Food: Fuel or Pleasure?

W

hen we set out to work on the October issue, highlighting the fact that you can literally dine your way around the world without ever leaving Bahrain, we figured we'd simply introduce you to its culinary diversity – but stopped. Instead, we chose to celebrate the wonderful personalities behind the sheer variety of flavours. And no two conversations were alike. We interviewed chefs responsible for the impeccably plated dishes served to the country's glitterati, discovered a talent specialising in a cuisine you may not know, and tapped on the windows of unassuming food trucks to hear their backstories. The common denominator? Love. Everyone profiled in this month's cover story (p14) feels passionately about the food of their heritage, and it shows – through their dishes, through the anecdotes about their childhoods, through their ambitions. Elsewhere in the issue, we speak to a young hip-hop artist (p26) addressing a subject that has dominated conversations throughout the year: mental health. It's not every day that we come across a 21-year-old capable of building a fanbase through singing about the raw and real, hence our curiosity. Our chat culminated in him sharing an urgent message for the music community of Bahrain, but we think everyone should be listening. And on the subject of health: we also turn to Warren van der Mescht of UFC GYM Bahrain (p38) to learn more about the new face and future of fitness. And his insights may just inspire you. Lastly, in the absence of any real travel plans, we indulge in a little armchair travel (p40) by visiting the most Instagrammable natural wonders in the world.

SKY’S THE LIMIT Leave it to CUT by Wolfgang Puck to turn lemons into lemonade, as evidenced by its beautiful new dining concept.

W

e all heard it on September 17 – the sound of hearts breaking across the island when the dine-in option at restaurants was postponed for a further month. But stepping up to cheer up foodies everywhere? CUT by Wolfgang Puck, of course. The renowned steakhouse took matters into its own hands, recently launching a new al fresco venue inspired by the courtyard dining areas seen across Europe. What this translates to for you, the diner, is a gourmet dinner under the sky. You'll feast on the likes of Red Snapper Ceviche, Corn Cappelletti, and Steak Tartar as well as "Wolfgang's Classics" such as Veal Holstein Schnitzel. The new dinner menu is the brainchild of Executive Chef Brian Becher – who you’ll meet in the pages ahead – and his talented team. But as we all know, we savour food with all five senses, a fact that the restaurant has taken into account. To that end, there's a live DJ every night, décor elements such as dim lighting and 8

candlelight set the mood, lounge seating is in place for those looking to linger, and foliage aplenty adds a sense of place. And to further sweeten your evening out are the decadent desserts that refuse to take a backseat to all those premium cuts of meat. For us, it's a toss-up between the comforting Banana Cream Pie and rich Dark Chocolate Soufflé, but we'd be remiss not to mention the Fig Crumble that pairs a light raspberry sorbet with a crunchy hazelnut and almond crumble. Dinner at the new outdoor venue is served from 7pm to 11pm from Saturday to Tuesday, and until 11:30pm from Wednesday to Friday. It will remain in place until indoor dining restrictions ease – that's your next special occasion, sorted. ✤

TIME FOR TEA? Afternoon tea is always a good idea, but afternoon tea at Jumeirah Royal Saray? A berry good idea. Here’s why. Anna Maria Russell is a name we take seriously around here. After all, the 7th Duchess of Bedford unknowingly invented the concept of afternoon tea, having complained of the “sinking feeling” that resulted from mid-afternoon hunger. She felt the gap between lunch and dinner was far too long, and let's all just admit it: she was right. Anna would request the likes of bread, butter, and maybe a handful of biscuits in the evenings, washing it down with a pot of tea. So, of course, the culinary talents at Jumeirah Royal Saray stepped in, upgrading the now-beloved tradition to A Berry Good Moment – no pun intended. This rather aptly named offering is served daily from 2pm to 7pm on the terrace of The Palm Lounge, with everything – and we mean everything – in the sweets section infused with bright, juicy berries. There's lighter-than-air blackberry macaroons, eclairs of a rather unexpected colour (courtesy of strawberries), the famous Sachertorte cake accented 10

with raspberries, a vibrantly hued Blueberry & Mascarpone Dome, and more. In contrast, the savoury section brags a gourmet selection that includes rice croquettes with beef ragout, open-faced sandwiches with smoked salmon, homemade duck ham with melon, and tandoori chicken on crispy tortilla in case you're craving a hint of spice. But would afternoon tea even be afternoon tea without warm, freshly baked scones? Hint: no. Here, the mouthwatering scones are served with homemade preserve and clotted cream. LOVE FTW Looking for the most luxurious ice cream in the Middle East?

It's not every day that an ice cream parlour makes the news. Then again, Florencia is no ordinary ice cream parlour. It was recently crowned the 'Best Luxury Ice Cream in the Middle East' at the 2020 Luxury Lifestyle Awards, a global award selecting, recognising, and celebrating the best in luxury across the globe. Over 10,000 goods and services in 400 categories from 60 countries were evaluated to reveal the best of the best, and Florencia is in great company – brands as Chanel, Dom Perignon, and Ferrari were also named winners. But what about the wonderful personalities behind these flavours from far-flung places? Here’s a peek.

A

merica's culinary inventions have essentially conquered the world – you can find a McDonald's outlet in just about every nook and cranny on the planet. But anyone who has experienced the joys of soul food knows there's so much more to American palates than burgers and hot dogs. A style of cuisine generally associated with the southern states, it's about more than fuelling the body. Soul food brings together African Americans from far and wide over a common cultural narrative, a common racial identity. "Soul food is food that brings comfort," says private chef Markeeta Hardin, who hails from Tennessee. "It's food that everyone loves to eat, but not everyone knows how to create. There's a good mix of meats, fried and smothered in gravy. There's also lots of vegetables, but the most popular is collard or turnip greens. You must have baked macaroni and cheese and, of course, cornbread." But the key ingredient? "The only way to prepare soul food is with love – nothing more, nothing less." While Markeeta is known by many for her role in the US Navy, she is loved for bringing a taste of her hometown to Bahrain – like the other chefs you'll meet in the pages ahead. "I was fortunate to share my love of soul food by hosting my very own Soul Food Brunch at one of the oldest restaurants in Manama, Upstairs Downstairs. Friday brunches are extremely popular in the region, so to have the opportunity to share my 16

fact magazine

style of cooking and serve a variety of southern favourites was extremely special. I was ecstatic over the support I received from a diverse group of people." Unsurprisingly, the diversity of Bahrain has influenced her as a chef. "It excites me when I adopt the culinary traditions of other cultures – whether it's cooking with a new spice or creating a local dish. I'll create a local favourite, but adjust the recipe to make it my own." Here, our talk turns to how Markeeta’s relationship with food evolved over the course of this complicated year, and we quickly see that the famous 'Southern hospitality' is alive and well. "The joy that food brings to others still makes me happy. Although I loved hosting the brunches, I equally love teaching virtual cooking classes and preparing meals for locals who suffered financially during this pandemic. That makes my heart full." Reflecting on how her childhood shaped her, she says, "My mom cooked when I was a child, but she played it safe, always making the same dishes. My father never made the same thing twice, though. He would just throw ingredients and spices together – he'd create food. I adopted that attitude and skill extremely early in life, so growing up, I'd create all these crazy dishes for my sisters when my mom would leave for work. It became a passion." What a refreshing revelation! Time after time, we meet chefs who credit their mothers for their love of cooking. This is a first, and we love it. ✤

