A Food Chronicle: The Story of my Life...

First we eat, then we do everything else. - M.F.K. Fisher

I

f I was to ever write a book, you’d better believe that there would be an entire chapter dedicated to food. It’s the one common factor in the world that can bring people from all walks of life, cultures and backgrounds together - no matter the language barrier, the unfamiliar ingredients and the complete lack of being in your culinary comfort zone. This is what I love about a good plate of food - it’s a universal language and a great ice breaker. With that said, and as our team prepares for the 4th annual FACT Dining Awards Doha, we thought it only fitting to take you on an Epicurean Expedition around the world. How? Turn to p31 and begin your voyage with our pick of some of the world’s best cuisines and dishes to have gone viral on the gastronomy scene and, more importantly, we tell you where to try out these fabulous offerings in Doha. As mentioned, back for its 4th edition, we announce the the final list of nominees for the annual FACT Dining Awards Doha. Hundreds of venues have made the cut and you can check out if your favourites are on the list from p45 onwards. The online voting form is now live and you have until the end of the month to cast your vote and make it count! Go to www.fact-magazine.com for all the details, and keep an eye on our social media platforms for exclusive foodie competitions in the lead up to the April ceremony. Staying on the delicious track to all things tasty, this month’s dining features are an absolute treat. Our Culinary Spotlight takes place at the lush Lebanese venue, Gemmayze at the InterContinental Doha (p81), whilst the Foodie Corner takes a casual turn at LaLiga Lounge (p85), and the New In Town spot goes all the way up to luxury experiences at Morimoto Doha at the recently-opened Mondrian Doha (p89). There’s no excuse to be staying in every night! As usual, we bring you the best in hospitality, fashion, beauty, tech and interiors to name but a few of the fun pages you can find in our March issue. We’re happy to be rid of the short month - bring on the 31 days! Until the time of April Fools - enjoy the read!☺

ASIAN-INSPIRED ARTWORK As part of the hotel’s ongoing commitment to support local artists, Grand Hyatt Doha Hotel & Villas unveilied “Earth Tones” by local artist Jacinthe Lamontagne-Lecomte. THE EARTH TONES COLLECTION is the perfect complement to Isaan, which prides itself on taking you on a journey of the relatively unexplored Thai region. The exhibition showcases the people met during Ms. Lamontagne-Lecomte’s time in Indonesia, Japan, Nepal, Thailand, Cambodia, Burma, India, China and Malaysia. “I am thrilled to create this exhibition in partnership with Grand Hyatt Doha and I appreciate the support the hotel provides to the thriving local art community,” said Ms. Lamontagne-Lecomte. “Isaan is one of the most well-known Asian restaurants in the city and as a regular customer at the restaurant the expressive faces of the staff members never fail to grab my attention. “I was delighted to be given the opportunity to create a piece based on, Supansa, the Assistant Manager at Isaan. Supansa immediately caught my eye and I knew straight away her face would make the perfect work of art,” she added. For the collection, Ms. Lamontagne-Lecomte used photo transfer with mixed media on canvas. This type of artwork begins as a photograph from which the artist adds a variety of materials to create interesting textures and colours and in some cases, completely transforms the original subject. “The materials I use in my art vary. I’ll use really anything from paint, newspaper, ink and gesso to silk wax, foil paper, oil and even coffee,” she said. “We were delighted to partner with Jacinthe on this project as her pieces portray the many interesting faces she has encountered on her journey throughout Asia,” said Chris K Franzen, General Manager of Grand Hyatt Doha Hotel & Villas. Part of the Hyatt Thrive project, ‘The Corridor’ was an initiative launched by Grand Hyatt Doha in 2015, to offer a unique, public, gallery space for locally based artists who wish to exhibit their work to Doha residents as well as international visitors. ✤ 26

Italian – Pizza Margherita

Japanese – Sushi

The margherita is a humble combination of dough, tomato sauce and cheese, and if cooked with good, fresh ingredients, it can prove a highly satisfying meal. Though the pizza all over Italy would be more than palate-pleasing, it’s actually the birthplace of the margherita – Naples – where you’ll find the most appetising choices. It was in 1889 when chef Raffaele Esposito of Pizzeria Brandi, created a pizza resembling the colours of the Italian flag, red (tomato), white (mozzarella) and green (basil), for Queen Margherita of Savoy, when she visited Naples. Since then, the modest pizza has grown into one of the most recognisable symbols of Italian food culture.

