I

n a very unexpected fashion, Qatar welcomed the first of its winter rains last month and we were just as excited to see the temperature drop as all of you! This time of year holds more adventure, activity and all-round outdoor fun that we all love. For Doha, after what has been another stiflingly hot and humid summer, we can now venture outside and leave behind the comfort of the air conditioning for more pleasant temperatures (finally). So, it’s only fitting that this issue we bring you a go-to guide on desert camping; one of the country’s, and in fact the region’s, favourite winter pastimes. If you’re up for taking a trip into the desert and spending a few nights stargazing, we’ll tell you where to start, what to pack and how to have a safe and unforgettable time. From the best places to pitch your tent, where to buy all your gear and all the need-to-know about camping with a true nomadic spirit, we’ve got it covered from a to z starting p29. This year, outdoor lovers have even more to celebrate as the Al Enna Project starts to take shape - a brand new spot for experiencing the desert with complete safety and lots of home comforts. CAMPING 101 There’s nothing more important than being well prepared before you head out to experience life under the stars. Here’s your guide to getting desert-ready...

WHERE TO SET UP CAMP The Qatari desert is full of wonderful places to head out and explore, and the options available might be a bit overwhelming when deciding on where to go and what to see. You can either go for the beaches on the north or western coasts, or dodge that busy area for a bit of peace and quiet and head out to the gravel plains which are home to some of the most beautiful flowers in the country. Located north of Dukhan, the Ras Abrouq peninsula is a favourite spot for weekend campers who come to enjoy the golden sands and pretty limestone scenery. The place is full of wildlife with plenty of animal sightings including hedgehogs, kangaroo mice, and the sand gazelle. An hour’s drive from Mesaieed is Inland Sea (Khor al Adaid), Qatar’s most famous and popular camping destination. The country’s southernmost point, the area is only accessible by 4-wheel drive vehicles. The scenery there is breathtaking with towering sand dunes soaring from the water’s edge. At the opposite side of Qatar is Umm Tais National Park which has some of the most beautiful sandy beaches, and it’s where Doha’s kite surfers can be found on the weekend. Offshore, a few small islands surrounded by mudflats can be reached by vehicle when the tide is low, where you can find nesting turtles and stunning mangroves. While you’re in Umm Tais don’t forget to check out the pearling city of Al Zubara, which is only a few kilometers away. ✤ 30

TRUFFLES Though they’re not easy to find, wild truffles can be discovered in certain desert areas of Qatar. Usually found after the heavy winter rains, around March or April each year, these truffles like to hide amidst the sand under bushes and it is quite a common sight to see whole families methodically combing an area in search of their prize. The truffles are brownish in colour, with a fungus type appearance and can sometimes be up to four inches (10cms) in circumference.

THE GREY MANGROVE Qatar is home to the Avicenna Marina, also known as the grey mangrove or white mangrove tree, communities of which form several forests around Qatar’s shores. These mangrove swamps are home to a wealth of life, including a species of sea slug that was found in 2007 by a member of the Qatar Natural History Group. The largest area of mangroves - and the oldest - can be found in Al Thakira and Al Khor. LIZARD Dhabs, or spiny-tailed lizards, there are more than 15 species of these gentle giants distributed from North Africa to India, some of which reach a bulky 65 cm. All are characterised by an elaborate suit of armour, consisting of a tail adorned with dagger- sharp spines and a head that would not look out of place on the end of a medieval battering ram. They are usually only spotted at a distance through the shimming Arabian heat-haze, which is a pity, for there are relatively few people who have had the chance to study the amazing mechanics and colours of the dhab from close up. ✤

THE SEVEN GOLDEN RULES OF CAMPING

MUST-HAVES

l Always pitch your camp in an empty open space far from jutting rocks or steep sandy inclines. l Pick a spot clear of plants to avoid any hazardous fire outbreaks. l Do not camp in places that are prohibited, the warning signs are there for a reason!

l GPS systems have become a camper’s essential tool but it’s always a safe bet to take a map along just in case the navigation system stops working or doesn’t have the latest routes. l A compass, shovel, torch, rope, air pump, and Swiss- knife are fundamental to any camping trip.

FIRST AID THE CAR l Before you hit the road make sure you give the car a really good check up for any mechanical problems; tyres, headlights and battery are the most important. l Always travel in a convoy incase of a breakdown. l If you’re heading out to the desert a 4x4 and an experienced off-road driver at the helm is a must! l Never pass a petrol station without filling up, you don’t know when the next one will appear.

THE FOOD l Don’t go over board with the menu, just take options that are easy and simple to make. Sausages and smores are always a great idea! l Canned food is always an easy meal and won’t take up too much space in the car. l Healthy snacks like cereal bars or quinoa crisps are good for when you just want something to nibble on.

