N

ow, we may not have much greenery to lie in and branches to hang off, but what we do have more of in the summer is free time. I love the sleepy days and laid back pace of life that ensues in the GCC through the hot months, and though the temperature outside can get way too uncomfortable for more than an hour of tanning (hats off to anyone who can do a whole day by the pool in 50°C) we’re only steps away from a/c to help cool us down. But, perhaps, the thing I enjoy most about the Doha summer is the amount of things to do indoors – many places and activities that are left undiscovered until the heat kicks in. Turn to p27 and get out those diaries because we’ve got the ultimate Summer Survival guide for everyone who’s staying in the city over the next few months. Brunches, lunches, themed nights, spa days, pool access, staycation offers and indoor entertainment – trust me when I say, there’s no need to stop having fun just because it’s too hot outside! Nando’s Ramadan Charity Drive The Holy Month of Ramadan is a special time of the year and Nando’s continued to give back to the community, as part of their charity drive in partnership with the leading social networking and community activism platform, InterNations. Nando’s generously handed out bags filled with hygiene and food products to migrant workers at one of the largest labour camps in Doha. CSR initiative Drive for Good, which is organised by Mark Thomson, Head of Doha InterNations social network and his team and community members, took place last month, and once again illustrated Nando’s commitment to caring and being socially responsible towards members of the wider society and participating actively in lending a helping hand to the underprivileged. The donation packs included caps, t-shirts, slippers, toothbrushes, toothpastes, shaving razors and soap as well as biscuits, tea bags, noodles, sugar, instant drink powder and hot and cold water dispensers. Being a brand that exemplifies humility, the packs were handed out to migrant workers by the Nando’s employees themselves. Every bit counts – thank you, Nando’s! 10

Mall of Qatar (MOQ), the soon-to-beopened premier shopping destination in Doha, organised a welcome aboard event for all major anchor retailers and future tenants. Besides setting a new standard in both mall design and entertainment, this milestone event showcased MOQ at an advanced stage of completion with a site tour that detailed the readiness to the retailers. In fact, it marked the beginning of the countdown with over 100 retailers already shop fitting, and over 200 more expected to start fit out very soon. Mr. Ahmed Al Mulla, CEO of Mall of Qatar extended a warm welcome to the gathering and talked about the uniqueness of the mall that is all set to transform the consumer experience: “The nation’s mall will be a jewel in Qatar’s National Vision 2030, a super-regional mall that will be placed on the world tourism map. The finale, Pulse a sneak peak of one of the MOQ Live shows with the sound of drum beats, rhythm, acrobatic duo straps, dance and incredible vocal pieces, left the guests with a sense of awe and excitement. SHEIKH FAISAL BIN QASSIM AL THANI MUSEUM At his farm in Al Sheehaniya, 20 km west of Doha, Sheikh Faisal bin Qassim Al Thani’s museum has a huge collection of artefacts including Qatari and Bedouin heritage, vintage cars and motorbikes, and the farm is home to Arabian oryx, gazelles, and peacocks, too. Sheikh Faisal also has a museum in Al Dafna (West Bay), designed to offer tourists a taste of Qatari, Arab and Iranian culture. Visitors are advised to contact the museum in advance, open from Sunday to Thursday 9am to 6pm.

MUSEUM OF ISLAMIC ART Designed by noted architect I M Pei, the museum building rises dramatically from the sea at the end of Doha’s Corniche. The MIA, which ranks among the world’s major cultural landmarks, presents many of the finest

TRADITIONAL BUILDINGS Qatar Museums Authority has been active in restoring many of Qatar’s old buildings. Al Wajba Castle dates back to 1893, while the houses at Al Nejada date back more than 60 years and are built from traditional materials. Also worth visiting is the Sheikh Ghanim bin Abdulrahman House, a landmark on Al Wakra beach, and the villages at Al Jumail.

