or a first-class enterprise in the industry, the principal "responsibility" is, of course, to
provide the best products for the society. Other
responsibilities also include public welfare responsibilities such as poverty alleviation, education support and
environmental protection. In addition, it is also incumbent
upon us to make more efforts and take more responsibilities for the healthy development of the baijiu industry and the real economy.
The first is about the fundamentals of the baijiu industry.
With the current consumption level, habits, and trends,
the general fundamentals of the entire industry are tending to be better. Although the external environment is still
complex, yet the industry is unlikely to enter a recession or stagnation in the near future. Any high-quality baijiu brand
winning word-of-mouth reputation and consumer trust will
win the space and market, and its enterprise will continue to develop.
The second is about the ecology and pattern of the
industry's healthy development.
In recent years, the feature of the baijiu industry is that
market advantages and product resources are constantly
aggregating into the dominators' market. Large enterprises
with product, brand and capital advantages are profoundly changing the industry ecology, leading to more obvious "Matthew effect" and prominent polarization.
Nevertheless, we should believe that large enterprises
will not replace SMEs, and SMEs will not disappear
completely. It is not only the economic law, but also the
inherent requirements for the healthy development of the
industry. We are happy to see and support the development of SMEs. This is the ecology and pattern that a healthy industry should have.
It is abnormal for an industry to have only a few or
dozens of large enterprises left. The reason is that the
products of SMEs are also favored by some people. They all 12

have their own consumer groups and corresponding market space. Even if not prosperous, but they can survive, and
may be very profitable. We should believe in their ability.
From the perspective of the entire industry, SMEs are also indispensable, and their contributions are obvious to all.
In fact, for the recently very hot "Renmin Xiaojiu", about
two years ago, Moutai had appointed the venerable Ji

But we will not adjust the price at will, because it will bring the chain reaction to the industry. Therefore, we must be very cautious.
An enterprise's price strategy must be comprehensively
considered and scientifically handled. We should grasp the rhythm and precisely implement the policy according to
our own reality, timing, situation and local conditions, and should not blindly follow the trend or others' suit. There should be no vicious price competition in this industry.
People's confidence for a baijiu enterprise lies in its ability
of sustainable development, but not price increase. We
should concentrate on high quality, good brand reputation, and excellent service.
The fourth is about the rational choice of development. In the past two years, the leading enterprises in the
industry have generally maintained rapid growth, but this
rapid growth is unlikely to be kept all the time because it is
not in line with the law of economic development. The base
of large enterprises has been so large, and consumers do not like continuous price increase. Besides, some production
capacity is also constrained by multiple factors. How can the rapid growth be kept all the time?
Therefore, the speed of development will return to the
normal level sooner or later. We should understand this
rationally, and we should have this determination and selfconfidence as well. We also appeal to all sectors of society to treat us rationally and support us. Always expecting a
growth of 20% or 30% is impractical and a slight fluctuation or downward trend does not mean recession, depression or poor performance. Only rational growth can lead to sustainable, stable, and healthy development.
I firmly believe that as long as we are confident but not
pessimistic, there will be new development. 13

實體經濟的健康發展,作一些努力,多一些擔當,也應是我們 義不容辭的。
第一,關於白酒行業的基本面。
以目前的社會消費水平、消費習慣、消費趨勢,整個行業
普遍向好的基本面沒有改變。儘管外部環境仍然複雜,但行業
這些年,白酒行業的特點,是市場優勢、產品資源不斷向
頭部市場聚合,具有產品、品牌、資本優勢的大公司,正在深
刻地改變行業生態。隨之而來的,是「馬太效應」越來越明顯, 兩級分化現象突出。
要相信,大企業不會取代中小企業,中小企業也不會全然
消失。這才符合經濟規律,也是行業健康發展的內在要求。我 們樂於看見中小企業的發展,支持他們的發展。這才是一個健 康的行業生態和格局。
如果一個行業,只剩下幾個或者幾十個大企業了,這是不
不至於很快進入衰退期或者停滯期。只要是有品牌、有口碑,
正常的。其原因在於,中小企業的產品,仍然會有人喜歡。他

