If Walls Could Talk…

I

n centuries past, dating back as far as 1166, Kings and Queens of Windsor Castle were regularly entertained at Hedsor House. Formerly a Royal Residence of Augusta the Princess of Wales, home to a renowned race car driver in the ‘20s and later as a spy base during the Cold War, Hedsor has seen it’s fair share of royalty, revelry and romance. Today, the beautiful country house wedding venue, set in a private 100-acre historic park in Buckinghamshire, plays host to some of the most extraordinary weddings and events. It continues to be a place to gather, celebrate, entertain and be seen… But true to reputation Hedsor never rests on her laurels, and changes are now afoot. As part of a major investment programme eleven new bedrooms will be unveiled at the beginning of June. After three years of preparation, planning and organising, the new rooms are being sensitively restored to their former elegance and grandeur as we speak, and will be instilled with a renewed energy to suitably impress future guests. Surrounding the Grand Hall and on the second floor, the bedrooms will vary in size, but all will have the same attention to detail and reflect the spirit of the house. Warm, inviting, fresh and suitably smart - these are the bedrooms that all guests want to come back to after the party! e jewel in the crown will be the new Bridal Suite, formerly Florence Shephard’s bedroom. Florence is the current owners’ grandmother who was given Hedsor House as a wedding present in the 1932.

Echoing the personality of the new bedrooms, other features will be introduced to the house including hidden doors, secret panels and a bar exclusively for overnight guests. e house will once again further enhance its reputation for being a veritable playground for partygoers. Hedsor offers privacy and exclusivity along with an array of superb facilities to make every event or wedding day perfect. e extensive grounds and sumptuous settings are perfect for occasions of all sizes. Looking ahead, the policy is to continue to add to and improve the facilities on offer. In 2014 a new off road 4x4 track was added, as well as a parterre in the grounds. Inside, a beautiful library was opened, and a new lighting scheme was added. e new rooms project is the next giant leap in an on-going course of exciting changes, and the programme of investments and improvements will continue, adding further to the attractiveness & versatility of the venue. ■

sharing your home

sharing the family home with the older generation

f

or those who are capable of living independently, staying in your own home in your 80s, 90s and beyond is something to be celebrated. For others however, there may be a need to make significant changes to ensure ongoing care and support is available. While this can mean moving into an assisted living facility or a care home, another alternative is to pool your resources and that of your family to either extend or convert the main family home, or purchase an alternative property. Mike Wragg, property lawyer at Gerrards Cross law firm B P Collins LLP, says anyone considering such a move should seek advice in order to avoid future conflict. “Although arrangements can be made with the best of intentions and appear to have everyone’s initial agreement, people can change their minds for a variety of reasons, or their circumstances can alter,” he said. Mike highlights some typical scenarios where families could unwittingly find themselves with a major property headache. A property purchased by a married son or daughter for their elderly parents to live in nearby:

• If the younger couple get divorced or one of them dies, the parents’ new home may have to be sold as part of their assets • Alternatively, if whoever owns the property has a business and runs into financial trouble, it could be sold by creditors

1 6 april 2015

if the house has to be sold for any reason • ere could be inheritance tax implications over the subsequent value of the property • If, in time, the elderly parent requires funds to pay for care home fees, it can be much more difficult to access the money they need if it has been invested in a “granny flat” or similar alternative. is may also attract the interest of the authorities who would be keen to recoup some of the fees and potentially could take a charge over the family house in order to recover money when it is ultimately sold. If a parent has several children but decides to live with one of them and invests £50,000 of their savings in building an extension:

• Potential to cause conflict among the remaining children, who could effectively each claim a share of the extension, but only recoup their inheritance such time as the house was sold “ese examples show just how important it is to consider the legal implications of such arrangements and to also seek independent financial advice,” concluded Mike. “Life has a habit of getting in the way of the best laid plans and no-one likes to think of their elderly parents having to move against their will. We’re always happy to provide families with initial advice without charge, talking to us can make a real difference and help ensure the future is secure for all generations.” ■

my life in art

W

inning this years BBC1 series “e Big Painting Challenge” was a culmination of a series of events stretching back to my move to France 10 years ago. As a family we decided to leave the cold and wet of Glasgow and head to warmer climes. I was working as a freelance architectural illustrator at the time and with e-commerce becoming more and more viable it meant I could work with my existing clientele but in much more convivial surroundings. Four years later, having renovated a Charentaise Town House north of Bordeaux we moved to Beaconsfield in Buckinghamshire. e global downturn in the construction industry meant that illustrators like myself were having a tough time and as much as we were enjoying the French lifestyle we had to earn some money. My wife landed a job with Nike and with it being London based we moved back to the UK. I was gradually making the transition from illustrator to Artist from my small studio in Beaconsfield but like many struggling Artists making a living from painting isn’t easy. An unexpected addition to our family of four came along soon after with the birth of our daughter which meant I was going into unchartered territory as a stay at home Dad. It had an effect on how often I could paint and as a result my productivity suffered. My wife was doing really well with Nike which resulted in an invite to join the European team at their HQ in Hilversum in the Netherlands, it was a move I embraced and artistically it proved to be a real inspiration. e Dutch as a nation have a great appreciation of original art and it is not uncommon to see massive oil paintings in the most humble of homes. I got involved in the local art scene and enjoyed many open house exhibitions where aspiring artists let the general public into their homes to view and buy work.

2 0 april 2015

I painted many Dutch landscapes and portraits during my time there and when we returned to Beaconsfield a year later I was determined to paint more and sell my work. I joined Bucks Visual Images group 18 months ago with a view to exhibiting at Open Studios in the summer exhibition with some fellow Beaconsfield artists, this proved to be the catalyst for my participation in “e Big Painting Challenge”. e BBC via Bucks visual images group and other art groups invited amateur artists from all over the country to apply for the new series. Subsequently I applied and after many auditions and interviews I was invited to go on the programme. I was thrown into a world I knew little about and painted under the most unusual and demanding circumstances but after six weeks of intense filming I was crowned Britain’s best amateur artist. I currently have two paintings I produced on the programme hanging in Tate Britain and on the back of my success I am now working tirelessly on a series of urban landscapes, predominantly of London. I paint landscapes of the local Buckinghamshire area, ames scenes in the likes of Marlow and portraits of many of the Beaconsfield ‘locals’. Original work and limited edition prints are also available to buy on my website and have a look at “the little selfie challenge” on my site for a chance to win a free portrait. All at. Direct enquiries about commissioning a painting can be made via my website or by e mail to bellpaul@mac.com ■

Potential Masters of the Future

Kal Gajoum – Ambiance of Moulin Rouge – Signed Limited Edition - £2,995

F

or the last five years Gallery Rouge have held much admired shows featuring the works of renowned classical painters including Picasso, Chagall and Matisse to name but a few. Those looking for modern day contemporaries often ask ‘who will be the masters of tomorrow?’. Gallery Rouge works with a host of exceptionally talented artists, across a spectrum of styles and mediums. Within the impressionist genre there are a group whose works have particularly captivated us, which we feel are ones to keep a close eye on.

