During the month of May, Chef Siddharth Krishna will take you back intime to the Royal court of Rajasthan with a unique menu created especially for the occasion. Following the success of Kings & Queens Nights in 2013 and 2014, Spice Mela will be hosting Kings & Queens III this year focusing on the royal courts of Rajasthan during the entire Month of May. Known for its lively kitchen the cooks of the Rajasthan courts where called ‘maharaj’ or ‘purohit’. Their recipes were often closed guarded secrets know only to the particular cook who only pass it on to his son, making it a family heritage. Although most were lost forever as no written records were maintained, other where passed on until our times, some reached Chef Siddharth through his great-grandfather (lawyer to the Rajasthan Royal family) and others through Chefs of the Rajasthan area. Cooking for the royals was considered to be an honour and to impress, the cooks were allowed to experiment and try out new unique dishes. Dishes so unique that a large sum was spent to
get the best of ingredients. Stories of chicken and peacocks being fed on gold, pearls and rubies so that they could be fit for the royal table abound. The lavishness of their food was quite similar to the Mughals or that of any other royal kitchen. Gold and silver utensils, the décor of the room and the elaborate presentation of the meat dishes created a regal mood. The best-known Rajasthani food till date is the combination of Dal, Bati and Churma. Since there is always a scarcity of water in Rajasthan, more of milk, buttermilk and ghee are used in cooking. The food in Rajasthan is known for its spicy nature but sweets such as Lapsi, Ghevar, Mawa Misri, Moong Dal Halwa and Suji Laddoo keep the balance. A Taste of the World at The Galleria Foodies in Abu Dhabi are going to love being in the capital this May as the popular Restaurant Month returns to The Galleria on Al Maryah Island. Friends and families can prepare to tantalise their taste buds, embark on a culinary journey around the world and enjoy family-friendly activities, running until May 31. Planners are convinced that Dubai will definitely achieve its target of attracting 20 million tourists annually by 2020. Observers point out that the growth of tourism to Dubai is also largely influenced by the sector of Incentive Tourism. How about a.m. to p.m.?FACT caught up with songstress Christina Milian ahead of her live show at Bushido Restaurant and Lounge in Bahrain… Hi Christina! It’s been nearly 14 years since you released your self-titled debut album – how has your style and approach to making music developed over the years? I’ve experienced so much more. I have more to write about more to say! I’m having fun. I want people to hear me be honest about the things that matter to me. Music is therapeutic. Tell us more about your new sound and what to expect from the new album? A more mature yet free Christina Milian. I like to turn up and have a good time but at this point in my life I have enough experience to back up what I have to say in my songs. I like to look at life through the eyes of a child in a way where I like to experience things that I’ve already experienced, in a whole new way. Is there anyone out there that you really want to collaborate with? I would love to work with Beyoncé - who wouldn’t want to work with Beyoncé? She’s amazing! She would be the dream collaboration. She’s talented, she’s an inspiration, and she’s already the absolute best! In the time that you’ve been raising your daughter Violet and working on new material, who has had a profound impact on the woman you are today? I would say my mum. She’s a hard-working woman. She’s strong, she’s been through so much as a mother and she’s been a great example as a businesswoman. So I’ve learned a lot from her. We’re also big fans of your reality TV show ‘Christina Milian Turned Up,’ – what’s it like having cameras follow you around? I like to go about every day life and not stress out when I’m shooting the show. But to be honest with you, it can be very stressful when there are moments that you don’t necessarily want to show on camera, however those moments show your vulnerability, which
is the realness. And I want it to be as real as possible. In the end it’s always fun and I’m really proud of what I’ve seen thus far. We have a second season we’re about to shoot. I’m so excited! The most important lesson you’ve learned about being in the music industry… Success or failure, in the end the only person you can blame is yourself, so do what you want, be the best at it, and have fun! Your most memorable moment from your music career... Meeting Janet Jackson. She was my idol growing up and when I met her at 18-years-old, she was so nice. I cried and cried and cried because it was so cool. I never thought I’d get the opportunity to do so and that memory has always stuck with me. Is there anyone special in your life right now and what would be your ideal date? Yes there is. My ideal date would be a day away from everybody where there are lots of activities involved. It could be something as simple as going golfing, going to the movies, or going to eat at the beach. Anything that involves activities is always exciting in a relationship. Describe your style... Sexiness, sporty, street, anything that will make me feel comfortable but sexy at the same time, I’m all about it. At the end of the day there’s no rules when it comes to my fashion sense. Any advice for upcoming musicians? Do your thing, do what you love. You have social media at your reach so find any and every opportunity to build your fan base, it’s easier now. And writing is very important, publishing is very important, it’s great for people to get to know who you are but it’s also good in the long run for when you’re old and you want to retire. Have you got a message for your international fans? I love you guys! I love you guys! I love you guys! You guys have always been so good to me. I can’t wait to tour overseas again and to make my mark on the world once again. Thank you so much for your support and always sticking with me. What’s coming up for you, for the rest of 2015? The southern Buenos Aires neighbourhood of La Boca is massively famous for Caminito, the colorful artists’ street by the water. Caminito is the work of local artist Benito Quinquela Martín. With its cobblestones, colorful corrugated-iron houses and use of traditional street lamps, these days Caminito is full of touts, hawkers, hustlers, overpriced knick-knacks and food. A four-hour drive from Perth is Wave Rock, a 14-metre-high and 110-metrelong granite formation shaped like a tall breaking ocean wave. When travelling with a DSLR camera, do not leave the lens attached to the camera body. It may damage the threads if the camera moves.

