THE EDITOR
Festive Fever “Blessed is the season which engages the whole world in a conspiracy of love.” Hamilton Wright Mabie
I
’m sat here wondering how we got to December. Let me tell you; we started the year on a high as FACT had well and truly made its mark in the GCC, with three successful editions in Abu Dhabi, Bahrain and Qatar; we then went on to host the popular FACT Dining Awards both in the UAE and Qatar; we celebrated cultural holidays like Ramadan as well as summer festivals and loads of fab events throughout the hot and humid months; and then came the last quarter of the year, our busiest and craziest time. I’m happy to say that it’s all come full circle! We’ll be celebrating alongside many of you this month on Qatar National Day. With events and activities taking place all around the city, we’ve rounded up some of the best hospitality offerings on p20 – maybe we’ll see you at a traditional Qatari brunch; or buying sweet treats decorated in the Qatari flag – whatever your plans for National Day, make sure you join in the great celebrations! As you may have seen on the cover – our arts pages are adorned with the work of regional artist Hamad Bin Daina. We caught up with the Bahraini drawer to talk about his talent for sketching cars. He especially created this amazing cover for us in the theme of National Day – cool, right? Turn to p47 and learn all about his cool and quirky approach to sketching all kinds of automobiles. It’s December so that means only one thing, we’re bringing back a holiday favourite for our readers; FACT’S FESTIVE GIVEAWAY! That’s right; back by popular demand is another year of amazing prizes – turn to p34 and find out what you can WIN every day, until December 25! We’ve got an issue that’s full to the brim with festive happenings (p23); NYE parties (p37); motoring (p59); fashion (p69); foodie treats (p87); and pretty much ALL the info you need to make this time of year as magical and memorable as ever! Here’s to saying sayonara to 2015 – it’s been a great one! 2016 – come at us, we’re ready for you… Merry Christmas and Happy New Year to all who are celebrating.☺ Shabana Adam Editor-in-Chief shabana@factlive.com 6

Chef Nobu & Robert De Niro Doha’s dining scene was abuzz last month as producer and Academy Award-winning actor Robert De Niro and master chef Nobu Matsuhisa, visited our shores for the opening of their stylish new restaurant, Nobu, at the Four Seasons Hotel Doha. FACT caught up with the stars for an insight on the long-awaited eatery…
Hi! What can you tell us about this much-anticipated new venue in Doha? Chef Nobu: So now we finally have the Nobu Doha! I’d like to introduce our staff and of course, our food with such a spectacular setting for the restaurant. What can I say? Introduce more of my food! Robert De Niro: I’d just say: come, it’s good food! Chef Nobu, is this your f irst time in Qatar? No. I’ve been here a couple of times before, maybe four times. We have restaurants in Dubai, so I jump on over here to check that everything is ok.
always has new and different ideas to mine – unique ones. If it’s an idea we like, we go on with it. I don’t know if he learns from me! Robert de Niro: Not much! Nobu has been four years in the making – what’s the process been like? Robert De Niro: It was four years since I pitched him the idea and for the restaurant to be ready. It took about a year to come up with the concept, build the restaurant and so forth. It was a logical amount of time for all the steps to get to the finishing point.
What are your thoughts on Doha’s culinary scene? Chef Nobu: I know very little about it. Every time I come here, it’s all about Nobu and re-grouping with the staff and making sure the project is heading accordingly.
Robert, what made you enter the restaurant business? Robert De Niro: I created Tribeca Grill, and partnered with Drew Nieporent. He had a good restaurant at that time, probably a three-star one for New York standards in Tribeca film center. I thought he could be of help for Tribeca Grill.
You both share a long-standing friendship - what’s the most important lesson you’ve learned about or from each other? Chef Nobu: I learn from Robert all the time. He
Any plans of opening Hotel Nobu in the Middle East? Robert De Niro: We are! In fact in Riyadh and Bahrain. We’re also opening one in London, Miami and a lot of other places.

