An authentic boost for savory products ProBase™ is a series of stocks and specialty fats which deliver a basic flavor direction and impressive mouthfeel to a wide range of savory products.

The entire range is free from additives and can go directly into your application as a clean label ingredient.

The stocks are made from premium bones, trimmings and seafood raw materials from EU sources.

All products under the ProBase™ range comply with the highest food safety standards.

The stocks – available as pastes and spray-dried powders – originate from pork, beef, chicken, lamb or different kinds of seafood, whereas our specialty fats stem from pork, beef, chicken or lamb.

ProBase™ solutions make up the perfect building blocks for many soups, sauces, ready meals, seasonings and stock cubes.

What is ProBase™? ProBase™ stocks are concentrated flavors, derived through the slow cooking of bones and trimmings. This process releases their authentic properties which provide taste, aroma and a viscous mouthfeel.

The stocks provide an easy natural umami addition for use in a multitude of savory applications.

They are available as a convenient liquid paste. However, selected stocks are also available in powder form.

ProBase™ specialty fats are derived from bone marrow, tallow and fatty belly tissue.

Specialty fats

Our specialty fats give excellent depth and body to a wide variety of savory products Tailor-made products from different fats can be either fractioned or deodorized or both. When making a fraction of the basic fat we are able to increase the scale of the melting point. When deodorizing the fat we remove flavor compounds, this can be done to get a partly or fully neutral product. Furthermore, we can control the SFC (solid fat content). SFC determines when e.g., 70 % of the fat is melted at 20-30°C. Pork fat and beef fat can be combined in any way to tailor-make specific products, to meet customer requirements.

How to use ProBase™ All stocks and fats can be added in all savory products in the processing line or as an ingredient in savory mixes and blends. When making a solution in water it can be an advantage to mix ProBase™ powders with other dry ingredients to ease dispersion.
