I

n the Gulf, summer means hot and humid days, when even walking to the car can be a sweat-inducing chore. Naturally, many of us would usually escape the heat to more pleasant climates but considering the current circumstances, a lot of us will choose to stay and live out the sunny days in Dubai this summer. There's no need to fret though, for summer brings with it more leisurely

opportunities for relaxation than any other season. Not only have you got beach days, staycations and daycations galore but also summer dining and plenty of brunches to partake in. Starting p14, we have a selection of Summer Recipes shared by top chefs to help you stay refreshed. We've also got an extensive guide of various ways to Beat The Heat and make the most of summer in Dubai on p25. There's nothing better than a long weekend spent indulging at one of the UAE's top resorts, and this month's Staycation Spotlight shines a light on the picturesque Westin Abu Dhabi Golf Resort & Spa (p41), as well as the striking Jumeirah at Etihad Towers (p47).

99 SUSHI BAR & RESTAURANT OPENS IN DUBAI WE’VE GOT 99 PROBLEMS, BUT SUSHI’S NOT ONE

T

hree years since it first rolled into Abu Dhabi with its fine-dining Japanese cuisine, 99 Sushi Bar and Restaurant is now set to open its Dubai doors in July. The Japanese restaurant has become synonymous with its avant-garde cuisine and premium ingredients. The striking interiors with luxurious black and gold tones that have been impressing guests in the capital will be replicated in the new Dubai location. In typical 99 Sushi fashion, the venue will have seating for 99 guests between the indoor dining room and outside terrace, with additional capacity in the lounge. While the capital has the waterfront views of Al Maryah Island, 99 Sushi Bar in Dubai is situated within the Address Downtown Hotel, and it will overlook the world’s tallest building - the Burj Khalifa. Talk about dinner with a view! The secret of the Japanese cuisine at 99 Sushi Bar revolves around the use of premium ingredients and the a la minute preparation of dishes, encouraging immediate consumption to promote freshness.

A peek at the new menu suggests all the signature dishes are present and correct including the Gunkan Sushi and Spicy Tuna Tartar, which uses the salted and fermented vegetables of kimchi partnered with cool tuna chunks and a crisp texture in the form of shoestring chips. The Foie Gras Nigiri is likely to have Dubai diners queuing out of the door for a taste of grilled foie served with raspberry and a sweet dipping sauce - an ambitious creation for sure. As a new concept for Dubai, the soon-to-open 99 Sushi Bar looks to make a bold impression and become an essential addition to the dining options in Downtown Dubai. BLACK TAP OPENS AT THE DUBAI MALL Black Tap’s newest venue offers front-row views of the Burj Khalifa. Black Tap, the cult New York burger and shakes brand, has opened its newest venue at The Dubai Mall, offering an elevated casual dining experience with stunning views of the world’s tallest building, Burj Khalifa. Shoppers and foodies heading to Black Tap’s fourth venue in Dubai can also take advantage of the brand’s first-ever ‘To-Go’ service. Loved for its Instafamous creations, Black Tap’s latest branch at The Dubai Mall is also the first in the emirates to house two CrazyShake counters - with one allocated to dine-in orders and the second dedicated to the new ‘To Go’ service. MICHELIN-LAUDED CHEF DANIEL BOULUD TO OPEN FIRST MIDDLE EASTERN RESTAURANT Brasserie Boulud will open in Sofitel Dubai Wafi this September. Brasserie Boulud, the new dining concept by Daniel Boulud is set to open its doors this September within the new Sofitel Dubai Wafi. Inspired by the French art de vivre, Boulud’s very first restaurant in the Middle East will offer French-inspired contemporary cuisine that is rooted in tradition. While Boulud hails from outside Lyon, France, he is today considered one of America’s leading culinary authorities. Renowned for the modern appeal he adds to his soulful cooking of authentic French classics, Boulud has expanded his dining concepts in Washington DC, Miami, Palm Beach, Toronto, Montreal, London, Singapore and now Dubai. The new online delivery dining platform brings together Dubai’s hottest culinary trailblazers to curate an exclusive and exciting delivery menu for at home dining. RADISSON RED DUBAI OPENS LONG STAY APARTMENTS Isn't it about time you considered hotel living? As the first Radisson RED property to launch in the Middle East, the hotel, which opened in February of this year has already become a hub amongst the local community. JAMEEL ARTS CENTRE WELCOMES VISITORS BACK Dubai’s contemporary art institution Jameel Arts Centre has reopened. Jameel Arts Centre, Dubai’s contemporary art institution, has reopened its doors to visitors, following its temporary closure in March. While Jameel Arts Centre still offers ticketless, complimentary access, under new governmental guidelines visitors are required to book a two-hour slot in advance of their visit, to monitor capacity and ensure a comfortable visit that keeps social distancing and hygiene a top priority. Where possible, Jameel Arts Centre’s current exhibitions have been extended, to allow audiences the oppurtunity to experience the works through multiple visits over the coming months. Art Jameel has also been able to launch new exhibitions, offering visitors fresh perspectives and points of discussion. One of the best-known and most influential artists of his generation, Michael Rakowitz draws on complex histories, politics and cultures to create highly charged, inspirational large-scale installations. This major survey exhibition features Rakowitz’s most significant projects from the past two decades; the eight multifaceted installations – in sculpture, drawing, film, sound and photography - draw on architecture, cultural

artefacts, cuisine and geopolitics. This iteration of the exhibition runs until November 22, 2020. Referencing architectural ornamentation prevalent in the Middle East and South Asia, Metropolis, a site-specific installation by Lubna Chowdhary, is on display in the Lobby of the Jameel until October 1, 2020. The work, developed over 28 years, comprises more than 1,000 brightly coloured ceramic structures, abstracting towers, monuments and other, less definable, forms. The newest iterations of the Artist’s Rooms series run until January 3, 2021 and focuses on three practitioners taking a particularly innovative and nuanced approach to urgent debates and features Larissa Sansour, Taysir Batniji and Lawrence Abu Hamdan. ✤