O

ne takeaway after a chat with the famed chef Brian Becher? Don't be nervous if you invite him over for dinner. "People have a misconception that I'm judgemental about food, but there's only two types of cooking: good cooking and bad cooking. As long as the food tastes good, nothing else matters. In fact, here in Bahrain, only one of the six or seven restaurants I frequent is fine dining." The Executive Chef of CUT by Wolfgang Puck may be the talent behind a menu that charges BD12.5 for a Philly cheesesteak, but in his free time, he's a regular at the likes of Badawi and Pho. Like Will Smith's most famous character, Brian hails from West Philadelphia, so it's hardly a coincidence that he has singlehandedly elevated the Philly cheesesteak, a culinary icon of his hometown. "The cheesesteak we serve is pretty far from traditional," he explains. "It’s my vision of what a cheesesteak should be, with consideration to what the locals like. In Philadelphia, people would want the bread a bit firmer, and several cheese options. Part of the reason I wanted to serve cheesesteaks is that it’s an opportunity for me to share the food of my childhood with the friends I have made." He explains why a big part of Philadelphia's dining scene is a kind of bastardised Italian background, as he describes it. "From the 1910s to 1930s, you had a big amount of people moving from Southern Italy to New York and Pennsylvania, and that heavily influenced the south of Philadelphia, where both of my parents are from. An interesting thing here: growing up, what I was told was Italian food has very little to do with what is served in Italy – I only learned that when I got older." Brian's mother is a terrible cook – his words, not ours, we promise. "She'll tell you the talent skipped a generation because my maternal grandmother was a phenomenal cook," he says with a laugh. "My mother's parents are from Southern Italy, so Italian food influenced me greatly because I still have a deep affinity for pasta. I love simple things like flour and water. I love the idea of creating something by hand that will go on to nourish someone I've never met. That's an intimate connection." Brian recently overhauled the menu at CUT by Wolfgang Puck, and peeking through all those prime cuts of meat is his Italian heritage.

"We created a whole pasta section because it's something I'm passionate about. There's one dish in particular, a farfalle pasta with preserved lemon, butter, Parmigiano-Reggiano, and poppy seeds – it's an elevated take on pasta with butter. I'm serving the adult version of what made me happy as a kid." Life in Bahrain has certainly infused Brian with a 'find local' mindset. “When we opened, we were primarily using things like Dover sole and salmon, and then it dawned on me: we're on an island. Hammour is maybe the tenth best fish around? Between shari, sikken, and rabeeb, there's so many better ones," he says. It's this mindset that only amplified as a result of the pandemic. "I became more focused on finding local ingredients because, in Bahrain, a lot of things come from outside – and that became really restricted around March/April." The unprecedented circumstances also made for an experience he never saw coming. “Delivering a cheesesteak in a Rolls-Royce – talk about a bucket list item!" ✤ fact magazine

peaking of Italy: the name Susy Massetti needs no introduction – whether you view food as fuel or pleasure. The beloved Italian chef is responsible for some of your favourite culinary haunts – Fishbone and Masso included. Oh, and not that we have a crystal ball or anything, but it's only a matter of time until L'Orto is added to that list. Susy's latest venture is inspired by her love for gardening, making it an apt name for the new restaurant – l'orto in Italian translates to 'vegetable garden'. Admittedly, it came as a surprise to us that Susy attributes Bahrain for being able to pursue her dream of organic farming. "Moving to Bahrain has definitely influenced who I am as a chef," she says. "For the first time in my career, I felt 'embraced' not only for bringing good food – which is my job, after all – but also because customers here understand my wholesome approach. I believe true hospitality 'restores' people, so I serve food using so much more than just ingredients. It also contains care, time, and a sincere effort to nourish the soul as much as the body. This has pushed me to go beyond the work in the kitchen and chase my dream of becoming an organic farmer in the pursuit of healthier, more sustainable products – and give back to this country that has given me so much." We discuss the culinary diversity of Bahrain with Susy, who has been instrumental in bringing quality Italian food to the 18

island. "Indeed, I believe I brought the flavours of my Milano, the flavours I grew up with, the flavours I absorbed through my mother and grandmother’s cooking to Bahrain. I strive to take my guests on a journey of authentic flavours rooted in the history and culture of my home country – to tell them my story through food." Respect, she says, is key. "My childhood taught me the importance of good ingredients, but foremost, to respect good ingredients and therefore respect the people I am cooking for. I can almost remember the first time I ever made anything and, since that day, there's a collection full of flavours, smells, noises, and colours that I happily carry with me everywhere I go!" So how did 2020 contribute to that collection? "If possible, my relationship with food improved. I have never been a baker as patience is not my forte, but I’m now in love with baking. 2020 has given me the time I needed to regroup, considering all my ongoing projects. I've been able to revisit and share many of my recipes and, of course, develop new ones." Susy is also optimistic about our new normal. "What I noticed most is a desire to truly understand what food does to you. Not only did the pandemic get more people interested in cooking, but they also seem to share both food and recipes more than before. Perhaps social distancing made us realise how distanced we were before, despite all that technology designed to connect us?” ✤

W

e spent over an hour talking herbs and spices with the talented chef Goh Boonwah – if that's any indication of how charismatic he is. Known for his epic, impeccably plated Japanese creations at the achingly trendy Bushido, he's a native of Malaysia, a piece of this puzzle that has us instantly hooked. Malaysian cuisine (like the people of Malaysia) is culturally diverse, drawing inspiration from the likes of Indian, Indonesia, Chinese, and Thai food. It's no wonder that the brunches at Bushido, during which Goh's heritage really shines, are incredibly popular. “Brunch is when I’m able to play,” he says. “I get to serve laksa, nasi lemak, satay, mee goreng, and prawn noodles. You'll never be bored of our brunches because we're always changing it up." Together, we go back in time, discussing how spices first made their way to Malaysia. "We didn't have them until they came from India, especially via Malacca, which developed into an important trading port during the 16th century," says Goh. "Nowadays, the ingredients and cooking techniques of the same dish could be totally different around the region. For example, the watery sambar in India would differ from the thick sambal in Indonesia. But Malaysia has so many different populations. You can find everything from Chinese chicken rice and wonton noodles to laksa. You won't just eat curry there – you can try something new every day." Goh formally trained under Japanese chefs, but like many of the culinary talents we spoke to, his mother played a big role in who he is today. "When I was growing up in the province, my mother wouldn't just cook Chinese food, she'd cook all types. The area was dominated by Malays, which influenced her. But what made her food so special is that she cooked from the heart. She knew I didn't like tomatoes, carrots, and sour foods, so she'd adapt traditional dishes according to my preferences. That's when I first had an opinion about dishes." The chef's passion for food saw him shadow his mother from a young age. "I'd always be beside her when she was cooking because I love to eat. You don't ever forget the taste of your mum’s food, right," says Goh, taking us on a trip down memory lane. "You grow up craving those dishes, but no restaurant can ever compare to the taste of her cooking. It's because she made it with love." Goh

tells us of the day his mother stepped into Bushido for the very first time, an endearing anecdote we'll remember long after. "I brought her to the restaurant during one of the brunches, so the place was packed. She was awestruck by the size, the atmosphere. But she never once asked me about my position – all she knew was that I'm a chef. She was shocked to hear I'm the Chef de Cuisine. It was such a proud moment." One chat with Goh, and it's clear where his relentless work ethic comes from – a challenging childhood. “I was seven and my youngest brother was only five months old when my father passed away. How was my mother supposed to work? But she is so strong. I remember she'd wake up at four, five in the morning to start making desserts, which I would then sell. I'd walk around with baskets of food, going from here to there. I was still a kid at the time – all I wanted to do was play. But this is why food is very much a part of me, of who I am. It’s in my DNA." ✤

