So Much To Do, So Little Time… To quote Nelson Mandela: “Education is the most powerful weapon which you can use to change the world.” It was this saying that sprung to mind when I met and interviewed Dr Emad Sultan, deputy general manager of cultural affairs at Katara, about the upcoming Aida performance (see page 28 for more). He said once the public has experienced the arts in all its forms, then they can choose whether to accept it or not. This, to him, is the ultimate facet of civilisation – education and choice. If you’re an avid reader of FACT you will know that we’re a big supporter of the arts and hospitality industries, but there is a whole other spectrum that we are beginning to explore – the education sector. With some of the top universities in the world opening their doors to students in Qatar, there is certainly no limit to what these future generations can and will do for this country. As promise of a better career, so too do students from within the region and that will eventually place them with the intellectual elite. So, in light of this, we went round all the universities scoping out the degrees and short courses on offer for spoke to some of the students to see
what they had to say about studying here. No matter what your age, if you’re interested in broadening your educational horizons, then our feature

Why are taxis so taxing?
T
here’s been a lot of hype and drama about taxis in Qatar, and the problems people are facing with taxi drivers cheating passengers, refusing to take passengers if the destination doesn’t suit them, and so on. In an ideal Doha, there’d be a taxi rank outside every major hotel – they wouldn’t be waiting long, as there’s always people looking for a ride outside hotels, from tourists to people who’ve just been to the bar or have had a few drinks with dinner. The government is addressing the issue by further monitoring, improved technology with the meters to prevent them from being tampered with, and FACT QATAR OCTOBER
allowing new companies to get involved, thereby increasing the number of taxis on the streets. monitoring and policing these dishonest drivers (who are, it should be said, an exception rather than the rule) lies partially with us, the passengers! Yes, that’s right. Don’t allow yourself to be bullied by a taxi driver, for crying out loud! Keep an eye on the meter when you climb into a taxi, and if you see the driver adding unwarranted charges, raise the issue. If you climb into a taxi, and he refuses to take you to your destination, simply refuse to get out. In both cases, if it reaches a stalemate, all you have to do is take your mobile out of your pocket,
and tell him you’re going to call the quickly toe the line. I can’t understand how any adult allows themselves to be bullied! If they’re cheating or refusing to take you, they’re in the wrong, and should therefore not be allowed to win the argument, or you’re becoming part of the problem yourself. on the other hand, if a taxi driver is polite and honest, and does his job properly, return the favour, and be polite back, and give him a tip! Letting him keep the change of a few riyals seems like a just reward for good service, and encourages decent behaviour. Firm but fair – it’s a policy that applies to so many situations, this one included.

A classical music score is akin to a script. Your part is set and can’t really be changed. Your job is to convincingly deliver your part. In jazz you have much more room for improvisation. It’s like the script is only partially written and you have to write the rest of it in the moment! What do you ultimately want to achieve? I want to fulfil my purpose. I’ve named my band the Stay Human
humanity. If you had to choose one song to be on the soundtrack of your life, what would it be and why? “It Don’t Mean a Thing” because I love to swing! Either that or “What a Wonderful World”, which is just a very poignant song. Finally, why should the people of Doha attend Jazz Music Talks? It will be fun and inspiring! This is a great opportunity for the band to engage with the Doha audience and share the stories behind this music. GO:
“How to listen to Jazz” Explore various different ways of listening to jazz music. You will be shown what to listen for in a jazz performance and how to determine what is happening between the musicians on the bandstand. “The Blues in Jazz” and without it jazz wouldn’t be the same. This talk will explain why this is so, and why everyone has the blues. “Muse as inspiration” Many times great artists are inspired by other people. This is not only the case in jazz, but also in other art forms too. This talk explores some of the history behind who inspired what and why.

