hen you’ve grown up in the North West of England, summer very quickly becomes the luxury that you love (that’s until it gets TOO hot and everyone in the house wants to sit in front of the fan). In the Gulf, however, summer means hot and humid days, when even walking to the car can be a sweat-inducing chore. So, naturally, many of us escape the heat to more pleasant climes. But, for those who choose to stay and live out the sunny days in Doha, there’s no need to fret, for summer brings with it many more leisurely opps than any other season. Not only have you got pool and beach days galore, nationwide events, activities and promotions are also stepped up to keep the crowds cool. On p10, read all about what Qatar Summer Festival has planned for families to enjoy; for your art fix, check out what’s coming up at Qatar Museums on p14 and when you need some inspiration in the kitchen for your next summer soiree, pick one of the yummy recipes shared by Doha’s top chefs to help you and your guests stay cool (p23). The exhibition tells the extraordinary story of Afghan girls who took up skateboarding, thanks to Skateistan, an Afghan charity that builds skate parks as a way of getting children from disadvantaged families back to school. The series, viewed by more than 74,000 visitors during its two-week run at London’s Saatchi Gallery, will bring to life the colourful, and free flowing spirit of these young girls, offering a new perspective on the skateboarding culture. WHAT: POWDER AND DAMASK: ISLAMIC ARMS AND ARMOUR FROM THE COLLECTION OF FADEL AL MANSOORI WHERE: MUSEUM OF ISLAMIC ART WHEN: UNTIL MAY 12, 2018, FREE ENTRY This exhibition presents Islamic arms and armour from the private collection of Fadel Al Mansoori. INGREDIENTS • 100g Smoked Salmon Fillet • 50g Vine Cherry Tomato • ½ Artichoke Hearts • ½ Baby Fennel • 50g Beluga Lentil • 50g Quinoa • 100g Mascarpone Cheese • 50g Frisse Lettuce • 50g Rocket • 50g Baby Gem Lettuce • 50g Red Onion • 1 Orange • 2 Sprigs Thyme • 50ml Fresh Lemon Juice • 50ml Vinegar • 100g Butter • ½ Leaf Gelatine • 300ml Olive Oil • 100ml Water • 1 Clove Garlic • 20g Hazelnuts • 20g Rock Salt • 10g Black Peppercorns
METHOD • Boil the lentils for 30 minutes, rinse, and strain and cool down. • Boil the quinoa for 20 minutes, rinse, stain and cool down. • Place tomatoes on a oven tray, season with 5g rock salt, 5g crushed peppercorn, crush the remaining garlic and add to the tomatoes. Rub thyme over the tomatoes and then drizzle 50ml olive oil. Roast on 100’c for 30 minutes. • Add artichoke to 150ml olive oil in an oven pan and roast along with the tomatoes. • Roast hazel nuts for 15 minutes, remove and cool. Gentle rub the hazel nuts in hands to remove the skin. 24

Place in chiller to set. • Zest and then peel the orange and segment. • Finely chop the onion, add to the vinegar, lemon juice, orange zest, olive oil and rubbed thyme. Whisk well and season to taste. • Mix all the salad leaves together. • Layer salmon on preferred dish and place all the ingredients in the centre of the salmon. • Serve vinaigrette on the side.

METHOD • Whisk the mayonnaise, yoghurt and sour cream until smooth. • Add the chopped garlic and lemon juice in to mixture. • Continue whisking and add the dry oregano and chopped chives. • Finally add the salt and white pepper to taste. • Dress the plate with a generous helping of dressing. • Cut the baby gem lettuce in half and neatly place on top of dressing. • In between the lettuce plate the remainder of the ingredients, creating a colourful and flavoursome plate. 26

SUMMER SEA BASS CARPACCIO

120g Fresh Sea Bass Sea Salt Sumac Lime Juice Grapefruit Juice and Dices Dill Sprigs Micro Watercress Red Radish Cucumber
METHOD • Slice the fish with a very sharp knife into fine slices and marinate with olive oil, sea salt, lime and grapefruit juice. • Dice the cucumber and the grapefruit and slice the radish. • Mix 150g of dill with 80g of olive oil using a hand blender and then strain through a fine cloth in order get an aromatic vibrant green oil. • Neatly plate the marinated fish, dress with all the condiments and finish with some fresh sumac, grapefruit zest and dill oil.

METHOD • In a small bowl, whisk together all dressing ingredients. Add a bit of water if necessary to thin the dressing to your desired consistency. Taste and adjust seasonings. Place in the refrigerator while you prepare salad ingredients. • Plate the salad ingredients neatly on a plate. Sprinkle the toasted sesame seeds from top (Optional). • Garnish it with micro cress. • Serve the dressing on side.

