Around this time, as the weather becomes more comfortable in the transit from rainy into winter seasons, a cup of warm coffee is ideal for many. To help choose the right coffee for you, this issue of Bitter/Sweet presents a variety of choices to correspond to your urban lifestyle. Once we’ve got that covered, let’s learn a bit more about baristaship in the Bon Academy column. There, you can find great tips which you may yet not have heard about. As usual, Bon Recipe has great drink recipes to discover. There is one for Coffee Jelly with a sumptuous coconut milk topping - a truly addictive dessert you’ll need to experience for yourself. Appearance matters to coffee shops as much as it does to people. Bon Design shows you how to execute interesting patterns and design your cafe with simple tiles. Lastly, don’t forget to check out our workshop schedule from October to December 2016!

In the beginning of July, we announced our annual Boncafe Internal Barista Championship to search for the most talented baristas in Thailand. This competition is one of Boncafe’s strategies to help develop the level of skill and experience within the coffee industry, with an aim to eventually return an advantage to our customers. Those interested in entering the coffee business receive the added benefit of a great event to help their startup. The champion of this year’s competition is none other than Bangkok-born “Nun” Chalotorn Suratha. Having initially begun her career in human resources, the young and confident Nun fell in love with the natural smell of fresh coffee at the office. This eventually led her to become a coffee salesperson in Nonthaburi. Her hard work and endurance paid off, as she is now crowned Champion Barista. She says: I believe that if one truly wants something, one can eventually get it. I spent a long time training to make the perfect coffee, making perfect shots, steaming milk to a perfect foamy consistency, and going through a lot of trial and error with the ‘Signature Drinks’ menu for days! It took awhile but eventually it led to the ‘Black Forest’, a drink that combines the sweetness of Blackberries with the slight sourness of lemon and a dash of mint. I’m confident that anyone who tries it will fall in love with it straightaway! 10

When asked if she is proud of her accomplishment as a champion, Nun further answered, “I feel really proud, and believe that if we really concentrate on one thing and do it properly, in the end it will all come together. I have to say thank you to all the great help I’ve had from the people at Boncafe in Bangkok. They helped me with certain techniques, and always encouraged and pushed me to go further. Because of them I had this opportunity to compete and win this title—I’m really touched” After all the hard training, learning various techniques from Boncafe trainers, Nun came up with her own creative drink whereby she could show-off her skills. THE SEARCH for the best

เฟ้นหาสุดยอดบาริสต้าของบอนกาแฟ

The Boncafe Internal Barista Championship 2016 was held on July 7 and 8. This annual event was designed to identify the company’s very own finest. A total of 19 competitors from various branches signed up for the contest which provided everyone with the opportunity to hone their skills, gain experience, and try their hands at creating new drink recipes from Boncafe products. Nun Chalotorn Suratha from Boncafe’s Bangkok branch was declared the winner. The first and second runners-up were Toom Thananya Khanthasen from the Phuket branch and Poo Chonglak Ralurk, respectively. More prizes were handed out for signature drinks Joyful Tofu, a hot drink by Kob Narumon Phoo-Un from the Udonthani branch, and Pitlok Banana Sundried, a cold drink by Poo Chonglak Ralurk from our Pitsanulok branch. How do you come upon inspiration as a designer?

It brings me joy to share my imagination with others through my work. Sometimes they get it, sometimes they don’t. In my opinion, this is creativity at work. A design is characteristic and interpreted differently by different individuals. I cannot see myself working in other fields. I was born to do this.

Tell us more about coffee shop design. What is an element that should not be overlooked?

A cafe’s appearance and decor must suit its market. For example, a coffee shop located far from a cosmopolitan area that looks too posh may intimidate potential local customers. They may fear that the place is too expensive. We can dream of and execute any design we want. But we must not forget to consider how the target customers will react to the image they see.

Creative professionals cannot live without coffee. How would you rate this statement?

I agree with that assessment. I am a big coffee drinker. I have one cup of coffee in the morning before anything else. Then I have another in the afternoon, after lunchtime. When I have appointments out of the office, the location is usually in a coffee shop. Coffee is a part of our culture today. It’s not only something to keep us awake. The decor of the establishment, the drink we order-they all reflect our personality and how we live our life.

What is your favorite drink?

