Another One Bites the Dust

I

t seems like only yesterday that I was writing this very monthly letter talking about how fast the year has gone and my goals for 2018. Time really does fly. I’m sure many of you find yourself thinking the same thing. And if, like me, you’re wondering exactly what you’ve done, achieved or experienced in the past year, here’s how to give yourself a little reminder. A colleague recently told me to look through my photo gallery on my phone and scroll up the last 12 months. Wow! There are things I did in 2018 that I’d completely forgotten about; scaled a mountain and zip-lined off it in Oman, finally made it to Azerbaijan, attended one month of back-to-back family weddings, and in a very unexpected turn of events, decided to take the adrenalin up a notch and do the world’s longest zip line in Ras Al Khaimah. No biggie! So while December can be a month of complete chaos, too many dinner parties, lots of brunches, and wild celebrations, make sure to take a few minutes to slow down and have a cheeky little scroll through your 2018 in photos - believe me when I say that you’ll find some real gems that will bring back all the memories. For those of you who like to dive straight into the holiday season, it’s time to amp up the excitement and plan your month ahead. We’ve got all kinds of festive treats picked out for you; from gingerbread house decorating to festive afternoon teas; delicious dinners and lavish brunches, you need to turn straight to p23 for the lowdown. Similarly, New Year’s Eve is set to be a full-on party right here in Bahrain, with venues bringing their A-game for the year's biggest event. Think trendy parties, gala dinners, intimate soirees, DJ performances, and so much more to choose from, starting p45. Now in its 9th year, the annual FACT Dining Awards Bahrain ceremony was held at the 5-star Gulf Hotel Bahrain Convention & Spa. Over 300 of the hospitality industry's top professionals gathered for an evening of celebrations as we gave out 90 awards in 45 categories. Congratulations to all the nominees and winners - check out all the fun from the evening starting p98. I started with a winter playlist as early as mid-November - sorry not sorry. As Jingle Bells Rock - the Mean Girls’ version of course - plays in the background as I type, I can’t help but feel a big inner festive cheer coming on, for the incredible year we’ve had at FACT, and for the endless possibilities to come in 2019! Wishing you all a very merry festive season and Happy New Year!☺

Local Creations RUSSOS BY FA JER IS THE BEGINNING OF ANOTHER BAHRAINI SUCCESS STORY IN THE HEART OF THE FAMOUS BLOCK 338 IN ADLIYA. IT IS ENOUGH TO CRUISE THROUGH CHEF FA JER’S INSTAGRAM ACCOUNT TO START CRAVING HER BRILLIANT CREATIONS.

I WONDER IF EXPATS, LIKE ME, who have lived in Bahrain for quite a long time feel kind of guilty for not really knowing the Bahraini cuisine well enough? Thankfully, to my delight, that is about to change with a growing rate of talented Bahraini women that are gathering all the courage they have and all the support that their families can offer, to finally open restaurants that are proud to serve authentic or modern Bahraini food. We walk in not knowing what to expect. The restaurant is still considered a work in progress but when it comes to food, Chef Fajer knows exactly what she is good at and she offers it with a lot of love. The arugula salad with strips of onion and pickled turnips and her special vinaigrette is a great start to any meal. The Lebanese stuffed vine leaves, so popular among the people of Bahrain, are some of the best I ate outside home. As I enjoyed the chicken machboos, my colleague was so happy with the other traditional rice dish with baby prawns called fegaatah. It is worth mentioning at this point, that every individual portion of these rice dishes is freshly cooked just for you in about 20 minutes only. Impressive! And the homemade 8

