hope you all had a fabulous festive season and enjoyed the National Day celebrations, and that your pockets and waistlines weren’t hit too hard! Can you believe it’s 2018 already? We’re sure making (and some of us already breaking) resolutions, but that’s what I love about the New Year - new goals, a fresh start and renewed motivation. For Dubai, 2018 is looking to be another fantastic 12 months, so we thought it only right to share with you some of the great new places to be entertained this year. For those of you who want to try new experiences - and everyone who needs new places to capture for their insta stories (priorities) check out our Dubai Tourism feature starting p27 - there are SO many cool hangouts in our beautiful city. And if more travel is what’s on the agenda for your 2018, what better way to begin the New Year than with plenty of inspo for your next trip. Cultural, nature-filled experiences await in Sri Lanka where Resplendent Ceylon bring boutique adventures to life (p41), whilst regional escapes call out from the shores of The Chedi Muscat (p55) and even right here in Dubai, there’s a beachfront staycation with your name on it at Anantara The Palm Dubai Resort (p49) – take your pick! The next few months are going to be busy in the FACT office as we plan the 1st annual FACT Spa & Wellness Awards Dubai, ready to recognise all the amazing places for pampering, health and fitness in the city – keep an eye out for the shortlist of nominees in our next issue and don’t forget to vote online for your favourites! I’m not sure how I’m going to survive an entire year without a new season of Game of Thrones, but it’s all the more reason for re-watch weekends and GoT gatherings – who’s in? In the meantime, I’ll just be over here on meme watch from the comfort of the couch. Happy New Year everyone.☺

CYCLING TO THE TOP Marcus Smith, founder of Inner Fight GYM, extreme athlete and Volvic brand ambassador is gearing up to be the first man to complete BikingMan’s ultra-cycling race series across four continents in 2018. Founded in 2015 by Axel Carion and Léticia Perotta, BikingMan is a selfsupported ultra-cycling adventure designed to bring together athletes in unfamiliar and uncommon environments. The race focuses on connecting cyclists who desire adventure and exploring cultures in less-travelled places, with each course averaging to 1,000 kilometres for a four to five day duration. “The BikingMan series will be a monumental challenge that will assess my physical and mental capabilities all year long,” says Marcus Smith, founder of Inner Fight GYM, extreme athlete and Volvic brand ambassador. “Being a one of a kind self-supported ultra-cycling race format, the series will surely be a real test of endurance and is quite unlike anything I have ever tackled before.” The first race is scheduled to take place from February 25 to March 2 in Muscat, Oman. It will see Marcus competing with 99 other athletes from across the globe who will be covering a minimum of 200 kilometres a day without any support vehicles, carrying their own food and supplies. Supported by Volvic throughout the series, Marcus is no stranger to extreme endurance events. In 2015, he competed at the Marathon Des Sables, a five-day, 250 kilometres race across the Sahara desert where he effectively completed the equivalent of six marathon distances over sand, rock and rough terrain. “Volvic and myself are bound by the same principle of inspiring and helping people to find their inner strength in achieving what they want,” Marcus adds. “It is great to see the support and encouragement from Volvic as I prepare for one of my toughest challenges yet.” After Oman, the second race is set to take place in Corsica in April, followed by Peru in July and the last one will be in Asia. Cinema Akil and Sole DXB proudly joined forces to present a special programme on the power of women and word in defining the Hip Hop universe as we know it today. If you want to caption your next social media post with “wind in my hair and sand between my toes” – La Mer Dubai can give you ALL that and then some! The alluring beachfront is located in the affluent Jumeira 1 district and is definitely, in our opinion, the coolest space to have opened up to the public in recent months. Developed by Meraas, the breathtaking destination is nothing short of an inspiring environment, with the most instagrammable street art, graffiti, mottos, and incredibly cool seating, dining, shopping and leisure offerings that you’ll find in the city. La Mer also integrates minimalist and contemporary design elements. The existing beaches have been redeveloped to include showers, toilets with baby changing and disabled access, free wifi, information hubs, mobile charging, prayer rooms, four children’s playground areas and over 1,000 parking spaces are among the other amenities.