the oAsis of flowers AnD Colours Dutch artist Zhuang Hong yi’s work will be displayed in a solo show at Salwa Zeidan Gallery. The Oasis of Flowers and Colours is Zhuang Hong Yi’s debut solo exhibition in the Middle East, held under the patronage of Sheikha Alyazia bint Nahayan Mabarak Al Nahyan and HE Jennes de Mol, Ambassador of the Kingdom of the Netherlands to the UAE. This unique exhibition, in the presence of artist and in collaboration with London-based gallery The House of Fine Art, will take place throughout May in the gallery’s showroom within The Collection, St. Regis Saadiyat Island Resort. Zhuang Hong Yi’s is well known for creating unique, three-dimensional artworks combining acrylic and handmade rice paper on canvas. His art needs little introduction: he has been regularly auctioned in notable auction houses such as Sotheby’s and Christie’s, with his art being present in many museums and numerous collections all over the world. “Ever since we started promoting this artist during last year’s Abu Dhabi Art, we have had amazing feedback from the UAE art scene,” explains Vanja Rontini, gallery manager. “The interest ended up being so high that we have decided to organise the show earlier
than anticipated, and the artist was kind enough to produce 24 pieces exclusively for this occasion.” Throughout the years, he has received a reputation of the artist particularly “liked by royals and celebrities,” with some of his known collectors being the King of Morocco, Prime Minister of Qatar, as well as many Hollywood celebrities. Why do you think it’s important for people to come and see the works on display at the exhibition? Museums can be intimidating places – for everybody. People are worried that they won’t understand the art, or that their children will be bored. Marvellous
Tell us about the process by which the artefacts and items being displayed were curated? Curating an exhibition begins at least two to three years before the opening, when the curators look through the museum’s artworks that support the exhibition narrative. This process is part of our normal collection research, where we are constantly our artworks and the stories that they could tell. Sometimes, as in this case, curators have an idea for an exhibition many years before they actually have a chance to work 70

on it. I have wanted to explore ideas of narrative and storytelling in Islamic art for a few years now. What challenges, if any, did you face to make this exhibition happen, and how were they overcome? Every exhibition has a unique set of challenges – often ones that you didn’t anticipate precisely, whether they are logistical or philosophical. The important thing is to keep sight of the original goal; to exhibit artworks, which engage diverse audiences, tell a compelling story, and encourage people to look at art and think about what it means to them.

