s I write this letter from Texas, immersed in a five-week adventure exploring communities that are distinctly different yet surprisingly similar to ours, I find myself reflecting deeply - and admittedly a touch nostalgically - on our home, Ballito. Texans carry an unmistakable love and passion for their towns, cities, and state - something you immediately sense here. This pride isn't superficial or symbolic; it's intricately woven into their rich history, diverse culture, and genuine community spirit. You would notice it in the friendly nods exchanged between strangers, the proud conversations about their heritage, and their earnest belief that every individual contributes meaningfully to their unfolding story.
This experience prompted me to reflect on Ballito - our vibrant, youthful, and promising community. We might not yet boast the extensive traditions Texans cherish, but we possess something equally extraordinary: an incredible community enriched by our unique legacy of pioneering spirit and remarkable diversity.
But what does that mean for our future? It begins with intentionally embracing and nurturing all that is positive, celebrating our collective achievements, and never settling for anything less than fairness, equality, and justice. Speaking of pioneering attitudes, the inspiring journey of Sithembile Ndlovu comes immediately to mind. I first met Sithembile while serving as a judge in our local Chamber’s entrepreneur competition. Witnessing her vision, resilience, and dedication to her thriving business was deeply inspiring, and I’m delighted that we can share her story with you in this edition.
Genuine growth also thrives on authentic connections within our community. It was particularly meaningful for me to see Victor featured in our "My 032" section. Victor and I have shared memorable moments - including an attempt at smoking a cigar together - but that's a story best left for another time. It's locals like Victor, with their attitude and contributions to Ballito, who make me immensely proud. Their stories, along with others, embody the "magic sauce" that makes Ballito extraordinary.
Building the Ballito of our dreams requires ongoing effort. It demands staying connected, openly sharing ideas, and engaging in meaningful conversations - even the challenging ones. True joy, gratitude, and peace often arise from periods of struggle and uncertainty. For us, these challenges are opportunities to gain clarity, find common ground, and foster purposeful growth.
As you turn these pages, let's honour our community and embrace our responsibility to lay a lasting foundation for future generations. Fidelity SecureFire, a division of the Fidelity Services Group, has recently stepped into the forefront of fire safety with a unique ‘own first responder’ model. The service is reinforced by rapid intervention units of fire engines, water tankers and pumps to supply water. “Fidelity ADT armed response officers will also be ‘first responders’ as part of this critical
new service and have the required equipment to handle minor fires at homes, such as those involving generators or batteries,” explains Craig Burden, Ballito Branch Manager at Fidelity ADT.
Launched in March this year in KZN, Fidelity SecureFire introduces their newest recruit, their mascot Marshall, a fearless character designed to bring the "heat and
keep the team fired up”. Fidelity Ballito’s beloved mascot, Marshall, embodies the spirit of safety and heroism in the community. “Marshall is a brave and selfless hero who always puts the needs of others before his own. He is an expert at operating all sorts of firefighting equipment, from hoses and ladders to fire trucks and helicopters,” says Burden. Not only is Marshall loved by his

service. Instilling good values and inspiring their imagination,” he says.

Ballito and Salt Rock are our areas of focus, we have done our due diligence and risk assessments to identify areas and infrastructure to invest in, to safeguard the communities. This has come
through the 42 Community ANPR and overview cameras positioned strategically at all community access points as well as areas of risk. Further dedicated to the Ballito Branch is an Armoured Personnel Carrier (APC), a commercial fire truck in addition to a helicopter which is seen frequently patrolling over Ballito and Salt Rock communities. We acknowledge and value the great work of the Ballito and Salt Rock Neighbourhood Watch in assisting in patrolling the communities, in addition to the value the Ballito UIP and Ballito Beach Collective have added regarding the safekeeping and well-being of all public open spaces, especially our promenade and beautiful beaches we are blessed with.

