o, I have to admit something. I’m in love with puns. Travel, politics, films, life - everything - give me a good pun and we can be best friends. When February rolls around, I’m reminded of my love of food puns, especially because Valentine’s month is jam-packed with nothing but lavish dinner dates and leisurely afternoon teas with a few spa deals thrown in the mix. Don’t get me wrong, I’m into love just as much as the next person, but there’s one thing I’m into more - food. So, V-Day is a time for the best feasts with family, friends and anyone who wants to go out and grab some good food. On that note, you’ll find everything from private beachfront dining to special-crafted menus in our pick of the best Valentine’s Deals from Doha’s top hotels (starting p12). And if the choices are too overwhelming, fear not, we caught up with some of the city’s top chefs to bring you yummy lovefilled Recipes (p25) for those of you deciding to have a quite evening in - it’s time to put your skills to the test and impress your other half! Chinese New Year: Hakkasan Doha HAKKASAN, THE BRAND KNOWN FOR ITS MODERN INTERPRETATION OF AUTHENTIC CANTONESE CUISINE, WILL USHER IN THE CHINESE NEW YEAR WITH DELICIOUS FESTIVE CELEBRATIONS COMMEMORATING 2018 AS THE YEAR OF THE DOG.

UPHOLDING THE BRAND’S PROUD Chinese heritage, Hakkasan will welcome the new lunar year with a limited edition signature menu created by Hakkasan chefs from London, USA, the Middle East and Asia. Until March 4, diners can indulge in the exclusive menu which uses ingredients that are thought to bestow happiness, longevity, luck and prosperity. Starting with Szechuan wind dried oyster with lotus root with crispy rice in man tou, the oyster traditionally symbolising fortune and good luck. Other small eat dishes include braised beef and caramelized walnut with asparagus and mint. Main dishes include Grilled Chilean Sea Bass with kumquat glaze, as eating fish at Chinese New Year is said to bring increased prosperity, and Wok-fry Native Lobster with edamame and caviar, lamb in seaweed soy with celery and enoki mushroom. To complete the main course dishes, Abalone fried rice in bean curd wrap with mushroom which contains fai cai (fat choy), an ingredient which in Chinese means to ‘get rich and grow wealth’. To finish, guests will fall in love with the Golden Fortune dessert with ginger caramel, roasted macadamia nuts and lemongrass. A special cocktail has been created to mark the festival: the 10

Happy Daisy comprises Tanqueray No.10 gin, Chartreuse Yellow, lemon, spiced mandarin jam, egg white and soda water. For those wishing to indulge in a mocktail, Hakkasan offers a series of fruit blends such as Xingyun, a mix of mandarin and lemon juice, spice mandarin jam, passion fruit and soda water. As part of the festivities, Hakkasan will continue their annual Chinese New Year wishing tradition by inviting guests to write their wishes on red ribbons that will be hung around the dining areas. This custom is said to have begun hundreds of years ago in Lam Tsuen, Hong Kong. During Chinese New Year, villagers would travel for miles to visit the sacred Lam Tsuen Wishing Trees (two ancient banyan trees) and hang notes on the branches using red ribbon. These notes contained wishes for the year ahead and it was believed that the wishes that were successfully hung on the trees would come true. ✤

WHITE CHOCOLATE COCONUT MOUSSE, FRESH BERRIES, PISTACHIO CRUMBLE, WITH RHUBARB SORBET EXECUTIVE PASTRY CHEF SALEEM GAFOOR, FOUR SEASONS HOTEL DOHA INGREDIENTS Coconut dacquoise • 260g Egg White • 93g Caster Sugar • 150g Desiccated Coconut Powder • 45g Flour t45 • 95 Icing Sugar METHOD • Mix flour icing, sugar and desiccated coconut powder together. • Whisk egg white and caster sugar to a white stiff meringue. • Fold in dry ingredients. • Spread or pipe over a silicon mat. • Bake at 190◦c for 10 to 12 minutes.

White chocolate coconut mousse • 100g Egg White • 80g Caster Sugar • 40g Water • 150g White Chocolate Ivory • 560g Coconut Puree • 6g Gelatine • 440g Whipped Cream METHOD • Whisk egg white in medium speed. • Cook the sugar and water at 121◦c. • Pour the whipping egg white in and keep whipping to cool down. • Soak the gelatine in cold water and drain. • Warm up the coconut puree; add into melted white chocolate mix well. 26

• Add gelatine. • Fold into Italian meringue, and then fold into whipping cream. • Arrange coconut dacquoise in slender mould, fill with mousse. Freeze it. • Glaze white coconut ganache and freeze it. Spray with red colour.

White chocolate coconut ganache • 350g Coconut Puree • 60g Glucose Syrup • 60g Invert Sugar • 580g Ivory Chocolate 35% • 1000ltr Cream • 350g Coconut Puree METHOD • Weigh all the ingredients separately. • Heat the 350g coconut puree, glucose, invert sugar to 60◦c. • Melt the chocolate at 45◦c. • Pour small amount of the liquid over chocolate and beat briskly. • Repeat until smooth and glossy. • A sign it has emulsified. Add the cream and remaining coconut puree and blend it. • Keep 24 hour in refrigerator.

Pistachio crumbles • 12g Flour t45 • 100g Caster Sugar • 250g Soft Butter • 100g Pistachio Ground • 1 pinch salt METHOD • Mix all together with paddle in slow speed.

• Bake at 160◦c for 10 to 12 minute.

• 70g Atomised Glucose • 5g Stabiliser Sorbet

Meringue

METHOD • Boil water, sugar, glucose. Add stabiliser. • Blend and pour in puree. • Temper white chocolate and make heart shape chocolate.

• 100g Egg White • 100g Caster Sugar • 50g Icing Sugar METHOD • Whisk meringue for two minutes in high speed then reduce speed to medium. • Add caster sugar slowly. • When meringue reaches a stiff consistency stop machine and fold icing sugar with spatula. - Add colouring. Pipe with tube tips and dry at 80◦ c for one hour.