Sushi looks so simple and pretty, but it is in fact an intricate dish in terms of presentation and knowing which flavours work well together. One thing’s for sure though, sushi is causing a dramatic shift in dining habits the world-over. The nigiri and tuna rolls we eat today are a far cry from the pungent, riceless, barrelfermented stuff that originated in the 3rd century B.C. Now we have pinwheel-shaped rainbow rolls and sushi masters trading their raw fish skills with culinary connoisseurs. Trying sushi in Japan is a must, but we have to say, Doha does sushi, excellently.

British – Fish & Chips Definitely the most famous of all food in England. This great comfort food can be enjoyed as a greasy takeaway, traditionally wrapped in white paper, or in a more upscale environment at restaurants too. We recommend a trip up north to English counties like Lancashire or Yorkshire, where fish and chips is still the go-to dish and mostly enjoyed with a side of mushy peas, and this is also where you’ll find some of the best ‘chippies’ in the country to pick up your own bag of this hearty, hot dish. Here’s a tip – sprinkle loads of salt and malt vinegar all over and tuck in!

Thai – Pad Thai Some might consider this nothing more than a regular noodle dish – even its origins come from China, not Thailand. However, the popularisation of the dish is credited to Thai authorities and in particular the late Thai Prime Minister Plaek Phibunsongkhram, who introduced and promoted pad thai in his campaign to establish Thai nationalism and modernise the country. Well, if Thai restaurants and food vendors worldwide are any indication, the campaign definitely worked. Pad Thai is made with chewy, stir-fried rice noodles, vegetables, bean sprouts, peanuts, and egg, among other things like dried shrimp, garlic, shallots, red chilli pepper, and even more unusual ingredients like banana flowers. In Thailand it’s the most commonly served street food; a great option for a fast and filling meal.

Spanish – Paella

Tex-Mex – Fajita

By far Spain’s most famous food offering, the rice dish includes different combinations of vegetables and meats or seafood, and is normally seasoned with saffron, but also has other spices depending on the recipe and area in Spain it comes from. Paella was originally farmers’ and farm labourers’ food, cooked by the workers over a wood fire for lunchtime. It was made with rice, plus whatever was to hand around the countryside like simple veggies and, occasionally, rabbit or duck, and on special occasions, chicken. Now one of the most popular paella combos has to be the seafood variety! This is a colourful dish and the fun part is that you have to eat it straight out of the pan.

The fajita is no doubt the product of the ethnic melting pot that makes up the American table. Fajitas appear to have made the quantum leap from campfire and backyard grill to commercial sales in 1969, putting Tex-Mex cuisine (a blending of Texas cowboy and Mexican panchero foods) on the world map. Back in the day, it was skirt steak that was a prime ingredient for the delicious fajita but nowadays – anything goes. You can fill up a fajita with pulled beef, tasty chicken strips, black beans, grilled shrimps and so much more – the choice is yours and the combo is heavenly.

Chinese – Dim Sum

English – Afternoon Tea

Dim sum tracks back to the days of ancient China when travellers along the Silk Road broke their journey by stopping at tea houses. It was discovered that drinking tea helps digestion, so small pieces of food were offered with the tea. And so, the tradition of dim sum or yam cha (drinking tea) began. Dim Sum refers to small bite-sized dishes which can be savoury or sweet and prepared steamed, baked or fried. Tastes, flavours and fillings are of a great variety – from shrimp dumplings (siu mai) to bbq chicken buns (char siu bao) and even veggie gyoza – this has to be one of the best food exports to come out of China – and Doha has brilliant places where you can get your dim sum fix.