ROASTED BEET AND FIG SALAD with Stilton and Blackberry Vinaigrette

10g Black Berries 10ml Balsamic Vinegar 10ml Olive Oil 20g Arugula Leaves 15g Baby Beetroot 15g Figs 3g Walnut 5g Stilton Cheese 4g Honey 2g Salt 2g Pepper
METHOD • Roast the beets by wrapping them in foil (wrap the lighter beets in a separate packets than the dark so the colours don’t bleed onto each other). • Place the wrapped beets into a 425-degree oven for 30 – 45 minutes, until they are tender (I use my toaster oven for this). • Remove beets from oven, and allow to cool. • Run the beets under cold water and slip off the skins, using a small paring knife to remove the tough bits, if necessary. • While the beets are roasting, place the vinegar and blackberries in a bowl and mash the berries thoroughly using the back of a fork or potato masher. • Strain the mixture through a fine wire sieve. • Press all of the liquid out into a large cup or small mixing bowl. • Add the olive oil and honey to the vinegar mixture and give it a good whisk. • Add salt and pepper to taste.

• Place approximately 1 cup of greens on the centre of each plate. • Arrange four of the quartered beets around the greens, using two different colours of beets if you have them. • Then place 2 of the quartered figs and a few blackberries on each plate. • Cut small pieces of the Stilton off the wedge and scatter chunks of the cheese over the greens and you may even want to place a small wedge of the cheese on the side of the salad. • Sprinkle the walnuts over the salad and drizzle with the dressing.

METHOD • Mix mango puree, sugar and egg yolk well. • Place mango mixture into a double boiler and bring to 82° C • In a separate bowl place gelatine leaves in ice-water for 8 minutes. • Once bloomed, add gelatine to mango mixture. • Allow to cool until reaching 40° C • Once cooled, mix in room 38

• Cut banana lengthwise into four. • Lay out the spring rolls sheet, top with one piece of banana. Smear egg white on the edges and roll it, press down to stick. • Fry wonton until golden brown; remove from oil and coat with cinnamon sugar. Dulce de leche is for dipping.
• Pour the milk and cream in a pot; add sliced lemongrass. Keep covered for 30 minutes to get flavour. Strain the lemongrass milk and reheat. • In a kitchen bowl, mix egg yolk and sugar, add lemongrass milk and whisk until the sugar dissolves. Strain the mixture. • Pour the mixture into small porcelain cups and bake them at 130C for 45 minutes.

METHOD • Prepare the sushi rice. Wash the rice (1 cup = 3-4 sandwiches) with running water for 1 to 2 minutes until there is no more starch coming out of it. • After you are done washing, gently place the rice in a pot; add a little bit more water than rice (the ratio is about 1.15:1 in favour of the water). Don’t add too much water, or you’ll get dough instead of rice.
• The rice should be cooked on high heat at first, stir every minute or two, until the water boils. Then, lower the heat to minimum and cover the pot. Stop stirring, the rice will handle itself from now. • After 6 to 8 minutes, check the water level – if there is no more water, only bigger grains of rice in the pot, that means the rice is ready. If not, check back every minute, making sure not to burn the rice at the bottom. If you’re not feeling too adventurous, a rice cooker can also be used. • For 3 cups of (uncooked) rice, use ½ cup of rice vinegar, 2 tablespoons of sugar and 2 teaspoons of salt. Use only rice vinegar! Any other kind of vinegar will taste bad. Mix together in a small pot on medium heat until all solids are mixed in. • Pour mixture on rice and mix well. That should take a minute or two. Let the rice cool down for a few minutes until it reaches room temperature. Don’t put the rice in the fridge to make it cool faster – that will damage the rice. • Lay a piece of cling film and a nori sea weed on top, apply even layer of rice and then, a small amount of the mayo mix, and then start layering the fillings. • Can be only vegetables or can be added a grilled piece of tuna, salmon , chicken, fried crispy tofu etc. • Then start folding the corners with the help of cling film to shape a parcel. • Cut in the middle and serve with extra sauce on the side.

