FROM THE EDITOR Bring on September! Well readers, am I glad it’s September! After arriving here in June, just as summer was kicking off and Ramadan was upon us, I have certainly experienced the slow side to Doha living (although, I have to say, being in Bahrain for 21 years certainly prepared me for the quiet life). But now things can really start up again and I can witness the real side of Qatar, where fast-moving development allows creativity and innovation to blossom and, let’s face it, let’s not forget, however, that from now on those temperature gauges are only heading downwards, which means we can head outdoors and to the beach without the threat of third degree burns. This month our issue is bursting to the brim with ideas for life by the ocean (see page 26) complete with relaxation tips, top dips and expert advice on what water sports activities you can get involved in. We’re also aware of all you newbies in town and, with a few friends frantically looking for a place to live as I write, we have decided to break the property market down (see page 16) so you can dive in with a more informed understanding of what to expect. We know it’s side, unrealistically low ones made by people online claiming to be legit but then refuse to meet you and ask you to post the money. Pfft is all we can say (And yes, this did happen)! However, once you do settle in and Doha-
returners get back in the spirit, there’s plenty to be excited about on the agenda this month embedded throughout the mag. For a start, St Regis Doha has launched the swish Astor Grill and InterContinental The City has opened its doors to not one but two new restaurants. Then there’s a brand new hotel on the skyline with three new currently-open venues and a couple more to come. events-wise it’s looking good, too. Katara has a jam-packed exhibition schedule laid out for us and now, thanks to the inauguration of Katara Art Studios, you have the opportunity to learn a thing or two after meandering around. Plus, the Qatar Philharmonic Orchestra season is about to kick off and, if you fancy a laugh, Stand Up Comedy Qatar has two events on the horizon this month. Oh and don’t you forget the return of the brunch culture! Check out our review of one of the latest additions to the brunch track – Mawasem at the Hilton Doha (see page 60) – where we enjoyed a great afternoon of some much-needed decadence (and then left to think about going to the gym). ebanese choreographer Vartan Bassil has had a pretty big impact on the face of Germany’s B-Boy history with his unique ideas on urban dance. Now, he and his crew are taking on the world with the second Red Bull Flying Bach tour. Although he’s led his nine-member dance troupe, The Flying Steps, to four world championship titles in breakdancing competitions, he tells us that this tour is the highlight of his career so far. “It has always been our dream to create a sophisticated full-length production that conquers stages worldwide,” he says. And that he has. Together he, his crew and opera director Christoph Hagel have perfectly combined the quick and swift moves of urban dance with the classical tunes of German Baroque composer Johann Sebastian Bach. “It was a new challenge for us,” says Vartan, “to visualise the fugues and preludes and to mix

contemporary and urban dance on a high level. In our performance we mix different dancing styles… We always try to think differently and to come up with new concepts.” To the melodious notes of piano and harpsichord with overtones of electronic beats, the B-Boys throw head spins, power moves and freezes. It has everything – the visuals, a storyline and it’s 70 minutes long. last year their european tour completely sold out. This year they’re taking it further, to the Middle east, Japan and Russia – to name a few. Once they get to Doha at the end of the month – which Vartan says he’s excited about, having never been here before - they’ll already have visited Croatia, Georgia, Norway and lebanon. ecause it’s the same every year – the summer is passing, the weather is cooling down, everyone is coming back to Doha, and the place is coming alive again! Just take a look at this month – the Flying Steps, Stand Up Comedy Qatar, the Qatar Philharmonic season openers, a new brunch, and that’s just the things we’ve covered in this issue! There were even more happenings landing in our Inbox as we went to press, but we just couldn’t rearrange the magazine to It’s like this every year, because people plan it that way. They know summer is quiet, but September is lively, so all the hotels, bars