KAL GAJOUM

Born in Tripoli Libya in 1968, Gajoum’s interest has always lain in the palette knife technique of applying oil paints. Having studied both in Italy and Paris under renowned scholars, Gajoum perfected his style of French Impressionism with a modern flair. Now residing in Canada, Gajoum is an accomplished and respected international artist, his profile and

work in high demand since his tenure as the official artist of the 2010 Winter Olympics.

PETER WILEMAN PRIO

Born in 1946 in Middlesex, Wileman has been an illustrator, editor and accomplished painter for over 35 years. Respected for his highly expressive paintings of harbours and coves, his compositions have a painterly quality derived from the vigour of his brush strokes and the impression of spontaneous creativity. Wileman has received the Frank Herring award at the Mall Galleries, and the Cornellisen Prize for Outstanding Work. Wileman is the President of the Royal Institute of Oil Painters.

HARRY BRIOCHE

Born in 1965, Brioche comes from humble beginnings in the Seychelles. Like so many accomplished painters he is a self-taught artist, carving a niche for his vivid undulating landscape paintings. Packed with raw emotion and energy,

nce the country home of the Rothschilds, Waddesdon Manor is a Renaissance-style château housing one of the finest collections of French 18th century decorative arts in the world. e Wine Cellars, modelled on the private cellars at Chateau Lafite-Rothschild contain thousands of bottles of Rothschild wines dating back to 1868. e Victorian garden has a parterre, aviary, seasonal displays, fountains and statuary. Top quality food and wines are served throughout the day in the restaurants, and the award-winning shops offer a superb range of gifts and wine. e 2015 season begins on Wednesday 25th March, with an abundance of new highlights to offer visitors. Exhibitions inside the house include an exploration of the mineral wealth of the collection at Waddesdon, looking at the precious materials incorporated in the furniture, sculpture and the fabric of the building itself. In celebration of the re-display of Baron Ferdinand de Rothschild’s remarkable collection of treasures at the British Museum known as the “Waddesdon Bequest”, Waddesdon will be exploring the Renaissance-style furnishings that surrounded it when it was in the Smoking Room. e Waddesdon at War exhibition continues in the Family Room, and a contemporary installation by artist Jane Wildgoose in the Green Boudoir and Lobby explores the themes of loss and mourning, memory and bequest.

In the Coach House exhibition space from April there will be a photographic exhibition curated by architectural historian Gavin Stamp, to mark the 50th anniversary of the Victorian Society, and following this from 17th June onwards, there will be an exhibition of drawings made over seven decades by Henry Moore, on loan from the Henry Moore Foundation. A major new acquisition for the contemporary art collection in the gardens arrives on 17th April to the North Front, in the form of a pair of giant candlesticks comprised of glass wine bottles (from Chateau Lafite Rothschild) set on a steel armature and lit from within by fibre-optic strands. Lafite by Joana Vasconcelos symbolises the Rothschild family’s connection to the world of wine and is accompanied by a wine trail in the House and a range of wine related events planned throughout the year. In other garden news, artist Simon Periton will be creating some striking 3D bedding displays on the Parterre for visitors to enjoy in the summer months, and on the weekend of 20-21st June we have a brand new outdoor event! “Feast” will see the North Front of the Manor transformed with elaborately decorated tables for visitors to take a seat at and enjoy a picnic or sample some of the delicious food on offer from one of the handpicked artisan food and wine stalls. A range of extraordinary and captivating performances await to delight and surprise young and old alike. ■

The imporTance of Teaching resilience in school By Julian Parkin, dePuty head of newland College

o

ne of the clearest things my colleagues and I have learned through many years of teaching is that being prepared for exams, university and later life is only partly about knowledge. It is also about resilience, which is something children can gain through their time at school. We have chosen to make this a staple of our curriculum at Newland College in Chalfont St Giles, which we open for our first 11 to 13 year olds in September. From time to time, every student needs to overcome adversity. e problem is that some seem naturally resilient, while others need more of a helping hand. However, we can see from our experience that no matter how resilient a child is when they join a school, everyone (teachers included) can always get better. At Newland College, we have made it an explicit expectation that we will dedicate ourselves to helping young students develop this vital life skill. We will train teachers and students in skills related to developing resilience and it will be the focus of our ‘wellbeing curriculum’. Parents can also help their children become more resilient, if they understand the concept and pay attention to how their children react to the situations life throws at them. To help parents better understand the concept, here is a simple guide to how you can build resilience: ● Resilient thinking skills: when life throws up challenges, your immediate reaction can nudge it towards being either a learning opportunity or an obstacle. We have to provide opportunities for our children to practice bouncing back from

3 6 april 2015

adversity with a positive attitude, reframing the problem, practicing and developing new approaches, while retaining a handle on reality. ● Positive relationships: resilience considered in the context of an isolated individual is only a fraction of the story. Children have to be able to empathise as well as manage their own feelings, to support others when they face a set-back. ● Managing our emotions: we have to understand our feelings without being led by them. e challenge is to harness positive feelings, while learning from the feelings associated with adversity. ● Making a contribution: reframing a set-back as making a broader contribution can make a big difference. Knowing what you are doing will make the world a better place has been shown to be a significant motivational force. Learning from inside and outside We have chosen to focus our pastoral care programme on resilience, focusing on developing modules to provide opportunities for students to develop their knowledge, understanding and skills in a range of areas of life that are not covered in the academic curriculum. is will help our students reach their full academic potential. ■