CHEF JONATHAN BLATTER: COUSCOUS SALAD INGREDIENTS:

Coming from a multicultural background, being Swiss-Filipino and growing up in Norway, chef Jonathan Blatter’s cooking style incorporates the basics of French Cuisine with a clean and minimalistic Nordic approach. Some of his career highlights include the 3 Michelin starred Restaurant Maaemo and working under celebrity chefs Giorgio Locatelli and David Myers. Since joining La Ville Hotel and Suites CITY WALK Dubai as a senior sous chef in 2019, chef Jonathan has been creating unique dishes that offer harmonies of aromas and flavours at Chival.

75g couscous 15g feta cheese 30g labneh 20g diced capsicum 8g pomegranate seeds 15ml pomegranate molasses 30g Romaine lettuce 2g ginger powder 2g cinnamon powder 1pc orange 1pc lemon roasted nuts zaatar mint parsley salt olive oil

METHOD: 1. Pour the couscous into a bowl. 2.

Add the ginger powder, cinnamon powder, salt and olive oil and mix.

3. Pour in the boiled water, cover and let it steam for five minutes.

4.

Zest the lemon and orange and incorporate into the labneh.

5. Uncover the couscous and use a fork to fluff it and break it up.

6. Add the diced capsicum, pomegranate seeds and molasses, sliced romaine and olive oil. 14

7. Gently toss the salad. 8.

Spread the citrus labneh on the plate and place the couscous salad. Finish off with feta cheese, sprinkle roasted nuts and mixed herbs.

CHEF HOWARD KO: SEAWEED PARKER ROLLS

Howard Ko is the Executive Chef of CÉ LA VI Dubai. Originally from California, he wanted to bring an American bread to the restaurant menu with a recipe that is very special to him. Of course, the bread rolls have been given that unique CÉ LA VI twist and are made with Asian flavours and accompaniments.

INGREDIENTS: 250g bread flour 35g sugar 3g salt 2g instant yeast powder 1 egg 50g butter 100g warm milk 3g seaweed lettuce (or any aromatic herbs)

METHOD: 1. Add the flour, salt and sugar into a large mixing bowl. 2.

In another bowl, dissolve the yeast in warm milk for five minutes, then add the seaweed powder (or your substitute). Please note that boiling milk will kill your yeast, so you will only require warm milk.

3.

Add this mix to the mixing bowl, plus an egg (you will now have used all the ingredients ex-cept for the butter).

4.

Mix all of the ingredients together until a dough begins to come together, then add the sof-tened butter. This mixture will be very sticky but continue to mix until the dough becomes shiny and smooth

5. Cover the bowl with a kitchen towel and leave the dough to rest at room temperature for one hour.

Loosely cover the dough with a kitchen towel and rest at room temperature. Ensure the dough is left undisturbed until it rises to the top of the mould (this will take anywhere from 90 minutes to two hours depending on room temperature and humidity).

After one hour punch down the dough, fold it in three and place it back into a greased bowl. Cover with plastic wrap and allow to chill in the fridge overnight or for at least six hours.

flatten and stretch the dough into 40g balls.

Preheat your oven to 175°C. Brush the rolls with egg wash and sprinkle with Maldon salt or fleur de sel and black sesame seeds.

Bake the rolls in the oven for 12 to 15 minute, then remove and leave too cool.

8. Roll the dough into 12 balls and place them into a round cake mould that has been pre-greased. Repeat with remaining portions of dough.

CHEF JOSÉ AVILLEZ: GRILLED SCARLET SHRIMP

INGREDIENTS: 130g Scarlet shrimp 20g Tasca sauce 2g fleur du sel 1g basil leaves INGREDIENTS: (TASCA SAUCE)

José Avillez is considered one of the great references of Portuguese gastronomy and has stood out because of his enterprising spirit and drive to go further. He has several restaurants in Lisbon and Porto, each with a different concept, but all expressing his passion for cuisine, including Belcanto which is distinguished with two Michelin stars and considered one of the best restaurants in the world. Tasca at Mandarin Oriental Jumeira, Dubai is chef José Avillez’s first internationally.

1000g unsalted butter 50g chopped parsley 100g sliced red chilli 100g lemon juice 200g sliced garlic 2g salt INGREDIENTS: (YUZU MAYONNAISE)

METHOD: 1. To make the Tasca sauce. Add the butter to the pan and begin

24g egg yolk 10g yuzu juice 100ml sunflower oil 2g black truffle paste 2g salt

to sauté the garlic.

2. Once the butter is hot, take the emulsion off the fire and finish by mixing in the parsley, salt, chilli and lemon juice.

the yuzu mayonnaise. Add all of the ingredients into a blender, pulsing for a few seconds. Gradually add in the sunflower oil to achieve mayonnaise consistency.

6. Finally, dress the shrimp with Tasca sauce topping it with fleur 4. With a fish knife, slice the shrimp open and place under the

CHEF REIF OTHMAN: SEABASS WITH INANIWA NOODLES

INGREDIENTS:

Reif Othman has been instrumental in transforming Dubai’s dining landscape. In a career that has included stints at ZUMA, Play Restaurant and Lounge and SumosanTwiga, homegrown hero Reif has now struck out on his own and opened Reif Japanese Kushiyaki in Dar Wasl and the new Kushi by Reif at the Depachika Food Hall in Nakheel Mall.