and restaurants come back with a vengeance, keen to make up for low Ramadan. As a result, September is always one of the most happening months of the year, and this is why I love it! What’s more, we managed to bag an exclusive interview with a Chef Gilles Bosquet, a Michelinstarred chef who is heading up the kitchen of the two Gordon Ramsay restaurants in the St. Regis Doha, Opal and Signature. He talks to us about his harrowing experiences working as a young trainee in a Ramsay restaurant in london, and how he became such a rising star in
the culinary world, and it’s a real eye opener. With the weather cooling down, I can’t wait to start getting into the great outdoors again, as I’ve turned a nice pasty white over the blistering summer months, avoiding stepping foot outdoors as much as was humanly possible. It has therefore been really interesting in this issue researching and reading about all the fantastic outdoor adventures there are to be had in Qatar. I’m literally planning to check them All out in the next few months, so I’m going to be pretty though…

HOW LONG HAVE YOU BEEN LIVING IN QATAR?
It’ll be two years in December. Before that I spent six months in Beirut, eight years in Austin, Texas, three years in Bahrain where I went to high school and I grew up in Saudi Arabia.
WHAT DO YOU LIKE MOST ABOUT LIVING IN QATAR?
My thoughtful answer is I like the freedom people have here to pursue different sorts of activities that they wouldn’t have the opportunity to in a different environment. I think people take it for granted and they kind of get boxed up mentally and say there’s nothing to do. If you look hard
what something you want to do and you might not even know that you want to do it. I wish there was a better system for home addresses. It’s really hard to tell someone where you live if you don’t live next to a landmark. It’s really frustrating. There also isn’t much on the I wouldn’t walk around from building to building. There’s no
feeling of neighbourhood in the downtown so you don’t feel part of city life. WHAT DO YOU DO TO SWITCH OFF AND RELAX?
Right now it’s usually hobbies. I’m doing two things most of the time – horse riding and violin lessons. If I’m not doing that I’m probably sailing if I can. That’s really nice to unwind because the more you move away from the city and look at it from far away it’s a completely different perspective. You see the skyline – of course there’s the wind and the water and all that great stuff – but you don’t really feel like you’re in Doha. You feel like you’re in some tropical destination or something.
TELL US SOMETHING ABOUT YOURSELF THAT NOT MANY PEOPLE KNOW?
I have an instructional disco video call How To Do The Hustle on Youtube starring me, which has one and half million hits. TELL US A JOKE?
This one is a good kickstarter for a set: ‘Yeah that’s right my name is Ousama. Although I was born in the States my family is actually lebanese,’ and then I switch to Arabic and say: “That’s right ladies, I’ve got the passport!” It never fails because there is that perception, especially among lebanese, that anyone with a Western passport is a good catch. The Season
T
he Qatar Philharmonic’s 101 musicians return to Doha early this month in order to prepare for two concerts (see details below right). Prices range from QR75 – QR300, but this year you’ll find around three times as many seats in the lower price range categories – a nice change as previously these have sold out quickly leaving only higher-priced seats available. elsewhere on the Qatar Philharmonic agenda are school concerts scheduled for the first three days of October. These will consist of Camille Saint-Saen’s Carnival of Animals, a work for two pianos and orchestra with narrator, with musical portraits of elephants, kangaroos, tortoises, hens, roosters and famously, a swan. Some of these concerts are performed in Arabic and some in english. They’re a fantastic opportunity to introduce children to some classical culture, and possibly inspire some young minds to pick up an instrument themselves! GO:

scene in the Middle east is rapidly reaching the levels of quality that will put it right up there with global capitals like london, New York and Paris. Already, in Dubai, a restaurant isn’t worth its salt these days unless there’s a celebrity chef ’s name attached to it somewhere. Qatar isn’t quite at that stage yet, but they’ve already put a foot on the opening of Gordon Ramsay’s
on The Pearl, but following the alcohol ban it closed its doors for good, it seems. However, the good news is that two still remain at the St. Regis Doha, and thanks to their being in one of Doha’s most prestigious hotels, there isn’t much chance of them closing for the same reasons as The two restaurants are situated side-by-side in a specially renovated FACT QATAR SEPTEMBER

