CARING CAREEM Ever wondered why so many customers opt to use Careem daily over other services or even over owning their own cars? Let’s explore a few possible reasons... Convenience What’s more convenient than ordering a ride from your smartphone? Just a few taps on the app and you can choose the type of the car, pick your destination and pay for it through your credit card or cash. And let’s not forget you get your receipts electronically too. You can even choose your favourite driver!

Service Earned or unfair, taxis have a notorious and almost universal reputation for poor customer service. Whether it’s late pickup, getting the runaround on the shortest route or rough treatment from a driver whose been sitting in traffic all day, we’ve all had an experience. But that’s not the case with Careem. All the Captains go through a month long training, background and security checks and continuous rating check to guarantee the best service and experience for the users.

services but their Packages offer is very beneficial to avoid the fare surges during rush hours.” He continued: “One of the many occasions where Careem has been of great service is during a bbq family event at the beach in the Pearl District. I initially booked two cars to fit the number of guests and when we were returning we were surprised with a seven seater Prado, enough to fit all of our chairs and bbq sets such a comfortable and hassle-free ending to the night. Overall, Careem cars certainly offer more than other providers.” Yousuf Akhla further added: “I have been using Careem for about three years now; starting from when I was a student at CMU-Q and I heard about it through word-of-mouth on campus. I became a regular and a loyal Careem customer after they launched the Careem packages service. It’s good because firstly, it’s a cheaper option, based on my rough calculation and secondly, it helps me budget my monthly expenses well. I’ve had many cases where stories of Careem drivers left me inspired,” he added.

Price Let’s face it, anything that saves us money is destined for greatness. When you get a premium service such as the one offered by Careem at the same rate as current transport providers and let’s not forget that the price you see is the price you pay, which means no more surprises for travellers or the accountants who process their expense reports. Tehseen Niaz said: “I have been a Careem customer since 2016. I always thought Careem was very expensive prior to using their 18

FROM BERLIN TO QATAR A panel of the Berlin Wall was unveiled in the atrium of Georgetown University in Qatar (GU-Q), in a very special ceremony.

THE INSTALLATION IS THE result of an ongoing collaboration between QF and QM, which brought a piece of the Berlin Wall to Qatar under the Qatar-Germany 2017 Year of Culture, to be part of its robust Public Art Programme. Once forming part of the wall that divided East and West Germany for three decades, the displayed panel measures just over a meter wide, over 3.5 meters high, and 2 meters thick. The concrete is reinforced with steel bars, and covered in spray painted graffiti that conveys messages of hope, freedom and change. In his opening remarks, Dean Ahmad Dallal noted the significance of the wall for people around the world, stating: “what happened in Germany divided German families, ruptured their society, and affected the entire world far beyond the wall. We are honored to be selected to display a piece of the Berlin Wall here in Doha.” He went on to highlight the link between education and diplomacy, saying: “As a university dedicated to training future leaders who will engage in building international relationships and conducting research that tears down walls on a number of fronts, artifacts like this remind us of 26

the critical importance of our task as scholars and educators.” Mrs. Al-Naimi spoke of how the segment of the Berlin Wall, and its message, complements the 150 works that represent QF’s unique art collection, and those loaned to QF by QM, which are all on public view at Education City. “These pieces of art encourage critical thinking, creativity, and discovery,” she said. “They promote social engagement and interaction, and foster cross-cultural understanding and perspective. All of these values are at the core of QF’s mission, which is why art has such a central role in our community development efforts. We are immensely proud to host this artwork at QF, and I thank QM for enabling us to do so and for our ongoing and valued cultural collaboration.” Gerd Nonneman, Professor of Government at GU-Q, also spoke, summarising the political geography of the wall, offering some take away messages on walls and barriers in today’s context. The painful cost of walls that divide families took a personal turn with words from Kai Henrik-Barth, Senior Assistant Dean for Research Support at GU-Q, and his spouse Katrin ScholzBarth, who shared their experiences living on opposite sides of the divide. The wall, which was both a physical barrier and an ideological divide, was finally torn down in 1989. It became the symbolic end of the Cold War, uniting Germany for the first time since 1945. The Berlin Wall section is available for public viewing in the Georgetown atrium in Education City. ✤

SUSTAINABLE INTERVIEW •

Hi Samia! Tell us a little bit about yourself and where it all began... I was in love with art and wanted to study it but my parents wanted me to study Business and Banking at University as it was in demand. I graduated in 2008 the year of the financial crisis therefore it wasn’t easy to find a job. Obviously this had a big impact on me emotionally as I was at home seemingly with no purpose. Then my Aunt asked me to spend some time in her Salon. I had expected to be the manager but in fact I was the stock keeper. She told me that I needed to count the stock – how many shampoos are on the shelves, this kind of thing. She stressed that if you want to learn the business then you start from the beginning. I was promoted to shop assistant and eventually I went to study at two academies to become a makeup artist. Once I had the accreditation, I became the manager in the salon. After this I worked as an accountant but felt like a caged bird unable to explore my creative side. I knew that I must start my own business and that opening a salon with a good friend was the way forward. This salon was the first to launch raw products infused into organic treatments to their customers. I decided that I wanted to create a business based solely around Organic products and at this time I was taking a massive risk as Organic wasn’t as highly prized as it is today. My husband and my parents supported me and I was able to found Organique. My Father helped in every area. He even helped me to paint the make up room and the rest of the family were also so heavily involved. I then devoted myself to producing home made products for every treatment. People would ask to buy the products but at that time I was unable to sell the products we used. After the government challenged me about using my own products I realised that after only 6 months I needed to create my own range. I flew to Istanbul and took my herbs and asked a manufacturer to produce my range of products. I feel blessed and so happy that this range has been a success and so many people have bought my products.