I enjoy a hot Americano because it is not too intense. I can have it any time. A day without coffee is never complete. I like to sip coffee as I ponder things. Coffee can almost always help me come up with great ideas. Come to think of it, let’s have another cup! (Big grin)

Mix all the ingredients in a pot over medium heat, and stir well until the jel y powder dissolves completely. Pour 1½ cup of this Coconut Milk Jelly mixture into a 8x8 inch square tin. 2. Breath and Air Freshening

Simply put a few coffee beans in your mouth for a while, and your breath will be fresh again. Coffee can help remove food smell on hands as well. For example, to remove the smell of fish, garlic, or similarly pungent food after cooking, put a few coffee beans or a small amount of spent ground coffee in the palms of hands. Clench fists for a while so the oil from the beans can help absorb the smell, then wash hands with warm water and soap. Put small packs of spent ground coffee in the refrigerator. Once cool, put them on the eyes, sit back and relax for 20 minutes. This will make you feel less tired and bring that bright glow back to your eyes. Alternatively, make a facial mask out of spent ground coffee and yoghurt, honey, or egg white. Combine the mixture well then apply it to the face. Leave on for 15 minutes before rinsing off with warm water. The glow and softness will return to your skin. Lastly, the use of spent ground coffee as scrub on your arms and legs during a shower can effectively remove dead skin cells as well.

ANOTHER WAY TO Decorate with Tiles

Floor tiles can be used as wall tiles sometimes. Areas to accommodate furniture and heavy objects, such as balconies or kitchens, should be covered with coated floor tiles that resist scratching. 3. Parking lot areas should be covered with floor tiles capable of supporting heavy loads. 4. Floor tiles with adhesive footing can sometimes be used on the interior and exterior wall of a building. 5. Areas that often come into contact with corrosive substances should be covered with floor tiles with high chemical resistance and durability.

How to choose wall tiles:

1. Wall tiles should be of lightweight, porous material with rough surfaces on the backside of the tile for adhesive purposes. 2. They should be the exact same size to create perfect patterns when arranging on the wall. Wall tiles should allow low or no shrinkage to prevent cracks from swelling after tiles come into contact with moisture for a very long period of time 3. Coated colors should be resistant to acidic and basic substances, as you may have to use strong, chemical cleaners on them from time to time.

Dark-toned Tiles

1. กระเบื้ อ งส� ำ หรั บ ปู ผ นั ง ควรมี น�้ ำ หนั ก เบา มีรพู รุนสูง ไม่จำ� เป็นต้องแข็งแรงมาก ผิวด้านหลัง ของกระเบือ้ งควรเป็นผิวทีไ่ ม่เรียบเพือ่ การยึดเกาะ 2. ขนาดของกระเบื้องแต่ละแผ่นต้องเที่ยงตรง เท่ า กั น เวลาปู ก ระเบื้ อ งจะท� ำ ให้ ไ ด้ แ นวของ กระเบือ้ งทีส่ วยงาม การหดตัวของกระเบือ้ งชนิดนี้ จ�ำเป็นจะต้องต�่ำมากหรือเรียกได้ว่าไม่เกิดการ หดตัวเลย เพือ่ ป้องกันการแตกร้าวของผิวเคลือบ เมื่อใช้งานไปในระยะหนึ่ง อันเนื่องมาจากการ ขยายตัวจากความชืน้ 3. สีเคลือบต้องมีความทนทานต่อกรดและด่าง เนื่ อ งจากบางครั้ ง ผู ้ ใ ช้ ง านท� ำ ความสะอาด กระเบื้ อ งด้ ว ยน�้ ำ ยาท� ำ ความสะอาดที่ มี ค วาม เป็นกรดสูง

การเลือกใช้โทนสี

สีโทนอ่อน เหมาะกับการใช้ภายในอาคาร เนือ่ งจากกระเบือ้ ง สีอ่อนจะมีปัญหาเรื่องความสกปรก ถ้าน�ำไปใช้ นอกอาคาร บริเวณพื้นผิวที่สัมผัสกับแดด ลม และฝน เป็นระยะเวลานานจะเกิดรอยด่างและ คราบต่างๆ ท�ำให้กระเบื้องหมดความสวยงาม และเป็นแหล่งสะสมคราบสกปรก อีกทั้งสีอ่อน ยังเหมาะกับพื้นที่ที่มีขนาดเล็ก เพราะสามารถ ท�ำให้หอ้ งดูกว้างขึน้ อีกด้วย

THE DANGERS OF Being Sweet อันตรายทีม่ ากับความหวาน

Sugar is part of a simple carbohydrate food group that gives us energy but offers us little in terms of health benefits. Just one gram of sugar can give us up to four calories of energy. Hence, it is common for doctors to administer glucose to patients who are unable to ingest or digest food normally and turn it into the nutrients needed to regain full health. Glucose is chosen specifically because it is quickly absorbed and turned into an energy source. Today, so many of us are addicted to sugar that it has become the norm to add it to our food and drinks. Yet the reality is that too much of a sweet thing can be dangerous -and this goes for any source of sugar, including sugary drinks, cakes and even raw sugar.

Sugar and Tooth Decay When it comes into contact with saliva and is ingested, sugar transforms and becomes acidic. The bacteria in the mouth then thrive in this environment and begin to attack teeth, leading to tooth decay. The more one eats highly sugary foods and sweets, the higher the mouth’s acidic environment becomes, until cavities are formed and teeth start to decay.