It’s colourful and inviting, and the only thing that you need to know before you walk in the door is what a story is. Have you ever heard a story? Have you ever told a story? Then you’re perfectly prepared! It’s a friendly approach to our amazing collection of artworks at MIA. Tell us about some of your favourite or most interesting pieces on display and which stories they reference… Well, I love all of the objects – that’s why I chose them! Some of the highlights for me include the Franchetti tapestry (CA.2) in the “Air” section, a glorious silk textile that has an absolute horde of animals on it, including some beautiful phoenixes and peacocks. There is also an astrolabe (MW.354) in the “Water” section that is much more than a navigational device – if you look very carefully you will see me think about who would have used this instrument, and the wonders and dangers they might have seen at sea.

How long did it take to curate all the items and what factors went into your decision making process? Curating an object list for an exhibition takes around one year. First, curators choose artworks that best tell the story of the exhibition. Then, they speak with lots of other departments – like Conservation, or Galleries – to decide together that the objects are in good condition; can be displayed correctly in the galleries etc. MIA is a very collaborative place and an Why do you think the exhibition will appeal to visitors? Stories, across cultures, appeal to a very deep need for human connection. Oral traditions are how we passed on information for the great majority of human history. So that timeless fascination with stories is obviously appealing. Then we have selected sea monsters, dragons – that will also, we hope, excite and interest our visitors. Who isn’t interested in dragons? to showcase this exhibition? All of the objects on display are from the collections of Qatar Museums. These are artworks that belong to the people of Qatar through the generosity of their leaders. Through this exhibition, therefore, we want to speak particularly to Qatari and expat families about our shared cultural heritage, via these beautiful objects and incredible animals. Doha is the perfect place to do that. What messages do you hope visitors will take away with them from the exhibition? The animals in the exhibition have leapt all kinds of artworks: glass, ceramics, and textiles. I hope they also leap into the imaginations and memories of our visitors. If visitors share stories – new or old – with their family and friends, and see that Islamic art is rich, colourful, and diverse that would be wonderful. WHY IT’S WORTH WATCHING? When Welcome to Me debuted at Toronto Film Festival, the response was a mixed one. You either take it literally, which is the film making fun of the mentally ill by reducing their suffering down to a handful of quirks; OR, you applaud Kristen Wiig for carrying an entire film completely on her own shoulders (this is seriously some of her best work). One thing is for sure, Welcome to Me wastes no time trying to explain itself. You might see it as the modern-day equivalent of visiting an asylum, seeing the patients do “weird stuff ”, and then calling their behavior “quirky,” or you might see it as a simple and comical idea delivered in a no-nonsense, casual manner. Either way, borderline personality disorder turns out to be more of a laughing matter than it probably should be in Welcome to Me. This is a tough one. We see Alice’s deep-seated emotional and psychological issues on live TV, what some may call a train wreck of personal vendettas and frustrations as viewers watch on in morbid curiosity. The 86-minute film will provoke and start real conversations about such mental illness disorders, but we’ll leave it to you to draw your own conclusions.

Based on the trailer to the follow up of 2012’s smash hit Pitch Perfect, this is going to be an utter delight. All Pitch Perfect 2 needs to do is build on all of the qualities that made the first movie such a winner – the charm, sweetness, sincerity, its cheek and wit, and, of course, more quotable oneliners – mainly from Fat Amy! There is somewhat of a more grown-up tone here as Elizabeth Banks shows the Barden Bellas coming of age and approaching the end of their college run. There are still plenty of laughs in this underdog comedy’s insight into the cutthroat world of competitive show choir. If you loved the first one, you should be well on board for this one too.

