MONDRIAN DOHA LAUNCHES THE MUCH-AWAITED FRIDAY BRUNCH AT WALIMA. Walima is set to offer an escalated Middle Eastern culinary concept. Mondrian Doha, managed by leading international lifestyle hospitality group sbe, has announced the launch of its new and much-awaited Friday brunch at Walima Doha, the city’s destination for traditional Qatari hospitality with a modern twist. Every Friday from 12:30pm to 3:30pm, Doha residents will have the chance to taste the most authentic Middle Eastern recipes with a contemporary touch in the sophisticated atmosphere at Walima Doha. Priced at QAR 195 for the standard package and QAR 325 for the enhanced package, guests can enjoy an elevated brunch experience with artistically prepared dishes, including mouthwatering selections of cold and hot appetizers, live food stations and irresistible desserts. The sophisticated brunch menu includes fine selections of cold Mezzeh, such as Hummus, Muhamarrah, Beetroot Moutabel, Eggplant moutable, Kishkeh and Homemade Marinated Olives. ASHGHAL SMASHES TWO GUINNESS WORLD RECORDS TITLES Titles include the longest continuous cycle path and the longest piece of asphalt concrete laid continuously. The Public Works Authority ‘Ashghal’ has made a new achievement breaking two Guinness World Records titles for the Longest continuous cycle path and the Longest piece of asphalt concrete laid continuously. Mr. Danny Hickson, Official Adjudicator at Guinness World Records, announced the measurement of the Longest piece of asphalt concrete laid continuously to be 25. 275 km, and also announced the final figure for the Longest continuous cycle path with a length of 32.869 km, setting new world records for the State of Qatar. On this occasion, Eng. Yousef Al-Emadi, Director of Projects Affairs at Ashghal, stated that achieving these world records confirms Ashghal’s commitment to implementing and managing projects efficiently and on par with highest international quality standards, and provide infrastructure for future generation. “We are pleased and honored to have this achievement added to Qatar’s records” he commented. Eng. Yousef Al-Emadi added that the new achievement was gained through cooperation between various Ashghal departments, and through coordination with many government entities. He pointed out that the two Guinness World Records titles were achieved by Al Khor Road project, which was completed in 14

record time and opened to the public ahead of schedule. On his part Eng. Bader Darwish, Manager of Highway Projects Department at Ashghal, also confirmed that these two world records were achieved within Al Khor Road project. The pace of work on the project was accelerated to be completed and opened to the public at the earliest, and 65 kilometer long stretch was paved within 27 days, including 10 continuous nonstop working days, resulting in the Longest piece of asphalt concrete laid continuously, without joints, with approximately 25 kilometers of length. He added that the Olympic Cycling Track, was implemented as part of Ashghal’s plan to implement a connected and safe network of cycling paths, which would contribute to change the lifestyle of people through using healthy mobility means and practicing exercise. He concluded that around 2,650 km of pedestrian and cycle paths are scheduled to be completed in Qatar by the year 2022. ✤

COASTLINE CLEANING! Qatar Museums joins efforts with the Ministry of Municipality and Environment to clean the coastlines of Qatar’s cultural villages. In line with its strong belief in the importance of protecting Qatari heritage and surrounding areas, Qatar Museums has signed a cooperation agreement with the Ministry of Municipality and Environment, represented by Al Shamal Municipality, and the Seashore Contracting and Engineering Group, to clean the coastlines of cultural villages across the country. The agreement was signed by Mr. Ahmed Musa Al Namlah, CEO of Qatar Museums, Mr. Hamad Juma Al Mannai, Director of Al Shamal Municipality, and Mr. Salem Saeed Al Mohannadi, CEO of Seashore Group. Based on the agreement, the three parties will cooperate over one year to roll out a programme aimed at cleaning the coastlines of cultural villages, starting with the ancient city of Al Zubarah. The parties to the agreement will provide support for volunteers and participants in the initiative. Experts from Qatar Museums will introduce volunteers to cultural sites and the importance of cleaning coastline in addition to developing an online application that identifies cultural sites and provides a historical overview of the region.

