Edible fats used for frying ProBase™ fats are food grade ingredients manufactured from fresh beef or pork raw material. The fats are highly stable and so ideal for frying as they maintain their characteristics even under high temperatures, e.g. 170-190°C. In addition the durability of animal fats is up to 30 percent better than that of plant-based oils/fats. Tested against vegetable oil Animal fats are preferred due to the superior flavor and texture they add to food. ProBase™ Beef Fat AT 20 is specifically developed for frying applications and has been tested by the Essentia Application Center against rapeseed oil at different temperatures. The test was done with commercial French fries prepared with sunflower oil and homemade pre-cooked French fries. The test concluded that ProBase™ Beef Fat AT 20 provided:

Healthier alternative ProBase™ Beef Fat AT 20 has a better acid combination than vegetable oil. ProBase™ Beef Fat AT 20 has a low amount of mono- and poly-unsaturated fatty acids, which should contribute to a more stable product in comparison with rapeseed and palm oil.
