n 1st July the Gerrards Cross Summer Fair will take place in the town from 5.00pm until 9.00pm. As in previous years, Station Road will be closed to traffic where stalls from local organisations and businesses will be set up offering information, games and refreshments. e premises of local shops and businesses will generally remain open and they too will be offering refreshments. Local children’s choirs and dance groups will perform outside the Guide Hall in Station road from 5.00pm till 6.30pm after which other local choirs and bands will sing and play throughout the town. Misbourne Matins and Gerrards Cross & Chalfont St Giles Rotary Clubs have organised the event in conjunction with Gerrards Cross Traders Association. Both Rotary Clubs are based in Gerrards Cross and are involved in raising substantial funds to help local, national and international communities improve their quality of life. In this occasion they will be supporting local community projects and charities. In recent years both Rotary Clubs have provided financial support to local primary schools in terms of the Lifebus and new dictionaries, and to the local youth clubs

The Taming of The Shrew

fter its successful staging of the pastoral comedy ‘As You Like It’ in 2014, Chiltern Shakespeare company returns to an urban setting for its next production: e Taming of the Shrew. Wealthy Paduan merchant Baptista has two daughters of marriageable age. e younger, Bianca, has two suitors, although she is not keen on either. However, convention dictates that she cannot marry before her feisty sister Katherina whom no one is willing to take on. Lucentio arrives in Padua to attend the university and falls in love with Bianca at first sight. Both he and Hortensio, one of Bianca’s original suitors, disguise themselves as tutors to gain access to the house and to surreptitiously court the fair one. Meanwhile, Petruchio, turns up from Verona to visit Hortensio. Hearing about Katherina, Petruchio is ready for the challenge and sets about wooing her, aided and abetted by Baptista and Hortensio. e wedding takes place much to Kate’s distaste, and Petruchio takes his new wife back to Verona. Once there, Kate is ground down by Petruchio’s capricious behaviour and eventually decides that resistance is futile. Back the ‘happy’ couple go to Padua, where Lucentio has married Bianca in secret. Baptista holds a wedding feast for his daughters, during which the wives’ obedience is put to the test with a surprise outcome… ‘e Shrew’ will be staged on 10th-13th and 17th-20th June at 8pm, with matinees on both Saturdays at 2pm. e grounds will open 2 hours before each performance. Ticket prices range from £16.00 to £23.00, with concessions available for some performances. CSC is an amateur company with a highly respected reputation in the Chilterns and ames Valley areas and their

annual production is a firm fixture in the Beaconsfield calendar. Whilst its principal aim is to bring Shakespeare to life for all age groups, CSC is also committed to supporting local charities. e 2015 nominated charity is Penn School, a non-maintained day and boarding school for pupils with communication difficulties, which will receive surplus funds from the production. Performances have been staged for the last 26 years at Hall Barn, Old Beaconsfield; a wonderful quintessentially English parkland setting leading down to a lake. Many audience members take full advantage of the beautiful surroundings by having a picnic in the park before the performance. For those not wishing to bring their own food, a licensed refreshment marquee is on site and picnics may be pre-ordered. e actors perform in the open air on a grass stage against the backdrop of a 300 year old sculpted yew hedge. e audience sits on raked seating in a tented auditorium and so is protected from the elements. ere is also limited wheelchair/disabled access. Full theatrical lighting and sound amplification are employed (including hearing loops). e ample parking is organised by the Beaconsfield and High Wycombe branches of e Lions who ask for voluntary contributions which all go directly to CSC’s chosen charity. ■

Cathy Timbrell’s Contemporary Jewellery takes its inspiration from objects and patterns that often go unnoticed, Linda Cavill’s paintings are inspired by her native Scotland, whilst Catherine Smith’s have an interest in human character. Kay Waite’s Porcelain Ceramics are inspired by nest forms, Shirley Jones is mad about Textiles and has just completed the Herculean task of making not one, but two wedding dresses for her daughter! Louisa Stobbs’s passion for outdoors Photography is in the art she sees all around. Paul Rowbottom combines sculptural form with manufacturing proccess, and Chris Dunsby’s Metal Creations are flushed with success from exhibiting at Milan’s Design Week. Louisa Stobbs, a Berkhamsted born and bred photographer, has brought this group together and said