Chocolate spray • 200g Cocoa Powder • 200g Ivory Chocolate 35% Red chocolate colour METHOD • Melt cocoa butter and white chocolate add red chocolate colour.

Rhubarb sorbet • 1000 Rhubarb Puree • 200g Caster Sugar • 400g Water

HUNTERS HONEY CREPE WITH BLACKBERRIES AND ROSE PETALS EXECUTIVE SOUS CHEF T YSON PODOLSKI, THE WESTIN DOHA HOTEL & SPA

INGREDIENTS • 1/4 cup Pistachios, chopped finely • 1 cup All-purpose flour, sifted • 1/4tspn Salt • 2/3 cup Whole milk • 6tbsp of Water • 3 Large eggs • 1 cup plus 2tbsp Mascarpone cheese • 1 cup plus 2tbsp Ricotta cheese • 2tspn Finely grated lemon zest • 1/4tspn Ground cinnamon • 1/4tspn Ground allspice • 1/4 cup Confectioners’ sugar, plus more for dusting • 2 1/4tspn Rosewater 28

• 6tbspn Unsalted butter • 2tbspn Extra-virgin olive oil • 3 tbspn Honey • 1tspn Fresh lemon juice • 2tspn Edible dried rose petals • 1 packet Blackberries • 1 Vanilla bean • ¼ ounce Simple syrup METHOD • Preheat the oven to 175°. Spread the chopped walnuts on a baking sheet and toast in the oven for 7 to 8 minutes, until the scent is fragrant. Transfer to a plate to cool. • In a medium bowl, whisk together the flour and salt. Whisk in the milk, water and 2 eggs until a smooth batter

forms. Set aside while you make the filling. • In a medium bowl, combine the mascarpone, ricotta cheese, toasted pistachios, lemon zest, cinnamon and allspice. Stir in the 1/4 cup of confectioners’ sugar, 2 teaspoons of rosewater and the remaining egg until smooth. Refrigerate the filling while you make the crêpes. • In a nonstick 6-inch skillet, melt 1/2 tablespoon of the butter over moderately high heat. Pour 2 tablespoons of the batter into the skillet, immediately swirling the pan to evenly cover the bottom. Cook until set, about 45 seconds. Flip the crêpe and

cook until lightly browned on the bottom, about 45 seconds more. Transfer the cooked crêpe to a work surface and repeat with the remaining butter and batter to make 11 more crêpes. • Brush a 12-by-8-inch baking dish with 1 tablespoon of the olive oil. Spoon 3 tablespoons of the filling into the center of a crêpe, fold in the sides and roll up into a tight tube. Transfer to the baking dish, seam side down. Repeat with the remaining crêpes and filling, fitting the crêpes in the baking dish snugly in a single layer. Brush with the remaining 1 tablespoon of olive oil and bake for 25 minutes, until the crêpes are light golden brown and the filling is warmed through. • Mix the simple syrup with vanilla bean, let steep for 1 hour. Mix with Blackberries and allow to marinate for 15 minutes. • Meanwhile, in a small saucepan, combine the honey and lemon juice with the remaining 1/4 teaspoon of rosewater and warm over moderate heat. Drizzle the honey mixture evenly over the crêpes, then lightly dust with confectioners’ sugar and sprinkle with the rose petals. Serve the crêpes warm or at room temperature.

STRAWBERRY TIRAMISU CHEF DE CUISINE MARCO CHERUBINI, GRAND HYAT T DOHA HOTEL & VILL AS INGREDIENTS For mascarpone cream (with pate à bombe) • 400g Mascarpone • 3 Egg yolks • 175g Sugar • 50cl Water

For strawberry dressing and for decoration • 400g Strawberries • 70g Savoiardi Ladyfingers • 1tbsp Grand Marnier • 2.5cl Water • 50g Sugar • 6 Mint leaves METHOD • Start with the syrup, in a saucepan and pour half a litre of water and add 125g of sugar. Measure with a kitchen thermometer that the temperature reaches exactly 121°. if you do not have a thermometer, you can check when the syrup is ready if you see white bubbles on the surface. • When the thermometer is at about 115 ° C, start to whip the egg yolks with 5 g of sugar in a bowl with an electric mixer, when they will be clear and foamy pour the syrup arrived at 121 °C, continuing to whip, until obtaining a light and fluffy mixture. • Pour your mascarpone into a separate bowl and add a little of egg mixture at first, stirring vigorously with a spatula, 30

then pour the rest and stir making delicate movements from top to bottom to mix the two compounds until you get a creamy mascarpone mix. Place the cream in a piping bag and leave it to harden in the refrigerator for 30 minutes. • Prepare your strawberries, then cut them into wedges lengthwise, keeping aside some slices for the final decoration. Pour the rest into a large pan where 2.5cl of water and 50g of sugar must be added. Sauté over medium heat for a few moments, add the Grand Marnier and

let it evaporate completely. Remove some of the cooked strawberry that you will insert later between each layer of the tiramisu; the rest, together with the cooking liquid, can be blended together until smooth. • To compose your tiramisu, dip your ladyfingers into the strawberry sauce and begin layering with cooked strawberries and mascarpone cream. Create a layer of mascarpone cream again and decorate with some fresh strawberry into small pieces kept aside completed with a mint leaf.

Sauce • 40ml Kikoman Soya Sauce • 40ml Mirin • 40ml Sake • 200ml Water • 30gm Cornstarch METHOD • Wash and clean the salmon, look out for the bone. • Wash and trim the mangold leaves. • Roast the white sesame seeds to golden brown. • Mix the white and black sesame. • Use a brush to pour strips

of honey on the plate vertical and sprinkle the mixed sesame seeds on the plate. • Julienne the Spring onion and soak in ice water for 20 minutes. • Heat up mirin and sake before adding soya sauce and water. • Boil the mixture. • Add some water to the cornstarch before thickening the mixture. • Brush the Salmon with the shoyu sauce. • Bake in oven at 160 Degree Celsius for six minutes. • Blanch and sauté the Mangold leaves, season with salt and pepper. • Lastly assemble the component on the plate.