Commenting on the initiative, Mr. Ahmad Musa Al-Namla said: “Beaches represent an attraction for tourists, which makes such sites prone to pollution. Our cooperation with the Ministry of Municipality and Environment and Seashore Group falls in line with Qatar Museums’ keenness to raise awareness of the importance of archaeological sites and villages, and the need to preserve them as a living example for future generations. Thus, we are pleased to join efforts with various state institutions, the private sector and community members to accomplish this noble mission, and to protect our rich heritage that dates back thousands of years.” The latest agreement comes within the framework of Qatar Museums’ cooperation with relevant state institutions, community members and volunteers to preserve Qatar’s archaeological sites. ✤

QATAR AIRWAYS NETWORK TO EXPAND TO MORE THAN 90 DESTINATIONS The resumption of flights includes destinations such as Amman, Entebbe, Hanoi, Seychelles, Windhoek and Yerevan. Qatar Airways continues to lead the aviation industry offering more global connectivity than any other airline. With the airline’s network never falling below 30 destinations since the onset of the pandemic, the resumption of services to Amman, Entebbe, Hanoi, Seychelles, Windhoek and Yerevan and the launch of new flights to Accra will see the airline’s global network more than triple in size by mid-October. The airline’s resilience and commitment to providing connectivity has also seen it launch several new destinations since the start of the pandemic, including Accra, Brisbane and Cebu. The airline’s variety of fuel-efficient efficient aircraft and strategic network management has enabled it to quickly resume flights and expand services in line with passenger demand. The following destinations are planned to resume flights or increase frequencies: Amman (daily flights started 15 September, carriage of passengers limited to AMM-DOH only), Clark (increasing to nine weekly flights from 20 September), Copenhagen (increasing to 10 weekly flights from 15 October), Dhaka (increased to seven weekly flights from 19 September), Entebbe (three weekly flights starting 2 October), Hanoi (four weekly flights starting 3 October), Madrid (increasing to 10 weekly flights from 1 October), Manchester (increasing to 17 weekly flights from 15 October), Manila (increasing to 17 weekly flights from 2 October), Seychelles (three weekly flights starting 15 October), Stockholm (increasing to 10 weekly flights from 15 October), Windhoek (three weekly flights starting 15 October) and Yerevan (five 16

weekly flights started 15 September, increasing to daily from 5 October). MC20 HERALDS MASERATI’S ENTRANCE INTO THE NEW ERA Meet the racing beauty of 2020. MC20 stands for Maserati Corse 2020 and marks the brand’s entrance into a new era, the rediscovery of its original sporty DNA, its dynamic roots and essential audacity. Maserati long known for its comfort and elegance on the road now strikes back with ferocity on the track. MC20 represents the pure form of speed, with Maserati panache. A work of sculptural engineering seemingly hewn, piece by piece, from a masterfully chiselled block of raw carbon, showing the way to the Brand’s aesthetic future. Created through a process of elimination, there are no frills and no excess. MC20 is an archetype, carved for speed, so pure one seems to hear the hallmark Maserati sound even with the engine off. The form of MC20, which will also be available in convertible and electric versions, is composed of a chorus of elements singing in mechanical perfection. The Qatar-USA 2021 Year of Culture is intended to enhance cultural and artistic exchange between the two countries.

atar Museums (QM), under the leadership of its Chairperson Her Excellency Sheikha Al Mayassa bint Hamad bin Khalifa Al Thani, announced that the United States of America would be the official partner nation for the 2021 Year of Culture. A cooperative agreement was signed on 14 September 2020 between the State of Qatar and the United States of America during the 2020 Qatar-United States Strategic Dialogue in Washington, D.C. The Qatar-USA 2021 Year of Culture is intended to enhance cultural and artistic exchange. It exemplifies the renewed commitment of the two nations to foster mutual understanding and promote intercultural dialogue. The specially curated 2021 Year of Culture will feature a wide-ranging program of exhibitions, festivals, bilateral exchanges, and events to be held in both nations. Her Excellency Sheikha Al Mayassa bint Hamad bin Khalifa Al Thani said: “We inaugurated the Year of Culture program in celebrating Qatar’s successful bid to host the World Cup in 2022. entara West Bay Hotel and Residences Doha has quickly become one of our most sought out places due to their impressive business lunches. The lobby’s ocean hues always oozed with comfort and serenity on our previous visits, so it definitely felt like the perfect place to unwind from the world after a couple of unpredictable months. The first thing you see, as you enter the hotel, is the magnificent blue chandeliers that have become an iconic trademark at Centara West Bay Hotel and Residences Doha. Along with taxidermised animals and patterned cushions, the hotel gives quite the Southeast Asian vibes. The staff is also perfectly reminiscent of the world-famous concept of Thai hospitality. We were greeted with smiles at check-in and those smiles and pleasantries remained constant throughout our stay. There’s just something about people who smile. They force you to smile with them; immediately lifting your spirits.When it comes to accommodation, the hotel offers everything from shortstay rooms to long-stay residences, in the form of their standard studios to three-bedroom apartments; up to their ultra-luxurious penthouses. And we had the luxury of booking their standard three-bedroom apartment for the weekend!