第三,關於價格調整。
就茅台來講,應該說價格還有空間。但我們不會隨意動價,
應來自於提價,也不是來自於提價。要把精力集中到抓品質、 樹品牌、講信譽、做服務上。
第四,關於發展的理性選擇。
近兩年,業界龍頭企業普遍保持了高速增長,但不可能是
常態,這不符合經濟發展規律。大企業的基數已經這麼大了, 消費者又不希望天天漲價,有的產能還受到多重因素制約,怎 麼可能無限期高速增長?
所以,發展速度總會回歸正常水平,應該理性認識這一點,
因為它會帶來行業的連鎖反應,必須慎之又慎。
也應該有這個定力和自信。我們也呼籲,社會各方理性看待我
自身實際,因時、因勢、因地,把握節奏、精准施策,不宜盲
稍微波動或者一旦下行,就是衰退、不景氣、業績不好。只有
一個企業的價格策略,必須綜合考量、科學把握,應根據
目跟風、任性攀比。這個行業,不應有惡性價格競爭。
外界對白酒企業的信心,關鍵是看可持續發展能力,而不

ith the establishment of 322 management
standards in 18 categories and 202 technical
standards in 14 categories, Moutai's ingenuity
inheritance has been upgraded from "verbal instruction and intuitive understanding" to standardized management. During the one-year production cycle, Moutai liquor
is made through various complex processes, such as two feedings, seven liquor collections, eight fermentations,
nine steamings, qu-making (qu, a necessary medium for
making Moutai) during the Dragon Boat Festival, sorghum processing during the Double Ninth Festival, airing, and
high-temperature distillation. Also including the processes of storage and blending, Moutai's making technique becomes the most complicated distilled liquor making technique in the world.
Based on this, from liquor-making, qu-making, blending,
to sales, anti-counterfeiting, scientific research and other
links, Moutai people always take the improvement of their
professional skills as the foundation of their career, and are willing to pass down the artisan spirit from generation to generation.
Li Baofang, Chairman of Moutai Group, stressed that to
ensure the production quality of Moutai liquor, we must
respect the wisdom created by our predecessors and pass
down the legacy left by our ancestors. "We must constantly absorb advanced technology and ideas and constantly
improve ourselves on the premise of sticking to the basic
laws and rules. This is what scientific development should be."
"Good Mentor and Friend" Convey the Artisan Spirit "We should by no means be lazy in the production of
Moutai liquor or simplify any necessary effort and procedure. We must stick to the traditional technique and carry forward the artisan spirit so as to convince consumers that we are making this bottle of liquor with care," Li Baofang said on August 6 this year at the annual production technology analysis meeting of 2019.

house was full of yellow mud outside and green mold inside. This was the first challenge given to Wang Zongliang by the new workshop. He decided to start with the environmental treatment. He recorded the daily temperature and solar

Today, the 44-year-old Wang Zongliang regards the
young people in the distillery as his third mentor. "I teach

酒廠擴建,梁明先挑戰新建班組,新員工不懂,她就帶頭
示範,手把手地教。「其實我想說,在制曲崗位 20 多年,帶
好徒弟也是我工作的重要組成部分,總不能在我這裡斷了茅台 技藝的傳承。」
在茅台制曲車間工作 26 年,梁明先一路從員工、副班長、
班長成長為曲師,其所在班多次獲得「特級班組」和「青年文 明號」稱號,2017 年還獲得貴州省「工人先鋒號」。梁明先
本有機會申請脫產曲師,但最終放棄了申請,因為她覺得留在 一線更踏實。
梁明先說,「我只是在履行自己的職責,乾好自己的本職
工作,有種說法叫『糧為酒本、曲為酒骨』,畢竟曲藥的質量 直接影響著酒的質量。嚴格每一道工序,就是對曲藥質量最大 的保證。」