speaking person, or any person in the Middle East, which opera they know, they will say Aida,” says Dr Emad Sultan, the deputy general manager of cultural affairs at Katara. The opera, created by performed at the Khedivial opera House in Cairo on December 24, 1871, and conducted by Giovanni four acts and tells the tale of Nubian princess Aida who has been captured and enslaved by the Egyptian army. We follow her as she falls in love with an ambitious Egyptian soldier called Radames. However he is already arranged to be married to the King’s daughter Amberis, who herself is faced with the decision of choosing between her own true love and loyalty to her people. It is therefore a suitably dramatic way to officially inaugurate the iconic Katara amphitheatre to the public! Dr Emad, an avid fan of heart instantly. It’s very simple, even though it’s full of battles

and emotions. It stretches the heart straight away, from beginning to end.” He believes that Aida was the perfect choice because in an opera like this, such talents have the opportunity to showcase all forms of art on one stage. “There’s acting, singing, choir, philharmonic orchestra, ballet, visual arts, light techniques, sounds, set design. What else do you want to present?” In fact, it was after seeing the work and sculptures of set and costume designer Igor Mitoraj, that Dr Emad was inspired to bring “The stage director is a fantastic artist,” he says. “Regardless of what I will say or elaborate it is not going to be sufficient because his sculptures and statues are all around the world. They are fantastic. “The idea started when I met a friend and we were looking at his artwork, and we thought ‘why don’t we do an opera that has his pieces?’ and it evolved from there… The result is great. You will see a lot of sculptures that are inspired by the era – they don’t say Aida,

but they are so artistic and ancient in a way.” For a man who quite clearly has had a passion for opera from a young age and who has seen Aida “hundreds of times”, where has been the best performance we ask? “I’ve seen it in Egypt, Metropolitan opera, was in La Scala, technically and because the cast was fantastic. our cast is not lesser than this though.” At the event in Katara there will be over 200 performers brought in from overseas, but also locally found talents, too. renowned in Hungary. Uniquely, many of the actors on stage will be local residents of Qatar who have been chosen by the manager and director. Dr Emad says the entire event is a way of testing the Qatar audience, and based on the reception it gets, they will move forward with their plans. “Katara is a place to produce culture and art, and we should present such an entity to people and see how they respond,” he explains. “We are trying to come up with what we have as art, culture and heritage from Qatar and fuse it with things from the West and expose people to every element of art as much as possible. You connect cultures through a place. There are no differences in sex, age, race, religion.” introduce Katara’s customers to a new realm of understanding and knowledge. “Knowing about

That’s the ultimate of civilisation and that’s what we want to do.” Although they are looking to test the waters, tickets for Aida actually sold out in the first week of being released. FACT will put updates online if they hear of any more (after we get our own first, naturally!) but for now it looks like those of us who are ticketless will have to wait for the next event with baited breath. Dr Emad for one is hopeful for the future of Katara. “So far the response has been fantastic here and so I keep my fingers crossed it will continue this way.” GO:

“The Cadillac Escalade does exactly what Attract attention!”
I
s there a car more American than the Escalade? There are a number of candidates for the title of “Most American Car in the World” – the Corvette, the Mustang, the Wrangler – but I personally think the Cadillac Escalade takes home the trophy. Why? brand that has been ferrying presidents from mansions to red carpets and back since the presidential car is ‘Cadillac one’ (although it’s actually a highly customised limousine based on the chassis of GM’s colossal Topkick truck, but dressed up as a Cadillac). Secondly, it’s got one of those gearlevers that only Americans one of these gearlevers on it, and I really can’t see the appeal. For starters, it’s impossible to change skipping over it to Neutral, which is rather annoying. However, to each their own, I suppose. It does free up space on the centre console for the ample amount environmental controls. Thirdly, rather than the clinical