MSHEIREB ENRICHMENT CENTRE The Msheireb Enrichment Centre celebrates the history of Qatar’s traditions, culture and heritage, while outlining the country’s extraordinary recent growth and vision for the future. The floating landmark also shows Msheireb Properties’ plans to regenerate the heart of Doha into a a vibrant downtown, with interactive presentations and gallery events.

JABAL AL JASSASIYA PETROGLYPHS Al Jassasiya is one of a dozen rock carving sites in Qatar; this major site, northeast of Doha, was discovered in 1974. The 874 carvings consist of rows of cup marks, rosettes, ships and fire pits of pre Islamic times. It is believed that the cup marks were used for playing ancient board games, one of which was called mancala, known in Qatar as al haloosa or al huwaila.

Masakatsu Sashie is a Japanese artist best known for his orb paintings of a fictional world, filled with futuristic war nings about human tendencies for environmental dominance and o ver-co ns um p t i o n.

he artist’s work presents an imaginary world depicting large, city-like spheres drifting above remains of a destroyed civilisation. His gigantic orbs are created out of scraps of old constructions from the Showa-period (period of enlightened peace and harmony; of radiant Japan during the time of reign of the ShĹ?wa Emperor, Hirohito, from 1926 to 1989) and pieces of mass production. Things like vending machines, pachinko parlours or fast food signs and video game components are woven into Masakatsu’s imagery in his orb paintings (creating an orb using a light source).

The work revolves around the belief that the coacervate is a universal model and basis for all systems and organisms, simple and complex. The term coacervate - from Latin “to assemble together or cluster” - is defined as a microscopic droplet of assorted organic lipid molecules held together by hydrophobic forces in a surrounding liquid. Sashie’s coacervates are often depicted as orb-shaped amalgams of manmade objects suspended over cityscapes. This exhibition features landscapes that 48

resemble landfills - comprised of towering piles of glowing televisions, vending machines, vehicles and other industrially manufactured products. The juxtaposition of the detailed subjects and the vastness of their surroundings emphasises a contrast in complexities between these concentrated small worlds and the expansiveness of the larger world around them. Through these combinations the artist intends to convey the global commonality in how functions of microscopic systems extrapolate to the greater universe. He holds a great appreciation for manmade objects. Finding beauty in the design of machines and products, even when discarded as waste, Masakatsu sees them as an extension of mankind and the natural world rather than simply artificial. In the artist’s words: “Although coacervates exist on a microscopic level, the function of assimilating surrounding matter extends into our world as well as the universe beyond. Selectively absorbing and processing our environment, whether conscious or subliminal, is part of our evolution and results in the composition of who we are, the world we live in, the systems we create and values that are prized.”

End of Residence

A

fter nine successful months, the current Artist in Residency programme at the Fire Station drew to a close on June 2 and the occasion is being celebrated with the annual end of residency exhibition at the Garage Gallery. The End of Residency exhibition is a culmination of an intensive nine-month programme, featuring works by eighteen local contemporary artists who have been working in the artist’s studios and spaces at the Fire Station since September 2015. The exhibition showcases new work and projects created by the artists during their residency period, shedding light on the development of their innovative ideas and diverse studio practices. Photographic, sculptural, and installation based artworks fill the Garage Gallery and showcase these talented artists. The exhibition also provides a unique opportunity for the resident artists to establish connections with both local and regional galleries and arts professionals, and to engage in critical dialogue and discussion with a wide public audience. Red / Red

T

urkish artist Aslı Çavuşoğlu’s installation Red / Red is currently on display at the Mathaf: Arab Museum of Modern Art Project Space. The installation comprises 17 pieces, including handmade notebooks of drawings and paintings made with red pigments from Armenia and Turkey. Red / Red (2015) explores the physicality of a colour to tell a story of coexistence and communality. Delicate drawings are made on worn papers and handmade notebooks in two red inks: Armenian red, extracted from the endangered Armenian cochineal insect, and Turkish red, now used in the national flag. As the patterns modernise from floral to geometric shapes, the resilience of each pigment as it transforms over time is also reflected. In the work, the Turkish red holds its colour