W Wee offer a wide range of lessons and activitie vvities, dedicated career days and events, guest speaker programmes, appropriate lectures, as well as a work experience and inspirations programme. From the age of 11, students start to explore their own personal skills and qualities through lessons with Sixth For m mentors. By Y Year ear 9, they haavve a dedicated careers day that includes deliivvering presentations and career ‘speeddating’ workshops to help them start exploring the sheer breadth of opportunities available. In Y Years ears 10 and 11, the careers prog p ramme continues to encompass self-awareness and opportunity awareness, with the introduction of employability skills, CV writing, and our work experience and inspirations programme. The Fifth For m Career Convention helps students explore career opportunities based on the Year Year 10 psychometric profiles that have helped them identify their innate aptitudes, abilities, and personal qualities. W Wee giivve indiividual feedback to each student, with parents very welcome to attend. Where a student may haave a vocational career in mind such as medicine or dentistry, specialist advice is on hand from the school’s Careers team in conjunction with the academic Faculty ultyy. We offer the Lower Sixth inter view skills guidance and practice, as well as supporting the UCAS Advisors with higher education choices. Our annual Higher Education Convention offers the opportunity for our students to hear directly from specialist academics (often alumni) about uniiversity studyy.. At the same time, we also encourage students to find out as much as they can about their preferred career options, both through work experience and by attending lectures, insight days, short courses and

With a very keen eye on employability and the ever-changing nature of the labour market, we prepare our students to be global players. This year we are introducing a dedicated careers day with an international dimension, where skills and qualities are honed in a COBRA role-playing exercise, and where we bring in specialists to support future medics and dentists. Our own eight-week Career Bridge programme introduces the Upper Sixth to the undergraduate recr uitment programmes, employer competencies and ty factors that they will face as they mo ove on employability to the next phase in their lives. They haave the chance to explore, debate, practise on us, and are giivven guidance on future opportunities and how and when to access them. In parallel, enterprise and entrepreneurship thrive. Younger student teams bid to compete in our Enterprise@ Taylors’ initiati tiatiivve and Sixth For mers bubble with enthusiasm for Y Young oung Enterprise and other business competitions. ST HELEN’S SCHOOL: Aspiration & Social Mobility Dr Mary Short, Headmistress of St Helen’s School in Northwood, argues that independent schooling is a positive agent for aspiration and social mobility

S

ince the abolition of the Assisted Places Scheme in 1997, all schools in the independent sector have faced the challenge of how to be genuine agents for social mobility by giving young people from all backgrounds the opportunity to discover their talents and ‘aim high’. Our independence from the maintained sector provides us with the freedom to teach the curriculum we want, using pedagogical methods proven by evidence-based research to be the most effective in supporting children’s learning; we pay for that independence in terms of the outdated yet persistent perception that independent education is the preserve of the wealthy and privileged few who can afford to pay school fees and somehow ‘buy’ academic, social and professional success for their children. The reality is that the parents of our students come from a wider range of backgrounds than social commentators would like to admit: many of them make very significant sacrifices to send their daughters and sons to independent schools. We share the high expectations and aspirations of the parents who entrust their children to our care, and we work hard to unlock their children’s potential, wherever that lies. At St Helen’s, we firmly believe that an exceptional education should be accessible to girls who have the potential to make the most of the opportunities which we provide, irrespective of their families’ ability to pay. By making a St Helen’s education more widely available, we are not only fulfilling our moral responsibility to be an agent for positive change in the wider community, we are also enriching our community by welcoming

4 0 april 2015

original thinkers with the ambition and aspiration to excel. It is exciting to enable girls to develop the skills they will use to become leaders in their fields, professions and communities. We are continually seeking to widen access to a St Helen’s education by working with schools and parents to publicise our provision for financial assistance via our programme of Bursaries and Scholarships, which we are always seeking to extend. At the time of writing there are 67 girls at St Helen’s who are benefitting from our Bursary programme, of whom 17 receive 100% fee remission. These girls are fully integrated into our School community and our teaching staff cannot identify which members of their classes hold Bursaries. In providing support such as this, we are acting in unison with the 90% of independent schools who (according to the 2015 ISC manifesto) are providing bursaries for over 41,000 children nationwide, of whom over 5,300 are paying no fees at all. Independent education seeks to close social divides, to engage with the wider community and to enable children to fulfil their potential. St Helen’s is a school where exceptional girls can flourish in an exceptional educational environment. THE DETAILS Eastbury Road, Northwood, Middlesex HA6 3AS 01923 843210 www.sthn.co.uk

What to look for in a

PRE-PREP EDUCATION

C

hoosing the right school can consume parents today and the benefits of a balanced early education are widely acknowledged. Pre-Prep (aged 4-6) children thrive when given early opportunities to develop their social and creative skills as well as build a solid foundation for learning that will take them into their school life and beyond. Specialist teaching plays an important role in developing these fundamental skills and a curriculum that focusses on all areas of the Early Years Foundation Stage Framework is key.

Experienced staff will deliver a syllabus developed by a team of early years specialists As well as high quality teaching, younger children benefit from dedicated facilities so they can explore the world in a bright, familiar and safe environment. A friendly, positive and caring atmosphere will strengthen confidence and self-esteem and encourage children to learn and play both independently and in a group. Social skills are developed during break sessions, and look also for a school that provides a social lunchtime, sitting together for a nutritious and balanced meal. At the new Lockers Park Co-Educational Pre-Prep, due to open this September, experienced staff will deliver a syllabus developed by a team of early years specialists. One recent addition to the best practice pre-prep timetables is the inclusion of the ‘great outdoors’, which incorporates projects in the woods and nature trails. Lockers Park is set within 23 acres of lovely wooded grounds, ideally placed to provide this on a daily basis. While a pre-prep school needs its own identity, Headmaster of Lockers Park, Christopher Wilson, firmly believes in looking for a school where the pre-prep is part of a family alongside a prep school. This allows access to enhanced facilities such as a gymnasium, a swimming pool, art and music resources but critically, the opportunity to take part in whole school, cross-age activities to provide older role models for support and breed common values.

Children attending the new Lockers Park Pre-Preparatory School will have these advantages and more. They will be taught by specialist Early Years teachers in a new, purposedesigned building and will also mix with the main School for example, by taking part in Chapel Services. This allows pupils to benefit from the school’s traditional heritage of academic excellence combined with first rate pastoral care and extra-curricular activities. They will also use the school grounds and an array of facilities and activities. Headmaster Christopher Wilson says: “We believe that this new step of welcoming pupils from the first year of primary education allows us to offer a full and excellent solution for children and their families.”

good and lasting relationship needs understanding, care and attention. Your relationship with your home is equally important. We all want our homes to keep our families, safe and happy. In turn, properties need to be protected from nature’s harsh and sometimes relentless elements like last winter’s treacherous storms and rain…

Why trust Tiffin? Because they have been supporting the community and even royalty for 320 years. Services include helping the local community and surrounding areas with building work and also identifying defects using thermography: latest and state-of-the-art technology which recognises

Have you considered the effects of recent bad weather on your home and the essential maintenance and repairs that might be necessary? Spring and summer are the ideal times for all repairs or building work.” Robert Tiffin