After some hashtagging and searching on social media, we came across 33-year-old Hamad Bin Daina aka @ bh_vision and his insanely amazing sketches and drawings of every car model you can think of. We got in touch and asked him to draw us a cover that embodied the Qatari lifestyle in the form of a car, all in celebration of National Day - the result is beyond amazing! Hamad is completely self-taught and began with sketching cartoons, caricatures and all types of animation. But something changed. He became aware that when it came to drawing, his hand to paper pressure was quite heavy, and so he chose to start drawing cars. “I decided to choose what I thought would be, for me, the hardest thing to draw,” Hamad says. “Especially sports cars, they’re very difficult to draw, but I taught myself to recognise the lines and the different angles and reflections, and now my drawings are done in my own unique way.” The first car he drew was the Ferrari F50 – aged 18. He has somewhat of a deep appreciation for Italian cars. “I love the shape and the way they are designed,” he adds. Something we found really fascinating is that, unlike traditional motoring enthusiasts, Hamad’s interest in cars is
sparked purely from a visual point of view. “I’m into the body of the car and the way it looks, more than the way it drives and the internal aspects like the engine,” he explains. “I just like looking at them, I’m very drawn to how attractive a car can be. Sometimes, I can spend hours looking through magazines and searching on Google about the shape and the design, and the history of the car.” His dedication to his art form is constantly present in every part of life, especially when he’s out driving. “Sometimes I’ll see a car on the road and I’ll forget about everything else,” Hamad tells us. “I’ll have to stop and study the lines of the car so that I can start imagining how it will come to form on paper.” For Hamad, drawing relaxes his mind. He can spend up to four hours a day sketching, especially if it’s a detailed piece. When it comes to tools and technique, he’s very sure of the type of pens and pencils he uses. “The most important thing with my drawings is to choose the thinnest of pens and pencils,” he says. “I do my drawings on A4 so the tools have to fit in with that. For example I use a .3 pencil and as I get deeper into the details, I’ll use .03.” Hamad puts a quirky spin on some of his drawings, almost giving the car a character and bringing it to life. “If I’m only drawing

“reality” cars, people can get bored of those drawings quickly,” he says. “So, I developed a unique style of sketch, incorporating my Arabic culture and background. I take the image of a gutra and the Arabic eyes and apply them into my drawings.” It’s certainly catchy and very different from anything we’ve seen before! Hamad talks about his artistry with great enthusiasm, and he takes it seriously. Before starting a drawing, he’ll spend an ample amount of time researching different angles, the best reflections, and all the little details about any one car. “For me, to start a drawing without research is the wrong step,” he says. “Imagine if you draw something from any angle just because you love the look of the car and it

That’s why I research and look at as many pictures of the car beforehand.” The McLaren P1 has been one of the most difficult cars to draw for Hamad. But, the one that really took it out of him was the 1989 Batmobile. “It’s like a very big fan at the front and then the bat wings. fact magazine

"My advice to anyone who likes drawing and sketching is just to really take your time. Forget about social media and don't just hurry to put your signature on anything. Finish your art to your own standard. Putting your signature on something shows how you feel about it. If it's good, you'll sign it."