while the Armenian fades, narrating the changing physical and allegorical links to national culture, identity, and memory. Aslı studied Armenian cochineal, from its earliest extraction in the 7th century BC to its use in manuscripts, or “miniature paintings”, to document Armenian culture and life. The pigment comes from a carminic acid found in the “Ararat” or Armenian cochineal insect living in the roots of the Aeluropus littoralis plant. This plant is indigenous to the Aras (Araks) River valley, which forms the natural border between Turkey and Armenia. On the Turkish side of the river, knowledge of how to produce Armenian cochineal red has been lost since 1915, while on the Armenian side the plant and insect are threatened by extinction due to 20th century industrialisation. The work explores this pigment’s disappearance, speaking to the political and ecological histories of this region. Red / Red advocates for the protection of the delicate social and organic systems of the Aras valley – human, plant, and animal life – to support a communally protected ecosystem and shared knowledge of production that will preserve the recording of its collective past, present and future existence. What’s it about: The classic Disney film has been given a huge overhaul, seeing Tarzan return to the jungle in which he was born, at the hand of Parliament, to coerce those who live there into a peaceful union.

Everyone’s seen the 1999 Disney great, Tarzan, but it’s safe to say that although this film shares the same moniker, it’s a world of difference from the original. An action-packed storyline and a five-star cast bring this live action story to the forefront of 2016 reboots, ensuring that Disney’s oldtime classics are just as relevant and appealing to modern day cinema-goers. As well as the meaty storyline, there’s a ton of fantastic characters to sink your teeth into. Alexander with his tall, masculine form along with a brooding yet kind face makes him a perfect fit for our vine-hopping hero, whilst the beautiful Margot Robbie and her performance as the strong-willed, intelligent Jane will make you feel all the whirlwind emotions throughout. The standout performance, however, comes from Christoph Waltz in his role as Captain Rom. He’s the definition of bad guy and plays it so perfectly that you’ll have sparks of hate flying for him right from the start. Whether you’re here for the cast, the nostalgia or the beautiful cinematography, you’re sure to be blown away!

Their last album, Opposites, was a huge hit that catapulted Biffy Clyro onto a bigger music stage than ever before, and so, the band decided to take a break (naturally – it’s what we would do after all that fame and recognition), only to show up in 2016 to make a comeback with something completely different from their previous record something they insist sounds more like their earlier albums; raw and true. The first single from Ellipsis, Wolves of Winter was a sweet taste of what was to be expected. It, of course, has the raging guitar solos, but it’s also paired with beautiful vocals - something that is a common theme throughout the 14-track CD. It’s obvious that the influences have changed slightly on this album, with Hip Hop being one of the more present inspirations, almost giving this album a gritty sound. Biffy Clyro needed to do this, for both old fans and new; Ellipsis is constantly on the edge, ready to fall into the oblivion, yet teetering, remaining in that perfect limbo of chaotic calm.

After the success of her debut studio album, The New Classic, we’ve all been waiting patiently for a follow-up that would have us just as hyped about Iggy’s lyrical skills and beats. After plenty of struggles, Digital Distortion is finally here and, let’s just put it out there, Miss Azalea brought her A-game. With Team being the album’s lead single, she managed to send a powerful message, that she was back, and she didn’t need anyone’s help to smash it. This album is a lot less collab driven, something that made for a more passionate and stronger record; it still has the iconic Iggy sound, but it’s brought a lot more punch to the party, with the rap princess giving fans an insight into her much documented private life. On the other hand, it’ll also make you feel like a complete and utter bad ass whilst you’re pumping it in the car - now, that’s our kind of record!