INGREDIENTS Chocolate Extra Noire 53% Sponge Cake • 170g Whole eggs • 50g Inverted sugar • 85g Caster sugar • 50g Almond meal • 90g Cake flour • 18g COCOA POWDER • 3g Baking powder • 90g Whipping cream 35% • 60g Butter 84% • 30g Extra Noire 53% Couverture METHOD • Combine the whole eggs with the inverted sugar and caster sugar. • Stir the almond meal with the flour sieved with the baking powder and cocoa powder together. • Pour the cream and melted butter over followed by the melted chocolate. • Set aside to rest a couple of hours before baking. Pour into a frame sat on silicon mat and bake in convection oven at 180°C for about 13 to 15 minutes.

Basic custard • 150 g whipping cream 35% • 150 g Whole milk • 60 g Egg yolks • 30 g Caster sugar

Hazelnut / Almond mousse • 340 g Basic custard • 225 g whipping cream 35% 34

• 7. 5 g Gelatin • 175 g Hazelnut-Almond 66% Praline METHOD • Take the cream and milk to the boil. Mix the egg yolks with the caster sugar without whitening. Combine the two and cook the lot 82/84°C until it thickens the back of a spoon. • Strain through and use straight away or chill down quickly. • Soak the gelatin in a large volume of cold water, drain out and stir in the hot custard to dissolve. Gradually pour the hot custard over the praline and start an emulsion Process the mixture with a hand blender. • Fold about a quarter of the foamy whipped cream to stabilize the emulsion followed by the remaining three quarters stirring delicately with a rubber spatula.

Raspberry Sauce • 355g Raspberry pulp • 10g Fresh lemon juice • 100g Absolu Cristal Neutral Glaze METHOD Process the pulp and lemon juice together with a hand blender, followed by the non-melted Absolu Cristal neutral glaze. Set aside in the refrigerator. ASSEMBLY AND FINISHING • Cut the chocolate sponge cake into 3 cm in diameter discs with a pastry cutter. • In 4.5 cm in diameter cake rings, lay the chocolate sponge Cake discs in, pour 10g of praline mousse over. • Sprinkle 2 to 3 g of crunchy pearls and pour another 8 g of praline mousse on top. Blastfreeze the lot and remove from the dome mold. • Cover with red glaze. Dress up as per pictures..

SIGNATURE NEW YORK CHEESECAKE CHEF GUN NEPALI, DOHA MARRIOT T HOTEL INGREDIENTS • 70g Cream Cheese • 5g Lemon Zest • 30g Sour Cream • 50g Oatmeal Biscuits • 20g Butter • 10g Whipping Cream • 1 Piece Egg • 30g Sugar METHOD • In a large bowl, mix the biscuits together with butter for about five minutes. • Cover the base of a circle ring mold with the dough and cool for 20 minutes. • In the blender, mix the egg with sugar and whisk. • Add cream cheese and sour cream to the egg preparation and whisk until fluffy. • Pour the whole mix on the chilled dough. • Set in an oven at 160 degrees for 35 minutes. • If desired, garnish with fresh strawberries.

CHEF GUN’S VALENTINE’S TRICK: - Replace the raspberries with heart-shaped strawberries and have the most memorable decoration. - Hull the strawberries with a sharp knife to create a V-shaped hole in the top part and remove the whitest part of the fruits. - Slice them vertically from top to bottom and keep only the two center pieces. PLATEAU DE FRUITS DE MER (SEAFOOD PLATTER) SOUS CHEF, MOHAMED GOMAA ALI, MOVENPICK HOTEL DOHA INGREDIENTS Serves four • 200g sushi-grade salmon loin, finely diced • 20g shallot, finely chopped • 8g fresh chives, finely chopped • 160g Greenland shrimps in brine, washed and drained • 8tbsp homemade or store-bought cocktail sauce, divided • 200g sashimi-grade tuna lion • 320g fresh black mussels • 25g onion, chopped • 1 sprig thyme • 8 fine de claire oysters, washed and opened • 4tbsp homemade garlic mayonnaise or store-bought aioli sauce • 400g baguette or flute bread Sea salt, freshly ground black pepper, sugar METHOD • In an ice-cooled bowl, mix the salmon, shallot and chives using a fork; season with salt, pepper and sugar, and place in the refrigerator. Coat the shrimps with half of the cocktail sauce and place in the refrigerator. • Season the sashimi-grade tuna lion with salt, pepper, cayenne pepper, paprika and thyme, and quickly sear in very hot pan with no fat. Clean the mussels thoroughly under running water and discard any open mussels. Steam mussels 38

STANDING TALL AND PROUD WHILST OVERLOOKING THE CAPITAL CITY, THE TORCH DOHA, IS A TRUE BEACON OF ARCHITECTURAL GENIUS AND QATARI HOSPITALITY, AS FACT’S JAYNE GREEN DISCOVERS...

N

ever have I been so awestruck upon the journey to a hotel as I was with The Torch. It can be seen for miles and miles due to its majestic height of 300m. So much so that I could even pick it out as I was coming in to land at Hamad International Airport. There it was, dominating the skyline, lit up in pink to promote Breast Cancer Awareness. It was obvious that this was going to be an incredible stay at a truly iconic hotel. Travelling with my partner generally involves spotting sporting stadia, much to my general bewilderment. Fortunately for me, The Khalifa International Stadium, is right next door so this saved a huge amount of my precious time as he could just gape at it from the hotel. The Torch was built to celebrate the 2006 Asian Games in which the hotel was quite literally an Olympic torch, of colossal proportions. It is situated in the Aspire Zone, a vibrant Sports City, which aims to promote health and wellbeing as well as nurture the next generation of Qatari sports men and women. As a member of the ‘leading hotels of the world’, it was no surprise to be gobsmacked as we walked into the hotel reception. The foyer was majestic and the kind welcome from the staff was perfect after a tiresome flight. The check in process was swift and we were shown to our room on the 11th floor with the help of one of the splendid glass elevators. As we passed each floor on our ascent, my partner noticed that there was a different sporting statue on each floor, a sight which thrilled him to bits. 46

The room gently rotates to give a full 360° panoramic view across the whole city and surrounding areas, a must, especially on an evening when the skyline is illuminated.