Surrounded by almost 2.5 kilometres of relaxing sandy beaches, phase one of La Mer opened to the public in October 2017. The first phase comprises La Mer North and La Mer South, which has over 130 shops, cafés, restaurants, and beach activities, that act as a meeting point for people to enjoy a great time, whether they’re visiting La Mer to eat, play or unwind. The second phase of La Mer, The Wharf, incorporates rusty steelworks and an industrial aesthetic, with a waterpark featuring a surf park that is a first-of-its kind in the region; a cinema, additional shops, cafés and restaurants. These additions, are scheduled to open at the start of 2018. At a later stage, there will also be a hotel and residential community located on two man-made peninsulas.

HELLO, SRI LANKA Bursting through the cloud cover above the teardrop-shaped island of Sri Lanka we’re greeted with a landscape of verdant green, where tangled jungle hugs up against long stretches of untouched coastline bashed by the incessant momentum of ocean waves. We touch down in Colombo during the worst cyclone to hit the country for many years, yet this tropical downpour marks a refreshing change from the desert climate of the UAE we’ve become accustomed too. As tuk-tuks weave between heavy traffic, Buddhist stupas and waterlogged roads it feels a world away from the ‘bubble’ we’re used to.

THE TEA TRAILS

Our first stop is Sri Lanka’s central highlands affectionately referred to as ‘tea country.’ We board a small amphibian aircraft from Colombo’s domestic terminal which once formed part of the original route between London and Sydney. Traveling skywards away from the capital, we head inland towards the conical shaped topography of Adam’s Peak, before landing on the emerald-coloured waters of Castlereagh Lake. The seaplane journey with Cinnamon Air (approximately $600

Described as ‘the benchmark for boutique’ our first stop is Tea Trails, the world’s first tea bungalow resort which offers five beautifully restored planters bungalows in distinct colonial style. It’s a more personalised service style than we’re used too but one that’s always paired with a friendly smile and the assurance that nothing’s too much trouble. Soaking up the tranquillity of the mountain air and a backto-nature approach, Tea Trails is more than just a boutique resort. Each of the five bungalows can be found scattered around the waters edge, but many kilometres apart, providing the opportunity for cultural immersion with a distinct luxury touch. Each bungalow has been flawlessly restored, with specially curated furniture that provides a throwback to the colonial summerhouses. Tientsin may be the most

grandiose due to spacious outside terraces, while Dunkeld presents a honeymooners delight with an outdoor jacuzzi, but the old-world feel of Norwood had us instantly charmed. Surrounded by tranquil gardens and the maze of tea plantations rising above, our stay at Norwood Bungalow offered an all-inclusive experience with a difference. A four-poster bed and free-standing bath tub take centre stage across the six bedrooms, all of which share communal living and dining areas and a large outdoor pool flanked by bamboo. Taking to the tea trails themselves is an enchanting experience as dirt paths meander through the tea plants seemingly unsure of the final destination. This is all part of the fun as we encounter school children in perfectly pressed uniforms and tea pluckers in bright coloured saris. Lost in the encroaching cloud cover amongst crumbling churchyards and nothing but the calls of nature, it’s a soul awakening experience and one that’s further enhanced by the property’s lack of television. Instead, we seek solace in fireside tales and the crackle of vinyl on an antique gramophone. With two per cent of Sri Lanka’s landmass covered in tea plants, we learn more about the process during an early morning visit to the Dunkeld Tea Factory, owned and operated by Dilmah who pioneered the concept of single origin tea in 1988 before branching out into the world of hospitality with Resplendent Ceylon. fact magazine

Offering the luxury hotel experience with a humanitarian objective, 10 per cent of the company’s profits go into the MJF Foundation, a support centre for underprivileged children in Colombo. Tea is understandably the inspiration behind the tea trails experience with a tea-inspired dinner menu designed by Australian celebrity chef Peter Kuruvita. Think vanilla tea mushroom soup, Moroccan mint tea encrusted lamb and tea-centric cocktails (don’t miss the Dilmah Dream). It doesn’t stop there though, with bath products containing tea sitting beside tea-infused massage oils (massages are undertaken within the comfort of the rooms by mobile therapists). Our stay in Tea Trails also introduces us to the novel concept of ‘bed tea’ with cups of freshly brewed tea brought to the room as part of the morning wake-up call. After two days, we leave the mesmerising lake on a long and picturesque journey to our next stop…