There were so many angles and lines to study – it was very difficult,” he recalls. And what’s his favourite car to draw? “I love all of my art,” he says. “There are thousands of cars out there and I get to pick any one I want to draw – this is really exciting for me. There is, however, a car that’s very special to me, from the beginning, it’s very close to my heart – the dodge viper. I really really love this car, especially the lines and the colours. I spent around five days drawing it.” Due to his demanding day job, Hamad’s biggest challenge is finding the time to create more drawings and take the next step towards things like exhibitions and art fairs, though he did take part in a local exhibition as part of Visionaries in Bahrain, where some of his drawings sold to VIP attendees and the social elite. So, what keeps Hamad going? “The good thing is that you’re challenging yourself, and whenever you post your work on social media, many people from around the world can see it, like it, comment on it, and appreciate it,” he says. Hamad clearly has a personal and deep connection with his drawings, and more so with the practice and concept of hand sketching – a rare quality in this modern day of technology. He does it for himself, because he enjoys it. “Each artist has their own way, it’s like their fingerprint,” he says. “And drawing cars, this way, is definitely mine.” ✤ GO: Hamad is available for freelancing and special projects. Big Screen
The Hateful Eight What’s it about: Tarantino brings vengeance back onto the big screen and this time we’re going to post-Civil War Wyoming where a fiery bunch of bounty hunters take up refuge in the same cabin, to escape a blizzard. They slowly realise that their mysterious connection might prevent them from getting home safe.
Director: Quentin Tarantino cast: Samuel L. Jackson, Kurt Russell, Jennifer Jason Leigh
Highlights
The Lady in the Van
“Tarantino described it as the “funniest snow Western ever made,” of course, with bloody implications.”
What’s it about: An adaptation of Alan Bennett’s award-winning 1999 play, based on his experiences of a sharp-tongued vagrant called Miss Shepherd, who camped outside his driveway for more than 15 years.
– The Hateful Eight
Why it’s worth watching? Quentin Tarantino has hardly ever (in our humble opinion, never) been accused of making a bad film, because, let’s face it, he’s pretty darn amazing at the whole movie-making thing. As Tarantino has grown throughout his career, so have the length of the films he’s directed, and The Hateful Eight is set to run over the three-hour mark. Though this might polarise some audiences, it also gives Tarantino breathing room to execute some awesome dialogue scenes, which is perfect for a film that is centred around eight strangers taking shelter in a single cabin. Stuck together, it’s likely that the characters won’t venture far from each other, meaning the majority of the film will take place in a single location. Tarantino described it as the “funniest snow Western ever made,” of course, with bloody implications. The trailer’s intense music really highlights the dark comedic moments between the characters, now, all you have to decide is are you a true cinephile who can tolerate such a lengthy running time, or are you a casual movie-goer who merely wants to see an entertaining film?
“Witty and heart-wrenching at the same time, The Lady in the Van will definitely bring out all the good motives behind human kindnesss...” – The Lady in the Van
Director: Nicholas Hytner cast: Maggie Smith, Alex Jennings, Dominic Cooper, James Corden. Why it’s worth watching? Three words to describe why we adore this film – Dame Maggie Smith! She is the glory of this simple yet wonderful piece of cinema in which she plays the part of Miss Shepherd with such a great poker-face and offers major laughs, even though we quickly learn that her character’s now vagrant life is the consequence of regret and tragedy. Witty and heart-wrenching at the same time, The Lady in the Van will definitely bring out all the good motives behind human kindness, and if that’s not enough, Maggie Smith’s kick-ass van will have you giving the film a thumbs up! fact magazine

A Head Full of Dreams

By Adele
Well, there’s been only one name stirring up the music world this past month, and it’s the princess of Tottenham and conqueror of pop charts – Adele. Her newest musical offering sold somewhere in the range of 2.3 million copies in its first three days of release (wowzer!) so it’s safe to say that Adele’s fans have been waiting patiently for her new material. But, what is the new sound like? Well, at its best, 25 is powerful and progressive in a non-musical but more personal way. This is Adele all grownup; she’s married, she’s a mother, and she’s not afraid to show the romanticism of her new life. The production on 25 is immaculate, and the vocal delivery is absolutely stunning. We love the high belts in Sweetest Devotion and the rich lower notes in River Lea, not to mention the piercing sounds of All I Ask and Million Years Ago. This is classic Adele with a more mature flair for lyrics, and though there’s little challenge in 25, her listeners will find the familiarity and comfort that is so associated with Adele.
Cupid’s Rage is the third book by Bahraini author Laala Kashef Alghata. Her first two books, Friendship in Knots (2003) and Behind the Mask: A Folded Heart (2006) were a children’s novel and a poetry collection respectively. Cupid’s Rage is collection of poetry on life and love, the shields we create to battle Cupid’s furious arsenal of arrows and finding ways to heal when our cracks are discovered. The collection is on life and love, written over a time span of three years between Bahrain and the UK. The publication of Friendship in Knots made Laala the first Bahraini to publish a book in English and the youngest author at the time.
With BIG-name guests including Beyonce, Noel Gallagher, Tove Lo and even a small recording from President Barack Obama, Coldpaly’s newest release has more than the usual rock sound that fans know and love. The “goodbye old Coldplay” comments will be out in full force as Chris Martin & Co are putting out a completely different beast of its own, unlike anything else they’ve released before. With elements reminiscent of X&Y, their teaser single, Adventure Of A Lifetime is a total disco banger with a mix of psychedelic, funk, and pop. The album shows that Coldplay

Bringing to life an era that still intrigues the world, Abdulaziz Al-Mahmoud’s deep and dedicated research into a time that is so significant for the world’s history, definitely pays off in The Holy Sail which brings to life love, honour and nobility as well as taking readers into the medieval world of Lisbon, Cairo, Jeddah and Istanbul. Oblivious to the invasions, massacres and religious fanaticism that characterise the 15th century, a young girl falls in love with a noble Arabian tribal leader. But all eyes are on the Portuguese fleets in the Arabian Gulf, intent on securing the profitable spice trade. The Holy Sail brings to life a neglected episode of history that impacted the world.
the band is taking a risk, but props to them for exploring new sonic possibilities with each new era. So, there’s a good chance that we’ll be hearing more danceable tracks and a much happier album!