His experience in fine dining refined his culinary skills and deepened his appreciation for the artistry behind every dish. Serves: 4-6
For the Eggplant Rolls
• 1 small eggplant
• salt, for sprinkling
• 2 tbsp vegetable oil
• 1 bay leaf
• 1 clove garlic, thinly sliced
• 1 tbsp chopped fresh parsley
• 1/4 tsp red chilli flakes
• 1 tsp fresh thyme leaves
• 1/2 cup ricotta cheese
• 1 tbsp grated Parmesan cheese
• 1 tbsp chopped fresh basil
• salt and pepper, to taste
• 1 tbsp chives
Béchamel Sauce
• 1 tbsp unsalted butter
• 1 tbsp all-purpose flour
• 1/4 cup milk
• 1 tbsp cream cheese
• 1 tsp honey
• 1 tbsp heavy cream
• a few drops of truffle oil
• a pinch of nutmeg
• salt and pepper, to taste
For the Neapolitan Sauce
• 1 tbsp olive oil
• 1 clove garlic, minced
• 1/2 cup canned crushed tomatoes
• salt and pepper, to taste
• a few fresh basil leaves
METhoD
1. Slice the eggplant lengthwise into thin slices, about 4mm thick. Lay the slices on a paper towel and sprinkle both sides with salt.
Let them sit for about 20 minutes to draw out excess moisture and bitterness. Pat the slices dry with a paper towel.
2. Preheat a grill or a large skillet over medium-high heat. Lightly brush the eggplant slices with olive oil. Grill the eggplant slices for about 2-3 minutes per side until tender and lightly charred. Set aside to cool.
3. In a shallow dish, combine the vegetable oil, bay leaf, sliced garlic, chopped parsley, red chilli flakes, and thyme leaves. Add the grilled eggplant slices to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes to absorb the flavours, two weeks is better.
4. For the Neapolitan Sauce, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about one minute. Add the crushed tomatoes, salt, and pepper, and simmer the sauce on low heat for about 15 minutes until slightly thickened. Stir in the fresh basil leaves and set aside.
5. For the Béchamel Sauce, melt the butter over medium heat
plain flour that thickens). Slowly add the milk while whisking to avoid lumps. Continue to cook, whisking constantly, until the sauce thickens, about 3-4 minutes. Assemble the Involtini
Roll the eggplant:
Preheat your oven to 180°C. Place a spoonful of the ricotta on one end of each marinated eggplant slice. Roll up the slice to enclose the filling. Repeat with all the slices. Drizzle the Béchamel Sauce with the twist over the melanzane (eggplant rolls).
Spread a small amount of Neapolitan Sauce on the top. Bake for 15 minutes and serve with parmesan shavings.
Adjust the level of heat in the Piri Piri sauce to your liking. Use different types of chillies or spices to change the flavour profile. Serve with your favourite sides or salads.

For the brine
• 1 tsp sugar
• 1 tsp salt
• 1 tsp whole black pepper
• 4 cloves garlic
• 1 litre water
For the Sacana Piri Piri Sauce
• 500g cayenne chilies
• 2 tbsp Sacana chillies
• roughly chopped red pepper
• roughly chopped onion
• 5 bay leaves
• 8 garlic cloves
• snob parsley
• 1/2 cup of olive oil
• 1/2 cup lemon juice
• 1 cup water
• 2 tsp paprika
• 1 tbsp chicken stock
• 1 tsp salt
• 1 tsp baking powder
For the vegetables:
• 4 sweet corn
• 1 butternut
• 3 sweet potatoes
• garlic butter for grilling
METhoD
1. Prepare the brine, combine all dry ingredients with one litre of water and bring to a boil. Cool down with ice. Once cooled, add the chicken and refrigerate for six hours.
2. Prepare the Sacana Piri Piri Sauce, blend all sauce ingredients into a rough paste. Boil for five minutes and let cool.
3. Prepare the chicken, preheat the oven to 220°C. Pat dry the chicken with paper towels. Add the Piri Piri sauce to the chicken.
4. Roast the chicken in the oven for 35-40 minutes. Pour the remaining Sacana sauce over the chicken once done.
5. Prepare the vegetables, boil the sweet corn, butternut, and sweet potatoes until medium-soft. Grill with garlic butter.
Serve the roasted chicken with the grilled vegetables and enjoy!

INGrEDIENTS
For the Carrot Cake
• 1 & 1/2 cup cake flour
• 1 cup brown sugar
• 1 tsp baking powder
• 1/2 tsp bicarbonate of soda
• 1 tsp cinnamon, ground
• 1/2 teaspoon nutmeg, ground
• 1 tsp salt, fine
• 2 eggs
• 2 tsp vanilla essence
• 5 carrots, medium, peeled, finely grated
• 2/3 cup oil, vegetable
• 1/2 cup walnuts, toasted, chopped
For the Cheesecake
• 2 x 250g cream cheese, room temperature
• 1/2 cup sour cream
• 1 cup castor sugar
• 2 eggs
• 2 tsp vanilla essence
• 1 tbsp cake flour
• 2 tsp lemon juice
• 1 tsp salt, fine
METhoD
1. Preheat the oven to 180°C. Grease and line a 23cm springform cake tin with baking paper.
2. For the carrot cake, combine and whisk the dry ingredients and the wet ingredients separately before mixing them together. Pour the batter into the base of the prepared cake tin.
3. For the cheesecake, beat the cream cheese and sour cream together until smooth before beating in the sugar. Beat one egg into the mixture at a time before mixing in the remaining
ingredients. Pour on top of the carrot cake batter into the cake tin.
4. Using a butter knife, swirl the carrot cake and cheesecake batters together in small figures of eight.
5. Bake for one hour. Allow to chill in the fridge for three hours before slicing.
6. Decorate with caramel sauce and toasted walnuts.
Serve with whipped cream or vanilla ice cream!