nd on the subjects of spices, let's turn our attention to the one cuisine with universal appeal: Indian. But it's not the chef of an Indian restaurant we spoke with – it's Hasan Al Majed and his wife Shabnam, who own and operate The 7 Dosa and collectively represent both India and Bahrain. "Our main goal was to bring Indian street food to Bahrain. You can walk down the streets of New Delhi or Mumbai and easily find pav bhaji and vada pav on the road, but there was nothing like that here. It's a small island, after all," explains Hasan, delving into how the popular food truck in Tubli came about. Hasan is half-Bahraini and half-Indian, and has fond memories of travelling to Mumbai with his mother as a child. "We took annual trips to India during the 90s, and I loved going out to eat street food. I always found it interesting. My mother also cooked a lot during those days, so the smell of spices all over the house inspired me to try cooking with her. She used to bring her spices from Mumbai, and they had an intoxicating scent – it made the food in our home totally different. My neighbours would always ask me what my mother was cooking," he recalls. Shabnam, meanwhile, is from Mumbai and now a citizen of Bahrain. The two have been together for 16 years. Oh, and we're utterly taken by the role of food in their love story. "When Shabnam and I started dating, I was shocked because she'd bring food from home when we met outside," says Hasan. "I'd tell her we're going out to eat, but she insisted that she enjoyed cooking. She loves her time in the kitchen." Shabnam tells us that she and her siblings would always return home from school to a hot meal. "My mother was known for her kutta hua gosht (meat

minced with spices) and machli ka salan (fish curry). I still have vivid memories of these dishes." Today, the two bring together the most popular street food dishes from across India to Bahrain – idli, masala dosa, and medu vada included. "Our customers always tell us how much they love our vada pav. One customer, who hails from India and hasn't been able to fly back for nine years, says our food brings back memories of home," shares Shabnam. Not only does The 7 Dosa boast a royal seal of approval – HH Sheikh Khalifa bin Salman Al Khalifa paid a visit soon after its opening – but customers here range from Australian to Pakistani, British to Chinese. Like the harmony in their marriage, the street food at The 7 Dosa sees the mixing of Indian and Bahraini ingredients together. "We pair coriander powder, turmeric, and a homemade Bahraini curry powder with spices like garam masala and chilli powder from India. We also mix Kashmiri saffron with local saffron, which makes for amazing flavour in our saffron milkshakes. We're always experimenting with different styles of doing the same thing," explains Hasan. And the proof is in the proverbial pudding – The 7 Dosa launched with 29 menu items in November 2019. Today, there's 101 things to choose from. So is opening a restaurant the next step? "We studied the idea for a few months, but then coronavirus happened, so we had to take a step back." Not ones to be discouraged, they started home delivery after countless customers called with the same request. "We learned a lot during this period because we kept creating and experimenting," he tells us. "We almost forgot about the pandemic outside." ✤

A

little mystery never hurt anyone – especially if said mystery is behind the best, most authentic tacos in the country. Chef Brito, who prefers to maintain an air of anonymity, is the talent behind Comalito – or the best thing about Mondays, as some know it. The Juffair-based food truck makes an appearance only once a week, but behind it is a story we fell in love with. "A comal is the flat iron pan on which tortillas are cooked, so the name Comalito comes from a 'toy' I was given by my grandma when I was a child as she would have to babysit me while cooking. She kept me in the kitchen because she wanted to keep an eye on me, so to avoid any accidents, she gave me a toy – honestly I think it was just a plastic plate," she says with a laugh. "She would tell me to make tortillas on my comalito, so there I was 'cooking' on a plastic plate." To say the pop-up is a labour of love is an understatement – a place for Tex-Mex, it isn't. "Comalito is an homage to my grandma and my beautiful childhood memories in Acapulco, Mexico. The tacos I make are the same ones my grandma used to make when I was growing up. Her cooking always brought me comfort. The memories I have of her roasting chillies to make delicious salsas and even burning my fingers while turning the tortillas over – it was hard work, but it was all worth it as the tacos were delicious. I could see how happy she was when the whole family was fed and satisfied." Brito says she wanted to share a piece of that comfort with people at affordable prices in a place so far from home. "Once

you bite into the taco, at least for that moment, you will be transported back to Mexico." Her grandmother's wisdom made for a full-circle moment earlier this year, a time when the pandemic changed life as we knew it overnight. "She taught me to respect the ingredients and the hard work that goes behind everything in the process, from the farmers harvesting the corn and chillies to the people transporting the ingredients to us. She taught me to be proud of our heritage and honour it while cooking. Today, most of our ingredients are shipped directly from Mexico, and I now understand what she was trying to teach me about respect. I have learned to treasure the ingredients even more after finding different ways to get them here, so the food quality wouldn’t be affected by this situation." At Comalito, Brito personally makes the masa – a combination of corn flour and water – from scratch, and all the tortillas are pressed by hand and cooked individually. "I’d never handpressed so many tortillas in my life until I started the popup!" And living in Bahrain has certainly honed her culinary skills. "I found myself longing for the taste of those tacos ever since I left Mexico. What they have here in Bahrain is not even close to the tacos I grew up with, so I started cooking and importing ingredients. I became more resourceful as a lot of the ingredients I need for the tacos cannot be found locally, from the tortilla presses to the organic corn flour. It makes me appreciate every single tortilla and ounce of salsa due to the hard work it takes to make them." ✤ fact magazine

ut no conversation about all these chefs serving up a taste of their hometowns would be complete without examining the reverse – the island's sizable expat community broadening its culinary horizons by discovering Bahraini cuisine, both traditional and contemporary. One name synonymous with the latter? Chef Tala Bashmi. The poster child for playing with food, she became a household name after starring on Top Chef Middle East. But Tala is so much more than a finalist in a cooking competition. She’s the head chef of Fusions By Tala, a dynamic eatery where everything you eat boasts her touch – the ingredients are handpicked by Tala from local markets and vary depending on the season. We can't help but ask her thoughts on how 'fusion' is sometimes known as the 'f-word' in the world of dining, often getting a bad rep for simultaneously corrupting two different cuisines. "Fusion, confusion – there’s definitely a fine line there," she admits. "I think it’s all about how it’s interpreted. The goal isn’t to try to be as crazy as possible. The magic happens when we find the delicate balance between flavours and techniques." Creative and resourceful, Tala tells us about how her childhood impacted her approach to food. "I grew up going to local markets, so seasonality – especially when it comes to seafood – as well as the locality of produce is really important to me. Though our resources are limited, especially during the summer, I believe it takes a better chef to create something with very little. It's easy to create a great dish with some of the world's most expensive ingredients, but to create a dish at that level using humble ingredients? That takes skill." And it's a skill she possesses in spades, challenging misconceptions about local cuisine by reinventing it. "Bahraini food is often

perceived purely as sharing comfort food – large portions, riceheavy, really rich. This is because jobs in the past tended to be labour-intensive, so this one meal had to be rich in order to keep people full all day. I’m now trying to capture the essence and flavours of our cuisine while transforming it into a lighter, more elevated version." Tala is not one to shy away from taking risks, experimenting with flavours from the world over. "Roughly 50 percent of Bahrain’s population is made up of expats, so exposure to a variety of cuisines helped me understand so many new textures and techniques. As a result, my food isn’t purely Bahraini, but based on everything I grew up eating." She does, however, have an affinity with Scandinavian cuisine. "Their seasons are just as extreme as ours," she explains. "They use fermentation to preserve produce for the winter – when hardly anything grows – so I’ve adapted that in order to preserve our ingredients when the scorching summer comes along. Fermentation is found in most of their dishes and, to me, allows chefs to create new and nonexistent flavours." As for experiments gone awry? "I recently tried to recreate a unique gnocchi recipe from Spanish restaurant, Mirazur. Unlike the traditional recipe, this one uses potato starch. When I made it, the texture was so slimy and off-putting – I won’t say what it resembled, but let's just say it scared me a little," she says without a hint of irony. Tala continues to take this unusual time to further develop her craft, hoping to infuse the year with some redeeming qualities. "Because the experience is an important element of my food philosophy, I've been focusing on creating more fun and mentally stimulating experiences. I want to bring some magic back into 2020 – the good kind." ✤

HEAR HIM OUT Not ones to take the words “future of the Bahraini rap game" lightly, FACT set out to learn more about hip-hop sensation Wrista, only to discover a young artist with an urgent message. Listen in.

