D
id you make a New Year’s resolution list? No? Me either. And my reason for not doing so is pretty simple; the only pressure I like is the kind that involves finishing off what’s on my plate and keeping up-to-date with HBO’s new TV series - that’s right, I’m a netflix and binge eat type of girl, so resolutions aren’t always the best way for me to get results. Instead, show me a good documentary on the Travel Channel and believe me when I say that the motivation to get up, do the daily grind and make plans is REAL. In fact, my travel bucket list is as long as a Victoria’s Secret model’s legs and, as far as 2017 goals are concerened, my mission is to tick off as many destinations as possible. Weirdly enough, there are so many places in the Gulf that I’ve yet to visit - something the whole FACT office had in common. And so, we put together a mini GCC Bucket List to inspire your life experiences in 2017. Turn to p25 and see what this beautiful region has to offer. From the land to the sea, there’s something to entice everyone who’s in search of excitement beyond the brunch scene. Talking of regional wonders, the spectacular Louvre Abu Dhabi will open its doors in early 2017. We have a look at what’s waiting to be discovered inside this artistic playground (p46). January in Qatar is a seriously fun time; we’ve got all the info on the upcoming Commercial Bank Qatar Masters 2017 (p18) where world-famous players will gather to tee off. There’s great entertainment and hospitality too for all those visiting the event. We also bring you an exclusive sit down with the one and only Celebrity Chef, Nobu Matsuhisa (p79) who shares personal experiences that have made his culinary skills and himself better and stronger. New Year, New Nando’s Flavour Nando’s, the famous flame-grilled PERiPERi chicken restaurant, has launched a new flavour of basting sauce for those who want a kick of vibrant taste but prefer it without the chilli heat. The Mango and Lime flavour combines the sweetness of the mango and the tanginess of lime with a touch of the African Bird’s Eye chilli. Customers can now choose from six different flavours on the Nando’s PERiometer: Plain-ish, Lemon & Herb, Mango & Lime, Mild, Hot and Extra Hot. On the PERi-Ometer, the Mango & Lime flavour is slightly hotter than Lemon and Herb, but gentler than the Mild flavour. FACT meets Abram (Abe) and Desiree Moore, both practising lawyers from Chicago, Illinois who will feature on the Qatar Hero episode, airing on January 8, exclusively on beIN channel 118. 16

Hi Moore family! When did you move to the Middle East? We moved to Qatar in February of 2017 from Chicago, Illinois and are currently renting an apartment in Doha.
How challenging did you find the relocation and adjusting to life here?
Qatar is distinctly different from the US in a number of ways, including cultural and social values, dealings in business, and the visual and aesthetic landscape of the region. In the early weeks and months, there was a significant adjustment period and a steep learning curve. On the other hand, the day to day assimilation was more streamlined than it might have been in other places as we
did not face any language barrier (English is spoken as a matter of course by nearly everyone, both in business and otherwise) and much of the every day conveniences of Qatar are borrowed from or inspired by the West. In that sense, whether it be restaurants or over the counter medicines, it is not difficult to find many of the things you might be accustomed to at home.
What is your favourite thing to do or spot to visit in your new home country?
We love visiting Souq Waqif, which is an open market of sorts where you can buyanything from rugs to fabrics and spices, native to the region.

What have been your highlights since moving to Doha?
We loved filming House Hunters International. It was an opportunity to create a keepsake of our time in the Middle East. The travel opportunities that our time in the region has presented, including to places like Oman and Sri Lanka - places we might never have visited if we hadn’t lived in Qatar - are highlights as well.
What is your favourite thing to do or spot to visit in your new home country? We love visiting Souq Waqif, which is an open market of sorts were you can buy anything from rugs to fabrics to spices that are native to the region.
What have you been most surprised about?
The robust expat community and how easy it is to make friends when you are living abroad. This was not something I anticipated, but it has been a welcome surprise. The friends we have made are integral to the experience and will be friends for life.
Based on your experience, would you recommend this transition to anyone else? We would absolutely recommend that anyone take the opportunity to live abroad if it is presented to them. Irrespective of where you live, you will learn about yourself and others, and will adopt a new understanding of the world by virtue of having done so.
How have you been inspired by living in a Middle Eastern country/city?
As lawyers, one of the most inspirational aspects of living in Qatar is the rich tradition of informal mediation and conflict resolution that takes place outside of courtrooms, often in the majilis or in the homes. Because the community is small, Qataris look to mend and preserve business relationships rather than break them down, and their approach to conflicts in business tends to be less adversarial and at times more efficient and effective than the Western tradition of protracted litigation.
Any tips for people moving here?
If you are moving to Qatar, join as many Qatar-related Facebook groups as possible. This is where you will get all of the key information you need to survive early on, including the best doctors, the best place to find certain products, where to buy furniture, etc., as well as a resource for connecting with similarly situated expats.
Would you plan to relocate anywhere else in the region?

