adds to entertainment at Salute to the ‘40s this September The Biggin Hill Heritage Hangar has confirmed that ‘The Kent Spitfire’, TA805 ‘Spirit of Kent’, will once again provide an exhilarating air display at the Salute to the ‘40s event, on 19th and 20th September, at The Historic Dockyard Chatham. Kent is the only county to have its own Spitfire, originally part of a squadron purchased by the people of Kent in 1941.

ubject to good weather, the distinctive and emotive roar of the Spitfire’s Rolls-Royce Merlin engine will be heard on both days as the pilot performs an exhilarating air display for visitors, accompanied by music and a commentary by the Heritage Hangar’s ‘Master of Ceremonies’, Robin Brooks. Robin Brooks said “We are proud to be associated with The Historic Dockyard Chatham and have performed at the 1940s weekend for a number of years. People have come to associate this particular Spitfire, with its distinctive ‘D-Day’ stripes, with the county of Kent and, wherever it flies throughout the UK, it is known as ‘The Kent Spitfire’. Together with what was once a great naval base and now a place of history, they represent all that is great about our country.” Visitors will begin to hear the rumble of the Spitfire’s engine in the distance as they look skyward and will see the ‘Spirit of Kent’ approach The Historic Dockyard along the line of the River Medway. Before long, TA805 will be put through its paces with low level passes and steep climbs in an impressive display. Although the aircraft today flies in the livery of 234 Squadron, it is named ‘Spirit of Kent’ in memory of No. 131 (County of Kent) Fighter Squadron. Formed in 1941 this was a squadron purchased entirely by money sent in by the good people of Kent. Each aircraft had the name of a Kent town or city emblazoned on the fuselage. ‘Spirit of Kent’ was

the name of the Commanding Officer’s aircraft and it is this emblem that is seen on the Kent Spitfire today. Kent is the only county to have its own Spitfire. Alana Almond, Events Executive at The Historic Dockyard and organiser of Salute to the ‘40s said; “It is great news that the ‘Spirit of Kent’ Spitfire has been confirmed to fly over The Historic Dockyard again this year. The air display is eagerly awaited by visitors to Salute to the ‘40s and is a welcome nostalgic addition each year to the event which is now recognised as one of “Britain’s Best Vintage Festivals” (Daily Telegraph 2014).” Some of the best 1940s entertainers will keep visitors toes tapping and singing along, all weekend, many making welcome returns to the stages at Salute to the ‘40s. New for 2015 is The London Swing Orchestra, a ‘Big Band’ with an international reputation, which recently performed as part of the VE Day 70th Anniversary celebrations for the BBC. Military trucks, jeeps, re-enactors, encampments and anti-aircraft guns, civilian vehicles and re-enactors depict life on the home front, a vintage fair and parade of vintage fashion, plus a wartime fire station add to the authentic feel of the event. A British Family Fayre is also new for this year with music, food and traders all with a British theme, creating a street party atmosphere, and there will even be visits by the ‘Royal Family’ and the ‘PM’ Winston Churchill! Conan Doyle Month at

Groombridge Place

Groombridge Place near Royal Tunbridge Wells will be celebrating its connections with the famous writer and creator of Sherlock Holmes Sir Arthur Conan Doyle. A special programme of fascinating tours, talks and performances will take place throughout September.

C

onan Doyle was a Crowborough resident and was friends with the owners of Groombridge Place during the early 1900s. He visited the house frequently as a guest and used it as inspiration for his popular full-length Holmes novel ‘The Valley of Fear’ in 1914. The house is meticulously and beautifully described by Doyle- who sets a brutal murder here in the first part of the story. Conan Doyle was interested in the supernatural, and often came to Groombridge Place to take part in séances with the owners Louisa and Eliza Saint. He claims to have met a ghost here, and was the first person to describe our resident ghost ‘The Ostler’. In 1995 Conan-Doyle’s love of Groombridge Place was commemorated by a small Museum room on site. His daughter Dame Jean Conan Doyle officially opened the building, and spoke of how her father felt that Groombridge Place was ‘the very essence of England’. The Museum has recently been re-dedicated The Conan Doyle Theatre and it is currently being considered by The Guinness Book of Records as the smallest working theatre in the country.