accompanying pickles are amazingly delicious. And if you never ate tikka, go for the fulfilling Brazilian beef tenderloin plate; tender meat cubes served on flat bread with tangy sauce and lots of green… yum yum! Do not leave without trying the creamy heaven called rose panna cotta with cotton candy or maybe the luqaimat with date syrup and shreds of edible gold leaf. The perfect ending! CAREEM CREDIT Some of you may have noticed that on the latest update of your Careem app there is a new feature – peer-topeer credit transfer. PEER-TO-PEER CREDIT transfer is coming to Careem and is currently in testing phase for some Careem app users across markets. Based on focus group studies we’ve conducted with our users, social payments came up high on the list and we are starting by offering a peer-to-peer credit transfer feature. The idea is to provide our customers with the ability to easily and instantaneously transfer Careem credit through their wallets to friends and family. For example, it will allow a parent to send credit to their child to take a Careem ride back home, or for companies to transfer credit to their out-of-office sales force to simplify their claims and reimbursement process. It can also come in handy when you’re out of cash and have no balance in your wallet but need to ride with us urgently. Or it could be as basic as saying “thank you” with a little token of appreciation. And as we add more features to our wallet, the potential uses will grow. It’s easy to sometimes forget that bank accounts and cards that many of us take for granted are not available to everyone. In fact, 14

according to the World Bank, only 14 percent of people in the Middle East have access to a bank account. That means there are hundreds of millions that have no means of storing cash in a secure manner or the ability to make digital payments. Cash is still the main form of payment in the region including for Careem rides. But with smartphone penetration on the rise, the wallet is going to be an increasingly common way of paying in the coming years. Careem wants to stay ahead of this change and we’re working to bring new payment services to our customers which will ultimately help us simplify the lives of users. Right now, we’re beta testing the peer-to-peer credit transfer feature, but soon it will be available to all our customers as it is progressively rolled out across the entire base in all cities. ✤

MARATHON WIN FOR INTERCONTINENTAL InterContinental Regency Bahrain won 1st place in the challenging Bahrain Marathon Relay 2018 in the hotels’ category. A NEW ACHIEVEMENT WAS recorded for InterContinental Regency Bahrain hotel as they walked away with the title of 1st place in the Bahrain Marathon Relay 2018, in the hotels category, and 23rd place overall. The event took place in early November, starting from Bahrain International Circuit. The marathon consists of 16 stages with a total distance of 47.9kms. The hotel team contained 14 members and they finished the stages in 3:30:06 hours. More than 200 teams participated in the marathon representing both public and private sectors. 18

SEA FESTIVAL SUCCESS The Bahrain Tourism and Exhibitions Authority (BTEA) successfully concluded the Sea Festival 2018 which attracted more than 24,000 residents and tourists. THE SEA FESTIVAL FEATURED a number of activities, including a gaming zone, VR Boat Adventure, a museum, an aquarium and a “Fisherman Village” which included kiosks dedicated to traditional handicrafts related to the sea, including pearl merchants. There were more than 20 food vendors for visitors to enjoy, as well as line-up of live performances by traditional bands participating in the event. The Festival also included boat tours inside Bahrain Bay, water activities such as kayaking, paddling, rowing races and the Russian Jetski Show. Chief Executive Officer of BTEA, H.E. Shaikh Khaled bin Humood Al Khalifa, said: “We are delighted to witness the growing success of the Sea Festival year to year. This year's edition attracted more than 24,000 visitors from inside and outside the Kingdom, an increase of 26 per cent compared to the previous 20

year. Visitors of all ages were able to enjoy several activities, which combined futuristic technology with the authenticity of Kingdom’s rich history and past,” he continued. “Since its first edition, the festival has aimed to celebrate the deeply rooted relationship that has connected the people of Kingdom to the sea over the ages, maintaining the relevancy of Bahraini seafaring traditions and activities by integrating modern marine tourism activities and water sport; and launching initiatives by the BTEA to contribute to the revitalisation of the Kingdom’s vital tourism sector.” Hosting the festival comes in line with the BTEA’s overall strategy aimed at developing and strengthening the tourism sector under the slogan of ‘Ours. Yours.’, which contributes towards the Kingdoms economy and the 2030 Economic Vision. ✤