THE WATER l Water is essential for anyone hitting the desert so make sure to stock up on H20 but don’t foolishly waste it; water will be your best friend out there. l Remember you’ll need to bring water for both drinking and washing up. 34

l A first aid kit should be prepared in advance with all the basic necessities like band aids, burn cream, painkillers, insect repellent and medicines just in case someone gets hurt or sick. l If you bring along antibiotics, make sure to store them somewhere cool.

ADVENTURE AT AL ENNA An enhanced experience awaits campers and beach-goers at the Sealine and Inland Sea areas this winter season, organisers of the Al Enna project have announced.

T

he winter camping season begins this year on November 1 and continues until March 31, 2019. Al Enna – a Qatari word which means camping ground – is a development project that has been launched to ensure campers and visitors to Sealine and Inland Sea can benefit from safe and enjoyable experiences while protecting the wildlife in the area and providing access to services and amenities. Representatives of the Project’s partner organisations have detailed that Al Enna aims to enrich the overall desert and camping experience through improved safety, protecting

the area’s environment and preserving natural life, boosting services as well as improving entertainment options provided to all campers, visitors and tourists. Al Enna’s project partners are the Ministry of Municipality & Environment; the Ministry of Interior; the Public Works Authority (Ashghal); Qatar Tourism Authority (QTA); Qatar Motor & Motorcycle Federation (QMMF); Batabit (Qatar Centre for Motorcycles) and Mawater, Al Enna Project follows two main tracks. The first will focus on enhancing the overall desert and camping experience for both Qatar’s residences and visitors. And, the second will focus on infrastructural development and extending basic services to

200 camp grounds in Sealine as part of a pilot phase of a broader development project. Khor Al-Adaid is characterised by the beauty and diversity of its sand dunes. As one of the few rare places in the world where sand dunes meet the sea, it is a popular hotspot for residents and a must-visit for tourists alike. An important element in enhancing the camping area is designating a special zone for ATV sports thereby ensuring the safety for visitors while protecting the campers’ privacy. The ATV sports zone will be built over an area of 300,000 square metres and will feature 28 motorcycle rental shops and eight ATV tracks (two for advanced riders, one for intermediate level riders, four for beginners and one for ladies only). To protect the indigenous flora and fauna, dune bashing will be prohibited in areas with wildlife. In addition, the Ministry of Environment and Municipality will introduce a wildlife nursery to reintroduce plant and animal populations affected by previous camping seasons in a fenced area spanning 326,000 square meters. In terms of waste management, plastic materials in restaurants and cafes will be banned and recycling services will be provided. As part of this project, Sealine Beach will see major developments over an area that can accommodate up to 15,000 people. This includes creating shaded areas, opening cafés and restaurants as well as designating a special area for families and another for children. In addition, fitness machines will be installed as well as equipment provided for water and beach sports such as football and volleyball. A special entertainment zone which will include a theatre will also be made to host cultural activities and events - such as poetry nights - during the weekends. To be in keeping with Qatar’s cultural heritage, the zone’s design will draw inspiration from the surrounding area’s natural features. ✤

BBQ 101: GRILL GAME, STRONG Be the BBQ master of the grill by cooking like a champ with FACT’s top tips and tricks for keeping your BBQ gatherings on point.

USE QUALITY INGREDIENTS: Nobody’s saying that you shouldn’t get your meat from a local supermarket, but no amount of marinade will magically turn cheap produce into a culinary delight. To avoid any disappointment, choose good quality meat from naturally raised animals and don’t just limit your choices to bangers and burgers; there’s nothing better than splashing out to indulge the ultimate meat cravings with a big slice of dry-aged beef rump and watching it sizzle away on the grill. Seafood is also a big winner!

MARINATE YOUR MEAT: Probably the most important rule for bbq meat and chicken, using the right marinade is a must. It’s even better (and tastier) if you leave your soon-to-be lunch or dinner steaks, sausages, burgers, ribs and other meat to marinate for a few hours or possibly overnight to ensure that your food is going to be

packed with flavours. This will complement the smoke from the BBQ and you can even make extra marinade to brush the meat every 10 minutes or so whilst it’s on the grill.

CHOOSE THE RIGHT CHARCOAL: Be sure to use good quality lumpwood charcoal as the charcoal you choose can dramatically affect the way the food tastes. The burning qualities of lump charcoal are fantastic in that they don’t need synthetic firelighters to get going, and are ready to use quicker than the standard briquettes. The burn journey from coppicing leaves a little of the wood character intact which gives your grilled meats a fantastic subtle smokey/wood flavour. Another good tip here is to add wood chips with your charcoal; apple wood or cherry can add a sweetness to the majority of meats. Simply soak the wood chips in water and add them to the BBQ once it’s lit.