Walking to our room around the curved corridor which circles the central column of the structure, we were impressed by the lighting of the hallways. This feeling was further enhanced as we stepped inside our room. The carpet cushioned every single step as we checked out our abode for the next three days. It was incredibly modern, spacious and comfortable from the amazing bed to the beautiful en suite bathroom. But, the game changer, the piece de resistance, was the iPad that controlled the functionality of the room. From changing the lighting (every colour imaginable) to opening the curtains to changing channels on the TV to setting the air-conditioning amongst many other wonderful applications, this iPad proved how unbelievably innovative this hotel is. The bed can make or break one’s hotel experience. If you don’t sleep well or are uncomfortable then your opinion on the place dampens, fortunately there wasn’t a chance of these feelings at The Torch. Oh my! What an incredibly delightful night’s sleep. Possibly the most comfortable hotel bed I have ever stayed in, and that is high praise indeed. This coupled with a wonderfully refreshing morning soak using the amazing rainfall shower, set me up perfectly for breakfast. Breakfast is served in the Flying Carpet restaurant, one of The Torch’s many award winning restaurants. The buffet breakfast, with live cooking stations, was exceptional. The range was phenomenal and included cuisine from all over the world. No matter where you are from, you’ll find something that makes you feel right at home. The bread was a personal highlight as it had been baked fresh and quite literally had me salivating after every bite. I often find a hearty breakfast really sets me up for the day and this was no exception. We decided that we should check out Villaggio Mall for a spot of retail therapy. This was made even easier by the walkway which connects the hotel to the shopping mall, accessible only to hotel guests. A nice touch which makes the journey all the more tolerable, especially in the baking sun. After a few buys, it was time to chill out and relax in the state of the art facilities that The Torch has to offer. The cantilevered

swimming pool is situated on the 19th floor and overlooks the national stadium as well as Doha city centre in the distance. What a view it is and the perfect spot for catching some rays and swimming a few lengths. This is exactly what we did and we loved it! We felt like royalty laying on this majestic deck as the hotels structure continued to curve above us. An amazing sight. We checked out the gym on the opposite side of the floor but decided that this break was for relaxing, not working out, so opted against a few km on the treadmill. But we did notice the state of the art TechnoGym equipment, a sign of the hotel’s standard of excellence. There was also a jet shower and foot massage walkway which was a fascinating experience. Walking through different forms of water fall at different temperatures whilst getting a foot massage on the stones underfoot. A winning feature in my eyes. We ate in the hotel each evening and why not, there really isn’t any need to leave. The experience of Three Sixty, the only revolving restaurant in Doha was breathtaking. The Torch Tea Garden is a fantastic spot for afternoon tea. On the 21st floor, overlooking Aspire Park, the room is decked out with an extensive collection of furniture, all from Thailand. Along with the healthy green foliage that lines the walls, this is the perfect spot for refreshment whilst watching the sun go down. As our stay came to an end we reflected on the hotel being of an Olympic standard. It will be the focus of the world’s gaze in 5 years as Qatar welcomes the FIFA World Cup but until then it will be a shining light for the city of Doha. An iconic hotel leading the way in innovation and inspiration. ✤

They also had access to fashion and beauty styling sessions at the ‘Color Closet’ and ‘Beauty Box’.

f you told me that I’d be waking up at 7am for morning yoga overlooking breathtaking canyon views, eating some of the freshest Italian food, and zip lining after climbing 200 metres across the cliff’s edge, I would never have believed that all of this would be possible right here in the Gulf, let alone 2000 metres above sea level. Enter Anantara Al Jabal Al Akhdar, a tranquil, elegant resort where lush local surroundings blend seamlessly with elegant accommodation and world-class facilities. You can literally coup up in your own private villa with a temperaturecontrolled pool or wake up to the most magnificent views in one of the resort’s huge cliffside rooms – the choice is yours. After a comfortable two-hour transfer from the airport in one of Anantara’s very own 4x4 drives (only 4x4 vehicles are allowed up the mountain) which was decked out with soft drinks, snacks, cushions and even WiFi – handy for posting the mesmerising window views on social media, right in the moment – we arrive at the resort to a warm welcome, literally, as a hot towel and tea are presented to us at check-in. Staff are efficient and friendly and we’re whisked off by buggy to our home for the next few days – an out-of-this-world One Bedroom Garden Pool Villa.

VILLA LIFE Now, this is no ordinary villa. Anantara has gone above and beyond with the 178-square meter space. You’ll get a stunning private garden that offers a natural sanctuary for romance, a great-sized heated plunge pool with sun loungers to top up the tan and a lavish outdoor dining area where an afternoon cuppa will be just the fix you need to relax. Inside, you’ll get nothing short of pure indulgence; a majlis-style living room with an oversized cushy couch and chairs facing a large interactive LED TV, media hub and Bluetooth sound system – this is where you can perch with a good book or board games which are provided in the room. The mini-bar is another standout of this sprawling villa – it’s one of the biggest and most variety-filled that we’ve ever seen. Aside from the usual Nespresso coffee machine and tea-making facilities, we’re talking full glassware selection, some of the yummiest snacks including oreo cookies, and even a good choice of soft beverages plus alcoholic options too – I mean, do you even need to leave your room? We’re not done yet though as more pleasant surprises await. The bedroom is decked out with a MASSIVE king size bed – yes, it’s possible to roll over many times (we tried!) – another TV on top of an ornate wooden cabinet (which we would love to have in our own home) – and lots of space to walk around without feeling like you’re in anyone else’s way. 52

One of our absolute favourite parts of this villa has to be the walk-in dressing room which has ample storage to easily fit four large suitcases and many bags – your only worry has to be about getting it through the airport! The luxury bathroom with rain shower and separate bathtub is as impressive as the outdoors. Bringing in elements of its natural surroundings, the tub is one of the largest we’ve ever bathed in and the lovely Elemis amenities made taking a hot shower or soak after a day of activities and exploring, something we totally cherished! Most of all, it seems that Anantara has thought of your every need because you also get your very own Villa Host to help organise special dinners, intimate evenings and more – staying in this accommodation was effortless and the attention to detail in interiors and services is what makes this villa the ideal sanctuary for couples, friends and families alike.