CITY RIDES
FACT takes a drive in the successor to the Gallardo – the new Lamborghini V10 offering, the mighty Huracán LP 610-4.
L
amborghini like to keep things simple with their product range, offering two base models in the line up at any given time, one boasting a naturally-aspirated V12 engine, and one a naturallyaspirated V10, with several editions derived from each one during the course of its life. The Lamborghini Huracán, named after a famous Spanish fighting bull in keeping with Lamborghini tradition, replaces the outgoing Gallardo as the marque’s V10 offering. As a result, it obviously has to up the game over its predecessor. Therefore, Lamborghini have made quite a few changes to the exterior, interior and performance figures. The Huracán still features the same 5.2l V10 as the Gallardo, but this time round it has been uprated to produce 610PS (602hp) to the Gallardo’s 560PS (552hp). This means a 0-100km/h time of 3.2 seconds, and a top speed of 325km/h. It also features a raft of new technology, such as Stop & Start fuel saving, and MagneRide electromagnetic damper control. Inside, the Italian sense of drama comes courtesy of the 3-mode switch on the steering wheel for Strada (Street), Sport, and Corsa (Track), and the bright red fighter jet-style cover over the ignition, which you’ll have to flip up to fire up that big V10. It all just appeals to the man-child inside! We collected the car from the Lamborghini showroom in Deira, and familiarised ourselves with the car’s immense power, blistering speed and unforgettable V10 bellow on the long drive home to Abu Dhabi. We were somewhat nervous about navigating Deira’s extremely busy streets in a Lamborghini, but needn’t have been. Despite being a V10 supercar, the Huracán is manageable and easy to manoeuvre, and feels positively sedate at low speeds in Strada mode. Some rear visibility is obviously sacrificed to that low seating position and the mid-engine layout that places the big V10 right behind you, but it’s a small price to pay for such a rousing symphony The Huracán is just as comfortable cruising on a highway as it is on city streets with a smooth ride in Strada mode. 60

CITY RIDES
The Huracán boasts a highly intelligent all-wheel-drive transmission with a 70/30 front-rear torque ratio, but can send 100% of the power to the rear and 50% to the front depending on requirements. Cruise control is optional in the Huracán, but unfortunately our model didn’t have that option, so the biggest challenge was avoiding a speeding ticket. 62
fact magazine
However, a highway isn’t where you want to be in a Lamborghini, so the next day we went to find a more challenging route for some entertainment. Switching to Sport mode tightens up the car overall, opening up the exhaust for a more aggressive note and more power, improving throttle and steering response, and stiffening the chassis for better grip. The Huracán boasts a highly intelligent all-wheel-drive transmission with a 70/30 front-rear torque ratio, but can send 100% of the power to the rear and 50% to the front depending on requirements. It works together with the Pattaforma Inerziale, which is an array of motion sensors that adjust the ESP and gearbox to suit driving conditions. It’s a marked difference over the Gallardo, and results in a car that makes the immense power of the car’s 602hp V10 very manageable, and insane amounts of fun to drive! Overall, the Huracán is absolutely superb, offering Italian supercar exotica and performance figures in a highly usable package. We’re completely sold! ✤