As a result of bad weather, buildings can silently suffer until a major problem surfaces. A prime example is damp. However, if you cannot tell whether a problem is damp or condensation, how would you rectify? Condensation causing damp is a health risk and is normally associated with heating, ventilation, insulation and building defects. It’s crucial to know the difference and especially, to be led by an expert’s recommendations. Robert Tiffin is an experienced quantity surveyor, who can advise and identify all building problems and offer the best solutions. You don’t need to worry or make costly mistakes. In addition he has a qualified and loyal team who can support his recommendations for all maintenance, refurbishment, modernisation and building work. For the long-term and to ensure your home is adequately understood and protected, it is worth investing in a full maintenance report (report fees are refunded upon completion of works by Tiffin) which will recognise and then address the imminent and potential long-term problems. Remedying an issue whilst still minor is much cheaper than an emergency repair which has been developing over a period of years.

building defects and sources of heat/energy loss. is service is especially important when making properties more Energy efficient. Whilst looking at your property as a current and long-term home and to maximise your property investment value, Tiffin offer a full-range of services which will keep the entire project in-house and therefore carefully managed.

“If you need to build an extension for a growing family because improving is generally cheaper than moving, we can help you adapt your space for new requirements with consideration for both aesthetics and function. We will help you to maximise your property’s value and purpose whilst you enjoy all the benefits of home comforts.” Robert Tiffin

Ensuring that home and property owners can look forward to improving their comfort and lifestyle in a warm, cosy and cost-effective, healthier home environment for themselves, their families or tenants. *Compliance and regulation must be observed as any building work must be in accordance with the Building Regulations and other bodies, such as the Listed Building Authorities, e Energy Act 2008/11 and CORE, which is one of the leading technical bodies heading up retrofitting to existing buildings in the UK. ■

G

uests who attend Anthony Nolan’s 21st annual black-tie event, the Daisy Ball, will be celebrating the charity’s lifesaving work at the prestigious Great Room at the Grosvenor House Hotel, on Saturday 16th May 2015. Anthony Nolan saves the lives of people with blood cancers such as leukaemia and lymphoma, by matching remarkable individuals willing to donate their bone marrow to the people who desperately need lifesaving transplants. To help a patient in need, a donor must be found who has a matching tissue type, and there are millions of variations. It can be like looking for a needle in a haystack. As it costs £100 to recruit each new person to their existing register of potential donors, it’s essential for Anthony Nolan to raise valuable funds and find more lifesaving matches. Last year, Daisy Ball Twenty raised over £240,000 – which helped to add more potential lifesavers to the register and conduct vital research to help people with blood cancer have the best possible chance of life. This spectacular, entertaining, and lifesaving event regularly attracts over 750 guests. The night includes a scrumptious three-course meal, inspiring real-life stories and world-class cabaret entertainment. There is also a surprise headline act, and previous performers have included The Three Degrees, The Osmonds, Kid Creole and the Coconuts, Heather Small and the cast of The Jersey Boys.

5 6 april 2015

Guests will have the opportunity to win fabulous prizes in the raffle and to bid on incredible experiences throughout a live auction. Past prizes have included luxurious holidays to South Africa and Canada, a private screening at Everyman Cinemas, once-in-a-lifetime cooking experiences with celebrity chefs Brian Turner and Angela Hartnett and unique sporting memorabilia. Anthony Nolan is seeking donations of exciting raffle prizes to raise as much as possible from the event.

Guests who support Anthony Nolan’s lifesaving work by taking a table at the Daisy Ball will enjoy A delightful champagne reception A delicious three-course dinner A superb live band An opportunity to take home fabulous, unique auction & raffle items A star-studded cabaret and surprise headline act Individual tickets are priced at £245 or £2,940 for a table of 12. DON’T MISS THE PARTY AT

POLO IN THE PARK! London’s summer social season starts this year with Chestertons Polo in the Park which takes place on 5-7 June at the ‘spiritual home of polo,’ Hurlingham Park, Fulham.

N

ow in its seventh year, the three-day sporting spectacle brings world class polo right to the heart of London. With its vibrant party atmosphere and thrilling polo on display, the tournament is now firmly established as one of the capital’s hottest tickets. New to this year’s schedule is the addition of an England International match which will take place in the evening of Friday 5 June. It will be the first England International polo match played at Hurlingham Park since 1939. The team taking on England will be announced later in the spring. For the rest of the tournament, six teams, representing cities from around the world, play with three-man teams on a slightly smaller field than usual, meaning the action is never far away from the spectator. The traditional rules are adapted to create a much more spectator-friendly game - perfect for polo newcomers. This year the visiting teams taking on the London home team are last year’s winners Abu Dhabi, Lagos, Singapore, Sydney and Buenos Aires. What’s more, the action on the side of the playing field is just as entertaining as the action on the field - with bars and hospitality spilling around the perimeter of the pitch. Mayfair’s famous nightclub, Mahiki Bar will be shaking up some amazing cocktails from its pitchside bar (which happens to be the longest pop up bar in Europe) whilst the Lanson Champagne Garden Bar provides a wonderfully civilised place to view the sport. The tournament kicks off on Friday 5 June, dubbed ‘Chukka Friday’ and is a favourite for corporates and their guests. Matches are played well into the evening and with

This day is usually a sell-out long before the event, so it is advised to book early for this day to avoid disappointment. ‘Finals Day’ on Sunday 7 June is a fun actioned packed day for everyone, with extra entertainment laid on for children. Spectators can enjoy watching both the Final and Plate Final on this day and see the victors presented with the winning trophy. any of golf ’s global superstars will return to Wentworth Club, Surrey this May to compete at the European Tour’s flagship event, the BMW PGA Championship. World number one and four-time Major Champion Rory McIlroy will be spearheading a title defence against some of the biggest names on the European Tour. McIlroy overcame a seven-shot deficit to emerge victorious on the iconic West Course in 2014 – a success that kick-started a dazzling season for the current Open and US PGA Champion. He faces tough competition from a worldclass line-up at Wentworth this year including victorious 2014 Ryder Cup Captain Paul McGinley and fellow Ryder Cup team-mates Justin Rose, Lee Westwood and Graeme McDowell. McIlroy, whose fame now transcends the game with such brilliance, commented: “Growing up in Belfast, the BMW PGA Championship always featured high on my list of priorities along with the Major Championships. To return to Wentworth as defending champion is a huge