THE HEIGHT OF DINING You wouldn’t be incorrect to think that being so high up and away from constant suppliers means that the food could be limited here – in fact, we were expecting food to take a back seat to the location. We were SO wrong. Some of the best cuisines we’ve tasted outside of other Gulf countries was at Anantara Al Jabal Al Akhdar. In the allday-dining restaurant, Al Maisan, breakfast is a feast of fresh fruits, fluffy pastries, winter warmers like porridge, pancakes and other hot options, plus local Arabic fare and even made-to-order eggs and super healthy juices. We would highly recommend the energising ABC juice or a creamy soy latte for a morning boost. The croissants and pain au chocolat were like biting into a cloud, whilst the fresh coconuts and full fry up were true treats to start the day fuelled up. For lunch, head to Bella Vista where you can tuck into the tastiest gnocchi, home-style pizza, seafood mixed grill and lip-licking risotto. With so much natural light flooding the venue which is located at the resort’s famous Diana’s Point, don’t forget to have a fully-charged phone or camera to capture all those drool-worthy shots for instagram. Al Maisan also serves up excellent buffet-style dinners with everything from Continental, South-East Asian, Indian and Arabic specialties. We enjoyed the paneer curry, the super crisp salads, made-to-order pastas and the incredible sticky toffee pudding dessert to name but a few of the taste-bud-satisfying dishes. If you prefer to snack, Al Baha, translating as ‘Crossroads’ in Arabic, is an amazing spot to unwind and appreciate resort life. The eatery does an impressive duck hoisin wrap and flourless chocolate cake with a range of hot and cold beverages (make sure you try the famed rose tea) – and in the evenings you can gather around the picture-perfect open fireplace in the courtyard for stargazing with your choice of liquid concoction in hand.

ADVENTURE HEAVEN If there’s one reason why you should make Anantara Al Jabal Al Akhdar your next weekend escape, it’s not just the mind-blowing scenery or even the serenity of peace and quiet (though you’ll have plenty of time for that too), it’s the unimaginably, adrenalin-fuelled resort activities. Now, you don’t need to be a fitness fiend to get involved – all you need is appropriate clothes, a will to explore and, of course, a good guide. To start off lightly, we would highly recommend the Three Village Walk after breakfast where you’ll pass the rich foliage of Jabal Al Akhdar whilst weaving in and out of charming streets, past

the historical irrigation system and traditional houses of the most friendly and welcoming Omani people. Our Mountain Guru guide was Thilina who brought the treasured local stories of days gone by to life. From March end to mid-May, the cliffs around Ash Sharayjah village are adorned in Damask roses in full bloom, used to produce Omani rose water. As you traipse past abandoned houses and come across the most quaint, character-filled doors, fronting the few homes that are still occupied, the contrast between old rural lifestyle and the new world will leave you yearning for a more simple way of living (sans smartphone and social media – but, alas, if you don’t put it on Snapchat, did it even happen?). The areas mild climate is ideal for explorers, whilst the mountainous terrain provides diverse climbing, hiking and biking journeys. Probably the most thrilling of them all is the Ultimate Jabal Activity Wall. We were NOT ready for this, but LOVED every second. You’ll snake nearly 200 metres across the cliff edge across one of the highest climbing routes in the Middle East, on the way to Oman’s first mountain zip line. Safety is number one for this activity. The Via Ferrata steel cable allows intrepid climbers to use their hands and strategically placed metal steps to traverse the vertical rock face, before navigating jagged rock formations, ladders and vertical stairs. We have to give a HUGE shout out to the man of the moment, our cool, calm and collected guide Thilina. Hailing from Sri Lanka, Thilina is an absolute pro. His chilled-out yet motivational approach as well as patience and guidance throughout the climb, is the main reason why we were able to complete the exhilarating hour-long climb and two zip lines with confidence. Views of the mountain and vast canyon are simply magic when doing this activity and flying through the air at the end is the icing on the cake for thrill-seekers and novices alike.

AND RELAX...

When you’ve had your fix of outdoor fun for the day, or worked out at the gym, let your muscles soothe at the incredible Anantara Spa with its five luxurious spa treatment rooms, including two couple’s suites, a hair and nail beauty salon at The Jasmine Lounge and separate male and female thermal suites. Lay down for an hour-long signature massage where you can choose an oil to suit your mood and a professional therapist will tailor a massage for your exact needs – from pressure to technique and areas of concern – our therapist knew exactly where the tight knots were and worked so flawlessly that we fell into a deep slumber within minutes of lying face-down on the comfy treatment bed. Arabian cleansing rituals will help restore your flow and after some hot ginger tea, you’ll be left feeling refreshed and ready to tackle whatever comes next. If you want some downtime by the pool, Anantara Al Jabal Al Akhdar certainly has one that will impress. A striking infinity pool with a belvedere offers an illustrious setting, especially at sunset! T

he Arab empire: an ancient civilisation that once dominated the world with its cultural heritage is now in its last gasp. We are provided with rational explanations that lack in adequacy. In light of authenticity it can be uncovered by the buried treasures, specifically the medium of coinage. It carries a historical pedigree of imagery that can be drawn upon for our own understanding, but the issue of representation arises yet again. How does an interpretation of a major transformation occur when the Arab population has had their ancestry stolen? Ahmed Albahrani’s response to the deficient depiction of political unrest and war is portrayed in his coins. As he evokes the immense deflection of the Arab province, he recreates the coins with a veil of demolition. The engravings are similarly exerted but with a focus on detail. The collection of coins consists of historical moments that conditioned important stages of the Middle East’s current state. The pictorial components of the coins are presented as a major aspect of the collection, because of its fixed importance. They are issued to act as historical icons, with fictional narratives that communicate the success of the state and its people to the world. Albahrani enlarged the coins with the tally marks, cracked surface, gunshots, erosion of sand ripples and the overwhelming effect of a melting process. In fact, the fusion is a downfall of progress where the act of turning a solid substance into a liquid form is an inundation of a failed state. The combinations of the original motifs are opaque while the texture yields over the foreground, emerging out of the circular frame. Albahrani’s manipulation of the bronze medium is a deception of the unimaginable. Through these layers there is a sense of vulnerability that you can approach more intimately. ‘Flip a coin’ derives from the idea of gestalt. It emphasises each and every coin as independently accountable for its country’s history but together as a whole they represent the collapsed Arab empire. He maneuvers the stiffness of the bronze with the intensified textures to create a multi-dimensional experience with a two-dimensional sculpture, filling it with details that keep the viewer gazing in awe. Every component here matters; it needs to be read through its layers, researched through its depth, because every hidden story is still a subject of our modern-day crisis. Words - Rim Albahrani 58