There is nothing wrong with ambitions, it is an excellent fuel for success. Share with us some your goals with The Reef Resort – what are some of the key things you want to change, improve or make a mark with over the next year? We have a clear path ahead of us, and that is the quest for perfection, and perfection is moving target, we have a lot of surprises in store, in few months we will offer to our guests a New Club House, a Beach Club like never before in Bahrain, Reef Resort aim is to offer a true island living experience, lifestyle and glamour or serenity and bliss if you want to. I quote Winston Churchill: “We shape our buildings, thereafter they shape us.” Tell us a little but more about your hospitality background, what led you to the role at The Reef Resort? When I was in high school, my parents decided they wanted me to follow in my father’s footsteps in the construction business, but I wasn’t having any of that “It was an animal of a place”. The phone would ring at any time day and night as we had building sites all over the world and five minutes later, someone would be drafted to fly or drive to fix the issue wherever it was. I ended up realising that the hotel business is not really a job, it’s a lifestyle, it’s the lifestyle I knew, as we were constantly travelling and staying in the finest hotels and it wasn’t unusual to me, so I decided to apply to the hotel school. I went to the interview by myself and didn’t tell anybody, not even my friends. Eventually, I went off to Hospitality College and immerged deep into the world of hospitality. After surprising my parents with my acceptance and later graduating, I began working my way up the ladder in Switzerland, which led me to where I am today, the different positions I held throughout his years in the industry have taught him the value of perseverance, and I do my best to pass that along to those who work for me. While working at the Palace hotel in Gstaad, my boss was tough on me. I remain grateful to this day. Anytime I had two days off, he said I wasn’t working hard enough, so he would give me a new job to do. I was thrown to the wolves, and it was an amazing experience. I learned a lot from him. That was my foundation that made me progress through the ranks and slowly but steadily bring me where I am today, I have been working in Europe, Asia, Caribbean and the GCC. last decade of hotel management: the unflashy, workaholic general managers. First lesson is Be Humble I am one of those who started their careers waiting tables, scrubbing counters and floors, delivering Luggage from the lobby to the rooms, climbing the ladder, slowly learning ALL of the necessary skills to eventually become the General Manager, I grew up with this generation of people, regarding them as true hoteliers. Put in the Hours! As a hotelier I wouldn’t dream of clocking in at nine, filling my day with meetings, submerging myself in admin and packing up my desk at five to hit the gym. Surely, I knew then, that I have signed up for a demanding lifestyle career. Take care of the people. Excellent General Managers are those who are building amazing relationships with guests, having a drink at the bar with loyal customers, making certain their staff are well cared for, and in return, their hotels are thriving. Describe your day-to-day role and working style - are you the type of GM who does things from his office, or do you prefer to walk around the resort and be more hands-on and interactive with staff and guests? My day to day routine and workstyle are the same of a tightrope walker, a delicate Balancing Act! A General Manager is an all-rounder who has the delicate task of balancing three main tasks: interacting with guests, being with staff and administering operations of the hotel. These principles should not have changed at all and if a manager over-prioritises any 64

one of these, is a recipe for a fall in a short sentence There's a time to plan and a time to do... quite a tongue twister, I admit, but this simple rule has served me well during my career and it is a directive I instil in my management team. Any project that needs to be executed well has to be planned. Any task that was begun without proper planning and due diligence is almost always a failure. Consider the last time you were a guest at a hotel. Did you meet the General Manager? Did you even notice him walking around? I am reminded of wise words of one of my mentors during my training years: “If your guests are around, you should be around”. Hotel management is not a nine to five career, not in the least! General Managers must be on the hotel floor during peak times: breakfast, check out, check in and dinner on the other hand Nowadays you are worrying about cash flow, stressing over budgets, agonizing over revenue: in short, money. I’ve encountered one too many young General Managers who cannot calculate their Average Daily Rate (ADR) and Revenue Per Available Room (REVPAR), A luxury hotel today, requires immense effort: strong financial management skills; cash flow analysed daily, every single cent accounted for; strict supplier management and expenditure hoops; cherry picking of expenses; the requesting of three quotes for basic supplies; in other words, there are NO luxuries. Yes, I understand that there are new burdens on today’s General Managers and administration demands have increased, but that should never be at the expense of a hotelier’s ultimate judge – the guest.

