyme 1 egg, lightly beaten salt and pepper to taste

Method: Preheat oven to 425 degrees F. Place pumpkin cubes in a baking dish. Drizzle with oil, honey and sprinkle with salt and pepper. Once the oven is ready, cook the pumpkin for 20-30 minutes, depending on the size you cut it. Keep in mind that it will be cooked again when it is encased in the pastry. Sprinkle flour onto a baking sheet and roll out pie crust. Scoop pumpkin into the center of the pastry. Top evenly with blue cheese and thyme. Once the galette is filled and ready, gently brush the crust with a well whisked egg. Place the galette on a lined baking tray. Bake for 35 minutes or until crust has turned golden brown. Remove from oven and set aside. Allow the galette to sit for 5-10 minutes before cutting or moving it. Enjoy!

French Onion Soup with Melty Midnight Moon® Source: Adapted from cypressgrovecheese.com

Ingredients: 5-6 Cups Yellow Onions, sliced thin 1/2 Yellow Onion, raw Olive Oil, 4 Tbsp Baguette Cogniac, 2-3 Tbsp (optional) Midnight Moon, sliced

Salt and Pepper Sage, Ground, 1/2 tsp Bay Leaf, 1 leaf White Wine, 1 cup Beef Stock, 6 cups Flour, 3 Tbsp Sugar, 1/2 tsp Butter, 3 Tbsp Cooking Oil, 1 Tbsp

Method: Heat a heavy, oven-safe, stock pot over medium-low heat and melt the butter over medium-high heat. Add the onions and sauté until well for about 30 minutes until caramelized. Stir every 3-5 minutes. Add garlic and sauté for 2 minutes. Stir in the flour and cook for an additional 1 minute. Stir in the wine to deglaze the pan, using a wooden spoon to scrape up any browned bits on the bottom of the pan. Add the stock, bay leaf, cognac and sage and stir to combine. Continue to cook until the soup reaches a simmer. Then reduce heat to medium-low, cover and simmer for at least 10 minutes. Discard the bay leaf and sage. Taste the soup and season with salt and pepper as needed. Pre-heat oven to 325 degrees F. Drizzle both sides of french bread slices with olive oil, and place on a baking sheet. Cook the bread in the oven for 15 minutes on each side.

Switch the oven to the broiler. Once the soup is ready to serve, place your oven-safe bowls on a thick baking sheet. Ladle the soup into each bowl, then top with a baguette slice and your desired amount of cheese. broil for 2-4 minutes, or until the cheese is melted and bubbly. Remove from the oven and serve immediately while the soup is hot and bubbly.

Pumpkin Farfalle with Gouda Ingredients: 1 clove garlic, minced 1 onion, finely sliced 1 Tbsp butter 3/4 pound pumpkin, cut in small pieces 1/4 Cup Vermouth or dry Sherry 1 Cup vegetable bouillon

4 ounces Pareggio Gouda cheese, grated salt and pepper to taste 1/2 tsp nutmeg pinch sugar roasted pumpkin seeds for garnish 1 pound farfalle (pasta bows)

Method: Peel the garlic and mince. Peel the onion and slice finely Saute the onion and garlic until glassy. Set the mixture aside until needed. Steam the pumpkin pieces until they are soft. Puree the pumpkin, onion, garlic and fennel together to be a smooth mass. Add the vegetable bouillon, and vermouth and season to taste with salt, pepper, nutmeg and a pinch of sugar. When the sauce is ready, bring a pot of salted water to boil for the pasta. Cook the pasta al dente. While the pasta is cooking, roast the pumpkin seeds in a dry pan until they begin to pop. Drain the pasta when ready and serve the sauce on top. Garnish with gouda and pumpkin pieces and roasted pumpkin seeds. Enjoy!

All Comté cheeses start in the pastures of the Haut Jura, where bountiful nature yields hundreds of varieties of flowers that find their way into the cow’s milk. The milk is collected in dairies where the cheese maker produces cheese rounds. These cheese rounds are then taken to the master cheese maker for maturing. During maturing, the master cheesemaker tests each Comté with a cheese borer to assess its maturity and texture. This regular testing and observation are essential for transferring the

rounds of cheese to the appropriate maturing cellars and obtaining the best flavors. The rounds are then kept in a fermentation cellar; this is when the living organisms inside and outside the cheese flourish most. The final stages of the maturing process take place in a slow maturing cellar and a storage cellar, when the rounds of cheese undergo most of their physical changes. The result of these special maturing techniques at the Fort des Rousses, give the Comté cheeses a nice creamy texture and a strong and refined combination of aromas that linger in the mouth.

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company’s formation by a French cheese producer named Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists for the French National Institute for Agricultural Research (INRA), the creation of the special industrial process called ultrafiltration was developed and successfully patented in 1969.