“We are thrilled that College Lake has given us this fantastic opportunity to exhibit in their beautiful Visitor Centre; we will all be donating a percentage of our sales to this brilliant nature reserve.” Louisa has always lived in the Chilterns and finds it a beautiful area to photograph, all year round- from snowy Ivinghoe Beacon, to spring in Ashridge’s bluebell woods, vivid rape fields, summer farm crops and wonderful autumn colours in the beech woods. “I really enjoy printing on new and unusual media, and my massive weather-proof Aqua canvases are particularly designed for displaying in the garden!”. Bucks Open Studios is the largest visual arts event in the country; over 500 artists and makers open their studios and run free exhibitions and events for the public to visit, in over 200 different venues across Buckinghamshire. isitors to Waddesdon Manor in May half term week (23rd – 31st May inclusive) will be encouraged to put their gardening skills to the test! ere will be an opportunity to create your own plant pot and personalise your dibber, then plant a giant pumpkin seed and take your creation home to watch it grow, grow, grow! June is also set to be an exciting month at Waddesdon this year, as the Manor is looking forward to throwing open its gates for a new and exciting outdoor event on the weekend of 20-21st. e Feast Weekend promises something for everyone, with entertainment ranging from outdoor theatre, acrobatics, a tea dance and even a marching band to interactive children’s shows and craft activities. Inspired by the historical “Baron’s Treat”, when Baron Ferdinand de Rothschild would invite local children and families of staff that worked at the Manor to a huge garden party in the grounds, present day visitors are invited to enjoy Waddesdon as a guest, in the tradition for which it was built, as a backdrop for entertaining and pleasure. A 150 metre long decorated table will stretch along the North Avenue in front of the Manor, with visitors

encouraged to take a seat and either picnic or indulge in something delicious from one of the 50 artisan food stalls that will be on offer. Join us for a weekend of feasting and extraordinary and captivating performances – not to be missed! Continuing the outdoors theme, and the tradition of three-dimensional bedding begun by Alice de Rothschild, make time to explore the South Front of the Manor where two large sculptural bedding installations designed by artist Simon Periton will be seen on the Parterre. And from 17th June, an interesting exhibition opens at the Coach House, charting the life and art of Henry Moore through a selection of 100 drawings from the collection of the Henry Moore Foundation. It will also include two major sculptures in bronze, King and Queen (situated at the Coach House) and Hill Arches (located adjacent to the Aviary) and runs until 25th October. ■

ver questioned whether mermaids, unicorns and one-eyed monsters were once real animals that roamed our planet? A new free family exhibition at the Natural History Museum at Tring will explore some of nature’s most intriguing myths, taking you on a journey through the science of ancient and modern day mythology. Rare specimens from the Museum’s collection and huge life-sized replicas will be on display, inspiring visitors to consider how twisted accounts of animals that lived long ago and in far-off lands have inspired stories of mythical creatures. e exhibition is inspired by the ancient and beautifully illustrated book Historiae Animalium written by naturalist Konrad Gesner in Switzerland in the 1500s. Konrad tried to describe animals scientifically, verifying historic accounts with direct observations where possible, as such his book is considered one of the earliest modern zoology works. In some cases accounts were hard to verify and Konrad couldn’t easily rule out the existence of creatures we now know are mythical, which is why unicorns and mermen feature next to real animals, such as porcupines and camels, in the hand-coloured illustrations. Visitors will feel like they’ve stepped into the pages of this magnificent book, which is going on display for the first time at the Museum.