Do you remember the first dish you ever cooked - tell us more about what sparked your interest in food?
I grew up in the countryside and recall my parents growing fruits and vegetables right in our garden. My family used to harvest fruits and vegetables for their own consumption and preserve them for the winter time. Cooking homemade jams, compotes, pickles and soups was always part of my life since I was a child and that was what sparked my interest in food.
You’ve worked alongside some of the world’s most renowned chefs, do you feel like you’ve learned your fair share of culinary tips and tricks?
I have had the great pleasure in working along a lot of world renowned chefs and I have always considered it a blessing and a great opportunity to learn new skills and techniques. Their attention to detail, precision and delivery of top quality dishes consistently each and every day is just remarkable. It is something I aim to recreate in my own kitchen day in and day out.
What keeps you excited about being in the food industry?
My passion for food keeps me motivated and on the lookout for new trends, ideas and creations. Cooking is not only my job it is my hobby, my life. I also feel that cooking and being able to share your creations with a lot of individuals makes me feel like I have been part

of their lives, even if for a short timeframe. People come together over food to celebrate milestones, special occasions and catching up with loved ones. It is a privilege to be contributing to such a memorable part of their experience on a daily basis.
Tell us more about your involvement in the 2017 Commercial Bank Qatar Masters - what can we expect from the dishes you’re preparing?
I am thrilled to be taking part in the live cooking session in hospitality with the support of my Executive Sous Chef Hiroaki and the InterContinental Doha, Executive Chef Talal Aridi at the Commercial Bank Qatar Masters for the first time, and its 20th edition no less. We are going to introduce a new style of modern European cuisine to Commercial Bank Qatar Masters, where
the fusion of flavour between Japanese and French cuisines come together to mesmerize your senses.
What are you most looking forward to at the event - have you visited Qatar before?
I am looking forward to visiting Qatar for the first time but most importantly be a part of the Commercial Bank Qatar Masters where I will get the chance to meet some of the world’s best golfers. I don’t exactly get that opportunity often so I am excited about that. I also can’t wait to taste the local cuisine and experience the culture of Qatari and its people.
What’s your guilty pleasure food?
My guilty pleasure is traditional food from where I come from Wiesbaden Germany.
Whenever I am feeling under the weather I cook myself a traditional comforting German meal from my area which is usually quite heavy, salty and fat but super yummy!
You’ve cooked for royalty and celebrities, how do you handle the pressure and do you get star struck?
I love it! Pressure in my role is normal and I am already used to it. I usually feel a little anxious before a big event or ahead of cooking a big meal which helps me in giving it my all so I am used to it and I’ve grown to enjoy that part of the process as well. I have had the privilege of cooking for Thai royalty, several presidents and sports stars such as Pele, Maradona, Yao Ming and Roger Federer. So I would say I am very lucky on that front. fact magazine

For thousands of years, camping was a way of life for the Bedouin of the Gulf, as tribes kept on a constant move across the vast desert, setting up tents and following herds of camel and sheep to greener pastures. Today, there is very little left of that world, and like most long-established traditions, camping has matured with time. Taking a trip into the desert is more of a must-have experience or a result of the need to escape mundane daily tasks and the city bustle, and to seek solace in the vast emptiness. And there are many different ways to go about planning and visiting the desert. Tour companies offer some of the best and safest packages, customdesigned to suit specific time frames and budgets. Desert safaris are most popular; where people are whisked away in a 4x4 for a thrilling ride over massive sand dunes, followed by dinner, dance, and activities in the desert, or an overnight stay. The UAE and Qatari deserts are some of the best in the region, housing a number of camping options.