Danger in the Club By Palma Violets
Probably one of the most underrated indie bands operating out of the UK, Palma Violets return with their second album, the 17-track Danger in the Club. The four-piece is well-known for having a raw-edge and psychedelic rock & roll sound. Let’s take a look at title track and latest single Danger in the Club. Zane Lowe released it as one of his ‘future exclusives’ on BBC Radio One, so there’s already huge support for radio play. The track’s familiar vivid 60s-style guitar riffs; moody punk vocals, and rowdy lyrics, show that Palma Violets have kept their youthful and chaotic sound intact. There’s a choppy pop-punk, garage-rock vibe to Danger in the Club, especially when a harmonica is thrown in for good measure and the song fades to a calm closure. The band revealed to NME that the album’s material is all original demos taken from their writing sessions at The Doghouse studios in Wales. This desire to release unedited music is a refreshing approach in today’s music industry and we love that Palma Violets’ energetic flair has progressed from their successful debut album 180.

Give this man a mic and watch him make music magic. We all know that Jamie Foxx has mesmerising talent and a spellbinding stage presence (just YouTube one of his live shows and you’ll see what we’re talking about), and now, after a five-year music hiatus, the Grammy-award winning singer is making a comeback with the aptly titled Hollywood. After his grand performance of You Changed Me, with Chris Brown, on Jimmy Kimmel Live!, Jamie Foxx has set the scene for what we can expect from his upcoming fifth studio album. In the past he’s managed to pull big names like Justin Timberlake, Drake, Twista and Rick Ross for his album efforts, and with Chris Brown on the lead single, there’s bound to be plenty of other great collaborations. If the energy on the album is anything like the dynamic duo’s performance on TV, then expect flames (in a very good way). We’re hoping for some more grown-up material where Jamie Foxx’s voice and instrument-playing skills shine through, away from the synthetic sound often found in the mainstream music world.

THOUGH THE impeccably engineered 12C was a thoroughly impressive debut in the world’s supercar market for McLaren Automotive, it did have its critics, who said that the car simply wasn’t exotic enough to compete with the likes of the Ferrari 458, its main rival. So, last year McLaren responded with this, the stunning 650S. The DNA from McLaren’s awesome P1 hypercar is instantly recognisable at the front end, with those McLaren logo-shaped headlights and dramatic front air scoops. Add in some tweaks to the rest of the body and new alloys, and you have a car that has upgraded from looking ‘well-engineered’ to ‘sexy’. And the Spider version that we drove adds to this significantly. Like a beautiful woman, it looks superb at first,
but really takes your breath away when you see it with its top off ! In addition to the exterior design changes, the 650S boasts an uprated version of the same twin-turbo V8 that the 12C had, taking power output from 592hp to 641hp (650PS, hence the name) as well as some tweaks to enhance the chassis. The end result is that the 650S drives and feels like a high performance machine in every way imaginable. It steers with a precision that would make a brain surgeon jealous. There’s an accuracy to every movement you make on the wheel that inspires an incredible level of confidence – you just point and shoot and the car goes exactly where you’re expecting it to. And I don’t need to go into too much detail about the handling and balance – they’re just as superb as you’d expect
from a mid-engined supercar built by a company that owns an F1 team, and sitting on a set of purpose-made Pirelli P Zeros! And the power… McLaren are not shy about the fact that this is a twinturbo beast, and in fact celebrate the fact by putting the turbos right behind your head. This means that every time you put your foot down they spool up with a satisfying whoosh as the instant acceleration propels you forward like a steam catapult. Turbo lag? Not so much. That is not, however, all you hear, as the delicious howl from the 3.8-litre V8 mixes with the scream of the turbos to create an awesome symphony of power. Flooring it in a tunnel is an experience you will never forget. What all this equates to is a 0-100km time of three seconds, and it will
hit 200km/h in just 8.4 seconds, up to a claimed top speed of 333km/h (207mph). The interior of the 650S delivers everything required, if not everything desired. It looks great, with lashings of leather and Alcantara and a premium, well built feel to it all. It has its own functional and stylish Android-based IRIS operating system through which I was able to link the car’s infotainment to my phone’s WiFi hotspot, and then use apps like Google maps, TuneIn radio, and more. On the downside, the shape of the carbon fibre tub means that it suffers from the same problems as the 12C. It means huge door sills that you have to clamber over when you’re getting in and out of the car. It also means that there’s not a great deal of width in the footwell, especially as your legs are essentially sharing space with the front wheel. There also isn’t a great amount of storage space in the car at all. The frontend trunk would fit two small weekend bags at best.