PLUGGED-IN
The Huawei Honor 7 The Honor 7 was launched in the Gulf last month in Dubai with much fanfare and a direct appeal to “the youth,” including parkour shows, a guest appearance from a daredevil stuntman, and an extensive product presentation. However, does it live up to the hype? Honor is the premium subbrand of Chinese electronics manufacturer Huawei that has enjoyed considerable success by offering premium-level features at lower prices than its Android competitors. However, that isn’t the entire story, because the Honor 7 also boasts a raft of innovative new features that really set it apart in the market. Combine this with a very competitive price tag, and you have a serious contender in the Great Smartphone Race! Let’s start off with first impressions. Visually, the Honor 7 doesn’t impress. While it’s not a bad-looking phone, in relation to very goodlooking recent releases like the Samsung Galaxy S6, it’s left wanting. However, a nice hefty feel from the brushed-aluminium case does redeem it somewhat. However, in terms of horsepower, the Honor 7 does impress, with an octa-core processor, a choice between 16GB and 64GB of storage, and 3GB of RAM. As a result, the operations of all the apps we tried were smooth and seamless, with only the occasional pause in loading certain things. The camera also impresses, with a 20MP rear-facing camera, and an 8MP front facing one, both of which take very decent images with plenty of detail. There are also some good image editing apps that make things even better. On the back of the phone is the 64
fact magazine
VERDICT: Overall, we found the experience of the Honor 7 a positive one. While we’ve not been tempted to give up our Galaxy S6 by any means, in terms of value for money the Honor 7 is extremely tough to beat – a presentable smartphone with clever features and some great innovations, albeit with a sometimesimperfect delivery.
biometric fingerprint scanner. Just below the camera lens, you press your finger to the scanner, which makes for really easy use with one hand – bonus! It’s also supposed to be able to scan your finger from any direction, although this is a bit hit and miss. It doesn’t always work first time, and sometimes requires multiple tries to unlock the phone. The Honor 7 runs on Android 5.0 Lollipop, but with extra features courtesy of Huawei’s Emotion UI on top, which adds things like the knuckle tap and drag to perform screen capture and selecting certain parts of the
screen, and the button on the side, that can be easily programmed to access favourite apps like Facebook or Whatsapp. It works smoothly and the graphics are crisp, so anyone who is a fan of Android will be more than happy with it. Voice Activation is also a big feature of the Honor 7. On setting up the phone you have to repeat the phrase “Dear Honor” three times, and it will learn your voice. You can then use it to wake up the phone when it’s in standby, or find it if you’ve misplaced it. For example, saying “Dear Honor, where are you?” will make it play a tune, vibrate, light up the camera flash and say “I’m here” until you find it, which could prove handy. However, we found the command “Dear Honor” a bit corny, and didn’t particularly want to have to walk around saying it. Thankfully, different custom commands can also be entered! ✤

CHEF’S TABLE
This month, the FACT team meets culinary master Chef William Khala, who joined The Ritz-Carlton, Doha earlier this year as Chef de Cuisine at the hotel’s stunning La Mer Restaurant. We went to learn more about (and taste!) his cooking…
Hailing from Toronto, Chef William Khala’s plan was never to actually become a chef, but rather a surgeon. “I finished school and I didn’t know exactly what I wanted to do,” he says. “I wanted to be a surgeon; I like the detail part of it. “Then I came across food, hotels, and everything. I love food, as you can tell. I got into it, and I was fortunate enough to meet the right people at the beginning who set the tone of what cuisine should be like; how a kitchen should work, and what being a chef and traveling really meant,” Chef William recalls. He has now been in Doha for around 15 months, working at La Mer, where he oversees the daily culinary operations 88

of the kitchen, develops menus, creates high profile culinary events and, generally, helps to elevate the norms of legendary service at La Mer to new heights. The first dish that we’re treated to is La Mer Salad with raw and pickled mushrooms, shaved asparagus, truffle labneh, and pine nuts. We love how fresh and light every ingredient is, and the seasonal use of truffle labneh complements the taste of every other component – just delicious! We’re off to a winning start. We’re ecstatic to learn that some of Chef William’s favourite places to eat out in Qatar, are Nando’s and Turkey Central (ours too!). “You’ve got to give
it to them; tasty, done right, and value for the money,” he says. He’s a chef who cooks fine-dining, but also appreciates popular street joints – an endearing quality that we love! Chef William’s culinary career has taken him all around the world – from Chicago to Spain, France and Rome, before joining The Ritz-Carlton in his home city Toronto. As we’re chatting away, the next dish makes its way to the table. Arabian Gulf Cobia with Shimeji mushrooms, soy beans, truffle gnocchi, and dashi consommé. It’s fine-dining and seafood at its best. In fact, Chef William tells us that Cobia, a South American fish, is one ingredient that he never expected to