We check in to the incredible Ambassador Suite to indulge in tourist-cum-trade life (hoping to attend some meetings during the trip and get some much-needed relaxation time in, too).
SUITE LOVE Walking into the Ambassador Suite is like finding your perfect home on the first viewing. It’s big, bright, spacious and has ALL the luxuries that you’d expect from a room type of this prominence. The hotel describes the suite as “a balance of privacy and luxury” and that couldn’t be more accurate. Open up the doors to the two step-out balconies (one off the living room and the other in the bedroom) whilst you’re going about your holiday. Sprawl across the mega-comfy king bed and catch up on emails whilst admiring serene views of the Arabian Gulf, all from the comfort of the fluffy duvet. For more blissful moments, make yourself an espresso – or other beverage of choice – from the private bar and sip on a warm cuppa as you take in the homely vibes of this amazing suite.
It was the blend of practicality, space and comfort that really had us in awe every time we’d gone out and come back to our little sanctuary. There’s space for EVERYTHING. Literally, bring as many suitcases full of clothes, shoes and accessories as you want because this place has some seriously good storage! The French Empire-style furniture is utter elegance, further enhanced by the Marte chandelier in bronze fusion with 24-karat gold plating (yes, you heard right!). There’s a dining table with cushy sofa-style seating and a lovely desk area for those who prefer to keep work life and sleep time separate. The marble bathroom is a whole different ball game. A deepsoaking tub is all the insta-worthy goals you’ll need, alongside the double vanity and the standalone shower, which was refreshing every time! Luxury amenities add to the already wonderful service. For those who are into their music and entertainment, there’s a DVD/CD player, iPod docking station, flat screen TV with a number of channels, and you can even get game consoles on request. So, tell us, why would you even want to leave the suite life? We certainly didn’t!
FOOD ENVY You shouldn’t be surprised to hear that we almost immediately fell in love with the dining venues at Four Seasons Hotel Doha. After all, most of them are highly-acclaimed and award-winning, and our high standards were met from the get-go. Breakfast in Elements was a sensory affair; eat every type of egg concoction, delve into dim sum, gorge on pastries and pancakes galore, go for healthy cereals, fruit juices and SO MANY more yummy treats. fact magazine

Service at the restaurant was one of the best we’ve ever experienced, in any restaurant – and we’ve been to our fair share of classy fine-dining joints. Even though it’s an upscale place, the atmosphere is super friendly and welcoming, with staff being completely knowledgeable on food and drinks. No sign of stuffiness here!
LEISURELY LIFE We can testify that the Four Seasons Hotel Doha is the only place we’ve ever stayed at that has motivated us to get up and go to the gym every day of our trip. Why? Because the fitness facility is out INSANE! The brilliant white exterior of the Waldorf Astoria Dubai Palm Jumeirah gives little away, yet the lobby of this 319-room property marks a great introduction to the very nature of the brand. Natural tones embrace guests as they make their way beneath dazzling light fittings and across plush rugs to the reception, where floor-to-ceiling windows provide remarkable views out to the sea. Waldorf’s inaugural property in New York was seen as the world’s greatest hotel at the time of its construction and has left a lasting legacy for the brand to measure the standard of others. Over a century later, this quality and consistency remain in place, with the check-in process undertaken with startling efficiency. A central clock is a fixture of Waldorf lobbies worldwide and the presence of a timepiece in the Dubai property takes prominence over a sweeping staircase of gleaming marble, leading out towards the beach. REFINED LIVING We get a feeling of desert chic as we traverse the communal corridors leading to the rooms, for the desert has quite literally been brought indoors. Sand and palm trees fill the corridors, leaving little doubt of our Arabian location. Our first-floor room is spacious and offers glorious views of the Dubai skyline over the flat waters of the Arabian Gulf. The iconic Burj Al Arab stands strong on the horizon, as the sunlight refracts off the Burj Khalifa in the distance. Our two-queen bed Deluxe Room is without a doubt one of the nicest we’ve stayed in. Awash with tones of ivory, beige and hints of turquoise, it’s tastefully decorated and features all the modern comforts you’d expect from a brand such as the Waldorf. A large 42inch HD television, a media hub for all your devices and an espresso maker (none of that
powdered stuff here) all add to the attention to detail which is astounding. Even the crockery is similar to something you would expect to find at a wedding. A specialr mention must be given to the signature Waldorf Astoria beds (complete with pillow menu) and what are easily the most comfortable slippers and robes in the Emirates - period! The bathroom continues the lavish feeling of the room, finished in marble and complete with double vanity units, a powerful rainfall shower (with seating ledge for those too lazy to stand) and a tub that features a television. It’s almost too difficult to leave the room when the levels of comfort are so high. HOLIDAY HAVEN The hotel’s location on The Palm Jumeirah means that it’s a little far from the tourist attractions of Dubai but it’s unlikely that guests will notice with so much on offer within the hotel’s manicured grounds. Amenities include the Waldorf Astoria Spa, featuring a sauna, steam-room, ice fountain, 12 treatment rooms and extensive hydrotherapy facilities. With over 50 treatments available in a serene and tranquil environment, it’s worth booking yourself in for some extensive pampering. Often, spas can feel a little clinical, but here, relaxation is at the forefront. For those with fitness in mind, the state-of-the-art gym is open 24-hours-a-day. Outside, amongst grassy lawns and rows of fragrant frangipani trees, is the private beach. A 200m swathe of golden sand stretching as far as the eye can see and leading down to tranquil azure waters that are shallow and ideal for young children and less competent swimmers. If relaxing on the sand isn’t your thing, the onsite water sports centre offers snorkelling, kayaking and water skiing, against the backdrop of the Palm’s residential fronds and the towers of Dubai Marina. Tennis courts and two temperature-controlled swimming pools are also available for guests. The lagoon-like family pool would be our choice, offering different depths of water and spacious cabanas, including some that are well-placed over the water for a special dining experience. An adults-only pool is provided for those looking for additional peace and quiet and even in the intense summer heat, the attentive lifeguards are on hand with bags of chilled water and ample shade to ensure comfort is maintained for all guests poolside. fact magazine