S

o asserts the song “Show Love” by Abdulrahman Al Sahaf, a.k.a. Wrista. The Bahraini hip-hop artist has already released several singles, acquired that coveted little blue tick on Instagram, and been described as everything from "living legend" to "the future of the Bahraini rap game". Did we mention he’s only 21? But Wrista’s modesty is evident from the get-go. “Comments and messages like that overwhelm me, they make me want to focus on making songs," he says of the praise he garners on social media platforms. "Occasionally, I can be demotivated to release a song because of the number of views on my previous releases. I have over 36,000 followers on TikTok, but there, it’s a bit of comedy and music combined. People know me for acting, skits, the commercials I’ve done – and a little bit for music. But I want my fans to access at least two or three new tracks per month. That’s my aim.” We sense a level of self-awareness as Wrista elaborates on the work ahead. “I’m not Jay-Z, I can’t afford to only drop a song once every other mont`h. If you’re trying to make it as an artist, you have to work three, four, five times harder because we’re living on an island. And at the end of the day, when you do have fans who vibe with your stuff, you want to keep them close.” The aforementioned “Show Love” dropped last month and speaks of the struggles faced by artists. “The song is about how we don’t receive enough attention, especially in the Middle East. It’s called ‘Show love’ because it’s about the lack of love we receive, despite the amount of love we give to the culture.” fact magazine

IT’S CALLED ‘SHOW LOVE’ BECAUSE IT’S ABOUT THE LACK OF LOVE WE RECEIVE, DESPITE THE AMOUNT OF LOVE WE GIVE TO THE CULTURE.

Wrista has been rapping since he was 12 and is vocal about his observations. “What I’ve seen is that people are quick to share Drake’s latest post or The Weeknd’s new song. They’ll repost it, but even if I’m talented, they still see me as ‘that neighbourhood kid’ because I was there through their upbringing. They’re more reluctant to provide you with the support you need as an emerging artist.” So what are melophiles looking for? “Commercial music works better in Bahrain. There are a couple of top artists out there, and a lot of their music is very commercialised,” he says, alluding to a couple of songs that look to fried snacks for inspiration. “They sing about standard stuff with a catchy beat,” he says matter-of-factly. “I’m not saying they can’t express themselves lyrically, they just know which formula works. Audiences aren’t really fixated on the whole substance thing, unless you’re an artist who’s established abroad. Oh, an interesting point here: Majid Al Maskati, who is signed to Drake, is from Bahrain. However, he didn’t accumulate his success while he was here; it happened in Canada.” And is the country’s size a disadvantage? “Definitely,” he replies without hesitation. “You’d think it would be easy to grow in a place with a population of only 1.5 million, but it’s actually harder. Because once you filter out those who listen to rap, then filter out those who listen to rap in Arabic, you’re left with a minority. How will you market yourself to that specific niche?” Still, Wrista has built a reputation for singing about the raw and real (think: mental health struggles, misplaced love, and other hurdles). But it’s not just 2020 – and its many challenges – that prompted him to sing about such issues. He’s ahead of the curve. 28

“The microphone has been a therapeutic tool since I first picked one up, so I was never fixated on the commercial side of making music.” Wrista reveals to us some of the hardships he faced at a younger age, all of which have moulded him into the artist he is today. “All those experiences, I channel through music. It’s my therapy, so I make sure my music consists of me.” Note to self: don’t expect to see a Maybach 57 or Ferrari 360 Spider make a cameo in his music videos anytime soon. “I will never contradict myself. If what I have is a Nissan Altima, then that’s what you’ll see in the video,” he says with a laugh. “I don’t want to depict an image that’s not me.” While Wrista’s private struggles have long steered his identity as an artist, we ask him how the year – which continues to see the human race suffer collectively – has impacted his music. “Honestly, it has felt like a blessing in disguise. I work in TV, as a presenter and a voiceover artist, and it’s a very demanding field. But when quarantine kicked in and university moved online, I had so much more time, so I utilised it for music. I knocked out, something like, seven or eight songs in a matter of three days.” A self-proclaimed hustler, he’s done everything from sell beard oils to flip EarPods in his younger years to save up for music equipment. Having said that, Wrista is not one to evade unpleasant emotions, turning to sad music to counter sadness. “I know this sounds messed up, but it makes sense in my head,” begins his rationale. “When I’m low, listening to sad music makes me happier. I don’t want to force happiness by listening to happy music – it seems fake. Instead, I’ll accept it, and listen to R&B or cloud rap because sadness and sadness sort of cancel each other out.” Next up for the musician is the mid-October release of the “Left for Dead’ music video and a single titled “Battle Through Depression”, the latter of which is already making waves because of its subject matter. “Many are relieved that someone within Bahrain is willing to speak about a topic as sensitive as mental health, especially considering the stigma around it in region,” he explains. Wrista feels that while the older generation is hesitant to address the topic, there's a shift in mindset amongst the country's youth. "Anyone born after 1998-ish, they feel comfortable speaking about it, especially on Twitter. This is a change I’ve only seen in the past two to three years.” As for the future of the local music scene? “It will remain undiscovered unless we do something as an audience. The future is in the listeners’ hands. Let’s appreciate our artists while they’re still here. It costs nothing to hit the like button or leave a comment,” he says emphatically. “As harsh as this sounds, there will be no future unless we cultivate an environment where like-minded creatives support other likeminded creatives because it's terrible right now. There are artists who refuse to share others’ songs but beg people to share their own. That needs to change. We need to uplift our artists before they find fame in Canada or America or wherever, and are then labelled 'that Bahraini who made it'. Sure, made it, but not with your support. We need to love more and hate less, as hippie as that may sound." Amen. ✤

Despite strong performances from an all-star cast that includes Twilight’s Robert Pattinson and Spider-Man’s Tom Holland, yet The Devil All the Time is arduous viewing in its unflinching portrait of the effects of war and the evil inside us all. The acting is strong, the cinematography is terrific, and the excellent narration is provided by the author of the original novel, Donald Ray Pollock. Ultimately, The Devil All the Time is an interesting drama that offers a complex examination of how sin and trauma are handed down from generation to generation.

READY, SET, SWEAT, By now we know ‘business as usual’ will never be the same, but what does Warren van der Mescht, General Manager of UFC GYM Bahrain, reveal about the new face and future of fitness? Listen in.

Our September issue was themed the 'new normal', a term that's not going away anytime soon. What does the new normal inside a UFC Gym look like? We are all tasked with the challenge of accepting the new normal etiquettes of the gym during this pandemic. As annoying and time-consuming as they might be, we cannot stress enough the importance of following these guidelines to a T. As a business, we are privileged to be in a position to reopen our doors again to our valuable members and the public. However, this comes with a great deal of responsibility to keep all individuals safe, including our staff. We urge everyone who enters the gym to follow the necessary steps, like wiping down all equipment before and after use, avoiding any social interactions, bringing their own towels and water, washing hands on regular intervals, and – most importantly – staying home if they're not feeling well. All equipment is spaced out as per the regulations of the Ministry of Health, and we have provided adequate self-cleaning stations 38

where members can sanitise their hands and get a fresh pair of rubber gloves if required. Our main priority is the safety of our members, and we ensure they can enjoy a pristine environment and return home healthy and refreshed. UFC GYM Bahrain has also launched a very efficient app that requires all members to book their time slots before entering the club. The app not only helps us to be aware of the number of members in the club, but also permits us to monitor that all individuals adhere to the 90-minute cut-off period set out as per the regulations. What have been your initial observations and concerns during the reopening process? We have noticed a higher percentage of people return than initially expected. Due to the regulations, we haven't been able to run the club at full capacity. On the positive side, it allows us to ensure all measures taken are correctly implemented and identify any weak spots that we can work on to provide our members with

the most pleasant experience possible. We're very excited to have all our members back. However, our main concern is their safety and how to deliver the UFC Gym experience keeping that in mind. Have you seen a change in the type of people who have expressed an interest in the gym post-lockdown – age, gender, demographics, or background? It was no surprise to see our regulars – those die-hard fitness enthusiasts – back at the club on day one of reopening, but there is a clear indication of individuals who never entered a gym prepandemic joining them. I think it's mainly because the past five months have made us not only more conscious about personal hygiene, but also highlighted the importance of having some form of physical activity during our daily routines. With our diverse class schedule, we make it easier for people to fill that gap with so many different types of classes conducted by highly energetic coaches. It's easy to understand why members choose to join them.