SPACIOUS LIVING We were immediately drawn to the massive wall-to-wall panoramic views as we entered the apartment. The large windows overlooking downtown Doha and the Persian Gulf were absolutely breath-taking. We immediately made up our minds to take full advantage of these sights with our morning coffee the next day. The apartment also came with a fully equipped kitchen. We’re talking microwaves, pots, whisks, cutlery, and basically everything you need to make a home-cooked meal. The living and dining rooms were pretty spacious, great for big families and entertaining purposes. All three bedrooms were fitted with windows for natural light with scenes of West Bay. The rooms were decked out in their signature furniture, with a TV, desk, and complimentary high-speed Wi-Fi. The apartment was truly fully stocked with everything we’d need, including a Nespresso machine and tea station. It’s like they knew the way to our hearts! Well everything except for an adapter for our laptop charger, but the hotel’s prime location had us very close to City Center, and we were able to pop out for a quick shopping trip easily.

DINING IN & OUT Our days always began on a high note with their incredible breakfast and breath-taking views overlooking blue-green waters. If only we could take these mornings back home with us. One breakfast platter was enough for two or even more. It came with our choice of eggs, sausages, hash browns, baked beans, sautéed mushrooms, beef bacon strips, fresh fruit, pancakes, beans, a bread basket, fresh juice, and a choice of coffee or tea. Definitely the most sumptuous breakfast we’ve had in a while! The views were an added cherry on top of our mornings and their extensive in-room dining menu made sure we never went hungry at any 40

time of the day. The staff was also super friendly and hygienic, sanitising before touching each plate and making sure to be as careful as possible when setting up the food. The hotel is home to two restaurants, and I’ve frequently visited Caprice for their lovely business lunch and was thrilled to be able to dine-in on their Thai Kitchen Night. Their trendy pop-up tabletop buffet concept brought about an array of dishes from appetisers to desserts. Our highlight was definitely the main courses, perfectly sized portions came out for two, each dish better than the next. We thought this was such an innovative way to keep buffet-style meals alive in these trying times. Then it was on to Dalchini for their progressive Indian cuisine at the Social Brunch the following day. We would recommend coming in on an empty stomach, as you’ll need it for this mouthwatering meal. We love South Asian cuisine and were thoroughly amazed by the selection of food served; it was NOTHING like we expected. Every single dish was a burst of flavour and texture, with stunning innovative twists, surprising our taste buds at every bite. The Patta Chaat stole the show amongst the appetisers, tangy, sweet, and full of texture. We had to stop ourselves from licking the bowl clean, it was that good! The mains also came in abundance, it was hard to decide on what to eat first! The dessert surprised us most of all. We were expecting the regular gulab jamuns, kheer, and rasogollas, but were pleasantly taken aback by the beautiful work of art served before us. We had such an adventure figuring out the flavours and textures, definitely the

picture-perfect end to a great meal. This brunch is a must-try for everyone!

STAYING ACTIVE The hotel has its own state-of-the-art gym, sauna, steam rooms and an indoor pool. They have two pools, an indoor one and another specifically for kids, making it the perfect choice for families. Due to the current safety and health regulations, the gym and spa were closed, but the hotel provided us access to their in-room live training upon booking. They offer a variety of classes from Tabata to yoga over the week and we signed up for their HIIT workout. It was a must-do after the calories we consumed over the weekend. Overall the best part of this little staycation was the background of the Persian Gulf as we sipped our morning coffee. We loved unwinding in the large living area, basking in as much sunlight as we could. If you’re looking for a family-friendly or relaxing environment, then Centara is definitely your go-to destination. It’s also ideal for business professionals on short trips who need access to Doha’s business district and the perfect way to relax after a busy day of work and meetings. ✤

It’s surprising to believe that this is her first lead role in a film, but she does an impressive job as Veronica, a woman coming to terms with a situation that is entirely out of her control. The Devil All the Time is the latest Netflix original to launch on the ever-growing streaming platform and is based on the acclaimed novel of the same name. The film takes its time in telling a sprawling story that involves many characters and timelines over its 138-minute runtime. Despite strong performances from an all-star cast that includes Twilight’s Robert Pattinson and Spider-Man’s Tom Holland, yet The Devil All the Time is arduous viewing in its unflinching portrait of the effects of war and the evil inside us all. The acting is strong, the cinematography is terrific, and the excellent narration is provided by the author of the original novel, Donald Ray Pollock. Ultimately, The Devil All the Time is an interesting drama that offers a complex examination of how sin and trauma are handed down from generation to generation.