FOOD GOALS Six distinct dining destinations are available to take you on a worldwide culinary journey. Having heard wonderful things about Social by 3-star Michelin Chef Heinz Beck we were a little disappointed to find the restaurant closed for Ramadan. However, things were quickly redeemed with a dinner reservation at Lao. With so few Vietnamese fine-dining restaurants in the Emirates, it’s a refreshing choice of cuisine for the Waldorf and one that certainly pays off. Indulging in a set menu of Lao’s signature dishes, we’re taken on a sensory epicurean adventure from the coastal waters of Vietnam’s Halong Bay to the mountainous rice terraces of Sapa. With Vietnamese cuisine renowned for its aromatic flavours, these are evident in every dish throughout the meal. From the tender beef wrapped in a King Henry leaf and served with peanut and tamarind sauces, to the stir-fried chicken breast with aromatic lemongrass – every dish is as tasty as the next. Breakfast at Mezzerie offers guests a vast spread of freshly baked breads and pastries, artisanal yoghurts, dim sum, a gluten free corner and not one but TWO varieties of pancakes. It’s one of the most expansive breakfast buffets we’ve encountered with a focus on quality to match. ven if you’re not a travel junkie we’re still pretty sure that you’ll have come across one W hotel or another (but seriously, what are you doing with your life?) – not least through its energetic neon logo that just screams hotel cool. The W Dubai Al Habtoor City fulfils everything the brand stands for and more - how could it not, being in Dubai?
THE STYLE So, if you like the combo of hot pink and jet black, you’re in luck. The W is all about creating colour contrasts that stand out like a sore thumb and creates a real powerhouse of slick hospitality that is so fun to be a part of. The décor is stimulating in every way and amps up your energy from the outset. Everywhere you turn, there’s bold design – the hotel’s exterior is flashy (in a way that suits Dubai, to be honest) with neon lighting, outlining the 33-storey building. Even the lifts are super swanky and decadent with fabric walls - in the way that a James Bond movie set would look like. Overall, the hotel’s style is a full-on sensory experience.
THE DIGS Well, one thing’s for sure: you’ve never been in a more modern, high tech and
aesthetically fun room before. It’s all about loud typographical messages i.e. EVERYTHING YOU WANT TO KNOW (aka the in-room guide book to room- service, Dubai information and more), SO VAIN (nail kit and shower cap), BARE ALL (shaving kit) and FRESH MOUTH (dental kit). It’s all very tonguein-cheek but don’t think they skimp on quality – the black-carpeted rooms are massive and very Jetson space-age and you feel right at home when you walk in. Most hotel rooms come with an iPod dock but for iPhone 5 – hallelujah, the W is in with the times. iPhone 6 and 7ers, rejoice, you can charge your phones on the dock!
The compartmentalised rainshower and separate bathroom add to the whole ‘many dimensions’ effect while the standalone bathtub adds an element of luxury. But what got us jumping on the bed in total child-like excitement was discovering the secret but oh-so-lavish bar room. At first we thought it was simply a door leading into an interconnecting room – it wasn’t until the bell boy asked if we had gone through, to which we were slightly bemused. When he opened the door to yet another dimension, we were blown out the water. The fully equipped bar, the sprawling flat screen and the white leather seating is again, the stuff of a James Bond scene. fact magazine