This salon was the first to launch raw products infused into organic treatments to their customers.”

How did you choose the ingredients and create your formulas used throughout your range of products and treatments? My inspiration was undoubtedly a collective of my Mother, Grandmother and my Aunty. They gave me so much valuable advice about the traditional herbs and the processes through fact magazine

39

• SUSTAINABLE INTERVIEW

which I needed to go to produce these formulas. Every time I travel to the Far East, Bali, Thailand and India I spend so much time investigating the properties behind their herbs and spices. I want to learn how to maximise the benefits of every ingredient. Especially the oils which are complex and need to be treated accordingly. I have the problem that some ladies mix organic and herbal treatments which are both very strong but don’t necessarily complement one another. I then decided to focus on using Social Media to inform clients and prospective clients about the safest treatments to use. I feel that I have to find out about ach and every ingredient and brand in order to know if I can support it and inform my clients about it. Us ladies in The Middle East suffer greatly from the elements. What would you recommend from your line to treat this? I noticed that most ladies have hand creams in their bags and suffer from dehydration - whether that be skin or hair it is evident in a big way throughout The Middle East. I decided that my focus must be to replenish and therefore so many of my products are infused with Shea Butter - I’m obsessed about its hydrating properties. In addition I push our clients to use protection such as sun block or products which coat and protect. Educating our clients and providing informative advice is very important to counter the effects of the sun as well as providing the ultimate treatment. We look after our clients throughout the whole process and recommend a series of treatments and products which will both sustain and maintain said benefits. 40

fact magazine

What plans do you have for the next five years? What I hope is that I can create an oasis where we are free from mobile technology and social media and encourage clients to read books and magazines rather than looking at their phones throughout the process. We need the ladies to be with us and to enjoy the moment as opposed to succumbing to distractions. They need to detox from the pressures of the modern world. No children, no social media just relaxation and indulging yourselves. People are also asking for new products and additions to the ranges and therefore I want to bring more lines for the customers. We will also be rolling out the lines to other therapists and salons and so we have great expectations for what the next few years might bring.

fact magazine

43

• EXCLUSIVE INTERVIEW You decided on the Kempinski Residences & Suites as your chosen property to house the venue. What sealed the deal for you to go with this 5-star city hotel? I have worked with Kempinski before and enjoy working with the company a lot – they are extremely professional and always deliver incredible results. I also felt the location was perfect for a Mexican restaurant Describe for us what Latin hospitality means to you – why is Mexican food synonymous with warm, inviting gatherings? Growing up, my grandmother would serve huge feasts – pretty much everything revolved around food. She would sit at the head of the table surrounded by about fifteen family members, and everything was served family-style and was passed & shared. I wanted to emulate that same experience with every guest that dines in my restaurants. Latin culture is all about using food as a gathering or a way to bring people together – an experience that is meant to be shared & savored. Food should be comforting and bring us back to our roots. What inspires you to keep cooking after so many years in the industry? The thrill of teaching budding chefs – they are the future! I am also very lucky to be part of an industry that is ever changing and this evolution keeps me on my toes. Never a dull moment. We’re excited to have MAYA here in Doha. What made you choose the Qatari capital to open the venue here? I have opened a few restaurants in Doha, and I really enjoy the city. I like to expand business in communities that I feel have embraced my restaurants and my vision – and Doha is certainly one of those communities. What can diners expect to taste, enjoy and experience when visiting MAYA – what are some of the signature dishes and drinks? Maya’s menu showcases my take on traditional Mexican recipes using high quality ingredients. Appetizers include my traditional guacamole and a Tuna Guacamole made with fresh tuna tartare and serrano chili, alongside seafood and vegetable ceviches. Signature dishes will include Carne Asada, Salmon en Mole Negro and Chamorro de Cordero – a braised lamb shank with adobo sauce, pickled red onions and coriander leaves. MAYA is described as “Mexican dining with an innovative and contemporary twist” – how has Mexican cuisine evolved alongside the growth of the restaurant industry – do you have to change things to suit certain markets and palates? My motto is “Old Ways, New Hands,” describing my cooking style which combines authentic Latin ingredients and flavors modern cooking techniques to create an unexpected and exciting Latin dining experience. I am constantly adapting those new techniques and flavors based on the city that I am opening a restaurant in and the constantly evolving culinary trends. I always want to keep people coming back!. Its also important to note that Mexican Cuisine has evolved from being mostly a casual market cuisine to a cuisine that embodies all the ingredients of a cuisine that is modern and taking the world by storm. 44