honour and I can’t wait to draw on the memories of 2014.” Rose has come agonisingly close to lifting the trophy at a venue he used to visit with his family as a starry-eyed youngster. Rose reached a pinnacle in his career when he captured the US Open title for the first-time in 2013. He said: “Our family lived close to Wentworth and I was always excited each May to attend the event with my dad. The BMW PGA is rightly regarded as the European Tour’s flagship event.” The BMW PGA Championship offers a superb package of world class golf, entertainment, celebrity-spotting and hospitality offerings and takes place over a six day period. The ever popular Celebrity Pro-Am on Wednesday 20 May is now firmly established as the curtain raiser for England’s biggest golf tournament and has once again attracted an impressive line-up of A-list celebrities. With further names to be announced, Irishman Rory McIlroy will be playing alongside Manchester United legends Phil Neville and Paul Scholes. Other confirmed names include sporting greats such as

hay fever

The term hay fever usually refers to the symptoms of the allergic reaction to pollens, otherwise known as seasonal allergic rhinitis. Over 20% of the UK population suffers the specific allergy to grass pollen which occurs seasonally every year beginning in the spring, increasing in severity through early summer and finally reducing in late summer. Other allergens include mould spores or weeds. Symptoms usually include some or all of the following: red and itchy eyes; blocked or runny nose and sneezing; itchy throat; sleep disturbance and interference with the enjoyment of outdoor activities. Despite the name, there is no fever and this helps to distinguish it from colds which are caused by viruses.

r

ather than enjoying the onset of warmer weather and long, sunny days, sufferers anticipate weeks of misery and difficulty with important events such as exams, holidays and weddings! e management of hay fever depends on the type and severity of symptoms. Many over-the-counter remedies can keep symptoms at bay but if they are no longer working for you, DOCTORnow may be able to help. part from having the UK’s Best Care Manager – according to the National Care Awards – Avondale Care Home is gaining something of a reputation as a centre of entertainment and activity for residents, family, friends and the wider community. e lastest example of Avondale’s innovation in entertainment and activity came in the form of a recent visit from BBC TV personality Adam Henson. Mr Henson entertained guests and residents with a talk on his life and times on the land and in the media. Adam (more famously known for his presence on the BBC’s “Countryfile”) charmed an audience of around 50 individuals for the whole afternoon. He talked about his history within the farming industry, his father’s work (both with animals as well as his own time within the media), family life, education and the early days and foundations of Adam’s farming career. Adam fascinated the audience with facts on animal breeding and the benefits of different species across the land. He amazed and amused all of them with photography of his travels and anecdotes about his media career. As well as a special occasion for the public and residents of Avondale Care Home, the day also allowed many varied team-members at Avondale to work together to make such a success of the event - whilst still continuing the duties that have given Avondale such a strong reputation for care and nursing amongst the public and care professional alike.

6 8 april 2015

Following the talk and some light refreshments, invited guests took advantage of the opportunity to tour this highly-specified care home and take in the happy, upbeat and homely atmosphere that has become the hallmark of Avondale. Shaun, the manager of Avondale commented: “It was a fantastic event and Adam Henson really charmed one and all. It is also great to see how such an event can bring people closer together and, for me, to feel gratified to see the team here work so well together to make the event such a success.” “e day provided fond memories for all,” he added. Avondale has a schedule of daily activities for all residents and in 2012 won a national award as “Best Overall Care Home” for its approach in this area from NAPA (National Activity Providers Association). Some activities are designated as open and those interested in care for older people are welcome to contact the home to enquire about availability. For facial and body products you will be introduced to the French product algo. is marine based product contains absolutely no harmful added extras with main ingredient being the patented special Marine Algae. e CACI treatment is recommended as an initial course of twelve treatments, and the staff will adapt the treatment to ensure the best results possible. jowells, the eyes or the chin. e CACI Ultimate machine has a variety of treatments including the micro current facial toning, microdermabrasion, LED Light erapy and the wrinkle comb.. Micro current therapy was originally developed as a medical application to treat facial palsy, where muscle tone is restored by applying tiny micro-current electrical impulses to the affected muscles. Today this proven technology is now available in salons as a painless cosmetic treatment and is commonly referred to as “facial toning” or “the non surgical face lift”. During each 1 hour treatment session all 32 facial muscles are gently manipulated and re-educated by a trained therapist using a series of precise movements. Soft cotton tipped wands are used on the face to transmit the micro-current energy to the facial muscles to restore tone and elasticity. elle the Beauty Box

We sent our lucky reporter along to meet the team at Elle the Beauty Box and experience a truly relaxing array of treatments.

e

lle e Beauty Box is situated right in the heart of Old Amersham. As you walk round the corner from the high street into the courtyard, you would think you have stepped into a painting of an English Countryside view. e grade II listed building has such character and is so picturesque that you are in a good mood before you even enter. A day spent here is a real treat. On arrival the welcome is warm and friendly, by staff who clearly want to ensure your time here is calm and relaxed. Once you are in one of the beautiful treatment rooms you really appreciate the character of the building. With high ceilings and oak beams the room feels spacious yet welcoming, with the treatment couch ready for my arrival. My first treatment was the full body Hot Stone Massage. is 90-minute full body massage began with the therapist explaining what she would be doing and understanding where any areas of tension were for me. Deep massage and gently applied pressure combined with soothing and comforting warm basalt stones left me feeling stress free and totally relaxed. e stones really intensify the relaxing effects of the massage and allow the healing heat to penetrate deeper to aid muscle relaxing and alleviate pain. e massage left me feeling truly pampered, relaxed, and most importantly – tension free. My therapist listened to my needs, and really focussed on the areas of concern. My second treatment was a Bespoke Aroma Hot Towel Hair

Wash and Blow Dry. is began with a consultation from Meliza, who took time to understand how I would like my hair to be styled, and also about the condition of my hair. is followed with the most intense hair wash that I have ever enjoyed. Lying comfortably at the basin, the hair is deep cleansed and detoxed and then deeply conditioned and restored using the products selected for you. Warm towels are gently wrapped around the scalp to aid the penetration of your hair treatment. After taking in a deep breath of a combination of de-stressing lavender and eucalyptus essential oil to clear the mind, you enjoy a 10 minute head massage. is is proven to release stress and to aid circulation of the scalp, which in turn promotes blood flow to the hair follicle, improving the condition of your hair and scalp. My treatment was completed with a full blow dry. e results achieved here were fantastic, for the first time in a long time I was happy with my hair, the texture and feel was fantastic – it felt so clean and light – and styled just how I wish I could do myself on a daily basis. ■ Call the team at Elle or pop in to book your experience.