ANSWERS A2: The GPO Tower which, in 1968, dominated the Westmoreland Road/ High street development known then as Windy City and currently undergoing yet another major facelift. A3: Severndroog Castle, a 60-feet red brick Grade II listed Gothic gem, at Shooters Hill, near Greenwich saved from private development by a powerful preservation trust and financial help from English Heritage. Built in 1784 by a grieving widow as a memorial to the derringdo of her seafaring husband it was after selection in the BBC Restoration programme in 2004 that restoration started in 2011 on what is now a thriving tourist attraction. A4: A mixture of Victorian and modern stained glass windows at St George’s, Beckenham, results from July 1944, when two flying bombs fell within 200 metres of the building, destroying 111 of the 132 panels and severely damaging 14 others; only seven remained intact. Thomas Freeth, a local art teacher who died in 1994, drew up the designs for all the modern windows leaving some for those still ‘unstained.’ A5: The mill on the hill just pass Keston village on the way to Westerham Road and Leaves Green whose massive oak centre post, dated 1716, was so finely balanced it could be turned into the wind by one man using the tail pole. Despite being restored in 1914, it was later decided not to renew the sails as the weight would be too great. The mill now stands in private property.

A6: In October 28, 1961, the famous Westerham Line steam loco made its final journey from Westerham to Dunton Green, axed by Dr Beeching’s brutal cost cutting exercise in the 1960s. The line, originally built by Westerham Valley Railway Company at a cost of around £50,000 was operated by the South Eastern Railway from its triumphal start on July 6th, 1881. But with no double track, combined with high fares and the frenzy for road building, the line quickly fell prey to Kent County Council’s road schemes. A7: The pond forms a natural roundabout in the centre of Otford village and is unusual in that it in January 1975 it became a Grade 2 listed structure. A8: A red plaque at The Three Tuns in Beckenham High Street – later the Rat & Parrot and now Zizzi’s restaurant– bears witness that it was here that David Bowie, born David Jones, formed the now famous Beckenham Arts Lab in 1969. Though born in Brixton, David lived with his parents in Plaistow Grove, Bromley, from 1957 until 1969 when he moved to Foxgrove Road, Beckenham. Later that year he moved to Haddon Hall, an Edwardian Gothic mansion in Southend Road, Beckenham, where he lived until 1973. A9: Would you Adam and Eve it? Long before The George Inn became a familiar sight in Hayes Street, Hayes, this was once its name. Before that it was the Gunn. It was also on the opposite side of the road. Nor was it named The George until William Pitt, the Older, seeking to extend his Hayes Place estate had the pub pulled down in 1759 and the name transferred to what was the Queen’s Head, formerly the Sign of The Rose. A10: Bat & Trap facing extinction at the start of the 20th century it is now proving

A11: Chevening, also known as Chevening House, is the official home of Foreign Secretaries, though William Haig shared it with Nick Clegg, as Deputy Prime Minister, during the coalition. Today’s red brick mansion is almost entirely the creation of the Stanhopes. It has been suggested that Chevening and its former parsonage are the setting for Rosings Park, home of Lady Catherine de Bourgh, and the Hunsford rectory in Jane Austen’s Pride and Prejudice, Her cousin, John Austen, was the rector at Chevening from 1813. A12: Media coverage and a public petition will hopefully save St George’s Royal Air Force Chapel of Remembrance located on what was RAF Biggin Hill airfield, forever linked with the Battle of Britain. The Chapel, a memorial to all the aircrew, who died flying from Biggin Hill contains 17 stained glass windows, commemorating squadrons, aircrew and ground crew. Sadly a 75th anniversary Battle of Britain service on September 13 may be the last . By March, 2016, the Royal Air Force/Ministry of Defence could be withdrawing all support from the Chapel. A13: Riverhill Himalayan Gardens, near Sevenoaks, not only has links with Darwin and the great plant hunters but features sculptures by some of the country’s leading artists set against the varied natural backdrops abundant in the area.

Living with anxiety? Whilst the fast-paced 21st century lifestyle undoubtedly brings benefits to many, it is not without its costs - in the UK it is estimated that 1 in 6 people will experience a neurotic disorder such as anxiety or depression each year. Chislehurst Life contacted Dr Cath Jenson, a GP from Doctors at Petts Wood who has a particular interest in mental health treatment, to find out more.

TIPS FOR...

PREPARATION AND PAINTING

Prep for painting typically means filling, sanding, cleaning off and perhaps even repeating the process until the surface is as perfect as you can get it. With bare wood or plaster, it’s often easier to see what needs to be filled after applying a coat of paint, so it’s not always possible to do all the prep in one go. Quick-drying fine fillers, such as the Polycell Advanced Polyfilla, are invaluable for filling walls and ceilings halfway through the job because as long as the repair isn’t deep, they dry in no time and require little to no sanding. Wood fillers dry quickly anyway, but usually have to be sanded.

Another important aspect of prep is priming. Applying a primer or primer/ undercoat ensures your topcoat has more chance of adhering to the surface and lasting long term. Shiny surfaces, for example, usually have to be sanded, cleaned off and then primed with a suitable primer to make the surface matt so the topcoat will adhere. Dulux Primer for Difficult Surfaces is a versatile option because it is quick drying and can be used to prime MDF, tiles, melamine and UPVC. These aren’t the easiest surfaces to paint and keep looking good, but if you use the right products and do the right prep, you shouldn’t have a problem.

