As a concept and initiative for economic cooperation and development, "the Belt and Road" was proposed by Chinese President Xi Jinping in September and October 2013. "The Belt" refers to "the Silk Road Economic Belt" while "the Road" refers to "the 21st Century Maritime Silk Road". "The Belt and Road" spans the Eurasian continent, covering more than 60 countries and regions in Southeast Asia, South Asia, Central Asia, West Asia and the Middle East. The current GDP and trade volume respectively account for 30% and more than 30% of the world's total. As a distillery with the world's highest market value (since April 2017), China's national liquor Kweichow Moutai also exerts its influence in the world under the concept and initiative of "the Belt and Road". 「一帶一路」是一個經濟合作發展的理念和倡議,由中國國家主席習近平於 2013 年 9 月和 10 月分別提出。「一帶」是指「絲綢之路經濟帶」;「一路」 則指「21 世紀海上絲綢之路」,因此「一帶一路」是兩者的簡稱。它橫跨亞歐大陸, 涵蓋東南亞、南亞、中亞、西亞及中東的 60 多國及地區,目前生產總值佔全球 約三成,貨物貿易量亦佔全球總額逾三成。中國的國酒貴州茅台於 2017 年 4 月 成為全球最高市值的酒廠,亦在「一帶一路」的理念和倡議下,發揮著它在世界 的影響力。

n 2016, Moutai distillery exported 1,721.03 tons of Moutai liquor and Moutai series liquor, achieving

an export volume of 314 million USD. Its international markets mainly included Asia (accounted for 49.89%), Europe (24.56%), Americas (11.84%), duty-free (9.12%), Oceania (3.47%), and Africa (1.12%). These figures revealed one phenomenon: The growth rates contributed by the countries along "the Belt and Road" were very obvious. At present, Moutai has entered 26 of the countries along "the Belt and Road". Its sales in these countries accounted for 18.91% of global sales, of which ASEAN countries accounted for 71.11% of these countries. In particular, it was worth mentioning that with the opportunities of "the Belt and Road", in 2016, Moutai enjoyed a sales growth of nearly 90% in Central and Eastern Europe and newly developed distributors in such countries as Lithuania, Belarus, and Ukraine. Over the three years since "the Belt and Road" initiative was proposed, Kweichow Moutai has always been thinking about huge market demand for Mouta. However, due to production constraints, the market demand has not been fully met. Even in this case, Kweichow Moutai still plans to increase the sales of overseas markets to 10% in the next few years. The government has reached an agreement with the National Tourism Administration for the abolition of the quota system for the Hong Kong Group Tour Scheme with effect from January 2002. Initiatives will be taken to increase the number of Mainland travel agencies organising tours to Hong Kong. Moutai: A Tresure to the Masses Interview with Dr. JOSE Sunsay YU

Dr. JOSE Sunsay YU, in addition to the member of 10th and the 11th CPPCC Standing Committee, Hong Kong Bauhinia Chapter winner and Chairman of Board of the HKI Group, has a special identity – the supervisor of Hong Kong Moutai Club. Mr. Yu, who has been collecting Kweichow Moutai since 1960s, is a loyal Moutai supporter and witnessed the development of this Chinese national liquor brand in half a century.