SWIM

Q&A WIth AnDrEW GInGEr frOM OrIGIn LEISurE, thE uK’S LEADInG DESIGnErS AnD BuILDErS Of hOME SWIMMInG pOOLS. With the great British summer almost upon us, now is the time to look ahead and think about spending time together as a family during the holidays. Digging the BBQ equipment out of the shed and buying a new picnic basket might be on the ‘to do’ list, but Origin Leisure has found that the sunshine also inspires people to start thinking about a home swimming pool. Andrew Ginger, CEO at Origin Leisure, answers the most frequently asked questions from homeowners looking to dive in. Q. How much does it cost? is is usually the first thing people ask when considering adding a pool to their home, but the truth is there’s no set answer. It can vary considerably depending on the size and style of your project. e starting price for an outdoor pool is around £65,000, while an indoor project from concept to completion usually costs £150,000 to £350,000 upwards. You’ll also need to consider the ongoing costs for heating, chemicals and maintenance, which depends on the style of swimming pool, the season, the water temperature and the heat source. at said, we will work with you to ensure the end cost is in line with your budget.

Q.Why do people choose to have their own swimming pool? Be it indoor or outdoor, a pool adds another space in the home where you and your family can have fun, relax and entertain. It creates an extra social space and can have seating, kitchen and bar areas to enjoy time with friends. Children and grandchildren will have hours of fun in the pool, and it’s a great place to spend time together as a family. A swimming pool also has health benefits as it enables you to exercise using the pool, gym, sauna and spa in the privacy of your garden. Alternatively, it can be used as a space to relax and unwind, and the lighting, sound and water movement can be designed to create a ‘chill out’ space for you and your family. Q.How much say do I have in the design of the pool? Every swimming pool we design and build is different as we work closely with customers to create a pool individual to them, to suit their lifestyle and budget. You can decide on all elements of the internal structure, from the style of the building and colour scheme to the internal, external and roof finishes, but we also know that the devil is in the detail. e design choices range from the shape, size and depth of the pool, to the tiling, motifs, steps, liners and covers – the only limit is your imagination!

Be it indoor or outdoor, a pool adds another space in the home where you and your family can have fun, relax and entertain. Q.Who takes charge of managing the project? Origin Leisure is unlike any other swimming pool company as we manage the whole installation process from concept to completion. Rather than hiring separate companies for each element of the build, Origin Leisure will handle everything. With us, you’ll have one point of contact that will be available to answer questions and talk you through the process from start to finish.

Q. How long will it take to build the swimming pool, from start to finish? e length of time it will take varies from project to project. But to get a good idea of the project length and the cost of swimming pool installation, it’s best to book a free on-site consultation with one of Origin Leisure’s experienced advisers. Origin Leisure is an award winning company with over 30 years experience creating beautiful bespoke swimming pools, designed to your specification. We are unique in that our team includes specialist architects, designers, and engineers with years of experience building swimming pool structures. We take complete control of every stage of the project from start to finish. ■

How Tiles can Transform All Areas of your Home

W

e all know how tiles can transform a dated bathroom into a contemporary space or provide the finishing touch to our practical kitchen spaces. But tile technology has advanced significantly in the past few years and tiles are no longer merely a practical element in our homes but an essential part of our interior design schemes. The huge range and variety of porcelain tiles now available offer unlimited design opportunities for all areas of our home. Why not consider adding a smooth textured surface to your sleek kitchen with a Sahara porcelain tile splash back. Sticking to a monochrome scheme maintains the contemporary feel but the textured walls avoid an overly clinical look and reflect light in a way that perfectly complements a contemporary lighting scheme. Or for a completely unique approach to a contemporary bathroom combine marble walls with wood-effect porcelain tiles on the floor. This approach offers all the practical benefits of a tiled floor with the extremely realistic look of wood. Use underfloor heating and you also have the warmth of real wood but a virtually maintenancefree floor. A perfect solution for period homes that need a contemporary update without losing the period feel that

7 8 APRIL 2015

makes such homes so appealing. But tiles don’t just work in our kitchen and bathroom interior design schemes. They can be used just as effectively in hallways, bedrooms, living spaces and conservatories to create a high-quality, contemporary feel that is also highly practical. For an ultra-contemporary living room limestone-effect porcelain tiles can be used on both the walls and floor. They have wonderful light-diffusing properties and are a perfect backdrop for contemporary furnishings and accessories. And for those rooms with sliding or bi-fold doors the same tiles can be used both inside and outside to create an almost seamless flow between interior and exterior living spaces thanks to advanced technology that can produce slip-resistant and frost-resistant porcelain tiles such as Europa. THE DETAILS All of the tiles shown here, and many more, are in stock at DÊcor Tiles & Flooring in Watford. Call them on 01923 248531 or visit their website for more details (www.decortiles.co.uk).

HOME OWNERS NEED TO BE WARY OF “Quick-Fit Fitters”

S

ometimes UK home owners expectations of delivery for bespoke replacement double glazed windows and/or double glazed doors are not very realistic, as some don’t appreciate how much work is involved. Put simply, tailor made windows and doors are just that, made to measure products in terms of design, colour and size. Fenestration products not designed, measured, fabricated or installed correctly can lead to unwanted aggravation for property owners. To highlight this, if a double glazing supplier has a surveyor, fabricator and/or fitters sitting round waiting on your order, it would be sensible to ask them why? There are lots of really decent double glazing installers in the UK, many of whom work primarily on recommendation. These sorts of firms are likely to be booked up many weeks in advance, because as a general rule customers would rather wait and have their replacement windows or doors measured right, manufactured right and installed properly, than have all the hassle caused when one or more of these operations is rushed to the detriment of a decent job. It is better to have

8 0 april 2015

really good quality, well-made windows and doors which are fitted a couple of weeks late, rather than to have them poorly designed, and/or made defectively and/or fitted in too much of a hurry. It is easy to understand why customers are tempted to rush things along wanting their project completed as fast as possible, or customers who get pressurized by their builder or developer to buy windows and doors from a firm that their builder “recommends” that will deliver the products when the builder wants. Builders are notorious for wanting to fit new windows and doors as quickly as possible so they can move on to their next building project! Builders can therefore be keen to suggest buying windows and door products where they can get them fast, and not necessary the products that will be the best investment for the property owner, who is after all the customer, so should be the person specifying which windows and doors they require, and fitted by whom they trust to do a good job that will leave them with well installed products. To assist householders and give them greater peace of mind when appointing an installation company, consumer champions Which? established an endorsement scheme labelled ‘Which? Trusted Traders’.