原料源頭保障品質 在貴州仁懷,一直有「離開茅台鎮就產不出茅台酒」的說
法,凸顯出當地自然條件對成就茅台品質的重要性。
茅台鎮屬中亞熱帶濕潤季風氣候區,茅台酒廠地處地勢低
矮的河谷地帶,四週三山懷抱,海拔多在 500 米以下,形成 特殊小氣候,冬暖夏熱少雨,風小濕潤,適宜釀酒微生物形成 和繁衍。
作為茅台酒的「母親河」,赤水河地質層的紫色砂頁岩結
構,十分有利於水源滲透、過濾和溶解紅層中的有益成分。經 科學檢測,赤水河水無色透明,無異味,微甜爽口,含多種對 人體有益的成分,酸鹼適度,鈣鎂離子含量均符合要求。
在赤水河滋養下,沿岸特產一種有機糯高粱,是茅台醬香
白酒的關鍵釀酒原料。不同於其他高粱,這種紅纓子高粱因粒 小、皮厚、堅實、飽滿,被釀酒師傅形象地稱為「沙」。而茅 台醬香酒的 3 個獨特工藝,都與紅纓子高粱有關。
食品,在所有酒類產品中的品質表現皆可稱為上乘。2018 年,
投料,而兩次投料所用皆為紅纓子高粱,稱為「下沙」;茅台

與其他白酒一年四季都在投料不同,茅台酒一年僅兩次

boxes made by European luxury brands such as Cartier,
the brightly-lit museum, generating a sense of contrast and
many overseas countries, the concept of "private museum" is not quite popular in Hong Kong. The foundation of Liang
Yi Museum has blazed a trail for the development of private
dynasty furniture. He is also a fan for jeweled powder
Boucheron and Van Cleef & Arpels from the late nineteenth
century to the mid twentieth century, and his collection
is the largest in the world, including boxes once used by 33

Princess Margaret of the United Kingdom and Anita Mui, a
deceased celebrity in Hong Kong. All exhibits in Liang Yi
Museum are the Fung family's own collections, which were
once exhibited in the Palace Museum in Beijing, the National Museum of History in Taipei, Goldsmith's Hall in London
and AIAA in Hong Kong.
After finishing primary and middle school in Hong
Kong, Lynn Fung received a Bachelor of Arts degree from Northwestern University in America before pursuing a Master degree in King's College London, majoring in
English Literature and Postcolonial Literature, etc. She went back to Hong Kong after graduation to assist her father
with managing the family's huge collections. Lynn Fung's
knowledge about antiques was from her father. When she
was little, her father would tell her stories about the furniture if she was willing to. In comparison with stories about desks
and chairs, what mostly impressed her was the story about a yellow sandalwood bed brought home one day when
she was 8 or 9 years old. Her interest in antiques actually
grew with her age, "I rarely thought about what they really were when I was young". When she really began to dive
into relevant publications and academically research about
antiques was after the establishment of the museum. Every
visitor is able to appreciate the collections accompanied by
professional guides in the museum. Narrations introducing
each exhibit for each show were all written by Lynn Fung.
She said: "Why there were such chairs in Ming dynasty? Why this particular chair was only for the emperor? Why only
women could sit on that chair? Why this chair was engraved
with bat patterns while that chair was with dragon patterns?
Stories facilitate visitors to understand the collection.
The illustration is so important that I wish to provide our
guests with stories from different perspectives, and it is the
connection between what I have learned from school and what I am doing right now."
At 1980s, not many people understood the value of Ming
and Qing dynasty furniture, so Peter Fung got to purchase
the antiques in a relatively lower price when he first started to collect. In recent years, collecting antiques gradually
became trendy in mainland China, raising the value of the
antique furniture market, which made Lynn Fung realize the rarity of her family's collections. She wanted to share them
with more people, and then Liang Yi Museum came into the
picture.
According to Lynn Fung, there were new challenges
during the establishment of the museum, which also made the job more interesting. One of the challenges was that 34