Art isn’t just something I create - it’s something I experience, something that transforms me.
What sparked your love for art, and how has it evolved?
When I was eight, my family moved to a farm, where I truly learned about life - death, renewal, and the miracles of nature. My creative eye developed simply by observing the world around me. Every day after school, I’d race home, kick off my shoes, and head straight to the animals and nature. I didn’t need a teacher; everything I needed to learn was right there.
Now, as an adult, I see how my upbringing connects me to the people who find me here. I get to share the magic I experienced as a child by recreating my childhood to share with others! What a gift that is. Twelve years ago, I picked up a paintbrush again and have grown immensely as an artist. Switching to oils added depth to my work, and my goal has always been to capture the soul of my subjects. I’ve learned to translate a three-dimensional world onto a two-dimensional canvas while conveying emotion. I’m also grateful for my husband Ant, whose
support has allowed me to chase my dreams - whether competing with my horses, creating art, raising children, or simply being myself. What a cool life! One of my most amazing realisations as an artist was painting two large-scale humpback whales, making me realise how deeply I connect with my subjects. The piece left me feeling heavy as if I was in the ocean’s depths. It wasn’t until I painted Stella, a massive sea turtle, that I felt the lightness. Painting, running, my beloved horses and my farm have all been part of my healing journey.

Horses have been a part of my life for as long as I can remember. I’ve always felt drawn to them, connecting on a subconscious level. With over 40 years of riding experience, my approach has shifted from “controlling” horses to working as a team. Each morning, a few hours after sunrise, you’ll find the horses lying together in peaceful harmony, resting and trusting one another. My amazing grooms respect this sacred moment and never disturb them. Ant always jokes that the horses live at a spa - and he’s not wrong! They’re so relaxed that between 12:00 and 14:00 when they come in for lunch, you’ll often hear them snoring. It’s a beautiful reminder of the safe, restful space they call home.
have you seen a link between creativity and healing in your life or others?
Absolutely. I’ve always felt a deep connection between creativity and healing, especially in the peace and release I experience when I pick up my paintbrush. While the process can be frustrating at times, I keep going. The most rewarding moment is when the "magic" starts to happen on the canvas - that’s when the struggle turns into something beautiful. That breakthrough is always my favourite part of a painting. For me, this mirrors life. We all face tough times, and how we navigate them defines us. Do we push through, or do we give up? Creativity has taught me resiliencethe ability to keep going even when things feel challenging and uncertain. And in that perseverance, growth happens.
What’s been the most rewarding part of your journey?
"Believing is seeing." The most rewarding part is seeing everything take shape, step by step. Learning patience, trusting the process, and believing in the dream have been truly fulfilling. Each step adds to my heart, shaping it in unexpected ways. Watching the vision come to life every day is the greatest reward.
Buzz Barn, founded five years ago at Fairview Estates, a short drive from Ballito, is a space where people can thrive. My goal is to bring together experts in riding, connection work, meditation, breathwork, and creativity. My team and I teach children, some as young as three and a half years old, to connect with horses - much like the bond depicted in Avatar. It’s a privilege to guide both horses and riders with love, compassion, and clear boundaries. This year, I’m building an Art Studio, opening even more exciting opportunities. The land itself has been a journey. During the earthworks for the “Grounding” area around the Barn, we uncovered hundreds of quartz crystals, giving Buzz Barn a peaceful clear energy - one that makes visitors never want to leave. Once an old sugarcane farm with poor soil, I felt called to plant a wildflower meadow. In its first season, it flourished into a haven for bees, butterflies, ladybirds, and countless other creatures. Every day, I am in awe of the life around me and love sharing this special space with others.
What’s next for you?
My dream has always been to create a space where people, horses, and animals can thrive, learn, and heal - a place of love, connection, and renewal. Every day, that vision grows. Buzz Barn continues to evolve, offering children’s parties, creative experiences like mosaicking for women, fun holiday clubs, and unforgettable riding adventures, from moonlit outrides to dam rides and scenic trails, Fairview offers over 20km of horse riding trails. My latest venture, “Liquid Gold”, is a connected breathwork meditation with our herd of horses, in these quiet, powerful sessions, the horses can choose if they wish to join, creating moments of deep connection and stillness. This dream keeps evolving, and I can’t wait to see where it leads next. Come and Join!

