SUMMER FUN AT
Waddesdon Manor
T
he summer months are the perfect time to pay a visit to Waddesdon Manor. e gardens are looking beautiful, the perfect backdrop for a relaxed picnic or scenic walk, and there is plenty going on for families during the school holidays. On the parterre, the formal planted gardens to the south of the Manor, visitors may be surprised by a new installation in the form of two large sculptural carpet-bedding structures, designed by artist Simon Periton. Anarchy Ball and Scalpel are a homage to the 19th century creations pioneered by Alice de Rothschild, one of the creators of Waddesdon, and will be on display until the first frosts towards the end of October. e carpet bedding design adjacent to the Frog Fountain Steps this year is based on an element of the textile collections at Waddesdon.
For families, there are plenty of activities to choose from with a programme of outdoor theatre and a range of arts and crafts activities at the Stables. e Woodland Playground has just been upgraded with new play equipment, perfect for burning off excess energy before refuelling with a bite to eat at the Stables Café or a paying visit to the children’s shop. New for this year, there are some special “children-only” behind the scenes tours of the Aviary and inside the Manor, with the opportunity to see the famous elephant automaton in action. Not to be missed! And a weekend of fun and all things pirate awaits on 8-9 August, when Pirate Paddy will be looking to recruit you to his pirate cause! Looking forward to September, there are some outdoor film screenings planned in the gardens, this year we are showing Singin In the Rain (Friday 4 September) and Into the Woods (Saturday 5 September). And the Chilli Festival returns on the weekend of 5-6 September with everything for the chilli fanatic or novice, along with live salsa music. ■

ention gliding and most people respond with a blank look, few people know much about gliders and their capabilities. Yet these sleek aircraft, cockpits bleeping with the latest electronics, travel amazing distances, typically around 500 kilometres on a good day. And perhaps the most exciting action in gliding is cross country racing. At the end of June, Booker Gliding Club, based at Wycombe Air Park, hosted the 2015 Booker Regionals Competition – an annual 9 day event in which club members and visitors from other clubs compete daily to be fastest around a given course. Each day starts with a weather briefing and task setting, outlining the route to be flown that day, typically around 200 kilometres depending on the weather. en the club’s tow planes launch the grid of 20 or so gliders and the race is on. A cross country gliding task consists of a series of climbs in thermals, with glides of 15 -20 kilometres in between. In racing, pilots try to shave seconds off both climbing and gliding, flying at optimum speeds between thermals and climbing as efficiently as possible, (flown well in a strong thermal a glider will climb at up to 200 metres per minute!). Pilots are always pushing on to avoid wasting time. Easier said than done! Push too hard and the glider flies out of the layer of best lift and in no time the pilot
may be looking for a suitable field in which to land. And that’s the end of the day’s competition for that pilot. However, retrieve crew and glider trailer will soon be on the road to collect the (usually somewhat crestfallen) competitor. ose that finish the task return to Wycombe Air Park in a thrilling display of low level high speed finishes with many gliders jettisoning water ballast as they cross the line at over 160 kilometres an hour. Gliding is a sport for all (and there is much more to it than just racing). Women can compete on equal terms with men and pilots of all ages can take part. Booker Gliding Club is located near High Wycombe. e club is open all the year round and offers a range of training options from holiday courses to a Get Your Solo package and trial lessons. All training is in dual control gliders with British Gliding Association qualified instructors. ■