THE GRUB Epicurean pleasures, you say? Well, they’ve got all that and more at the W. We checked out NAMU, the JapaneseKorean outlet. Now, we’ve had more Japanese food to satisfy the most ardent Japanese, so we side-stepped a bit and took advantage of the Korean offerings. But of course, we started off with a Narita Maki Roll: Tempura Prawn, BBQ Eel, Avocado, Gobo, Cucumber – it was reassuringly good and packed lots of punch. We then had a Namu Steamed Bun (all-time favourite comfort food): Wagyu Short Ribs, White Kimchi, Ssam Jang, which was both fluffy, dense and covered in finger-licking sauce. And then, brace yourselves, came the Korean Seafood Pancake Hamul Pa Jeon: Scallop, Prawn, Cuttlefish, Spring Onion, Wakame Ponzu Salad. This was next-level fantastic and unusual. It was everything from soft, smooth, thick to screaming with flavours. We cannot recommend this dish enough. When it came to the mocktails, they were also, delightfully exotic in name and ingredients. We went for the Amaririsu which means Shy and is made up of Yuzu, Passionfruit, and Tonic Water which was prickly sweet and washed down our amazing food nicely.
THE EDGE Located within Al Habtoor City, the Emirate’s first fully-integrated urban resort, the hotel offers insider access to Dubai, with a full calendar of W Happenings showcasing what’s new and next in fashion, music and entertainment. The whole vibe surrounding the property is buzzing. The staff too, are super cool. You can talk to them as if they were your friends, because they’re that open and approachable. The hotel’s club-like (but not offensively loud) party music adds to the fun and makes you feel like you’re part of the coolest community in town – if only for the weekend! ✤

orn in 1950, Al-Mawlawi is known for his work that focuses on local artistic expression spanning from the late 1990s to 2002. His primary emphasis has been on recording and documenting the local heritage and cultural traditions. The artist’s earliest creative influence was moulded by European Renaissance paintings and he strongly believes in displaying his country’s rich heritage in public, accessible spaces. His art depicts scenes from daily life and he wants his work to serve the purpose of reminding people where they are from. Al-Mawlawi’s work is collected by public and private collectors, in the region, alike and in 2011 was

featured in an exhibition titled Swalif: Qatari Art Between Memory and Modernity in 2011. Al-Mawlawi’s first showing was at the Qatar Visual Art Center in 1988 but he has also exhibited at an international level. He has been instrumental in his role of building the legacy of a collective heritage and has chaired the local Gulf Theatre in Qatar in the early 2000’s. The collection that Al-Mawlawi will be showcasing at Art 29 will be managed by Nahed Al Emadi and curated by Abdulrahman Mohammed Al Kubaisi, Lina Ramadan and Wadha Tariq Al Aqeedi. It will be conserved by Claire Dizarny Gargas while the collections team will be headed by Noor K. Al Mawlawi, Ali K. Al Mawlawi and Hamad Al Amarri. The expansive Art 29 space has been established to spark inspiration and nurture creativity by providing a platform to showcase works of both budding and established artists. Calling all superhero junkies - drop everything and grab some popcorn as everyone’s favourite web-wielding man is back in action! Spiderman is all set to take centre stage and give the former Spider-men a run for their money. With Marvel taking over the franchise, there are bound to be some refreshing new changes. Thankfully for us, the plot doesn’t dwell on the origin story of Spider-Man and skips that part entirely. We witness Tom Holland as a young Peter Parker trying to make sense of his new identity and juggle regular high school drama while keeping his Spidey identity on the down low. The fresh faced Holland is the invigorating force this franchise needed and we’re certainly not complaining! Unlike its predecessors, the film focuses more on the man behind the mask and seamlessly blends the concept of a coming-of-age comedy with all the makings of a superhero blockbuster. With Robert Downey Jr. as Parker’s mentor along with a much younger Aunt May - there are less clichés. But can it live up to its comic legacy?