METHOD: 1. To make the yuzu dashi bring the water and kombu to the boil, before adding the bonito flakes and yuzu peel. Remove from the stove and allow to rest for 30minutes. Strain and keep the liquid in an airtight container in the fridge.

2. Create

the spicy miso by mixing the Shiro miso paste, gochujang, sesame oil, yuzu dashi and white sesame seeds. Once combined set aside.

3. Mix the noodles, seabass, tomatoes and daikon in a bowl.

Chef Himanshu set out to create a unique mélange of global ingredients and cooking styles with his traditional Indian dishes. METHOD: 1. Start with the dressing first. Place the chopped onion, ginger, and green chilli into a blender and add enough water to blend into a runny consistency.

2. Strain and collect the water for usage. 3. Finely chop the preserved lemon and keep aside in a mixing bowl.

4. Add the honey, black salt, yuzu juice and strained water to the preserved lemon and whisk to combine all the flavours.

5. Strain and refrigerate the dressing to keep it chilled

Top with the roasted corn kernels and pour the dressing equally onto the four plates.

6. Roast the corn on a direct flame and then take out the kernels. 11. Garnish with microgreens and mixed root chips. 7. Cut the boiled potato in cubes and fry in ghee to provide a crisp texture.

12. Add a drizzle of extra virgin olive oil and Maldon salt flakes. Serve chilled.

8. Cut the mango, water chestnuts and avocado into cubes and refrigerate to a chilled temperature.

CHEF DAVID FITZSIMMONS: TRUFFLE CHICKEN

As the Head Chef of Bistrot Bagatelle, David Fitzsimmons says that a big scoop of motivation, a dollop of teamwork and communication and a pinch of problem-solving skills is the recipe to success. He thoroughly enjoys creating French cuisine, and his creativity, leadership and passion are renowned within the Bagatelle kitchen. In his spare time, he enjoys an active life and engages in maintaining a high level of fitness with swimming and working out at the gym. Chef David also enjoys cooking at home, which strongly reflects his dedication to food.

METHOD: 1. Firstly, brine your whole chicken. Take the salt and sugar and

400g Veal Jus or any reduced stock 160g foie gras (optional) BRINE: 80g salt 40g sugar 1-litre cold water

dissolve in the cold water.

2. Place your whole chicken inside a plastic container of brine, making sure it is completely submerged. Secure the lid and place in the refrigerator for 12 hours. 3. After the 12 hours is up, remove your chicken from the brine, and place it into a container of iced water for 10 minutes, to rinse the remaining brine from the skin. 4. In the meantime, take room temperature unsalted butter and mix with the truffle oil and truffle paste. Once well combined, set aside until you want to stuff the chicken and roast. 5. Preheat the oven to 180 degrees Celsius. 6. Peel and dice the Desiree potatoes into 2cm cubes. Place them into a pan of water along with the crushed garlic cloves, rosemary and thyme. Season the water lightly with salt. 7. Put the pan onto the stove and cover with a lid. Remove the lid once the water has come to the boil. Keep an eye on the potatoes; they should take around 10 minutes to cook. You need the potatoes to be slightly firm in the middle. 8. Once ready, drain the potatoes, and remove the herbs. Allow too cool until ready to use. 9. To stuff the chicken, run your index finger gently under the top side of the breasts to separate the skin from the flesh. Then add a couple of tablespoons of truffle butter into the space you have created. Small cuts into the legs and thighs can also be made and filled with the butter. The remaining butter can then be massaged all over the chicken, before lightly seasoning the skin with salt and pepper.

On a preheated roasting tray, lined with aluminium foil,

place your potatoes lightly tossed in olive oil, salt and pepper. Roast until golden brown. Once cooked, they can be set aside, and covered with foil until the chicken is cooked. 11. Place the chicken onto a roasting tray, and bake in the oven for one hour. Roasting a chicken should take roughly 20 minutes for every 500g of weight. It’s always good to check the meat is cooked through, by making a small cut by the wishbone, and check that the juices are coming out clear. 12. During the course of the chicken roasting in the oven, baste the chicken in its juices and the truffle butter approximately every 10-15 minutes. 13. Most good supermarkets now have good, readily made gravies, Jus, or stocks. Choose a gravy or stock you would like, place on the stove and heat up. 14. Clean your wild mushrooms, and cut them into mouth size pieces. Sauté them in a hot pan with a little vegetable oil, until lightly golden, season with salt, then add to your sauce. 15. You can now sear the foie gras (optional) and cook through in the oven. 16. You are now ready to present the dish. Place the roasted potatoes into a serving dish, slice your whole roasted chicken however you like (or leave whole and present at the table). Place on top of the potatoes, then cover the chicken in the sauce and the foie gras.

METHOD: 1. Poach the quail eggs and set aside.

100g spinach (sauteéd) 4pcs quail eggs (poached) 5pcs potato cubes 70g potatoes (whole) 30g garlic (sliced) 70g butter 3g salt 1g black pepper 5g fresh thyme 1-litre vegetable oil (for frying)

4. Slice the whole potatoes into thin slices and fry them in 140°C vegetable oil.

2. Melt 50g of the butter in a pan, add the potato cubes, garlic slices and fresh thyme and cook all sides of the potatoes on a low flame.