ABOUT THE ARTIST From abstract to contemporary and conceptual art, Ahmed Albahrani transforms his medium to address the modern-day conditions in a forthright manner. i Chef! Congratulations on opening in Doha and welcome to the city! Can you describe for us the CUT venue here at the Mondrian and what diners can expect to experience? So, CUT here at the Mondrian is really a high brand of CUT and Spago – our Californian cuisine restaurant concept – mixed together. For example, CUT in Bahrain is a typical steakhouse style, whereas here we also incorporate dishes from Spago – like the smoked salmon and mushroom with truffle pizza, we have different types of pasta, gnocchi, and risotto – plus we have all the steak and meats also, so it’s really a high brand of both restaurants blended together. We also open for breakfast, lunch and dinner so it’s important that the hotel guest’s have this quality and high variety. How would you define fine dining and is that the term you would use to class this CUT venue? Fine dining to me means that what is important is the thing that is on your plate. I want people to enjoy themselves and to have a good time; I don’t want it to be stuffy and I don’t want it to be formal, otherwise I think it gets too boring. I want people, young and older to feel at ease when they come here – to relax and enjoy their conversation and, of course, enjoy their food. So the only thing that has to be serious is what is on the plate. I also think the hospitality has to be really good – I want our waiters to be friendly, very helpful, and not to think that they know better than anyone; the hospitality really brings the whole experience together, so when people come to CUT, they get a good experience from the beginning to the end. What makes the Mondrian Doha a good fit for the CUT brand? The Mondrian Doha is really a modern luxury hotel, not stuffy luxury or fake luxury but very modern luxury, which I believe is a great fit for us because people get the best service from the best product. On top of this, I know Sam Nazarian [founder and CEO of sbe] really well and I know he’s passionate about his hotels the way that we are passionate about our restaurants. So, we have a similar vision – and some of the other older hotel companies where you don’t always get good food, they think that they will be doing everything themselves and the truth is that you cannot be good at everything. Whereas Sam knows that he and his team are good at doing hotels but they are not specialised in food, so they bring in people who can do it better and do a great job. So, for me, I said ok because I wanted somebody who is passionate about the hotel business and passionate about customer service the same way that we are – and this is a really good fit. You’re a busy man – TV shows, book launches, restaurant openings – do you still enjoy the grind? To me, it never really was a grind. I would never say “oh, I have to go to Qatar” or “oh no, I have to go to Singapore” – I really love to go to all these places, I love the people, and I love opening new restaurants. You know, my sister always says: “when are you going to stop? You’re the oldest one in the family, and you continue to open restaurants, you’re flying left and right everywhere, just relax

and enjoy” (smiles). And I always say “no, but I love what I do, so why change?” – if I would just sit at home, I’d wither away slowly. Like this, it’s really perfect because I can do what I love, so I don’t feel like I’m going to “work” – I mean there are certain things that even I don’t like to do; I don’t like to sit with my lawyer or my accountant, but I have to because that’s also a part of the business. Let’s take it back to the beginning – can you share with us the story of your early culinary career… My mother was a chef also, and that’s how I started in the business. She was a chef in a hotel in Austria. I actually wanted to be an architect when I was a kid, but my family wasn’t rich enough. We were poor; you know, we had meat once a week, we had no running water in the house, there was no toilet in our home – it was 100ft from the house outside so in the winter we would have to go out in the freezing cold. When I was 14, I left my home, I didn’t really get on with my stepfather – so I went 50 miles away, I did my apprenticeship until I was 17 and even then, I wasn’t sure if this is what I wanted to do, I just knew that I wanted to be away from my stepfather. Then, I went to France and there, it was the second restaurant I worked in called Bombonière in Provence, where something lit up and I met my mentor Raymond Thuilier. He at that time was 72-years-old and he was so passionate about food, and the ingredients. He had land and he grew his own melons and apricots, and vegetables, olive trees – and he was also going into the dining room and talking to the customers. And I said to myself, “I want to be like him, I want to own my own restaurant” – at 19-years-old, this changed my life. Before that, I wasn’t sure if I was going to stay in cooking but after that I knew I wanted to feel like Mr. Thuilier, and I was so excited! When I went to America and opened Spago and wrote my first cookbook – he was always there for me, and that was really special.

TIPS FOR COOKING THE PERFECT STEAK: • First, you have to know what cut you like, and that certain cuts are better for different preparations. So, if you like, for example, your steak cooked well done, like a lot of people in this part of the world – then the Wagyu beef is better because it doesn’t dry out due to having a lot of fat. Now, if you like your steak rare, you can use American beef or the American fillet, which is a little bit drier. For example, I like the fillet with the pepper sauce. This is where you get the richness of the sauce and the leanness of the meat, because fillets don’t have a lot of fat in them. • Before cooking the steak, you have to temper your meat so that it gets to room temperature. Also, once it’s cooked – say you like it medium – let it sit a little bit before you cut into it. So when we cook a steak, we let it rest and then we send it out to the customer. If you have a steak that is not rested, and you take it off the grill and see that it’s nice and hot and you want to cut straight into it, then all the juices run out and you’re left with dry meat.