WHERE TO SET UP CAMP ABU DHABI
WHERE TO SET UP CAMP QATAR Located north of Dukhan, the Ras Abrouq peninsula is a favourite spot for weekend campers who come to enjoy the golden sands and pretty limestone scenery. The place is full of wildlife with plenty of animal sightings including hedgehogs, kangaroo mice, and the sand gazelle. An hour’s drive from Mesaieed is Inland Sea (Khor al Adaid), Qatar’s most famous and popular camping destination. The country’s southernmost point, the area is only accessible by 4-wheel drive vehicles. The scenery there is breathtaking with towering sand dunes soaring from the water’s edge. At the opposite side of Qatar is Umm Tais National Park which has some the most beautiful sandy beaches, and is where Doha’s kite surfers can be found on the weekend. Offshore, a few small islands surrounded by mudflats can be reached by vehicle when the tide is low, where you can find nesting turtles and stunning mangroves. While you’re in Umm Tais don’t forget to check out the pearling city of Al Zubara, which is only a few kilometers away.
The UAE desert is full of wonderful places to pitch your tent and gaze the stars. Don’t expect great facilities in many of these spots but do get ready for space and freedom, and for an experience that will give you a real taste of the country’s outdoors. A two and a half hour journey will get you to the Ras Al Khaimah desert. Here, the true nature of camping comes to life as you can set up near one of the small farms (be sure not too disturb the locals!) surrounded by sand dunes, little oasis farms and camel pens. Take an early morning drive and you might just see some Arabian Oryx, wild birds and pretty banyan trees too. Make sure to take everything, including lots of food and drink, because there are no everyday facilities in the area. The epic slice of Rub Al Khali (the empty quarter) deserves at least a two or three day trip! Liwa is 200km southwest of Abu Dhabi and though it might seem quite a trek, it’d the world’s biggest sand desert, so it’s well worth the drive. These sand mountains are relatively accessible by 4x4 and the whole region is scattered with curved sand dunes and dramatic plunges so if you’re there for a spot of dune bashing (you’d be crazy not to) make sure you’ve got an experienced driver at the wheel. There are plenty of great spots in this desert, dotted with freshwater pools and date plantations; all you have to do is take any road from Liwa oasis or follow the signs for Tal Mireb (Moreeb Hill). If you’re new to this whole desert camping thing then something a little closer to Abu Dhabi like Shwaib near Dubai would be the perfect choice. This is where you’ll find fairly easy access to hidden campsites where stargazing from the top of a dune will wipe away all your worries. It’s close enough to civilisation that you can get your friends to drop off a Starbucks coffee in the morning, but it’s faraway for you to you enjoy and appreciate the stunning scenery of mountains, flat plains and wadis! Shwaib borders Oman so it’s always a good idea to bring your passport! fact magazine

This major exhibition, curated by Catherine Grenier, Director of the Fondation Giacometti, with Associate Curators, Serena Bucalo-Mussely and Virginie Perdrisot, brings together more than 120 works by the two renowned artists drawn from the collections of the Musée national Picasso and the Fondation Giacometti in Paris, as well as exceptional loans from French and other international collections, covering paintings, sculptures, sketches, photographs and interviews with the artists. The exhibition reflects two years of research undertaken by the Fondation Giacometti and the Musée national Picasso, which reveals for the first time the previously unknown relationship between these two artists, who, despite an age gap of 20 years, shared many moments, both personal and professional. The showcase of work is organised into six sections, evoking different aspects of each artist’s production, including the development of their work as young artists through to their modernist creations, showing 44

the correspondences between their works, the influence of the surrealist movement, and the return to realism during the post-war period. The exhibition includes key works by each artist, such as: Self Portrait (1901), Woman Throwing a Stone (1931) and The She Goat (1950) by Picasso and Flower in Danger (1932), Tall Woman (1960), and Walking Man (1960) by Giacometti, presented alongside rare and fragile casts, some newly discovered drawings and photographic archives as well as some replicas of Giacometti’s works for the visually impaired visitors.