fact magazine

What’s the greatest honour or compliment you’ve received as a chef? My James Beard Nomination; but the most important compliment is all the people that keep coming back to my restaurants to see my work. You’re a busy man – television cook shows, running a 50-restaurant strong empire and opening new venues too – do you still enjoy the grind? I am all about adrenaline – so this profession suits me well. After opening over 50 restaurants, I am trying to cut back and spend more time with my family in the upcoming years. I’d also like to work with my children to someday take over the business – my daughter is studying Hospitality at cornelll univerity and my son will be enrolling at the Culinary Institute of America, so I am very excited to see them grow in this industry. As a world-famous chef, what matters more – taste or presentation? Both! But if I had to pick, it’d be taste. Taste is what people remember for years after a meal – and that’s a memory I want to give all my guests when they visit my restaurants. Share with us your tips for preparing the perfect tortilla… Fresh masa and Using a cast iron comal. Do you have any quick advice for young budding chefs? You’ll struggle in this business without passion. It’s essential to your success in this industry. TV has really glamourised the Chef profession lately – so my advice would be to understand that there’s a lot of moving parts and a rough daily grind that’s not shown on television. I think one should work from the bottom up in the industry to really understand all the moving parts and what it takes to be a Chef. ✤

• HOSPITALITY Q&A What have been your first impressions of Oman and its hospitality market? My first impression has been incredible. Very positive. Oman is amongst the most beautiful countries I have ever lived in and I am very excited about it. When it comes to the hospitality market, Oman is going in the right direction at the right pace. Very strong infrastructure with a new airport hub and a great country to visit for any purpose - cultural, leisure, MICE, corporate, etc. Both the Grand Millennium Muscat & Millennium Executive Apartments are setting the benchmark for luxury accommodation choices in Oman’s capital. What’s your vision for both during your management? Our aim at the two properties is to provide the ultimate genuine service to our guests and to create a strong working relationship with our employees, guests, suppliers and local association. Being the General Manager of two properties is a huge role. Tell us more about your expertise and lessons learned over the years that have helped you prepare for this job? I have worked in the major hotel divisions (room division and the F&B division) as a result I have detailed knowledge of the full hotel operation. I have had the pleasure to work for very exciting hotels in many countries in the world, for several companies and in many positions. 16 hotels in nine different countries for nine different hotel chains. This experience has given me the right amount of knowledge and mental flexibility to be prepared for this job In properties of this high calibre where not much really needs changing, how do you keep yourself challenged and continuously ahead in the hospitality game? In reality, our business is in continuous development and we have to be dynamic and be ready for changes. Adjusting and improving ourselves is the only way to develop and to perform better and keep up with the competition.

HOSPITALITY Q&A •

Who would you say is the 2019 clientele of the Millennium brand– describe the person who walks in through the hotel doors… A vibrant person who wants to enjoy a great product (spacious guest rooms, great food outlets, SPA, Tennis Court, among the largest ballroom facilities, only 5-star hotel attached to a mall and the new impressive apartments, duplex and villa with private pool) in the perfect location in Muscat and who wants to pay the correct price for his/her stay. The responsibilities of General Manager could get overwhelming at times. How do you manage your time, expectations and the need for attention to detail? I have been working in this business for the last 30 years and I have started my career back in Italy as kitchen porter in one hotel, close to my parents home during the summer school vacation and, ever since, I have been working in this business and sometimes lived and worked in the same hotel for some years. I spend many hours of my working day in the operations to observe and see what we can do to improve our performance and improve our services. Tell us some of your goals with Millennium – things you want to make a mark with over the next year… To position these great properties in the market and to let everyone know our hotel facilities and USPs. This is our goal. We want to show to everyone our beautiful home away from home to as many people as possible. Are you the type of GM who does things from his office, or is your working style more interactive where you walk around the hotel often? I am a very hands on manager therefore I enjoy to be in the operations and meet and greet our employees and guests, however I spend several hours at the office where I cover all the administration/ meetings to work on our day to day operation and see how we can improve our services to our guests. We have so many tools to understand our guests/ employees and by observing all this data we are able to come up with much more feasible actions plans. What’s your approach to everyday motivation for your staff – how do you make sure that everyone’s on the same page, everyday? The employees are the most important assets in our business and I love to spend as much time as possible with them. It gives me the pleasure to share with them my experience and vision of this exciting industry but at the same time I like to listen to their point of view and ideas. Millennium hotel and resorts is investing a conspicuous amount of money for the development of each employee and our commitment is to groom as many employees as possible into future leaders of this industry Sell the Millennium hotels in Muscat, in one sentence… More than meets the eye.

ICARUS FALLS By Zayn

After blessing us with some breathtaking and catchy singles throughout 2018, Zayn Malik has finally released his second studio album. With Timbaland as one of its producers, Zayn’s latest release is a collection of the singer’s most raw and vulnerable work yet. Putting his intoxicating vocals at centre stage, Entertainer is punctuated by laidback synths and a minimalist, plaintive tone. The mid-tempo ballad is definitely one of Zayn’s best works yet and our new favourite! Coming a long way since his One Direction days, Zayn has truly grown and evolved as a singer. Let Me, a pure and smooth R&B track designed to tug on your heartstrings will make you feel all warm and fuzzy. Matching up gentle guitar chords with a subtle baseline and persistent synths, the song definitely displays the singer’s growth as a solo star. With the release of back-to-back chart topping hits, this has definitely been a big year in music for Zayn Malik. It’s no wonder that Icarus Falls is a mammoth record of 27 songs that highlight every single thought his fans have had in the two years and nine months since his debut release – we didn’t ask for this much love, but we’ll take it.