The project finds Big Sean at his most confessional, boasting a newfound confidence that permeates through this collection of 21 absolute bangers. Spanning a runtime of over 70 minutes, Detroit II’s most memorable tracks include “ZTFO” and the Travis Scottassisted “Lithuania”, and “Story,” which is cleverly punctuated by interview footage from prominent performers Dave Chapelle and Stevie Wonder. The project sometimes feels more like a mixtape thanks to the raw energy displayed by the charismatic rapper on tracks like “Lucky Me” and “Harder Than My Demons”. Still, Big Sean is at his best when backed by the likes of the late great Nipsey Hussle on the profoundly personal “Deep Reverence” and long-time muse Jhené Aiko on the seductive “Body Language”. espite the fact that MG Motor was established in the 1920s, the brand has been slow in gaining the level of popularity enjoyed by other wellknown car manufacturers. However, through the ever-increasing surge in MG Motor vehicle sales, we are now witnessing that this is swiftly changing. Best known for producing two-seater sports cars, MG Motor – now under Chinese ownership – went on to develop a variety of saloon models and, eventually, coupés. FACT got to experience the brand’s first sports utility vehicle, the MG GS, back in 2016 and immediately recognised this manufacturer’s potential to develop competitive models for this market segment. This month, we were offered the opportunity by the great team at Auto Class Cars to test drive the all-new MG RX8, an offer we readily accepted. As the RX8 came into view for the first time, we were struck by the bold yet uncomplicated design of the exterior. At the front end, the dual-slot bonnet complemented by a silver lower lip delivers a touch of class, while the chrome grille and matrix-style LED foglamps add a modern touch. The authoritative presence of the RX8 is enhanced by its smooth body lines, seamlessly connecting the design of the front end to that of the rear. The 20-inch alloy wheels, meanwhile, hint at the vehicle’s on-road intentions. And showcasing the quality of this model are the LED tail lights, LED headlamps, and LED daytime running lights – along with the roof spoiler and stylish twin chrome exhaust, both of which are worthy of a mention. Once inside the cabin, it was plain to see why MG is fast gaining a reputation for delivering premium finishes – highend materials such chrome, wood grain, and soft-touch trim ensure the interior of the RX8 has a first-class feel to it. The topquality leather used for the seating was provided by German company Bader, a leading manufacturer of premium leather for the automotive industry. Not only are these ventilated seats exceptionally comfortable, but also well-positioned, with the front two seats being multi-adjustable. Space and practicality are areas of design where the RX8 begins to rise above the competition. An ingenious “theatrestyle” seating design has incorporated a front-to-rear gradient, ensuring that even the third row of passengers are gifted with an exceptional view. The adjustable reach in the second row of seating provides third-row passengers easy access to their seats, while the ample legroom on offer is the largest thirdrow space in the class. It’s safe to say this flexible nature of the rear seats allows for varied combinations of seating layouts that will meet all travel requirements. Besides the 37 different storage compartments found throughout the vehicle, the boot capacity can be extended to a whopping 2,178 litres – that’s room for up to nine large suitcases, in case you’re curious. MG models are currently renowned for offering some of the finest and most user-friendly technology available in motor vehicles. This includes, as standard, wireless phone charging and smartphone connectivity with both Apple CarPlay and Android Auto, linked to a 10-inch colour touchscreen. DualZone Climate Control, with additional climate control in the 50

rear, is yet another standard feature for this model, while the panoramic sunroof ensures a well-lit interior. An interesting component of the RX8 is the inclusion of three standard appliance plugs that allow you to use a variety of household products inside your vehicle. This is an ideal feature for road trips, and one that is only shared with the latest Range Rover models. Considering the RX8 is powered by an efficient 220 hp, 2.0-litre petrol engine that boasts Net Blue Technology and produces a maximum torque of 360 Nm, this car is clearly no toy. Combined with a six-speed automatic gearbox complete with paddle-shift gear change, the it’s also an enjoyable vehicle to drive. A total of six different driving modes means the model’s advanced 4x4 system that can conquer any offroad conditions in the Gulf. And as expected, switching to Sport mode immediately provides a superior driving experience, vastly increasing the vehicle’s responsiveness and acceleration. As for our experience with the braking system? It’s effective and offers great traction control, ensuring you