estled away in beautiful Buckinghamshire parkland sits a historic and delightful oasis of calm that is the Buckinghamshire Golf Club. You would be forgiven being unaware of its existence, tucked at the end of a very long driveway – but this really is a hidden gem that had more to offer than you might initially expect. Move away from any pre-conceptions you may have about golf clubs, for there is more than meets the eye. Having been privileged to spend some time at Buckinghamshire Golf Club recently, one of the first things that struck was the welcoming response that you receive on arrival from staff and the existing membership. e Club House was originally Denham Court Mansion. e majority of the building is 18th Century, with parts of the building dating back over 700 years. Denham Court Mansion was a family home up until 1935, following which the estate was intensively farmed and the building fell into sever disrepair. Now owned by the Japanese Brewery, Asahi, the building has been restored to its former glory with all renovations undertaken with meticulous care to preserve the original fabric and character of this splendid example of English heritage and once again, the mansion recalls the grandeur of its 18th century heyday. So let us look at each area. e 18 hole course, of John Jacob O.B.E. (former European Tour Player, Ryder Cup Captain) design, offers challenges to more seasoned golfers, whilst playable for the less experienced. Proudly presented to its highest standards year round, the Buckinghamshire is recognised as one of the finest inland courses within the British Isles. is results in the course successfully hosting a number of renowned competitions, including the Ladies European Championship just last month, which we will look at over the page. Other tournaments held here are the European PGS
Seniors Tour and e Senior Tournament of Champions. e Buckinghamshire provides various levels of membership, traditional seven day, five day, family and corporate. Members are encouraged to bring guests, and favourable rates are available for this. Continuing on the golf, Buckinghamshire Golf Club Pro Shop stock a wide range of clothing lines, provide custom fitting and repairs, coaching – one to one, ladies lessons or junior lessons. Moving to the social scene, the Club House boasts two dining areas – both of which are open for non-members as well as members. e Heron Restaurant, with it’s elegant décor is the perfect venue to enjoy a romantic meal, a business lunch or a family party. A traditional Sunday Buffet Luncheon is served between 12-3 weekly. Pre booking is required for all meals in the Heron Restaurant. For more casual dining, an extensive menu offering English and Japanese dishes is to be found in the Spike Bar. Here is a perfect place to stop for breakfast, lunch or dinner. ■

THE GLORY of golf Buckinghamshire Golf Club Host of the ISPS Handa Ladies European Masters
F
or the third year in a row, the Buckinghamshire Golf Club proudly hosted this showcase event in Ladies Golf. Attracting the biggest names from both the Ladies European Tour and international tours, the Ladies European Masters 2015 again, brought together players from over 20 countries. In total, 144 of the worlds best golfers competed here at Buckinghamshire Golf Club, to take home the coveted trophy and title. An event to be enjoyed by the whole family, visitors came to watch, to support, to be amazed at watching these top golfers compete in the beautiful surroundings of the Buckinghamshire Golf Club. e course, whilst always presented in its finest glory was outstanding over the four days, confirming once again why it is recognised as not only

one of the finest courses in the British Isles, but one of the top 100 courses in the world. It is truly amazing to have such a prestigious event so locally. As ever, e Buckinghamshire welcomed a variety of visitors – the four day competition appealed to many. True golf lovers came to spectate, to soak up the atmosphere created by the fierce competition between these professional players. Some chose to follow their favourite player around the course, whilst others chose to find their favourite, picturesque hole, settle down for the day and watch all the stars in action. An experience that is not available very often. For the non-golfer, there were other attractions to fill the day. Starting with the very young (or the older ones if they chose!) there was face painting, and if they wanted to have some fun, ‘Golfzilla’ was on site – a fun way of hitting various targets using brightly coloured giant balls and clubs. For those that have never picked up a club before, the PING Swing Zone was open, giving you the opportunity to try the game, or perhaps try to perfect your swing. For the more discerning visitors, e Artisan Market was open all day throughout the tournament. Stalls at the Artisan Market showcase the most beautiful locally, ethically and sustainably sourced and handmade crafts, gifts and food. Great street food, good coffee and friendly stall holders! Food and drink, female accessories, home decor and much much more… Each day at 4pm saw the ever popular long-putting competition: we enjoyed seeing the numbers of people