Prior to taking up his position in Doha, Gilles was already well known to Gordon Ramsay, having worked at one of his restaurants in london. And is it a Michelin star that they’re aiming for in Qatar? While Gilles admits it would be nice, it is in fact highly unlikely in this stage of Doha’s culinary development, as the Michelin committee won’t even consider a country until the industry as a whole has reached a certain level. “For the award to come to your country, the whole country has to be ready for it,” explains Gilles. “For example, here in Doha

For three stars, all the ingredients you use must be the absolute best that can be found, imported from France, europe or wherever, and the overall experience must be perfect.” Gilles himself earned a Michelin star for his work at a restaurant in France. However, this seemed to be a natural progression, given that he had already worked in some of the world’s most famous restaurants, including the Gordon Ramsay Group’s Michelin-starred The Connaught, in london, and as Sous Chef at the famous two Michelin-starred Paris restaurant, la Pyramide. It seems that Gilles was destined for this line of work, with a father who was a director of a restaurant and… a mother who couldn’t cook! “I originally wanted to be more involved in the front of house, but I began cooking at home from a young age, because my mum was not a great chef!” says Gilles with a sheepish grin. “At 16 and 17 I was cooking myself all kinds of food. But when I went to hotel school in Mauritius, I began to really learn about food and the ingredients. It was there I developed a real passion about food, taste and how to cook things differently.” When he graduated, he secured a job at the prestigious One and Only Royal Mirage hotel in Dubai, through a friend of his father, Olivier louis, who was the General Manager of the hotel. It was there that Gilles worked with famous Australian Chef lew Kathreptis. “He told me to come in the mornings to learn from him, and because of this I ended up working double shifts. I did a lot of preparation for him, so teaching me was in his interests as he could coach and watch, but I was taught so much by the whole experience. He taught me how to do caviar, how the sauce should be and so much more.” Whilst at the Royal Mirage, he was offered a big promotion, but turned it down due to advice from Kathreptis, who told him he wasn’t ready for such a big role. Instead, Kathreptis arranged for Gilles to go and work in Gordon Ramsay’s restaurant The Connaught, in FACT QATAR SEPTEMBER

While it takes a certain alignment of stars to create a situation that helps you rise to the top, and Chef Gilles himself admits that there was a certain amount of luck involved in his career, luck alone wouldn’t have helped him to endure the harrowing experience of a Gordon Ramsay kitchen! “Gordon was about precision and organisation – in Gordon’s team at the time it was almost like an army, very regimental. Mistakes were not tolerated, because there were a hundred others waiting to take your place,” recalls Gilles. It took no small measure of dedication to survive in such an
environment. “We worked from 7am till past midnight, so it was an incredibly stressful time, long days life very tough. And of course the kitchen. I will always remember how strict they were with the garnish. If after two minutes the garnish is not on the plate, then you had better start running pretty quickly!” And the competition between himself and the other young chefs made it even harder! “Competitive chefs would hide your equipment and play mind tricks with you. Sometimes I cook Asian, Italian, or French, but I particularly love Asian food. However, you have to work with the products of the region you are in if you want the freshest ingredients. In France there was so much to choose from, but my speciality was game food, and as we were in the forest, sometimes in the morning I would go into the woods and pick huge sep mushrooms.” And sometimes, he just had to be opportunistic! “I received a call one day from a friend who told me that a deer had just been hit by a lorry. So we went to collect it and put it in the trunk of the car, and cooked it. It was beautiful, we got its liver out, it was still hot! It was amazing. he Pearl-Qatar is extravagance at its best. Five-star restaurants, high-class boutiques and shops,
in the pipeline, you will pay top dollar for an apartment or townhouse here. It’s worth it if you like to live in the lap of luxury but not if you’re looking for something more down-to-earth. FACT rating:
West Bay / Dafna
W
est Bay / Dafna is pretty much where everything happens. You’re not far from many of the luxury hotels with all their eating and drinking outlets, City Centre Mall is right there and it is easy to get to most places from here. There is a lot of development going on and so the area is constantly evolving. However you will pay through the nose for a good apartment here. You also need to watch out for peak hour

Al Sadd

l Sadd is a very popular area because it is at the centre of

B
in Mahmoud is another cheap and cheerful place even if it is a little run-down in parts. There are plenty of practical shops about and good little eateries, particularly with Indian cuisine, and quaint traditional shisha cafes. You’re very close to Suhaim bin Hamad street, and Al Sadd, too so you can have the best of both worlds.