On a similar theme, proportions are exaggerated in puffer jackets and trainers to create an air of dreamlike fantasy. For the uninitiated, denim is a regular feature of many Paul Smith catwalk collections, now appearing raw and traditional or overdyed and modern with a unique floral camouflage pattern. Thick shearling coats, meanwhile, look to the designer's dandyish pals wearing their grandmas’ fur coats in the 70s. But no Paul Smith anniversary collection would be complete without the spaghetti print, which originated when a wax plate of spaghetti from a fake food shop made its way into a photographic print in Tokyo. Today, it has been scaled up, recoloured, and woven in textural wool jumpers and printed on floor-length down jackets. Another archive print comes courtesy of a faulty fax machine – a warped Paul Smith logo – which has been reproduced on shirts and jersey pieces, taking on a newfound irreverence in 2020. Life coaching is for anyone that knows within themselves that they wish to change up their lives and start living in a more powerful way, one that’s true to their purpose. We all have a dream within us, but for many it stays as just that, a dream. I’ve set up my coaching practice to help people feel confident and able to create the life they’ve always desired. You’re based in London yet have a strong following of notable clientele in The Middle East. Why do you think this is? I’m asked this all the time! I have a huge affinity with Middle Eastern culture and travel often, and many of my clients have a close connection with London which is such an electric and amazing city. Often, I work with clients over Skype/Zoom from their homes and when they’re in London we work at one of my clinic spaces in Primrose Hill and Marylebone. How do you help individuals close the gap between where they are and where they want to be? The magic key to it all are your belief systems. 95% of our thinking is subconscious and many of our internal programmes are created in the first seven years of our lives. It’s why we repeat the same patterns over and over. My number one focus with clients is realigning limiting beliefs with enhanced ones, which create changes in our lives from the very first session. Once we believe deeply that we are worthy of success or love as examples then the results we see change massively. Staying indoors and mindlessly scrolling through social media can affect our mental health. What top tip(s) do you wish you could share across the world to combat this? Social media is a wonderful way to connect, but it can also limit us especially as far as ‘FOMO’ is concerned. It’s important for us to live consciously and become aware of when we are checking social media and why we are doing it. Often, it is due to boredom or feeling empty and it’s in these moments that we can take back our power and choose activities that are more productive and increase our energy levels. “It’s time to walk your Hero’s journey” is at the core of your vision. Tell us more about this mantra and its importance. The Hero’s Journey is the most important journey we can go on. 62

Purpose is what gives life a deeper meaning and, in most cases, will mean a far greater possibility for success. SOFTENING HAND SCRUB: Washing hands frequently and using sanitiser has definitely left them dry. This scrub will leave hands soft and moisturised. Ingredients: • ¼ cup Sea salt • ¼ cup Unrefined sugar • 1 tbsp fractionated coconut oil • 2 tbsp raw honey • 1 tbsp lemon juice • 3 drops Grapefruit essential oil Directions: Start by mixing the coconut oil with the raw honey. Then add the other ingredients, choosing an essential oil of your choice. It is important not to overdo the essential oil as this could impair your condition. Once mixed, keep your scrub in a dark, glass bottle away from direct sunlight to protect the natural ingredients and use regularly.

AVOCADO AND OLIVE OIL HAIR MASK: This mask is useful in treating dry and damaged hair. It is packed with omega-3 fatty acids, and provides the ultimate strength and shine to your hair. Avocado helps to rejuvenate and moisturise the scalp. Ingredients: • Half an avocado • 1 egg • 1 tbsp of olive oil • 1 tbsp of honey 64

Directions: Mash the avocado and mix all the ingredients together. Apply to wet hair with your fingertips, starting at the roots and working your way up. Draw your hair into a bun and cover with a shower cap. To help activate the ingredients, blow-dry your shower cap-covered hair for 10 minutes. Then let it sit for another 20 minutes before rinsing off.