“You are in Thailand now”
on the corner of Eat Street in the Lifestyle Centre, you can find SOI 55 Thai Eatery. Sunlight streams through the open-air restaurant as Ballito’s summer shows off with clear blue skies and a balmy atmosphere. Already expecting the FabTeam’s arrival, Sheri and Chef Goo set up a cosy corner for us which looked out onto the outdoor seating area and caught some of that refreshing breeze flowing through the restaurant.
Open since September 2023, SOI 55 has some of the best, authentic Thai dishes. Headed by Chef Goo and his dedicated team, it’s easy to see why this is such a beloved spot. The combination of good food, an inviting atmosphere, and friendly staff make this a place you would want to visit many times over.
After we settled down from the excitement and took in the beautiful décor, we started off by looking at their drinks menu. Aside from the wellknown drinks, they also have a Thailand-inspired selection. The Sabai Sabai cocktail, made with imported Mekhong Thai Rum, and the cold variation of the Thai latte, especially caught our attention and our knowledgeable waitress, Lerato, confirmed our choices as some of their specialities.
As we chatted and sipped on our drinks, the food had arrived. Chef Goo had prepared a true feast for us, our table was covered
from one end to the other with various dishes. Born and raised in Bangkok, Chef Goo has been cooking since a young age and has extensive experience in hospitality. His love for and knowledge of cuisine really shone through as he explained each dish to us, effectively transporting us from Ballito, all the way to the streets of Thailand. From preparation to plating, you can see his influence and involvement in every step.
Spoiled with some of their iconic dishes, from the starter selection we were served chicken satay and pork belly variations of skewers accompanied by peanut satay sauce and a ponzu reduction, respectively.
There was also a spicy sauce called Prik Nam Pla, which was an infusion of fish sauce, lemon juice, chilli, garlic, and coriander. Those adventurous of us, tried the combination with the starters. From their dumpling selection, the pork, vegetable and chicken potstickers were snatched up for their amazing aroma and delicious filling.
I may be a bit biased, but the main dishes blew me away. Firstly, the crispy spinach salad with grilled chicken tossed in a dressing of Nam Jin, topped with toasted coconut, cherry tomatoes, cucumber, red onion and coriander was the team’s favourite. Even people who don’t like salad went back to try more, not believing what they were tasting.
You can’t forget the amazing curries, which are served with rice or wok-fried noodles. The green curry is a Thai favourite, with flavourful prawns, fresh vegetables, and infused basil. The chicken massaman curry is a
southern Thai curry rich in warm spices, potatoes, onions, and peanuts. Both curries were mildly spiced to suit different tolerance levels, but for those who love heat, the 'angry curry' is a must-try.
Last, but not least, are the beef drunken noodles. This was a dish with wok-fried noodles, peppers, green beans, basil, chilli and garlic tossed in soya sauce. Light, yet still filling. Safe to say, we were all well-fed. My team could not stop complimenting the various characteristics of every dish, from presentation to taste, each bite was an immersive experience. Of course nothing went to waste, the SOI 55 team supplied us with
“doggy bags” to take some of the magic back home.
Already buzzing with activity, the restaurant has exciting things planned for this year that patrons can look forward to. In addition to a new lunch menu launching soon, they are introducing a Tuesday “Ladies’ Night” and continuing wine pairing evenings to keep bringing you new flavours and experiences to enjoy.
Reluctant to break the spell, we left SOI 55 with full hearts and even fuller stomachs - some of us are already planning our return.

The Full Burpee – A heart-Pumping Essential Start standing, then drop onto your haunches and place your hands on the ground. Kick your legs back into a push-up position, perform a push-up, then spring back to your feet and jump high with your hands reaching for the sky. “It’s a full-body burner that builds strength and endurance,” says Lambie.