W
e all know just how huge the SUV market has become in recent years. With the massive success BMW found in the market, it was only a matter of time before the car giant that is Mercedes Benz, entered into the lucrative 4x4 coupé fray. The AMG-GLE 43 is the latest model designed in the segment by the automobile giants, in a bid to secure their continued success. This Mercedes machine is a new model delivered forth by the geniuses responsible for decades of top class motor vehicles. But just because a brand decides to try something new, doesn‘t mean it will necessarily work. We decided to take Al Haddad Motors up on their generous invitation for a test drive to see for ourselves what this car has to offer. Approaching the Mercedes, one is immediately struck by the unconventional coupé lines. From many angles, this car

looks mean and aggressive, like it‘s telling you to keep quiet and to give the dealership your money. Its shape is rather long and wide giving it a bulky look on the outside, but offering more than enough space within. It certainly has a sporty essence to it and feels as if it’s bragging about the experience which awaits you. Complete with 53.3 cm (21-inch) AMG 5-twinspoke light-alloy wheels, aluminium-look illuminated running boards with rubber studs and a two-pipe exhaust system, its exterior simply demands attention. Slipping inside the cabin, one is instantly impressed by the classy layout and quality of the materials. The seats are wide and comfortable, providing an enjoyable base for the operating of the vehicle. The operating system has an 8.4” screen and comes complete with voice controlled navigation. This is a very handy feature when it comes to safe driving practices. We found the system as a whole to be very user friendly
and easy to navigate. There are a variety of other special features to be found in the cabin, including an eco-start/stop system, heated and ventilated seats, dual climate control and even heated and cooled cup holders. Spacious door bins, a reasonably sized glove box and a large central cubby hole take care of one’s storage needs. One of our favourite features was the panoramic sunroof. The back of the vehicle is large enough to seat three adults comfortably with adequate head and leg room. Although the boot itself has 38.3 cubic feet of storage room, one can fold the back seats down to extend the area to 80.3 cubic feet. For convenience, an automatic tailgate is fitted as standard. It was however when we got her on the road that this car really began to impress. For a vehicle that weights well over two tonnes, it has plenty of power and acceleration. The Bi-Turbo V6, 362hp Engine is ample to propel a beast of this weight and size.

In fact it races from 0 – 100kph in only 5.4 seconds. The engine is paired with a nine speed automatic transmission, which shifts seamlessly through the gears. With multiple modes on offer namely, comfort, sport, sport plus and individual, we were spoilt for choice. It is however the sport plus mode which really shows off the 4x4’s capabilities. We found the suspension system to be brilliant and there is a huge amount of traction and grip on offer. Although the breaks are very efficient, one must remember the weight of the car when calculating breaking distance. On the subject of safety, the vehicle contains a host of predictive and preventative measures due to its cameras, sensors and electronics. These include blind spot assist, lane keeping assist and active break assist. A 360 degree parking system is present to help you when required. The overall result is a smooth ride in a comfortable vehicle, in which one feels both safe and in complete control. In truth, there are too many great features both internally and externally on this vehicle for them all to be mentioned here. What we can tell you, is the designers at Mercedes continue to produce worthy adversaries to their BMW counterparts and we strongly recommend you book a test drive. W
ith 30 restaurants and more than 21 Michelin stars to his name, Alain Ducasse is the emperor of modern French Cuisine. Nonetheless, he is seen as both a genius and guru by many of his peers around the world. He anticipated trends, influenced international gastronomy and forged new paths to forward his art with always one motive: putting the vegetal and the local in the heart of the plate. By using simple slogans such as ‘eat less but better’, or ‘vegetal en premier’ (vegetable first) he basically re-invented the French haute cuisine by ridding it of much of its excesses and engaging it in a more ethical and sustainable approach. “The planet’s resources are rare, we must consume more ethically and equitably,” Ducasse keeps on repeating. We had the opportunity to meet the charismatic chef on his one-day visit to Doha at the iconic IDAM restaurant, located in the Museum of Islamic Art (MIA). The force of his presence is palpable—he is very smart and well spoken—in fact Ducasse looks more like a French Ambassador or a ‘grand patron’ (CEO) more than a chef. He is, of course, all three rolled into one. We speak with him to see what he thinks about the fusion between French and Middle-Eastern cuisine. How did IDAM start? Firstly, I like exceptional venues and if I wasn’t a cook, I would have become a traveller or an architect. When I was offered by to develop a restaurant by Sheikha Mayassa Al Thani with my fellow friend and designer Philipp Stark in the iconic MIA, designed by architect Pei, it couldn’t have been more exiting. IDAM was born at the crossroads between two very strong concepts—integrating an iconic landmark and a restaurant offering a cuisine which appeals to local people. Indeed taking into account local tastes, without straying from the French cuisine techniques was my challenge. It was more about seducing the local clientele, than the expats. How would you define the cuisine at IDAM? At the beginning Sheikha Mayassa