taff at InterContinental Doha The City are consummately professional, highly trained and offer an immediate and warm welcome upon arrival. The rooms are clean, bright and modern with stunning views of the city centre and from my room on the 30th floor, I could see as far as the sea. With the lifts atrium in the middle of the floor, the restaurant wraps around the entirety of the floor and if you walk around for long enough you will have walked around in a full

There was a whole-cooked hammour and a whole-cooked, herb-crusted salmon which fell off the bone in flakes. Having filled my boots, I was fortunate that I didn’t have far to go home but just a ride in the lift up 30 floors fast. Whilst The Square is the all-day dining restaurant, this is not where I ate breakfast. I went for an alternative option which was the Al Jalsa Garden Lounge located just off the lobby in the cute courtyard that serves as a late night Arabic garden and shisha venue. The genius of the InterContinental property

is to know how to make great use of space and the al fresco breakfast option with a smaller but better outdoor buffet providing a nice and chilled start to the day. The 46th floor is where the gym and pool are and I spent my Friday morning there. The gym is very spacious and looks out at stunning views of Doha. You can see as far as The Pearl in one direction and across West Bay’s skyscrapers in another direction. It’s a very pleasant space. The pool is on the same floor and manages to nail an indoor vibe but in fact is outdoors by virtue of slats in the roof. This lets in the fresh air and the warmth and glow of the midday rays. I enjoyed lying on a lounger and taking a cool dip in the pool that looks out over a great height. fact magazine

STAYCATION SPOTLIGHT •

Brunch is offered every Friday in The Square and I headed down to check it out. There are mountains of food of numerous varieties and from several regions. What stood out was the family-friendly nature of the brunch and how inclusive it felt. There were kids play pens for the young ones to have somewhere to enjoy and make some noise. The number of family groups was a noticeable feature so it’s an ideal brunch for larger groups and family functions. If a lazy day, enjoying a spa treatment and lounging by the pool is more your thing and you want to avoid the chaos of brunch, there is always a chance to indulge in the evening. We started our evening at la hora lorca, or happy hour, in the recently re-luanched sky bar called La Vista 55. This felt like a cool and glitzy way to start the night and then we went downstairs to Prime restaurant to dine. It’s a spectacularly good steak restaurant with a simple but sensational menu that cannot fail to delight. Service is very personalised and the food was exceptional. The shortcooked spare ribs and tenderloin waygu beef steak there still live long in the mind for how tasty they were. InterContinental Doha The City is a first rate city hotel and still feels very new. The rooms are modern and contemporary. The bathrooms are notably spacious and feel lush and luxurious. The views are very impressive and little touches add to the whole thing like the coffee making machine with high end coffee capsules that you can insert into it. That is one of many examples of things you get in this hotel – personalised touches – that you don’t get everywhere else. I wished I could have stayed longer because I really was starting to feel at home there, living the high life! ✤

I

f I told you we were going on vacation to Taiwan, what would be the first thing that runs through your mind? After all, Taiwan is not synonymous with your typical holiday destination. In reality, however, it’s everything you could want from a break in Asia plus a whole lot MORE! While Taiwan is the geographical moniker for the country, the official name is the Republic of

fact magazine

China (ROC); it’s like China’s younger, hotter sister! A bite sized version of its surrounding neighbours with rich historical influences from China and Japan. With a host of metropolitan cities, breathtaking mountain vistas, traditional temples, hot spring resorts and buzzing night markets; there really is something for every type of traveller to enjoy. Here are my recommendations for all your travel wants and needs…

GLOBETROTTER •

THE NATURE LOVER Taroko Gorge Taiwan is a geologically active island, with Taroko Gorge being one of the most magnificent examples of a tempestuous mother nature at work! Over the last few million years, the Liwu River has cut through metamorphic rock creating a spectacular canyon accessible via safe, man made walkways. The Shakadang Trail snakes along the gorge with a gentle ascent, allowing breathtaking views of marble cliffs, tropical vegetation and the crystal clear river below. The entire trail is around 4km, taking roughly two hours round trip and passing through a Truku aboriginal village where you’ll have opportunity to pick up a souvenir. Qingshui Cliff En route to Taroko Gorge, take a quick pit stop at the spectacular Qingshui Cliff. This area has been designated as one of the Eight Wonders of Taiwan - so you know it’s pretty special! Take a leisurely stroll up to the observation deck, take your time to enjoy awe-inspiring views of the surrounding mountains and allow the fresh air to clear your mind; the best bit is yet to come! The anticipation grows as you approach the Qingshui Cliff observation deck, the walk is worth it; the vistas can only be described as monumental! The contrasting colours of dense tropical vegetation clinging to the metamorphic rock is reflected along the seashore in tones of blue and green. Needless to say the photo opportunities here are EPIC! The Promised Land Resort Escape to The Promised Land, a Mediterranean-style resort nestled within the unspoiled beauty of Hualien. The layout of the resort has been structured around a novel 2.2km freshwater lagoon, along which each guest room has a balcony view. The lagoon is not just for show, visitors and guests can hitch a ride to different parts of the resort via electric boat and enjoy silently gliding along under uniquely designed bridges surrounded by lush greenery, waterfalls and local wildlife. The resort’s activity programme has a host of traditional pastimes to keep you engaged including; aboriginal boat rafting tour, nature walking tours and multiple culinary classes.