It’s not only going to be one of the region’s greatest openings in 2017, but probably the most exciting for the art world too. Here’s all the important needto-know about the stunning Louvre Abu Dhabi…
What is it? Only the BIGGEST news for art lovers in the GCC and beyond. Born out of an intergovernmental agreement between Abu Dhabi and France in 2007, Louvre Abu Dhabi and its universal story embodies the spirit of openness and dialogue among cultures, displaying works of historical, cultural and sociological significance from different times and civilisations. Once open, the museum’s permanent collection, as well as important loaned artworks from prestigious French institutions, will form an art historical narrative taking the visitor from ancient times to the contemporary through 23 permanent galleries in 12 sequences.
The Design Pritzker-prize winning architect Jean Nouvel has sought inspiration for the concept of Louvre Abu Dhabi in traditional Arabic architectural culture. Applying a contextual approach to the site, the Louvre Abu Dhabi has been designed as a ‘museum city’ in the sea, with its contrasting series of white buildings inspired by the medina and low-lying Arab settlements. In total there are approximately 55 individual buildings making up this museum city. The 180 meter-wide dome covers the majority of the museum city and becomes 48

an iconic structure visible from the sea, the surrounding areas and Abu Dhabi city. The dome will primarily act as a shading canopy to protect the outdoor plaza and the buildings below from the heat of the sun, providing local comfort and reducing building energy consumption. This strategy allows visitors to circulate outdoors between the Museum Galleries, Exhibitions, Children’s Museum, open plaza, café and restaurant.

What’s coming up? Two internationally acclaimed artists have been commissioned to create sitespecific artworks that will be displayed in the museum when opening in 2017. Jean
Nouvel’s ‘museum city’ with its streets, plazas and waterways will feature artworks exhibited both inside the galleries as well as outside. Giuseppe Penone and Jenny Holzer have worked closely with the Louvre Abu Dhabi team to develop sculptures and installations reflecting the universal stories of the museum and in harmony with the iconic building. These are the first of a number of commissions for Louvre Abu Dhabi which will, through a diversity of artists, reflect the universal nature of the museum. Works from the permanent collection will be displayed alongside these commissions in the outdoor areas of the museum. Recreating the atmosphere of an Islamic courtyard, an Ottoman octagonal fountain and pavement (18th Century, Damascus, Syria) will be integrated in a contemporary scenography flooded with light. ✤

After venturing into alternative rock, Kid Cudi does a 360 by returning to rapping in his sixth studio album. The hotly-awaited track list is split into acts akin to his Man on the Moon album series. Passion, Pain and Demon Slayin’ is a stark departure from his last album and is definitely what we, as his fans, want to see more of. It includes the singles Frequency, Surfin’ and Baptized in Fire. Frequency oscillates between muted croons and staccato raps. The track is a direct product of Cudi’s original style with a more subdued hip-hop ballad sound. Surfin’ featuring Pharrell has a more upbeat electronic brass – a little bit of experimenting that we love. Cudi’s idiosyncratic style featuring the union of hip-hop, rock and dance is what makes his music so distinct. From writing his own songs to directing them, Cudi does it all and he seems to know what he’s doing. His unique vocals and contagious beats are a staple in his latest offering as well. While his previous album had left some fans disappointed, Passion, Pain and Demon Slayin’ could be his saving grace.

Rock lovers rejoice! You Me At Six are coming out with their fifth studio album, Night People and it surpasses everything they have done before. There’s a clear shift from their former sound towards a more rock-influenced style. While keeping their signature edgy, pop-punk persona intact, they dabble in a more guitardriven and drum-heavy technique. The English rockers seem to have come a long way since their last release, Cavalier Youth, which was considerably tamer. Through Night People they try to move away from their preferred pop-rock vibe to a more rock heavy production. Josh Franceschi’s seductive vocals entwined with the captivating beats are enough to push you into a rock induced trance. While not everyone might be up for the change You Me At Six are introducing, it’s surely a change for the better and could very well reintroduce them into the rock realm. If their lead single is any indication of how the album is going to be, then it’s definitely one to watch out for!