Prizes also included PING set of Ladies or Men’s set of clubs by entering the free PING Competition, and a chance to win two season tickets to next years Solheim Cup in Germany! e winner: American Beth Allen shot a final round of 67 to come from five shots behind the overnight leader Caroline Masson and claim her first professional title at the ISPS HANDA Ladies European Masters. Allen fired five birdies on the front nine at Buckinghamshire Golf Club and picked up another on 14 before making bogey on 15 and setting the clubhouse target at 12 under par. With the world number one amateur Leona Maguire tied for the lead after 17 holes and playing in the next group, there was a nervous wait before Allen was able to celebrate her victory. She was finally able to lift her first trophy in 11 years as a professional after the 20-year-old found the bunker
behind the 18th green and failed to make a putt of around five feet to force a play-off. Allen, 33, from San Diego, California, said: “I wasn’t sure if it was ever going to happen so I’m really, really happy. I’ve waited a long time for this and I wanted it so, so bad, I’m ecstatic.” She had finished second three times on the LET but her secret weapon was her new caddie, Sophie Gustafson. e 26-time tournament winner who has represented Europe eight times in e Solheim Cup and this year will be one of Carin Koch’s vice captains at St Leon-Rot in Germany, was on the bag advising Allen as she plotted her way around the Buckinghamshire layout. To host this tour is an honour. e Buckinghamshire Golf Club have been successful in their bid now for the past three years. The Shawshank Redemption IN CELEBRATION OF THE 21ST ANNIVERSARY OF THE NATION’S FAVOURITE MOVIE
O
n announcing he was to bring to an end his role as practice manager Howard Bellamy in BBC One’s Doctors, there was immediate speculation as to what would be next for Ian Kelsey, who, having hardly been off our screens for over two decades, has become one of TV’s best loved and most prolific leading men. Ian leaves his starring role in a closely guarded story line this November to play Andy Dufresne, a banker who having been handed a double life sentence for the brutal murder of his wife and her lover, finds himself incarcerated in the notorious Shawshank penitentiary. Ian’s other major TV roles have included four years in BBC One’s Casualty playing Patrick Spiller, three years as Dave Glover in Emmerdale, two years as Matt Brewer in Down To Earth, six years as DI Richard Mayne in Blue Murder and in the final series of Where e Heart Is as Jack Clayton. His remarkable list of credits have also seen him in Touching Evil, Murder in Mind and Hotel Babylon to name but a few. As a leading man in London’s West End, Ian’s stage credits include Billy Flynn in Chicago and Danny Zuko in Grease. Joining Ian is television’s Patrick Robinson, whose impressive TV career has also spanned more than two decades. Patrick is best known for his role as staff nurse-turned-consultant Martin ‘Ash’ Ashford in BBC’s Casualty, a role which he first played from 1990 to 1996, before he returned for a guest appearance in a two-part special in 1998. He then reprised his role in 2013 for a year. Unflinching in his protests of innocence, Andy strikes up an unlikely friendship with the prison fixer Red, played by Robinson, and things take a slight turn for the better. However, when Warden Stammas decides to bully Andy into subservience and exploit his talents for accountancy, a desperate plan is quietly hatched… Patrick Robinson’s other TV work includes Midsomer Murders and e Bill, and, in 2013 Strictly Come

Dancing where he got to the semi-finals. In 2003 he appeared in action film Belly of the Beast alongside Steven Seagal. Patrick’s stage roles include the Royal Shakespeare Company’s Romeo and Juliet as their first ever black Romeo. Other stage credits include Dangerous Corner at London’s Garrick eatre and Festen at the Almeida and the West End’s Lyric eatre for Bill Kenwright, and War Horse at the New London eatre. Presented by Bill Kenwright, this new production will be directed by award-winning Broadway director David Esbjornson, adapted by Owen O’Neill and Dave Johns, with design by Gary McCann and lighting by Chris Davey. Based on the 1982 novella Rita Hayworth and Shawshank Redemption by celebrated author Stephen King, the play examines desperation, injustice, friendship and hope behind the claustrophobic bars of a maximum security facility. e 1994 feature film, regularly voted the number one all-time movie, starred Tim Robbins as Andy Dufresne and Morgan Freeman as Ellis 'Red' Redding and was nominated for seven Academy Awards including Best Picture, Best Adapted Screenplay and Best Actor for Freeman. Stephen King is one of the most popular authors of contemporary literature and has written 54 published novels which have sold more than 350 million copies around the world, many of which have been adapted into feature films. MARLOW SANTA’S FUN RUN 2015 2500 Santa’S to run through Marlow high Street!