INGREDIENTS: 55g yellow butter (salted) 30g breakfast sugar (grain) 3 eggs 20g refined flour Lotus spread (smooth) Lotus spread (crunchy) 6 scoops vanilla ice cream 3 strawberries 1 banana 2 Lotus biscuits

3. Pipe 60g of the mixture into a bowl or glass and microwave for 20 seconds to produce a sponge.

4. Top METHOD: 1. Cream the butter and sugar together and then add the eggs one by one.

CHEF MORITZ NEUMANN: ROASTED PARSNIP HUMMUS

INGREDIENTS: As Executive Chef at the JW Marriott Marquis Dubai, Moritz Neumann oversees the hotel’s 15 restaurants, lounges and bars and leads a team of 300 talented chefs. During his 18 year tenure with Marriott International, Neumann has worked with six different brands, successfully completed three hotel pre-openings and has won numerous awards for outstanding leadership and talent. He shares a simple summer recipe from La Farine for the readers of FACT.

METHOD: 1. Place soft

honey roasted parsnips into a blender, combine with the lemon juice, garlic and salt. Blend until the mixture is finely chopped and then let the mixture rest for approximately five minutes so the garlic flavour can mellow.

400g cooked chickpeas 400g honey roasted parsnips 2 large cloves of garlic, roughly chopped 1 tspn fine sea salt 80ml tahina Juice from one lemon juice 4 ice cubes 0.5tsp ground cumin 50ml extra-virgin olive oil

INGREDIENTS: (PANCETTA, SMOKED PAPRIKA OIL) 60g coarsely minced veal pancetta 20g smoked paprika powder 100ml extra-virgin olive oil 5g salt 2g black pepper 1tsp Tobasco 1tbsp chopped fresh chives 1tbsp crispy shallots

5. Taste, and adjust seasoning to your liking, most of the time it will require a little more salt, lemon or tahina.

2. Add the tahina to the mix and blend until the mixture is thick and creamy, stopping to scrape down any tahina stuck to the sides and bottom of the blender (as required).

3. While

blending, drop in two ice cubes. Scrape down the mixture and blend until the mixture is ultra-smooth, pale, and creamy.

4. Add

the cumin and the cooked chickpeas. While blending, drizzle in the olive oil. Blend until the mixture is super smooth and silky (approximately two minutes). Add more ice cubes if necessary to achieve a super creamy texture and to keep the mixture cold.

a pan on medium-high heat, render the fat out of the pancetta. Once the pancetta is crispy, add the smoked paprika powder and remove from the heat. Add in the hot sauce, extra virgin olive oil and season to taste.

your parsnip hummus with the pancetta crumbs and the smokey paprika oil. Garnish with chopped chives, crispy shallots and enjoy.

Originally from Chonburi, Pattaya in Thailand, he has been a chef for over 27 years and was instrumental in the pre-opening of Mango Tree Thai Bistro, from conceptualizing the menu to sourcing ingredients and vendors. The restaurant has received praise since opening in 2018, and it has become a go-to Thai restaurant for dining at JBR.

2. Brush the pumpkin with a little of the coconut oil, season with salt and pepper and then cook on the grill for two to three minutes on each side or until the pumpkin be-comes tender.

3. Transfer the pumpkin to a plate. Cook the onion on the grill for two minutes on each side (or until tender) and then combine with the pumpkin.

T

he sense of tranquility is almost immediate as we pull up the cobbled driveway and enter into the lobby of The Westin Abu Dhabi Golf Resort & Spa. Bathed in natural light, our eyes slowly rise skywards taking in the focal atrium and the verdant greens of the golf course that is visible through the large glass windows. Off to the left lies a quaint and relaxing cafe called The Lounge and to the right is the reception and check-in area. Westin Abu Dhabi is a picturesque five-star golf and spa resort located in Abu Dhabi, and despite it's proximity to the city centre, the expansive property feels like an escape from the city. A place that provides beautiful views to match the exciting hotel amenities such as the championship golf course upon which the hotel is situated. Health and safety precautions were a priority throughout our stay. Aside from the expected mask and gloves the procedures that have been put in place include self-parking, protective screens and sterilised pens at the reception counters, and safety seals on hotel room doors to indicate that the rooms have been thoroughly sterilised and that no one has entered since the cleaning process was undertaken. We felt extremely confident with the efforts put in place by Marriott and the entire team at the Westin Abu Dhabi and it's evident that the safety of both customers and guests is of paramount importance for the operation at this time.

THE SUITE LIFE: A summer escape amongst the vibrant fairways of Abu Dhabi Golf Club provides the perfect respite from the heat and the sounds of bird song and chirping insects make us immediately forget that we are mere minutes from the city. This notion of an 'oasis of calm' extends into the bedrooms, which are very spacious, peaceful and abound with natural light. We check-in to a one-bedroom Executive Suite with 1.5 bathrooms, sweeping golf course views and a large balcony which is the perfect spot for a midmorning coffee or as a place to top up the tan. The spot was so delightful in fact that we opted to forego our breakfast in Fairways and instead dine on the balcony, watching the golfers tee off while enjoying the early morning atmosphere. The 95 SQM suite is separated into living and dining areas which put comfort and convince first. A refrigerator, flat-screen television, small sink and ample storage space means that guests can unpack quickly and enjoy all of the benefits of such an appealing space. The suite is beautifully appointed with a comfortable king bed that provided us with admittedly the deepest nights sleep we'd had for 42

some time (we think it may have been due to the buoyant pillows and super comfortable mattress and duvet combination). The suite also featured tea and coffee making facilities (hooray for morning caffeination), a dressing room and a free-standing bathtub that we may have soaked in for a little longer than we'd care to admit! A control panel next to the bed allows for seamless control of lighting and temperature settings, as well as the ability to place the do not disturb and the make-up room signage. If you want to lock yourself away in complete privacy, then this goal is easily attainable. Boasting a dining repertoire of six food and beverage outlets, The Westin Abu Dhabi Golf Resort and Spa has long been a popular haunt for residents of Khalifa City and the neighbourhoods along Al Raha Beach. It's easy to see why, as not only are there a variety of cuisines represented, but the service is exemplary. Throughout our 24 hours in the property, we were continually greeted with smiles, laughter and genuine empathy from the team.