However, where the 650S improves on the 12C is that it’s beautiful.” In the passenger cabin, you’ll find very few spaces to plonk things like mobiles, books, iPads, etc., and though there are two drinks holders, they’re placed awkwardly behind the floating centre console. But you see, none of this bothered me at all, because once you climb behind the wheel, all of these trifling matters fade away. You don’t want luggage in your 650S, it would only add unnecessary weight! Cup holders? Pah… No-one’s bringing food or drink into MY McLaren. I don’t need luggage space for two, because I don’t even really want a passenger – unless I’m taking you for a quick spin to show off my 650S, you’ll only distract me from the driving experience. Because, like the 12C, the driving experience is what the 650S is all about. It is nigh on close to perfection, especially with the Spider’s roof folded away. However, where the 650S improves on the 12C is that it’s beautiful. Of all the 650S models I’d seen to date, this gorgeous Spider, in McLaren’s ‘Storm Grey’ with the carbon fibre package, was pretty much perfection in terms of options in my opinion. And this isn’t just my opinion either – every time I parked this car, I returned to see a crowd gathered taking pictures. People stopped us to comment on it. Cars would pull alongside us on the highway with a camera phone poking out of the window. It turned heads wherever we went, and that is exactly what it’s supposed to do. The looks, the power, and the performance: this car is a supercar, in every sense of the word! 78

ALL NEW MCLAREN 570S LAUNCHED WORLDWIDE The new ‘baby McLaren’ has finally enjoyed its global launch, with events taking place across the region last month. McLaren has completed its three tier model strategy with the global reveal of the first in its Sports Series family: the McLaren 570S Coupé. This pure sports car, with driver optimised layout and electrifying performance, shares its DNA with the McLaren Super Series and Ultimate Series that sit above it in the range hierarchy. The Sports Series introduces McLaren race-derived technologies and
design values to a new segment and audience. Like every McLaren, the performance of the 570S Coupé is breathtaking. It combines, as its name suggests, a power output of 570PS (562bhp) with lightweight construction to give a class leading power-toweight ratio of 434PS per tonne. The 570S accelerates from 0 to 100km/h (62 mph) in 3.2 seconds, while 200 km/h (124 mph) is reached in just 9.5 seconds with the pace not letting up till the car reaches a top speed of 328 km/h (204mph).
A L L - W H E E L - D R I V E M A S E R AT I S ARRIVE IN UAE The Maserati Ghibli and Quattroporte, equipped with their first ever all-wheel-drive system - Q4 have arrived at Al Tayer Motors and Premier Motors showrooms in the UAE. The system is available on Maserati’s four-door sedan models, the Quattroporte and Ghibli, as the top-of-the-line S Q4 variant. The S Q4 accelerates the Quattroporte and Ghibli from 0-100 km/h in just 4.9 and 4.8 seconds - faster than their rear-wheel drive counterparts - up to a top speed of 283 km/h and 284 km/h. The Q4 system has been designed to maximize traction and further amplify Maserati’s high-performance, grand touring qualities and rearwheel driving experience, while offering absolute safety whatever the road conditions. The system acts by transferring traction to the front wheels on demand and with an immediate response. The Quattroporte S Q4 retails at a starting price of AED455,000, while the Ghibli S Q4 starts at AED329,000. The price for both cars includes three years unlimited mileage warranty and a three years or 60,000 kilometre service contract. 80