he Rotary Clubs of Marlow today announce that the 11th Santa’s Fun Run will take place on Sunday December 6th, starting at 9.30 am. ey promise it will be bigger, better, and even more fun than ever. Sir Steve Redgrave will again start the run, and 2500 participants will stream through the streets of Marlow. e run continues to grow year on year, and in 2015 Olympic gold winners Sir Steve and Naomi Riches will be running just as they did last year. Runners will be dressed as Santa Clause, Mummy Clause and Santa’s little helpers, and Marlow High Street will again be a remarkable sea of red on this magic day. Dogs will also be welcome - as will push chairs and wheel chairs. So able bodied or not, young or old, this really is the fun run for everyone. e run raises serious money for good causes. Participating Santas can raise money for their own personal charities along with Rotary chosen charities.. In 2014 over £30,000 was distributed to mainly local charities and other deserving causes. e 5 kilometre route takes participants from and then back to Higginson Park, and for all those who complete the course there is a celebratory bronze medal. Just to say ‘Well done’! eedon Park, situated on the outskirts of Aylesbury town, is home to the 148th Bucks County Show on ursday 27th August 2015. e Bucks County Show is one of the best one day agricultural shows in the country and one of Buckinghamshire’s main summer attractions. is year in the Main Ring we are excited to welcome back the Bolddog Lings Freestyle Stunt Team who will perform twice in the Main Ring. Only recently they stared on ITV’s ‘Britain’s Got Talent’ and we are delighted that they will be showing us their amazing tricks. We are very honoured to welcome the Royal Artillery Band on their first visit to our show. e ever popular Sheep Show returns to provide both humorous and educational entertainment which stars the ever incredible ‘dancing sheep’. Once again there will be some sixty cattle classes and over thirty sheep classes where some of the best livestock in the country can be seen. e Aberdeen Angus Society has
nominated the Bucks County Show as one of their shows for the 2015 Aberdeen Angus Show Herd of the Year Competition. e Wiltshire Horn Sheep Society will also be holding their first ‘National Show’ at the Bucks County Show. ere are around eighty equine classes including qualifiers for the Horse of the Year Show and the Royal International Horse Show. e Home and Garden marquee is filled with entries from people demonstrating their skills in cooking, wine making, photography, flower arranging, handicrafts and flower and vegetable growing. ere are over two hundred trade stands, Shopping Marquee, a new larger Food Hall, Rural Craft Marquee and an entertaining Countryside Area with many demonstrations showing the rural way of life. e Show tries to provide a mixed agenda packed with competitions, displays and breathtaking events whilst aiming to demonstrate traditional Buckinghamshire rural and agricultural activities. ere is something for all the family to enjoy so why not come along and end the summer holidays with a fantastic family day out at the Bucks County Show. ■

STRAIGHTEN UP YOUR SOFA TIME

t the end of a busy day, or even first thing on a Sunday morning, the sofa can seem an inviting place. While some seats are merely practical, sofas are all about comfort and relaxation, right? Somewhere to slouch in front of your favourite TV show, or curl up with a good book. Don't forget about your posture, though. We all know that sitting up straight is important when we're sitting at a desk - and sofas are no different. So show your spine some settee TLC, with these simple tips… DON'T SLUMP If you sit slouched, or slightly hunched over, you're likely to be piling the pressure on your lower back as it has to cope with the weight of your upper body. You'll need to strengthen your core and buttock muscles. MAKE SUREYOUR LOWER BACK IS SUPPORTED If there's a big gap between your lower back and the chair you're sitting on, you may need to make some adjustments (and this is something you should also keep an eye on if your job is a desk-bound one). Try and make sure your knees are level with your hips by adjusting your seat, or find yourself a foot rest. PLANTYOUR FEET FLAT ON THE FLOOR It's highly tempting to cross your legs nonchalantly, like that posh couple on Gogglebox, when you're watching TV (particularly if you have a glass of G&T in your hand). But this