PAPAYA FACE MASK: This mask is ideal for achieving a glowing complexion. Ingredients: • Half cup mashed papaya • 1 tsp raw honey • 1 whipped egg white Directions: Mix all ingredients together and apply to your face and neck with your fingers or a face brush, avoiding the eye area. The enzymes in the papaya are a natural exfoliator, so they remove dead skin cells while the honey and egg white bind the mask together. Leave it on for 15-20 minutes and then rinse off.

CITRUS BLAST BODY SCRUB: Exfoliate your body with this scrub to feel refreshed and revitalised. Ingredients: • 1/3 Himalayan salt • 2/3 cup olive oil • Orange zest • Lemon zest • 1 tsp of finely chopped mint Directions: Mix all ingredients together. You could also add a few drops of your favourite essential oil. Geranium would be a good choice to balance at all levels. Stand under the shower to dampen your skin. Using small, circular movements apply the scrub to your whole body, avoiding any sensitive areas. The Himalayan salt will stimulate your microcirculation as well as the lymphatic system. It also works wonders to release tension from tight muscles. Your skin will be beautifully nourished by the olive oil, and the citrus oils will enliven the senses. ✤

apiano greets you with the smell of freshly baked bread as you enter their restaurant; immediately lifting your energy with their mouth-watering aroma. The open and airy venue evokes friendly and familiar emotions, great for dinner with close friends and family. With different seating options to choose from, we headed over to their long oak tables, displaying an array of dressings and fresh plants; perfect for groups of people. Their large windows and subtle furniture create an open and light atmosphere, perfect to brighten up any dining experience. We felt as if we were at an indoor picnic! Everyone’s given a smart-card on arrival that you use to order at their different stations. The card calculates your total amount throughout your dining experience, so you only pay once as you leave the restaurant. This process proves to be super-efficient when we dine with friends and want to pay separately. No more frantic bill calculations at the end here. We loved going to each station and checking out their fresh ingredients and popular dishes; the three different stations consisted of pizza & lasagne, salad & antipasti, and pasta

& risotto! Carbs being the ultimate comfort food and us being the ultimate carb lovers we are, we went straight for the pizza and pasta. After a little deliberation, we placed our orders directly with the chefs at each station. We ended up getting the pesto with fusilli pasta, Riviol Con spinaci, and the Alfredo Bianco pizza. Since I prefer things on the slightly spicy side, we personalized our orders to have a little kick with the addition of chilli flakes and spicy sauces. That’s what we love about this place, you can customize their regular dishes to your own personal preference. Our orders were prepared right in front of us in the live kitchen; the dough was tossed, pasta rinsed, mixed, baked, and served! Vaipano’s pizza dough, sauces, and pesto are all prepared inhouse from the finest ingredients right in the open kitchen. You can taste and smell the freshness as they ring up your orders! The thin crust pizza was oozing with cheese and their in-house alfredo sauce. The smooth creamy texture paired perfectly with the crispiness of the crust. The pesto pasta was as green as ever, you could taste the fresh basil and pine nuts, sprinkled with an abundance of freshly grated parmesan, absolutely delicious! But the star of the night was

the ravioli; stuffed with delicious spinach and cheese and topped with a tangy tomato sauce. We could not get enough! The restaurant also sells its own fresh pasta at the counters, so you can make your culinary creations at home! It’s a great way to take home a little Vapiano memento and something we do on a regular basis. For our drinks, we decided to order two lemon and mint from their juice and coffee bar! We went back to the station for our dessert and got the cutest tiramisu packed in a sealed container for safety and freshness. Vapiano is always our go-to choice for a quick lunch and delicious coffee in the afternoon, or even a relaxing dinner with friends! Their two branches, in Al Sadd and Gate Mall, offer great meal vibes, a welcoming atmosphere, and even a large outdoor area at their Gate Mall location. The restaurant’s comforting vibes and food definitely make it a favourite! ✤