most Hong Kong people could not make a clear distinction between galleries and museums, especially when the
museum is surrounded by stores. Lynn Fung would need to explain every time when people asked whether she
was working in a gallery. Liang Yi Museum is set up to be
a museum whose exhibits are not for sale, but the ground floor of the museum is open for profitable firms to hold
events. Therefore, to prevent people from mistaking Liang Yi Museum as a profit-making organization becomes
a challenge. Lynn Fung uses three words to define the
museum: "design", "craftsmanship" and "tradition". Just like Hermes, Louis Vuitton and Dunhill, these fashion brands are
not only selling luxuries, but also selling the craftsmanship with years of accumulation.
According to Lynn Fung, selecting Hollywood Road as
the museum address is based on her investigation of the
ecological environment here. She says that most people
who want to purchase furniture can be quite confused at
first; for example, they might not know exactly what kind
of furniture they want, they do not know the market price
or what does a good yellow sandalwood furniture look like. With all these questions, people can visit Liang Yi Museum to have a better understanding towards antique furniture
before making a decision. "If I go to a jewelry store and I know I might not afford the jewelries, I will feel stressful
when window shopping, even afraid of asking questions. However, the exhibits in our museum are not for sale, so
people can appreciate the furniture without stress. They can feel free to make enquiries." Museums and vintage furniture
stores constitute an integral system, benefitting the whole
community. For public education, "Liang Yi Forum" will be
held regularly in the museum, inviting artists, collectors and
scholars to conduct lectures on topics like "incense lore",
calligraphy, family museums in the Glided Age, European royalty's collections of Chinese silverware, etc.
In the future, Liang Yi Museum will mainly focus on
accomplishing three goals: to make a sizable and positive impact in Hong Kong, to raise the public's interest in
Chinese antique collections and to bring more exhibitions of international level into Hong Kong. 35

依藏博物館是香港一家私人博物館,位於香港著 名的古董街荷李活道。館中以明清家具和西式化
妝盒為主要藏品,傢俱皆為紫檀、黃花梨等上乘
木材所制,西式化妝盒更是世界頂級珠寶大師以名貴材質與精 湛工藝相結合的經典之作。馮依淩為香港兩依藏博物館館長, 管理著父親馮耀輝的收藏,其家族擁有龐大的明清黃花梨、紫 檀傢俱及歐洲古董珠寶粉盒藏品,收藏量位於全球前列。
荷李活道向來租金不菲,能買下該核心地段的物業,並建
有一座四層樓、近兩千平方米的博物館 ( 據悉花費近十一億港
幣 ),創辦人之實力可見一斑。館牆為黑白兩色,並配有殖民 地時期的百葉窗,館內嵌上深色的木椽,燈火明亮,現代與往 故感並存。私人博物館國外常見,但在香港還未流行,兩依藏 的成立開創了香港私人博物館的先河。
「兩依」的其中之「依」正是館長馮依淩本人,另外的一
個「依」是她的姐姐。兩依藏的標誌就是依字的對稱倒影。說
起「兩依藏」,不得不提及馮依淩的父親——創辦人馮耀輝先生, 他是香港金融界著名人士,冠有香港「股壇頑童」之稱號。除 了在金融界長袖善舞,馮耀輝癡迷收藏中國明清古董傢俱,尤
其偏好收藏黃花梨、紫檀傢俱和稀有沉香。建立收藏的這 30
幾年以來,他挑選藏品的原則是「美、珍、稀」,且只買不賣, 現今所擁有的傢俱超過 300 件,不少是大型的頂櫃、屏風和床, 成對的桌子、椅子等,可謂香港收集明清傢俱的先驅,並早已 成為全球收藏最多明清傢俱的藏家之一。他的另一大愛好是收

兩依藏建館在荷李活道,也基於對這邊生態的考察,馮依
理家族龐大的藏品。馮依淩對古董的認識來源於父親,小時候
淩說,來這邊買傢俱的很多人剛開始不一定知道自己想要什麼,
是爸爸講床的故事,以前如果爸爸講書桌、椅子都覺得沒什麼,
就可以在兩依藏博物館看了先。馮依淩在建館時也考慮到:「因