long hours. If you are not totally solid in your motivation and conviction to become a hotelier, then it may be a struggle. I have spoken of education and if you can attend a great hotel school then you will benefit from a tremendous foundational knowledge set that will support your growth. But be sure to combine this with practical experience, working in a hotel or restaurant, as it will validate your choice of career and give you a head start once you work full time. Finally, join a company that is aligned with your values and aspirations. Worry less about location, pay or job title. Planting the seeds of your career in the right environment, where you can grow and flourish, is the best early investment in you, that you can make. ✤ In such an important role of responsibility where things can be overwhelming at times, how do you manage your expectations and the need for attention to detail? As I said this is no life for the faint hearted, the responsibility doesn’t stop when you walk out of the resort, throughout my career now a span of 37 years, I have learned to cope under pressure, and it has actually become a part of me and the attention to detail has become second nature, so much so that some of my non hotelier friends think that I am obsessive compulsive (laughs). What do you find to be the most challenging aspects of being a GM and how do you deal and overcome these? Everything is a challenge and thank God for that, in this craft you need to operate constantly out of your comfort zone, it is something that you get used to, but you reap the benefit professionally as an individual on a personal level. Tell us about one of your most memorable moments in hospitality and why it stands out for you… I have so many, but I have paused and reflected on my career journey and the path that led me here. To answer the question succinctly, it is quite simply ‘people and humanity’ that I consider being my greatest achievement, Would Have I achieved all this without the support and hard work of the people I have lead? All that can and has been achieved through and with this. I take great pride in the development of others, and the part I might have played in this. To see people who I have hired, guided, mentored and coached succeed is a source of enormous satisfaction. Hospitality is a people business and while many factors combine to make a good hotel, location, architecture, physical product and so on – the only thing that takes the experience from good to great is the people. To have been able to put teams together, often incredibly diverse, and then provide the leadership that equips and inspires them to deliver world class, above market, memorable service experiences is a wonderful achievement that I will always be proud of. Have you got any advice for young people in the hospitality industry who would like to work their way up the ladder? Firstly, make sure your motivation is correctly placed. Too often I see young people going into hospitality because of family pressure or a misguided sense of what it will take. It is a hard business, particularly in the early years with modest pay, hard graft and fact magazine

lright, we will admit from the very beginning that we are huge fans of the Porsche brand. And why wouldn’t we be? They have been producing exceptional vehicles for almost 70 years and have been responsible for iconic models such as the 1948 Porsche 356, the 1968 Porsche 917, the 1986 Porsche 959, the 1994 Porsche 911 and more recently, the 2010 Porsche 911 GT3 R Hybrid. Any car manufacturer who can lay claim to machines of this calibre is doing something consistently right. When we were informed that our next driving experience was to be the new Porsche Panamera GTS, we were more than a little excited, especially as we were to attend the international test drive and official launch of the vehicle in Bahrain. Our adventure began at the Four Seasons where we were officially handed the keys for the Panamera. Not wanting to waste a moment of Porsche time, we headed directly for the car, savouring the anticipation of the experience to come. At first glance, the GTS did not disappoint and we soon found ourselves slowly moving around the vehicle taking in all the beauty this machine had to offer. It was obvious that the new Panamera GTS has been significantly upgraded in a number of areas, including the appearance of the exterior with its black trim and badging. The GTS is also equipped with 20-inch Panamera Design wheels as standard that scream to be taken out on the road. The classy interior of the vehicle boasts the very finest of materials and handcrafted finishes as one would expect of a Porsche. It features hallmark elements of black Alcantara and anodised aluminium, adding to the striking inner appearance of the GTS. The overall design of the cabin was very impressive with all elements ensuring comfort and practicality. Innovations include the digital Porsche Advanced Cockpit as well as assist systems such as Porsche InnoDrive with both adaptive cruise control and optional rear-axle steering. A highlight was the brand new head-up display that can be configured by the driver and projects all relevant information directly into one’s direct line of sight, in full colour. A long drive to Durrat Al-Bahrain gave us time to really appreciate the luxury of the new Panamera as it effortlessly cruised along any road placed in front of her. We refrained from pushing her to any limits at this stage, out of respect for the rules of the road, but also as we knew our last stop would allow us to truly put her through her paces. A quick cup of coffee and we headed for the historic site of the Riffa Fort where we were treated to a great lunch. Whilst eating, we gazed at our vehicles, envisioning how they would perform on the BIC track that was to be our next destination. We soon found ourselves on the tarmac of the Formula One track, ready to experience the GTS in all of its glory. As we were signalled to proceed and pressure was applied to peddle, we cheered to the sound of the roaring, four-litre, V8 biturbo engine that was released from its cage. The 460 hp of output and a maximum torque of 620 Nm combined with the standard sports exhaust system, ensured this car sounded as good as it drove. It is capable of reaching a top speed of 292 km/h and can power from 0 to 100 km/h in just 4.1 seconds. Not bad for a car 68