DEBONAIRE DINING: An early dinner reservation at Sacci results in an almost full restaurant, which is bursting with atmosphere as families venture out for a post-pandemic weekend meal. The familystyle trattoria is a venue that channels childhood nostalgia and the aroma and flavours of traditional Italian dishes. We indulge in several classically prepared dishes including the Tartare di Tonno Agli Agrumi, a perfect summer dish of tuna tartare, citrus fruits and candied walnuts that hits the perfect balance between sweet and tart, and the Risotto con Pere, Radicchio e Gorgonzola - a risotto with a striking purple colouration, enhanced by the inclusion of pear pieces and Gorgonzola cheese. Unable to resist the classically prepared Italian desserts, we gleefully save room for the signature Sacci Tiramisu with its lashing of cream and generous proportions of chocolate. The Lounge is a fresh take on the traditional coffee house and features an extensive menu of fact magazine

We couldn't resist the quintessentially British tradition of afternoon tea before we departed the luxurious property and found ourselves in an inspiring setting, surrounded by views of the lush Abu Dhabi Golf course. The multi-tiered afternoon tea stand featured a specially curated savoury selection of sandwiches with exciting flavours such as cucumber and cumin cream and the classic smoked salmon on rye. For those with a sweet tooth, there is opera cake, lemon crèmeux with pineapple caviar, a matcha tea tartlet with banana and passionfruit and our personal favourite, the freshly baked scones with jam and clotted cream. Accompanied by unlimited hot beverages, this is the perfect way to while away a few hours on a warm summer day with friends. The hotel is also home to The Retreat, a good choice for pub grub and to watch the latest sporting fixtures. Fairways is the hotel's all-day dining restaurant with culinary influences from Arabia, Asia and the Mediterranean's northern shore. Lemon & Lime offers dinner and drinks in a laid-back, luxurious setting and Shades Pool Bar is a tropical-themed bar at the hotel pool area.

AMIABLE AMENITIES What's a staycation without amenities and first-class facilities? tihad Towers should require very little introduction to residents and visitors to the UAE capital. The glass structures can be seen on fridge magnets, postcards and memorabilia throughout the city and the architectural marvel has become not only an iconic part of the Abu Dhabi skyline but a tourist attraction in its own right. Comprising of five slender towers rising from the ground like shards of glass, the majestic building penetrates the skyline for all to see. More than just a five-star hotel and residential complex, this lifestyle destination saw Hollywood superstars Vin Diesel and Paul Walker jump a Lykan HyperSport supercar between the towers in the 2015 movie Fast & Furious 7, cementing the structure into movie history. The stunt may be memorable but perhaps not as impressive as Jumeirah at Etihad Towers itself. The luxury hotel can be found within one of the glittering skyscrapers and is home to 382 rooms and suites, an elegant spa, private beach and a selection of 12 eclectic restaurants. The property is without a doubt one of the most luxurious hotels in Abu Dhabi. Situated on the upper level of a spiralled podium, the design is one that exudes elegance and class. Think deep carpets, gold embroidery and gurgling water features, though it's the five spherical lamps punctuating the lobby that are most likely to to be remembered. 48

A HAVEN OF REFINED LUXURY Our Deluxe King Room is located on the 44th floor of the hotel and we are immediately wowed by the impressive view from the floor-to-ceiling windows. All rooms at Jumeirah at Etihad Towers offer either cityscape or sea views and we were more than happy with the latter, as we could gaze along the Abu Dhabi Corniche, from Qasr Al Watan to the World Trade Centre. Taking in Marina Village, Al Lulu Island and the turquoise waters of the Arabian Gulf without having to get up from the bed. Rooms are comfortable and stylish, offering chic interiors to complement those majestic views. The spaces have clearly been designed for relaxation, whether that be after a business meeting or a day relaxing at the beach. Aside from the large king bed, with its fluffy pillows and a delightful duvet that made it hard for us to get out of bed each morning, the room also featured remotecontrolled curtains and lights, a 42-inch widescreen interactive HD LED TV and complimentary wi-fi access. Meaning we could stream Netflix and post on Instagram until our hearts were content. Clocking in a generous 50sqm the Deluxe Rooms at Jumeriah at Etihad Towers put convenience first. A handy connectivity hub allowed us to quickly hook up our various devices with ease, so we could play music via the in-room speakers and watch movies from our laptop on the TV. An inviting chaise longue made for the perfect reading and napping area, come late afternoon when the sunlight hits just right. A bathroom with a separate shower area is more luxurious than one might expect, clad in marble and featuring detailed mosaic tiling in gold and silver. It's this sense of luxury combined with attention to detail that makes a stay at any Jumeirah property memorable. With toiletry bottles shaped like the towers themselves and special bath products, toys and slippers for those travelling with little ones. It's as if no detail has been overlooked in planning the guest experience. All bathrooms contain double sinks and a deep tub that is perfect for a long soak. A set of draws marked with a moustache (for him) and a lipstick (for her) contain several products that you may have left at home, such as mouthwash, toothbrushes, cotton buds and nail files. LOBBY LOUNGING The lobby lounge offers a meeting point in the centre of the hotel. Bathed in natural light, the space acts as a hub for both guests and visitors and offers picturesque views of the ocean and private beachfront. The comfortable leather seating makes for an excellent option to spend an afternoon, whether it's drinks, lunch or a light snack you're after. The lobby lounge has garnered quite the reputation for having one of the best afternoon teas in town and we're inclined to agree. A range of hot beverages are offered, accompanied by a pleasing selection of savoury sandwiches showcasing premium ingredients such as crab in the form of a tartine and a superb smoked salmon and avocado wrap. The cakes and pastries are just as dainty and help to add to that air of sophistication associated with the Jumeirah brand, known for providing high levels of luxury and bespoke experiences. Delights range from the classic Paris-Brest to the fruity Strawberry Tart and the decadently the moist Chocolate Cake. The presentation in a quaint pink box compliments the entire afternoon tea experience.