such as the CTS, the SRX, or the upcoming XTS, the Escalade gets a nice French name reminiscent of classic Caddies like the Coupe de And lastly, there’s the size. name translates to a military term meaning “to climb over because this vehicle is so big that you need a ladder to climb into the thing! Fortunate, then, that they’ve considerately included an automatic running board that folds down when you open any of the doors, and folds away again neatly when you set off. It’s big, it’s bold, it’s brawny, and it’s bling, and to me it embodies the automotive element of the American dream. It’s a statement car, designed to scream, “I am here, and I am a big deal!” With the massive grille and the huge no understatement here – it’s ostentatiousness at its best! And you feel this when you’re driving it. As we pottered around Souq Waqif looking for good spots to snap the Escalade, we drew more than a few curious gazes. When you’re pulled up at the pavement, people’s heads
turn as they walk past – it’s a car that draws attention by its sheer presence. When you’re driving on the roads, people make room for you in a way that a small sedan can only fantasize about. That could possibly be because the thing is so big other drivers are not all that convinced that you can even see them! However, one of the surprising things about the Escalade is that, despite its large size, all round visibility is actually not too bad, largely thanks to the huge wing mirrors. Manoeuvring the Escalade
Fuel economy is improved by the Active Fuel Management System, which shuts down four of the cylinders when not needed, as well as the Flexfuel Engine, which also runs on ethanol. This is, however, hindered somewhat by the fact that you can’t buy ethanol fuel in the Gulf! Ride comfort is, as you’d expect, fantastic! The Escalade billows along like a cloud, with very little noise in the passenger cabin, but this comes at a price. While the Magnetic Ride Control does a good job of adjusting the suspension to match driving and road conditions, simple physics state that a car of these epic proportions is bound to wallow a bit on the corners. Don’t

warning indicators on the wing mirrors that let you know you have a car alongside you, as well as a reverse parking camera. As you’d expect, the monstrous decent job of moving this opulent behemoth along. Thanks to 403 horses under the bonnet, it’ll propel you from standstill to 100km/h in just 6.8 seconds, which is impressive for a car that weighs about as much as the QE2.

The interior is just as comfortable as you’d expect too, with plush leather seats providing sofa levels of comfort even to the most ample of posteriors. There is also a cavernous amount of room, and a third row in the back that is easily roomy enough

for adults. Access is very easy as well, with the middle row seats folding down with the push of a button, and sliding forwards and backwards to allow for more legroom in the last row. which again, is a great feature on a car this size, because it means don’t have to tie wooden blocks aside, it’s surprising how nice it is to be able to adjust the position of the pedals to exactly where you want them. Impressive sound quality comes and kids will be kept quiet by the back. However, it should be said that unlike in other premium each headrest, the Escalade only features one central one, which could lead to drama when one of your little ‘angels’ wants to watch Spongebob Squarepants, and the Dark Knight. one glaring omission from the which had me fumbling behind the steering wheel for the ignition keyhole. However, I then felt quite foolish when I discovered that it doesn’t need a button, as it boasts remote keyless start, which means that you can have it running before you even get into the thing! All in all, the Cadillac Escalade does exactly what you’d expect it to: It attracts attention, it ferries up to eight people around in premium levels of luxury, and it goes in a straight line very fast for a giant more than that. It also bestows a kind of status on the person driving it that few other cars out there can match. When you hand your keys to a valet outside the feel a little smug!

Nusantao: Sea Kitchens
THE latest venue to open up at Four Seasons Doha, Nusantao: Sea Kitchens, has until now been Ramadan, however, they started their express lunch menu so we headed over to see what we thought. First off let us explain, as our waiter did to us, the concept of Nusantao. It is an Asian restaurant with dishes from six countries’ Indonesian, Indian and Arabic. The Arabic section is the latest addition (an effort to cater to the traditional tastes of Qatar) and is still expanding but overall the choice is already phenomenal. The a la carte menu is completely different to the lunch menu as well. With the express lunch you have three dishes (QR110) and four the executive chef Kato offers an Asian cuisine’ in one sitting. Naturally, while reviewing the course express lunch and chose

picked the mizuna green salad with myoga ginger and yuzu dressing (though the mizuna was substituted for arugula that day) which was refreshing and a great way to kick start a large meal. We followed that – miso soup, which came with seaweed, nameko, mushrooms and tofu. It was also light and certainly whetted our appetite in preparation for the star of this show – the snapper and fukujin pickles. This was so delicious that we greedily finished every last bite. It and the breaded snapper lay atop a gravy sauce which was made stock, onions, garlic, butter, sake, grated apple, tamari soy sauce, chopped tomato, brown sugar and something called bull dog sauce (we requested the recipe, but probably wouldn’t be able to accurately recreate it!). full, but still had room for dessert. What struck us most about lunchtime at Nusantao, aside from the spacious, airy venue, is that even though we had four courses, we we made the right menu choices, or perhaps it was the portions, but one thing we do know is that we will be going back to try out some of the other options, one of which will be the sushi from the a la carte menu!