weighing in close to 2.5 tonnes! There were no interruptions in tractive force as power is transmitted to the Porsche Traction Management (PTM) all-wheel drive system by the eight-speed PDK dual clutch gearbox. For a heavy sports car, the Panamera could certainly move and we pushed all of her capabilities to the limit. We found the deceleration of the braking to be most impressive as well as the grip and feel of the car on the corners. A second session around the track after the sun had gone down showed us how consistently the GTS performs under different track conditions. We ended the experience with a scrumptious dinner under the lights of the BIC track, feeling thankful that we had been invited to share in the unveiling of yet another outstanding offering from Porsche. ✤

The arrival of the new 600LT, which is built to excel on roads and race circuits alike, marks both the beginning of the next chapter in the McLaren ‘Longtail’ (LT) story and the setting of a new benchmark for super-sportscar performance. With the engine management system of the 3.8-litre twin-turbocharged V8 recalibrated and less back pressure from a top-exit exhaust system that is even shorter and more extreme than that of the McLaren Senna allowing the engine to breathe more freely, the 600LT can call on peak power of 600PS (592bhp) at 7,500rpm and a maximum torque output of 620Nm (457lb ft) at 5,500-6,500rpm. These outputs deliver astonishing levels

of performance: 0-100km/h (62mph) takes just 2.9 seconds, matching the acceleration of the revered McLaren 675LT Super Series model. 0-200km/h (124mph) is achieved in a remarkable 8.2 seconds and the 600LT can continue gathering speed to a top speed of 328km/h (204mph). Inspired by the renowned McLaren 675LT models and their iconic ‘Longtail’ McLaren F1 GTR racing predecessor, the new addition to the LT family has all the physical hallmarks of a true McLaren ‘Longtail’, including an extended front splitter, lengthened rear diffuser, fixed rear wing and elongated silhouette – in this case by 74mm compared to a McLaren 570S Coupé. The unique bodywork optimises aerodynamic performance, working in conjunction with the flat carbon fibre floor of the 600LT to produce the 100kg of downforce at 250km/h (155mph) that generates more grip and greater high-speed stability and is a significant contributor to the car’s excellence on a track. Production of the 600LT Coupé began in October 2018 and will last for around 12 months, with build slots scheduled around existing Sports and Super Series models, as well as the sellout Senna, Senna GTR and BP23. T

