nother year, another December – who’s ready for some downtime this festive season? It’s been a whirlwind few months in the media world (and the world in general!) with events galore, festivals, food shows, theatre and more, so we’re looking forward to slowing down a little in the lead up to the most celebrated month of the year. Qatar certainly has a lot to offer over the next 31 days and we’re bringing you all the need-to-know happenings and info to pack up your social calendar, fast! We begin with National Day festivities (p22-24) where Doha’s hotels turn into the best of what Qatari Hospitality means – good food, excellent service and a familyfriendly atmosphere for all to enjoy. Check out our top picks of what’s on and join in the cultural events. With 2017 being such a monumental year for Qatar – we’re talking huge malls, more hotels and some of the world’s top brands cementing themselves in Doha – FACT decided to take a look back over the year and bring you our 2017 highlights from every issue (p29) – what were some of your best bits of 2017? Chef Aditya Raj has worked with his team to come up with specials taking inspiration from, and utilising, local ingredients in Indian recipes, driving innovation and excitement to the table. Food highlights include: Chickpea and Lamb Soup – Chef’s own version of Harira soup using local ingredients like chickpeas and tomatoes, flavored with coriander roots, roasted cumin, ginger and basil. Chicken Vermicelli Soup – Classic chicken consommé simmered with soft vermicelli and chicken cubes. Creamy corn kernels and garlic infused olive oil are added in to uplift the texture and flavours. Then there’s Murgh Fatoush Salad – Tender slices of warm malai tikka served alongside the famous Levant salad “fatoush”. Mix lettuce, onions, cumin pomegranate dressing, baby radish and fresh mint. The Rubiyan Salad is the most 8

famous shrimp and potato salad of the Arab World. Made of Gulf shrimps, locally grown tomatoes, lettuce leaves and topped with a hot and sweet dressing and lime juice. Also available for hungry diners is Kandhari Lamb Chops, Tandoori Sheesh Kebab, Iranian Jujeh Kebab, and Murgh Akhdir Kebab, perfect for the carnivores of the family. For dessert, the Roz-bel-haleeb – Almond and saffron rice pudding is delicious, whilst an Indian version of rose flavored kesari kheer will give you all the happy feels. THE REAL CULINARY GOD During his recent visit to The St. Regis Doha for a one-night only special dinner, Celebrity Chef Gordon Ramsay blew diners away with his world-class cuisine. FACT’s Marisela Paesano caught up with the best in the game at his self-titled restaurant, and albeit a few penny-jar moments, it turns out that this pro-food fiend is actually a very charming personality…

M: Hi Chef! Let’s get straight to it - your restaurants in Doha continue to be a huge success – what inspires you to keep innovative but stay true to your original concept? GR: It’s a huge amount of pressure when you are working with The St Regis, so with that level of finesse comes a lot of pressure; working with the owners and the management team and having that dependence on those expats is a great testimony of the success of the restaurant. Your bread and butter are the expats, so we have to be continuously creative with our theme nights, London Twist on Monday, Lazy Brunches on Saturday, Wellington Night on Wednesday and so on, and we have fun with it. You’re a busy man – TV shows, restaurant openings, cookbooks… what keeps you motivated? GR: Running away from journalists (laughs). What keeps me motivated? Working hard enough so I can wake up one day with no press (laughs). I am a very passionate individual and I have a great sense of humour and I work hard, and I play hard. My life is managed for me for 15 months in front so when you are climbing the ladder to become successful you work endlessly hard to get there, then when you get there you have to stay there. I wanted it this way for a long time; I wanted this to be a super busy, multifaceted, multicultural empire of restaurants so I am 58