Ok, so it’s not a type of cuisine but it’s definitely one of the most popular food trends in Doha, and the world. Afternoon Tea dates back to 1840 England when Anna, the seventh Duchess of Bedford would become hungry around 4 o’clock in the afternoon. What we love about this tradition is the mix of sweet and savoury servings – from finger sandwiches packed with cream cheese and salmon, to delicious cakes and pastries, and, of course, mouthwatering scones adorned with clotted cream and jam. In this part of the world, Afternoon Tea comes in all forms – Arabian, Japanese and British too.

South East Asian

BBQ

Probably the most diverse of all cuisines – the term South East Asian is applied to everything from noodles to bento boxes, curries and stir-frys so if you find a place that does a good variety of South East Asian food – take a seat and tuck in. There are many staples of Asian cuisine – rice, noodles, spices, herbs, exotic vegetables and even meat. In Thailand, you’ll find lemongrass is a widely-used ingredient, whilst in Malaysia coconut rice is a popular serving and Indonesia is known for its Sambal Kecap (Chili and Soy Sauce). Flavour and palatepleasing textures is what defines this variety-filled cuisine.

This carnivorous feast needs no introduction especially as we’re currently enjoying the last of what’s left of the BBQ season. Though it’s not clear where the term BBQ, or barbeque/barbecue originated – according to Time magazine, the conventional wisdom is that the Spanish, upon landing in the Caribbean, used the word barbacoa to refer to the natives’ method of slowcooking meat over a wooden platform. Whether it’s over an outdoor pit, in the oven or sizzling on a grill, the popular method of slowly-cooked meat is as patriotic as it gets when it comes to throwing a true garden soiree. And don’t forget to slather your choice of meat in sauce – and keep room for seconds!

HOTEL HOTSPOT •

S

ince its opening, Hotel de Russie has been Rome’s number one hotel for the who’s who including everyone from celebrities, politicians and those who want to rub shoulders with the aforementioned. The hotel is achingly chic and very private. Once you step off the Piazza del Popolo and tony Via del Babuino and into this gorgeous hotel, you’ll instantly understand why it has famous clientele. It’s a refuge from the hectic rush of Rome and is surrounded by stunning nature that you never thought possible for such an inner-city hotel. The landmarked 19th-century palazzo is discreetly tucked away in front of a secret garden that provides a lush, green oasis amid the city making it the perfect spot for an al fresco breakfast or an aperitivo. The hotel has everything you can think of including outstanding amenities that range from a wellness spa, to bespoke cultural itineraries, and even a children’s

programme. Suites are spacious, stylish and classic, with the best suites facing the inner garden. Known as one of the most luxurious spots in Rome is the hotel’s Stravinskij bar, where sommeliers and bartenders always please with the perfect drink or espresso and it’s no surprise that George Clooney, Bruce Springsteen and Pink Floyd have been seen here. Sophistication and style is what to expect in the rooms at Hotel de Russie and you’ll have every creature comfort available to you. For interior lovers, the décor in this hotel is absolutely beautiful with each room having its one colour scheme and own sense of style. Expect to see a palette of pastels, rich grays and dark woods along with pops of orange and quirky accessories and loads of cool coffee table books. Flower prints, plush furniture, bold colours, stripes, marble and mosaic tiles accent each of the de Russie’s 98 rooms and 24 suites. You can also book an interior room, which comes with a terrace overlooking the