can put pressure on your lower back over time. So try and keep your feet on the floor and resist the urge to cross them or tuck them under you. AVOID 'TEXT NECK' Many of us go from spending our nine to five bent over a computer keyboard to whiling away the evening hunched over a phone or tablet. In fact, smartphone users now spend an average of two to four hours a day with their heads lowered. is can lead to that all too common feeling of being stiff and sore around your upper back, shoulder blades and neck. Save yourself a fortune on pricey massages and try lengthening your neck as you tuck in your chin as an exercise. Alternatively, why not go old school and give someone a call instead of texting them? DON'T GET STUCK IN A RUT When there's a particularly gripping TV show on, it can be easy to develop the kind of rigor mortis seen in a Silent Witness corpse. But try and move around a bit to boost blood circulation. Shift position every half hour or so, or get up and walk around - even if it's just over to the kettle and back. GET THE FAMILY INVOLVED Working on your posture takes time and effort - it feels a lot comfier lounging under your blanket than sitting up straight. Why not get your partner, kids or friends on board for the posture crusade? When one of you looks at risk of slumping like a soggy-bottomed cake on Bake Off, give each other a gentle nudge. Your backs will thank you for it. ■

Is it worth paying the premium for aluminium double glazing?
N
owadays UK homeowners have the choice of energy rated aluminium, composite, steel, timber or UPVC replacement windows. The vast majority of customers choose UPVC simply because it does the job and costs the least. Aluminium replacement casement windows on the other hand can be powder coated in any RAL colour, so offer property owners the opportunity to have all sorts of dual colour effects, such as say a “Mock Tudor” exterior with black outer frames and white sashes (or vice-versa) and internal frames to match the decor of the room. UPVC
windows can in theory be sprayed in any RAL colour, but the long term quality of the finish is highly questionable, as painted UPVC is nowhere near as durable as powder coated aluminium, and has been known to fade after a period of time. Whilst aluminium is still available in a silver anodised finish, the vast majority of aluminium windows fabricated in the UK nowadays have a high quality, highly durable powder coated finish instead, plus today’s modern aluminium frames have a polyamide “thermal break”, preventing the formation of condensation on the internal

frames, which sometimes occurred on non-thermally aluminium fenestration products of old. Powder coated aluminium will not fade and will last longer than UPVC over a lifetime. Aluminium is 100% recyclable, so is extremely environmentally friendly, plus being a metal it offers even more security, flexibility and strength than UPVC. Most UK manufacturers should be able to offer customers aluminium windows in a single or dual colour finish, along with matching front doors, back doors, in-line sliding patio doors, French doors, plus sliding and folding doors in any RAL colour in matching profiles. In the case of independent aluminium double glazing manufacturers and installers Hazlemere Windows, all their bespoke casement double glazed windows can be manufactured to be either A, B or C rated, depending on each customers design and thermal requirements., as each aluminium casement window is individually made to order from scratch, so tailor made to each aperture All side opening vents can have easy clean/fire escape
dog-bolts and toughened safety glass to BS6206. High security external glazing beads prevent removal of sealed units/panels from the outside by unwanted intruders. The 24mm wide aluminium double glazed unit is 4mm/16mm/4mm, a combination of low iron outer float or toughened clear or obscure safety glass, a black Swiss V warm edge spacer bar, 90% Argon filled, and an inner soft coat float or toughened glass pane. This glazing specification achieves a centre-pane U Value of 1.2 W/ m2K. The combined U-Value of Hazlemere’s A rated aluminium double glazed windows 1.64 W/m2K. The bottom line is that aluminium profiles offer slimmer sight lines than UPVC profiles, so consequently there is a greater glass area, which delivers more light, solar gain and affords better aesthetics and external views. Unlike UPVC aluminium does not need steel reinforcing so can deliver larger windows, greater openings and wider conservatory roof spans. Also lower quality UPVC products can be prone to fade, especially if in direct