THE CITY SLICKER Taipei 101 This impressive landmark is impossible to miss, towering above the city like a giant bamboo stalk! At 509m-high, Taipei 101 is one of the top 10 tallest buildings in the world. Take a ride in the high speed elevator up to the 89th floor where you can enjoy panoramic, unobstructed views of the city in all directions. Venture up to the outdoor observation deck to experience the al fresco thrill of 392m above the metropolis below. This outdoor observation deck is actually the third highest of its kind in the world, after Burj Khalifa and Canton Tower! Taipei 101 is also known as one of the city’s swankiest malls, with five floors of high-end retail indulgence. Ximending If you’re feeling more high-street than high-end, head over to the Ximending shopping district. Founded during the Japanese colonisation, this funky mecca for youth culture is known as the Harajuku of Taipei; it’s basically where all the cool kids go! It’s one of the capital’s most popular tourist destinations, renowned for its unique variety of clothing boutiques, restaurants, bars and clubs. Visit early evening to fully enjoy the buzzing atmosphere, colourful neon signs and street performers.

THE HISTORIAN The National Palace Museum Unleash your inner Indiana Jones at The National Palace Museum and explore an incredible selection of the finest Chinese art and artifacts. It’s a miracle to think that some of the most delicate porcelain, calligraphy and paintings made it to Taiwan from mainland China after surviving the ousting of the last Chinese emperor, an invasion by the Japanese and a cultural revolution! One of the most popular attractions is a tiny handcarved cabbage, specifically ‘bok choy’! It doesn't sound that exciting and it’s a little underwhelming, but props to the unknown sculptor - it took an incredible amount of skill to carve a tiny bok choy from one piece of jadeite, plus the story behind it has a little romance! Historians say that it was probably a gift for the emperor’s new wife symbolising purity and fertility. If using all that brain power has worked up an appetite there are some excellent choices for lunch; try Silks Palace for traditional Chinese cuisine with a modern touch and superb value for money. Liberty Square & Chiang Kai-Shek Memorial Hall As you enter Liberty Square, the first thing that hits you is the magnitude of the Chiang Kai-Shek Memorial Hall. Inside sits a gigantic statue of the man himself watched over by unflinching sentinels. One of the highlights of our visit was watching the changing of the guards, which happens on the hour, from 9am to 5pm. The former political and military leader of Taiwan, Chiang Kai-shek has a dedicated memorial that houses a museum documenting his life and career, offering a glimpse into the life of Taiwan’s longest serving leader. Mazu Temple There are a whopping 15,000 official temples in Taiwan, each of them is not only a local centre of faith but a living museum of folk art whose collections include exquisite stone carvings, colourful paintings and elaborate wood decorations. The Lugang Mazu Temple is an excellent example of this with some of the most exceptional artwork created by renowned masters. Dedicated to Chinese sea goddess Mazu, the temple is a national historic landmark, standing the test of time for over four hundred years! Visit during the daytime to observe worshippers peacefully going about their mantras and mudras amongst an aromatic haze of incense.

THE FOODIE Jiufen Old Street Tip #1: come hungry! Jiufen is known for its network of narrow alleyways, packed with teahouses, street food vendors and souvenir shops. The atmosphere is alive with droves of people politely shuffling up and down the crowded paths, dipping in and out of an eclectic variety of shops. It’s a sensory overload with smells, sights and sounds coming from all directions; most eateries showcase everything from food prep to cooking at the shop front, enticing passers by with curiosity and wafts of delicious fare. One of the most iconic Taiwanese treats that you’ll encounter are Tea Eggs. They taste a lot better than they look (picture partly cracked eggs in simmering brown water). The eggs are parboiled in strong tea and Chinese spices, giving the usually white egg a brown-marbled finish and unusual sweet and savoury taste. Feeling adventurous? How about snacking on some snails - not your regular garden variety - these slimey little suckers are as big as your fist! Wash it all down with your choice of savoury oolong tea or kitchy sweet bubble tea. Xing Yuan Tea Farm A true foodie not only loves the delight of eating but also appreciates the finer details of cultivation, food origin, and gastronomy. There are literally hundreds of tea farms in Taiwan, one of the best being the Xing Yuan Tea Farm in Yilan County. Enjoy harvesting, dehydrating, rolling and drying your very own Oolong tea. While your hand-picked leaves are crisping up in the industrial dryer, put your feet up and feast on a teainspired lunch. Lastly, learn how to make smooth homemade matcha ice cream in under 10 minutes! fact magazine