Recently we flew to the Black Forest in Germany to try out the new Porsche 718 Cayman, the latest generation of the brand’s scorching little compact sports coupe.

G
iven the popularity of recent generations of the Cayman, with its mesmerising balance, handling and bangfor-buck, the new Cayman has high expectations to live up to. Luckily, Porsche aren’t exactly known for failing in this regard… As with the Porsche 718 Boxster we reviewed a few months ago, the Cayman is also now part of the 718 family, so you’ll now refer to a Porsche 718 like you’d refer to a 911, adding the Boxster and Cayman monikers to differentiate between the cabrio and coupe versions respectively. The two cars are now far more closely related than the previous Boxster and Caymans were, with practically identical engine, chassis and interior setups and options, with the only major difference being the roof. And though everyone loves a cabrio, once again we’re leaning slightly towards

the Cayman in a choice between the two, and this really comes down to the looks. We love the ‘fastback’ shape of the Cayman, with the roofline gently sloping down towards the rear of the car giving the whole package a much more dynamic and athletic vibe. This is helped in no small part to a slightly lower, wider stance and more muscular rear haunches on the new 718s compared to the outgoing models. Perhaps the biggest news with the new 718 family was the demise of the muchloved naturally-aspirated flat-six in favour of turbocharged inline-fours. However, we said it before with the Boxster and we’ll say it again with the Cayman, the new engine is superb, still delivering that distinctive racy Porsche growl (though without the richer timbre of the flat-six), and a furious power delivery that just keeps on giving. As expected, the 718 Cayman also
boasts superb levels of agility and balance, making it a car you can drive the absolute hell out of without getting too out of shape, or worse. You can pretty much choose what you want a corner to look like, turning in hard and lifting off to kick the back end out, or playing it more sensibly with a nice apex line carrying some speed and laying on the power on the exit like a boss. Even amateurs like us felt like champions after a couple of hours in this car, as the level of confidence the Cayman inspires makes you feel safe in exploring the limits of your comfort zone, providing lots of excitement, but never any terror. Our only complaint was the steering, which though nicely weighted, lacked in feeling and feedback from the front wheels, which is something you really want when you’re driving a car with pinpoint precision and agility like the Cayman.

However, we’re nitpicking here, desperately looking for at least one fault to balance out what is overwhelmingly a positive review. If you’re looking for a track-day offering, complete with more urgent steering and spine-jarringly stiff suspension, wait for the 718 Cayman GT4 which should be coming along at some point in the near future. But that’s not what the 718 Cayman and Cayman S are all about. They’re daily drivers and weekend road-trippers. They need to be fun, yes, but they also very much need to be comfortable. And few cars offer such high levels of both for this kind of money as the 718 Cayman. Despite the compact dimensions of the Cayman, there’s still plenty of legroom and headspace, and even places to put drinks, junk and so on. The seats are figurehugging, holding you in place under brisk cornering, and yet remain yielding enough to keep you comfortable. After several hours of driving we had to return to the hotel, as Porsche wanted their car back at some point! We reluctantly handed back the keys feeling as fresh and energised as when we’d taken them. How many cars can do that? ✤

H
i Chef Nobu! When did you first realise that you wanted to work in the food industry? After a couple of year’s following my father’s death, my brother took me to a sushi restaurant. The experience turned out to be incredible. I remember the sliding doors and the energy of the place. I also remember vividly sitting on the sushi counter with my brother and ordering a couple of things from the menu. I could see the Chef preparing the dishes, cutting the ingredients, making the rolls the whole atmosphere was beyond anything I have ever experienced. You have to understand that back in my days, sushi was a very high end food - expensive, not everybody could afford it. So, after I saw all that, I was wowed and I wanted to have that lifestyle. What was the most important lesson you learned on your first job in the culinary world? I started working when I was 18-years-old. I worked at a sushi restaurant in Tokyo for three years. During my time there I did everything except cooking. I used to go to the fish market with my mentor, early in the morning, to pick up fresh fish; I washed the dishes, ran errands, and, basically, I started from the bottom. I would wake up at 5am and go to sleep around midnight, working the entire day. I never complained because I was determined to become a chef, I wanted to do this more than anything else. After three years I earned my place in the kitchen, learned how to slice fish, and clean it. Now there are sushi schools everywhere, but back then the only way to become a sushi chef was learning on your own and looking at what others were doing. Having a mentor and working your way up. What made you take that trip from Japan to Peru? When I was a kid, I had two dreams in my life, one was to become a chef and the other one was to be like my father. My father travelled outside of Japan, so I wanted to do the same and see something different from Japan and experience a life in other countries. Every single time I would miss my father I used to look at pictures of him. One of the photos that always made a big impact on me was my father with the native people of Parao. I was always fascinated by this image. After six or seven years working in Tokyo, I met a man of Japanese and Peruvian origin. He was coming from Peru every year to Japan, and he would always tell me about the variety of