Poor Regulation Creates Instability
Al Ghanim / Umm Ghuwailina

l Ghanim / Umm Ghuwailina are considered to be the ‘poorer’ areas of Doha (if there is such a thing!). Buildings are run down, much of the place is old and it is hard work navigating small winding streets. However there are a lot of small shops and grocery stores and you’re not far from the Corniche, Ras Abu Abboud Road or the Museum of Islamic Art. FACT rating:

ajma is close to the airport and the Corniche and there is quite a lot within your reach in terms of shops and eating places. A
l Muntazah is a relatively inexpensive area to live and isn’t too far from plenty of cafes, shops and beauty salons. You’re very around (although peak times are never going to be smooth). l Waab and Al Aziziyah used to be considered Doha’s ‘sticks’, but these areas have fast become the place of choice, particularly for families. There are beautiful compounds and luxurious villas, and if you hunt enough there you’re close to Aspire Zone, the Torch Doha Hotel and Grand Heritage Doha. When Villagio Mall reopens too you are just a stone’s throw away from a hive of activity. Watch you don’t get too comfortable and forget there’s a bigger city out there though! Public beaches: For families only Al Farkiya is a relatively new beach project located just outside of Al Khor with 1,350 metres of shore. There are three big play areas and seven smaller ones for kids, wooden sheds, barbeque stands and plenty of lighting at night. Al Wakra beaches, which are located just a little south of Doha, can get pretty busy but there are always quieter spots to be found. Al Wakra beach used to have mangroves and was very popular among dog walkers although the area has been going through some major redevelopment which aims to make it better and better as a great day out for all the family. So watch this space.
There is 1.5 kilometres of pristine beach available to you in Katara for the cost of QR100 for adults and QR25 for kids (under-sixes can go for free). “W
e noticed one of the gaps that exist in the art scene in Doha is the lack of studio space,” says Sa’id Costa, curator of visual arts exhibitions and educational programmes. “A place where not only can Qatari artists come to develop their work, but also studio space where local artists and artists based in Qatar, of any nationality, can interact with international professionals.” located in the heart of Katara Valley of Cultures, the Katara Arts Studio is made up of one ‘art lounge’, two workshop areas and three spacious studios where visiting and local artists can take up residencies of varying durations. “Now Katara has over eight art galleries and we invite international artists, regional, Arab and nonArab,” says Sa’id. “When these people come we run an educational programme. We felt we needed some kind of educational structure where these programmes can be centred.” Throughout Ramadan, when the studios opened, there was an intense programme offering workshops to all children and focused on the four exhibitions that were going on in the surrounding buildings. The main lessons centred on Islamic calligraphy and spirituality, and attracted many kids, parents and even teenagers. During this time, their education partners from the UK Prince’s Trust, where there is a school of traditional art, were teaching the history of Islamic pattern and how simple patterns are in every single artwork. The team from the Prince’s Trust plans to come to Doha at least three times a year to deliver these educational programmes. “The idea is to bring artists that come from different scholastic knowledge, arts schools, schools of thought that are different from that which is setting up in Katara so that the Qatari arts scene can FACT QATAR SEPTEMBER