Glute Bridge – Fire Up Those hamstrings
Lie on your back with one heel on the ground and the other leg extended straight. Push your hips up using the grounded leg, squeezing your glutes at the top. “This one’s great for hamstring activation and overall stability,” Lambie explains.
Stand on one leg, hinge at the hips, and extend your other leg straight behind you as you reach forward. Engage your core to maintain balance. “It strengthens your hamstrings and challenges your stability,” he notes.
Drop into a squat position as if sitting on an invisible chair and hold. This move builds lower-body endurance and control. “It looks simple, but it burns,” Lambie says with a grin.

In a push-up position, drive your knees toward your elbows one at a time in a slow-paced, windscreen-wiper motion. This move works the core, shoulders, and abs. “The slower the better. It’s an absolute must for controlling core strength,” he adds.
These five exercises, done in a circuit, offer a complete, intense workout that builds strength, stability, and endurance. Lambie’s advice? “Fitness doesn’t have to be complicated. With consistency and the right movements, you can stay strong wherever you areeven in your own home.”
Behind every great business is a great partnership. For Dillon and Jocelyn, success meant growing together, balancing business with family, and overcoming challenges side by side. Their journey from a small coffee shop to a thriving brand proves the power of hard work, resilience, and partnership.
Let’s start from the very beginning. Dillon’s journey was anything but conventional. His story intertwines with his wife, Joss, whom he first met while working on the yachts. After years of travelling the world, they realised the lifestyle wasn’t for them and made the life-changing decision to return home to the small town of George.
Back home, Dillon’s mother ran a successful ceramics company, Wonki Ware, supplying bespoke ceramics to the likes of Nigella Lawson, Jamie Oliver, and Cindy Crawford. Dillon started working for his mom while figuring out his future, but deep down, he knew this wasn’t his calling. Together, Dillon and Joss made the tough decision to break away from Wonki Ware and chase their dreams.
A Dream, A Plot of Land, and a Whole Lot of hard Work
Determined to build something of their own, Dillon and Joss bought a small plot of land in George with their earnings from working on the yachts and opened a small, rustic, and “leaky roof” coffee shop inspired by their travels to Bali. It was a true labour of love - they poured their hearts, sweat, and savings into it. With just enough money to cover expenses, they had to become baristas, cleaners, waiters, managers, and owners - working seven days a week, often for 18 hours a day.
Dillon recalls the early mornings, cleaning the shop at 04:00 a.m., with loyal customers passing by and witnessing their relentless dedication. Those first five years were gruelling, but they never gave up and persevered through it. During COVID, social media helped them secure a tender to operate, turning their shop into a takeaway serving hospitals, lawyers, and essential workers. Personally delivering orders, they pinned pamphlets at local stores to attract more customers. “It was a humbling time for us,” Dillon recalls. Yet, even then, they searched for new locations, believing in a bright future. Penny by Penny, they built their brand and eventually hired employees—offering much-needed jobs to their community.
Dillon’s hunger for innovation led them to create something that set them apart from big coffee franchises - an experience that combined ceramics and coffee. They wanted to change the narrative of how people enjoyed time out - to truly live life creatively. And so, The Pottery was born, blending ceramics, glazing, firing, great food, coffee, and a Wonki Ware shopping experience—all in one space.
As their passion grew, so did the idea of expansion. They had always envisioned KZN as a potential location, and when Lifestyle Centre began developing Eat Street and The Studios, Dillon spotted the
perfect space. Years later, when they finally made the move, the very same store he had once eyed was available. It was fate.
Their decision to open in Ballito was both a business opportunity and a personal one - Joss’ parents were based in Underberg, making it a win-win to be closer to family. Without external funding, they sold their George plot to buy the Ballito space, reinvesting everything back into the business. Expansion wasn’t easy-opening in another province was a lesson in itself. With no budget left for a sign, every rand earned went towards getting their name up. “There was no plan B-success was the only option,” Dillon says. Today, The Pottery has five stores in South Africa; George, Camps Bay, Jefferys Bay, Stellenbosch and Ballito!
“This journey isn’t always straightforward, especially when expanding into new locations where we’re not locals,” Dillon reflects. “The key is adapting to the local culture rather than imposing an outsider’s perspective. We’ve learned that humility is essential - ditching the ‘big city’ mindset and taking time to connect with people. Small businesses are the heartbeat of these communities, and integrating into them, rather than competing against them, has been crucial.”
At its core, a business is only as strong as the people behind it. When you build with community in mind, it becomes more than just a business - it becomes a part of people’s lives. And that, Dillon and Joss believe, is what makes the journey worthwhile.
Balancing Business, Marriage, and Parenthood
Running a business as a couple - especially with two little ones in the mix - comes with its challenges. “We’re lucky to have found each other and to have figured out how to work together,” Dillon says. “There are things in the business that Joss doesn’t enjoy but that I do, and vice versa - we balance each other out.”
Their golden rule? Keeping the passion for work and home life balanced. “As a married couple in business, work inevitably comes to the dinner table. But respecting family time and knowing when to switch off is key,” says Dillon. “For me, it's tow-surfing; for Joss, it's being present with the kids. This venture is our lifestyle.”
There isn’t one. When asked if there’s a winning formula, Dillon laughs. “There’s no cheat sheet or A-to-Z plan. It’s about how you tackle challenges together. You’ve got to have both feet in the water and work really, really hard. From there, opportunities come, and the business grows. It’s in those moments - when everything feels like it’s about to fall apart - that pushing through together makes all the difference.”
For other couples dreaming of building a business together, Dillon’s advice is simple: “Be open-minded. Recognise each other’s strengths. Have a clear vision. But most importantly, never stop caring for and loving each other along the way.”