BACK AT BRUNCH BiCE is the hotel's Italian restaurant and is a dining destination in itself, combining the authenticity of Italian cuisine with comfortable family-friendly dining. Seating is available either inside the spacious dining room or out on the terrace. Our weekend stay conveniently coincided with the launch of a new brunch that was too good an opportunity to pass up. A succinct menu is presented to the table from which you can select several antipasti dishes, pasta, main courses and desserts. The result is a leisurely afternoon of Italian classics combined with a good selection of beverages. We urge you not to resist the Fresh Burrata, Trofie al Pesto Rosso pasta or the indulgent tiramisu, which had us almost rolling back to our room. 50

We spent much of our stay lazing by the water's edge and topping up our tan on a swathe of golden sand that wraps around the base of the glistening glass towers. Even with social distancing measures in place, there are still more than enough sun loungers to go around and the warm shallow waters are perfect for little ones. There's a small pontoon that you can swim out to and plenty of opportunities for splashing about in the water. Whether you're an in-house guest or just looking for some relaxation time using one of the day passes for the beach, the private beachfront offers intimacy and exclusivity, unlike anywhere else in the capital. At the time of writing the three swimming pools, spa and a number of restaurants remain closed in line with government measures pertaining to the COVID-19 pandemic. Still, with things changing almost daily, we hope that the remainder of the facilities will be up and running again soon. Even with things in a constantly changing state of flux, the team at Jumeirah at Etihad Towers are excited to welcome guests and continue to display their standard-setting levels of service. THE PERFECT CANDIDATE FACT talks to Haifaa Al Mansour, the first female filmmaker in Saudi Arabia, about her inspirations, work ethic and her Oscar nominated film The Perfect Candidate. How does it feel to have directed your debut film Wadjda, the first-ever film shot entirely in Saudi Arabia and the first made by a Saudi woman? My main motivation in making Wadjda was to make an inspiring film that was not about how women in Saudi Arabia are victims as much as how they can be leaders of change. That is still my goal as I continue to make movies about strong women around the world. I hope it had that impact, and I hope that films from the region continue to encourage positive development in the society. Cinema will have a huge impact on public life in Saudi Arabia. The shared experience of watching a film in a public place, of feeling the story along with a theatre full of people, is such a positive and joyous experience that Saudis will finally get to enjoy in their home country. It is an important step for the country and lays the groundwork for so much positive change. Cinema is an incredible platform for a society, to ease in ideas of tolerance and acceptance, and allow local audiences to connect with the outside world and better understand us. What was it about the story of The Perfect Candidate that encouraged your return to Saudi Arabia, to make the film? There are incredible changes taking place right now at home in Saudi Arabia, and I felt like I really wanted to contribute to the positive changes taking place there. We went through such a long period of time where nothing changed, where it seemed like even the slightest openings or relaxations of the cultural restraints, we lived under seemed impossible. But now the pace of change is so fast that it is hard to keep up with, and the challenge now is to encourage people to go out and make the most of the opportunities they have. Especially for women, it will take a huge shift in thinking to fully understand and embrace the freedoms they now have the chance to explore. The narrative is a deeply human one and one that we can all relate to, how important was it for you to tell this particular story? For this film in particular, I wanted to tell a story about a culturally conservative, traditional woman who decides to embrace the changes that are taking place and go out there and seize the moment in public. The reality of her journey, of stepping out of this very private world and into the public sphere, is that it will be difficult, and lots of people will be critical of her choices, but it will ultimately open up a whole new world for her. I want to stress to the women how important it is to go out there and take a chance, even if you don't have any experience in doing so. I also wanted to take a moment to celebrate the strong artistic and cultural legacy of Saudi Arabia and tell a story that stresses how important it is that we build upon those traditions as the foundation for our societies development. So much of our music, theatre, 56

stories, and all forms of artistic expression were almost erased from our culture entirely, so I felt like we needed a story that reminded people of the strong artistic traditions we have, and how they can help us as we move forward into an exciting future. Are there any autobiographical elements in The Perfect Candidate? I share a lot of Mariam's determination, and a desire to just do my job the best I can. I guess I am kind of crazy in the same way, in that I just go after the things I believe are right and push on the best I can. But I also feel very close to the father's character in the film, as I feel strongly that now is the time to honour the sacrifices and commitment that artists and musicians made to keep our artistic culture alive over the past few decades. They faced a lot of criticism and very limited opportunities for so long, so I really felt proud to honour all of the musicians in the film and give them a platform for their music to be heard. It was really amazing to shoot the concert scenes and to see all of the extras dancing and enjoying the music. It was very special for me. From the lack of resources at her clinic to her surprise run for office at the local elections. The character of Maryam shows unwavering resilience throughout the film. How important was it for you to have a strong female lead? Through my films, I always focus on female protagonists who want to work hard and do their job to the best of their abilities. For this film, I wanted to create a character that is very much representative of the mainstream mentality of Saudi women. She covers her face and follows the cultural norms of the society, but ends up pushing boundaries because she wants to do her job well. The restrictions that keep her from performing her work in the ways that would best benefit the society frustrate her and force her to think