One of the most mysterious objects on display is the model of a merman loaned by the Horniman Museum and Gardens. is famous specimen is actually a model of a ningyo or water sprite from Japanese folklore. Despite originally being made for religious Shinto shrines in Japan, models like this were used as attractions in travelling shows across Europe in the 1800s where they may have perpetuated myths of merfolk. Another highlight is the enormous egg of the elephant bird Aepyornis maximus, which lived on Madagascar until 1500 and whose egg is more than 150 times the size of a chicken egg. Visitors of all ages can create their own mythical monsters by mixing and matching illustrations inspired by those in Konrad’s ancient book, whilst children can get up close to specimens and handle a huge rhino skull, an enormous elephant bird egg and a narwhal tusk. ■ Myths & Monsters is open until 6 September at the Natural History Museum at Tring. We spoke to business founder and owner Jackie Hope, who has seized an opportunity to pass on the ‘feel good’ factor, engage locals, and create a workshop space where friends can book an evening together learning how to make lip balms, bath bombs and even creams. Other workshops include Tea & Cake tasting, Gift Wrapping, Writing Workshops, Craft Workshops and the occasional hen party! Some of the workshops on offer come with the addition of a celebrity expert, and all courses will provide everything you need. All you have to do is show up and enjoy yourself. Not initially intending to open a boutique as such, Jackie
took on retail premises with the intention of using the entire space for offices and the manufacturing of her bath & body products. And now, just over 6 months later, further potential is being released as a workshop space is being created at the back of the boutique. ne of Berkshire’s most exciting kitchen design businesses is tucked away amongst farm buildings on the outskirts of the picturesque riverside village of Cookham. Business owner Karen explains how she settled on what at first sight might appear to be a somewhat unusual location: “We’d had a small showroom on Cookham High Street for several years but when the lease on that building expired, it was time for a change. e old showroom was small and parking for both customers and deliveries was difficult so I started looking for a location where we could fix all of that without moving too far from the area. When I first saw our current site it was a combination of an old barn and some non-descript ‘industrial’ additions but I fell in love with the potential to create a unique space that would allow us to showcase the very best of what we have to offer.” Today, the place is transformed. As Karen goes on to explain: “It was a huge amount of work but we now have a space that allows us to showcase our beautifully designed kitchens and range of appliances in the best way possible. More than that, it’s allowed us to demonstrate how we can totally transform a space through creative redesign and the addition of items from our range of tiles, wallpapers, fabrics, radiators, blinds, lighting and other accessories.” Zona Cucina were chosen to create the stunning kitchen and entertaining space at Mulberry House. In keeping with the luxurious finishes throughout the property, Zona produced a high specification design consisting of German Pronorm cabinetry together with a combination of materials carefully chosen to maximise the uniqueness and quality of the overall finish. Stone Grey high gloss lacquered door fronts were selected for the kitchen. A bank of black glass and matching Stone Grey floating units set into a bespoke recess in the dining area create a stunning impact as you enter the room. Servodrive touch-control mechanisms have been fitted to all

the doors and drawers for easy use and even the internal cutlery inserts have been fabricated in a solid walnut finish so as to match the internal doors in the house. Evidence of Zona’s attention to these tiny details is seen throughout the design, making this elegant kitchen and dining area so special. e Miele appliances include a Mastercool larder fridge and freezer. A stunning Mastercool wine cooler takes centre stage on the tall run and replicates the black glass doors in the dining area. ere are two ‘knock-to-open’ handless dishwashers, a single oven, a microwave combination oven, a Sensortronic steam combination oven, a ‘Bean-to-Cup’ coffee machine and a warming drawer. A domino arrangement of a two zone induction hob, a Tepan Yaki hot plate and an induction wok is set into the granite slab on the island. e specification of these appliances offers ultimate cooking versatility. e worktops are a combination of Caeserstone quartz and natural granite. e quartz section of the island features an L-Shaped breakfast bar which has been strategically positioned to align with the bulkhead above and contains a champagne trough sink on the dining room run. Rising from this is a stunning slab of Juparana Torrone granite. Zona also designed the bespoke dining table to match using the same granite slab mounted on a mirrored pedestal with a chrome plinth. is sits centrally to align with the kitchen island and bulkhead, the skylight and bi-folding doors. Accent finishes include bronzed mirror splash-backs and recessed L.E.D. strip lighting throughout, creating a warm homely ambience to this fabulous room. ■