THE EXPLORER Sun Moon Lake Imagine calm blue water, tropical trees, dense green undergrowth and a backdrop of interminable mountains; Sun Moon Lake resembles the perfect postcard picture. Take a short boat ride to Syuenguang Harbour where you can enjoy scenic trails beside the lake, and venture up to a higher vantage point for stunning photo opportunities. For the best views you’ll need to hop back on a boat and head to the Sun Moon Lake ‘Ropeway’ - this scenic gondola cable car ride glides smoothly over the treetops allowing for magnificent aerial views of Sun Moon Lake and the surrounding forest. Formosa Aboriginal Culture Village & Theme Park Bump up your daily steps exploring the park, experience a rush of adrenaline on one of the many park rides and enjoy some cultural displays and colourful Aboriginal dance performances; there is something for everyone to enjoy at this diverse theme park. The grounds of the park have been landscaped beautifully, and, if you’re lucky enough to visit during the Sakura (cherry blossom) season between January and March, you’ll be in for a treat! Shifen Sky Lantern The age-old tradition of releasing lanterns into the sky was once used as a signaling system before modern day communications; today sky lanterns are used in festivities all over the world. Each year, between February and March, Taiwan celebrates this deep-rooted folk culture during the prestigious Taiwan Lantern Festival. Visitors are in for a sensory treat with high-tech lantern displays, traditional Aboriginal dance performances, music and art. If you want to experience this historic custom first hand, we recommend you head up to Shifen Old Street, located in Pingxi District of New Taipei. This is the only area of Taiwan where sky lanterns are allowed to be released due to its sparse population and high altitude. This small town has become a magnet for locals and tourists with its network of alleys around one of the old rail tracks lined with sky lantern sellers, souvenir shops and eateries. Pick up your very own sky lantern for about 20 dirhams, paint on a personalised message, wish or prayer and the vendor will help you to release it into the sky! ✤

#GOTTERRITORY IT’S NOT EVERYDAY THAT YOU CAN CHANNEL YOUR INNER KHALEESI, BUT THAT’S EXACTLY WHAT FACT’S JAYNE GREEN DID ON HER LATEST VISIT TO NORTHERN IRELAND OFFERING UP A UNIQUE BEHIND-THESCENES LOOK AT THE BELOVED SEVEN KINGDOMS OF WESTEROS.

S

et to grace television screens across the world early next year, the award-winning television series, Game of Thrones, will return for its eighth and final season in April 2019. As viewers await the show’s highly anticipated arrival, there’s one way fans can beat their Game of Thrones’ blues between then and now. THIS. Winter isn't coming yet, but your Game of Thrones ‘fix’ could be as Northern Ireland offers visitors an unparallelled immersive experience. As we met our tour guide we couldn’t contain our excitement when we drove into Winterfell, located at Castle Ward, Down as the theme tune pulsated in our heads (as if it ever isn’t!). Here, we practiced our archery in the same spot as Jon Snow, modelled some authentic Westeros attire

and took that all important Instagram photo in The Iron Throne. You can even feast on a lavish medieval banquet inspired by the show. We’d already filled our boots with Irish pastries en route, y’see. Northern Ireland beckons fair maidens and fine knights to take a trip down the Kingsroad, through the country that houses more of the Seven Kingdoms than any other location in the world. Fans can get a real and first-hand feel for the forests, cliffs, castles and bays upon which their beloved characters have strode. The lush greens and azure waters of the

coast of Antrim. However a highlight of the location would have to be The Dark Hedges, fringing the famous Kingsroad itself, which has been used as passage for many a Stark in the series. Prior to exploring, guests can indulge in a Games of Thrones® themed tea fit for a Karl and Khaleesi, and can come back to yet another themed banquet to feast upon after a thrilling day of sightseeing. TOP TIP - Go at dusk for the optimal “WOW!” photograph. Winterfell at Castle Ward, Down Can you really visit Northern Ireland and not visit the legendary home of the mighty Starks, Winterfell, … Erm? No! The majestic location exudes a sense of the pride of the North, as much of the surrounding scenery is seen over a number of episodes – including when Arya hones her archery skills, or when Catelyn Stark oversees the ‘going ons’ of her family. Visitors to Castle Ward can don authentic Westerosean apparel (trust me you look and feel awesome), tuck into themed banquets and even meet two of the fearsome direwolves. The secret shadow in the Stormlands The Cushendun Caves are over 400 million years old. Found along the Antrim coastline, near the cosy village of Cushendun, they look out over the stony beach and the turbulent sea. In Westeros, these caves are the site of a dark crime. This is where Melisandre summons her shadowy demon beneath Renly's Camp, in order to murder Stannis' brother in the name of the Lord of Light.

The Haunted Forest at Tollymore Forest Park, Down With Winter finally upon the great kingdoms, bringing with it the dreaded arrival of the White Walkers, guests can be taken back to the first sighting of the terrifying creatures at Tollymore Forest Park in Down, commonly known as the Haunted Forest. Hikes through the forest park can be enjoyed alongside a quick picnic amidst the rich greenery, with an added option to try mountaineering and canoeing, courtesy of the Tollymore National Outdoor Centre. Dothraki Grasslands at Binevenagh, Londonderry Travellers can keep their eyes peeled for a glimpse of Daenerys Targareon’s majestic dragons, as they take on the scenic walks to the summit of Binevenagh in Londonderry. The mountain, formed over 60 million years ago from molten lava, today offers picturesque views that stretch across expanses of plains, creating the perfect horizon across which the ‘Mother of Dragons’ rode her ferocious Drogon. fact magazine

customised approach when getting creative, ProTune will give you freedom to adjust things like exposure compensation, white balance, ISO range, sharpness and so on. • CULINARY SPOTLIGHT

LEGENDARY LEBANESE FARE Al Sultan Brahim will already be a well-known brand to foodies who’ve travelled to Lebanon itself. There are three branches of the restaurant there and FACT’s Craig Ferriman has also been to one of them twice and loved the experience. So, it’s no surprise that he revelled at the chance to visit Qatar’s popular branch at The St. Regis Doha…