OUTDOOR LIVING •

BEGINNERS, GET A MEAT THERMOMETER: It could make the difference between an ok steak and an excellent steak – a meat thermometer is a great tool. Always insert the thermometer into the centre of the thickest part of the meat, not touching any fat, bone, or the grill. Also keep in mind that the meat’s internal temperature will continue to rise after it’s taken off the grill, so you may want to pull the meat off when it’s about 10 degrees below the target temperature.

LET THE MEAT REST: Be sure to rest your meat after cooking by covering it in tin foil or moving it to the cold part of the grill, leaving for the same amount of time as it has spent on the grill. When meat cooks, the moisture on the outside evaporates, and the heat forces the meat’s remaining juices to the centre. Allowing the meat to rest before serving will help to redistribute the juices throughout the cut, resulting in moisture-packed, tender and tasty meat.

BRING YOUR SIDE-DISH GAME: Though meat is principally the biggest element of a bbq, don’t sidestep the side dishes as they can make a significant difference to even good tasting meat. Use the opportunity to take advantage of seasonal fruits and vegetables teamed with a well- dressed salad, a variety of dips and maybe some bread too. ✤

BE PATIENT AND ATTENTIVE: Impatience can be a cook’s worst enemy – don’t worry about guests, they will better appreciate quality, wellcooked food even if it takes a little longer to get ready. Being patient and attentive whilst cooking on a BBQ will work wonders for your meat, make sure that you wait for the flames to die down, the coals should be a settled light grey which creates very even and hot heat. Trim back excess fat from the edges of cuts such as lamb chops. When the fat reaches a certain temperature it’ll render down and drip onto the hot coals, causing flare-ups, which can potentially spoil the meat. Remember to control the heat from your BBQ, the best way to do this is by piling the coals to one side; creating an extremely hot area and an area with no direct heat.

A

s I approached Sharq Village and Spa I actually felt a little giddy with anticipation. The nature of the resort is that of a traditional Qatari desert village with the elegant modern accommodation spread across 14 traditional style villas. 174 rooms and suites are set amidst these whitewashed residences each around tranquil courtyards with rooms overlooking the vast pool areas, the stunning water front of the Arabian Gulf or the lush manicured gardens which surround the resort. The ability to marry contemporary, cutting edge service and facilities with traditional architecture and surroundings is no mean feat but Sharq Village and Spa has succeeded in this - effortlessly. The Ocean View King suite combines decadence and traditional Arabian elegance. The vast veranda style balcony with its mahogany, trellised balustrade is perfect for couples, families or businessmen wishing to enjoy the balmy evening air whilst enjoying a sense of seclusion and privacy. Whether standing looking over the pool and gardens, speckled with large lanterns illuminating the walkways or gazing at the Gulf meeting the sun as it sets on the horizon, one is immediately drawn into the sense of luxury and peacefulness. Rooms and suites, including Beit Al Shyoukh – The Royal Villa- boast rainforest showers and deep soaking baths with amenities supplied by iconic British luxury brand, Asprey. The fusion of state-of-theart technology and luxuriant décor may make it very difficult to venture beyond the walls of your accommodation. Throughout the lobby the elegant tones of a Grand Piano lingered in the air as I made my way to dinner, admiring the stunning Chandelier suspended high above me. The molten glass globules, descending from the ceiling, glowing and illuminating the Pianist seated below highlighted the clever way in which contemporary features make every space unique. My final destination of the evening was Parisa, meaning Angel, the sea-view restaurant with enviable views across the landscaped grounds and Sea beyond. After ascending up a staircase whose curves hug yet another stunning piece fact magazine

of suspended illumination, I discovered that the tone of Parisa is that of understated elegance and the stone-topped tables and wrought iron furniture adorned with blue and white crockery gave a fresh feel to the dining area. The food was far from predictable or mundane. The appetisers included an array of salads such as MastO-Artisho comprising Labneh, artichoke and walnuts delicately seasoned with mint and lime juice as well as meat based dishes such as Dolma Mix with minced lamb, rice, eggplant and peppers in a tomato sauce. More Persian delights were cooked and presented in traditional clay pots , the highlight of which was definitely the Slow Cooked Lamb and Spinach with Red Beans. All of the food is so refreshingly authentic and brilliantly executed, however, the show-stopping dishes certainly come from the Charcoal Grill. Beef, lamb, prawns and fish are given a vibrant kiss of both colour and flavour with a blend of saffron and onions. Dessert was dominated by staples such as halva and crème brulee infused subtly with rose water and saffron, once again to further infuse the palate. Following such an indulgent dinner, breakfast in bed or rather on the terrace of my suite was a very welcome start to the day. Fresh fruit, pastries and western staples such as hash browns, eggs and sausages set me up nicely for my Spa experience which followed. The large, heavy wooden doors open into a series of rooms around a central courtyard with a calming water feature, which to all intents and purposes looks like a typical Qatari Village dwelling. The 50 minute signature massage treatment was further evidence of the importance of bespoke experiences for every guest and the quest for excellence in every area of the resort. After a light, lazy lunch in Al Seef and further idling by the vast, glistening pool I ventured to Al Liwan – roughly translated as The Terrace – which is the hotel’s buffet style restaurant for their Seafood Themed Buffet Night. The décor is mesmerising and decadent with the centrepiece being a series of central archways below which are planters containing miniature topiary. In addition, traditional carvings are illuminated from below giving a further sense of grandeur. There was no way that I could fail to be 50