SMALLBONE OF DEVIZES UNWRAPS THE LANDMARK BRASSERIE KITCHEN IN BEACONSFIELD

mallbone of Devizes, creators of luxury kitchens and cabinetry, is showcasing the brand new Brasserie kitchen in their Beaconsfield showroom in June. e new kitchen is designed by Peter Sheppard, whose work for Smallbone of Devizes includes the award-‐winning Walnut & Silver and Macassar kitchen collections. It marks the company’s next step in creativity, fusing handcrafted with an urban look and feel. Taking inspiration from the industrial world and the relaxed setting of the brasserie, Smallbone of Devizes once again takes the lead in the move away from formal dining spaces to a more relaxed and atmospheric experience. Scaffolding planks and a large dresser with open shelving in a London brasserie were the starting points for this kitchen design, giving it a modern twist that is both beautiful and functional. Here the dresser is oversized, with top cabinets 400mm deep and glass sliding doors negating the need to move items from the worktop in order to open the cupboards. e overall look of the kitchen is characterised by long horizontal strips of oak, deliberately chosen for its knots and character, emphasising the natural and beautiful variations in the timber. e kitchen cabinetry is available in any colour as, like all hand-painted Smallbone furniture, it is painted on site by Smallbone’s skilled decorative artists. Every detail has been carefully considered, from flat satin nickel plated tab handles on small drawers and u-‐shaped flat handles that were inspired by saucepan handles to black nylon handles trimmed with stainless steel on baskets and chopping boards. Even the smallest details have been thought through, including torx fixing screws to give a more engineered look and hidden modern furniture hinges. e theme of industrial rectilinear follows throughout, with no circular curves in sight. Cornices and skirting boards are plain, with a slip of brushed stainless steel finish, while kickers feature a matching metallic finish. ere is a stainless steel plate rack with square section bars and a moveable hostess trolley that has been re-‐interpreted for today’s lifestyle, that comes complete with a warming drawer, which sits against the wall when not in use. ree islands of varying sizes, each with its own specific function, replicate the more relaxed lifestyle of modern
contemporary living that combines work and play. By combining different workstations, you can prep, chop, wash and cook while talking to your family and friends. is is emphasised by the use of three different surface materials; brushed stainless steel, honed Bianca Cararra marble and a 60mm thick oak worktop. A 80mm thick end grain maple chopping block has also been chosen, for its functionality and appearance, on the central island. e dresser worktop is honed from Nero Assoluto, a black granite finish, while the open back of the dresser wall cabinet is painted in one of three recommended painted finishes, selected to complement this collection. “I wanted to create a kitchen that had a dual purpose, both as a social hub and a cooking environment. I see the Smallbone of Devizes client using the kitchen daily, even if they are not cooking everyday in the space. It’s both atmospheric, with a strong design element, as well as being practical and friendly at the same time,” says designer, Peter Sheppard. e Brasserie kitchen comes in pickled oak, a palette of painted colours and a natural oak finish. ■

podesta q&A We speak with company owner and head designer Matt Podesta of local bespoke furniture company Podesta Q: Why did you decide to be a furniture designer? When I was about 7 years old I had a passion for making things and it really grew from there. I was lucky enough to have woodwork classes at school which enabled me to experiment creating things and exploring design.
Q: What inspires your designs? Architecture and nature. I always find myself looking to buildings for proportion and balance and, in particular, classical architecture for detail.
Q: Why is bespoke the way forward? It enables you to have exactly want you want in terms of style, materials, finish and layout. It also enables you to overcome any room restrictions such as wonky walls due to the age of the building.
Q: Congratulations on recently winning KBB Review Kitchen Designer of the Year Award for the second time. Do you create fitted furniture for other areas of the home? Yes, we design and make for all areas of the home including bathrooms, cloakrooms, media rooms and libraries. We are also often asked to design freestanding furniture for these rooms in order to create a cohesive look.
Q: How much should people be prepared to pay for a bespoke design? I am constantly amazed at how much you get for your money when working with a bespoke designer compared with a high street retailer. e latter is driven by massive overheads with staff who sell a catalogue of ready-sized boxes. Our kitchens start at £35,000 which is for a kitchen that is totally unique to you.
Q: What do you think sets Podesta apart from other Q: Why don’t you have a showroom? Every house, client and project is unique which is why we start with a blank piece of paper and listen to the client’s brief, rather than try to sell ranges. We don’t want to pigeon hole ourselves to one design as that’s simply not what we do.

Q: And lastly, in your mind what is the future for kitchen design? I think the future lies in the digital revolution we are experiencing. Appliances will all be controlled by apps. We are now seeing simple lightbulbs which can talk to a computer. In other words, a single device will operate the kitchen, it will be able to tell us when we need to refill the larder, have a machine serviced, or even turn itself on from your phone so the meal is ready when you return home. ■

magine the scenario, you visit a client who virtually gives you carte blanche to redesign their kitchen and doesn’t mind when you suggest knocking down a few walls in the process! Fast forward to this gorgeous kitchen, the only stipulation being the retaining of their existing super sized Fridge Freezer from Sub Zero. e opening up of this room has now provided a huge living area, with soft seating, and a dining area under a lantern giving spectacular light which compliments the new matching windows over looking the lovely gardens and swimming pool. A large hand blown pendant light picks up smouldering colours of oranges and browns, the result of an additional 2ft in ceiling height. Wanting a very sophisticated look, this truly bespoke kitchen is also dark and dramatic in feel with the use of dark fumed oak cabinets and then the lighter cream coloured island in high gloss lacquer. A pocket door system was introduced to enable the cabinetry to be left open without compromising the floor space. A hidden double door leads into the rest of the house, but the overall feel is of a fabulous bank of floor to ceiling doors. Inside this bank of cupboards is a breakfast unit, complete with Coffee Machine, Toaster, and breakfast crockery. A provisions cupboard, and a