Maya’s world is plunged into darkness when her father arranges for her to marry a King out of political convenience, something totally against her scholarly nature. However, this u-turn sees Maya going from an introverted girl, to a powerful Queen, finding her voice and pursuing her wants and desires. The inspiration for the Handel Architects-designed tower comes from the glistening Arabian Gulf and the vast desert that surrounds Abu Dhabi city. The 34-storey tower is a dramatic modern structure covered with reflective glass, which was chosen for its daytime shimmer and its nighttime luminescence. ACCOMMODATION A-GAME When we walked into the Executive Room, which was to be home for the next few nights, we were overwhelmed by the size, the practical layout and all the different drawers, cabinets and gadgets to explore! First off, this room is BIG, a lot larger and spacious than expected. It has rich, lavish décor in 56

contemporary tones and a high-tech, integrated iPad room management system (yes, you heard right!). The room is openplan, and is so thoughtfully designed that you can comfortably lay back and take a warm bath, whilst watching your favourite shows on the television, which is placed in a position that is easily viewable from the oversized tub – we tested it and it was spot on! The bathroom itself is set in fine Italian marble, featuring a private rain shower, double vanity, and luxury Roberto Cavalli amenities. There’s a sliding door partition between the bathroom and bedroom for privacy if necessary. The absolute standout, however, was the iPad in-room touch service. Now, you don’t have to be uber tech-savvy to enjoy the efficiency that it provides. Everything from drawing the curtains to dimming the lights, setting the temperature, changing the channels, and even checking out the inroom dining menu, is all cleverly available to adjust via the iPad. We were slightly skeptical about all the technology, because, usually, it means more room for glitches and problems. In this case, we were wrong!

All the functions did as they were programmed to and each control was super easy to navigate – it just made the stay more practical, comfortable and enjoyable! You’ll get all your expected amenities too, such as comfy bathrobes, slippers, a Nespresso brewing system and well-stocked mini bar, plus a hairdryer, iron and ironing board, and a spacious desk where you can catch up on work. Two other features worth mentioning are the fact that the room had lots of plug sockets (trust us, when you’ve got a mobile phone, a tablet, a charger, and a hair straightener – you need sockets!) and the high-speed internet connectivity was one of the best we’ve experienced in any hotel.

FOOD ON FLEEK With nine restaurants to choose from, you can have something new for lunch and dinner everyday! We must commend the Rosewood’s all-day dining outlet, Aqua – it has, hands down, one of the best breakfast and lunch buffets that we’ve had the pleasure of trying. Make sure you get the buttermilk pancakes at brekkie – they are to-die-for! Our biggest recommendation for food is Dai Pai Dong (mouth’s drooling just thinking about it) – it’s inspired by the street food movement with a menu that showcases interpretations of classic Chinese dishes. A FACT RECEIVED THE KEYS TO THE LATEST VERSION OF THE PORSCHE 911 991 SERIES, FROM AL BORAQ AUTOMOBILES, TO PUT IT THROUGH ITS PACES. THERE HAVE BEEN SOME SIGNIFICANT CHANGES…

t first glance, the aesthetic alterations to the new 911 are negligible. Slight tweaks have been performed on the front air scoops, and the inclusion of new automatic cooling flaps, but that’s about it. However, despite the lack of visual updates, one mustn’t think for a second it’s the same animal as the previous model. There have been three major changes to the 911 Carreras which have made a real difference in terms of performance. On the previous range, all models except for the 911 Turbos were powered by naturally-aspirated 3.4 and 3.8 litre flatsix boxer engines. Now, the entire range is turbo-charged, with the Carrera and Carrera S models boasting smaller twinturbo 3.0 litre engines. They nevertheless put out about 20hp more in both engines than that of their predecessors, with 365bhp on the Carrera and 414bhp on the Carrera S. The BIG boost however, comes in the torque, with the new models boasting an additional 60Nm each, with 450Nm on the Carrera, and 500Nm on the Carrera S! With the Sports Chrono package, this equates to a 0-100km/h time of 4.2 seconds for the Carrera, and 3.9 for the Carrera S, which makes it the first Carrera model to break the sub-four second barrier. The next major revolution on the new 911 is the introduction of rear-axle steering as an option. This technology was only previously seen on the 911 GT3, GT3 Turbo, and the mighty 918. When activated, the rear-axle steering turns the wheels a couple of degrees. At low speeds they turn in the opposite direction to the front wheels. This improves the turning circle by effectively shortening the wheelbase. At high speeds, it turns in the same direction as the front wheels to lengthen the wheelbase and to improve both traction and stability in the corners. The effect is incredible. When driving the new 911, with and without the system at track speeds, the rear-axle steering makes a massive difference. The system allows one to turn into a corner