. Sometimes you need to make a surface less porous or absorbent first. New plaster is really absorbent and sucks up water, so a popular way to seal it is with watered-down emulsion - it must be sealed before painting, wallpapering or tiling etc. Priming can also seal surfaces - before you paint knotty wood for the first time, it’s vital to seal the whorls because the resin in them can bleed through the paint and spoil the finish. Use knotting solution to do this or try Ronseal Knot Block Wood Primer & Undercoat, which seals in the resin and primes and undercoats the wood in one easy-to-use, quick-drying white paint.

Although time-consuming, sometimes the best way to get a good finish is to lightly sand and clean off between coats of paint, especially with wood and MDF - MDF can be ‘furry’ so light sanding is often a good idea. A handy way to seal and prepare MDF is with Crown MDF Primer, which provides better adhesion for the topcoat and dries really fast - do a couple of coats to cover well. As well as specialist primers, specialist topcoats can solve decorating problems too. If you have a dark room, you may think you can’t do much about it, but you can. For the walls and ceiling, brighten things up with a product like Dulux Light + Space Matt emulsion. It is specially formulated to bounce light around the room with light-reflective particles that reflect up to twice as much light as Dulux’s standard emulsions. White is the obvious choice for brightening up a space and making it feel lighter and bigger, but good white emulsions are hard to find, as many produce a patchy finish or don’t cover well. The Dulux Light + Space range also includes pastel colours, including Nordic Spa, a pretty pale green that’s ideal for summer, that dries very quickly and goes a long way.

ISTANA INTERIOR DESIGN Transforming ordinary places into extraordinary spaces

I

have been busy designing a loft conversion, a master bedroom and some children’s rooms. With so many options and choices it can sometimes be difficult to decide which avenues to take - especially when you are doing more than one room - you need to make sure the flow works and colours don’t jar as you move through the rooms. The loft conversion (excerts from the client book are pictured) had a slight coastal theme in that the colour palette was aqua and sandy tones. The client wanted a very simple scheme with a bit of colour and a bit of pattern.

The starting point was a french style bed which the client already owned. I used Joa’s White paint by Farrow and Ball as a back-drop creating some impact when you walk into the room with the remainng walls painted in Slipper Satin, again by Farrow & Ball. I kept with the french theme with pretty bedside tables and added further interest and texture through the fabulous geodesic table lamps. To ground the scheme I used a gorgeous teal velvet on a contemprary chair, with a lovely natural tree stump as a side table, both sit neatly under the dormer window. Finally at the end of the bed I chose an ottoman in a neutral but textured fabric with contrasting trim and float buttons. This is a great piece of furniture for storing bedding and towels for guest bedrooms.

A little pattern was added on the roman blinds (not shown) again adding interest and depth to this relaxed and restful bedroom. AUSTRIA According to Austrian folklore, the soul of Emperor Charlemagne lays resting beneath the Tyrolean Wilder Kaiser mountain range. The legend states that when the Hohen Grutten stream ceases to run, the mighty power will awaken to fight a great battle and vanquish his enemies.

ith warm sunbeams on my shoulders, a glass of Prosecco in one hand and a wriggly eightmonth-old baby in the other, I attempt to trace the outline of the Kaiserkopf (Emperor’s head), etched into the majestic Austrian Alps ahead of me. I notice the mountain stream is still in full flow, and with not even a hint of conflict in the air, it’s safe to say Emperor Charlemagne is still sound asleep. Thousands of fir trees carpet the mountainsides, where butterflies dart between wild flowers and the climate flits from cool mountain breeze to comfortable warmth, easing muscles tired from baby lifting and carrying. Run by husband and wife duo Gunter and Bianca Lampert, the Kaiserhof wellness hotel is a picturesque hideaway that appears to tick along at a similarly gentle pace. With an indoor pool, natural spring, spa and five restaurants, it’s already charmed me.

Since having a baby, the pleasures of peace and pampering have become distant memories from a former life. But for a few days, I’m hoping to reclaim some preparenthood rest and relaxation. With Daddy on babysitting duty and my daughter only a press of a hotel-room-to-wellness-spa-intercom away, I seize some mummy time. I start my days with poolside yoga stretches and water exercise classes, and even manage to sneak off for a few hours to relax on an a sun lounger with a good book, while gazing out to the snow-capped mountains. Although my baby, Maya, is too small for the hotel’s kids club, there are plenty of options and accommodations for little ones. My daughter is particularly noisy, with a habit of letting out insistent pterodactyl shriek during mealtimes, which makes eating out fairly unappealing. But, at our request, the hotel easily seat us a safe distance from other diners, and one evening, we even have a meal delivered to our room and set up on our private balcony. Kaiserhof ’s food is impeccable, so you don’t want to risk missing out on meals. Buffet breakfasts are extensive with multiple courses and glasses of fizz, and in the afternoon, a swell of cakes and pastries also appears.