find in Doha. “I didn’t think I could find it here, but the did at the market,” he says. “It’s meaty, fresh and exactly what I was aiming for.” The presentation of this dish is on point, and, again, we’re in awe of all the flavours and textures present. A definite must-try! How does Chef William approach cooking? “Things are changing for me now, as experience makes you grow,” he says. “I like to keep the food interesting, having combinations with something new, but also I like to keep it simple at the same time. “I focus on ingredients – they speak for them self. I also like to focus on seasoning the flavours. Once I have the base, I play around on the plate to make it appealing for the guest,” he adds. The last dish to come out is Spiced Lamb Loin with smoked eggplant, tomatoes, lamb merguez, chickpeas and minted feta. It’s tender and tasty, and the feta adds a lovely twist. This is one dish that meat-lovers will appreciate! Surprisingly, Chef William’s favourite
ingredient is Japanese – it’s yuzu – a lemon, citrus juice! When it comes to La Mer, Chef William is beyond enthusiastic and dedicated to the restaurant’s concept and menu. “As a passionate chef, I am proud to introduce you to a style of cooking that will intrigue your palate, enliven your senses and leave you with a memorable dining experience,” he says. Well, it’s sure been a foodie delight that we won’t forget in a long time. ✤

Meals, seal the foodie deal! This month, Cucina De Badir trails off to learn the basics of Italian cuisine at the wonderful Antica Pesa‌. fact magazine

Cucina de badir

I
can still taste the fresh salad, or perhaps it was that delicious carbonara that has me reminiscing about the exciting Cucina De Badir experience at Antica Pesa. Let me rewind for you and share all the tips and tricks that I picked up from Italian master chef, Marco Calcaterra, Executive Chef at Antica Pesa. He teaches culinary skills for a simple and basic approach to authentic Italian dishes. For those who still wonder in despair as to where majestic Antica Pesa is located, the answer is, in an even more majestic location; Marsa Malaz Kempinski Doha. Being the foodie lover that I am, I was eager to learn exactly what makes Italian cuisine so popular. We’ve heard of legendary recipes of how a carbonara is truly cooked, or how olive oil can do the magic in an Italian dish, but I was excited to be learning all this, and more, from a true culinary genius. The journey began when Marco introduced me to his colleagues, an all-Italian team, in the kitchen. Then came the fun part… cooking! We start with a healthy and easy tomato salad. We cut some tomatoes into thick slices, and we separated, nice and neatly, some basil for our salad. We slice red onions, and, here’s the secret to the salad, dip them into rice vinegar for a few minutes. This adds unimaginable amazing flavour to this refreshing and colourful salad. Mix the tomatoes and basil together, and drizzle them in lots of olive oil. We 96

season this with salt, pepper and, what happens to be Chef Marco’s favourite ingredient, garlic (it certainly makes a massive difference to the already exquisite flavours). Let this and the onions sit, separately, for a little while as this will allow the delicious tastes of each ingredient to mix in and shine through when you take a bite. We move onto a pasta alla carbonara. We had two choices, beef bacon, or duck. We chose to take our carbonara to the ultimate foodie level and go for the duck. We started off by slicing our duck into thick layers (and be generous with the quantity). We then take three eggs and separate the yolk from the whites. Add some pepper to all three yolks and apply the famous fork move to whisk everything up. Fry the duck slices and bring your spaghetti to boil. Once our duck slices are ready to leave the frying pan, we add a bit of lemon juice to give an acid twist to a usually, savory and crispy duck. Once
Cucina de badir
we remove everything from the pan, we add water to the leftover oil and start prepping the carbonara sauce. Doing it this way, adds more flavour to the sauce. Our pasta is done and so is our sauce. Mix everything in a bowl and add the yolk to the carbonara for an extra touch of culinary greatness. Of course, top the whole thing off with Parmesan cheese – just delicious. We go back and finish our tomato salad. Remove the onions from the vinegar and add them into a bowl with the olive-drenched tomato and basil. Mix everything together and add some succulent ricotta cheese for a truly yummy taste. Dessert, anyone? We started with tiramisu and, in my opinion, nailed the creamy texture and proceeded to build the dessert with some ladyfingers and two shots of single espresso. Dip a ladyfinger

into the espresso and add some cream on top, continue layering until your desired amount. We finished by styling our dessert with some cacao, coffee beans and other cool techniques the chef had in store. That’s all folks! Hasta la próxima en la Cucina De Badir… ✤