人理解藏品,我希望能從不同的角度給到訪者提供不同的故事, 這種闡釋很重要,這是我讀書和我現在工作相通的地方。」馮 依淩說。
1980 年代馮耀輝收藏之初,並沒有很多人認識到明清家

較輕鬆。我去一家很貴的珠寶店看,我知道我並不一定買得起, 參觀起來就可能會不太自然,不舒服,但我們的是博物館,所 以自然會自在很多,他們可以放鬆地問問題,如果是商鋪可能 就未必好意思問。」博物館和賣古董傢俱的店鋪是一個有機的 系統,互相之間對整個社區都有好處的。此外,兩依藏也醉心 公共教育,定期舉辦「兩依論壇」,邀請藝術家、收藏家、學
者進行專題講座,囊括了香道、書法、鍍金時代的家庭博物館、 歐洲皇室珍藏的中國銀器等。
如何在香港本地構成影響力,如何讓大眾提升對中國古董
藏品的興趣,如何給香港帶來更多具有國際化水準的展覽,是 兩依藏未來的目標。
具的價值,所以能以較為便宜的價格購入,近年來,中國內地 古董熱飆升,古董傢俱市場價值增長速度迅猛,才讓她真正意 識到家中藏品的罕有,並希望能與更多人分享,於是她和父親 開始考慮建立博物館。

Living in the southeast Guizhou province, the Miao people
will present buffalo horns filled with rice wine when greeting the guests. The locals usually pick the best-looking horns, scrape the outside with knifes before carving patterns on
the surface, and then paint the horns with different colours. When the guests arrive at the gate, the Miao ladies dressed in beautiful traditional costume will hold up a horn filled with 500 grams of rice wine to welcome the guests while
some other ladies will hang two to three eggs coloured in
purple on guests' necks, blessing them with good luck and happiness. To prevent guests from not drinking, the Miao
people will set up roadblocks at the gate so the guests will have no way out but to accept their extremely passionate
way of welcome. Those who disobey the rules will be made to drink one more shot as "punishment". Actually, the rice
wine served in the welcome ceremony is mostly homemade
by local families. The mellow and nutrient-rich rice wine can also clear the summer heat.

The Banquet at the Street
The Banquet at the Street 街心酒
"The Banquet at the Street" is a drinking event with a
great scale which hundreds of people will take part in. When the slack seasons come, the Hani people from Habo town
region in Yuanyang county of Yunnan province will start to
organize "The Banquet at the Street". This event symbolizes
"unity" and "luck". Usually, the locals will choose a relatively
broad street as the venue, and set up tables into a row about 100 meters long. Various types of vegetables and meat
are served, and people can sit at both sides of the tables,
enjoying the feast. The event will last for two days. Starting from 10 a.m., the whole village will gather together at the
banquet, drinking liquor, chatting and blessing each other. Anyone who has difficulties or new plans for the next year can bring out in the banquet so the others can offer help.
哈尼族的「街心酒」規模較大,一般都有上百人參加。每
當農閑季節,雲南省元陽縣哈播鄉一帶的哈尼族群眾,便開始 舉辦象征團結、吉祥的街心酒節。街心酒,一般選擇村寨中較
為寬闊的街心作活動場所。酒席擺有 100 多米長,桌上擺有 各類蔬菜和肉食,兩旁設有長條木凳供人坐飲。在為期兩天的

飲咂酒
Drinking with straws is a unique drinking style passed on
from ancient times. In southwest and northwest regions, the family host will carry out a big wine jar on festal occasions.
Five to even eight guests will sit around the jar and each use a straw to absorb the wine from the jar, just like drinking
soft drink. This way of drinking can warm everyone up and strengthen the communication between each other.