P80-BUCKS-HAZLEMERE__ 10/04/2015 10:26 Page 2

In 2014 the region’s largest independent double glazing manufacturers and installers, Hazlemere Window Company, joined this prestigious scheme after they passed an intense assessment process, proving that they met the strict requirements set out by Which? and satisfy the high standards they expect of a local and reliable trader. It demonstrates to customers that those who achieve Which Trusted Trader status have proven themselves as having been trustworthy up to that point, and that they are firmly committed to offering complete

Those who achieve Which Trusted Trader status have proven themselves as having been trustworthy up to that point fairness and transparency at all times. To undertake a replacement window project properly, a professional surveyor should take careful accurate measurements (so they end up fitting properly), then raw materials have to be ordered (any coloured products are likely to be on a longer lead time) along with sealed units from the glass suppliers to ensure these will fit into the frames that are being specially made. Next, the products then need to be scheduled for production, as most double glazing manufacturers will not have skilled workers standing round. Once the products have been fabricated

the installations department will need to confirm up the provisional date they will have hopefully pencilled in with you when you placed your order. Understanding the above process for bespoke fenestration products should set off alarm bells if a double glazing installer says they can supply and fit within a few weeks. Ask yourself, why have they not got a waiting list? It is wise to be wary of any double glazing company “promising” a quick delivery in order to get you to sign up with them, as the last thing you want is to regret handing over a large deposit to the wrong company for the sake of a few weeks wait. So beware the quick fit window or door fitter! The danger of paying over a deposit is that once a customer has paid a supplier, they are then really stuck with that supplier (unless prepared to lose the deposit) however long that supplier then takes to supply and fit the products. Before ordering from any double glazing company, ensure a) you’ve done enough research so you can be confident your chosen partner will still be around in 10 years’ time!, b) you’ve read recent satisfactory customer reviews, c) you’ve seen the products first hand they will be supplying so you know for certain what to expect, and d) that they are Which Trusted Traders. THE DETAILS If you’d like any free help or expert advice on a no obligation basis from independent double glazing manufacturers and installers Hazlemere Window Company Ltd on any double glazing project you are considering, contact them on 01 4 or visit www.hazlemere.co.uk april 2015 8 1

An interview with Magnus Strom

A short summAry on whAt An Architect does? Our role as architects is varied and our scope of work changes form project to project. We typically provide a full architectural service in accordance with the Royal Institute of British Architects' (RIBA) work stages. at means that we are involved from the beginning to the completion and sometimes even when the building is in use. We don’t just design buildings. We are also responsible for obtaining planning consents, building control approval, producing construction information drawings and specifications, assisting in finding contractors that we tender the works to - or negotiate with. We provide an inspection service when the project is on site to ensure that it is being built to the contract documents and we certify payments ensuring that clients only pay contractors for work that is actually done, and to the specified standard. Finally, after completion we assist with identifying potential defects and making sure these are put right before we sign the project off. About you – tAlk About you, how you got stArted, some of your fAvourite work? I can’t remember ever wanting to be anything else than an architect, and my interest in architecture, furniture and design started when I was a child. It was therefore extremely frustrating that I couldn't get into a school of architecture in Sweden, as my school grades weren't high enough! Instead, I was welcomed to study in the UK, where I graduated at the top of my year with several student prizes as well as being nominated for the RIBA Silver Medal. After graduation I worked briefly in London and Dublin, and then for many years in the south of England. I set up my own practice in 2010 with the intention of specialising in residential projects, as this is where my passion lies. e practice is slowly growing and we were chosen as one of twenty, for Wallpaper Magazine's Emerging Architecture Practices 2012 from around the world, and in 2014, our project the Quest was shortlisted for the ‘Best Future House" for the World Architecture Singapore in Dublin. is project is now on site and to completed later this year. We are currently working on eight one off houses and two London remodelling projects.

8 4 APRIL 2015

how would you describe your style? I suppose our architecture is simple, clean and contemporary, without being minimal, as we love to use natural materials. Coming from Sweden, there is undeniably a “Swedishness” to my work. is is not necessarily just about Scandinavian Design, but rather about a way of life. Swedish Functionalism was born out of a belief in humanism, tradition, moderation, handcrafted perfectionism, modesty, quietude and purposefulness. Coupled with the dark, cold winters and long, light summers, the Swedes were searching for an architecture that combined simplicity with beauty, humanism and democratic ideals, whilst connecting with nature. I come back to the roots of these beliefs time and time again as they are as valid today as back then. ese principles inform a way of life that I identify with and which I try to reflect in my architecture. is why I am always interested to understand how our clients live. Why is their home important to them? How does it want to make them feel? is is the root of inspiration to how we design and that is always our starting point. how Are you Able to trAnsform clients ‘ideAs’ into An ActuAl design? Having gained an understanding of how our clients' live we should have a really good understanding of what we are trying to create. We work by sketching and testing many ideas. Sometimes, the design response is very simple and obvious, sometimes we work and rework solutions many times. We don't see design as a linear process, instead we work at different scales, such as from the overall concept down to the minute detail at the same time. And, we always work in 3D - after all, we don't live in a two-dimensional plan. 3D helps to visualise and understand spatial relationships and will give you a far greater understanding of the project. ■

amber valentine interiors the secret to sourcing luxury furniture without the luxury markup

W

hen local property developer Amber Valentine reached the furnishing stage of her new-build project in Beaconsfield, she needed to source beautiful, high quality furniture on a tight budget. With 6000 square feet to fill, this was a serious challenge. Amber wanted her furnishings to be bold, elegant, and exciting, but she found the ‘off-the-shelf’ designs available on the high street wholly uninspiring. On the other hand, the gorgeous, bespoke pieces created by luxury designers were eye-wateringly expensive. Commercially she couldn’t justify the cost of top London brands, but artistically she wouldn’t accept the low quality, limited range on the high street. Having designed a sofa with a plinth base, studded upholstery and high quality fabrics and finishes, Amber sent her detailed design to a furniture manufacturer in Portugal and was delighted to find the quote was less than half the price of the lavish showroom pieces and without compromise. is meant Amber was able to furnish the whole house with stunning, hand-crafted pieces, inspired by the top London brands but at a fraction of the cost. Friends and prospective buyers that were viewing the house repeatedly asked where they could buy the beautiful lamps, chairs and cabinets that they saw around the house, so Amber decided to collate all her designs on a website (www.ambervalentine.co.uk). Of course, once clients found out that these designs were all unique and completely bespoke, they also wanted the chance to create their own designs to perfectly suit their homes. Amber was soon commissioning a wide range of furniture: from simple, modern pieces, to elaborate, complicated 9 0 april 2015