impressed by the surroundings or the food on offer. Large ice filled chillers displayed bountiful amounts of crustacea and freshly prepared fish. Lobster, oysters and delicately crafted, colourful sushi and sashimi combined with a plentiful plethora of salads and freshly baked breads. The live cooking stations were as much a treat for the eyes as the palate and allowed diners to tailor dishes to their own exacting standards. Truly an oceanic odyssey. Sad to be departing after feeling refreshed and thoroughly spoiled my experience was topped off on the final morning by breakfast, this time back in Al Liwan. All of the continental staples such as cold meats, cheeses and salads were there in abundance along with the crustiest warm breads, fresh fruit taking in every colour of the rainbow and delicious flaky pastries. The stations which housed every imaginable type of grain, seeds and dried fruit was a first for me and the live omelette station was fabulous. Sharq Village and Spa is the kind of resort that will leave you feeling that you will run out of fitting adjectives to describe it before your visit is over. Breathtaking, decadent, stunning, resplendent - I could go on and on. Truly an experience not to be missed when visiting Doha! ✤

A

festive charm engulfs this small mountain enclave with its narrow winding streets piled high with freshly fallen snow, fir trees strung with twinkling fairy lights and the vast peaks and pistes of the Alpes all around, with Mont Blanc the highest peak in Europe front and centre on the horizon. Named after the elevation at which it sits, Courchevel 1850 forms part of the world’s largest ski resort, encompassing three valleys, 600km of ski runs and over 160 ski lifts. A haven for winter sports enthusiasts and luxury jet setters, the focus of this quaint mountain retreat is the Les Grandes Alpes Private Hotel; a property which over the years has taken on many roles, beginning as a post office, before transitioning into a bank and ski school, and then opening as the very first hotel in Courchevel back in 1948, the same year as the resort’s first ever ski lift. Located in the very heart of upmarket Courchevel 1850, the Les Grandes Alpes is an upscale mountain property benefitting from a prime position on the piste and making for one of the only ski in/ski out hotels in town. Sitting alongside the likes of luxury brands such as Bulgari, Louis Vuitton and Chanel, the stone facade of the building makes for the stereotypical representation of a luxury alpine retreat, complete with wooden balconies and rooftops heaving under the weight of freshly fallen snow. As if stuck in a state of eternal Christmas, Les Grand Alpes is the perfect marriage of chalet and luxury hotel that leans heavily into the high-end market. A whimsical winter wonderland awaits guests from the moment they arrive at the property, with a festive staircase aligned with foliage and wicker creations.

SUITE LIFE

The property, which was remodeled in 2012 comprises of nine apartments and a total of 30 bedrooms and suites, with the unique layout of Les Grandes Alpes allowing for complete customisation when it comes to room configuration. The four-bedroom Emerald Suite occupies the entire fourth floor of the property and clocks in at an impressive 300m2, offering remarkable views over the tree-lined slopes and numerous ski lifts. South facing dining and living rooms represent the ultimate in comfort, with a circular glass fireplace representing the heart of this particular penthouse. Curled up on the sofas with a mug of hot chocolate and fur blankets while watching the falling snow makes for a truly memorable evening and one of the (many) highlights of a stay at Les Grand Alpes. These spacious suites have more to offer than the view. A professional kitchen, where private chefs can create culinary marvels is just the tip of the iceberg. Similarly, the children’s play room is not necessarily what you might expect, but offers the perfect solution/excuse for adults to venture into the suite’s very own miniature spa, complete with massage and steam rooms that complement the luxury values of a property where it would appear nothing is too much trouble! Les Grand Alpes offers an undeniably luxury experience wrapped up in a contemporary and quirky charm thanks to French interior designer Jean-Marc Mouchet, where Arctic and Antarctic animals are utilised in both artworks and decorative touches throughout - from bold polar bear prints to the plastic penguins that line the lobby. Much like the property and its facilities, service is premium, taking the notion of fivestar luxury and raising the bar that bit further. Each suite comes with a personal butler (ask for Gael), who is on hand to ensure a personalised 54