Circular Wine 轉轉酒
Drinking "Circular Wine" is a particular drinking custom
of the Yi people. When drinking "Circular Wine", everyone
sit on the ground in circles regardless of locations or status
and take a sip one by one from the same bowl. This custom is originated from a touching tale: Once upon a time, there
were three sworn brothers Han, Zang and Yi living together in the mountain. One day, Yi invited Han and Zang over
to dinner, and the rice left over from the meal turned into mellow rice wine the following day. They all wanted the

other two to taste the rice wine, so they drank in turns and always left some in the bowl before passing to each other.
However, the wine in the bowl has never been finished up. Later on, a god told them that the bowl would always be refilled with rice wine as long as they kept working hard.
Knowing that, Han, Zang and Yi began to drink freely until they were all drunk.

at present, piano can be considered as the most outstanding one in consideration of the flexibility it provides for the players in rhythm control and powerful performance

Beethoven spent his childhood under his father's strict

Vienna all his life. The third symphony, which was composed between 1803 and 1804, marked the mature stage of his
creation. Over the next 20 years, his numerous music works

F. Chopin brought
a breath of fresh air into the world of music. You
can hardly find a second
composer like Chopin, who has only composed for one
single instrument, the piano.
His obsessiveness with piano was
without doubt. Although Chopin's father was French, Chopin had a
passionate love for Poland, his mother's
homeland which suffered repeated setbacks. This continental country provided Chopin with endless inspiration during his music
creation. R. Schumann, another renowned
composer, once commented that Chopin's music
was like "the cannon hidden among the flowers", a
good metaphor that you can actually feel it through
his works. Chopin's music including preludes, Waltz,
sonatas and Polonaise has left an indelible trace in the
history of piano music. His 24 preludes were all terse and
forceful, expressing the strongest emotion and the greatest imagination space in such limited length. It is difficult for one to imagine how talented he was that he managed to compress all the emotional conflicts within 3 minutes.
Humans' vicissitudes of life were presented in the most
appropriate way. Chopin's heart, as well, was pure and true. After Chopin, the competition between great masters of

So far, the forms of keyboard music have experienced
the myriads of changes. These quadrate keyboards have

luggage on a vintage car. After a few laps of winding roads,
a castle hove in sight: I finally met the Gstaad Palace Hotel, which was loved by the royal families and stars. Although the hotel is named "palace hotel", it is not exactly a royal
mansion since there are no royal families in Switzerland, a
federal country. But the hotel has never disgraced its name. With hotel staffs' meticulous service, the guests are always treated and honored as royals.
In 1904, the first railway "Montreux" entered Gstaad,
bringing in loads of tourists. From then on, the tourism
industry in Gstaad began to develop rapidly. Gstaad Palace Hotel was officially opened in December, 1913, costing 2.5
million Swiss francs at that time. The hotel was operated in
the mode of family management, and the current manager Andrea Scherz is the third generation to manage the family business.
Stepping into the hotel room, I could smell a kind of
fresh wood aroma, the aroma of nature. The room is so
enormous that the dressing room alone can accommodate three people to change at the same time. No wonder those
movie stars from Hollywood to Bollywood all loved to come
here, enjoying the wonderful view of the Alps from the sunlit terrace.

As we were here, how could we leave without visiting the
traditional Swiss chalets where Heidi lived in the anime?
The Walig Hut in Gstaad Palace Hotel made my dream come
true. The word "hut" means "chalet", "log cabin". This chalet was built on the mountainside in 1786 with an altitude of 1800 meters. "Not many people have the opportunity to
enjoy dinner in the chalet on the Alps, you know?!" Phorum, my Indian friend failed to conceal his excitement. Our car slowly moved along the mountain road. The driver had
to stop and get off the car to open the fences just to get
through, and he would step off again to close the fences
after passing. He explained: "It is to prevent the cattle and sheep from running about".
Once we arrived, Maurizio, the Italian manager of the
chalet, greeted us in the local folk costume. His opening
sentence was interesting: "You guys are one day late! We
were celebrating a huge festival here yesterday. As the grass started to grow in summer, herdsmen would bring their remain retro, feeling quite heavy in my hand. The attendant kindly introduced that the hotel is equipped with new energy heating system; however, it is forbidden to use
air conditioners on the Alps. Those who feel hot can try
opening the windows and let the fresh air flow in. To be
frank, with mountains surrounded, the summer here is not hot at all. You even need to put on a jacket after sunset. I
deeply admire their willingness and efforts to protect the 64
livestock up here. We were dancing and singing, enjoying the cheese together. It was so much fun!" Oops, it seemed that we have missed "the Alpine Cattle Drive". In Switzerland,
herdsmen will bring their livestock up to the hill in summer and bring them back to the warm sheds on the foot of the
mountains before winter. It is a very special ceremony, but we will have to save it for the next time.
Mr. Maurizio led me to the observatory, pointing to the