The Touareg was one of their standout performers in 2014; last year alone over 70,000 drivers chose a new Touareg, which combines the best of passenger car comforts and off-road worlds in one model. The 2015-generation can be identified by new front and rear designs, new technical features, a wide range of colours and interiors and competitive pricing at AED174,900. YA S R A C I N G SERIES FINALE ENDS SUCCESSFUL SEASON
In a fitting end to what has been a truly memorable motorsports season at Yas Marina Circuit, the fourth and final round of Yas Racing Series marked the end of the inaugural TRD 86 Cup – the circuit’s first homegrown championship. As the TRD 86 Cup has progressed, the driving techniques and skills of the 12 UAE-based competitors have improved, with the drivers going bumper to bumper in every race, and positions at the top of the leaderboard changing regularly.
The top spot on the podium was up for grabs right up until the final round, although the skill and determination of Karim Al Azhari proved too strong in the end, Speaking shortly after his victory, Al Azhari said: “It’s a great feeling to win and is a dream come true to triumph in my home city. My fellow racers were extremely competent and in fact, several of the guys were quicker than me in the race laps but I was consistent and that proved key to my success. THE SAMSUNG GALAXY S6 EDGE The new Galaxy Edge phones are the most important that Samsung have released in recent memory. This is because they represent the first completely new innovation from Samsung in a while, and something that no other phone offers, in the shape of its functional curved screen. Not just a cosmetic change, although it does serve to make the phone look superb, the ‘edge’ of the screen also adds some functionality in accessing favourite contacts or apps by swiping down the side, as well as displaying notifications and updates, and much, much more. Samsung have really gone all out to make sure that the ‘edge’ screen isn’t just a skin-deep gimmick, but an integral part of the phone’s functionality. In terms of storage and muscle, the S6 Edge boasts pretty much exactly the same as the normal S6, with a 2.1Ghz 8-core processor and a Quad HD Super AMOLED display. The downside of these new generation Samsung phones is that the battery and memory cards are no longer interchangeable, so in terms of storage you’re stuck with what you bought, and if you want the extra space, you’ll have to spend the extra money from the outset. One area in which the new S6 phones have really outdone themselves is the camera – both the S6 AND S6 Edge now boasts excellent image quality both front and back and a range of new features that really make them stand out. Verdict: Some might say that the Edge is a gimmick that you pay an unreasonably high premium for, considering you get almost exactly the same specs for significantly less on the standard S6. However, many people want, and are happy to pay for, premium, and that is certainly what you get with the S6 Edge. It looks better, feels better, and instantly impresses.

CHEF’S TABLE
The award-winning Spice Mela is arguably Abu Dhabi’s favourite Indian fine-dining restaurant, and this is almost exclusively down to the excellent menu created by Chef Siddharth Krishna. It takes Indian cuisine into the upper echelons of gastronomy, being a combination of Chef Siddharth’s own take on the classics, as well as some truly unique dishes that he picked up on his travels across India. Chef Siddharth began his career at the renowned ITC Hotels Group culinary training school in India, where he was able to earn his stripes at famous restaurants in the group such as Bukhara, Peshawri and Dum Pukht, and work with some of India’s top master chefs. Following that, he moved to London, where he became head chef of the famous Chelsea eatery Chutney Mary, one of London’s most famous Indian restaurants, where he was able to work with some of the UK’s top chefs. In London he was also involved with the opening of Amaya, a restaurant which went on to earn a Michelin star. However, while all of these experiences were key to honing Chef Siddharth’s expertise, it was perhaps his childhood that had the biggest influence on his career. “My father was with the forces, and we used to get transferred across India, so I was lucky enough to travel to a lot of places,” he recalls. “In many of these places there were a lot of people, friends of my father, who used to cook dishes which were very unique to that particular family. And I went back to them once I was a chef and asked them how to make those dishes.” And rather than focus on one particular region of India, Siddharth takes his favourite dishes from each region, and particularly the more unusual ones. “I cannot do only the cuisine from one 96