just as passionate now as I was 15 years ago. It’s easy to say it’s money, and fame, but it has nothing to do with it… it’s the passion. Next month we see the celebration of 20 years since I opened my first restaurant. Today we have the same maître d’ and pretty much the same brigade so that hasn’t changed, I have changed though – I’ve become more wrinkled and crankier and I’ve become more impatient. But I think I am like a fine wine, the longer you leave it the more mature it will get. M: You’re best known for bringing British food to the forefront of the culinary world – what would you say to those who don’t think there is such a thing as “British” cuisine? GR: Bull***t...can we say that? (laughs). What would I say to people that don’t understand that British cuisine is to be respected? So British reputation for food has been played for many years by Central Europe but now we have the most amazing chefs that have gone and spread their wings to France, Italy and Spain and that sort of helps to rebound the British cuisine. British cuisine now, especially in London, is highly competitive, multicultural and some of the best restaurants in the world are there; the Michelin guide launched three weeks ago, another 3-star Michelin in London, a ten-seat Japanese restaurant and we are now the longest serving British restaurant with 3-stars so there is a lot happening with British cuisine. The fillet Beef Wellington, we took that to America 15 years ago and now it’s one of the most famous steaks in America. In our steakhouse in Vegas we sold something like 279.000 Wellingtons a year so British cuisine is on the map now.

M: As a renowned chef, what matters more – taste or presentation? GR: Taste, I will explain why, two years ago, producing Master Chef in America we worked with a young contestant who was blind, and it’s something we teach to all our chefs to do, earlier on, close your eyes and concentrate on the flavour, if you have to close your eyes now for three minutes, the level of concentration will go tenfold on your palate. What we did with Cristina was we got the raw ingredients, we got the canvas to plate and close her eyes and we taught her how to dress the food. By the time everything was cooked she had plated it so her food was looking beautiful but the flavour was incredible. From a chef’s point of view the flavour profile has to come first, you can have one of the most decorative dishes looking like looking at a beautiful lady with an amazing dress but then she opens her mouth and she is from Essex and then you start to worry! (laughs). M: Do you still feel the pressure when you’re in the kitchen? GR: The only time I feel pressure is when I’m sat in front of the journalists (laughs). From Lady Di to President Putin to Nelson Mandela’s 90th birthday, I have been very lucky enough to cook for some very important people and the only time I ever feel real pressure perhaps is when my mum comes for dinner because she wants her meat well done. That upsets me! . M: Share with us your advice for young, budding chefs… GR: My advice to young, budding chefs is come out of your comfort zone, learn a second language, understand different cultures in cuisine. One of the most extraordinary recent experiences for me was Vietnamese food, I went to live in a village on the Mekong Delta, a floating village, and I learned from amazing fish paste to cooking with no dairy, fresh produce twice a day - it was incredible. M: Finally, aside from your very own – where have you tried the best Beef Wellington? GR: The Fillet Beef Wellington originated at the Savoy Grill, we had the beef restaurant at the Savoy Hotel and we fell in love with the restaurant. When we launched we had the classic recipe for Fillet Beef Wellington dating back to the earlys 60s - that’s when we mastered it. So, that would be a great place for everyone to try it! ✤

For diners with a discerning palate, give us three reasons why Morimoto should be their choice for a fix of Japanese food over anywhere else in Doha? Morimoto has always been about three things - taste, presentation and quality. Morimoto at Mondrian Doha is no different. I believe this is what all discerning palates look for. After so many years in the industry, what keeps you excited about cooking? Whenever I go on a trip or open a new restaurant, I always find and learn something new. Local history, palate, and ingredients… they are all a source of my inspiration. As a renowned chef, what matters more – taste or presentation? It is about finding the right balance between the two. One cannot exist without the other. Looking at Morimoto in Doha, we have ensured the design of the restaurant is beautiful, transporting our customer to Japan but we have ensured the standard of our food is high quality. We eat with our eyes and mouths after all. You’re a busy man – TV shows, restaurant openings, cookbooks, knives… do you still enjoy the grind? What keeps you motivated? Morimoto Philadelphia remains as my original Morimoto where my culinary journey started. Whenever I go back there, I am motivated again remembering my first days building the Morimoto brand. Hi Chef! Describe for us the Morimoto Doha venue – what can guests expect to experience? Expect to be transported to my home town of Hiroshima where you can enjoy the most authentic Japanese food in a truly beautiful setting. Food will include sushi, seafood, steaks and Sake, of course! Design is a huge element of Morimoto at Mondrian Doha as we worked with Tokyo based company Glamourous and our murals are by artist Hiroshi Senju. We’d like to take it back to the beginning – what prompted you to get into the culinary world? I had two dreams growing up, one was becoming a baseball player and the other was to become a sushi chef. After a shoulder injury, I dedicated my life to sushi and since then, I’ve applied myself to the art and practice of sushi every day. I started working at a local restaurant in Japan at 18 learning all about sushi and the art of Kaiseki, or Japanese fine- dining. Your style of cuisine merges traditional Japanese ingredients with Western flavours – tell us about the signature items on the menu and what makes them appealing? At Morimoto we have a wide variety of menu items inspired by my time in Japan as well as from all over the world. Braised Syrian farms lamb shank resting over saffron risotto, with dried cherry tomatoes, apricot and macadamia nuts. We have a fantastic selection of meats, seafood and vegetables from our traditional, charcoal, open fire Robata Grill. Also, there’s Whole Fish which could be replaced with the Seafood Toban Yaki with lobster, king crab, mussel, king trumpet mushroom, scallop and clam, served in a spicy red miso broth. 64