WILD COAST TENTED LODGE Dark granite boulders permeate through the vibrant green tea plantations as we follow the mountainous paths carved out by cascading waterfalls. We skirt along escarpments to our next destination, the Wild Coast Tented Lodge on Sri Lanka’s South Eastern Coast, a five-hour journey by road traversing mountains and floodwaters as we journey to the coast like some long forgotten tributary. Our journey is broken by a brief stop at the Udawalawe Elephant Transit Home supported by the MJF and Born Free Foundation and an opportunity to watch the feeding of orphaned elephants. The Wild Coast Tented Lodge situated on the fringes of Yala National Park feels remote. An arid landscape with the odd flourish of green vegetation. Wiry trees with twisted bows provide shelter for roaming jackals, while crocodiles peer ferociously beneath floodwaters. Beaten by waves and lashed by the wind, the coastline is as rugged and wild as the name would suggest. On an isolated stretch of sand and accessed via a 2km track of red earth lies Resplendent Ceylon’s latest venture into the hospitality sector, the Wild Coast Tented Lodge, a haven in the wilderness. The immediate appeal of the domed architecture fashioned from bamboo components and mirroring the rocky outcrops of the landscape, is swiftly revoked by warning signs alerting us to the dangers of roaming leopards and the instruction not to venture outside after nightfall (unless accompanied by a member of hotel staff). The landscape, architecture and interiors has been designed and built by the team at Nomadic Resorts, and it surely is a feat of the ambitious. After seeing the rooms, or more accurately, the cocoons - it’s unlikely that you’d want to leave this gorgeous space in the day, let alone at night; they’re the epitome of luxury. The resort is made up of 28 cocoon-shaped rooms clustered in small groups around watering holes to resemble the pattern of a leopard paw if viewed from above. fact magazine

Nomadic Resorts have used natural materials which integrate seamlessly into the environment with bamboo and shingle imported from Thailand and the outer membrane of the cocoons brought in from France. If feels as though no expense has been spared in bringing a unique sense of luxury into the wild. The rooms represent safari chic and feature wooden chests, thick carpets, copper pipe work, heavy drapes, and a regal, copper bath tub that gives us all the instagram-worthy goals. Each cocoon is slightly raised off the ground like a mini treehouse and large windows are positioned to take advantage of the landscape and passing wildlife. The bark of a samba deer in the middle of the night signals leopards may be close by and the sound of creatures scuttling beneath our tented paradise brings some unease to this dubious city-dweller – but it’s a once-in-a-lifetime experience and I’m ALL in! Breakfast brings stories of elephants roaming into the restaurant late at night and with the current making it too dangerous to enter the sea, a brisk swim in the salt-water pool enlivens our senses for the trip into Yala. Yala National Park is home to the world’s highest concentration of leopards per square meter and the worn track beats our bodies into numb awareness but it’s all worth it for the briefest glimpse of a leopard perched high on a protruding rock amongst crumbling stupas, like a forgotten king surveying his lands. I take my picture, and we’re on our way.

SUSTAINABLE LUXURY TRAVEL Only a four hour flight from the Gulf, Sri Lanka marks a land of encroaching nature located South East of mainland India. t’s just as well we’ve got images to show you here, because it’s hard to describe perfection. Especially when you think everything has been covered, more magical surprises turn up. Anantara The Palm Dubai Resort, is your ultimate ‘out of this world’ escape. When you come to Dubai, you don’t automatically relax. There’s something about the pace of the daily grind that has you exhausted, even when you’re a spectator, so a bit of pause is essential when you live or venture to this cosmopolitan emirate. We arrived at the hotel which finds itself well into the iconic Palm, towards the end of the eastern crescent. You instantly feel perfectly secluded, despite being on a growing branch of the famous Palm, where hotels are sprouted left, right and centre. The elegant lobby sets the tone for the hotel’s public areas, with its ornate finishings and distinctly Thai touches. Check-in is met with a welcome drink – lemon grass infused, naturally – luggage is whisked off to the room, all formalities are taken care of without fuss and we’re set for three days of slow enjoyment.