cupboard housing cookery books is also hidden behind these pocket doors. Further Sub Zero and Wolf appliances were selected to match to include a large Wolf range complete with a bbq top, with a remote controlled Gutmann ceiling hood perfectly placed to eliminate cooking smells. Silestone worktops were used on the island with the breakfast bar finished in fumed oak vaneer, polished with a sunburst formation. Each end of the island was mirrored with exactly the same cabinets, sinks, and Quooker boiling taps, for complete symmetry. Gorgeous stools from Pininfarinain chrome and dark brown complete this fabulous installation. is stunning kitchen was designed by Celia Warbrick of Moneyhill Interiors Ltd., who specialise inhigh end installations, which often earn them kitchen industry awards which are obviously well deserved. f you are thinking about replacement bi-folding and sliding doors for an existing “opening” to replace French doors, sliding patio doors or casement windows, or indeed looking at fitting folding and sliding doors into an extension - getting the right configuration first time round is vital to ensure their longter m practical operation. When it comes to “Bi-Fold” doors the clue is in the name, yet, despite this, many double glazing customers still get into hot water when having having bi-folding doors fitted, as they did not take the time to think through the ramifications of certain configurations. The key thing with bi-folding doors is to remember that each “pair” of bi-folds, opens and closes in tandem, so cannot operate as indi individual vidual sections, they are in-effect one. As these two folding door sections are inextricably linked, no pair of bi-folding doors can therefore accommodate a nor mal door handle, nor can one of these two sections operate as a trav travel door without the other opening or closing at the same time. As a material, UPVC UPVC fflex lexes, so is not the ideal product to use for bi-folding doors that need to operate rigidly, rigidly, as one, and not be in any danger of popping out of alignment. The problem with 2, 4, 6 or 8 section bi-folds doors which all fflo low in one direction is they cannot hav have a nor mal door handle, so are unable to fold up together properly,, and therefore are more limited in their operation. properly Make sure that the doors you hav have fitted, come with “D”
handles to assist with the opening and closing of the doors, as drag ging them from one end can pull and stretch the gasket, leading to unnecessary time consuming ser vice calls. All bi-folding doors systems, whether made of aluminium, steel, UPVC or wood hav have their limitations in ter ms of both overall height and overall width, and indeed maximum and minimum achievable pane section sizes. So before creating an opening for bi-folding doors, do make sure that the product you are considering having having installed will actually be able to fit it! It is better to make the opening to the optimum size of the bi-folding door system you hav have chosen, rather than the other way round. One top tip to remember is that these systems are highly technical bits of kits, so make sure they are fitted by professional installers with experience fitting the actual system you are having ha ving fitted. Many reputable fir ms will not supply bifolding doors on a supply only basis for this very reason. Finally inally,, it is wor th knowing that some bespoke aluminium bi-folding door systems allow for one single section at one end to swing open, allowing say a 3 section sliding and folding door to butt up to this, enabling the proper ty to hav have a travel door, pair of French door and bi-folding doors all in one configuration of 3 linked sections, plus one independent swinging open section. Think carefully whether you want your bi-folding doors to a) open to the left or to the right, b) fold inwardly or outwardly and c) have a standard or low threshold. So before ordering bi-folds, take your time and ask an exper t for a demonstration of whichever bi-folding double glazed product you are considering before committing to a purchase, as not getting it right first time can be ver y costly ly..