Al Thani wanted to build a menu around seasonal vegetables from the Mediterranean and Middle Eastern region. We integrated influences from Morocco, Lebanon and India (in particular) to create a cuisine based on contemporary Mezze— the key element was the fusion between local flavours and techniques of French cooking. As I like to say, I’m a local chef with a global expression. In a nutshell we can say that IDAM is still a contemporary French haute cuisine as per its DNA offering Middle Eastern flavors to seduce local palates. Is adaptation the key of success in your industry? Yes, when I go somewhere, I don’t impose: I propose. What is the common denominator between all your restaurants across the world? Refinement, elegance are the keywords. A cuisine based on local flavour and in osmosis with its environment and a cuisine that never misleads the DNA of traditional

French cooking—the art of preparing food, the art of cooking and seasoning, harmony between containers and foods, peering between food and drink, just to name a few. One other common denominator seems to be the ongoing search for the most unparalleled locations in world famous landmarks. Less fat, less salt, less sugar, more seasonal products and vegetables. Speaking about vegetable, can you tell us more about your signature dish named cookpot? Yes the Cookpot has become one of my signature dishes with the idea that over time more attention must be given to cereals, grains and veggies. It is a universal dish and we should decrease the amount of protein we eat and respect our environment. Which other great chefs do you admire? I like the work of Brazilian chef, Alex Atala who sources products directly from The Amazon. He discovered new species of animals and plants over the past four years in the vast Amazon rainforest and we don’t even know if some of these products are comestible or not. It means there are still unexplored destinations fit for culinary lovers! And you have Gastón Acurio, the
super chef who put Peruvian cuisine on the world map and who used gastronomy as an important factor of economic growth in South America. These two chefs deserve some recognition for their amazing effort, one because he is hunting new species in The Amazon and the other one for his honourable work in promoting local economy across the world. What is your motto? Never cease to work more, faster, and better - that’s my rule. ✤

’m not the experienced frequenter of massage parlours that some are. In fact, I’ve had very few. My trip to the Al Jasra Boutique Hotel’s spa left me invigorated and up for more; the service, the subtle touches and the serene ambience are all superb. It’s also never overcrowded or over booked, meaning that the personal attention to detail is strong. I was looked after at the spa by Ajith who was courteous and professional from start to finish. I was offered dried mangoes and a refreshing drink while I waited. He talked me through the treatment and kindly answered any of my questions. I was first given a tour of the facilities before getting changed. The changing room is large and there are lockers to store all personal belongings. Robes and flip-flops are provided and this is also when I took the liberty of leaving my phone there so I could digitally disengage from the world for an hour or so. At Ajith’s suggestion, I started in the sauna, where I could unwind immersing myself in 94

the silence and leaving the frenetic fast pace of the daily life genie in the locker room bottle. After ten minutes in the sauna I was led into the Moroccan hammam. The vibe was enhanced by the sound of hot running water and oasis style music. It looked rather Roman which is not unreasonable as it was the Romans who fashioned baths though their origins back in the Stone Age. The Romans were famed for the collectivism of communal bathing and sharing of local news and gossip as they got scrubbed and rubbed. But, of course, this modern-day hammam is influenced by ancient Arabian practice and sensibilities, making Roman-era bathing habits far less common, so you’ll be pleased to hear, as I was delighted to discover, you’ll have the hammam all to yourself and can really get a bit of privacy as well as peace and quiet. After I’d been doused in lovely hot water, the soaping began. I laid down on the marble slab, on a towel laid out for me with another towel fashioned as a headrest. Black soap was lathered all over me. It had the effect of removing dead skin, purifying the skin and it smelled glorious too with more than a whiff of eucalyptus. I was then left for ten minutes so that the black soap could work its magic, increasing the blood circulation, lightening the skin and relieving muscle tension. After a rinse of the soap the exfoliation could begin and I was scrubbed down head to toe with a kessa. I was told to say if the pressure felt too much but it was just right. I’m not sure I’ve been this clean since I was a baby! The ghassoul was next, featuring lava clay, orange blossom and 100 per cent Argan oil which is the signature ingredient of the hotel’s restaurant, Argan, located on the lobby level. One last layer of Argan oil was applied over the whole body and I was ready for my final dousing of hot water. When I was dressed and done, a lovely ginger tea was waiting for me at the end and as I reengaged with the digital world and the emails on my phone, I was relived to discover that the world had not caved in after all and I was feeling squeaky clean and utterly refreshed. ith the sixth edition of the Red Bull BC One Bahrain Cypher right around the corner, set to take place on July 14, it’s important to look back and reflect on the growth that Bahrain’s b-boying scene, and urban scene in general, has witnessed in the last six years. But first, let’s take it back to basics real quick. Red Bull BC One is one of the biggest international B-Boy competitions that takes place annually, with the world final held in a different country every year. Its reputation stems from the fact that it’s the only major breaking championship that focuses purely on individual B-Boys and one-on-one battles (as opposed to crew battles). The first Red Bull BC One took place in Biel, Switzerland, back in 2004, and the focus on oneon-one battles over crew showcases provided a completely new platform to the B-Boy community. While the competition grew year after year, it wasn’t until 2011 when Red Bull BC One shifted to elevate the competition to new global heights by changing the competition format entirely; 28 cypher battles were held around the world and the winners proceeded to six regional qualifiers before the world final in Moscow. This is where Bahrain comes in. In May 2012, Red Bull Bahrain launched the BC One fever in Bahrain by hosting the country’s very first local qualifying cypher. Like any first-time event, planning is met with both apprehension and excitement; is Bahrain’s B-Boy scene strong enough to compete, and will they accept the introduction of a new platform? The reluctance 96