area, because all of the dishes will be too similar. I like to choose dishes which are very unique, that you won’t find on most menus.” First off on our culinary experience was the Scallop Moilee, which is a unique dish created by Chef Siddharth using a classic flavour from the southwest of India. “Moilee is a sauce from Kerala, made with coconut milk, mustard seeds, curry leaves, ginger, fresh turmeric, and it comes with a hot tomato chutney, and instead of chopping it up and pureeing it, we do it chunky, like a salsa, and serve it warm.” Next up was the Rajasthani Lamb Kebab, which is one of Chef’s own creations. “It is slow-cooked lamb neck filet, served with yoghurt chutney and red pepper chutney. You slow cook the lamb for six or seven hours, and then you take it out and marinate it and finish it on the grill.”
CHEF’S TABLE Then came the delicious Masala Roast Chilean Sea Bass, which is oven roasted with toddy vinegar, honey and palak dhokli. “Dhokli, which comes from the Western region of Gujarat, is like an Indian kind of pasta, which they eat there because they are vegetarians. I make it with spinach, and serve it with fish, and it goes really well with the sea bass,” says Chef Siddharth. The main course was a trio of classic dishes – Calcutta Prawn Curry, an unusual homemade style wild prawn recipe with coconut, green chilies, cucumber and kalonji; Konkan Green Chicken Curry, a spicy chicken dish with fresh green herbs, cashew nut and green chili; and finally Andhra Chicken Biryani, with fresh herb and saffron marinated chicken with green cardamom and kewra. “The biryani is not what you would have in any other Indian restaurant,” explains Chef Siddharth. “It’s an interpretation I learned from a Hindu family in Hyderabad where they make this biryani with chicken, made with a green paste.” The experience was finished off perfectly with two desserts fusing Indian flavours with other styles of cooking. We had the Garam Masala Rice Brulee with black cherry granita, and Stracciatella Apple Kulfi with calvados flambéed caramelized green apples, both of which were superb.

“The outdoor courtyard is bright and airy during the day, and peaceful and ambient at night” Nestled away in a quiet corner of the soon-to-be cultural district of Saadiyat Island, right next door to the Manarat Al Saadiyat Cultural Centre and Gallery, Fanr Restaurant boasts a lofty venue with an artsy vibe thanks to paintings all over the walls, and a tranquil outdoor terrace. With jazzy music playing softly in the background and a very laid back vibe it’s a great venue for a casual lunch or dinner with friends. The menu boasts an international mix of cuisines, with dishes influenced by Mediterranean, Middle Eastern and Asian cuisines. They make a big point of the fact that everything is homemade, from the sauces and desserts to the breads and pastries. We kicked off our experience with the Spicy Chicken Wing Sucettes, and the Aloo Tikki potato patties. The sucettes are chicken lollipops served with sweet chilli sauce, which were decent, if not the best we’d ever had. The Aloo Tikki potato patties, on the other had, were great. Served with some refreshing mint chutney, they were tasty, with just the right amount of spice to satisfy without becoming overwhelming. The good news continued with the mains, both of which were excellent. First off was the Spicy Shrimp Linguini, with garlic, onion, cream and red pepper. It was excellent, with a lovely, rich buttery sauce and plenty of shrimp. Our only issue was that it could have perhaps done with being a tad spicier. While it was good, the pasta was completely blown away by the next dish to arrive, which was the Deconstructed (not sure why!) Hammour Sayadiya, served with Arabic spiced rice and crispy onion. It was superb, with the fish managing to be both lovely and crispy on the outside and soft
and succulent on the inside. The sauce that comes with it is also delicious, perfect for pouring over the fish and savoury brown rice. This dish also has the added bonus of being one of the menu’s healthy options, and it comes highly recommended by us. Due to the hearty portions, we only decided to go for one of the desserts, and this was the Sticky Toffee Pudding with butterscotch sauce and affocato ice cream. One word: Foodgasm! If you visit this restaurant for one reason, make it this one… Overall, the experience of Fanr is a great one. The outdoor courtyard is bright and airy during the day, and peaceful and ambient at night, and the hearty portions and great food make up for a menu which is a little pricey for a casual dining venue. Once the whole cultural district of Saadiyat is fully complete, expect this place to be pretty busy any day of the week!