luxury hotel’s garden. As if they almost knew what we were thinking, a signature drink arrived to our door at aperativo time each day. Such a nice touch. If you really want to go all out, guests can choose between two beautifully redesigned suites, both by Olga Polizzi, director of design for Rocco Forte Hotels - The Picasso Suite and The Popolo Suite. The Picasso Suite is dedicated to the artist, who stayed there for three months in 1917. It epitomises the hotel’s style with tasteful, modern furnishings and pops of colour. In the living room, prints and pillows featuring Picasso’s designs complement the beige sofa and armchairs. Guests can enjoy an intimate dinner in the dining room, which has a wet bar, an elegant marble table, and built-in shelves filled with books and decorative objects. The 860-square-foot suite has one bedroom, a bath decorated in Italian marble and mosaics, a spacious walk-in wardrobe, and a 270-square-foot private terrace overlooking the hotel’s garden. The Popolo Suite so named because its terrace has excellent views of Piazza del Popolo is even larger thanks to a recent expansion. The 1,080-square-foot suite comprises a living room, a dining area, a master bedroom, a walk-in wardrobe, a marble-and-mosaic bath with a double shower and separate tub, a powder room for visitors, and a 480-squarefoot private terrace. The design draws inspiration from Rome’s rich history and Mediterranean colour swatch, seamlessly blending antiques and modern furnishings done up in luxurious Italian velvets and fact magazine

T

he Ritz-Carlton is one of the older properties in Qatar opening sixteen years ago this month. Two years back, the management team rightly felt that a spring clean was due, so, without closing the hotel, they have refurbished the whole place, almost top to bottom and the job is now complete. I went along to check it out and admire all their hard work. The vast and palatial lobby looks much the same as it always has but that’s about the only things that hasn’t changed! I was greeted by a traditionally warm welcome and was escorted to my room where everything was explained to me about the facilities on offer. A beautiful amenities package lay on the coffee table in

my room that included a lot of chocolate. The attention to detail and personalisation to the customer was evident from the way my amenities package was presented. It featured a mock up front page of Oh La La with my own face on it! They really did know how to make me feel like a star! When the check in was complete and I was left alone in my room, I took a seat on the deep dark-green sofa and pondered where to start. I decided on the balcony. All rooms have a balcony allowing for a great start to the day as you sip your morning coffee from their espresso machine in the room and take in the views of a fast growing country and an ever developing city. I could see the West Bay skyline, Katara and from some rooms, you can look out over the new Lusail district. I could also see the

Lagoona mall which is at the end of the Ritz driveway. Ideal if you need to grab a few items or do a little shopping in the department store there or just have a wander and a browse. The new brunch format has launched with strong verve as the Ritz promises to deliver an afternoon of culinary magic. It’s held at The Lagoon which is their large international dining outlet. Their aim is to offer you a menu that comes from farm to table. There were even hens and sheep in the garden outside the dining area although I don’t think that is quite the farm they meant! Organic products and fresh ingredients are the abiding hallmark of the brunch and it’s excellently laid out on wagon carts and simple wooden racks that emphasize the sheer quality of the food on offer. fact magazine

I tried eating as much as I could because... well...you’re supposed to at brunch, right? I know I wouldn’t totally succeed so I decided to be strategic and had some outstanding salads. There were over half a dozen to choose between and I had a little of all of them as long with the sushi which included eel nigiri - something you don’t get on every sushi counter! The beetroot hummus and the tabbouleh did impress me but most of all their meat was very good. A strip loin of beef looked me in the eye and stared me down. It was carved before me and tasted delicious. The carvery also offered chipotle shrimps and barbecue chicken. You really do need to leave a lot of room for the meats. It’s a really family friendly brunch. Kids can roam freely. The little ones can even jump into the bouncy castle and everyone can have a wander around the gorgeous gardens and see the farmyard animals; sheep and hens in their pens. The pool area is rather special. It’s like a cavernous oasis. The pools meanders around rockeries to give the impression of multiple pools although they all join up. Hidden in among these rocky outcrops are private spaces with sun lounges so the pool garden could actually be very full and you wouldn’t know it. It doesn’t really lend itself to Olympic swimming so much as lazing around, enjoying a good book and cooling off from the heat. There is a full length indoor pool that has marked out lanes if you want to do laps. I decided on relaxing in the pool and burning off all my calories in the gym which is the largest hotel gym in the country. It’s a huge space and a mixed gym although there is a large female-only gym right next to it so you’ll not be fighting for dumbbells. The hotel bought an entire line of products from Tech Gym line allowing users to use state of the art equipment. I loved the slick, simple and stylish equipment. The place just felt new and I’m sure that made me run faster! The spa is a maze of different corridors leading off to different places; to saunas, a Jacuzzi, hamam, to showers and of course to large treatment rooms which are beautifully designed and very private. They even have showers inside the treatment rooms. The staff of course are the best of the best. If you upgrade to club access, then you can use the club lounge which is bigger than my own home. It offers refreshments all day long and in the evening you can relax in high style with sushi, freshly prepared risotto or their eclectic cheese selection while reclining on a classical chaise-lounge. The Ritz has a lot to offer and freshly refurbished, it is looking stylish and modern whilst preserving its old fashioned values and its traditionally highest standards. ✤