guest experience at all times, one where no request is too much or too little, resulting in Les Grand Alpes feeling like a genuine home away from home (with lots of snow!). The bedrooms are particularly impressive, with their wooden cladding helping to create a feeling of alpine adventure. Insanely comfortable beds are laden with pillows and fur blankets and skylights cleverly positioned above, ensure guests can marvel at a star-filled sky through a funnel of snow as they drift off to sleep. Luxury touches are noted and appreciated from the fur-lined slippers and bathrobes through to the heated toilet seats and Hermes toiletries.

LUXURY DINING

Catering to the elite clientele of Couchevel 1850, the dining destinations at Les Grandes Alpes are expectedly high-end. For the après-ski experience, many guests will flock to Bellini’s, a lounge bar situated adjacent to the hotel’s reception area. As the namesake suggests, the peach Bellini reigns supreme at this late night establishment and comes served in ornate crystal glassware using freshly imported peaches representative of French decadence at its finest. There’s also Le Bizan a small sushi restaurant situated at the rear of the bar, with minimal seating. A sushi spot is perhaps the last thing diners might expect high in the Alpes but the new style cuisine which fuses together both Japanese and Mediterranean elements, astounds in both flavour and presentation, headed up by the Executive Chef of Zuma in Rome.

SKI AND SPA

When it comes to recreation, guests have the opportunity to ski or spa. Zooming down the mountainside certainly offers a thrill and even beginners are catered for via the in-house team of friendly and encouraging ski instructors. Getting kitted up while sat upon Hermes leather upholstery and slotting our feet into pre-heated ski boots has got to be the ultimate way to start an alpine adventure and we fear that there

is no going back now we know just how opulent a ski experience can be. By comparison, the Bellefontaine Spa offers a more subdued experience via a variety of bespoke treatments undertaken by expert therapists, utilising ingredients from the Alps including glacial water. While our suite had a mini spa, it doesn’t quite compare to what the Bellefontaine offers guests at Les Grand Alpes. An indoor heated swimming pool takes on the appearance of a luxury boathouse offering views of the ski lifts and snow-capped peaks from the comfort of regal chaise longues, while solace from the cold can be found in the sauna and steam bath. Though the resort is a 2.5 hour drive from Geneva along precarious mountain roads hugging close to the limestone mountainside, the demand for luxury prevails. With this specific clientele in mind and a money-is-no-object attitude, private helicopter charters can transport guests over the Alpes to Switzerland and Lake Geneva in less than half an hour. A breathtaking experience on its own! Winter sports enthusiasts flock to Courchevel for the skiing, mountains and mesmerising natural beauty. With the crisp mountain air providing a brisk revitalisation, it’s the cold that is most noticeable and at minus 18 degrees it feels as though your heart is being grasped by jack frost, or perhaps it’s just the magnificent views that leave us in a state of perpetual awe. But the beauty is that you don’t have to ski or snowboard, for the wealth of activities available in this compact mountain village is quite remarkable. From spa days to dog sledging and even the high-speed toboggan run which hurtles the brave down a 3km trail through alpine forests and snow drifts – there’s snow boredom here (see what we did there). ✤

The new car, which takes its name, Portofino, from one of the most charming villages on the Italian Riviera, an eponym for stylish elegance, is the most versatile model in the range. A Ferrari designed to be driven every day that also effortlessly converts from an authentic ‘berlinetta’ coupé to a drop-top capable of delivering a unique Ferrari soundtrack and superb driving pleasure even in day-to-day situations. The retractable hard top (RHT) has been completely redesigned and can now be opened or closed in just 14 seconds on the move at lower speeds, making the car even more practical. Careful modelling of the RHT housing now allows the luggage compartment to hold two cabin trolleys with the roof down and three with the roof up. His powerful speech highlighted the emotional parallels between Ferrari’s track pedigree and rich heritage and the Middle East’s world-class driving environment and love of luxury. Creating exquisite local Ferrari experiences through events and digital content are a sentiment of the brands commitment to the region. The activations started two years ago, with an exploration of the ‘Deserto Rosso’ in the Liwa desert, before evolving into the ‘Passione Rossa’ campaign. Key to the Ferrari DNA is the Ferrari lifestyle, and allowing clients access to a full spectrum of exhilarating experiences and emotions. Starting with the V8 power unit, which has won the outright International Engine of the Year award for two consecutive years in 2016 and 2017, Ferrari’s engineers worked on several different fronts to deliver a power output of 600 cv at 7500 rpm, the equivalent of 156 cv/l, introducing new mechanical components as well as specific engine management software. Maximum mechanical efficiency is guaranteed by the use of high-resistance aluminium alloy pistons and con rods with innovative geometries and specially-shaped high-tumble intake manifolds. Combustion is optimised across the engine’s rev range 64