Foodie Talks with Suzanne Husseini Last month FACT was lucky enough to be invited to dinner with celebrated Middle Eastern chef Suzanne Husseini at Market Kitchen in Le Royal Meridien Abu Dhabi, where we ate and talked all things food… and of course the Eastern Mediterranean. It is all amazing Arabic food. How important is food to you as a means of social interaction and bonding? As long as I can remember food has been the bridge that connects me to people I meet. Whether it was sharing an Arabicstyle sandwich with school friends in Canada as I was growing up or teaching a cooking class to keen students. How does Palestinian food differ from other cuisines in the region? The food of Palestine is part of the food culture of the Fertile Crescent which includes Syria, Lebanon, Southern Iraq and Northern Egypt. This makes the food of these regions similar because of the shared borders and climate and geography. Of course, each modern country of today has dishes that are unique to them and eaten locally, but there is a common thread that connects them all. You will find the common dishes often referred to as Lebanese like Hummus, Baba Ghanouje, Tabboule, Fattouche, etc., in all of the countries also know as ‘Blad el Sham’ or Greater Syria. It is accurate to say that all the food of this region shares a common food culture and spans a greater diverse area that also includes North Africa, the Arabian Gulf 100 fact magazine
As you grew up in Canada, how important has food been to you as a link to your roots in the Middle East? My parents immigrated to Canada from Palestine hoping for a brighter future. Being in a new place had its challenges for our family. Language, culture, weather all were unfamiliar. But the one thing that would bring me comfort and joy was coming home to a kitchen filled with the smells of the Arabic food my mother lovingly prepared. She made Arabic bread from scratch – cheese, jams and everything she would remember her mother used to cook. Naturally I acquired a taste for the Arabic cuisine I love and am very proud to share. My book When Suzanne Cooks showcases some of my favourite foods of my heritage. What would you like to see more of in the world’s culinary scene? It’s no secret that Arabic cuisine makes
my heart sing. It is elegant, sophisticated and delicious. I would like more people to take notice of just how diverse it is. I would like to see the dishes that have been hidden far too long served at Arabic restaurants. This is a food culture that spans hundreds of years and has left its legacy in Spain, France, Sicily, Turkey to name a few. It is far more than Hummus and Tabboule and grilled meats! Which dishes would comprise your perfect menu for a simple and sociable meal between friends? I love to entertain informally the Mezze way. Many people get this style of eating all wrong. In fact they are not a set of small appetizers that will ultimately be followed by a main course. I will fill a table with a selection of Mezze that can be hot, cold, spicy, crunchy, smooth, meats, vegetables, etc. Then we sit informally and share and eat a bit of everything, taking a long time to savour every bite. Some of my favourite dishes would be Tabboule, Mousaq’aa, Hummus with Sautéed Lamb filet, Braised okra in tomatoes, Stuffed Grape leaves and of course, there will always be olives, pickles, yoghurt, and fresh Arabic bread.

cook way better than I could play guitar and sing! Now, for me, music is both a hobby and a passion, but I love cooking. I feel that I am extremely lucky, in the sense that I work in my favourite job. I will never find a job better than being a chef.
So how did the collaboration with Pearls & Caviar originally come about? The first connection is Thomas, the General Manager of the hotel. He was the GM at the JW Marriott (Mumbai) before and I worked with him there. He understands the local market, and after a couple of months in the place, he called me and he asked me if I was interested in the Middle East. Thomas knows me very well, and he said, “You have to come to Abu Dhabi, I have a beautiful project for you. I’m absolutely sure it’s going to work, just like the Arola in Mumbai.” And after I came to Abu Dhabi, and especially when I saw the property, I thought, wow, yeah. Let’s do it! What was your thought process in creating the new menu? I’m extremely respectful of the specific local traditions wherever I am, and the issue of using certain ingredients. At the same time, six months ago I opened in Istanbul, and there I was able to experience working with Muslim expectations of what food should or shouldn’t be, so I’m extremely aware of this. If we take as a point of reference Istanbul, it’s not difficult for my style of cuisine to be adapted to Abu Dhabi. All the philosophy of the mezzehs, and food to share, or to put everything
Do you find music and food go together very closely? There’s a part of creativity, there’s a part where you share your experiences with others, at the same time you interact with your guests the same as if you sing, and you can see the applause, if it works. But the two are closely linked.