This journey started post-COVID, living in Ballito, when I realised I wanted more freedom in how and where I worked. I took a chance and asked my bosses if I could work remotely, and to my surprise, they said yes! That was my green light to pack my bags and turn the world into my office. I love what I do as an executive headhunter, placing senior-level professionals in top roles, and the fact that I can do it while travelling? An absolute dream come true! Travel has always been my passion, not just for the places but for the experiences, people, and unexpected moments that make a trip unforgettable. It’s taught me discipline (let’s be real, working from a beachside café isn’t always as easy as it sounds!), adaptability, and the importance of stepping outside of my comfort zone.
That’s what led me to create Where is Lucy?- my page which is a space to share my travels, my favourite finds, and the little things that make each destination special. I wanted to inspire others to explore, to embrace slow travel, and to see the world in a way that’s meaningful to them. Here are some of the highlights from my recent adventures through South East Asia.
Ha Long Bay: I did an unforgettable sunrise hike, which involved knocking on an old lady’s door at 5:00 a.m. and negotiating "coffee money" to pass through her house - only in Vietnam! She shuffled to the door, still dazed, waved us in, and we tiptoed through her kitchen in the dark to reach the hidden trail. It felt like a secret mission, and the climb rewarded us with one of the most breathtaking sunrises I’ve ever seen.
Ninh Binh: Known as the “Ha Long Bay on land,” the boat ride through Tam Coc and the breathtaking views from Hang Mua Mountain made this a highlight. Three must-do experiences: climbing Hang Mua, taking a boat ride through Trang An, and visiting the ancient capital of Hoa Lu. Getting here
Hanoi: A city of culture and charm. Egg coffee is a musttry, and wandering the Old Quarter feels like stepping back in time. My top three experiences: exploring Train Street, visiting the Temple of Literature, and going to the Cathedral.
via the overnight bus from Hanoi was an adventure in itself!
Sapa: The landscapes here are stunning, with rice terraces stretching as far as the eye can see. Four mustdos: hiking through the rice fields, trekking through the villages, taking the cable car to Fansipan, the highest peak in Indochina, and visiting Silver Waterfall, a breathtaking cascade just outside the town.
Hoi An: The Ancient Town is pure magic, especially at night when thousands of lanterns light up the streets.
Da Nang: Beautiful beaches, the Marble Mountains, and the famous Dragon Bridge.
Dalat: Known for its cool climate, French colonial architecture, and stunning landscapes. The Crazy House is a bizarre, dreamlike structure. It is
part art installation, part hotel, and completely fascinating so be sure to see it on your next visit.
Can Tho: Home to the floating markets, where locals trade fresh produce from their boats at sunrise. It makes a perfect weekend trip, and the overnight bus experience from Ho Chi Minh to Can Tho is an adventure in itself.
Nha Trang: It's a dream. A true exotic beach location.
Marina Bay Sands: Incredible views from the SkyPark. Gardens by the Bay: Supertree Grove and Cloud Forest are absolutely beautiful.
Hawker Centres: A food lover’s paradise, from Hainanese chicken rice to chilli crab, you will be spoiled for choice.
Chinatown & Little India: Vibrant cultural hubs offering incredible food and history. Singapore River Cruise: A beautiful way to see the city's skyline at night.
Manila: Explore Intramuros, visit Rizal Park, and try a local Jeepney ride.
El Nido: Island hopping in Bacuit Bay, Nacpan Beach, and the Secret Lagoon.
Coron: Kayangan Lake, Twin Lagoon, and diving to see the WWII shipwrecks.
Bali