Unintentionally Collecting to Famous Collector Yu was born in Shixi City of China's Fujian Province in November 1938. At the age of 12, Yu and his family immigrated to Hong Kong. Later on, he started his career in the textile industry. In 1957, the first China Import and Export Fair ("Canton Fair") was held in Guangzhou. The Chinese General Chamber of Commerce in Hong Kong received the invitation. As a member of the Chamber, Yu came to Guangzhou to attend this "China's Top One Exhibition" frequently, which made him have affinity with Moutai. Whenever Yu was back to mainland China, he always bought several bottles of Moutai. Many of his friends did the same thing. Yu says, “At the beginning, I had no intention to collect Moutai but thought Moutai was for drinking. The earliest body of Moutai bottle from his collection was made of opaque glass fiber. Those older ceramic bottles were difficult to be acquired because of the liquor evaporation. At Yu’s office and home, there are Moutai showcases displaying over one thousand different aged or different series of Moutai. In these collections, there are many trademarks of the old one, such as “Five-star”, “Sunflower”, which were no longer produced. In recent decades, he sometimes collected Moutai from his friends who cannot drink too much. Not only in Hong Kong and mainland China, Yu also expands his collection from overseas. When many overseas Chinese return home, they will always buy several bottles of Moutai. Yu often purchases or sends gift as replacement to gain rare Moutai as many bottles of Moutai are just put on the shelves and nobody drinks them. Many a little makes a mickle. In Yu’s over 1,000 pieces, over 100 of them are from abroad.

High-qualified Liquor has Stable Quality In these 50 years, Yu tastes innumerable liquors and builds up his own view on high-qualified liquor. When talking spirits, people will mention whisky and brandy. In Chinese Baijiu brand, Yu has the highest regards for Kweichow Moutai. "Good liquor should have stable quality. No matter in which age they are produced, they are able to maintain a fixed quality," Yu said. Why Moutai is the most popular Baijiu? People can always tell its unique jiang fragrance in different aged Moutai. However, the quality of other Baijiu brands probably is not fixed. 從無意收藏到收藏名家 1938 年 11 月出生在福建省石獅市的楊孫西,12 歲時隨家 人赴港定居,並以紡織生意起家。1957 年,第一屆中國進出口 商品交易會(此後俗稱「廣交會」)在廣州舉辦,香港的中華總 商會(簡稱「中總」)是受邀的對象。作為成員的楊孫西,在 1960 年代起已頻頻從香港前往廣州參加這個「中國第一展」, 他與茅台的結緣也始於那個年代。每當回到中國大陸,他總要買 一些茅台回香港。他中總的會員朋友亦是如此。楊孫西說,剛開 始無意收藏,只覺得茅台是用來喝的。當他納入最早的一瓶茅台 酒時,茅台剛運用不透明的玻璃纖維作為酒瓶的材料,年代更久 遠的陶瓷瓶裝已很難被收購到,即使有,酒大多數都蒸發了。 楊孫西先生的辦公室和家裡,都有一個茅台展示櫃。在這些 藏品中,有不少商標古舊的茅台酒,例如茅台五星、葵花這些不

2017 is the 20th anniversary of Hong Kong’ Return that brings the opportunity for whole city to join together and celebrate. As one of Hong Kong’s most popular tourist’s site, Lan Kwai Fong invited Moutai to cooperate and launch a “Lan Kwai Fong Happy 20th Party”, which will bring Moutai cocktail to the most prestige bars. The party is the first large-scaled street event in Hong Kong since the Handover in 1997 in celebration of the HKSAR establishment anniversary. 2017 年是香港回歸二十週年,也給全香港帶來了一個共慶佳期的機會。 作為香港的地標 之一,茅台與蘭桂坊共同舉辦「蘭桂坊快樂二十週年活動」,將茅台雞尾酒推向最具聲望 的酒吧。這個活動也是 1997 年香港回歸 20 年以來首次在本地舉行的大型街頭慶回歸紀 念活動。 42

Wahtiki Island Lounge comes with an impressive pedigree

– the bar’s founders are Shi Wah Lee and Philip Lee. Shi Wah Lee (the “Wah” in “Wahtiki”), the soul of Wahtiki,was born in Hawaii and has 45 years of experience in mixology and tiki bars, including a spell at the storied Trader Vic’s in London’s Hilton hotel.

As you step through a nondescript door on the third floor

of Seabird House, Wahtiki wafts you to the South Pacific with cane furniture, Polynesian motifs and ingenious subtle lighting which gives a feel of sunshine filtering through tropical trees.