here aren’t many places in Bahrain where the food, the venue, the service and the ambience all come so perfectly in sync that every time you visit, it feels like walking into an old friend’s home. Nirvana at The Ritz-Carlton, Bahrain is one of these places and although we’d like to selfishly keep it as our own food sanctuary, their recent win at the FACT Dining Awards 2018 as Favourite Fine Dining Indian Restaurant in Bahrain, means that more people are beginning to discover the secret of this eatery – and, just like us, falling in love with it. Offering mood-lit indoor seating, Nirvana is adorned in ornamental Indian-inspired décor with distinguished interior that resembles the palace of maharajas from times gone by. Although it’s very obviously a fine-dining venue – the tables and chairs are plush, the silverware is elegant and the service is top-notch – there is nothing stuffy about this place. In fact, as we sink into our comfortable chair, we fall at ease and embrace the casual and friendly setting. On our latest visit to Nirvana, we got up close with some of the beautiful dishes that are set to thrill on the restaurant’s festive and New Year menu as well as getting reacquainted with some classics off their a la carte menu – the best of both worlds. We started our culinary journey with a few dishes that will appear on the restaurant’s special menu for the festive and NYE season. First up is the most exquisitely presented avocado, tomato, and lobster salad – fresh and flavourful to say the least. The ingredients complement each other perfectly, especially with a dash of lime! Then came the crab and potato cake. Another wowing presentation! Now, if Indian food and Italian cuisine were to marry and have a baby – this would be it. A splendid dish that resembles a generous arancini ball from the outside and is packed with the most indulgent mix of flavours inside. The coastal sensation of grilled salmon with mashed potato is steeped in the most serenading flavours of a coconut sauce and a side of mint sauce, with vinegar red onion to give it that extra kick delivered only by the precise doses of each ingredient. It’s also when we realised the sheer talents of Chef Mahipal Singh and his culinary team, and why Nirvana is an award-winning venue! We were persuaded, too, by the eggplant concoction which is a literal, stunning green eggplant in a small lake of lip-licking sauce – and most of all, an instaworthy dish that you’ll want to snap from every angle. We also tried the classic gajar ka halwa, a carrot-based sweet dessert pudding from India, 112 fact magazine

presented in the most decadent way (just look at the pictures!). Though the plating is sophisticated, this dish sure brought back so many memories of our beloved childhood trips to India. Of course, the great thing is that Nirvana also offers up an a la carte menu that will blow your taste buds away. For lovers of all things meat, we’d highly recommend the Chapli Kebab (pan fried marinated lamb, black cumin, tomato chutney) for starters, the ever-so-pleasing winter warmer which is the Shorba E Dal (red lentil soup) as a pick-me-up, and the palateawakening Bhuna Gohst Khada Masala (boneless lamb, masala sauce, assorted spices) for mains with their assorted naan bread – you’ll be raving about your meal for days to come. There are plenty of poultry, seafood and vegetarian options too – so every diet and preference is accommodated. Much like the essence of the word itself, Nirvana is a feeling. And when you dine here, all you’ll feel is a sense of being treated like royalty from the moment you step in all the way until the end of your dining experience. Now, if a venue can do that with good food, gracious service and a great vibe, then it sure deserves an award and, more importantly, it deserves a visit from every food enthusiast this festive season. ✤

A

mong the many steakhouses in Bahrain, some destinations are admired for their consistency in offering meat lovers the best of cuts every single time. Legendz at the InterContinental Regency is one of these places. The restaurant is famous for its beautiful and classy fine dining atmosphere. The music is sending happy relaxation vibes to all of our senses when we visit, prepping us for the food waiting to be discovered. And what is more appealing than a view of the open kitchen to make you feel even hungrier? Great news this time for the people who find themselves at the restaurant with a group of famished friends but not really fancying a big cut of red deliciousness! The new chef in the house, Luigi Ferraro, is unleashing his gastronomic creativity to surprise you with a number of dishes that might not be typical at a steakhouse and with portions of meat that are not overwhelmingly huge. A Butter Squash Panna Cotta made a perfect Amuse Bouche. The Variety of Prawns was a beautiful entrée dish with clean flavours gathering the simplicity of the steamed ingredients with the surprising crush of tempura along with a prawn tartare which may be a bit intimidating for those who aren’t so adventurous with their food, but an absolute palate awakening for others. The Mix Green Salad with avocado, pomegranate, and cucumber ribbons came exactly on time to refresh our taste buds and get ready for the next round. At this point, the Saffron Risotto with a juicy and tender little piece of lamb chop was a great introduction to the main course – we just hoped that there was more of a generous helping of the lamb. And to top it all off, the chef’s collection of meat that summarises three different ways to present red meat; a name that translates onto raw, medium, and well cooked with a sample of steak tartare, medium–rare tenderloin, and short ribs that were cooked for six long hours. And of course, no culinary experience can end without something sweet. Lemon Meringue Pie was the chef’s choice for us and we loved every spoonful of it! If you wish to savour a mouthwatering, reliably good dinner and you’re up for a new, lighter experience of the traditional steakhouse, Legendz is ready to serve you just this, and then some! ✤