by an ion-sensing system with adaptive ignition and multi-spark functionality. One of the Ferrari Portofino’s most impressive features is that it is significantly lighter than the California T. To achieve this, the Prancing Horse engineers worked extensively on every aspect of the car. All the body-in-white and chassis components were redesigned and integrated to an even greater extent. The A-pillar, for example, now consists of just 2 pieces compared to 21 different components in previous models. Modern production technologies, most notably sand-casting which allows the creation of hollow components, allowed designers to create innovative forms that are lighter. Much honing was also done on the both the Ferrari Portofino’s basic running gear and its components and their electronic control systems. The car’s vehicle dynamics were optimised by working on its suspension set-up through the introduction of stiffer springs (+15.5% at the front and +19% at the rear) and by adopting the latest evolution of the magnetorheological damping system (SCM-E) to guarantee superb ride comfort. The Magnaride system has been uprated with dual-coil dampers to improve the precision and speed of adjustment of the magnetic field as well as a new ECU (Gen3) which implements control algorithms developed by Ferrari, in particular those relating to vertical dynamic control of road input frequencies. The result is improved body control and reduced roll, enhancing the sporty driving feeling, particularly when the Manettino is in ‘Sport’ mode. In ‘Comfort’ mode, on the other hand, ride comfort is superior to the previous model on rough or uneven road surfaces. While the Portofino’s exterior exudes a stylish compactness and instantly marks out its GT vocation, its cabin too has also been carefully designed and developed. The Ferrari Design team pinpointed certain specific essential requirements, the foremost of these being formal and functional coherency between the car’s exterior and its interior, weight reduction and creating more space for occupants.


Seen in plan view, the cockpit’s symmetrical arrangement and the improved rear seat space are clear. The dashboard architecture in particular features two shells, which incorporate all of the technical components, and a bridge which visually connects the instrument panel area with the central tunnel which, itself, was clearly conceived to act as a divider between driver and passenger. One signature characteristic of any Ferrari car is the meticulous care lavished on the selection of the materials, trims and assembly procedures. The Ferrari Portofino’s sporty yet elegant character highlights these aspects of the creative and design processes demanded to hone every last detail, marrying high-tech elements and materials with manual assembly and handcrafted finishes. ✤

How has Peruvian cuisine evolved alongside the growth of the restaurant industry – do you have to change anything to suit certain markets or do you keep it authentic everywhere? Ten years ago, Peruvian cuisine didn’t have the popularity and recognition that it has now. Every week a new Peruvian restaurant opens all over the world and almost in every big city you will find that a good Peruvian restaurant exists, but this is just the beginning of a story that in time will show to the world the opening of thousands of deferent concepts of Peruvian cuisine, I’m sure. To make that happen, we need to keep trust in our authentic flavours and soul. We can’t change the flavours depending on the market because if we do, we loose everything. You received The World’s 50 Best Restaurants Diners Club Lifetime Achievement Award 2018 - what inspires you to keep cooking after so many years in the industry? I was born to be a chef. I had this dream since I was eight years old. I could be 80-years-old and have a lot of restaurants, but I will still always be that little kid that loved to cook every day.

I feel that the whole year for me is a vacation because I am doing something I really love, every day. As a world-famous chef, what matters more – taste or presentation? Taste, always taste. Share with us your tips for preparing the perfect ceviche… Cut the fresh fish filet in cubes. Season with salt and Peruvian chilli pieces, let rest for five minutes. Then add the lime squeezed in one by one. That is it. Do you have any quick advice for young budding chefs? Be patient, your moment will come. Till then, keep learning every day. ✤

A

fter a pretty walk through the gardens of the hotel complex, you’ll find what looks like a giant conservatory that is home to Rocca. This probably isn’t the place to visit if you are on a strict diet. I rather experienced a carbs overload – one that is perfect for cheat day. It started from the moment that we sat down and got presented with a lemon and pecorino focaccia. It was moreish and addictive. Rocca calls itself an Italian trattoria which is supposed to be less formal than a ristorante but, while the food was informal, often inspired by street food and very simplistic and relaxed, the restaurant itself still had all the luxury of its five-star location. Not every thing appealed to me in truth. I started with some gratinated mussels stuffed with bread crumbs and felt slightly underwhelmed. However, things quickly picked up. Chef Silvio was keen for us to try his new signature pizza named after his new baby daughter. The pizza Sofia is made up of basil pesto, cherry tomato, burrata, truffle oil and arugula. A gorgeous combination of ingredients and flavours, it’s a total palate pleaser at the table. Simple, stuff-it-in-your-mouth, eat-it-with-yourfingers, food is the order of the day here and the donna peppina is a great illustration of that. It’s basically fried pizza stuffed with anchovies, olives and mozzarella – bellisimo! If you prefer your pasta to your pizza then homemade pasta is produced here and cooked in the best traditions. The tagliatelle calabresi is packed with spicy Italian beef salami and porcini mushrooms – two of my absolute favourite foods.