ARTS learn from these things,” Sa’id explains. “Yes the artists come to teach, but they also learn. They change their perception of the Arabs, the perception of the Gulf art and the Qatari arts scene. It’s a bridge between what visits us and what already exists here and what comes from that.” Sa’id says they knew there was a thirst for this kind of programme, something they realised after they rolled out pilot projects on various events. “The audience is there and they want to learn - there just wasn’t the right environment,” he says. He also stresses that these are rigorous programmes for people who are looking for more than just to colour in for an hour or so. “We have proper educational workshops. You spend one hour to one-and-a-half hours depending on the project, you leave having learned something and you can take home what you’ve produced which is a source of pride for the people that come.” From this month onwards you will have the chance to check out Katara’s exhibitions and afterwards request a workshop on what you have seen. All you need to do is offer a deposit to ensure attendance as there are only 12-15 places per lesson. There are also plenty of other plans in the pipeline from the Katara Arts Studios, such as artthemed birthday parties, visiting artists-in-residence and a terrace relaxation area where you can watch these artists work, as well as educational programmes running after every event in Katara. “People come to Katara to do different things,” says Sa’id. “You come here to eat at the restaurants after you come and see an exhibition, and then, if you want, you can even watch a concert. “When we put on an exhibition one of the questions for us is: What is the educational potential of this exhibition?” Sa’id explains. “How can this exhibition help us develop the scene? How can it develop the audience and develop the kids?” This type of attitude and approach towards art can only help the local arts scene flourish. GO:

“The Malibu brings some impressive
I
t’s useful when considering this car to look into where its origins came from. The Malibu was originally a premium version of the 1964 Chevrolet Chevelle, a mid-range car offering average performance but shed-loads of style. It was designed to provide the average Joe with a little of the Hollywood glamour without the movie star budget. It was a car made for its namesake, cruising the coastline cities in the sunshine. However, in the 70’s it all went horribly downhill, as the next few generations spawned boring and unsightly sedans that took all the desirability out of the Malibu brand. After dying out in the 80’s, the Malibu was revived in 1997, and but this is where things start to get better. each successive generation after this one was slightly better than the last, and there was at least some signs of improvement. With this latest incarnation, Chevrolet seemed to have a determination to cast off the dark years of the Malibu and re-inject some of that 1960’s glamour. It’s such a break from previous models that you can tell they mean business. I should start by saying that this Chevy Malibu that we tested was fully-loaded. However, I should

follow this by saying that you get this fully-loaded option for a very reasonable price. For your money, you’ll get 19-inch alloys, full leather trim, reverse parking camera, a 3-litre 265HP Chevy V6, sunroof, touchscreen infotainment system, stereo with CD, MP3 and USB, keyless entry and start with remote start (in case you want to get the AC going a few minutes before you get in), and more. These features alone do not set the Malibu apart from the competition, though. There are many Korean and Japanese brands out there that are muscling their way into international markets by offering these levels of comfort for less, and I think it is for this exact reason, very stiff competition, that Chevrolet have pushed the boat out on this one. Because they know that, in order to beat the Asians at this game, they just have to match their value for money, but add a dose of good ol’ American style. And that’s what they’ve done with the Malibu. Outside, the car is a handsome and stylish mid-sized saloon that holds its own alongside any other car in its class, and looks better than most. The large front grill, muscular lines and alloy wheels give the car an imposing presence
on the road. And from the rear, any fan of the Chevrolet brand will instantly recognise where the style cues come from! The rear lights and the raised lip around the boot lid instantly call to mind the Camaro, Chevrolet’s iconic muscle car. Inside, the good news continues – leather padding across the dashboard gives the car a premium feel, with blue ambient lighting suffusing the interior. I struggled to find the right word to describe my impression of the Malibu’s interior, and in the end I had to settle on the word that seemed to sum it up best – it’s just cool! To drive, the Malibu is a very pleasant place to be. The 3 litre V6 has a decent amount of pull,
it’s never going to win you any races. The ride comfort is very
feedback from the steering, and even
the best thing about the experience is the sound insulation – you’re cocooned in a haven of tranquillity, and isolated from the din of busy streets outside. My one concern, as someone for whom the driving experience is of the utmost importance, is that you’re a little TOO isolated from the whole experience. There’s not much
good, thanks to the StabiliTrak stability control system, you’re never under any impression that you’re driving anything other than a family sedan. The only pretence the Malibu makes to being a performance car is the Camaroinspired rear end. In every other way it is exactly what it appears to be – a comfortable, stylish and well-appointed family sedan.