Aside from Japanese cuisine, what do you like to cook at home – do you have a favourite dish? I don’t cook at home at all. I enjoy eating whatever dish my wife makes for me. Do you ever get star-struck – can you tell us who’s the most prolific person you’ve ever cooked for and what was that like? I have had chance to cook for a number of celebrities and VIPs in the past. They’re all very special and memorable experiences. Do you still feel the pressure when you’re in the kitchen – how do you keep your cool? I laugh a lot and I try not to get angry! I have high-blood pressure, so I always remain calm. Share with us your advice for young, budding chefs… Don’t chase trends, rather learn them slowly and digest them. You should never copy them completely. Over the next year, what are your goals with Morimoto Doha? To keep our customers happy and satisfied. I want Morimoto in Doha to become the choice of restaurant not just for Japanese cuisine but for dinning in general. I want to set the standard in Qatar and in the Middle East for Asian-inspired cuisine. ✤

nce upon a time, brunch was this thing that happened on a Friday. It was a clear-cut ritual routinely followed but things are now evolving. Saturday is the new Friday and I’m increasingly coming across great weekend brunches, more recently the exotic Saturday Brunch at The Westin Doha’s popular and highlyacclaimed Thai restaurant, Sabai Thai. I’d been to it before but only for an evening meal - in the daytime, the vibe is very different. Situated at the far-end of the hotels grounds by the pool area, there are large floor-to-ceiling windows all-around, letting light float in which gives a warm energy to the place. I find that on a weekend, I don’t want to be stuck in a windowless environment when I’ve been cooped up indoors at work all week so although this was an indoor brunch, the natural light was a definite plus factor for me. Another thing that immediately hit me were the diners in attendance. Families were there and made to feel very welcome but also there were Thai diners and other South East Asian clientele, which always strikes a good impression in any restaurant trying to offer authentic cuisine. Service was strong and staff were in high supply that plates were quickly cleared and we didn’t have long waits to have drinks refilled. We were given a wonderfully refreshing lemongrass drink on arrival and their array of mocktails complimented most of the dishes I tasted. The tangy virgin mojito was the perfect antidote to the spicy dishes that were on offer. Having visited the restaurant before, I felt overwhelmed but very much excited

by the large menu. Such is the beauty of a brunch that I didn’t have to choose because I could wander around the room having a little bit of lots of different dishes from the buffet. While I sometimes get a bit snobby about buffets, there was not the usual fight for food. That was in part a credit to The Westin Doha and the way they designed the room, and perhaps because the restaurant does not feel over-crowded. I was also struck by the freshness of the produce and the food on offer. The salads were SO fresh; Try the Pomelo and the Papaya Salad for a refreshing kick and healthy, light choices. The Shrimp Rolls and the Prawn Toast make for good, filling appetisers too. There were lots of classic Thai curries to try. The Thai Beef Curry is something of a signature for Sabai Thai. The beef is braised and served in a thick red curry;