needed and was a joy to spend time in. The Premier Lagoon View Room is a charming abode, surrounded by immaculately landscaped gardens and enticing lagoon pools. Spread over an area of 47 square metres, these rooms are accentuated by splendid furnishings dressed in the finest linens with large windows providing views over the surrounding lagoons and a large balcony to while away your time on. After a day on the beach or by the pool, retreat to your room for a refreshing rain shower, or a peaceful soak in the bathtub, before slipping into a dreamy night’s sleep in a plush king size or twin bed. Talking of beds, of all the hotel beds we’ve been lucky enough to get

our beauty sleep in, the bed at Anantara, was possibly the most butter-soft bed we’ve ever slept in – so much so, we called about five people to talk about how heaven-like the mattress was. No exaggeration! Lazy days can be spent enjoying the exotic pleasures of the resort’s private 400-metre beach, as well as the three winding lagoons and shoreline infinity pool which look out across the Palm. Infusing exotic elements from the beautiful country of Thailand, where Anantara is rooted, floating market style boats will glide across the lagoons (a massively fun and unique touch), serving perfectly concocted cocktails and other refreshing beverages and Thailand’s famous three-wheeler tuk-tuks will transport you around the tropical resort. But the novelty of walking will have you doing more exercise than you probably anticipated! Wellness takes pride of place at Anantara, as the hotel grounds make you feel at ease, are unobtrusive and have a calming effect – it must be the innate Thai influence. Stress slips as easily from your shoulders as a silky pashmina. Throughout our stay, we barely left the property (because we really didn’t have a reason to/didn’t want to) and we felt like we had sufficiently recharged our batteries by the end of the short (but felt twice as long) stay. Culinary experiences offer tantalising diversity for discerning palates. Crescendo, the all-day dining restaurant, serves a variety of international cuisine. You’ll definitely have a breakfast of champions there – pastries, noodles, sushi, gluten free bread, omelettes anyway you want, everything. It’s also a very big space so you never feel like you are squashed in. fact magazine

Undoubtedly the song that coaxed the loudest applause on the night was ‘Your Song’, which the singer dedicated to his late mother. ould The Chedi be Muscat’s best-kept secret? An ultraexclusive hideaway targeting a clientele of worldwide jetsetters. It certainly appears to be the case when team FACT visited for a recent weekend stay. Unrestrained grandeur and high levels of service begin from the moment we touch down in Oman, as we’re transported via private limousine into the very heart of luxury. We didn’t expect The Chedi to be situated in such close proximity to the city centre but upon passing through the white-washed perimeter walls, it feels as though we’re miles from civilisation. The hotel lobby greets us with Omani charm as the scent of oud drifts out into the starscattered sky, while a collection of rainbowcoloured glass lanterns are suspended overhead painting a picture straight out of the stories of 1001 Arabian Nights. The Chedi’s architecture is Moorish in style emanating a sense of zen-like serenity and it’s this hybrid of Arabian and Asian that provides much of the property’s appeal. We’re gifted a handy map to help us navigate the expansive grounds and as our hands brush against door handles inlaid with mother of pearl, we know we’re in for a real treat...

With 158 guest rooms and suites available we had the privilege of staying in one of the 38 Chedi Club Suites. These standalone units sleep a maximum of four guests and offer the feeling of a private villa, generously-sized and tastefully-decorated in traditional Omani furnishings. Taking a minimalistic approach, the living area features majlis seating that easily converts into divan-style beds. The bedroom juxtaposes dark mahogany against the ample natural light streaming through the shuttered windows, while a king-size bed provides the utmost comfort, superseded by a silver dome housing a large Arabic lantern. It’s not all traditional though as modern

touches heighten the experience and can be found in the technological aspects - a Nespresso machine and two 42-inch flat screen televisions. The bathrooms are literally the stuff of dreams (#TubEnvy), with double vanities, separate rainfall shower and a sunken tub big enough to fit an entire family! Acqua Di Parma toiletries add to the pampering nature of the property and are almost as comforting as the slippers and robes which forgo the usual ‘fluffy’ texture in favour of a more kimono-like approach. The benefits of the Club Suite also entitle guests to complimentary limousine transfers, laundry service and a mini bar