n 19-year-old Abdulla’s mind the statement describes “a person that portrays themselves as something that they are... So someone who is wearing my clothes will transform into who they want to be as opposed to who they are.” His inaugural collection, which is currently in production and due to hit the shelves in December, combines a rock and roll style with a sophisticated edge. It has unique touches and embellishments but remains uncomplicated. He uses skulls, studs, cut-outs and bold colours and then mixes them with lace, collars and an overall youthful and most certainly different for Qatar where, Abdulla says, the fashion scene has only just begun. the fashion industry are kind of scared,” he says. “Scared of what people would think of their designs and whether people will actually buy their stuff, so they produce stuff less ‘scary’.” In a way, he says, he hopes to bring Qatari fashion scene and open peoples’ minds to its endless possibilities. “I’m not afraid of approaching people because I think if I believe in these designs why wouldn’t someone else? even if I get negative feedback I am still accepting of it. I’m a very open person to change things.” ever since he was a kid Abdulla has felt that clothes play a big role in how people perceive and interact with you. For him, sophistication and edginess go hand in hand, and he allows no one to stop him from wearing what he wants no matter what criticism he gets. FACT QATAR SEPTEMBER

I was really in love with them and everyone hated them but I kept wearing them.” As he speaks his demeanour is calm, his exterior is self-assured brand’s style mirrors his own. my dad’s job and my background, law and politics are something that are always current in my life. It is involved in everything.” His father’s career has taken Abdulla and his four older siblings all around the world and he has lived in london, Morocco, Abu Dhabi, Saudi Arabia and Qatar. He says Morocco is his favourite place but he also loves living in his home country. “I like that it’s laid back, easy going and everyone is really friendly. Abdulla believes the emirate will ultimately be an important market for him. Overall, Abdulla plans to have his designs in major department stores around the region and eventually set up his own store right here in Qatar. He sums up his goals like this: “I like making very bold clothing even people who aren’t that transform you in a way… Because you’re going to get negative feedback everywhere. I’ve gotten to a point in my life where I don’t really care. This is what I want to do, this is what I enjoy doing, this is what I love.”

AFTeR a long, hot summer and the quiet days of Ramadan, everyone’s getting back into the brunching spirit. One of the latest additions to the market is the Mawasem Friday brunch at the Hilton Doha, and so we booked ourselves in for some much-needed daytime indulgence. We chose to go the weekend straight after eid, which as it turns out is a very quiet time. Usually, the manager tells us, they don’t have the space to book everyone in. even on a slow day however, there’s a buzz in of non-calorie counting folk just looking for a relaxing but decadent afternoon. The venue is refreshingly light and airy, and during the cooler months you have the added option of dining outdoors by the pool and seaside. Inside, you can sit by the window with a view of the ocean and the fresh atmosphere is brightened up with the live Cuban band that usually plays evenings at Trader Vic’s. Under the direction of the Mauritian senior chef Deojee Bhushan, the international buffet spread at Mawasem is prepared to perfection. In the starter section

you have a range of salads such as seafood and beetroot, and mezze in bite-sized portions. Small dishes with pomegranate and muhammara slide nicely on your plate alongside fresh Arabic bread. Other small pots of interesting dishes such as spicy prawn cocktail or enokitake mushrooms sprouting from a tomato-based sauce also catch your eye. lying at the end of the starter cart is a unique cheese section, too, where you can scrape your own parmesan and enjoy it with some homemade crackers and a range of other toppings such as cured meats and condiments. Moving on to mains, running the length of the spacious restaurant are live cooking stations with pasta, sushi and sashimi. The selection of seafood is impressive, with options such as fresh oysters, mussels and smoked salmon. The carvery area, too, is piled high with delectable options and if you eat only one thing from here you must try the rib eye steak with onion gravy, which literally slides off the fork and melts in your mouth.
The pièce de résistance, however, is the moreish dessert section which had us going back more times than we’d like to admit. Small portions of classic puds like crème brulee (a must-try!), fruit pavlova and brownies sidle alongside more unique dishes such as oreo cheesecake. There is also a Movenpick ice cream cart and customised crepe section with a and had we not forced ourselves to stop, we could easily have tried others stuffed with caramel or the classic wrapped with sugar and lemon juice. Another great aspect to this brunch is that it is entirely kidfriendly with a smaller spread of children’s favourites such as chicken nuggets and chips, and even a popcorn machine. High chairs are also available for the tots. Overall, we have to say even though Mawasem has a great vibe on a regular day, on Fridays it really comes to life. We loved the balance between casual and elegance - you feel right at home but happen to be surrounded by some of the most divine food.