Lima is very close to the Pacific Ocean, so there are many varieties of fresh fish. For me, that was very interesting, and besides there are many Japanese immigrants there. Then he offered me to open a restaurant in Peru. For me, Peru was the amazon so I could relate to this place thanks to that picture of my father. What was your first impression of Peru? Well, before I moved there to live and work, I went to check the place out, so I knew what I was getting myself into. At first it was kind of shocking because Peru was like 30 or 40 years behind Japan in terms of technology and other aspects. But the people were so nice. All the locals were very welcoming and warm and the country was so beautiful. It is funny because back in the day sushi wasn’t popular at all, people didn’t eat it, because it was so expensive. But lots of big companies from Japan were located there, so I used to get a lot of business from them. You also worked and lived in Anchorage, Alaska - that must have been a total adventure. Tell us about your experience there… It was a challenge indeed, a culture shock. I helped build the restaurant and put money into the project. Finally we did the grand opening night, it was a great party, a very big success. Everything was going well. After 15 days from the opening night, I was having my first day off and I was celebrating with the crew; we were so happy about what we had accomplished. Then, I received a phone call from my business partner telling me to get down to the restaurant because there was a fire. I told him that this was not a good time for jokes; today is my first day off since the opening. I realised that he was telling the truth, so I actually bolted out of the house - it was very scary. Alaska is a very small city, and in the winter time the nights are so cold and it is very dangerous. All of a sudden, I can see my restaurant burning down, my dream, my money, my efforts - it was absolutely devastating. This actually happened on Thanksgiving Day, which crazily and coincidentally is today (we nod in disbelief !). For a long period of time I was besides myself, I felt so depressed and destroyed. But, eventually, I got back up again, thanks to my family. fact magazine

How much of your time do you put into the management side of the business, on a global scale? Maybe, for the last 10 years, I have travelled nine to 10 months a year my home at the moment is in L.A. I go as much as possible to all the Nobu restaurants around the world, actually my CEO travels with me everywhere, so I’m focused on talking to the chefs, to see our signature dishes and make sure they are all meet brand expectations. And to try out new dishes too. I also check the quality of the fish and how the team is working together, that’s very important to me, to know every single person of the team and make sure everything runs well. That’s my job while my C.E.O deals with the investors, partners, buyers and so on. So, would are you a businessman or chef ? (Laughs) Definitely Chef ! Finally, what do you like cooking and eating at home? I don’t care about gorgeous, over-thetop meals. I actually like when my wife cooks for me, anything that she cooks for me like meat and fish, I love it. But, the most important thing about home cooked meals is the love that you put in. ith four locations to choose from in Doha, Biella Qatar is a Caffé Pizzeria Ristorante that has become the go-to place for delicious Italian fare cooked with a homely touch. Doha’s diners have been flocking to the now-famous restaurant for its reliably great menu, friendly service and choice of venues. We visited the Medina Centrale restaurant, located close to the entertainment district of this beautiful area on The Pearl. You know what that means? When you’ve had a day out with loved ones and worked up an appetite, Biella’s yummy delights await to be enjoyed by the whole family. One of the things we love about this place is the elegant, light and airy venue. Inside, you’ve got a large dining-room style set up, whilst al fresco eating is made possible with plenty of comfy outdoor seating. And once you’ve picked your spot, it’s time to get down to the real star of the show; the food. An array of scrumptious Italian flavours are presented in an extensive menu of Antipasti, Salads, Zuppe, Biella Panini, Pasta, Risotto, Meat and Fish main courses, a From The Charcoal Grill section, Pizzeria, and Desserts. Basically, there’s something guaranteed to please every palate at the table. We begin our meal with two fabulous Antipasti selections – the Crocchette Al Formaggio and the Burrata. The first is deep fried cheese croquettes with tallegio, ricotta and mozzarella cheese, served with basil mayonnaise; and the second is a creamy helping of Burrata mozzarella with tomato and Italian olives. The portion size is generous and the combination of quality ingredients really shines through in each dish. Of course, the cheese of the moment, the Burrata, is completely fresh and beautifully-paired with tasty tomatoes and olives – we’re off to a great start! Next, we went straight for the mains and opted for the mind-blowing Linguine Al Cartoccio (seafood linguine baked in 86