Q&A • To be recognised by my peers here at home and celebrated as a representative of artists from the Kingdom, is incredibly important to me. I am also very proud that The Perfect Candidate was selected into the main competition at the Venice Film Festival. It is so validating to have the film placed in the same category as the most prestigious films from across the world. It is definitely one of my favourite festivals in the world! It's also very exciting that audiences in the Middle East can now watch the film from the comfort of their own home through OSN Store and OSN streaming. You are seen as a trailblazer for Saudi cinema. Do you see the potential for a thriving film scene in the Kingdom and is a new wave of Saudi films on the way? Absolutely! I am very confident that we will build up our own, vibrant local film industry, and that we will have local audiences eager to see and consume our work. But I also hope that we see our films start to travel more around the world so that international audiences get to hear from us and get a better sense of our perspective. We have had so few chances to present our work and our point of view to the rest of the world, so I think film, and the arts in general, will become a very valuable tool for us in telling our side of the story.

I believe strongly that this is the way that true change comes to a society, through hard-working people who simply want to be able to reach their highest potential. The film presents an almost documentary style in the way it was shot, drawing the viewer into the life of Maryam and her family. Was this a purposeful decision, or was it based more upon budgetary constraints? I definitely wanted to make the film feel "real" and present a realistic look into Saudi life. It is rare that we get to see ourselves on screen in a documentary-like way, so I work hard to make it as authentic as possible. Showing this story in this way is the key to getting that message across. The Perfect Candidate was selected as the Saudi Arabian entry for the Best International Feature Film at the 92nd Academy Awards. What was your reaction to the news? It was incredibly moving and important for me. It's a huge honour!

What are the challenges of filming in Saudi Arabia? Well, a lot has changed since I made my first Saudi film! It was incredibly difficult to make a film in 2011, and people were still very hesitant to embrace any public form of artistic expression at that time. Film was especially seen as taboo, and the idea of opening theatre's had become a red line that most of us thought would never be crossed. Of course, now everything is different, and we have cinemas going up all across the Kingdom. But the larger issue of a lack of infrastructure in the film industry remains. We have a lot of work to do in building up the tools and resources necessary to make quality films. We don't have many people with experience in the field yet so putting together a crew and getting the right equipment is very difficult. Getting the proper training and education necessary to help craft and shape our stories is another key area that we need to develop. It is still a very challenging place to work, and a very closed, insular society, so it was a tough but worthwhile journey. And it was really great to be out of the van! Being allowed to fully mix with my crew and be fully immersed in the production was amazing. It was also very exciting to have so many enthusiastic young Saudis working on the set. They are the future of the industry, and to see them giving their all to contribute and be a part of making the film was very special for me. We still have a long way to go in building our local crews and expertise, but the enthusiasm is there to build upon. It is an exciting time to be a filmmaker from Saudi Arabia! ✤

Also, a number of new accessories have been revealed: A new Pulse 3D wireless headset, a DualSense Charging Station in which you can dock two controllers at once, and a HD Camera that mimics the look of the console itself. The PS5 will also be compatible with current PSVR hardware, and there are also rumours of PSVR 2, so get ready for PS5 to have a VR option! If you’re wondering which games you can play on the new PS5, let us tell you that there are a lot of options! They include a new

Spider-man entry, a Horizon Zero Dawn se-quel, a Demon’s Souls remake, Resident Evil 8 and many more to be announced. However, just as exciting as the PS5 specs is the new controller. The Du-alSense PS5 controller comes with the same stylish look as the console. s fortunate as we at FACT magazine have been when it comes to test driving the finest motorcars on the market, we have not been fortunate enough to get behind the wheel of a Subaru. That is, until now. Producing models since the 1950’s, this Japanese brand has not only proven itself on the roads but has excelled in the World Rally Championships, having won a total of five World Rally titles. As the streamlined figure of the WRX came into full view, we were immediately impressed by the sporty and sleek nature of the exterior. The most eye-catching of all external features has to be the large hood scoop that would make this car look at home on a racing track. This feature helps to cool down the engine and keep the car functioning at full performance. Additional noteworthy frontal features include the LED headlamps with Auto-leveliser as well as LED front fog lamps. Moving to the flanks, the lines and curves of the body seem to flow effortlessly from front to rear, with 18-inch aluminiumalloy wheels and side sill spoilers hinting at the WRX’s on road capabilities. At the back end, LED rear fog lamps, a twin dual exhaust system and a rear lip spoiler all add to the prowess of the vehicle. On the roof, a power-sliding, tilt-adjustable, glass sunroof, as well as carrier installation brackets, add to the comfort and functionality of this model. Slipping inside the cabin, we were greeted by the comfort of the front sport seats complete with fancy red stitching. The driver’s seat is 10-way power-adjustable with lumbar support and provides a commanding driving position. The striking red stitching continues on the tilt-adjustable, leather sports steering wheel that felt great in hand. All of the materials, trimmings and finishes throughout the vehicle are of a highquality and the overall space is well-designed and functional. With plenty of head, shoulder and legroom in both the front and the rear seating, five adults fit inside comfortably. The boot offers 460-litres of storage space, a capacity that is significantly increased when the rear seats are folded flat. The Infotainment apparatus includes a 7-inch display as well as a six-speaker audio system. This setup includes voice recognition and is compatible with both Apple CarPlay and Android Auto. Audio remote control switches are conveniently mounted on the steering wheel and both dual USB ports and auxiliary audio input jack are located on the centre panel. A dual gage layout is present on the dashboard with a 3.5inch full-colour LCD display. We found this setup to be both functional and user-friendly, adding to an already satisfying experience. Finally, it was time to get the WRX out onto the tarmac and we were all smiles as the horizontally opposed, 4-cylinder, 4-stroke, turbocharged, Boxer petrol engine roared to life. With a 1998 cc capacity, a maximum output of 197 kW at 5600 rpm and a maximum torque of 350 Nm at 2400 to 5200 rpm, this automatic vehicle can shoot from 0 – 100 km/h in 6.3 seconds and offers a top speed of 240 km/h. The WRX houses various systems and control features to improve driving performance, including Subaru Intelligent Drive (SI-Drive), a Variable Torque Distribution All-Wheel Drive System, a Multi-mode Vehicle