Y

ou can drive straight up to Al Sultan Brahim rather than enter it via a hotel main entrance. A warm welcome is extended by staff on arrival, many of whom are Lebanese and all are charming. Like its counterpart on the downtown waterfront in Beirut, there is copious seating both indoors and outdoors. At this time of year, it is rather sublime to sit outdoors and feel a little lapping of the sea breeze waft up from the beach nearby. I sat indoors by the calming fish tanks which was in line with the fish theme and made me feel very at ease indeed. The menu is rather extensive and there are no real rules from what I could tell. Multiple combinations and the chance to eat as much or as little as you like. The table seemed to be constantly full with food and that seemed to be about the right way to be doing things. This is a seafood restaurant par-excellence It’s all about the fish. I started with the bizri salad purely the waiter’s recommendation. The bizri bit is fried white bait fish and it comes with arugula, lettuce with tahini dressing and yummy pomegranate. The fattoush was as good as you’ll get anywhere. There are so many different kinds of speciality hummus to choose from that it was very hard to know what to go for. The staff were incredible though and so knowledgeable and passionate about their food that I let them make suggestions. When the waiter asked me if I can handle something with a bit of a kick to it, he brought out the hommos akary which has diced pickles and tomatoes, chopped parsley, pine seeds and olive oil. It was superb. If I remember the story correctly, the chef devised this after he opened another Al Sultan Brahim venue in Jounieh. The seemingly, slightly more traditional though very much unique, hommos Beiruti which has mashed chickpeas, diced parsley and tomatoes. 82

There is a giant room just off from the main dining room which is full of recently caught fish all lined up in a row literally staring at you in the face! A lot of the fish was caught locally off Qatar’s shores so there was hamour and red snapper but I chose a large sea bass. They offer to do a few things with them but basically speaking, you choose it and they’ll gut it and grill it for you in garlic and coriander and bring it out to you on a plate. It was straightforward yet spellbinding. Steamed Mediterranean vegetables came with it. The perfect combination. I also tried their delicious scallops and the juicy lobster which is surely the prize to behold. The calamari was good and worthy of a mention too. 84

The menu is fleshed out with slightly more experimental items that are most certainly not Lebanese like fish teriyaki and Norwegian mussels and I did not have the chance to try those, thanks to a full and satisfying belly. For the most part, this is a quintessentially Lebanese masterpiece with flavours that leave a mouth-watering finish and service that certainly pleases at high standards. ✤

EASY-BREEZY BRUNCHIN’

There have been some changes to the Friday brunch at Trader Vic’s at the Hilton Doha. It’s had something of on overhaul. FACT’s Craig Ferriman returned to a city classic for a feast that well and truly impressed… 86

I

went to the Trader Vic’s Friday Brunch a couple of years ago and although I had nothing against it, it struggled to punch above its weight in a crowded market where everywhere else is trying to be different. Trader Vic’s has reinvested its efforts in one crucial area in particular - the food - and the dividends were there for me to see. The Mai Brunch has a set menu and we were presented with crispy chicken and shrimp dumpling on arrival in a chiLli lime sauce. There were lots of groups massing around big tables so this is a great welcome appetiser along with a Tai beverage while you’re waiting for your fellow brunchers to pitch up. A fresh caesar salad comes next with some parmesan shavings – a beautifully light way to begin. Then it’s the chef’s sushi. Previously, the sushi was very poor and it was all fried and crunchy and cold as memory serves but not any more! The sushi game has been upped and a greater variety of rolls are served on a platter. there are a couple of fried, crunchy ones still as we all love those but there are many others too and they were all freshly prepared in the kitchen moments before. Little dishes of hot goodness continue to fill the table and rich conversation and fruity drinks were punctuated by meltin-the-mouth jalapeno cheese balls and the best of the first round for all at my table was the beef cho cho – a Trader Vic’s classic that gets better with every bite. A mini fire pot over what looked like a blue jelly sits in the middle of the table. This is the called “the beef flame” and the idea is that we had to swivel our skewers over it to heat up the beef for the perfect taste. Now that really was something to write home about. A little later, the attentive waiters bring out another round of small sharing plates from what they call the mains selection. There is a beef espetada served with a roasted herb potato and chimichurri sauce. Really good Latin flavours there and a winner with all. Seafood lovers can tuck into the Balinese style salmon which was very good and vegetarians can get some of the Thai vegetable green curry on their plate but be warned it is very hot and spicy – a real palate awakening. It’s a great sinus cleanser and a healthy item to boot as well. This is not a brunch that is high in carbs and protein and lacking in anything healthy. And frankly, it didn’t try to fill you up so that you had to roll out the door in pain. I thought that they got the quantity and portion controls spot on and staff were amenable to bring us more of anything that we wanted. It worked really well. Strangely, perhaps, because usually I find chicken a little boring and not worth mentioning when I eat out, the huli huli chicken was a huge hit. The dish is a Hawaiian one where we were presented with a half marinated boneless chicken with ginger sweet potatoes, French beans and a pineapple macadamia relish. Exquisite! 88