To deal with the pandemic, many clubs and studios have adjusted their sights on a new reality inspired by an innovative and creative approach to keep their members motivated and active – all by embracing technology. With social distancing being the standard, online fitness platforms and home-workout apps have become the new trend, with gyms and studios all over the world tapping into digital opportunities to stay connected to their customers. It might not be the same as facing a high-intensity class or workout with your gym partner, but it is a means to reach your fitness goals and an opportunity to interact. Virtual classes might not be the most popular method, but they do play an essential role in the 'new norm' of the fitness industry. With technology getting more advanced every day, I'm excited to see what the future holds and how virtual classes will evolve. ✤

Many people's health took a hit during the past few months. We haven't been as active, many of us have struggled with anxiety and depression over job losses and pay cuts, we were detached from our communities, and some even had to tackle the virus. What advice do you give your clients about getting their health and fitness back on track? I think, as human beings, we have a unique ability to adapt to our situations and environments – even if the conditions aren't favourable. Surely, we all have experienced some level of trauma during the pandemic, whether we have been directly affected by the virus or through certain limitations to our normal daily lives. The aftermath of the pandemic will long linger and, undoubtedly, some have been affected more than others. Having said that, we cannot get caught in our feelings of despair. It is essential to acknowledge that a majority of individuals have not only suffered a lack of physical activity due to restrictions and lockdowns, but also experienced a decrease in mental health. We are social beings meant to interact and explore, and not being able to do so has impacted us on a much deeper level than we could have imagined. My advice would be to accept our current state and realise that it is okay to feel vulnerable and overwhelmed. Physical health does not mean much if we are mentally drained, and I therefore advise to focus on self-care above all else. I urge our clients to make peace with situations out of their control and work on the aspects that they can control. Negative thoughts create negative feelings, so fact magazine

Now, with the pandemic not showing any signs of slowing down and the environment reaping the benefits of globetrotters staying put, the energy experts at SaveOnEnergy scoured Instagram to determine the world’s most Instagrammable natural wonders, collecting and analysing how many times each destination was hashtagged. 1. Yosemite National Park, USA Crowned the most picturesque natural wonder in the world, Yosemite National Park has racked up roughly five million hashtags on Instagram – and for good reason. Representing both peace and power, the national park is home to hundreds of square metres of natural wonders ranging from gracious waterfalls and stunning meadows to deep valleys and towering granite monoliths. Not only is Yosemite National Park a popular spot for marriage proposals and the occasional engagement, but it's also one of the few places in America that boasts moonbows. All it takes is a clear sky and a full moon, et voilà – a lunar rainbow is formed. fact magazine

Accumulating a whopping 4,607,444 hashtags, Niagara Falls is a close second on this list. Considering the multitude of tourist attractions in the vicinity – arcade games, gokarting, and a butterfly conservatory included – thousands flock to the Canadian landmark to strike a pose in front of this truly majestic waterfall on a daily basis. And while many other falls are 'taller', what makes Niagara Falls so special is its combined height and volume. Over 168,000 cubic metres of water go over the crestline of the falls every minute during peak tourist viewing hours. Oh, and in case you're curious, that’s about a million bathtubs worth of water every second.

Coined as "the one great sight every American should see” by Teddy Roosevelt, it's no surprise that Grand Canyon ranks as the third most Instagrammable natural wonder in the world – and grand it is. At 446 km long and 1,857 meters deep, the canyon is visited by roughly six million tourists annually, so it’s no wonder the warm ombre landscape has been hashtagged more than 4,000,000 times on Instagram to date. Interestingly enough, there's a town located at the base of Grand Canyon: Supai Village. Not only is it inaccessible by road, but it's also the only place where mail is still delivered by pack mule. True story.

The only desert on the list, the Sahara receives the title of the fourth most Instagrammable natural wonder on earth, courtesy of over 2,200,000 Instagram hashtags. Spanning an impressive 8,600,000 square kilometres, the Sahara connects to 11 African countries and comprises a third of the entire continent. It's also still renowned for its eerie silence and breathtaking tranquillity, despite those iconic dunes being home to more than 70 different mammals, Yes, it sizzles in the summer months (temperatures average between 3846°C), but what few realise is that it's third largest desert behind Antarctica and the Arctic – both of which are cold deserts.

The Danube Delta in Romania rounds off the top five most Instagrammable natural wonders, accumulating a hefty 1,638,573 hashtags. The second largest of its kind in Europe, this landform is composed from deposited sediment carried by the Danube River into surrounding oceans. Blue and vibrant, the river attracts plenty of tourists, many of whom are there to capture the wildlife that surrounds it – the delta hosts over 300 species of birds, making it a haven for birdwatchers. The Danube River also happens to be the most cosmopolitan river on the planet, running through four capitals: Vienna, Bratislava, Budapest, and Belgrade.

Falling short of the top five, the Galápagos Islands place sixth on this list, with 1,612,457 hashtags from visitors. Based in Ecuador, these fascinating islands are home to plenty of volcanic activity and famously known for their mention in Charles Darwin’s evolution theory. What’s more, the Galápagos Islands straddle the equator. Translation? An equal 12 hours of daylight and 12 hours of night throughout the year. While the islands themselves serve as stunning scenery, many of the photos on Instagram highlight their biodiversity. Our research revealed that 97 percent of the islands are deemed a national park, and half of the land species are endemic to the Galapagos.

Crowned as Instagram’s seventh most popular natural wonder, Ha Long Bay in Vietnam’s Quang Ninh province has been hashtagged a remarkable 1,243,473 times. A jawdropping collection of majestic caves, emerald waters, and jagged limestone pillars, this UNESCO World Natural Heritage site in the Gulf of Tonkin is an incredibly popular destination for kayaking, scuba diving, snorkelling, and hiking – yet remains largely unaffected by humans as most of the 1,600 islands here are uninhabited. And while the bay is surprisingly shallow – it's just over 10 metres at its deepest point – nearly 1,000 species of marine life have been recorded swimming in the area.

8. Aurora Borealis, Iceland Better known as the Northern Lights, the Aurora Borealis in Iceland receives the title of the eighth most Instagrammable natural wonder on earth, racking up 1,167,915 hashtags at present. Named after the Roman goddess of dawn, the Aurora Borealis graces clear night skies with a magnificent light show in the dead of winter. Admittedly, this astronomical phenomenon is unpredictable, but tourists who are fortunate enough to witness it experience a bucket list must. For the uninitiated, the ethereal (usually green) glow of the Northern Lights occurs when electrically charged particles released from the sun enter the earth’s atmosphere and collide with gases such as oxygen and nitrogen. 44

9. Mount Everest, China/ Nepal Humans have been obsessed with the idea of conquering Mount Everest since 1921, when the first summit attempt took place, so it's hardly surprising to see it on this list. With 1,125,527 Instagram hashtags overall, the world's tallest mountain is named the ninth most Instagrammable natural wonder in the world. Standing at a commanding elevation of 8,850 metres, Mount Everest is one of the most popular tourist destinations on earth. Eager to capture its handsome heights, visitors frequently take to Instagram to share the spectacular views, but the mountain is not without tragedy. Over 300 climbers have died due to avalanches and altitude sickness, most of them while descending.