Sithembile Ndlovu, known as the Mushroom Queen, has a background in business management and always knew she wanted to start her own venture. However, mushrooms weren’t initially part of the plan. Having seen foraged mushrooms being sold on the side of the road, sparked her interest in providing a safer product - so she became the first female mushroom farmer in her community.
A vision and determination drove one passionate woman who dared to do something different, becoming the first female mushroom farmer in her community.
Her journey began in a garage, where she cultivated her first batch. Sadly, they did not sell well because the community did not understand which mushrooms were safe to eat. Instead of giving up, she saw it as a learning curve. Sithembile later moved her operations to two small rooms in the Assemblies of God church, where demand and sales to the right market outgrew the space quickly. Starting with just four stores, she now supplies nine local stores, all thanks to awards she received for her work, which has created recognition for her products.
Sithembile dreamed even bigger, looking for larger spaces to meet the increasing demand. Trying to transition from the church space to a tunnel-based farm was a significant step forward, but even during tough times of theft, she focused on rebuilding what she had. “Mushroom farming isn’t child’s play. The preparation work is tedious,” she explains. Power outages at the church also meant equipment failures, yet, her commitment to pushing through adversity has only strengthened her resolve.
In an era where more families seek cleaner, sustainable food options, Sithembile is committed to organic farming. “We need to prioritise people’s health over profit,” she states. Her mushrooms are grown without harmful chemical pesticides, ensuring a truly organic product. Sithembile won the prestigious entrepreneurial competition held by the Ilembe Chamber of Commerce and it became a turning point in her journey. It was an opportunity for growth. “The competition aimed to develop entrepreneurs, and I truly believe I grew the most through it,” she says. Beyond farming, she believes in empowering her community. She provides training and job opportunities, engaging with local families and businesses to create a strong support system. Her 15-year-old son has taken an
interest in lab work, and she welcomes other young people to her farm, offering them hands-on skills that could shape their futures. Her siblings have also played a vital role in her journey. They dedicate their time to helping with daily farm operations to ensure the business thrives. “Their support allowed me to rest, so I can keep going,” she says gratefully.
The next step in her journey involves scaling up production. She has already initiated lab processes to produce her own seedlings. She is currently focussing on oyster mushrooms but plans to expand into other varieties. While she already supplies major retailers like Spar Lifestyle, Spar Stanger, and Fruit & Veg Stanger, her goal is to establish direct relationships
with culinary professionals. “Once I have enough products, I want to supply local restaurants and top chefs,” she says with confidence. Sithembile’s vision extends beyond national borders. Although she had to forgo a training opportunity in India due to personal loss, she remains connected to the global agricultural community. Conversations with an AgriTech specialist in America have sparked her interest in vertical farming, an innovation she hopes to incorporate into her business.
Sithembile’s story inspires aspiring entrepreneurs. It proves that with resilience, vision, and community support, any dream - no matter how unconventional - can grow into something extraordinary.

outstanding art, celebrity chef food, and a magnificent Midlands ambience are some of the draw cards to this year’s Art in the Country presented by SPAR at the picturesque Harrington House in Hilton from May 22-25. In its fourth year, Art in the Country will cement its reputation as KZN’s premier exhibition showcasing 64 of the country’s top artists under the canvas splendour of giant Bedouin tents.
The mix of artists assembled by convenor Kathy Jacob straddles most genres with the 2025 edition boasting some transformative avant-garde influences. Consider the series of live burning events by artist Mandy Johnston in a riveting display of fire that forges an emotional engagement in the art that exists only in the moment of performance. Or the unique underwater art of Ukrainianborn Olga Nikitina, a PADI-accredited diver, in which the creative process of physically painting underwater becomes part of the aquatic environment.
The gallery of artists represents both familiar faces and first-time exhibitors. They include up-and-coming print maker Siyabonga Ngubane and sculptor Emma Halford who will join a host of top-selling painters including Simon Addy, David Johnson and Lesley Ireland Mathew. As has
become the norm, the convivial setting under canvas is enhanced by celebrity chef Jackie Cameron’s breakfast and bistro menus to the accompaniment of live music by local talent and a full bar service.