DIRECTOR: Roar Uthaug CAST: Alicia Vikander, Dominic West

WHY IT’S WORTH WATCHING?

A revamped rendition of the original Tomb Raider movie, Roar Uthaug’s bow and arrow-wielding protagonist is well and truly the woman we know from the 2013 video game. Succeeding Angelina Jolie in bringing the video game character to life, Alicia Vikander’s portrayal of the same is every bit as promising and intriguing. Following her father’s disappearance when she was barely a teen, Lara Croft staunchly rejects the idea that he is truly gone. Now a young woman of 21, the fiercely independent and resolute Croft is intent on locating her eccentric adventurer dad and embarks on a journey into the unknown. Always Ascending

Bible of Love

By Franz Ferdinand

Reminding us of the dance-floor post-rock of their 2004 debut LP, Always Ascending retains their signature musical excellence while still sounding brand new. Their first album without guitarist Nick McCarthy marks the start of a whole new era for the band. With the addition of new member Julian Corrie, the Scottish indie rock band aim to inject a hint of electronics into the mix. A departure from their more guitardriven roots, the lead single is an ambitious and experimental turn for Franz. A sonic representation of the whole record, it is the bop you never knew you needed! Dubbing themselves as the “Futuristic naturalistic” genre, the band refuses to be put into a box. A synth and sax-heavy track, Feel The Love Go is as promising as their catchy lead single. Merging electronics with back-tobasics indie, the band is truly hitting some new territory with this punchy new record, sure to keep both devoted fans and critics very happy! 64

W

hen it comes to technology, our trusty laptops are a universally coveted gadget. Be it bingewatching on Netflix or trying to make that looming deadline, these prized possessions surely seem to get the job done. Enter the Dell

XPS 13. Light, powerful, aesthetically appealing and reasonably affordable, the XPS 13 is quite possibly the best laptop in the market right now. Refined further than ever before, the Dell XPS 13’s latest series of changes have made it a showstopper for the third year in a row. Boasting a design that feels premium yet not over the top, the laptop blends a metallic exterior with a carbon-fiber interior. Making it the ‘world’s smallest 13-inch laptop’, the next-generation InfinityEdge display is a total game changer. That being said, the stunning new 4k Ultra HD display and new colour option called Rose Gold on Alpine White have definitely impressed us the most. Featuring a 0.65% antireflective coating, the display aims to counteract the downfalls of all touchscreens and screen glare. While the carbon fiber and aluminum chassis ensures better endurability than most systems of its size. Apart from being a serious looker, the device is also equipped with one of the