Hazlemere aluminium casement windows have a 75mm deep (front to back) thermally broken frame by a polyamide strip and a high security multi-locking locking system as standard. All their aluminium doors come with high security
sunlight, whereas powder coated aluminium will not fade, plus expands and contracts far less than UPVC. UPVC windows, doors and conservatories simply cannot offer the range of colour choices as standard that aluminium can, although UPVC as a more mass market product is often less expensive. Aluminium is a superior material, but does cost slightly more, so as with most consumer decisions - the choice is yours! A family in Buckinghamshire has transformed their home into a place to relax and have fun with an indoor swimming pool from Origin Leisure.
M
att and Kerrie Smith moved from London to a detached home in rural Buckinghamshire with their three children four years ago. Having spent the years updating their country retreat by refreshing the dĂŠcor, they wanted to make a big

improvement to suit the whole family. After visiting a friend with a new indoor swimming pool, the couple began investigating the possibility of building a pool house in their garden. Since speaking to Origin Leisure, they havenâ&#x20AC;&#x2122;t looked back.

GOING FOR GOLD e couple first had the idea during the 2012 Olympics. “My son has a friend who has an indoor pool and seeing the amount of flexibility it gave to the family was what swayed our decision”, explains Kerrie. “ey could have a number of children over at the house, all happily playing in the pool all day. Our kids, aged six, ten and 13, are at the age now where kicking a ball outside isn’t enough to keep them entertained for hours on end.” Andrew Ginger from Origin Leisure visited the couple and showed them other projects, while answering their questions about the build. “e second we met him we knew it was the right decision. Not only do they have 35 years’ experience, but the company understood what we wanted immediately. Most importantly, they were respectful of our budget. From start to finish they ensured we kept within our limit, with the end project costing £288,000”, says Kerrie. TICKING ALL THE BOXES As with most areas of the house, the children and the adults use the space differently. An indoor swimming pool is no exception - it had to be a space for the whole family to enjoy. “We needed it to tick all the boxes; entertain the children, while also being a space where the adults could exercise.” An indoor swimming pool from the Olympic range was tailored to fit the family’s lifestyle. “e pool needed to be shallow enough for our youngest to stand, but deep enough so adults could swim. e changing room had to be big for the children to all fit, while the sitting area is a place we can escape. It allows us to disappear from the house for a bit - almost like we’re on holiday!” e athletic couple also incorporated a gym and swim jet, making it the ideal space to keep active. “Matt is an impressive swimmer so the jet had to be powerful to give him a good enough workout. For me, a gym that overlooks the pool so I can be on the exercise bike while watching the kids swimming was essential.” On the outside, the building has been completed with reclaimed bricks to match the outside of the family’s six bedroom
property. Bi-folding doors open up so the family can enjoy the garden, despite the great British weather. “It can be chucking down with rain but it doesn’t matter – the children can still be outside playing and it’s safe and warm”, said Kerrie. DESIGNING THE DREAM POOL From the tiles to the taps, Origin Leisure provided options for the couple to choose from. “We had an idea of what we wanted, having used Pinterest to gain inspiration. We’d recently helped my parents rebuild their house in New York with an architect, and wanted a similar style. Origin Leisure came back to us with great suggestions based on our design brief.” Building work started in July 2014 and was completed in November, 4 weeks less than expected. e family were impressed with the efficiency and speed of the whole process. “I knew from the beginning that this was going to be a turn-key project. With Origin Leisure there was never any question that it would be subcontracted, we had one point of contact and the whole thing was managed by them, from start to finish. ey were so polite and thoughtful, even going to the extreme of moving our children’s beloved Wendy house from one part of the garden to another to make room for the swimming pool.” A FUN AND FUNCTIONAL SPACE FOR THE WHOLE FAMILY Since making the decision to add an indoor swimming pool to their home, Matt and Kerrie haven’t been happier. “A swimming pool is the best thing we’ve done to the house and we wouldn’t think twice about doing it again. We knew we were going to enjoy it, but we absolutely love it. My advice to anyone thinking about investing in a swimming pool is not to think twice. I smile every time I look at the pool and it’s brought so much fun to our home.” ■