What inspires you to keep cooking after so many years in the food industry? It’s so interesting; I love what I do, I love to change, I love the evolution of cooking and I just told all the chefs – we have to change. We don’t have to change the whole menu; we have to keep a good amount of dishes that are traditional and innovation mixed together. So, the evolving nature of the food industry is exciting. For the 23rd consecutive year, you were in charge of the sumptuous feast at the Governors Ball, a party for Hollywood’s A-listers immediately following the Oscars ceremony. Is there a different kind of pressure when cooking for celebrities and will you be returning for the 24th year? Yes, I think we’re doing the upcoming one too! It’s not a big pressure because now I know most of the people; for example, I know Barbara Streisand and she loves the chicken pot pie, so when I see her at the restaurant, she’ll say “are you going to cook for the Oscars, I’m going this year. I don’t care what you’re going to cook but just make me my chicken pot pie!” (laughs). What’s the greatest honour or compliment you’ve received as a chef? For me, there are a lot of different things. I won Chef of the Year twice, and getting the star on Hollywood Boulevard – but the biggest thing for me is really that we’ve been open with Spago for 35 years and last year was our best year ever. So, the longevity of staying open in America where things turnover so much – restaurants that open and close all the time – to be so successful is a great feeling. I just got off the phone this morning with the team in L.A and they said that the previous Christmas Eve dinner was the biggest one we’ve ever had – and this is in L.A. where even a lot of the restaurants which were popular when we first started with Spago, they have now closed. And why? Because they don’t change. There is no evolution – so if you keep the same menu, as good as it might be – people get bored. So, you have to have some good things that you like, but also new special things to keep it interesting for the guests.

Going into 2018 and after having accomplished so much up until now – do you still have any New Year’s resolutions to make come true over the next 12 months and if yes, what are the goals? The goal is really to continue what we are doing – we’re opening new restaurants. I also went back to school because I’m very curious. I always want to learn and it’s one of the most exciting things I did. I’m going back to Harvard for a class this year and seeing the professors and how passionate they are about teaching is so great. That’s really an exciting place to go to school. I never went to college; I never went to high school – so this, for me, it felt really good. Now my kids can’t say: “Papa, you never went to college and you were successful” (laughs). And opening new restaurants is like having children in a way. You always pay attention to the newest one but you cannot forget the older ones – you have to take care of them all. I have four boys and the second one, Byron, he went to Cornell and he also loves to cook. So, I sent him to Spain and Paris, New York in the summer time. And he’s really into cooking which is so important if he wants to takeover one day – if he doesn’t know how to cook, then it’s very difficult. For example, you have to buy the best ingredients and then you want the ingredients to taste great – a piece of fish shouldn’t be covered with lots of other things – it should be highlighted, but you can use other flavours to enhance it but not to overdo it. ✤ fact magazine

Refined Tea Traditions Located in the luxury quarter of the Mall of Qatar, TWG Tea has set up its first branch in Qatar and it’s what every tea lover has been dreaming of. Think beautiful blends to sip away on as you tuck into tea-infused dishes off the menu; FACT’s Craig Ferriman went to check out just why this place has become synonymous with elegant in-mall dining and, of course, great tea… fact magazine

I

t’s an almost inconspicuous circular island, the venue of TWG Tea. You might think that something situated out in the open in the middle of a mall is an unusual idea, but alas, TWG Tea is ensconced in a peaceful water feature and the intelligence of the modern mall’s design means that the acoustics drain away any excess hubbub. Some rather delightful boutique jewellery and clothes stores surround the venue, should you wish to contemplate a swanky purchase while you sip on your exquisite beverage. The ceiling is entirely glass giving the illusion that you’re outdoors under the sky when you’re there during the day. The hyper-modern mall that was constructed in the middle of absolutely nowhere, can be a 45-minute drive to get to from Doha’s city centre. But, thankfully for shoppers and diners alike, the roads are being greatly improved and finishing fast, and soon you won’t even need to drive there because the metro will be open! With all of these developments in mind, a trip to the Mall of Qatar is actually a welcomed respite from the capital’s bustle. TWG Tea has around 70 branches globally. To the joy of tea drinkers, this branch boasts 400 types of tea - WOW. The menu is so extensive that it looks like a small novel – and it was so cute. Things start to get interactive and involve the customer from the get-go. You can choose your tea by geography. Perhaps you’ll go for a classic Indian tea or maybe you’ll prefer a Chinese herbal tea – whatever your palate desires, TWG Tea can cater to it. I was amazed at seeing teas that stretched as far and wide as the Honde Valley in Zimbabwe to Zealong in New Zealand as well as a classic Early Grey from England. 84

Here’s where it gets really interesting. Even their food used tea in the making of menu items; like their tiger prawns with a tea vinaigrette which is not an appetiser you would think to have, or expect to enjoy, in a place branded for its tea – but think again, because these were some of the most flavourful prawns I’ve ever tasted! The lamb shoulder was soaked in a tea marinade with eggplant and zucchini – meat eaters will adore this dish. I even had a chicken green curry which was mixed with Genmaicha green tea and featured furikake, a Japanese seasoning which was used as decoration. Not only was it appealing to the eye, this was one dish that I could see myself ordering time and again – in fact, the cravings as I write this are REAL. The staff at TWG Tea are not just waiters but have an expertise in tea and a real knowledge of what they are serving and what goes well together. Francis is the resident in-house tea expert and quick to share information with guests, answer any questions and make fabulous recommendations. When it came to trying something from their dessert trolley, I chose a vanilla and cherry mousse and asked Francis to pair

a tea that would go well with it. Francis knew just the thing for it and proceeded to get out ‘Sakura, Sakura’ which is a Cherry Blossom red tea – simply delicious. Not knowing much about the place before I went and not having any expectations, it was one of the most intriguing new culinary discoveries I’ve had in a very long time in Doha. I