you’ll want to take your time eating this dish with your choice of rice because every spoonful is an explosion of aromas and flavours. Brimming with tender meat and crunchy veggies, you’ll be going for seconds in no time! The Massaman Lamb is a true winter warmer dish. It’s indulgent and hearty, packed with nutrients and rich ingredients like ginger, turmeric, cumin, lemongrass, garlic and, of course, chilli. Simply delicious! I greatly enjoyed the Tiger King Prawns for its lingering spiciness – with a side of of steamed rice, could you ask for anything more yummy? There are other authentic Thai touches too like the gong that sits by the door and looks as if it weights a tonne! There was also a Thai Ranad Xylophone being played during the course of the afternoon which provided a mesmerising and calming ambience to the whole event. A lot of brunches feel exorbitantly pricey for what they are but this is very reasonably priced and you definitely get your money’s worth at Sabai Thai with packages starting from QR175. Will we return? That’s a huge YES! ✤

LET’S GO GREEK! A small slice of the Aegean island of Santorini has found a home on the shores of West Bay. For lovers of Greek cooking, seafood and Mediterranean-style dining, the aptly named Santorini at Shangri-La Hotel Doha is quite the revelation. FACT’s Craig Ferriman went to get his Greek food fix… fact magazine

new chef has just taken on the reins at Santorini, where a kitchen that is installed from the same Greek island as the restaurant gets its name. And judging by the food we tried, this man seems to know what he’s doing. Located on level one of the Shangri-La Hotel Doha, this is not an overtly stuffy or over-the-top kind of place just because it’s in a five-star hotel. It is informal, relaxed and a great place to have a business lunch or mid-week dinner. The business lunch menu is perfectly designed for tasty treats on a short time frame. I went there for dinner and tried a selection of ome dishes wondering if it would transport me back to my last summer holiday in Greece. The restaurant seems not to struggle in getting its hands on good seafood as displayed by the grilled octopus, pan fried prawns with tomato sauce and feta or excellent deep-fried calamarakia. The tiganiti feta which is basically fried feta with honey, sesame and a balsamic glaze is one of many excellent cold mezze appetisers that I tried. You’ll find Greek classics done well here too like the traditional moussaka or my personal favourite which is the souvlaki. This will either be grilled chicken or beef cooked on skewers and served with great tzatziki and pitta – hello, food! There are signs all around of Santorini’s dedication and appreciation of seafood. We sat on the table next to an aquarium and the main bar area in the restaurant was filled with giant ice buckets which I assume on special occasions can be home to clams, oysters, mussels, prawns; you name it. Look at the menu for more than two seconds and you’ll see evidence of their love of seafood here. The options from their grill

are Boston lobster and prawns. Believe you me - those prawns are not small and if you like your seafood, they should be at the top of your order list. Desserts are not an afterthought here but an opportunity to share a Greek tradition once more. If it’s your first time going then you have to have the Opa! It’s ice cream pistachio and sour cherry with either lavender and honey or yoghurt and lemon, with a smashing plate placed on top. Should you wish to be delicate you can tap it with your spoon or you can just grab the plate and drop it from a height and as you smash it, you must cry ‘Opa.’ When in Rome… or in this case, Greece. ☺ The restaurant is still new and finding its feet. The bread served to the table was quite tough to break into and the service was slightly slow at times, though always very friendly. There is real potential for this outlet and I can see it working very well as a place to eat flavourful and tasty Greek food in an accessible location, and well-priced too. The staff were very knowledgeable about the dishes so if you’re not sure what to choose, advice is very much on hand. Authentic Greek food far away from the Aegean islands? It’s time to go and get your fill! ✤

FACT’s Craig Ferriman went to see if this classic restaurant still has what it takes to compete with foodie newbies… fact magazine