Sugar and Acne Although there is little research to prove a direct link between acne and sugar, it is a generally acknowledged fact that a diet high in sugar leads to higher insulin in the blood. This results in insulin-like growth factor 1 (IGF-1) in the bloodstream. This, in turn, can cause oil nodules to form and block pores on the skin, which then leads to acne. Furthermore, IGF-1 and insulin can initiate the production of androgens, which are well known to contribute to the over-production of oil. 60

Sugar and Major Illnesses When we ingest more sugar than we need, a reaction is created in the body whereby insulin is created in an attempt to minimize the amount of sugar in the bloodstream. When blood sugar levels drop too quickly, we start to crave sweets and become hungry more often. The excess sugar not used by the body is also stored in the form of oil under the skin and fat on our bellies! Too much sugar is one of the main culprits leading to serious illness, including high cholesterol, high blood pressure, heart problems, and diabetes.

Sugar Makes Us Age Faster When there is an unusually high amount of sugar constantly in the bloodstream, a state of glycation occurs. This hastens the aging process of the body by causing a breakdown in both collagen and the protein network of the skin. Wrinkles and dark spots occur more easily. Apart from this, effects are felt as far as the brain cells, where an overload of sugar directly affects these cells and causes them to age at a quickened rate. Potential illnesses caused by this include Alzheimer’s disease. Now that we know the dangers of overconsuming sugar, we can re-evaluate our diets and make a plan to break bad habits. First, we should avoid foods high in sugar such as candy, fizzy drinks, cakes, cookies, and all desserts. If we are coffee drinkers, then try to cut down on the amount of sugar we use or choose to drink black coffee instead. Importantly, let’s not forget that the maximum recommended amount is around 6 teaspoons, or 24 grams a day.

What About Fruits? Are They Also Bad? Even though fruits are full of useful elements such as minerals, vitamins, fiber, and anti-oxidants, if we eat more than our metabolism is able to burn, the natural sugars in fruit will become oil or fat that is collected under the skin. So, yes, moderation is needed as too much of a good thing can have adverse affects on one’s health.

น�้ำตาลที่เราบริโภคเข้าไปมากเกินความจ�ำเป็น นั้ น จะกระตุ ้ น ให้ ร ่ า งกายหลั่ ง อิ น ซู ลิ น ออกมา เพื่อลดระดับน�้ำตาลในกระแสเลือด และเมื่อ ปริ ม าณน�้ ำ ตาลลดลงอย่ า งรวดเร็ ว จะท� ำ ให้ เราอยากของหวานและหิวบ่อยขึ้น ซึ่งน�้ำตาล ส่วนเกินนีจ้ ะถูกจัดเก็บในรูปแบบของไขมันสะสม เก็บไว้ใต้ผวิ หนังและพุงของเรานัน่ เอง น�ำ้ ตาลจึง ก่อให้เกิดและยังส่งผลท�ำให้เกิดโรคอืน่ ๆ ตามมา อีกมากมาย เช่น ไขมันในเลือดสูง ความดันโลหิตสูง โรคหัวใจ โรคเบาหวาน เป็นต้น

น�้ำตาลท�ำให้แก่เร็ว

เมื่อร่างกายมีระดับน�้ำตาลในเลือดสูงเป็นประจ�ำ จะเกิดปฏิกิริยาไกลเคชั่น (Glycation) ที่จะ ไปเร่งกระบวนการเสื่อมของร่างกาย เกิดการ ท�ำลายคอลลาเจนและใยโปรตีนที่ผิวหนัง ท�ำให้ เกิดริว้ รอยและจุดด่างด�ำ นอกจากนี้ ยังมีผลต่อ การท�ำงานของเซลล์สมอง ท�ำให้เซลล์เสือ่ มลง เป็น สาเหตุของการเกิดโรคอัลไซเมอร์ (Alzheimer’s disease) ได้อกี ด้วย เมื่อทราบถึงการบริโภคน�้ำตาลในปริมาณที่มาก เกิ น ไปส่ ง ผลเสี ย ต่ อ สุ ข ภาพแบบนี้ แ ล้ ว ควร พิจารณาปรับเปลีย่ นพฤติกรรมการกิน ควรหลีกเลีย่ ง อาหารทีใ่ ห้นำ�้ ตาลสูง เช่น ลูกอม น�ำ้ อัดลม ขนม เค้ก คุกกี้ ขนมหวานทุกชนิด ถ้าชอบดืม่ กาแฟ ก็เลือกดื่มกาแฟที่ใส่น�้ำตาลน้อยๆ หรือเลือกดื่ม กาแฟด�ำไปเลยก็ได้ และอย่าลืมว่าไม่ควรให้ ร่างกายรับน�ำ้ ตาลเกินวันละ 6 ช้อนชา หรือ 24 กรัม ต่อวันนะคะ