I even tested a dish that vegetarians can’t fail to love. Orecchiette alla pugliese is served in a bowl and comprises broccoli, anchovies and burrata cheese. It’s screaming with flavour and has all the hashtag food goals you can think of! Italy is known to produce a good dessert or ten. This restaurant doesn’t let her country down. With barely any space left in my belly, I tried the caponata al cioccolato which is sweet and sour bell peppers with chocolate – what could be more unusual yet tantalising than that? Well, the torta caprese which proved a delicious gluten free warm chocolate and almond cake did come quite close, and equally appealing dessert. Though the interiors were not really my style – I found the lighting felt a bit bright and the curtains masked the French doors that showed off great views of the large pool outside – on the upside, the outdoor terrace by the pool is now open to allow for some true al fresco dining. For the next few months, you can sit here and look at the glorious grounds of the Grand Hyatt Doha Hotel & Villas. That really will be a treat. The menu is regularly refreshed to reflect the themes of showcasing different regions each month so ingenuity and creativity are constantly being cooked and served up for diners to indulge in. ✤

When we conducted a straw poll of things people most readily associate with the Doha Marriott Hotel, one answer cropped up consistently; JW’s Steakhouse. It’s been there, almost, forever, and everyone we speak to rates it with great affection. FACT’s Craig Ferriman went to dine at the institution eatery during lunch… that’s right, the venue is now open for business-savvy professionals, looking to satisfy their palates and escape the office… fact magazine

W

ith JW’s Steakhouse being as popular as it is, it has always begged the question, why does the restaurant only open its doors for dinner? Well, things have changed and at long last, food lovers everywhere can now also dine at this excellent restaurant for lunch. Affordably priced at QR99 for three courses, there is a choice of three items for starter, main course and dessert. I tried a couple of their starters; their smoked beef croquettes were three tasty fried morsels of beef in a crunchy casing that proved a warm and pleasant beginning to our meal. A little too fried for my liking but very tasty for sure. The chicken caesar salad was ample in portion and very reliable – a refreshing addition to lunch. It seems incongruous to not have steak at lunch so that’s exactly what I had. It was certainly the thing you go for, and the best part of the meal that you’ll remember. The prime rib-eye steak was enormous and cooked just right with a side of peppercorn sauce and served on the plate with a creamy mash. For those who don’t fancy this, a roasted chicken with fries and barbecue dip should surely satisfy. For contrast, there is an option of a grilled salmon with leeks and spinach with a lemon butter sauce too – showcasing how JW’s Steakhouse caters to all dietary preferences. Traditional home comforts would be how I’d describe the choice of desserts. Three offerings again; apple pie, crème brulee, and my personal favourite - the superb cheesecake which was rich and delicious. Staff are friendly and efficient and the aim was really to get everything served up for the busy business-person wanting a quick meeting or some lunch without too much time to spare in a louche environment. There are a few a-la-carte options to choose from as well from the larger menu which will please regulars who are used to certain dishes they’ve come to love in the evenings. The vibe is very homely at JW’s Steakhouse, with earthy wood and leather backed chairs which weighed a tonne to move but were mighty comfy to sink into! It almost reminded me of a posh English country pub as it was quite dark despite the windows emitting light in the daytime. This was a classy but crucially unpretentious express lunch that is very well priced. We’ll be back and urge you to give it a try too! ✤

FOOD HOPPIN’ With such a wealth of new restaurants popping up in trendy locations, it’s easy to forget old classics and former favourites that still tick all the right boxes. The Radisson Blu Hotel Doha doesn’t just boast some great restaurants; it also boasts more restaurants than any other hotel in the city. So, what better way to fix all those cravings in one go than a visit to (nearly) every venue in the property? FACT’s Craig Ferriman tells us more… fact magazine