W

e’re all about themed nights and were super excited to visit Sofra for their new Fisherman’s Night. Walking into this charming restaurant resembles walking onto the deck of a ship upon the seas of Arabia. The wooden and glass walls were adorned with empty blue bottles; creating the perfect fusion of traditionalchic. The main dining area is dimly lit and occupied with large comfortable leather seats and wooden tables that are fit enough for a captain on deck! The wooden ceilings mimic boat sails and further act as a reminiscent of the traditional dhow boats and culture of pearl diving in the country. We were guided to an open seafood bar with a selection of crabs, tiger shrimps, lobsters, and whole fish. Pretty much a seafood lover’s dream! The staff were incredibly attentive and helpful in selecting our platter, carefully describing the difference between each catch. After much deliberation, we opted for the tiger prawns, seabass and red snapper. Each order is paid for by weight, so after making our selection and weighing the fish, we were taken to the spice station. It seemed daunting at first but turned out to be the highlight of the experience. The chef asked about our taste preferences and guided us to try a garlic and rosemary concoction and we’re glad we did! You can definitely take a sail on the spicy side, but we prefer to keep things subtle. The whole process of selecting the fish, spices and watching it being grilled in the live kitchen was mouthwatering from start to finish. We also caught up on some tips and tricks on how to perfectly season various seafood options. Our meal was served family-style on a beautiful wooden tray, with a side of their special tartartahini sauce, grilled vegetables, crunchy crackers and a salad protruding with tangy-freshness. This was accompanied by fresh Arabic bread and the creamiest and prettiest beetroot hummus. It honestly looked picture perfect and too good to eat! The fish was grilled to perfection, amazingly juicy, flaky and tender on the inside, and deliciously crispy and seasoned on the outside. We couldn’t wait to dig in with our forks, and carefully make our way around the platter. After completing our navigation through the fish and its bones, we moved onto the tiger shrimp. Truthfully, the largest shrimp we’d ever seen! Their shells were coated in the aroma of the grill, efficiently detaching from the flesh for that first tender bite. We’re talking about that crunchy, firm, crisp texture you get with the perfect shrimp. We were also given an extra bone bowl each, to keep our table as clean and bone-free as possible. Sofra regularly offers speciality traditional Qatari cuisine for à la carte but offers their new Fisherman’s

e were left licking our fingers after the tantalising meal we had at CLAW BBQ DOHA at the DoubleTree by Hilton Doha – Old Town. This American spot is a sports fanatics dream; large TVs, flowing drinks, and great food! We may not be into sports, but we are into food, so we had to stop by. The energy in the brick-walled room was bursting with life; full of laughter, conversations, and spirited vibes. We weren’t interested in the games playing but fell into the mob mentality when the cheers would arise, and frankly, thoroughly enjoyed ourselves. After placing our orders, we were given sanitised cutlery in individually wrapped plates and some antiseptic wipes. Little did we know we’d be needing more of these wipes as we went on with our meal, so be sure to ask for extras. We started off with two popular appetisers; their Nacho Libre and Claw Wings tossed in sweet BBQ sauce. The nachos were enough to feed a party, bathed in cheese and jalapenos, super crunchy and delicious. The wings were doused in a delicious sauce and perfectly cooked, the kinds of wings you’d crave in the middle of the night. Eating

them was definitely not our most dignified hour. We tried to strategically place the wing between our hands, in the optimal scarfing position, but there was no stopping that BBQ sauce. We really made use of the napkins and wipes! For our mains, we ordered the BBQ Beef Short Ribs and the King Crab! The ribs cut like butter, if not softer. Truly mouthwatering! We’d recommend eating the ribs while they’re hot, so they retain that warmth and flavour. No one likes cold ribs. We didn’t think things could get better until we went for the crab. The crab came in a large bucket full of roasted potatoes and corn cobs and an assortment of tools and gloves for each of us. Any food that requires more than one type of utensil to eat is bound to be no walk in the park, especially when those utensils include, um... a MALLET. We had so much fun cracking and taking the crab apart, definitely a fun-filled meal. We smashed, cracked, pulled, and ate to our heart’s desire. The crab meat was soft, silky, and had a subtle sweetness, making it a delectable savoury treat. The large legs had enough meat for two, so we’d recommend sharing this entree. This was all paired with a pitcher of their peachy Claw Iced Tea. We’re very particular about our tea, hot or cold, so trust us when we say this was one of the best we’d had in Doha. Not all foods are meant to be eaten with a knife and fork, sometimes you just need to use your hands for the whole experience - so

you’ll have to forget about appearing well-mannered here. Claw BBQ is great for a fun-filled night with food and drinks with friends, and we’ll definitely be coming by again! ✤