Gabrielle Fagan explores the sophisticated power of grey and how it transforms rooms. Grey is so sexy and sophisticated - not the masterful hero of the best-selling novel, but the decor colour. Once an overlooked ‘wallflower’ section on the colour chart, grey has shed it’s cold, institutional image, and is proving it’s power to transform any setting. Flirting with its subtle, versatile tones, from crisp charcoal and French grey to shimmering silver and mysterious smoke-grey could be just the way to turn up the heat at home. “Grey is a surprisingly calming and harmonious colour to live with, but you must choose the right tone,” advises Mark Upstone, head of global visual display at The Conran Shop. “Greys with more brown in the mix will feel warm - white based greys will feel colder. “Be bold. Don’t restrict yourself to a feature wall, grey looks better en masse, and use different finishes of the same tone to create intriguing interest and depth. “Give grey a starring role by using it on walls and paintwork, he suggests, and a matching gloss paint finish for woodwork. If that feels too overpowering, tone it down with pastels, white or a zingy kick of sharp citrus, which will ensure it has less of a masculine edge.

FOOD IDEAS AND NEWS FROM THE ARTICHOKE
T
he English tomato season runs from June to October and is now at its peak. ere has been a great revival over the past few years of the traditional tomato varieties and this has provided inspiration for our refreshing summer starter of Heritage tomatoes with goat’s curd. Nasturtium flowers and leaves add the addition of a radish like heat and a cooling passion fruit dressing and fresh basil finishes the dish. e skill lies in the sourcing of the best flavoured tomatoes ensuring they are sun ripened, juicy and fleshy. A heritage (or heirloom) tomato is generally considered to be a tomato variety that has been passed down through several generations, which means the seeds are pure and untouched of chemicals. Hence, the tomatoes provide a superior flavour. e Isle of Wright has become renowned for its Heritage tomatoes – grown on organic soil, the earlier summer sunshine sweetens the fruit and brings out the fragrant flavour. ere are many different varieties all shapes and sizes and colours from tones of red, green to orange, yellow and striped which make for a delightfully looking plate. Look out for these special
tomatoes at farm shops and a lot of the foodie supermarkets now have them on their shelves. If the isle of Wright variety are not available some of the English mainland are now mid-season, just as good. Enjoy this light summer dish with a glass of crisp white wine on your patio or balcony and take advantage of the last few balmy summer days before autumn arrives. ■

ISLE OF WRIGHT HERITAGE TOMATO SALAD WITH GOAT’S CURD, NASTURTIUM, FRESH BASIL AND A PASSION FRUIT DRESSING INGREDIENTS

SOUP 800g of Heirloom tomatoes mixed variety – room temperature 1 teasp sea salt 1 teasp caster sugar 200 g good quality goat’s curd Juice of half a lemon Salt and freshly ground pepper DRESSING ½ tablesp White balsamic vinegar 50 ml olive oil 2 x large passion fruit Squeeze of lemon juice 50g Nasturtium flowers and leaves ½ bunch fresh basil ½ flute of French bread

the hard core, cut into nice slices. wedges and cubes • Lay out on a tray • Mix with the sea salt, sugar and then allow to marinade for 1/2 hour • Wash the nasturtium leaves, flowers and fresh basil very gently and pat dry – tear gently in half • Slice the bread thinly and brush
with olive oil and toast on both sides until crisp • Place the goats curd in a bowl and season with the lemon juice, salt and freshly ground pepper DRESSING • Cut the passion fruit in half and scoop out the passion fruit seeds

Arrange the marinated tomatoes on four plates add the nasturtium flowers and leaves and add 3 small quenelles of the seasoned goat’s curd on each, Finish with the passion fruit dressing, fresh basil leaves and serve with the very thin sliced toasted bruschetta.
CHEF’S TIP Have the tomatoes ready at room temperature, the warmth brings out the flavour and the aroma. If the nasturtium flowers and leaves are not available they can be replaced with peppery rocket leaves.