best Windows touchpads. Impressive fluidity as well as smooth and accurate multi-touch gestures- it makes for a solid typing experience! As for processor performance, eclipsing most of its competitors featuring 7th-generation chips, the 8th-generation processor is a strong competitor and a worthy successor that truly makes its presence known. A major improvement to its predecessor, the XPS 13 9370’s Thunderbolt 3 ports support four-lane PCI connections so you can use the laptop with an eGPU for serious gaming. That said, despite being armed with gaming-ready integrated graphics, they aren’t nearly as good as others in the market. The newest XPS 13 model also marks the turning point on their webcam placement. The 720p webcam comes equipped with four microphones and produces visuals as sharp as the latest MacBook Pro, while the new IR lens work well for speedy logins using Windows Hello. If an efficient battery life is one of major requirements, look no further! Among the largest batteries in any 13-inch laptop, the XPS 13 claims an impressive 22hour run. Pleasant visuals, stunning design, solid battery and stronger heat dissipation, there’s plenty going on in Dell’s newest release. As for us, the XPS 13 remains one of the best laptops in the tech world. Let us know what you think! ✤

New silhouettes are introduced through subtle asymmetric cuts, paper-bag waist trousers, patch pockets and structured, oversized shapes. The result is familiar yet a little unconventional. Andreas Löwenstam, H&M’s Head of Design, Menswear, says: “The dualities in this collection are key to the modern man – traditional tailoring and classic workwear, city power dressing and calm casualwear, soft and technical fabrics, luxe and street. Lebanese Food Crush

• CULINARY SPOTLIGHT

A

ptly named after a popular Beirut street that is known to be colourful, hip and trendy, Gemmayze is the embodiment of modern-day Lebanon and you feel it from the second you walk in. The venue is rather vast and you can feel as if you have the restaurant to yourselves on quiet evenings. That said, service is superb. There are quite a few large tables that can seat up to a dozen people, making this restaurant ideal for large groups, family gatherings and corporate functions. The kitchen is open, which adds to the authenticity allowing customers to see their food being prepared and for the smells to travel around the restaurant. The culinary offerings impressed us from the start. The fattoush was fresh and tangy, the tabbouleh was tasty, and the hummus was great with freshly baked, warm bread, produced in house. The kibbeh nayeh was a particular treat and that isn’t always easy to get right – but Gemmayze nails it with flavour. For those not familiar, this is a dish that is quintessentially Lebanese made from raw minced lamb and combined with bulgar, pureed onion and mixed spices. Also, worth mentioning was the chicken liver which was super succulent, the falafel which was a reliable palatepleaser and the cheese and spinach sambousek - cooked beautifully. The mixed grill was cooked to order and the lamb chops, grilled chicken shish taouk and beef lay perfectly grilled inside warm Arabic bread retaining their heat and flavour. I barely had room to try desserts but you can’t fail to be impressed by the distinctive Arak ice cream which is a traditional sweet with a twist. A wide variety of shisha is available and the aromas from the various flavours add to the magical vibe that inhabits Gemmayze. Service is noticeably strong. The restaurant is well staffed and the team have hit the ground running with a comprehensive understanding of the menu which was highly apparent, adding to the warm and welcoming feel.

82

On selected nights of the week, live Lebanese musicians perform on the stage, transporting you to the streets of Beirut. The restaurant is open for lunch as well as all evening but my only tip would be that it’s not the place to go if you want an express meal or a quick bite. Take your time, savour it all and don’t be in a rush. Our table was never less than full with food – just how we like it! When it comes to Lebanese restaurants, I always say that you had better get the food right as there is a very competitive and critical audience ready to pounce if you don’t. Gemmayze manages to hit all the right notes and looks set to compete with the best of them. Want to make up your own mind – book a table today! ✤

Sport Meets Good Grub

There is never any shortage of sport in this life but there is perhaps a shortage of places to watch it. LaLiga Lounge at Sheraton Hotel Park seeks to bridge that gap by offering the market a new option for sports lovers to enjoy big matches with excellent food to accompany, as Craig Ferriman finds out. fact magazine