considerably more aggressively, and to lay down the power on the exit, making for vastly quicker cornering. It’s hugely impressive. The last major change over the previous models is the introduction of the rotary ring drive mode selector, with the Sports Chrono Package. From this, one can select the ‘Normal’, ‘Sport’ and ‘Sport Plus’ settings we know from previous models. However, what it also features is the ‘Sport Response Button’. Once pushed, this button instantly adjusts the drive train for maximum acceleration for 20 seconds, for overtaking and so on. Once pushed, the car instantly shifts down, maximising the throttle response and turning it into a lairy beast for a few seconds. You can either wait 20 seconds for it to time out, or press the button again to switch it off. So there you have it – despite minimal visual updates, the new 911 is a whole new machine, and takes the iconic Porsche into new realms of technological wizardry and general driving enjoyment. With BMW’s centenary headline “The Next 100 Years” in mind, the BMW Group brought together, for the first time, the full line-up of Hommage vehicles unveiled over recent years at this year’s Concorso d’Eleganza Villa d’Este. They were joined on display by the models from the past that inspired them. The Hommage vehicles bridge the company’s past with its future in the form of exciting design studies. As well as the BMW 2002 Hommage and BMW Motorrad R 5 Hommage, the following Hommage vehicles, along with their inspirations from history, were on display: BMW Concept Coupé Milla Miglia (2006) Back in 2006 – in the days before the term “Hommage vehicles” had been coined – BMW sensed the flavour of times to come with the BMW Concept Coupé Mille Miglia, a throwback to the victorious BMW 328 Mille Miglia Touring Coupé of 1940. BMW M1 Hommage (2008) BMW Group Design presented the first in the line of Hommage vehicles – the BMW M1 Hommage – at the Concorso d’Eleganza Villa d’Este 2008 to mark the 30th birthday of the BMW M1. BMW 328 Hommage (2011) The BMW 328 Hommage was unveiled to the global public for the first time in 2011 to celebrate the 75th birthday of the legendary BMW 328 racing car. BMW 3.0 CSL Hommage (2015) For this car, the BMW Group Design team cast their minds back to the BMW 3.0 CSL, a timelessly classical, iconic BMW coupe of the 1970s. 64

The Vanquish Zagato Concept was unveiled to great acclaim at the prestigious Concorso d’Eleganza Villa d’Este in May and thanks to unprecedented customer interest, a strictly limited production run of 99 cars will be built to order at Aston Martin’s production facility in Gaydon, England. The Zagato Coupe will share a platform and mechanics with the Aston Martin Vanquish, including its 568hp V12, but everything from the interior to the exterior has been restyled by the legendary design house, which is also responsible for the iconic DB4 Zagato, widely held to be the most desirable Aston Martin ever made. fact magazine

mazon has responded to its new product and service growth with devices of its own, one of those being this, the Amazon Echo. It is a portable smart speaker which works with Amazon’s Alexis, similar to Apple’s Siri, a voice activated software that can respond a wide range of commands, and learns to recognise your voice with more efficiency the more you use it. The speaker acts as its own Wifi network, with which all of your devices can link through the device’s software. This includes phones, tablets, laptops, and your house. Yes, your house. The Echo can link up with smart houses to give you voice control over things like lighting, curtains, alarms and so on, provided you have the right systems in place. You wake it up by saying “Alexa”, and then give your voice command. You can set timers, play a range of online audio streaming services like Spotify, Pandore or TuneIn radio, listen to the news headlines, order a cab from Uber and much, much more, and the list of services grows constantly. vErdIct After using it for a while, we just grew increasingly impressed with every new thing we learned it could do. It recognises voice commands incredibly well, even from across a large room with a TV on in the background, and once you get used to using it, it seamlessly becomes part of your life without you even thinking about it. Truly awesome stuff. However, the one solitary down side we discovered was high-volume bass, which really lacks punch. It’s an area that is so easy to improve, and it is something that shouldn’t have let the speaker down. Expect premium audio-branded versions of the same technology soon.