quickly evaporated as soon as the MC picked up the microphone to announce the inaugural launch of the Red Bull BC One Bahrain Cypher to a full house at the Batelco Staff Centre in Hamala, which was transformed overnight into a breaking arena, housing B-Boy Cico, B-Boy Lamine, and B-Boy Lil G as internationally renowned judges kicking off the Kingdom’s first cypher. B- Boy Zilla marked himself as the first Red Bull BC One Bahrain Cypher champion, and set himself apart as an icon of the local breaking scene. Now that the momentum’s been set, the Bahraini B-Boys were dead set on bringing their A-game to the second edition of the Red Bull BC One Bahrain Cypher in 2013. There’s always the fear that a movement can stagnate after a huge milestone,

but the Kingdom’s second cypher turned out to be even more electrifying than the first! With last year’s debts to settle, B-Boy Huey Flava came into the competition at the Isa Bin Salman Cultural Hall (The Alumni Club) with his eyes on the championship. In the battle of a lifetime, he faced off against B-Boy Zilla for the final 1v1 battle that cinched him the championship, and marking the rise of B- Boy Huey Flava in Bahrain’s breaking history. The next year saw a complete shift in gears, with many leading B-Boys stepping out and many newcomers stepping in. The third Bahrain Cypher took place without its first champion, B-Boy Zilla and without the reigning champion, B-Boy Huey Flava. With the winner’s slot open for the taking, the country’s B-Boys took The Alumni Club stage with everything they had, and boy did we see some funky moves! In a heated and polarising final battle, B-Boy Twist defeated fan-favorite, B-Boy Triple X, to become the Red Bull BC One Bahrain Cypher 2014 champion! But champions are never gone for too long, and both B-Boy Zilla and B-Boy Huey Flava made an explosive return during Bahrain’s fourth cypher to challenge B-Boy Twist for the title, not to mention, B-Boy Triple X, who came so close just the year before. With a fire under their bellies, the country’s best B-Boys took on the Malja Bahrain stage with an outdoor set-up packed with supporters to throw it down again. B-Boy Triple X got his chance at redemption during the semi-final battle, but it was B-Boy Huey Flava who knocked the crown off B-Boy Twist’s head during an

intense finale, marking B-Boy Huey Flava the returning champion of Red Bull BC One Bahrain Cypher 2015. Last year, Red Bull BC One added a new change to the competition format: there will no longer be any regional qualifiers, and all cypher winners will head straight to the Red Bull BC One World Final in Nagoya, Japan. The competition reverted back to its roots, using an invitation-only format to create the World Final top 15 line-up, while the local cypher winners battle it out at the Last Chance Cypher for the last open spot in Nagoya, two days before the World Final. The chance to head straight to Japan was not taken lightly, and Bahrain’s B-Boys were ready to throw down once again. Despite the increased calibre of the local B-Boy scene, B-Boy Huey Flava battled his way through newcomers and past champions to become the three-time winner and longest-running Red Bull BC One Bahrain Cypher champion. With the sixth cypher coming up in July, tensions are running high in the B-Boy scene and with the fans; is it going to be another notch on the belt of B-Boy Huey, will B-Boy Zilla or B-Boy Twist fight back to regain the crown, or will we witness the rise of an entirely new champion like B-Boy Triple X? Whoever comes out on top knows that it’s not going to be easy, but it’s definitely going to be explosive. ✤ GO: This year’s Red Bull BC One Bahrain Cypher will take place centre stage at City Centre Bahrain’s Galleria on July 14.