There’s food from the islands to go with the drinks, and service is welcoming. It aims at revisiting the golden age of tiki and that’s where that pedigree comes in. Potent and packed with fresh fruit, these drinks bear no resemblance to the sickly sweet, watered down offerings too often sold as tiki drinks elsewhere. With the 20th anniversary party of Hong Kong’s Return in Lan Kwai Fong, Wahtiki relaunched one of the bar’s specialities China Touch, which made of Moutai and packed with complex, fresh and intense flavours, such as Scotch. Mr.

Lee said that he invented China Touch almost 15 years ago, and it is on the must-order list in his bar. “Mixologist should be like a doctor who can remember all the taste and effect of those ingredients. Moutai is strong and mixologist should know how to balance its flavor with other ingredients.” Hong Kong 20 is another cocktail that Shi Wah Lee tailor-made for the anniversary and also uses Moutai as main ingredient. Hong Kong 20 was full-flavoured and powerful. It is also made of Moutai and strong indeed, yet well-balanced. The two cocktails adapt the concept of “Yin” and ”Yang”, which target to different genders and ages. We had a short interview with Shi Wah Lee when he was mixing drinks. He said that to become a good mixologist, mixing speed is the most important thing. “No customers would like to wait 15 minutes for a cup of drinks, so you have to speed it up.” Shi Wah Lee invented a pouring technique which is able to mixing more than one cup of drinks at the same time, fast and accurate. Shi Wah Lee was the owner of several bars in the Southern China, and he has been a mixologist for almost 50 years. Now the master is retired but still active in inventing new drinks. In Hong Kong, Philip Lee is also well-known as the husband of local famous actress Myolie Wu.

Bar De Luxe The Wyndham Street cocktail bar is created by Brandon Chau and Roger Chan of Attire House, and award-winning bartender Hidetsugu Ueno of Tokyo’s legendary Bar High Five (world’s top 50 bar). The latter may sound familiar, following the bar’s twomonth stint over at The Landmark Mandarin Oriental’s MO Bar, where we got a taste of Ueno’s brazen bartendering style. His protegee, Yuriko Naganuma, is now heading up the Central bar to carry on the legacy of shaking up exquisite. Joining the 20th anniversary party of Hong Kong’s Return in Lan Kwai Fong, Bar de Luxe launched a new Moutai cocktail named “Blossom of Flowers”. This set of cocktails is divided into three cups, two shot cups and a martini cup, Yuriko Naganuma said that in the taste of this set of cocktails, it is best to drink the shot cups first, and then enjoy the martini cup, which can maximize the flavour of Moutai. This was the first time that Yuriko Naganuma tried Moutai. She felt that Moutai is very special in its taste, which is full of complex taste and rich aroma. Therefore she added Gin, Aperol, passion fruit juice, grapefruit juice, lemon juice and other ingredients. With Moutai’s complex and varied taste, this set of cocktails fully reflects the enthusiasm and vitality of Hong Kong. Yuriko cut lemon peel into a butterfly-shaped as garnish, above which has a star, inspired by the flag of Hong Kong SAR. Yuriko Naganuma also created two cups of small spirits, which have the meaning of "Cheers" to celebrate the anniversary, and coincide with Moutai’s brand image. In addition, Bar de Luxe as a Japanese-style bar, Yuriko Naganuma deliberately mixed the grapefruit juice with Shochu, in order to keep the Japanese atmosphere, but to secure the unique taste of Moutai.

As the wheels of history are always moving forward, many buildings may be buried by time. Unfortunately, they are either abandoned for many years without takeover or demolished for new construction. Despite old appearance, these buildings carry historical memories. Therefore, they may be revitalized today. For example, a former factory building is transformed into a refined hotel for guests, without losing its original memory of former glory. I'll sing you a song - I ask that you lend me your ears. Bells, drums, delicacies, jade - they are not fine enough; I only wish to be forever drunk and never sober again.