the pizza oven with a bread cover); the Pizza Biella (tomato sauce, mozzarella, ricotta, bresaola, egg, parmesan and rocket leaves); and the Costoletta Di Vitello (350 grams char-grilled veal chop with creamy mashed potatoes, grilled tomato, Portobello mushroom and veal jus). WOW! Not only do we appreciate that the culinary team hasn’t skimped on presentation, we’re also in awe of the creativity and true-to-taste ingredients in each dish. The linguine is unlike anything we’ve ever seen or tried at an Italian restaurant before – if you like seafood, this luscious main is an absolute must. Pizza lovers will be thrilled to know that a signature component in making Biella’s pizzas as excellent as they are, is the custom made brick oven which is fired with peach wood imported from Italy. This is what gives their pizzas that mouthwatering, authentic taste. The Pizza Biella is, literally, cheesy heaven. With a perfect, light base and abundant toppings, this is one delectable, instagram-worthy pizza. The veal dish is also another crowd pleaser as we each fight to fork up as much of this tender, fall-off-the-bone meat in every bite! No Italian meal is complete without dessert, and Biella’s offerings are as exceptional as you could expect! The Baked Vanilla Ricotta Cheesecake is lip-licking brilliant with its pistachio biscotti and raspberry coulis. The way it’s presented on a slate board also scores major points on our easy-on-the-eye food checklist! There are 10 food stations; salad, soups, carving, steam, hot, curry, wok, sushi, fruit, and dessert. That means only one thing; don’t have breakfast! Start your food journey at the vibrant sushi station where abundant parcels of this Japanese cuisine favourite is offered up for guests to dive in. The amazing Crispy Salmon Rolls are a huge hit at our table. Follow this with a plate full of the most exotic salad; we loved the Duck Papaya Salad – it was the perfect pairing of crunchy meets chewy with standout flavours that reflected their food origins, beautifully. There was one soup that called us above all – Tom Yum, of course. We’re huge fans of this Thai staple and are constantly on the prowl for the best version in Doha. Let’s just say, Spice Market’s delicious recipe sits very close to the top of our favourite Tom Yum Soup list. 90

At the carving station, the Sweet Potato with Yuzu Plum Sauce, the Thai Basil Pancake with shredded Beef and the Roasted Duck all stole our hearts (and our taste buds). Meat is cooked to perfection and every dish is complemented by a yummy sauce. At the steam station, choose your choice of seafood; from hammour to baby octopus, prawns, mussels, Sultan Ibrahim and so much more, you can eat all the fish that your inner foodie desires, cooked in a rich tomato broth – H.E.L.L.O! For those of you who are there for hearty, filling mains – head straight for the hot and wok stations. Bring back a plate of the most succulent Hot and Sour Shrimps, tantalising