Snorkelling with turtles off the beach, in front of the hotel, was an experience I’ll never forget! And a trip to the nearby Sandy Lane hotel for its legendary Sunday Brunch is a must. It is a very special place to me, and what never fails to amaze me about the various islands in the region is how they always offer something for everyone. he Riverlight sits in a beautiful spot at Bourne End Marina, with unrivalled views that allow diners to see for miles along the ames, creating a perfect setting to enjoy the delights on offer. Part of the Coopers Independent Trading Company (e group also owns Coopers Coffee Bar in Marlow), from the moment you enter the restaurant you gain a sense of how perfect the dining experience will be. e staff are polite and attentive, however, what struck us most was their knowledge and enthusiasm. A fairly small menu (four choices of starter and main) actually always pleases me, as it shows that what is available is freshly prepared, is well chosen and more importantly, likely to be loved and recommended by the chef. Asking for recommendations we opted for the Orkney scallops with Stornaway black pudding and the crispy carver duck breast cooked sous vide broccoli purée poached cherries smocked duck heart and char grilled broccoli salad. e scallops were truly delicious, cooked to perfection and a really good size. e duck arrived with a glass lid over, filled with smoke. e waiter dramatically lifted the lid allowing aroma of the hazy contents to creep out, awakening our senses to the smoky flavouring surrounding the duck. Following our starter we enjoyed a small taster dish; confit loch duart salmon with Beetroot hummus. Main courses were chosen, the trio of Dean Timpson Pork and the Herb Crusted Lamb, saddle pea purée, broad beans wild garlic tomato and mint salsa with a ravioli of braised shoulder. Both were delightful. e pork was served with a pomme mousseline, butternut squash puree and savoy cabbage. We had chosen to go with the drinks pairing service that they offer, whereby the waiter will suggest a couple of options of wines or beers to accompany your chosen meal. is was perfect because it allowed us to enjoy a fine wine per course, rather than having to choose a bottle that you hoped might suit most courses. Pre dessert was lemon posset to cleanse our pallet in readiness for the main desserts. Here, the pineapple dish was

chosen, along with the chefs cheese choice. Again, both were both delicious in flavour and beautiful in presentation. is restaurant is perfect in so many ways, the food is first class, the place has a friendly feel to it and the views are amazing. On top of that the staff are enthusiastic about their food and wines, and will give you as much or as little information as you wish on where it has come from and how the tastes work together. Coopers is an independent company which has stemmed from specialty coffee – driven by the vision of James Patch. As a team, striving to provide excellence and quality in both the food and the service is paramount , as well as offering that little bit of uniqueness in each of their venues. e team is passionate, creative and full of personality – and this all goes to creating a fantastic and interesting service for those wanting to try a new experience. he magical month of May has arrived and our ‘living wall’ has been planted out with aromatic herbs and foliage ready for the anticipation of the more balmy days to come. Early strawberries are blooming and the miniature tomatoes are flourishing their green shots already, lemon thyme, bergamot, string peas and beans are all growing wildly. It is also the season for the arrival of English watercress, which we are extremely lucky to source from our local Sarratt Bottom, Watercress Farm, and the last active watercress beds in the Chilterns. e watercress farm can be found on a beautiful riverside walk through the Chess Valley. is peppery green leaf is bursting with vitamins and minerals and is a great superfood. Watercress is one of the oldest known leaf vegetables and an aquatic plant related to garden cress, mustard and wasabi. It can be used raw for salads, or lightly
blanched for uses similar to spinach or as here for a delicious soup perfect for the spring season.

ServeS 4 25 g unsalted butter 100 g white onion finely chopped 1 stick celery finely chopped 1 white of leek finely chopped 1 clove of garlic finely chopped 380 gm washed watercress tough stalks removed 100 gm spinach leaves 500 ml boiling water 500 gm ice cubes 100 ml Crème fraiche to serve 1 bunch of chives chopped Sea salt and freshly ground pepper to season
MeThod Pick the watercress leaves and then poach them. Bring a pot of water to the boil and place the watercress in for approx. 1 minute. Swiftly take the watercress out of the water and immediately plunge into ice cold water. When cool squeeze

out excess water. Place a large saucepan on a gentle heat and melt the butter and gently cook the diced onion, celery, and leek and diced garlic for 2-3 minutes or until soft but not coloured. Increase the heat to high and add the watercress and a large pinch of salt cover with a lid and cook for 30 seconds. Add the spinach and cook for 1-2 minutes or until wilted. e spinach will
add round ness to the peppery flavour of the watercress. Pour on the boiling water and simmer for 2-3 minutes then remove from the heat and add the ice. is quick cooling will not only retain the vivid colour and flavour but will also maximise the vitamins and minerals. Pour half the soup into a liquidiser and blend until smooth and then pass through a fine sieve. Transfer to a clean pan and then repeat with the second half. When ready to serve add sea salt and freshly ground black pepper to taste
To serve Ladle into a soup or glass bowl and finish with a swirl of crème fraiche and a sprinkle of chives.