A new mobile application for car enthusiasts was launched last month, in what is the region’s first social sharing market place combination for car lovers, bridging the gap between social media and e-commerce. Aptly named Dazzled Cars, the app brings together individual car devotees and automotive businesses in one super interactive community. Car lovers can share images and videos of their favourite cars around town and rank the best images shared in their country. Users will enjoy a broader range of services including automotive oriented events, meet ups, and be able to follow the latest car news and reviews. The app also features the option to buy and sell cars completely free of cost, with a built in messenger allowing sellers and dealers to interact. The interface is smooth and easy to use, and it’s already enjoying a decent following, so get involved.

runches are a big deal in Doha, and let’s be honest, in the entire region. I’ve always been fascinated by brunches, its concept and the atmosphere they create among expats and locals. Being highly popular in Doha, the demand for a Friday Brunch is high. Having tried exceptional places and exquisite buffets, I’ve found a gem that suits my appetite and standards. Fridays can seem empty if you haven’t got the right kind of friends, but if you’re lucky enough to have a group of them, or family, then you’re in for a treat. Oryx Rotana Doha is well known for its diverse offerings: promotions, amazing cuisine and what I enjoy best, entertainment. Their brunches are no exception. Having tried one not too long ago, the international cuisine buffet at the exquisite Jazzy Friday Brunch happening at Choices, it didn’t disappoint one bit. Not knowing what to choose, I started off with my safest selection 86

Pleasantly surprised by their freshness, it was definitely the perfect kick for my appetite. Nonetheless, this brunch offers an variety of dishes to indulge in. Keeping my options open for the next bit, I had my eye on their tasty prime rib, mashed potato, pizza and sweets. I couldn’t say no to their mocktails – which were heavenly. But if perhaps your kids are coming along and you’re a bit skeptical about whether you will enjoy this fabulous brunch, fear not. The

concept is kid-friendly with a fun corner, so they can also enjoy it too. And as for the adults? Live entertainment by music band, N2 from South Africa will do just the trick for a great Friday. Furthermore in this delicious odyssey, I really enjoyed the hotel’s al fresco area where you can eat outside with numerous cooking stations around the pool area for that extra wow factor. So whether it’s the food, the live music, or just having a great time out when it comes to a Friday Brunch, mark your calendar for next weekend and enjoy this jazzy brunch. s the city grows by the minute, culinary options are doing the same. When it comes to gastronomic heavyweights, locals and expats are simply spoilt for choice. From Greek to Latin American flavours being firm favourites, Italian restaurants are also making their mark on the scene with their undeniable presence. La Veranda restaurant being one of them holds one of the most enchanting settings in the heart of the city for a spectacular eating destination. Located at the Sheraton Grand Doha Resort & Convention Hotel, we couldn’t miss on the opportunity to try what this venue has to offer. Promising to deliver an authentic Italian experience, we quickly succumbed into the world of pastas, pizzas, tiramisus and other superb elements that join forces for a spectacular experience. With a casual atmosphere that calls for a relaxing yet delicious eating spot, the venue holds seating arrangements inside and a spectacular terrace with a backdrop of the Arabian Gulf. Of course, we opted for the tickle of the outside breeze and to take in the breathtaking view of the city’s multi-coloured skyscrapers. With a breadth of appetisers to choose from, we opted for something light, but perfectly adequate enough to give our taste buds a kick-start. Served with the right amount of ingredients, melanzane alla parmigiana was our first option, an eggplant dish with basil, tomato sauce, Parmesan and mozzarella. For our main course, we went for a heavier dish