Chilli Garlic Egg Noodles, tender Stir Fried beef and Indonesian Nasi Goreng (fried rice). Get ready for plenty of “mmmhs” and a steadily-approaching food coma. Indian cuisine lovers will rejoice at the curry station where the likes of Butter Chicken, Beef Korma, Paratha, Green Curry Vegetables and more waits to be devoured. This was one of the food options that we went back to a few times for the silky smooth Butter Chicken – just exquisite. Dessert is a whole new ball game. You’ve got the ever-pleasing chocolate fountain next to more oriental choices like the mouthwatering Pandan Crème Brulée as well as an ice cream station with familiar and more exciting flavours (we’re talking about the rhubarb). But, it was the reliable Chocolate Cake that sent us overboard; crispy on top but sinfully decadent with a thick, gooey centre. We scooped up big bites for maximum choco bliss. Around 20 per cent of the food is changed
up every week – so you might even get to taste something new and incredible. Our advice? hef Evangelos brings his unique culinary touch to the innovative food served at Al Dana, Sharq Village & Spa. No doubt, his Greek origins play a bit part in the food that he serves up to diners at this beautiful venue. Al Dana offers a front-row seat to paradise on one of Doha’s most stunning natural beaches. Dining in the 118-seat restaurant offers guests a relaxing beachside enclave in a breathtaking Qatari-inspired setting. Other distinctive features include a show kitchen and seafood counter, where food connoisseurs can follow the preparation of their meal, and the Chef ’s Table for a customised experience together with the Chef. I was here to learn some tricks of the trade with cooking seafood and some different fish. Apron on and I’m ready to go! First on the agenda is the delicious ceviche; what’s really special about this dish is that Chef Evangelos will prepare it right in front of you, helping the ceviche remain the freshest it can be and allowing guests to savour every bite right away! We begin by cutting and cleaning a beautiful piece of Sea Bass. After the fish has been cut – we also julienne cut a little ( Julienne is a culinary knife cut in which the food item is cut into long thin strips, similar to matchsticks) and turn these pieces into small cubes, seasoned with salt and pepper. What makes this ceviche truly amazing is not only the 10-minute easy prep time, it’s the amalgamation of flavours and textures present in such a simple dish. You’ll get the tangy punch from the lemon and lime, but all of a sudden you’ll get to the bottom of the dish and hit the an explosion of sweetness which comes from the mango – yes! This ceviche dish is one that will give your taste buds that much needed pop and kick start to a great meal at Al Dana. For the second dish, Chef Evangelos takes it back to his Greek roots with none other than a traditional Greek salad – with a few surprises thrown in. There are three yummy components to this dish. Garden; think different coloured tomatoes (there’s yellow, red and black), tossed with cucumber, green pepper, black kalamata olives (they’re simply exquisite) and capers topped with a sprinkle

of salt, pepper, fresh oregano, and drizzled in olive oil. Then there’s the Feta Cheese Mousse, made with feta, cream, yogurt and capers; and finally there’s the Olive Soil - black kalamata olives, truffle oil, whole wheat tramezzone and olive brine. For me, it was the simple mix of ingredients and learning how to structure a colourful salad to show off every element, that really made this dish stand out. Not to mention, its presentation is impeccable and creative as it’s served on a long wooden board, depicting the idea of fresh produce growing in the garden - pretty! Chef Evangelos created a classic Greek dish with so much love and sincerity, breathing new life into an old-school favourite. The star of the show was the Grilled Dover Sole with baby vegetable, celeriac puree and pea sauté flavoured with mint. We fillet two Dover Sole and grill them. They’re kept on the side and later put in the oven to finish cooking. Two more pieces are marinated with salt, pepper and lime zest. We cut two asparagus and put these inside the fish pieces and roll them. These are put in a vacuum bag and cooked in the runner for 13 minutes at
Cucina de badir 67 degrees. We then cut the celeriac into small cubes and put together in a pot with some milk to boil for 20 minutes. Next, we blend in thermomix and add some aka miso paste until the puree is a fine texture. The baby vegetables are cleaned and boiled and the sauté is made with olive oil, salt, pepper and herbs. Finally, a round wooden dish is set up and drizzled with Bottarga, extra virgin olive oil and fleur de sel with all cooked ingredients presented on top. The final presentation of the dish blew me away, as did the mouthwatering taste. This is one main that was made for anyone who’s bored of the usual fried or steamed seafood. Just W.O.W! It’s very clear that Chef Evangelos and his team are really bringing to the table what we can only call Mediterranean haute cuisine - the ingredinets, the cooking methods, the presentation, and the flavours are ALL on point.