Many guests select The Chedi as a hideaway from the world, if only for a day or two. With discreet levels of service and a respect for privacy, guests are valued in a way shown by few properties in the region. Set amidst tranquil water gardens inspired by the oasis falaj system, perfectly shaped hedgerows and curved archways, The Chedi is flanked by a 370-metre stretch of private beach and it’s refreshing to see a natural coastline in the Gulf unencumbered by the construction that blights other GCC cities. With three swimming pools on site, the Long Pool is a symbol of The Chedi used in magazines and on postcards for the best part of a decade. At 103 meters in length, the body of water is recognised as the longest swimming pool in the Middle East. Lined by slender palm trees mapping out the trajectory of the water, a polished black-tile finish adds an uber-cool vibe to the monochromatic stylings of cabanas and lounge furniture. Two of the temperaturecontrolled swimming pools are reserved for the use of adults only (the Long and Chedi pools) but the Serai pool, situated close to the beach is conveniently shaded for families with young children. fact magazine

IT’S NO MIRACLE, YOU HAVE TO TRAIN HARD AND EAT CLEAN. IN MY TRAINING THERE’S PLENTY OF VARIETY, I’M TRYING NEARLY EVERYTHING I HEAR ABOUT, SO I CAN DECIDE WHICH FITS ME THE MOST.

i Luca! Take us back to the beginning – how and when did your fitness journey start? It’s been a long time since I had my first contact with fitness. I started early in my youth practicing Taekwondo, later taking part in competitions and I was also teaching kids’ classes. The first time I did weight training was when I was 16. I practiced earlier on at home with pull-ups, dips, etc, but my first gym membership was at 16. I had no real clue what I was doing and everything I know I learned more or less by teaching myself through YouTube and my own experience.

me the most. It’s bad when you get into a complete routine. You have to get used to eating a lot when you’re eating on a vegan diet, because the calorie density is not that high.

You’re quite a unique example of someone who has managed to build an enviable physique whilst being vegan – that must be a very disciplined lifestyle, how do you do it? First of all, I wouldn’t say that I’m quite unique with that. There are lots of other really good athletes on a completely plant-based diet, for example the German strongman Patrik Baboumian or the Bodybuilder Mischa Janiec. It’s no miracle, you have to train hard and eat clean. In my training there’s plenty of variety, I’m trying nearly everything I hear about, so I can decide which fits

What are three foods that you can’t live without, things that you would recommend people to include in their diet? I would recommend everyone eating a lot of fruits, especially bananas; on some days I’m eating up to eight. Another food I wouldn’t miss is rice. Even though I know it’s not the healthiest one, I’m in love with basmati rice. However, if anyone would ask me, I would recommend whole meal rice. A big part of my protein intake is based on lentils, so that’s the third food I would mention here.

Veganism has become such a huge food trend and way of life for millions of people – what inspired you to start eating clean? I was always curious about this diet. Me and some friends tried it out together and everyone of us still follows their plantbased diet. For all of us, it had health benefits we wouldn’t miss anymore. This was three and a half years ago now and I won’t change anything in the future.