C
hef Daniele was born and bred in Genzano di Roma, a small town just south of Rome, where he also found his culinary passion working in the family business as a baker. From there he developed his skills restaurants around the world, from Rome’s St. Regis Grande to the Amsterdam Hilton and the Hilton Resort Ras Al Khaimah, where he was part of of the Year in the 2010 Caterer’s Awards Middle East. Following this he moved back to Italy to strengthen his skills as Chef de Cuisine at the Hilton Giardini Naxos, Sicily and then on to Monaco where, at the request of Italian footballer Gattuso, he opened osteria del Mare, a traditional Italian osteria (a small and rustic Italian eatery with a menu that is simple, and yet highly tasty). Sufficed to say, this man can more than that, he can cook myriad dishes, you can eat them all, and you will still have room for dessert. At our lunch, Chef divulges his secret to keeping it light. “When I feel full it means there is something wrong in the preparation and the technique,” he says. “Most of the time you go in a restaurant, eat the third dish and you feel full. Sometimes, this is because people don’t know how to use olive oil.” He says one of

We had grilled salmon trout cooked with parsley, red onion and lemon and served with the Salmoriglio sauce made of garlic, olive oil, parsley and chilli. It just melted in our mouths. Unbelievably, we still had room for a light dessert of fresh apple tart served with pumpkin ice cream. Yes, you read that correctly – pumpkin ice cream. This was inspired by last month’s seasonal ingredient. What can we say? The man can create an entire menu with options using just one element. that eating is an experience of all the senses and particularly of vision and palate. “It’s about taste, the culture you have about food,” he says. “What you learn about, what you eat and the pleasure you get. The taste arrives in your brain and what makes you realise the taste is what you already know.” Even though many people may have eaten at Italian restaurants outside of Italy, the flavours and styles are often altered to suit the taste of the people in the place it’s being served. Daniele says that if a chef is positive and manages to delight guests with authentic and unique cuisine, the next time they come they are happy to trust the chef. “Cucina really is about your home,” he tells us. “When I cook I feel I’m at the end of the table and I think about my guests, can they like or not?” Well, we can safely say we’ll be inviting him to our table again! IT is not unusual for a spa to immediately make you relax and ready to feel good about yourself.

Hyatt Doha, once you walk through those doors and into the relaxation zone where you can lie on a sunbed by a pool and read your favourite magazine, it is as though you have stepped onto another planet entirely. on the day of my visit I was more than ready for some good
Coffee and Chocolate body scrub, which were performed by Indonesian spa therapist Ita. I have to admit the scrub sounded a little strange to me as the chocolate body lotion (don’t worry it is not just melted Dairy Milk) seals in the moisture and leaves you feeling silky smooth for days afterwards. me and my body’s requirements. Following this and the scrub, Ita noticed that I have had some skin problems since moving to Doha – a common problem here she tells me. So, during the aromatherapy facial she used oils that would best suit me and my health concerns. It is this customised service that struck me This relaxing facial includes cleansing, massaging and oxygenating with oils and a green tea mask. If you feel stressed or out of sorts at all, then I highly recommend this treatment as it is designed to calm your nerves, as well as improve and ready your skin to protect itself from impurities. the treatment room feeling calmer than I had done in months. It was as though Ita had scrubbed and massaged all of my worries away and I was feeling much lighter for it, too. I was then escorted back to where I started, the relaxation room, where favourite magazine (no prizes for guessing which one it is), a cup of green tea and some dried apricots and almonds. All in all, it was just what the doctor ordered.
