CREMINELLI
In the 1800s, the Creminelli family had already been making cheese and charcuterie for generations. In the early 1900s, Francsco Creminelli practiced as a farmsteading charcuterie and cheese maker east of Milan in Gambara, Italy. His son, Giacomo, followed in his father’s footsteps and passed that knowledge on to his son, Umberto. After a childhood learning from Umberto, Cristiano began to take the lead on salami production. Under Cristiano, the Creminellis are officially recognized by the cultural ministry as an Artisan of Excellence. What IS GMO?
GMO is a genetically modified organism. This classification can be applied to both plants or animals if their genetic makeup has been altered in some way. Generally, this means that the DNA of the plant or animal has been altered, creating an unstable combination of genes that have not been subject to testing. The ultimate goal of this technology is to increase the yield or productivity of a plant or animal. Since this technology is relatively new, it is unclear exactly what kind of side effects could result from consuming GMO products. The National Science Foundation has been promoting and encouraging transparency when it comes to labeling products that are either GMO, made using GMO products, or are claiming to be non-GMO. To be certified non-GMO, the vendor and product must fulfill the following criteria*: • Finished products less than 0.9 percnt GMO content • Lifecycle feed requirements • Milk animals fed nom-GMO feed a minimum of 20 days prior to first certified milking and after • No cloned animals
What IS OrganIC?
Organic is a labeling term for food or other agricultural products that have been produced using practices that support farm resources, promote ecological balance, and conserve biodiversity. What this means is that any product claiming to be “certified organic” must meet specific standards set by the USDA (United States Department of Agriculture). A certified organic product must maintain or enhance soil and water quality while conserving wetlands, woodlands and wildlife. This can get confusing, however, because there are different legal claims that a producer can make on its labeling. Each of these standards mean different things, so when you see “organic” it is not always as it seems. We have made a basic breakdown of the claims that can be made and the meaning behind them: • 100 Percent Organic- any product that contains 100 percent organic ingredients. They can include the USDA organic seal and claim of “100 percent organic.” • Organic- any product that contains a minimum of 95 percent organic ingredients. Up to 5 percent of the ingredients may be nonorganic agriculture products not available as organic. They can include the USDA seal and claim of “organic.” • Made with Organic- a product that contains at least 70 percent organically produced ingredients. The other ingredients have to meet specific guidelines. Can state “made with organic” on label but cannot use USDA organic seal or represent finished product as organic. • Specific Ingredient Listing a product that is made with organic ingredients can specific so in the ingredient list and the percentage of organic ingredients. They cannot include USDA organic seal or the word “organic” on main labeling.