DON’T START ALONE; GET A FRIEND TO START WITH YOU. IT’S WAY EASIER WHEN YOU’RE NOT TRAINING ALONE. What are some of the best and the most difficult things about being a vegan? The only difficult thing is, that you don’t get food that easy when you’re out. But after some time you know what you can eat, so even that is only hard in the beginning. There are some advantages as to why I’m still keeping the vegan diet. First of all, I think that it’s the healthiest way you can live, if you’re doing it right. Mentally and physically, I’m in the best condition I’ve ever been in at the moment, which strengthens my opinion. Of course there are ethical reasons. If you can avoid any harm to other living beings just by such small changes in your diet, then that’s a plus. I don’t want to fund the industry of animal agriculture anymore. For those people who find it hard to get motivated about exercising – can you give three top tips to get them started… Don’t start alone; get a friend to start with you. It’s way easier when you’re not training alone. Second, focus on why you want to start, doesn’t matter if it’s just living healthier or getting a better physique. And finally, get yourself idols - people who inspire you. What keeps you motivated to continue with this healthy lifestyle? I think I’m way beyond the time where I have to motivate myself. It’s more an addiction in my case. Eating clean and my training fulfill me, I even get into a bad mood when I miss some training sessions! What are some of your health and fitness goals for 2018… I have no real answer to this question. I want to become stronger and to maintain my physique. Maybe there’s a 170kg bench press in 2018? ✤

Our test drive vehicle boasts interiors that are decked out in a subtle desert beige – and you’ll sink right into your seat as if it’s a memory foam mattress. There’s a fine balance between sporty driver focus on the one hand and stylish elegance on the other. Top-class materials, supreme build quality and attention to detail all provide a great feeling of spaciousness with new technologies in abundance, offering both driver and passengers comfort and driving pleasure. For those long tiring days spent in and out of meetings, you can maximise on-board comfort in the 5 Series with not one, not two, but eight massage functions, not to mention innovative seat operation using touch sensors and four-zone climate control complete with ionisation and discreet air fragrance. But how does it drive, we hear you ask? The answer is, beautifully. There’s a stereo camera, which teams up with optional radar and ultrasound sensors to monitor the area around the car. Alongside the evasion aid and crossing traffic warning, the two new features in the BMW 5 Series which helped us greatly on the drive to and from the capital are the Lane Change Assistant and Lane keeping assistant with active side collision protection. The latter keeps an eye on the lane markings and the area around the car, and actively helps the driver to avoid looming collisions by applying corrective steering inputs – this is a HUGE help especially at times when drivers are in a rush and sudden overtaking occurs or when visibility is low like recently with the foggy weather. The display and control concept in the BMW 5 Series Sedan has been revolutionised to bring intuitive usability and extensive comfort to the forefront of 70

the driving experience. With even greater userfriendliness as its goal, the car is equipped with the latest-generation iDrive system. In top specification, it displays navigation, telephone and entertainment features, plus vehicle functions, on a high-resolution 10.25-inch screen. The system can be operated using the iDrive Controller, by voice command or gestures, or by touching the display controls directly, as the driver wishes (voice command is a little touch and go – but all other controls work perfectly). The large, tile-style panels can be arranged as desired and show the content of the underlying menus in constantly updated form. The latest-generation full-colour BMW Head-Up Display has a projection surface that is 70 per cent larger than before and displays traffic signs, telephone listings, radio stations, music tracks, navigation instructions and warnings from the assistance systems. And what about performance? Whether you’re in Sport or Comfort mode, be rest assured that the 5 Series Sedan ticks all the thrills of driving a BMW. All the engines in the 5 Series Sedan line-up belong to the newly-developed, modular BMW EfficientDynamics family of power units. BMW TwinPower Turbo technology imbues all the members of the family with outstanding performance combined with exceptional efficiency. The 540i and 540i xDrive are the two petrol variants, working in tandem with rear-wheel drive and BMW xDrive intelligent all-wheel drive, respectively. The BMW 540i benefits from a six-cylinder, 250 kW/340 hp unit under its bonnet. This three-litre, straight-six produces torque of 450 Nm (332 lb-ft). Despite its extra output and sharper dynamic edge, average fuel consumption stands at only 6.5 l/100 km (43.5 mpg imp) and CO2 emissions are kept to just 149 g/km. Meaning, the car is not only fast, efficient and powerful, it’s also designed with the environment and your wallet in mind! HER River Island presents their twist on a range of diverse trends which have been edited to give a unique take on the season. 80’s Excess is amped-up, focusing on exaggerated shoulders and asymmetric lines in a range of shimmering and patent fabrics. Dark tones dominate throughout, studded with cobalt blue and hues of orange. Dramatic silhouettes on cocktail dresses pair perfectly with a slouchy boot, yet obtain a glamorous edge. Grunge-cool is taken to new extremes in Harlem. Exuding a hiphop borrowed-from-the-boys vibes, shapes are slouchy and longline in a palette of denim blues shot with lilacs, ruby reds and vinyl finishes. Sending UAE residents on a unique multicultural dining journey, while passionately working to elevate the UAE’s Italian culinary scene. First up was Chef Enrico Bartolini, Culinary Advisor of Roberto’s Group, who dazzled guests with his special truffle-inspired menu served at events across Roberto’s Abu Dhabi and Dubai. provide a comfortable setting for an exquisite meal, and are accompanied by great entertainment. We’d like to take it back to the beginning – do you remember the first dish you ever cooked? From my Tuscan childhood, my first cooking memory was of caramel. I was four-years-old when I learned that when you cook sugar, the colour and shape changes, and it becomes very tasty. As a renowned chef, what matters more – taste or presentation? You cannot compromise one for the other. We start from getting the right balance in flavour and texture and then we work hard to find presentation that will intrigue the guest, because presentation is very important in delivering a message.