85

• FOODIE CORNER

L

aLiga Lounge has an ideal location; situated in Hotel Park outside the Sheraton Grand Doha Resort & Convention Hotel, the venue boasts four levels of underground parking next to it so it’s easy to get to and easy to park when you get there. I must have counted a dozen screens in this place. Though there is predominance towards Football, we also encountered an NFL game and I’m sure that’s not the only exception, but it is predominantly English Premier league and European league and international fixtures that will get pride of place on the screens. If there is a champions league match on, then this is the hot new place to catch it. The other innovative aspect to this outlet is the fact that it is not just a sports bar but a family-friendly venue. The kids can come along too and you can safely deposit them in the kids’ area which had lots of games and a cage where informal Footie and penalty shoot-outs are set up. “Big kids” can also veg out on quieter nights when big matches aren’t on by utilising the games zone which has games consoles set up for guests to use. There are private function spaces too if you’re holding a party. The food is not what you would expect. If you think sports cafe, you might think burger, fries and basic finger food and you wouldn’t be wrong in those assumptions but their menu is a little fancier that that. If you like a seriously big burger while you watch the game, 86

fact magazine

the Hamburgusea Futbol club is a must but be warned - it’s not for the faint hearted or the weak of appetite! It was so big that it had to be cut in two as I just couldn’t fit it in my mouth. To say it had two grilled beef patties, cheese, onions, lettuce, and tomato with barbecue sauce does not imply it was as big as it was, but, oh my, it was (not that we’re complaining!). The thing is, LaLiga’s menu is much more sophisticated than just standard fare. It has a very Mediterranean vibe with a Spanish emphasis courtesy of its highly skilled chef, Juan Ramon Sobero. The paella is perhaps a surprising signature dish but is gorgeously cooked and a wholesome and healthy way to accompany watching a match. It has the advantage, I would say, of being good for sharing too. Juan has prepared two signature paellas, one has roast squid and clams with black ink. The other is a saffron and shellfish paella which combines prawns, mussels and clams. In true Meditteranran style, there are hot and cold mezze dishes to choose from with distinct flare. The salads are healthy and delicious - well worth it if you’re especially health conscious and there’s a decent choice of seafood and meats that can be char-grilled in the Josper grill. There is also a merchandise shop at the side that sells football strips, caps and other memorabilia including some signed balls from top players who have visited LaLiga Lounge. It’s quite the sport lover’s paradise and the foodie’s dream! ✤

His recipes are playful takes on established dishes and methods, incorporating 21st century artisanal ingredients. At Morimoto restaurant in Mondrian Doha, you can experience luxurious dining in a 16-seat sushi bar or the main dining area surrounded by rose-gold studded columns. A vast selection of very fine sushi and sashimi roots the restaurant in Japan, which also asserts itself in preparations of Kobe-style beef and in tofu and noodle dishes. But other dishes and ingredients branch out to many more parts of Asia, and even to Europe and Latin America. We sat at the sushi counter, just in front of the open kitchen where we could watch all the action. The Executive Chef Timur Fazilov suggested the omakase menu, a Japanese-style tasting menu; it’s the perfect choice for our first visit to Morimoto. The menu consisted of 10 dishes – yes, that’s right! We were in for a real treat! First, they served the appetisers; edamame with meldon sea salt; kani-miso bagna cauda, a crabgarlic puree served with local vegetables, chef Morimoto himself created this dish inspired by local traditional hummus; followed by wagyu beef carpaccio seasoned with yuzu soy, ginger and sweet garlic, a very delicate dish ideal to open up your appetite. Then we tried the tofu miso soup, prepared with white miso broth and silken tofu and the spicy Alaskan king crab, covered with tobanjan aioli, micro-cilantro and green mango. The crab was cooked to perfection, giving an explosion of flavours and texture! Next the very unique oyster foie grass, market oyster with foie grass and uni (sea urchin) dressed in teriyaki sauce, an audacious and savoury mix of earth and sea. This is a signature dish available in all the Morimoto restaurants around the world, a fusion dish where Japanese cuisine meets Western tastes! Most impressive of all was the sashimi plate, arranged with exquisite attention to detail, it consisted of a selection of oh toro (fat tuna), maguro (tuna), sake (salmon), hamachi (yellow tail), unagi (fresh water eel) and sweet ebi (shrimp). Most of the fish served at Morimoto is imported from Japan