10. Pamukkale, Turkey Narrowly placing in the top 10 with 900,429 hashtags, Pamukkale in Turkey is the tenth most Instagrammed natural wonder in the world, drawing this list to a close. Here, the white travertine cascades resembling frozen waterfalls and terraces of shallow pools are created by the waters of thermal springs reacting with the air. This surreal natural wonder has also earned bragging rights due to the proximity of Hierapolis, an ancient GreekRoman city rife with incredibly well-preserved ruins. ho doesn’t love a brand-new BMW? We at Fact magazine have had the privilege of test driving an array of BMW models over the years and are yet to be disappointed by any of its designs. This month we were offered the opportunity to put the firstever BMW 2 Series Gran Coupé 218i through its paces, by the great team at BMW Bahrain. Needless to say, we jumped at the opportunity and soon found ourselves thoroughly inspecting this impressive vehicle. The appearance of the front end of the Gran Coupé is highly aggressive in nature, highlighted by the three-dimensional mesh design of the kidney grilles featuring a horizontal finish instead of the classic vertical design. The lines running across the bonnet cannot be fully appreciated in pictures and need to be viewed in person for one to truly recognise the beauty of its construction. The slightly angled LED headlights have been superbly sculptured whilst the gloss black finish of the splitter and front air intakes all add a further touch of class. The elegant yet powerful presence of this 2 Series Gran Coupé flows from the front to the flanks in a seamless fashion, revealing a crisp and clean side profile. The alloy wheels are available up to 19-inches in size, whilst the four frameless doors accentuate the premium feel of the vehicle. At the back end, the sporty nature of this car is emphasised by its rear lip spoiler and twin-tailpipe exhaust system. The upturned L-shape of the LED taillights guarantee a striking presence on the roads at night, whilst the gloss black touches provide a first-class finish. The superb quality exhibited by the exterior of this 2 Series continues in the interior, with high-end materials having been used throughout. All of the trimmings and finishes are first-class, complimented by the soft, ambient lighting. The front seats are heated, comfortable and supportive, giving the driver a sense of control over the vehicle. The layout of the cockpit is functional with all controls and features precisely where you would want them to be. In the back, there is plenty of head and legroom on offer as well as natural lighting thanks to the large windows. A panoramic sunroof is an optional extra that further adds to the already well-lit interior. The rear doors may be on the smaller side; however, the openings have been perfectly designed, ensuring easy, unobstructed movement in and out of the vehicle. There is ample storage space to be found throughout this Gran Coupé, including the 430-litre capacity boot. This area can be increased substantially in size by folding down the rear seats. This can be done through the use of easy to reach levers in the boot itself. The BMW Intelligent Personal Assistant is part of the operating concept of this new 2 Series, which we found to be exceptionally functional and helpful. This system includes a digital character who is a fully-fledged BMW expert who can offer assistance to the driver. He can learn your habits and routines and subsequently apply them in the appropriate context. He can even provide casual conversation, throwing in the occasional joke or relevant stories. Other features include a BMW Head-up Display and Apple CarPlay preparation amongst many others. Once out on the tarmac, we were instantly impressed by the 48

three-cylinder petrol engine that powers the 218i. This beauty of an engine produces 140 hp, allowing the vehicle to surge from 0–100 km/h in 8.7 seconds. Complete with an excellent braking system and top-notch traction control, we always felt in charge of the driving experience, even around the tightest of bends. It is evident that the master designers at BMW had people’s safety at the forefront of its minds when designing this vehicle. A multitude of safety features are fitted as standard, including airbags, the Lane Departure Warning system with active lane return, collision and pedestrian warning as well as city braking function. Active Cruise Control, Lane Change Warning, Rear Collision Warning, Crossing Traffic Warning and Innovative Reversing Assistant are all available as optional extras. SPEEDY DOES IT EVERYTHING WE KNOW ABOUT MASERATI'S EAGERLY AWAITED SUPER SPORTS CAR.

Motorheads everywhere have the Maserati MC20 on the brain, and for good reason. The new super sports car is a worthy successor to the MC12, and marks the Italian marque's return to the world of racing. Not only does it combine performance, sportiness, and luxury, but it also boasts a new Nettuno engine, a 630 horsepower V6 with torque of 730 Nm that delivers 0-100 km/h acceleration in under 2.9 seconds and a top speed over 325 km/hour. It is a true technologic gem, already awarded an international patent that puts the MTC technology – the ground-breaking combustion system developed in-house – onto the world's roads. The MC20 is an extremely lightweight car under 1,500 kg (kerb weight) and, thanks to its power output of 630 hp, comes out best in class in weight/power ratio at just 2.33 kg/hp. This impressive record is achieved through the use of choice quality materials, exploiting all the potentials of carbon fibre without a single sacrifice when it comes to comfort. Overall, this revolutionary project has resulted in a car that epitomises Italian excellence. In fact, the MC20 was designed in Modena and will be built at the historic Viale Ciro Menotti plant, where the GranTurismo and GranCabrio models were assembled until November 2019. system based on a complex mathematical model called Virtual Car. This allowed performance of 97 percent of dynamic tests, optimising development times. The car was then fine-tuned with exhaustive track and road test-driving sessions in varying conditions of use. The aerodynamics were designed through over 2,000 man-hours in the Dallara Wind Tunnel and more than 1,000 Computational Fluid Dynamics simulations. The result is a sleek car with just a discreet rear spoiler that improves downforce without detracting from its beauty. Oh, and we'd be remiss not to mention those look-at-me butterfly doors that enable optimal access to and from the cabin. Once inside, the driver is central, courtesy of simple forms and few distractions. Of the two 10-inch screens, one is for the cockpit and the other for the Maserati Touch Control Plus. Simplicity is also key when it comes to the carbon fibre-clad central console, with just a few features: a wireless smartphone charger, the driving-mode selector, two speed-selection buttons, the power-window controls, the Multimedia System controls, and a storage compartment. In Conversation with... Shareef Elias Kharouba

As the month of September brought with it even more breaking news pertaining to our everyday lives, we took five minutes to ask industry insider Shareef Elias Kharouba, MultiProperty Director of Operations at Marriott International, five questions about the present – and future – of hospitality.

Our October issue explores dining around the world in Bahrain. Which new cuisines have you discovered while living on the island? As a Jordanian, I’m familiar with Middle Eastern cuisine, but it has been interesting to discover the culinary nuances peculiar to Bahrain, such as Bahraini Magbous with its robust lemon and black pepper flavour or the simple, honest grills from Sabar Ayoob. There’s also a good variety of Asian cuisine on offer – for example, I was first introduced to baos at Nomad Urban Eatery, with delicious fillings such as soft-shell crab. It’s a complete meal conveniently packed within a soft, steamed bun. Having recently transitioned to a whole food, plant-based diet, I’m interested in trying more plant-based options. I’m pleased to say our new Crossroads Bahrain menu features a number of vegan options, including the Beyond Meat Vegan Burger and innovative salads such as Strawberry and Date. Launching Crossroads Bahrain in the midst of a pandemic must’ve been daunting. What can you tell us about the experience? Fortunately, the majority of the internal fitting work was almost complete when the pandemic started. The delay in opening allowed us further time to perfect our dishes, design singleuse menus, invest time in training our associates, and shift our marketing and social media strategy in response to the new guidelines. Everyone in Bahrain is looking forward to dining out and discovering new and on-trend eateries again. As a beautiful, brand new restaurant within Marriott Executive Apartments that upholds the highest standards of health and safety regulations, it will be a natural choice for this pent-up demand. Hotels have been hit especially hard this past year. How do you envision the future of the hospitality industry? Younger consumers may be more prepared to take risks, but for the industry to recover, travellers need to feel safe and confident that their health is protected. There will be a shift to contactless services and enhanced cleaning regimes supported by digital tools. The knock-on economic effects of the pandemic will 54