FOODIE CORNER •

I’m known for saying that buffet brunches can be tricky because you end up doing lots of walking around, the conversations at the table get perpetually interrupted and a venue struggles to keep food hot. The fact that Trader Vic’s has waiter service to the table is unquestionably a huge plus point. With the forgivable expectation of the chocolate fountain which you do have to visit, everything arrives at your table including their creative and well executed dessert which is a coconut pineapple cheesecake. The recently refurbished outdoor terrace has been designed to match its name - a Tahitian Village. There is the option to have the Mai brunch indoors which is the food and beverages package or the Tai brunch which is beverages only outdoors. When I popped out into the late afternoon sun, I sat in the Tahitian Village and enjoyed a Reggae duo perform classics as well as requests on demand and the vibe was great. A breeze blows off the sea, the music keeps everyone relaxed and in the right spirit and the real danger is that you find it difficult to leave. Which is ok, because the venue stays open throughout the evening with a happy hour promotion from 5pm. Bonus! Trader Vic’s has definitely made some changes and they are changes for the better. ✤

GRILL GAME, STRONG When you think of barbeque, you think of summer. But this is Doha and such things outdoors can be tricky as you sweat buckets with the humidity of the Gulf’s soaring summer temperatures. Instead, it’s actually in the wintertime that we can all come out to play. FACT’s Craig Ferriman visits the new BBQ Nights at Grand Hyatt Doha Hotel & Villas…

T

he Santa Monica Breakfast Club has fast become an enduring hit at the Grand Hyatt Doha Hotel & Villas with high praise heaped on it for its breakfast, creative menu of burgers, eggs and a brilliant brunch to boot. Thursday nights now have something else for you to get excited about and that is the all-new barbeque offering. The pretty and colourful outdoor seating area is a place you couldn’t dream of spending a couple of hours in during the summer but it proved an ideal setting to while away an evening in these cooler months at the end of a long hard week. Informality was the name of the game and everybody was welcome as evidenced from the families that I saw there as well as couples and business groups keen to escape the office at the end of the working day. Buffet stands surround the patio and there are live 90

Then onto the meats of which there was quality and variety being turned over thick and fast. Beef sausages glistened on the grill oozing in the juice of grilled onions and tomatoes. Burgers of various kinds were flipped aplenty and sauces of all denominations lay ready at the side for squeezing into ready made cut up bread buns. It’s worth saying that many of the sauces are homemade and definitely palate pleasing. The chicken burger I tried was juicy and delicious but then that will come as no surprise if you have been to the Santa Monica Breakfast Club previously. They know how to cook a mean burger. We also spotted some tandoori chicken pieces in a deep pan simmering away and next to that, some spiced Arabic chicken. There were chicken malai skewers too and more lying ready in tin foil to be given the big barbeque treatment – ensuring that food was fact magazine

• THEMED NIGHTS super fresh. Other interesting offerings that caught our attention included the giant roasted chicken with all the trimmings of a traditional roast. We’re talking carrots and Brussels sprouts and the like – a rather welcomed and warm feature in the desert mid-winter. There was also a glass cabinet of desserts that were hard to say no to. Items from the usual a-la-carte menu can still be chosen alongside the barbeque delights. Chilled vibes reverberated around the venue thanks to live music performed by a duo of musicians on guitar and vocals. I was totally able to relax and unwind after a long week and start feeling those weekend vibes with a good feed and a decent choice of beverages. The Santa Monica Breakfast Club gets it right again. ✤

I saw a very delicious shawarma where some chicken was shaved off in fresh bread and was perhaps a permissible guilty pleasure. Lovely! In the afternoon, I went back up to Bodylines and was taken to one of the brand new treatment rooms. My next treat was called a Take a Day Off Gentle Purifying Facial Treatment. It lasted an hour and my therapist opened all my pores, cleansed them and then closed them all up again. A scrub was applied across my face and the finale to it all was having my face wrapped up in fresh cucumbers to seal up all the pores. The old ways are still the best – I emerged with a smooth, plum and noticeably fresher-looking complexion. I then went to another treatment room for a one-hour French Vanilla Dream Massage. I could have chosen other oils but the smell of pure vanilla was glorious and I was happy with the choice I’d made. The masseur can give either a deep tissue massage getting stuck into all the muscles or, what I went for, which was a very gentle and relaxing massage. It was the perfect antidote after my morning in the gym. The rest of the day was spent at the outdoor pool which is situated just outside the spa. Here are two large jacuzzis which are almost the same size as the pool. It was in the hot tub that I watched the sun set on what was a very lovely day. ✤

he seventh floor is where it all happens and so I head up there to begin my relaxing day. I’m given a key to a locker in the neat changing rooms where I could store my valuables. My day at the hotel’s popular Bodylines Fitness & Wellness Club was about looking after the body, recuperating from working too hard and taking it easy in sublime surrounds. I started my day in the gym for a health kick; assigned a Ukrainian personal trainer called Michael for a one-hour session that was not too gruelling but it did address all areas of the body through various repetitions of exercises designed to give you a head-to-toe fitness once over. The floor-toceiling windows offered ample sunlight and great views of the Corniche and surrounding skyscrapers as the hotel is nestled inside the city centre. After working up a sweat, I took a cold shower and walked a few steps to an area hidden behind a concertina where I received a Tropical Chic Spa Pedicure and Manicure. I had not experienced both treatments simultaneously before but here the cuticles of both my hands and feet were polished, scrubbed and left to glisten. It’s a very cathartic therapy, especially for someone whose job involves a lot of typing ad screen time. I had a leisurely lunch in Olive Oil which is the hotel’s international all day dining venue on the first floor. Healthy and nutritious options filled the buffet which wrapped around the restaurant. There were colourful and delicious salads,