and Europe. The freshness and quality of the fish is outstanding, exactly what I was expecting from a renowned Japanese restaurant. And then on to the sushi. Soft shell crab maki roll - deep fried soft shell crab, asparagus, tobiko, avocado, scallion with spicy mayo. Pay attention to the rice. It was still just warm and only very lightly touched with vinegar, just the way it should be. We follow our culinary journey with A5 certified wagyu beef, Ishiyaki-style. It’s prepared for us on our table and comes accompanied with three different sauces: soya, spicy soya and chimichurri. The meat was luscious and hugely flavorful! From Japan it was off to China, mingled in an entrée is the roasted Peking duck. The crisp-skinned, moist duck was served with steamed bao buns and two side sauces, hoisin sauce and spicy sweet sauce. We finished our extraordinary dinner on a sweet note, the rich chocolate sphere with caramel ganache and chocolate sorbet was just divine, whilst the chilled cheesecake soufflé served with orange cream, seasonal berries and strawberry sorbet was a delicate dream, both desserts were dangerously good! We were absolutely pleased with their top -notch service and hospitality, the staff is attentive, and knowledgeable without being intrusive. Our final verdict; Morimoto Doha offers you amazing taste, stunning presentation and outstanding quality. It’s Morimoto’s moment, the place to be is right here, right now. ✤

T

he Grand Hyatt Doha Hotel & Villas was opened nearly a decade ago and is a well established luxury hospitality offering. For years, its brunch has been considered up there with the best and its accommodation facilities have been considered of a five-star style without question. I started a day of leisure there with a class held in their giant gym. It was the express abs and stretch session and I was actually the only participant in the class so plenty of attention from the instructor! The session proved the perfect wake up as it loosened the muscles, warmed them up and toned and exercised various parts of the core and abdominal region. It was only half an hour and got the day going in a positive but not too aggressive fashion. With a schedule of classes that range from pilates to kick boxing to cross fit and yoga, there is something for everyone. Their large fitness centre is filled with state-of the-art Technogym equipment. I spent some time with one of the half a dozen personal trainers that they have. His name was Jose. He moved to Doha from Singapore and loves the people that he meets here. His manner was positive, supportive and very encouraging. Jose conducted a consultation with me as a prelude to starting a programme of training. He wanted to see how fast I could run a kilometre on the treadmill at a steady speed, how long I could plank and how I managed certain weights before taking my measurements and working out a programme tailored for me. The service was highly professional, and highly motivational. Having checked out the gym, I’d worked up an appetite and where better to get some breakfast than the Santa Monica Breakfast Club. It opened last year in the main chapter of the hotel and has quickly established a strong reputation. I’ve been there a few times and it’s never empty; the vibe is cool, and the food great. Although open all day, I was there in the morning where the breakfast buffet was still on display and numerous stations around the restaurant provided everything from Arabic and Indian breakfast items to American waffles and Canadian pancakes through to eggs, omelettes and fresh fruit and juices. It was a mean breakfast and the staff were highly efficient, friendly and attentive refuelling me with plenty of coffee. I enjoyed a 30-minute express massage which was done by Nadia, a South African masseur, in the peaceful and stylish surroundings of the Jaula Spa. It was the perfect antidote to a morning’s exercise! While the hotel has indoor and outdoor pools, I wanted to dive into the sea so I meandered through the beautifully-decorated gardens to the beach which stretches extensively and is anything but overcrowded. In the middle of it, I found a quiet cafe serving refreshments under shade and there were plenty of sun-loungers with umbrellas to choose from. The sea was delightful and as I lay under the suns rays I felt wonderfully detached from the hustle and bustle undoubtedly going on in the city outside the hotel gates. This was much-needed, quality ME TIME. Just a little something that every single one of us needs now and again, and the Grand Hyatt Doha Hotel & Villas is happy to accommodate! ✤