impact foreign travel, particularly if it involves additional costs of on-arrival testing or quarantine upon return, so domestic tourism may dominate for some time. In the long term, even if some consumers remain nervous, the industry will adapt. New segments are constantly emerging. While mass tourism will obviously take time to recover its appeal, the luxury segment catering to affluent travellers – who can afford business-class flights and private suites – is already recovering. On the back of national lockdowns, I believe those segments seeking adventure, getting back to nature will also thrive. As a result, coastal and countryside resorts will benefit more than urban destinations. Essential business travel will be redefined, and companies will continue to conduct some meetings electronically but oftentimes, there’s no substituting a face-to-face – or should I say mask-to-mask – meeting. Recent travel restrictions have served as a tough reminder of the sheer pleasure of travel. Therefore, I think we all will expect more from the experience, which the hospitality industry will have to deliver on. The industry is resilient, and it’s going to come back. People want to travel, need to travel, and will travel again. It’s just a question of time. As a result of 2020's events, we now question how we used to work, travel, and play. What aspects of the 'new normal' in hospitality do you predict will carry over in 2021 – even if a vaccine is in place? Every business and every person is learning how to adapt. Hotels used the upheaval as an opportunity to rework how they

function, while still ensuring a warm welcome and memorable stay. Making things easier to clean and reducing touchpoints are priorities. Marriott, for example, has appointed a Global Cleanliness Council and is introducing technologies such as electrostatic disinfectant sprayers. Expect mobile check-in, room keys on phones, and more voiceactivated room controls – many of which were already being rolled out by Marriott pre-pandemic. Once implemented, such changes are unlikely to be undone. Health declarations and temperature checks will be around for some time, as will the widespread use of face masks and hand sanitisers, particularly when travelling. A quick peek at your LinkedIn profile tells us you've worked with hotels in Oman, Iraq, UAE, and Jordan. How does working in Bahrain compare? Bahrainis share their country with a whole host of people from different cultures and nationalities. I find them to be particularly warm and welcoming to foreigners. I admire the way Bahrain is constantly developing its infrastructure, both physical and electronic. The eGov, LMRA, and Sijilat systems are all leadingedge examples and continually add new services to make life easier for both residents and businesses. The government’s commitment to protecting Bahraini companies and residents was evident in its response to COVID-19, both through the economic stimulus package and establishment of the Team Bahrain taskforce to control the spread of the virus. ✤ fact magazine

I

f Oliveto changed its name to Rave Reviews, we wouldn’t notice – the two practically feel synonymous at this point. The famed Italian restaurant is rooted in authenticity, so don’t expect to find the likes of fettuccine alfredo and chicken parmesan on the menu. Instead, you’ll be greeted by dishes that are deceivingly simple, each elevated by the quality of the ingredients used. After all, the Italian woman behind the wonder is Rossella Tafuno, her family recipes in tow. Incidentally, she comes from a long line of experts in the F&B industry – read: high standards. We make our way down the menu, starting with a kale salad accented with sweet figs, toasted hazelnuts, and goat cheese, then drizzled with a molasses vinaigrette – a combination we vow to recreate at home. It's that good. Next up is the Tuna Steak, a moist and tender appetiser brimming with flavours of lemon, chili, and coriander. Admittedly, we're a little surprised to see it topped with black sesame seeds, but they add an almost Asian twist to the dish. If the humidity that marks the end of summer in Bahrain calls for one dish, it's this. Naturally, a meal at an Italian restaurant wouldn't be complete without at least one pasta dish on the table, so we select the Pasta Al Ragù Bianco Di Pesce. But this is no ordinary pasta dish. For starters, it’s centred around Pasta di Gragnano, arguably one of the best pasta types on the planet. This is because, as our research reveals, the Italian hilltop town of Gragnano is the birthplace of dried pasta – and continues to be famous for it. Oliveto pairs the pasta with flaked seabass in a light ragout sauce with kalamata olives and cherry tomatoes. It’s the type of sauce that will have you reaching for the bread basket more than you’d care to admit. The dish also paves the way nicely for our second main: Sole Fish Alla Mugnaia. For the initiated, sole features heavily in Mediterranean cuisine, making it a natural fit on the menu. Here, it's infused with a touch of nostalgia, reminiscent of how the typical Italian grandmother would prepare it. The fish is lightly panseared in a dressing of lemon, extra-virgin olive oil, calamarata olives, and capers from the Sicilian island of Pantelleria, and served with a side of baked baby potatoes. But regardless of what you end up ordering, give the refreshing Sgroppinos – essentially lemon sorbet in a champagne flute – a try. This frothy palate cleanser hails from Venice and is available in both mocktail and cocktail form at Oliveto. Warning: regular lemonade will just not cut it after you’ve tried one of these. We'd be remiss not to acknowledge the setting, so let’s talk interiors. By now, any Bahrainbased foodie worth their salt knows that Oliveto is 64

where you go when you want to impress – and be impressed for the umpteenth time. The restaurant is tucked away in a quieter part of Adliya, occupying a plot size that spans a whopping 3,300 square metres, whetting your appetite as you enter the premises and take in your sleek, contemporary surroundings. Once inside, the Dining Room offers a relaxed yet refined approach to dining. . Between the spacious interior, high ceilings, rich pops of colour, and objets d’art on display, it's an ideal choice if you're hosting in a big group – in fact, we're told the Dining Room comfortably seats up to 120 guests at a time. Just outside is The Deck, which alone seats up to 60 people. The crown jewel, however, has to be the outdoor area, which promises to remain packed come cooler temperatures. And we'll truly never tire of this al fresco spot. Here, olive trees gaze at their reflection in a central water feature, while booth seating makes for more intimate dining with friends. It's no surprise that the Oliveto terrace has hosted engagement parties and weddings in the past. Can't say that about your usual Italian haunt, can you? ✤

