Clotted cream is a very thick cream typically used as a topping for scones.

Read the recipe closely and carefully to follow the instructions.

Make scones Scones are British baked goods. The earliest records we have of these are from Scotland in the early 1500s. This will give you 6 scones: 350 grams flour ¼ tsp salt 1 tsp baking powder 85 grams butter cut into cubes 3 tbsp sugar 1.75 dl milk 1 tsp vanilla extract squeezed lemon juice 1 beaten egg (to glaze) jam, butter, or clotted cream (to serve)

Remember to wash your hands first! 1 Heat the oven to 220 degrees Celsius. 2 Put the flour, salt, and baking powder into a large bowl and mix. 3 Add the butter cubes and then mix with your fingers until the mix looks like sand. Add the sugar. 4 Heat the milk in a pot or microwave until it is warm, but not hot. Add the vanilla extract and one squeeze of lemon juice. Set aside for a moment. 5 Make a hole in the middle of the dry mix, then add the liquid and combine it quickly with a spoon. 6 Scatter some flour onto the dough and the work surface. Tip the dough onto it. Stretch and fold the dough over itself 2–3 times until it is a little smoother. 7 Pat the dough into a big circle about 2 cm thick. 8 Use a round cutter or drinking glass and cut out six circles. 9 Beat an egg and brush the tops of the scones with it. Then place them onto the baking tray. 10 Bake for 10 minutes until golden on top. Eat while warm with jam and butter or clotted cream.

Have you ever heard the bagpipes? Do you know any Irish, Scottish, or Welsh songs?

Music and dance Both Ireland and Scotland have traditional dancing. Irish dancing was made popular by Riverdance, a dance show with Irish dance and music, using fiddles, drums and vocals. Scottish Highland Dance is performed at the Highland Games. The dancers often wear kilts or tartan dresses and the music is played on bagpipes. Bagpipes are Scotland’s national musical instrument. They were first used as an instrument of war but are now played on all occasions. Many people around the world think of Scotland when they hear the characteristic sound of a bagpipe. Wales is often referred to as “the land of song”. Historically, the Welsh used singing as a way to communicate. Today, Wales hosts many music festivals with all kinds of music.

In 1823, 16-year-old William Webb Ellis played football at Rugby School. One day, he just picked up the ball and ran with it. That day, rugby was born. Since then, rugby has become one of the most popular sports in the British Isles. Rugby looks quite rough but the players are in fact very polite to each other and to the referee. 10

The first known ball game which involved kicking took place in China in the 3rd century BCE. Football, as we know it today, was first played in a boarding school in England in the middle of the 19th century. The Isle of Man TT is a motorcycle race known around the world. Every May and June, the world’s greatest road racers gather on the Isle of Man to compete in the 60-kilometre race. Golf, as we know it today, was first played in Scotland in the 15th century. Guess where the Shetland pony comes from? You guessed correctly: the Shetland Islands. Did you know that the Shetland pony changes its coat with the seasons? As the temperature gets colder it gets longer and rougher hair, called guard hair, to protect it from the cold winters. The Highland Games are games held many places in Scotland every year. People compete in different exercises, like caber toss (throwing a big log as far as you can), stone put (throwing a 7–11 kilo stone as far as you can), sheaf toss (throwing a 9-kilo bag of hay over a pole with a pitchfork), and tug of war, as you can see in the picture.

Can you think of anything as big as Nessie?

Nessie Nessie is the nickname of a large creature that may (or may not) live in a big lake in Scotland, Loch Ness. It is said that Nessie, or the Loch Ness Monster, swam into the lake a long, long time ago before the lake became landlocked. People who claim to have seen her explain that she is large with a long neck and one or more humps sticking out of the water. A monk claimed to have seen a beast in the water in 565 CE. In 1871, a man claimed to have seen something “wriggling and churning up the water”. In 1933, a local newspaper described a splash by “a large beast or whale-like fish” in the water.


Leprechauns Leprechauns are said to be creatures that live in rural areas away from people. Their houses are in deep, underground caves or in hollow trunks of a fairy tree. The leprechauns lived in Ireland before humans did and some consider them to be the true natives of Ireland. The leprechauns are shoemakers and they are well known for their love of Irish music and dance. Also, it is said that they have a hidden pot of gold at the end of the rainbow. Leprechauns are 60–90 centimetres tall, but don’t think that they are cute and harmless! They’re quick, smart, and have magical powers to vanish into thin air. If you are lucky enough to see one, you can try to catch it. The leprechaun will then have to grant you three wishes before it is set free. If you make the wrong wish, it could result in a lifetime of bad luck.