MEET INTERCONTINENTAL REGENCY’S NEW ITALIAN EXECUTIVE SOUS CHEF

Luigi Ferraro Hi Chef! Can you tell us a bit about yourself? I am Luigi Ferraro, I was born in Calabria - Italy, but for years now I am a "citizen of the world", because I live where my work brings me. Many experiences around the world before stopping in Moscow for five years, in one of the best luxury restaurants, during which I participated in some television programmes. I have received numerous awards at international level, including the nomination of "Ambassador in the world of good Calabria at the table"; the award "Italian Professionality in the World" received in Montecarlo; the award "Calabresi nel Mondo" received at the Campidoglio, Rome, and others. During the years in Moscow I also realised my first literary work, "Calabria in all the senses" published by Rubbettino Edetore. After Moscow, the choice to leave for India, where for almost two years I was the chef of the Sorrento Restaurant in the luxurious Shangri-La Hotel in New Delhi during which I received the prestigious “Top Chef” award as best Italian chef in India and other awards. Then I moved to Oman at the Shangri-La Barr al Jissah Muscat, and now I am here at the InterContinental Regency, now this is my working family. What has been your first impression of Bahrain? I have been here for a very short time, but I like its modernity, I adore the places that maintain their traditions, but where there is also a lot of modernity. They are a bit like my cuisine, tradition and innovation, but always with taste. What’s your philosophy when it comes to food? Mine is an authentic and delicate cuisine, focused on fresh ingredients, mostly seasonal, on simplicity and on the enhancement of the product through modern cooking that enhance and exalt the tastiness. My dishes have to be loving and exciting. My main goals are the product and the client: to maximise the raw material without distorting it, to raise awareness, to know and understand what the customer is eating, of course I do all this by combining tradition, innovation and creativity. What inspires you? How do you come up with ideas for the dishes? I love food and this makes it easy for me to become inspired to cook and want to cook. I love my job, I like to compare myself and grow in the world of restaurants; during my working career, I learned a lot, but I still have much to learn.

Any advice for aspiring chefs? My advice is to follow this work only if you love it. It's a beautiful job, but it takes a lot of time, study and sacrifice sometimes, but if you have passion all this is nothing but a pleasure. fact magazine

Decked up in aesthetically pleasing hues of blue and stunning traditional Persian ornaments, the restaurant combines a fusion of classic Iranian style with contemporary elements in a majestic setting. Offering an intricate selection of delightful ingredients, Iranian food is some of the most fresh and healthy in the region and also around the world. Starting our epicurean expedition on a healthy yet mouthwatering note, Pish Ghaza-E-Makhsous, our selection of hot and cold Persian starters was a literal party in our mouths. A remarkable variety of flavours and textures, the starters are the perfect combination of nutritional balance and aesthetic appeal. While each starter had us drooling for more, we couldn’t get enough of the Salad Olivieh: marinated chicken compounded with diced potatoes, carrots, green peas, boiled eggs and herb-infused mayonnaise as well as the mouthwatering Mirza Qasmi Rashti, a warm puree of baked eggplants seasoned with onions, garlic, tomato, eggs, cumin seeds and topped with cilantro leaves - SO GOOD! A glorious assortment of unique components and exclusive culinary methods, Iranian cuisine incorporates an array of spices that add particular tastes and aromas to the food. Featuring delectable ingredients, our next dish of Aash-E-Reshteh is a true traditional delicacy. A filling medley of chickpeas, green lentils, red beans, spinach, parsley, fresh mints and Iranian noodles, the flavourful concoction is all you need to keep you warm this winter. Comfort food at its finest! Since Iranian cuisine is known for juicy kebabs and vibrant rice dishes, we knew we had to tuck into some. Our next dish for the night, a Persian Selection of chicken koobideh, lamb koobideh, joojeh kebab, barg and kebab-e-sheshlik had us oohing and aahing from the get-go. The chicken and lamb koobideh are incredibly tender and oozing with scrumptious flavour, while the grilled joojeh kebab is juicy and succulent with hints of saffron seeping through. The selection is an excellent choice if you’re trying to cut back on red meat! If seafood is more your thing, our next dish of Kebab-E-Mahi should be right up your alley. 120 fact magazine