f you’ve ever been to Souq Waqif, you’ve almost certainly walked past Gymkhana. It’s right at the front facing the Corniche and if you get a table by the window, you’ll get a front row seat looking out at the iconic West Bay skyline. Gymkhana takes its name from the Anglo-Indian word meaning assembly in the days of the British Raj and commonly referred to a gentlemen’s or country club and that’s very much the vibe they’ve gone for with the interiors. Fans, pictures of colonial India on the wall and wide settees and throne-like chairs occupy the space – definitely an insta-worthy venue. Gymkhana fills the bottom floor of one of Souq Waqif Boutique Hotels’ properties - Al Jomrok. Boutique service and staff that treat you like the only people in there is what you can expect. Their general manager, Ketan treated us like royalty. Now, let’s talk food because it was truly exceptional. Everything from the lentil poppadoms through to the garlic or zatar naans and even the rather brilliantly designed beverages, was of the highest quality. We tried a signature masala magarita which was a curious blend of lychee, orange juice, guava, mint and cumin served in a glass which is rimmed in sugar and cayenne pepper so that it’s sweet on the lips but then you get an after kick – just divine. There is also the coconut cucumber cooler which you can stick two straws in and share. Hints of black salt and cumin underpin it – a real thirst-quencher! The stand out appetiser for us was Zafrani Ribiyan which are Gulf shrimps, smoked and served with saffron and cream. These shrimps were humongous in size and alive in flavour. I always try to order something I haven’t had before so while I’m confident that their chicken tikka masala and butter chicken dishes are doubtless very good, I decided to try the impressive Kori Ghassi. It’s tender chicken in a Mangalorean 88

curry, made hot by the chillies and flavousome by the tamarind which is such an underrated ingredient, in my view. If you love your lamb, then the Nalli Rogan Josh is to die for. The lamb has been cooked for a long time and literally slips off the bone and the Kashmiri spices are rich and varied – a tasty, palate-pleasing dish that we highly recommend. The menu at Gymkhana is as satisfying to seafood lovers as it is to vegetarians as it is to those who prefer meat and poultry – so expect plenty of good options to please all dietary requirements. Deserts are taken seriously too and there’s lots to choose from. We couldn’t believe how good the Rasmalai was. The little spongy pocket was super delicate and innovatively topped with apple cream, pistachio and saffron. I’m not a great dessert lover but this was something special. It’s a dessert the restaurant is proud of, and rightly so. Ketan, who served us, was in no hurry to get rid of us. He was quite happy to have us there all night and try everything on the menu – so you won’t feel rushed; instead Gymkhana is inviting and relaxed. After your first visit, there’s a good chance that you’ll be planning a return to try some of the other treasures on the Gymkhana menu. ✤

Fiery Flavours at Jwala It’s nice to just walk in somewhere off the street and grab a table to have a bite, isn’t it? All too often, you have to walk through an ornate hotel lobby or wade through a hectic mall. As The Pearl starts to come of age and be a beacon of social activity and leisure, Jwala is the latest place to open up and invite people in as FACT’s Craig Ferriman finds out… fact magazine

wala means flame in Hindi and you should expect to confront some heat in this place. Nothing you can’t handle though! A giant tandoori oven is visible to all diners and the open kitchen seemed to take up nearly a third of the restaurant space – allowing guests to watch the chefs create beautiful dishes. The atmosphere was relaxed and the walls were filled with paintings, portraits and photographs from all across India. My first impression was strong. Poppadoms were not just slapped on the table to shut us up until the cooked food arrived as can so often happen, but instead a delicious poppadom doused in a spicy tomato mix was presented with tamarind and other well-made chutneys. Their mango lassi is pretty damn good too – keeping our thirst at bay until the main stars of the evening arrive at the table. The Mulligatawny Soup which is India’s national soup is all too often left off menus, not here. Jwala’s is hot, wholesome and delicious. A healthier way to start too! This restaurant tries to be true to India but not just one part of it. You’ll see dishes from across the country represented on the menu from Goan prawns to Keralan curry and Kashmiri lamb as well as a chicken murgh from Hyderabad. All packed with unbelievable flavours to draw out all your “mmmh” moments – SO tasty. Their trio of Tandoori Mushrooms was memorable. They were char grilled and marinated in masala sauce. Another signature was the Tandoori Lollipops served on skewers and ready to be devoured – we didn’t hold back.

The stand-out dishes for me were the mighty Tiger Prawns from Goa, cooked in a spiced coconut curry; and the Kadai Murgh which hails from Hyderabad with its hot and spicy yet very pleasant taste and texture – a complete treat for your palate. It’s a chicken curry infused in cumin and coriander and some added tomatoes and peppers to give it that extra punch. Biryani lovers should try the lamb or chicken biryani which is served piping hot when it’s presented on the table that it’s still cooking. The top is sliced off and a steaming, aromatic basket of saffron infused Hyderabadi chicken and basmati rice lies beneath. The saffron Rasmalai was rather impressive too. It was creamy and rich and served with pistachio and almond rabdi. The perfect dessert to cool your taste buds after a fiery meal. The ambiance was suitably authentic at Jwala with a quartet of musicians playing on a low stage in the corner filling the room with an escapist vibe. Jwala is located in the family-friendly and charminglydesigned Medina Centrale, near the cinema and behind a supermarket. It can also be accessed from the entertainment hub that is Megapolis so there are plenty of ways to visit this restaurant as part of a yummy day trip or an evening out. ✤ fact magazine

Our massage therapists met us and led us to the private couple’s suite beautifully adorned with candles and rose petals. Once the massage began I could feel my mind letting go of clouds of negative energy as my therapist pressed firmly on my third eye, changing my mood to a lost state of contentment. My shoulders were realigned with the gentle rub and tug of her hands, which was followed by the rhythmic pitter-patter of her fingers to stimulate my “chi” back into action. From head to toe, my masseuse concentrated on working the knots to make my body into an ideal vessel through which “chi” could flow. In each minute that passed I felt alleviated of an invisible burden and more aware of the energy that lay dormant inside me. With my newfound exuberance, I felt I could thrive. And, lo’ and behold, my other half had the same revived feelings too! After rejuvenating our mind, body, and soul, we ended our special evening with sparkling juice and chocolates on our private terrace of the suite. We walked out feeling revamped on a whole different level. ✤