Dynamics Control System and Adaptive Cruise Control to name but a few. This translates to a car with great handling, cornering ability, acceleration and braking. In fact, we have to say that this Subaru model is amongst the most enjoyable vehicles we have ever had the privilege of test driving. When it comes to safety, the designers at Subaru have included a host of features to ensure you and your family’s wellbeing. These features include a multitude of SRS airbags throughout the vehicle, Subaru Rear Vehicle Detection, High Beam Assist, whiplash reducing front seats, a 4-wheel Antilock Braking System, a Brake Assist System, an Emergency Break Stop Signal, ISO-FIX Adapted Child Seat Anchors, Child-proof Rear Door Locks as well as an engine Immobiliser. In truth, the only feature we felt was missing from this impressive array was the frontal camera, a minor detail when considering everything else on offer. In closing, we found the Subaru WRX to be a well-designed, aesthetically pleasing, high-performance, safe and functional vehicle that was extremely fun to drive. ✤

hef Pascal Tepper was born in Pecquencourt in northern France. In the year 2000, he received his supreme title of “Meilleur Ouvrier de France”, a much-coveted recognition as the best French artisan in the baking trade. It was not unusual that he received this title, as he spent most of his time in the family business. Pascal took over from his father Theo Tepper, who was a talented baker himself and shared his passion for traditional baking and the taste of good bread with his son. Pascal Tepper hails from a long tradition of French bakers and still insists on preparing the base ingredients for a wide range of bread and pastries at a hub in rural France. Floor to ceiling windows from which the natural light beams through, compliments the scattered green plants and minimal furniture of Pascal Tepper French Bakery at Four Points by Sheraton Sheikh Zayed Road, Dubai, providing the space with a modern and airy feel. We are welcomed by the friendly general manager Bernard who shows the same enthusiasm to all the other guests that walk in through the door of this charming and inviting establishment. Our order is taken by Maizel, who is incredibly knowledgeable when it comes to the menu, ingredients and flavours. While we ponder over what to have, Maizel advises us of her favourite dishes and those that are a Pascal Tepper must! On the lunchtime menu, you will find a range of fresh salads, soups, sandwiches and grilled dishes. When we say there is something for everyone - we mean it. Attractive prices and excellent service make Pascal Tepper the perfect lunch spot, either with friends or for a quick business lunch. The bread basket steals our sense of smell. This is what we came for! The bread is fluffy with lovely crisp golden edges. It isn’t easy, but we try not to overindulge and leave space for what is about to come. We begin with the salade de kale aux crevettes which comes highly recommended by our waitress. Slow-cooked prawns with kale, red cabbage, quinoa, beetroot confit, artichokes, sundried tomatoes, lilliput capers and avocado, accompanied by a soy and maple syrup vinaigrette - there’s more than enough to go round for at least three people. We also enjoy a bowl of caesar au crevettes, comprising of slowcooked prawns, lettuce, turkey bacon and boiled egg with a light Caesar dressing. After a short break, we move on to our mains. Did you even go to Pascal Tepper if you didn’t try the signature Filet de Boeuf Australien? The steak is juicy and oozing with flavour and the meat is cooked to our

preference, accompanied by the cleanest mashed potato and braised red cabbage - the dish made for beef lovers. We then try the Poitrine de Poulet Fermier, Farrotto aux Bolets and have to admit that the chef did an outstanding job. The presentation of corn-fed chicken breast farrotto, porcini mushroom with baby spinach was followed by an “mmmm”. This dish represents comfort food at its finest. Guests can choose from the finest grape and hops at affordable prices, starting from just AED 50. We, however, opt for the healthy Green Machine which includes spinach, mango, pineapple, celery, broccoli and banana - it was delicious, we promise! The staff made the experience more personable with their efforts, from the front of house knowledge all the way through to the passion of the chefs. Pascal Tepper French Bakery at Four Points by Sheraton Sheikh Zayed Road, Dubai, is a breath of fresh air in Dubai’s overcrowded lunchtime scene. The hearty food with quality ingredients make for a perfect lunchtime stop and each dish was a real crowd-pleaser. ✤