plucked from the pasta selection. Ravioli di burrata was just as tasty as our starter, perfect for one, served with lobster ragu. After what seemed to be a neverending evening of delicious dishes, the venue seemed to get busy with the perfect amount of expats and locals. The weather being the perfect pitch, many gathered outside to also appreciate what the magical place has to offer. And as our evening progressed, our culinary journey reached a fitting climax: pizza. Our choice of pizza involved fresh bresaola and rucola, supreme for those who wish to share and just delight in rich flavours. And yet, when we thought we had already had a proper Italian experience, dessert made us think twice. We were served with a mouth-watering tiramisu tradizionale that sealed our evening with a golden touch. GO: La Veranda is open from 12pm until 3pm and for dining from 7pm until 11.30pm. One of Australia’s most influential and admired culinary wizards, Greg Malouf, fuses traditional Lebanese cuisine with various techniques and tastes from around the globe. FACT sat down with the Michelin-starred chef at the W Doha Hotel and Residences, where the renowned fod master was collaborating during Ramadan. Here’s everything you need-to-know… Q. Hi Greg! When did you realise you wanted to dedicate your life to the culinary arts? A. At a very early age. It was because of my massive appetite. I was always hungry. So it started with appetite and progressed from there. Q. Who inspired you to start cooking? A. It was family cooking which started me off. My father was good in the kitchen. He favoured Arabic dishes, but would be experimental in his approach. He would often go to the markets to 94

buy all sorts of produce he had never seen before to include in his creations. My mother was more into traditional Lebanese food. Q. Are there any chefs out there today who inspire you? A. The people who inspire me are more historians in nature. Claudia Roden and Paula Wolfert write books on the Middle East and have dedicated their lives to their backgrounds and philosophies on Arabic foods, which to me, is fascinating. Q. Do you remember the f irst time you were under pressure to prepare a perfect dish? A. I don’t know if there is such a thing as a perfect dish. I do however feel under pressure whenever I prepare something for my family. They are both my biggest fans and critics.

Q. What is the funniest incident you have experienced in the kitchen? A. As a kid in training, I was asked to cut up two boxes of courgettes and I cut up two boxes of cucumbers instead. Needless to say, my instructor was not impressed. Q. How much has your Lebanese heritage influenced your cooking style? A. Too much. I understand other cuisines as I have travelled and studied them in their prospective countries and I am influenced by them, but Lebanese food is what I do. It’s not all I know, but it’s also what I love to do. Q. You’ve travelled all over the globe. What are your favourite destinations? A. I am clearly biased due to my heritage, but Beirut stands out. I love Hong Kong and Tokyo too. I really enjoyed my time in England. The

food culture in Melbourne is also unbelievable. As a chef in training, both France and Italy were amazing. Q. Please Share with us a little about your time with the W Doha Hotel… A. On the whole I really don’t enjoy working in, or with hotels. I’m not a hotel chef and they don’t operate the same way I do. However, I have to say that the W Hotel has been extraordinary. I have been here for two weeks and it has been a surprisingly beautiful experience. I was asked to

create five dishes for Ramadan. They gave me the time, space, produce and understanding for me to come up with dishes I could be proud of. It’s one of the few hotels I would consider collaborating with again in the future. Q. Where do you see yourself in f ive years? A. I see a very cool Lebanese restaurant, probably in London. I may also consider a future project in Dubai, circumstance allowing. I want to see Arabic food put on a pedestal.

Then, depending on weather and birthday party schedules, afternoons are spent with other families or with excursions into the dessert or to Purple Island. Evenings are often enjoyed with joint cooking sessions with some friends, everybody contributes, and we share our cultural origins in the cooking pots.

WHAT ARE SOME OF YOUR PROFESSIONAL AND PERSONAL GOALS FOR THE REST OF 2016? Even though the hotel is brand new- there are still ongoing projects to enhance the food and beverage offers for our guests, and, of course, fine tuning our service delivery. Nobody is perfect and we all learn every day. Personally I will get involved again in academic development and work towards some more certifications in various areas of strategic business development.