T

here is something rather refreshing about a visit to The Cellar at the Oryx Rotana. Sometimes it’s good to go to a place that goes back to basics and gets the important things right. It’s also good to have a little of what you like when you want a treat and this place has a lot of little things you’re sure to love. You’re immediately greeted with a warm and approachable welcome as you enter the dimly lit and cavernous looking venue. I thought the menu was well designed as it allows you to have a few small items or really go all out. You can have as much or as little as you please. A straw poll of my own social circle said who had been to The Cellar said that they went on a date and indeed I could see rather a few “table for 2’s” when I walked to my own table but I did also see a few expats gathering for after work drinks and light bites as well as a larger party too. It so happens that I was super hungry on my visit. My dining companion and I filled the table with their ‘plates to share’ which boasts the famous tapas-style dining that the venue is recognised for. I tried the refreshing signature baby spinach and chopped kale salad – it was healthy and tasty in one. The grilled octopus is very good and their calamari with lemon and aioli hit the spot. Lamb Meat Balls were divine; simple and succulent cooked in tomato sauce and feta. It’s hard to have tapas without prawns right? The Prawns Malaga will tick that box perfectly; cooked in lush garlic butter, spiced paprika and cherry tomatoes. The beef cheeks and chicken skewers are every meat lovers dream come true, whilst the beef bresaola keeps our appetites whet for more. Hunting down paella may not be the easiest thing in this part of the world but you’ll be pretty pleased in The Cellar with what they serve up. Rather than a long list of mediocre options, the restaurant specialises in three signature paellas. I tried to have them all. The Paella Marisco is their seafood version containing mussels, prawns, squid, smoked olive oil

and peppers served on saffron rice. The Paella Pollo is the chicken version served with peas, paprika and roasted peppers on rice. The first was an amalgamation of all the things we love; fresh seafood, lovely flavours and nicely-cooked rice, whilst the second gave a completely different taste that all poultry eaters will enjoy – both are the ideal winter warmer dishes! Deliciously mouthwatering and dangerously addictive, the sides are worth a try if your stomach has the room, especially the potatoes bravas with sour creme and tomato. I ordered seconds of that because it was just TOO good! As new eye-waterinngly expensive and grandiosely decadent venues pop up around the city, I did find myself thinking that The Cellar is reasonably priced and good value for money. It tries not to be too stuffy and one modern touch that is starting to catch on in contemporary dining is the use of menus on ipads. As the antediluvian type that I am, I couldn’t work out what I was doing but I know that I’m in a minority. I do think that could be one reason why I ordered so much and ate a lot – after all, you eat with your eyes! On that note, I’ll mention that presentation of the dishes was more than insta-worthy, but it was the taste test that every food item passed with flying colours. All hail The Cellar, the place that seems to keep getting better and better over time. ✤

After a quick yet comprehensive consultation, my masseuse advised me to opt for the Anantara Signature Massage. This 96

SPA & WELLNESS • treatment is particularly popular, using reflexology to clear energy blockages and promote general wellbeing, exactly what I was after. I was shown to the male changing rooms and assigned a locker to store my valuables. My masseuse advised me to experience the traditional Turkish Hammam as this would help to relax me before my treatment. Not one to ignore such a proposal, I jumped at the chance and spent 20 minutes lazing in the heated water baths. This was the perfect recipe to help me chill out before the 90-minute massage that awaited me. My masseuse collected me from the baths and I was escorted to the serene treatment room via the tranquil gardens of the spa. I was asked if I wanted to have music playing in the room or silence, a lovely touch to help tailor to the client’s needs. With gentle melodies in the air, she proceeded to bathe my feet and explain the procedure whilst enquiring about my comfort level in the room. I was so relaxed at this point that I was nervous about falling asleep as she conducted the treatment. Thankfully I was in a state of complete bliss and was able to experience every part of the amazing treatment. The massage itself combined Eastern and Western techniques to stimulate circulation and deeply relax muscles. The perfectly-designed movements aided for a luxurious treatment. From start to finish, the senses were uplifted in such a way that it was hard to leave the room upon completion. Time stood still as every inch of my body was treated to the focus that it so desperately deserved – and every knot was carefully loosened up to soothe stressed muscles. It’s always hard to go back to the real world after a total de-stress. After the lovely treatment at Anantara Spa, I really didn’t want to go back to the mainland so lingering in the relaxation lounge was key to this plan! Can I just stay here forever please? ✤