French designs – all made to measure, and from carefully chosen, high quality materials. Amber has now extended her interior design work to create and source all kinds of bespoke pieces from a wide range of manufacturers: anything from footstools and headboards to mirrors and sideboards. She offers her expertise and design experience to clients to help them select beautiful, hardwearing fabrics and finishes, and designs that will stand the test of time. With her guidance, clients can stay true to their own unique style, but with the reassurance of someone who has been through the process many times before. And with Amber’s trade contacts and experience, she can often actually match high street prices but for bespoke furniture, so her designs are a surprisingly affordable luxury. For clients who want more input from Amber there is an hourly fee, so clients can tailor the service they need, from a quick consultation through to complete project management. If you think you’d like to have a piece of furniture designed for your home, you can find inspiration at www.ambervalentine.co.uk or make an appointment to visit her showroom in Beaconsfield. ■ Amber Valentine Interiors is running an introductory 20% discount on the new range.

seasons catering

s

o, the Easter weekend gave us a taste of what the British summer ‘could’ be like. Spurring on with a positive mindset… here we will talk about foods to enjoy in the sunshine. e start for me of delicious seasonal produce begins in the spring, with asparagus, Jersey Royal potatoes, wild garlic and new season lamb, a fabulous meal right there.

mango from India called the Alphonso has a short season in June, easily available from suppliers, it’s heady perfume and dark orange flesh make it a must for tropical fruit desserts or drinks. Of course the sun equals: Barbeque! Marinated meats, sausages (in their many guises), gourmet burgers, marinated meats and seafood, along with colourful salads

Food always tastes better when it is in season, it is cheaper too… think of strawberries, tasteless and expensive in December, bountiful and delicious in July. A light starter making the most of the food good at this time could be a crab and sea trout tian, with shaved radish, rocket leaves and and an elderflower dressing. New season forced rhubarb as dessert, as a compote on a pavlova, or in a rhubarb and custard tart fits the bill. As summer approaches, the bounty ripens. ink berries, ripe tomatoes, soft herbs like basil and chervil, fresh peas directyly from the pod. Foods that remind of sunnier climes, holidays and faraway places can be easily replicated in the Britain. e wealth of produce available to us nowadays is amazing, and the possibilities are endless. Food always tastes better when it is in season, it is cheaper too… think of strawberries, tasteless and expensive in December, bountiful and delicious in July. A fabulous

and relishes are always a winner at parties, along with the now ubiquitous hog roast, a firm favourite with us Brits! Buffet stations with cuisines from around the world give your guests and exciting dining experience and a fun, convivial environment. So, fingers crossed for some lovely weather, awaken your palate with delicious foods that celebrate the sun, enjoy! ■

traditional and tasty…

Friendly amersham pub, the Potters arms boasts a fantastic new menu for summer, we went along to taste those pots of goodness for ourselves.

t

he Potter’s Arms is a traditional village pub situated in the stunning location of Winchmore Hill in rural Buckinghamshire. Just three miles from the centre of Amersham and four miles from Beaconsfield it is truly a hidden gem. Managed by Richard Edwards since 2012 he has worked to turn the venue into a thriving business offering fine dining and regular comedy. Richard brings 17 years of managing independent restaurants as well as running the Brasserie in the Manchester branch of Harvey Nicholls. Simon the head chef at e Potters has put together a fantastic menu, that has something for everyone`s taste – all based on the traditional classic English classics yet incorporating the European influences that have become woven into our traditional cuisine. On arrival at the restaurant we were welcomed and seated immediately by Richard, the proprietor. After much deliberation, and recommendation from Richard we selected our meals. To start, home-made crab cake with a mixed leaf, tomato and coriander dressing, and bubble and squeak served with a poached egg and hollandaise sauce. Both dishes were delightful and sensible portion sizes, just enough to leave you ready for the main course. For main, the pork belly was chosen, and again on Richards recommendation, the classic cod and chips. Richard explained about the batter on the cod, and how it was a recipe that he had worked with during his time at Harvey Nicholls, it is an egg free batter, extremely light and very tasty – he likened it to a tempura batter. On arrival, both plates looked beautiful, the pork belly came with a a fantastic piece of crackling and side of seasonal vegetables, the cod and chips with minted mushy peas and

9 6 april 2015

home-made tarta sauce. e batter on the cod lived up to its expectations; it wasn’t greasy, it was flavoursome, and very light and crispy – just perfect. e side dishes equally complimented the meals perfectly. e dessert menu arrived, and there were two clear winners. Home-made brioche bread and butter pudding with rum and raisin ice cream and the hot chocolate brownie with vanilla ice-cream. Both were fabulous, and the brownie would probably have been enough to share between two! A selection of wines and beers to compliment the meal are available, the white rioja was a perfect accompaniment to the fish. e Potters Arms has a really friendly atmosphere – the staff are attentive and service was excellent. Richard is a good host, the rapport he builds whilst working the restaurant was friendly and comfortable – just the right amount of interaction. Another string to their bow at the Potters Arms are there increasingly popular comedy nights. ey bring the best comedians on the comedy circuit and tickets include a bespoke main meal in the interval. Forthcoming comedians are Gary Delaney and Patrick Monahan. ese nights are a regular fixture on the last ursday of every month. Book early though as they are always busy! ■

Dark ChoColate Mousse DeliCe ingredients

After the sponge has cooled down, cut it and fit the base on to a pop up bottom 8 inch tray lined with silicone paper.

Pour the combined milk and gelatine over the sugar and egg yolks mixture and whisk thoroughly. Bring the mixture slowly up to 83 degrees whilst whisking it continuously and then pour it over the dark chocolate. Mix well. Leave chocolate mix to cool for 5 minutes. Whisk double cream until semi whipped and combine with the chocolate mix. Pour the chocolate mousse over the Genoise Sponge and place in the fridge to chill and allow it to set for at least 2 hours. Pop it out of the tray and place it on a board. Pull the silicone paper away from the sides and slice into 8 tranches with wet knife and serve.

CHOCOLATE MOUSSE Soak the gelatin leaves in some cold water for about 5 minutes until soft. Whisk the caster sugar and egg yolks until it is ribbon. Heat the milk to 55 degrees and add the gelatin. Pass the liquid through a sieve to avoid lumps.

e delice can be served just on its own with crème fraiche or works really well with grapefruit segments and a citrus sorbet to give contrasting sharp flavours with the lusciousness of the chocolate. At the restaurant we currently serve this delicious mousse with salted caramel and a blood orange sorbet.