Hi Chef! Welcome back to the UAE – what do you have planned for diners? I am pleased to host events at both the Roberto’s Abu Dhabi and Dubai locations. Each event is a bit different, but both will bring some of my signature dishes from Italy, to give diners an authentic Italian experience, here in the UAE. Your collaboration with Roberto’s focuses on celebrating all things white truffle – what makes this ingredient so special in Italian cuisine? It’s very original – you cannot replicate it. The flavour is one that Italians love. For me, the perfect combo is with white wine at the beginning of the lunch and dinner. It’s a very elegant flavour that is full of personality. Tell us about some of the signature items on the menu and what makes them appealing? In Dubai, white truffles were featured in all six courses – from a starter featuring Alaskan king crab, to a main slow-cooked veal cheek, to zabaione for dessert, it had its place in every dish. In Abu Dhabi, working with my guest, Chef Alfio Ghezzi, we prepared a six-course menu together. A few dishes are a bit different than what their name implies. A starter features blackened cuttlefish, alongside sea urchin, and gnocchi without potatoes – instead it’s made with spinach. And for dessert, a “Tea-ramisu” – made with black tea, balsamic vinegar, capers, and caramel – ingredients that work nicely together for a twist on an old favourite. For diners with a discerning palate, give us three reasons why Roberto’s should be their choice for an Italian food fix over anywhere else in the Emirates? First, the people who work here. I’m always so pleased to see everyone’s dedication. This makes a guest’s experience stand out. Next is our quality of traditional Italian recipes, which are unique because they are served with a modern twist. Finally, our amazing locations – at DIFC overlooking the Burj Khalifa, and on the waterfront on Al Maryah Island in Abu Dhabi. They 90

Do you still feel the pressure when you’re in the kitchen – how do you keep your cool? You need to be calm in the kitchen – TV programmes makes it seem like you need to get stressed and yell, but this is not my approach. The best way to work is to keep your head on your shoulders, remain calm and collected. Share with us your advice for young, budding chefs… A chef’s life is not easy, but with passion and self-belief you can achieve your dreams. Believe in yourself and work hard. Over the next year, what are your goals as Culinary Advisor of Roberto’s Group? First, I want to show UAE diners that a luxury experience can be attainable, and it’s not just for a select few. We aim to provide a luxurious meal and experience for all our guests. We also want to evolve new recipes to follow the personality of the restaurant. We have constantly refined on menu in Dubai and now in Abu Dhabi specifically, we know the market a lot more and can adapt to meet the feedback and requests we have had from our guests. ✤