Gstaad Palace Hotel also planned a special schedule
for us. Before railways entered Gstaad, carriages were the
main transportation tool that local people used. Under the
sunlight of early summer, we went back in time, visiting the old town region on the carriage. The chalets in the village
always stole my heart. Even for now, the busiest streets there still follow the traditional architectural style. Regardless of high construction costs of wooden buildings, local people
would not compromise to switch the construction materials. Their biggest concession was to build the first floor or only the foundation with stone materials, and remain using
the wood structure as the outer walls. Each family would
decorate their house with flowers as they liked and bring
a scent of freshness every time they changed the flowers. Saanen, a village nearby, has attracted fewer tourists
than Gstaad. I could only see a few ancient Swiss chalets. The walls were covered with writing in the High German
languages. When I asked my local friends about what were
written on the wall, they told me that the words were about the family's vicissitudes, letting passers-by to comment on. The Swiss are proud of their cheese. They don't say 
"cheese" but "Alpine cheese" when taking photos. Not all
types of cheese deserve this name. So, how do they produce the world-renowned cheese? With this question, I went to
the cheese farm in Wehren at early morning. Daisies started to grow as summer comes, embellishing the green grass.
Ruedi, the farm owner, said that the cheese farm here was
rooted in nature. The farmers think in the most natural and simplest way. Cheese making is a process of racing against
time, which must be completed before the end of summer, when the grass is fertile. When winter comes, everything is
dying, and cheese farmers have to find another way to earn a living. The production phase only lasts for a few months in a year, which is too short! For the cheese farmers, the
quality of the Alpine cheese equals to life and faith. Flowers 65

and plants will generate a unique taste after absorbing the essence of the earth. Only when the cattle and sheep feed
on the fertile grass can they produce milk with good quality that makes the Alpine cheese!
The production method of the Swiss Alpine cheese has
hardly changed since the invention. From generation to
generation, the Alpine cheese has been made in the same way: First of all, they use fire lit by the firewood to heat up
the milk. After the milk is heated, they use the yeast which is still taken from cattle's stomach to ferment the milk.
Compare to the previous, the only electrified process is
using the electric mixer to mix the fermented milk before complete solidification instead of mixing it manually.
Although Ruedi, the farm owner, is 71 years old, he looks
very strong. Regarding cheese making industry, the topic
I concern the most is whether the younger generation can
pass this craft on. Facing this question, Ruedi, who answered

鐵路交通進入 Gstaad 之前,馬車是市民常用的交通方式,在 初夏的陽光中,我們何不穿越一下,來個馬車的古城遊覽。我 是多麼熱愛著小村的木屋,即便現在,最繁華的街道,仍然是 全部遵循著傳統的建築風格,哪怕是木質房屋造價高企,當地 人最大的讓步頂多也是首層或者地基使用石頭建材,外牆仍任
性用木頭包裹,更可愛的是每家每戶都會根據自己的喜好用 鮮花點綴,膩了便換個顏色,好像家也煥然一新了。周邊的
Saanen 小村,遊客更稀少,只見幾間非常老舊的瑞士木屋,
上面用高地德語寫滿了字,一問當地朋友,原來是家族幾百年 來的興衰榮辱書寫其上,任由路人評說。