DOHA DELIGHTS
Spanish Week Wonders This month, The Cellar and Choices at Oryx Rotana Doha will host a fabulous Spanish festival with delicious treats cooked up by none other than Chef Angel Zapata Martin of the famous Universo Santi. He’ll be coming to Doha with his culinary expertise and food flair, for diners to enjoy. FACT talks to the chef ahead of the event… What is your first impression about Qatar? That’s a very funny question! During my last visit to Doha in May, I was there for 10 days and I couldn’t go out from The Cellar kitchen. The guests we had back then were full of requests and most of them came several times to try different options. So impressive… Really exciting and dedicated to it! What is the nature of the existing collaboration between yourself and Oryx Rotana? I met Chef Sanguk Lee, Oryx Rotana’s Executive Chef, through Ivan Icra, Giorgio Locatelli’s Pastry Chef, a great professional by the way. We worked together in Atlantis The Palm, Dubai. Chef Lee proposed one day to make a Spanish food festival in Doha and I loved the idea. It’s always great to come back to the Middle East for a promotion sponsored by Oryx Rotana and this time around Qatar Airways. Have you tasted the oriental food at the hotel? Yes, I did try all different themes every night. The effort of the staff, the taste, garnishes and environment that Oryx 102 fact magazine
creates for every single night is indeed admirable. When will be the special dedicated days for Spanish promotions at the hotel? Every day from December 8 to 16 at The Cellar and Choices; the Oryx Rotana team and I will be creating a special Spanish atmosphere with new Spanish dishes and great flavours. The Cellar will

offer Daily Business Lunch and Dinner, Pintxos night on Wednesday, Tapas Galore on Tuesday and Saturday night, a Tapas Degustation Menu on Thursday night, Cooking Classes on Saturday and the famous Spanish TapBrunch will be in Choices on Friday. Will there still be Spanish platters offered after this promotion? I am sure that when I leave the Oryx Rotana team, they will keep some plates, touches or flavours of Spanish cuisine. What are the main characteristics of the Spanish cuisine? Spain, as all we know, is incredibly rich in terms of gastronomy. What make us different is the sharing concept or known as “TAPAS”. Going to a random bar or terrace and having hops is a reason to create a banquet with small delicious and tasty bites (tapas). But most importantly, it’s the country having four seasons in a year, with a very different climate amongst them that makes the variety of products very impressive. These products are constantly surprising you. Are there any ingredients for the Spanish cuisine that are unavailable in the local market? Of course, A LOT! But we are chefs, and a chef should be a master in finding solutions. Something my first chef told me… “a chef never says no!” What are the messages directed to the guests by your creations? Simplicity, traditional, tasty, humility and altogether satisfaction and happiness! ✤ GO: Spanish Week treats will be available at Oryx Rotana Doha from December 8 to 16. Tarek Derbas General Manager, The St. Regis Doha
Doha Insider
What makes The St. Regis Doha Tell us your three favourite hotspots in Doha and why... stand out from competitors?
TELL US SOME OF your personal & professional goals for 2016?
My favourites would have to be Souq Waqif, the MIA and the Aspire Sports Foundation. One step in the Souq is like a step back in time, it is a great example of the amazing development Doha has undergone in such a small amount of time. Another incredible city landmark is the Museum of Islamic Art, a true gem; from the expert architecture to the astounding collection of artefacts it withholds. As for the Aspire sports zone, it is one of the world’s finest sport training facilities and as a result it will serve as the stage for the one and only 2022 World Cup.
My plan this year is to give back to the community by offering my 25 years of hospitality experience to support and mentor local management students. I will impart workshops and lectures at local hospitality schools and I will give the students the opportunity to get a glance at the reality of a day in hotel management by visiting our precious property. I will also continue to invest my efforts in the St. Regis Doha. Which I intend to maintain in its rightful position as the finest in Doha and take the focus on my goal plan based on people, product and profit to the next level.
In my opinion there are four key attributes that distinguish St. Regis Doha; Firstly, it is the only hotel in the city that provides professional butler services to each of its guests. Secondly it boasts eleven worldclass venues including a Gordon Ramsay restaurant and Jazz at Lincoln Centre. With twenty meeting rooms, including the largest ballroom with natural daylight in the country, there is no finer address to host an event. And lastly another well-established feature is our versatility, from Sunday to Thursday we surpass as a corporate haven; however, during the weekend we excel as a full high-end resort. 106 fact magazine