Lima Dubai marks the third international outpost of Martinez’s Lima brand and it stands beautifully in Dubai’s fast-growing City Walk. David Tapley went to sample the exquisite offerings of Lima’s Friday Brunch… fact magazine

deally situated in The Square, a new fully-licensed dining courtyard in the City Walk development from Meraas, Lima’s restaurant space may be relatively small by Dubai standards, yet the interior makes up for it. An effortless transition from the outdoor terrace through to the tribal-style dining room which is accentuated by a wooden staircase resembling Amazonian hanging vines. Upstairs is the bar area, decked out in swinging chairs and walls featuring colourful murals of flying birds. Lima Dubai’s menu has been specially created for the Middle Eastern location and the selection stays true to traditional Peruvian dishes in comparison to Central, Martínez’s Lima location, whose ‘altitude menu’ is inspired by the biodiversity of Peru, taking items from the Peruvian ecosystem and serving them up on a plate. It would appear that Dubai diners aren’t quite ready for such an avant-garde approach to dining and the logistical issues of sending such unique produce to Dubai would be unfeasible. While many of the ingredients such as Andean potatoes have been specially imported to Lima Dubai, the dishes don’t disappoint and despite the notable absence of Chef Virgilio Martínez (he’s set to return to Dubai at least three times a year to oversee the restaurant), Head Chef Diego makes for a worthy replacement. We’re at Lima to enjoy the newly-launched Friday brunch comprising of a set-menu highlighting some signature dishes and a number of new additions. With the sheer amount of food on offer, the choices are lighter and skew more towards international territory than the a la carte offering. Brunch begins with a Pisco Sour, the classic Peruvian cocktail of Pisco, lemon and egg white, adorned with an edible flower – it marks a beautiful start to our Peruvian culinary journey. Bao’s are the first dish to arrive, a little larger than expected and crammed with slow cooked beef, duck and a tangy rocoto sauce made from red chilli. It’s the contrast between the filling and the pillow-like softness of the bao which makes these an instant winner. Armed with a glass ceviche bowl and small silver spoon, 94

we’re presented two ceviches. The catch of the day is the superior choice, soaked in tiger’s milk and utilising Cancha corn for texture. With Dubai’s current fixation on all things Peruvian, we thought we knew ceviche – that is until we dined at Lima. The salmon ceviche is an altogether different beast and decorated with crisp asparagus tempura; it’s a vibrant dish, colourful in both presentation and flavour. The chicken causa provides the only disappointment in Lima’s brunch offering. Coming across somewhat bland and with too much of one texture, it’s a startling contrast to the phenomenal salmon causa found on the a la carte menu. Tequenos provide golden pockets stuffed with the traditional Peruvian limo saltado (stir fried beef with chilli) and are artistically presented on stones that draw immediate links to the mountainous Andes. Prawn Anticucho’s reinterpret the traditional street side BBQ into something more akin to fine dining with prawns marinated in Inka Panka chilli and presented with corn cake as if a mountainside meadow has been re-created on the plate. During the course of the Lima brunch, the only choice diners need to make is between the three main courses. The Lamb Seco presents slow cooked lamb rump, served with pumpkin two ways and Kiwicha (a flowering plant from the Andes), while the Chicken Breast Pachamanca (an Andean dish where the meat is cooked with hot stones) is complemented by purple Andean potatoes and a sweet corn brulee, similar in style to cornbread. There’s also a seafood rice option. After the hearty main courses the desserts are sensibly restrained, with a selection of sorbets dipped in chocolate and a corn creme brulee that is light and not too sweet despite a caramelised top. Service comes from a truly global team and the service style is proficient with a personal touch. The individual ingredients and concepts for each dish are thoroughly explained and help to heighten the Lima dining experience. This Peruvian Expedition brunch is a reflection of Peru’s gastronomic revolution and comes with a live band and energetic after-party. It’s a sure-fire way of enticing diners back for the a la carte offering. ✤

Natasha and her team invite you to join them in their trendy, friendly and nonjudgmental sweat hub, with classes for everyone regardless of fitness level or whether they want to focus on cardio, flexibility or strength. Classes at DRYP include Hot Yoga Classic;

a 90-minute Hatha Yoga style class that consists of a series of 26 postures, including two breathing exercises. Hot Yoga Sculpt is a 60-minute class where weights meet yoga to boost metabolism and build muscle as you move to upbeat tracks. And Hot Yoga Express; a 60-minute Hatha Yoga style class offers a Hot Yoga classic class for busy bees! More classes will be added in the months ahead.