Some years ago, my gut and I had a serious falling out. After a brutal bout of food poisoning, I found myself struggling to eat foods I once loved. I’d double over in pain most days, desperate for a reprieve. It wasn’t long before I was diagnosed with Barrett’s Oesophagus, and around the same time, I discovered I had SIBO (Small Intestinal Bacterial Overgrowth). Talk about ‘no half measures’!
I took the diagnosis badly - a complete derailment from my work routine and a social limitation that would restrict me and ruin my quality of life forever. Or so I thought. For someone who loves to eat, and to cook, I basically had to rethink everything I knew about food and gut health. My usual go-to ingredientsgarlic, onion, tomatoes - suddenly became the villains of my diet. And fermented food? Don’t even get me started: these pH buddies that are unthinkably good for you are not for me! Any foods that had the slightest whiff of ‘ferment’ were the new frenemies of my fridge. Through trial and error, tons of research, and a whole lot of pernickety eating, I found my gut was not happy - she clearly had things to say and I had no choice but to listen.
When I started this journey, I quickly realised that gut health isn’t lapping up every hashtag or fad to feel better, neither was it about avoiding certain foods like the plague. It’s about listening: hearing what your gut is saying and finding what works uniquely for you. Here’s what I know: no two guts are the same. We’re all born with sterile guts, which is an equal playing field, but over time, we develop a diverse and distinct brew of bacterial species. This changes our chemistry dramatically. One woman’s kimchi could be another
woman’s toxic boss in the digestive system. Our bodies are that different! And we need to wake up to the fact.
The first conversation I had with my gut was ‘deep and meaningful’ about FODMAPS and good carbs. We figured out which foods did wonders for me and which ones made me sick. I discovered a whole new world of eating, by consciously choosing what my body wanted first, and not what everyone told me to pick.
Then came the ‘how’ of my food choices: how to preserve them, prepare them, and consume them. Turns out, this kind of conscious living had a whole name of its own: the Mediterranean Diet. Not so much a way of eating, but a way of living your life in the slow food zone; taking time to know your food, relaxing with your meals, and stretching out your lunchtimes. And it worked. If there’s one piece of advice I’d share with anyone struggling with gut issues, it’s this: listen to your body. Your gut is your gut, nobody else’s. Respect it, love it, listen to it. If something feels off, pay attention. In the end, good health (like good food) is all about balance, enjoyment, and tuning in to the signals.

I’ve always been someone who gets involved in any community I live in. My wife constantly tells me that I need to take on less. Easier said than done. For me, however, one of the biggest differentiators in communities that are generally thriving is a strong sense of civic duty and active participation.
The best communities aren’t the ones where residents sit back and wait for the government to fix everything. They’re the ones where people and officials work together; where residents take ownership of their spaces and help drive solutions. Public apathy, the mindset of waiting for others to step in, is one of the biggest threats to functional communities. It allows poor governance to thrive, service delivery to collapse, and frustration to build. Yet, despite the complaints, many people still don’t step up. The bottom line is that there is no magical “someone else” who will always swoop in to save the day.
I’ve seen it time and again. When people disengage, things can go downhill. Contrary to some beliefs, the colour of the political party logo is also not a guarantee of transparency and service delivery. Expecting any official to just do their job without being held accountable is wishful thinking. Also, just assuming that a small group of activists or ratepayers’ associations can carry the weight of an entire community also isn’t fair. The more people step up, the more power a community has to demand better services, and transparency, and create positive change. In essence, the problem isn’t that people don’t notice what’s going wrong, it’s that they do, but think, “That’s the government’s job”, or “I’m too busy, someone else must sort it out”, or even, “What difference can I really make?” So, they wait. Meanwhile, the few people who do step up, often the same handful in every community, find themselves overwhelmed, exhausted, and, frankly, frustrated that others won’t pull their weight.
Public participation is a constitutional right that should be exercised by all South African citizens. The Municipal Systems Act clearly states that a municipality consists of three parts: political structures, administration and the community. Our right to public participation is enshrined in both the Constitution and the Local Government Municipal Systems Act, which deals with public participation in local government.
So, what can you actually do? I get it, life is busy. Not everyone has the time, or energy, to attend every meeting, draft letters, or rally protests. Getting involved doesn’t however have to take over your life. Small actions, done consistently, make a difference. Show up at meetings, even just once in a while, to stay informed; join or support your local residents' group such as The Dolphin Coast Residents and Ratepayers Association (DOCRRA), who generously give freely of their time to represent the community; report service delivery issues; hold elected officials accountable by asking questions and demanding transparency, no matter your political leaning; and help with community projects such as clean-ups, safety initiatives, or fundraisers.
So, if you’re reading this and thinking, “Should I get involved?”, the answer is yes. Do something. Anything. Because if we all wait for someone else, we may be waiting forever.