talian cuisine is known for its
diversity. Any chef worth his or her salt can make a good pasta dish, but to make it truly outstanding? That takes someone with talent. Chef Hichem Khelil at la Cigale Doha’s Di Capri is one such chef. Chef Khelil was born in Tunisia and trained in north Italy where his love of creating fresh pasta dishes was nurtured. “It is a big part of the culture,” he tells us. “In every home in Italy, every Sunday the whole family is involved in making the fresh pasta. In South Italy they like spice, but in the North they use He shows us a selection of pastas he prepared earlier just for us. Artistically laid out atop a trolley is an assortment of pasta from spaghetti to tagliatelle, from ravioli to parpadelle. Hiding beneath the classics are fresh parsley, basil, coriander and mint leaves pressed between them. pasta, you just need to have everything,” he says (somewhat modestly in our view!). “Some can be made by hand but some you need a special machine to make them.” The ravioli is stuffed and there are some small pasta spirals with and cheese inside – something we had never seen before. He tells us that you can use a range

but his personal favourite is anything made with mushrooms. “I love porcini and ricotta too,” he smiles. “Italian four cheeses – with gorgonzola – is also very good.” Before moving to Doha in 2007, Chef Khelil had spent 12 years in the kitchens of Italy and Tunisia working in a range of roles from restaurant manager to chef de cuisine. He spent this time perfecting his speciality and now he describes his cooking style as “gourmet Italian cuisine with a modern twist”. Fresh pasta is what he truly excels at though. In fact, he is so good that when he served the Italian ambassador in Tunis, he enjoyed it so much that he hired Chef Khelil as his own private chef for two years! Now, he is the Chef de Partie at la Cigale Hotel and is in charge of all Italian kitchen operations. So you have him to thank for the extensive southern Italy-inspired Di Capri menu which he designed himself and includes delicacies such as butter and bosa nougat with hazelnut sauce. Our main course, however, was the linguine alla Cigala, or shrimp spaghetti, with a side of traditional bruschetta. The bruschetta, a kind of open sandwich, is made at Di Capri using a slice of French baguette and is rubbed with garlic, then topped with tomatoes, fresh basil and onion. There are many variations, says the chef, but
this was simple, classic and delicious with the perfect amount of garlic to give the The star of the show, however, was the seafood spaghetti, which is made with shrimps, octopus, fresh cherry tomatoes, traditional Italian tomato sauce, garlic, onion, rosemary, fresh basil and a sprinkling of spice that is in no way overwhelming. The ingredients may be complex. With every mouthful you can taste something new and it is far too easy to eat the entire plate. The best part, don’t feel like having a nap. It is still quite light and so the perfect lunch or dinner out on the town for a night. At Di Capri, Chef Khelil tells us, they source most of their seafood from Qatar and Tunisia. The shrimp and octopus in our dish came from Tunis where the chef says they are known for their fabulous all, that he use only the freshest of ingredients, as he believes only this will stand out. As we prepare to leave Chef Khelil gives us a couple of tips from the kitchen. “There are two things you must always ask a customer,” he explains. “One is whether they like their pasta al dente (slightly undercooked). Some people don’t like this. “And the other is whether they like spice.” It is this concern for and experience with customers that makes Chef Khelil truly skilled. It doesn’t hurt that he speaks four languages – Arabic, either. Oh, and let’s not forget the best fresh pasta we’ve had in these here parts! FACT QATAR SEPTEMBER