• CHEF IN FOCUS How do you source the ingredients for the restaurant? Do you focus on locally sourced or sustainable produce? In every country and restaurant I have worked for in my career, the most important thing before you start work is to understand the country and culture. For this, my approach is to study the food culture locally, visit markets, anglers and learn from the local people. In terms of ingredients, the same ethos applies, and we source both local and sustainable products. When you use imported food, you don’t always know the true origin of each ingredient. What was it about the cuisine at Mulberry Tavern that resonates so much with diners in Doha? I don’t think it’s just the cuisine that resonates so much with diners in Doh. As a newly open restaurant, customers visit Mulberry Tavern out of curiosity and to taste dishes, enjoy the atmosphere and experience the music. After six months, these elements have made Mulberry an exciting new destination to experience at Doha the Pearl. What is your favourite cuisine to cook? I do not have a favourite cuisine as I am a food lover and I like to eat and cook all kinds of food. I love everything and can enjoy everything from a simple sandwich to a fine dining meal. I do not have any rules, as all food can provide a source of inspiration.

Why did you decide to become a chef? As a teenager, I was a sports lover. Once I finished college, my options for the future didn’t leave me with a lot of choices. Then my father told me that perhaps I should become a chef. I then started to work as a trainee for two. However, the origins of my love for food came from my grandmother, who was always cooking. She taught me during non-school days about food. Years later, I have had the chance to meet master chefs during my journey and grow my career. Tell us a little bit about Hilton Doha The Pearl Residences and Mulberry Tavern and why you love to cook for them? Hilton The Pearl is a new hotel, which opened its doors on December 18 2019 (the National Day of Qatar) and Mulberry Tavern arrived a little later. Like many restaurants, we had to close our doors during COVID 19. Still, this closure provided a golden opportunity for us to continue to improve, finalise, adjust, decorate, test and modify others details. I like to cook and create things from scratch and develop them day after day. As a renowned chef, how important is it for you to be involved in projects such as this? For me, it is always important to be involved in new projects like this because they are prototypes and provide me with the opportunity to express myself, create, design, cook, test and repeat. I get to have fun every day as if it were the first day of the job. But you have to question yourself all of the time to reach perfection, just like an actor, a comedian, and artist or sportsman. This is where the challenge becomes most enjoyable! 80

What do you do to stay current on new trends? Social networking, reading, research and being in touch with other chefs. How do you feel about creating dishes purely for Instagram? I do not think that I create dishes for Instagram, but as a chef, we create dishes for our guests. Cooking is about creating emotion for our guests. What is the greatest honour or compliment you have received as a chef? I have received many compliments in my career, and it isn’t easy to choose. I have received very good compliments during the last 20 years. When I started this job, I did not even think that one day I could receive such compliments regarding all levels with my cooking. What matters more – taste or presentation? Both are important. The first step is the presentation and the visual represents a key point for your eyes (and mobile phone). Once you’ve taken that Instagram picture, it’s time to taste. Do you have any quick advice for young budding chefs? Cooking is a wonderful profession. Every day is as fresh as the first day. Every day when I come into work, I come as if it was the first day. The best motivation is to cook fresh, quality and seasonal food. When you cook this food, you cannot get tired of it. I’d advise any budding chefs to work relentlessly and always to enjoy things. Describe your culinary philosophy.

My culinary philosophy revolves around freshness, simplicity, the balance of colour and bringing out the authentic flavour of the ingredients. If you could dine at any restaurant in the world, where would you go? I have had the chance to travel a lot and discover many restaurants in my life. I do not have a specific restaurant that I would like to dine at. The best is still the hometown and the food of my family. What is the inspiration behind the menu at Mulberry Tavern? The inspiration comes from all my experiences and the dishes that I taste and have eaten in the past. I also draw inspiration from the ingredients that are imported, but above all local culture. From there, I start to create and design menus and dishes. How often do you eat out and what is your favourite restaurant in Doha? I eat out three or four times a week, but I don’t judge or have a favourite place. As a food lover, I’d give a special mention to Isaan Thai Restaurant (Grand Hyatt), Zengo Restaurant (Kempinski

My inspirations include everyone from my grandmother to world-class chefs such as Alain Passard and Mauro Colagreco.

With the rise of influencers and bloggers, what are your options on this new digital world where everyone has suddenly become a food critic? I don’t feel affected by this new generation of social networks because I’m also a participant and player of Instagram. Everyone has become a food critic and this has both a positive and a negative side. From a critical standpoint, I’d like to quote the words of artist Salvador Dali, who said: “Criticism is a sublime thing. She is worthy only of geniuses. ✤