W

e all could do with a little cheering up right now – such is the nature of 2020. Enter: Enab Beirut. Everything about this beloved Lebanese restaurant at The Terminal screams inviting, from the pastel walls and postcards from Beirut that adorn them to the decorative tiles, birdcages and botanicals aplenty, and flowery chairs that look like they were pulled from teta’s living room. Just as inviting are the staff, who are both friendly and attentive, even catering to a peculiar request for olives postdessert without looking bewildered – but more on our sweet finish later. And, of course, let’s not forget the distinguishing feature of Enab Beirut branches everywhere: those floral, vibrantly coloured lampshades that hang from the ceiling and promise to beautify your Instagram feed. But we digress. The FACT team is here for the food – fresh, comforting, homestyle food that even the pickiest of Lebanese home chefs would approve of. Take our lead and head there with a group of friends in tow. The star attraction of this show has to be the mezze, both hot and cold, that are designed to be shared. Confession: we rate the calibre of a Lebanese restaurant based on the taste and texture of usual suspects like hummus – and Enab Beirut boasts a whopping six varieties of hummus alone. Colour us impressed. Our group sticks to the classics, ordering Tabbouleh, Fattoush, pomegranate-topped Mutabal Bathenjan, and tangy Warak Enab before making our way to the two dishes that we’ll genuinely return for: Feta bel Forn and Kebbeh bel Laban. The former pairs feta cheese with tomatoes in the oven, while the latter features balls of ground meat bathed in yoghurt and served with vermicelli rice. If you’re not one to shy away from dairy, order them both, please? The mains, however, aren’t about to take a backseat to the appetisers as we learned by indulging in an array of meats. There’s everything from skewered chicken and minced meat to grilled shrimps and fish fillet – there’s even a “Lebanese Raw Meat” section for the adventurous amongst us. We can, and will, personally vouch for the Koussa with Warak Enab and Cutlets, an Enab Beirut specialty. We weren’t expecting to take to this combination of ricestuffed courgettes, vine leaves, and lamb chops, but the meat is spiced and grilled to perfection – and the first to disappear from the plate. But as far as our favourite main here is concerned, it has to be the Manti, a Lebanese dish with Armenian influences. Pillowy and addictive, these tiny dumplings are stuffed with minced meat and served alongside tomato sauce and a yoghurt-based dip – except we actually skip the two sides entirely to savour them on their own. True story. So let’s talk calories. Rather, the calorie overload you’ll welcome once it’s time for dessert. Admittedly, we don’t know our Meghli from our Madlouaet Fostuq, so we trust the culinary experts at Enab Beirut to suggest a few options for the highly anticipated sweet finish. We are recommended the Osmaleyya bel Ashta. And, yes, we love the Osmaleyya bel Ashta. Not only is the clotted cream sandwiched within the crispy vermicelli surprisingly light, but it's served with sugar syrup on the side, which means you can tailor the level of sweetness to your liking. Another must-try? The Ashtalieh. The beauty of this rich and creamy pudding is how simple it is, with traditional ingredients like rose water and crushed pistachios only adding to its appeal.

hey say practice makes perfect, and nowhere does the saying apply more than Nikkei cuisine. Yes, this moulding of Peruvian ingredients by Japanese cooking techniques has only been dubbed a gastronomic sensation in the past few years, but the reality is it has continued evolving since the dawn of the 19th century. It’s the food of the Japanese diaspora in Brazil and Peru, immigrants who found themselves having to adapt to a new country and unfamiliar ingredients while staying true to the cooking methods they knew from home. Just don't refer to Nikkei as fusion food. In Bahrain, it has a new residence at Clay, a newish eatery that will have us returning to The Terminal time and time again. We say newish because, technically, Clay opened its doors back in mid-January, only to be forced into closure mid-March. Hearts were broken, but a curiosity about Nikkei cuisine grew, making its recent return to Bahrain's dining scene cause for celebration. The FACT team walks into the 7,500-square-foot restaurant with ceviche and sashimi on the brain, only to be truly captivated by its interiors. Here, countless design elements compete for your attention – think: tufted banquettes, marble-topped tables, an open kitchen, an overhead art installation, a hand-painted monochrome mural, ceramic figurines, and lush foliage aplenty. And if you think all that will jazz up your Instagram account, wait until your food arrives. We start with the Ceviche Platter, a humble name for a truly decadent

offering. It pairs a selection of Clay's signature ceviches with little nibbly sides such as quinoa crackers and crunchy corn. But the crown jewel is obviously the tuna, salmon, sea bass, sea bream, octopus, and even scallops, all marinated in a citrusy tiger’s milk marinade and boasting varying flavour profiles. Did we mention the touch of theatrics lent to this dish by dry ice? It's a tough act to follow, but the Niku Bao is up to the challenge. The soft, steamed bao buns are even 'stamped' with the Clay name. It's the tender short ribs filling that make them delectable, and the addition of criolla salad (a simple salsa found across South America) that adds a sense of place. Ready for more seafood, we proceed to the Moriwase Clay, a chef’s selection of mixed melt-in-the-mouth sashimi. Red snapper, salmon, scallops, octopus, prawns, tuna – we can't get enough. You'd think sashimi is simply raw fish on a platter, but the truth is it's an art form all on its own. From selecting the freshest fish possible to delicately slicing it and serving it with a size of wasabi and tobiko, head chef Jolbi Huacho and his team get it just right. So right, in fact, that we notice the little dipping bowl of soy sauce is still untouched, long after our empty plates have been cleared. And just like that, we're back in carnivore mode, ordering the Wagyu Anticuchero from the robatayaki (which literally translates to fireside-cooking) section. Not only does this long-standing cooking method originate in Japan, but so does the prized Wagyu beef. This particular dish entails skewered beef striploin brushed with a sweet-spicy glaze,

cooked over hot charcoal, and served with burnt lemon. It's an easy choice for meat-eaters, as is the Tori Lemongrass if you prefer chicken. Oven in the mains, we trust the experts at Clay and order the highly recommended Black Cod Yuzu Miso Kosho. It's celebrity chef Nobu Matsuhisa that put miso black cod on the map, and we're not complaining because Clay's version is pescatarian perfection – tender, flaky, buttery perfection. It has a hint of sweetness, courtesy of the miso marinade, and arrives on a bed of mixed quinoa in keeping with the Nikkei cuisine concept. A bit of trivia for the food nerds amongst us: not only is quinoa a crop native to the Andean region, but Peru is also the world's largest quinoa producer. We’re stuffed and satiated, but is a feast even finished without dessert? Here, it's practically art that you'll be hesitant to tuck into, but should. Opting for elevated takes on beloved classics, we try the Yuzu Cheesecake and Chocolate Amazonico. The former feels like an edible tropical holiday, complete with mango-ginger foam and lime confit. As for the latter? Well, just picture the most sophisticated molten chocolate cake in existence, one that caters to adults. But this is a dining experience at Clay – an element of surprise is always just around the corner. ✤

omewhere between his eclectic inspirations, refusal to conform, and signature multicoloured stripes, 74-year-old designer Paul Smith screams success. Both the man and the brand have come to represent quintessentially British style, incorporating classics with a touch of whimsy for a whopping 50 years. And it's in celebration of this milestone that key prints and shapes from the archive have been revisited and reinterpreted for AW20. Tailored garments remain at the centre of the collection, but with an ease that’s at the heart of Paul Smith, while a clean and lean silhouette nods to the 70s with added length, high-breaks, and a minimal feel. Both fabric and detailing are front and center – double-breasted Melton overcoats are finished with contrast topstitching and raw edges, check and houndstooth tailoring is cut from cloths that are British in style but Italian in fluidity. And when it comes to the colour palette, natural tones reign supreme, with the likes of teal, terracotta, and clay complementing a bright blue sky. Heavy jumbo corduroy, in the key colour of sky blue, injects the collection with a cloud-like bounce.

On a similar theme, proportions are exaggerated in puffer jackets and trainers to create an air of dreamlike fantasy. For the uninitiated, denim is a regular feature of many Paul Smith catwalk collections, now appearing raw and traditional or overdyed and modern with a unique floral camouflage pattern. Thick shearling coats, meanwhile, look to the designer's dandyish pals wearing their grandmas’ fur coats in the 70s. But no Paul Smith anniversary collection would be complete without the spaghetti print, which originated when a wax plate of spaghetti from a fake food shop made its way into a photographic print in Tokyo. Today, it has been scaled up, recoloured, and woven in textural wool jumpers and printed on floor-length down jackets. Another archive print comes courtesy of a faulty fax machine – a warped Paul Smith logo – which has been reproduced on shirts and jersey pieces, taking on a newfound irreverence in 2020. After all, logomania as a sartorial trend shows no signs of slowing down. And luckily for those who prefer fashion with a side of quirk, neither is Paul Smith. ✤

It has been a tough year on all of us, and it’s quite a challenge adapting to the new norm and many safety measures in place. We are still fighting for survival. 2020 taught me that family and health are the key concepts of life. It encouraged me to value the small blessings and made me realise – and prioritise – what’s truly important in my life. Yes, it affected our daily lifestyles, but we will hopefully emerge from the current situation soon enough.