T

he Radisson Blu Hotel Doha has unveiled a rather clever new concept that allows visitors to try a variety of courses in a few different outlets. I tried it out and had a thoroughly fun night out! The evening starts in the Manhattan Bar which is the size of a shoebox and boasts of being the smallest bar in town. Choose from a choice of pre-supper beverages there and enjoy some jolly chatter with bar manager, Divine, who has worked there for years and knows all the regulars. After that warm welcome, you walk across the hallway to Bentley’S Grill for some shared starters. We were served earl grey tea-cured salmon and Alaskan crab cakes, beautifully presented, which whetted the appetite for the evening. Hard leather-backed armchairs and wooden décor with intimate lighting and a fireplace, made for a stunning setting. Next, it was round the corner and down the stairs for some dumplings in Ruby Wu’s where we tucked into a couple of baskets of dim sum that oozed out flavour upon biting into them. It is rather a change of tone from the sexy grill to the family-friendly buffet venue, but it’s only for one course and it keeps things lively. At this point we had to walk into the other building of the hotel. Back in the day, they were historically two hotels but became one when Radisson Blu took over. Once in the other tower, it was to the perennially popular, Sakura. Here we were able to sit around the serving bar and witness the live teppanyaki cooking up close. As the service areas were greased with hot oil, I could feel a large fire about to erupt and in no time I could feel the heat of the flames on my cheeks as beef and chicken teppanyaki with grilled vegetables and fried rice was cooked up theatrically by their master chef. For me, this was the main course equivalent and the culinary highlight of the night. It was far from over though as we strolled through the garden out the back to the Italian Job restaurant for a choice of Italian desserts. We were offered the classic that is the tiramisu which was heavenly and the torta caprese with ice cream and a sauce which looked as carefully presented as it tasted perfectly on the palate. This hotel likes to entertain and has a sense of the theatrics so a show was laid on as we ate courtesy of the singing waiters and waitresses who’d burst into a ballad upon serving and serenade us with a love song. 92

To draw the evening to a close, a night cap was served in the new bar, Inginuity. Formerly known as Maxims, but recently rebranded, this place is run by Jimmy, who has worked there since 1992 and devised the signature drink of the venue – snake coffee. Its secret is orange but I’ll say no more than that. Note that the menu changes up every now and again to keep things exciting! The concept is different and a little quirky but it’s huge fun and avoids the tough choices we are increasingly forced to make in life, like – where do I eat tonight?! ✤

It was with a sense of great excitement and anticipation that we arrived at the resort eager to be tempted by all manner of indulgences and the very finest in spa facilities. stunning beach and lagoon beyond. The white sand and glistening sea will certainly entice you to take a stroll along the private beach area or indeed discover the surrounding area via their various water sports. Their trainer was highly professional and had us feeling like pros with the kayaks in next to no time, whilst also ensuring that my friend and I were appropriately hydrated with ice cold refreshments and adorned with fluffy robes and slippers. After indulging in the overall Beach Club facilities we enjoyed Yin Yoga that is geared around providing guests with the opportunity to detox, refresh their body and mind and most importantly centre oneself, achieving Zen. The mini head massage at the end was also a nice touch! The club’s vast array of facilities, treatment rooms, saunas and salt rooms ensured that we were well sustained throughout our visit. One can not attend Katara Beach Club and not mention their incredible signature snow room; the feeling of crunching snow beneath my feet not only heightened the effects of my previous sauna session, but, hugged me in waves of nostalgia from my childhood. We further indulged ourselves with Elemis facials that were delivered expertly by their senior UK therapist. After our consultation, we delved into each of our own bespoke treatments that ensured that every stroke and product used was to optimise and complement our specific skin type, whilst their accompanying shoulder and decolletage massage ensured that any tension that had been built-up over the working week was deliciously unravelled over the course of the next hour. The dimmed lighting throughout Katara Beach Club adds furthermore to the overriding sense of relaxation and serenity heightening the benefits of our overall visit. Guests are encouraged to linger for infinite amounts of time by the variety of facilities and lounge areas. Nevertheless, the prospect of lunch at Croft Alley was enough to draw us away, albeit reluctantly. The atmosphere is intimate and very relaxed but the opulence and elegance of this bistro makes dining here an experience which will set a benchmark for all the other health clubs that you may visit. The Pan Seared salmon was accompanied by a yuzu jalapeno sauce and creamed spinach. The crisp outer layer was perfectly complemented by the moist moreish flesh inside and every bite was an explosion of flavour and texture. My companion devoured the tender slices of Ribeye Steak that were promptly served which were accompanied by the most beautifully honey gingered carrots. Everything here is fresh and wholesome, and, definitely mouthwatering. I’d come back for my soy milk cappuccino alone! With heavy hearts we had to leave, but, whether you are in need of an afternoon to unwind or recharge or perhaps you want to explore the culinary treats on offer you will undoubtedly be wowed at every inch of Katara Beach Club. ✤