Fillet of hammour marinated in the traditional Persian way and grilled on a skewer, the dish is love at first bite. The fish is cooked just right, while the special traditional Persian spices give it just the right amount of kick. We couldn’t get enough! A true Persian classic, our next dish of Khoresht-E-Ghormeh Sabzi is one of the most popular dishes in Iran. A casserole of baby lamb with red kidney beans and fresh herbs served with saffron rice, the dish is stunningly delicious. The meat is perfectly done and melt-in-your-mouth tender, while the intensely fragrant and rich herb gravy truly brings the dish together. Our new favourite winter delicacy! While the idea of sweet indulgence always has our spoons at the ready, we were so not prepared for the yummy goodness we were about to experience. Makhloot, Iranian ice cream and faloodeh served with rose water, syrup and lemon juice is one of the finest foods we have ever had. The intoxicating blend of the creamy ice cream and faloodeh with the deliciously tangy pomegranate syrup is everything you could ever ask for in a dessert! An authentic Iranian treat, our second dessert of Raginak Persian Date Pudding is perfect for the holidays. A traditional Persian dessert with dates, cinnamon, cardamom, milk and brown sugar, the rich and luscious recipe will leave you feeling all warm, fuzzy and super satisfied! Delivering the greatest of Persian arts, hospitality, as well as impeccable dining, Golestan makes for a truly memorable experience. Eat, Drink & Be Merry Yvonne Cole is a Personal Trainer and believes that when you eat clean, train hard and trust the process, your consistency and patience pays off.

The festive season is once again upon us which means there might be a little more drinking, lots more eating and over indulgence. For some it’s been a hard year, and this is when you can take some time off and unwind, and for others it’s been a year of joy (quite a few of my clients have had babies this year). It’s time to get your party clothes out and put your dancing shoes on but don’t let all the hard work you’ve put in throughout the year go to waste. Now I’m not “The Grinch that stole Christmas” I’m just saying eat and drink in moderation. Try and stick to your normal exercise routine as much as possible and watch your eating habits. You can still have fun over the Christmas season just don't overdo it, and think about what you're eating. You're more likely to snack a bit more at this time of year so try healthy snacks like nuts, raisins, carrot sticks, cucumber sticks with healthy dips like hummus or guacamole. Once again I don’t want to sound like a killjoy but if you’re going to a Christmas brunch with free flowing alcohol try drinking more water, so every time you have an alcoholic drink make your next drink some water, your head will thank you in the morning. New Year Reflections Georgina Jennsen is the lady behind the popular lifestyle blog, blonde in bahrain. a social media influencer who loves all things luxurious.

It really is the most wonderful time of the year. The weather has cooled down enough to enjoy your favourite outdoor activities, and the evening air has a deliciously crispy chill. Oh, and then there’s the wardrobe. “Hello boots. It’s so good to see you again jackets”. Festive National Day lights are popping up all over the island, which do double, no triple duty, for both Christmas and New Years. It’s also the best time to start taking stock, by reflecting on the 11 months that have just flown by. Ask yourself what has given me most pleasure? Is there anything I’d do differently if I had the chance? Occupying your brain space with these kinds of questions helps you to focus on what you’d like the next year to look and feel like. The most pleasure I’ve gained this year has been from travelling to new and far-away lands. We spent summer in the Catalan region of Spain, and were completely blown away by the lush natural beauty of the landscape there. We’ll be heading back again soon. Being back in the saddle after a REALLY long time has also added a great deal of joy to my life. And what do I plan to do differently? Stress less. Easy to say, difficult to do, but my goal nonetheless. Xx ✤