腰上,「在阿爾卑斯山的木屋裡享受晚餐,有多少人能夠做到
呢?!」 我的印度朋友 Phorum 難掩心中的激動。小車在山
間賽跑的過程,必須趕在夏季有新鮮草料的時候,待到冬來
掐指一算,一年也就幾個月,短得驚人!對於農夫們來說,阿 爾卑斯芝士的質量,是生命,是信仰。花草吸收天地精華,才 有獨特的味道,以全盛時期草料為食的牛羊,方能產出配得上 製作阿爾卑斯奶酪的好奶!
瑞士阿爾卑斯芝士的做法,從發明開始幾乎就沒有變過,
路上慢慢行駛,司機偶爾要停下來,打開攔在路上的木柵欄,
一代又一代,用同樣的方式製作奶酪——加熱牛奶,依然用柴
亂跑。」司機這樣解釋道。
也不過是有了電動攪拌機,當奶尚未完全凝固時,不再手動了
小心地將車開出幾步,再謹慎地將柵欄鎖上,「這是防止牛羊 一下車,小木屋的負責人 Maurizio 先生來迎接我們了,

Maurizio 先生帶著我來到瞭望台,指著遠方說:「你看,
這裡可以看到 Gstaad 和 Saanenland 整個谷地,天氣晴好時, 你可以看到所有的山頭,可惜今天有雲,遮擋了視線。」有雲

t is only a five-minute walk along stone-pave
streets from the Notre Dame Basilica, heart of the Old Montreal, to the Old Port by the Saint
Lawrence River.
With the Old Port, Montreal becomes what it is today.
According to historical records, in 1535 c.e., Breton explorer Jacques Cartier reached the St. Lawrence river where
Iroquoians ruled and used his smallest ship to sail up to
Hochelaga (now Montreal). After landing from where the Old Port is now located, he named the mountain in the
neighbourhood "mont RÊal" (Mont Royal in modern French). from which it comes later the name "Montreal". In 1611, French explorer Samuel de Champlain established a fur
trade base which maximized the benefit of ports and rivers. In 1642, French settler Paul de Chomedey de Maisonneuve
first founded Ville Marie. The fur trade expanded as the first

The shortest time to observe the landscape of Montreal in
detail will be 20 minutes (3 rounds) in one of La Grande Roue de Montréal's 42 air-conditioned gondolas. Inaugurated on the Bonsecours Island, this Ferris wheel is the tallest

Good news arrived that the south of the Yellow River had been retrieved. When I first heard of the news, my gown was soaked by my joyful tears. Looking at my wife and my child, I found their worries disappeared. In relief, I was all over the moon, wrapping up my books and ready to go home. On such a fine day, I sang out loud and filled myself with fine wine. The bright beautiful spring accompanied us on our way back home. Leaving from Ba Gorge, we then went through Wu Gorge. Passing by Xiangyang, we headed towards Luoyang. 劍外忽傳收薊北, 初聞涕淚滿衣裳。 卻看妻子愁何在, 漫捲詩書喜欲狂。 白日放歌須縱酒, 青春作伴好還鄉。 即從巴峽穿巫峽, 便下襄陽向洛陽。
Du Fu was the greatest realistic poet in the Tang Dynasty, and he was honored as "the Saint of Poetry" after the Song Dynasty. "The Recapture of the North and South of the Yellow River" was composed in the spring of 763,
when the notorious "An-Shi Rebellion" which has lasted for 8 years finally came to an end. When Du Fu heard of the good news, he was so delighted, and he wrote down this poem to express his gratification.
杜甫是唐代最偉大的現實主義詩人,宋代以後被尊為「詩聖」。《聞官軍收河南河北》作于唐代宗廣德元年(763 年) 春天。寶應元年(762 年)冬季,唐軍在洛陽附近的衡水打了一個大勝仗,收復了洛陽和鄭、汴等州,叛軍頭領紛

The deer are bleating, eating the herbs of the fields. I have here a group of admirable guests. The lutes are played and the pipe instruments are blown for them. The performers keep blowing the instruments till their reeds are moving. Baskets of gifts are presented to the guests. My guests treat me like a real friend, sincerely and kindly.