Dinner is a fittingly regal six-course affair, although at times it’s a little too overwhelming for a tired child who can only stay put in a high chair for 25 minutes. But even though our meals are rushed, our daughter does calm down in the bar, where live music seems to quell her temper. During the day, there’s a cosy playroom where activities take place, and an outside playground area with trampoline and swings. But it’s the setting that really makes Kaiserhof a winner for children. Austrians are a wholesome outdoorsy sort and have made great efforts to set up family friendly attractions in the area. Not everyone will wish to soak up sun and risk sand where sand shouldn’t go, be it in Cornwall or elsewhere. There are those who will prefer to appreciate a quiet meander through one or other of this country’s excellent gardens, and heaven knows, there are a fair few. Become a student of design or garden history and there will soon be evidence of great names to pursue. Landscape is one thing, with its architects a Brown or a Kent, however, less daunting areas have been tamed and brought into equivalent historical significance by, say, a Sackville West or a Lloyd. Here we are concerned with another paragon, and Gertrude Jekyll ranks high in the list. In our selection of this volume, we applaud her talent and vast number of commissions. Any suggestion that you might wish to spend your holiday harvesting saffron - the very expensive middle components of a specific variety of crocus that colours and flavours some cuisine - might, understandably, be greeted with more than an eyebrow raising. Having undergone a major refurbishment at the end of last year, Zagatos offers a relaxed, fresh and comfortable environment to enjoy a meal or sharing platter and a cocktail.

Situated in an orangery style room adjacent to the hotel, RG’s offers a fine dining experience with large comfortable chairs and understated elegance.

Zegatos is like a little foodie haven set within an impressive country mansion building that has been operating as a hotel since 1880. From the staff on reception, to the waiters and waitresses in the restaurant, we were warmly welcomed and taken care of with efficiency and skill.

All waiters were extremely friendly and helpful, offering descriptions of the dishes on offer and providing welcome breaks between courses. We were also introduced to a sommelier who helped us to choose a wine that complemented both palettes and all of our dishes.

We visited on a Sunday and so there was a choice of either a Sunday roast menu, or the a la carte. After seeing the giant Yorkshire puddings we had to opt for the roast! To start, our favourite was the freshest, tastiest crab salad served in its own oil with a chilled pea and lettuce veloute and garlic foam that had us closing our eyes and “ummm’ing” with every mouthful. For main, I opted for the roast rump of lamb served in a giant Yorkshire pudding with olive and anchovy tapenade and sides of crisply cooked roasted root vegetables, broccoli, spinach and crunchy, fluffy roast potatoes with a rich thick jug of gravy on the side. For dessert, we shared a broken lemon tart with mini beetroot meringue, citrus glass tuile, lemon curd and fennel cress - the whole thing worked perfectly together to give just the right amount of sharpness, creaminess and crunch.

The menu consisted of classic steaks and chicken cooked on the grill, with four other more adventurous options. Homemade sourdough was served with goats butter (a very unusual and subtle taste). To start, our favourite was the Hand dived scallops - plump, sweet and perfectly cooked, they were served on a bed of buffalo milk curd with chard spring onion and a scallop cracker. For main, the roast duck breast cooked slightly pink had a rich, moreish flavour with sour Kent cherries, mustard jus and goats butter roast celeriac. For dessert, the honey iced parfait hit the spot with crunchy honeycomb, a kick of whiskey, and toasted oats.

There is a well stocked bar with an impressive wine list and cocktail menu. We chose a glass of Sparkling rosé from the Chapel Down vineyard in Kent to start, and a glass of dark, fruity Raimat Abadia Tempranillo to accompany the lamb.

The sommelier took us through a crowd pleasing wine list, and recommended a Pinot Noir from New Zealand to complement our dishes. Fruity, full bodied and umptious. A light dessert wine was also recommended to accompany the parfait another great match.

Summer Pasta

The sizzling weather might signal the start of holiday season for many of us, but while we slow down into relax mode, Italian cook Gennaro Contaldo is gearing up for another busy summer.

A

great friend and mentor to Jamie Oliver, Contaldo is heavily involved in Oliver’s Italian restaurant chain and has just released The Pasta Book his second cookery title this year - which is tied in with the younger chef ’s online Food Tube channel. It’s hard work, but work he clearly loves it. “A chef will always be a chef, it doesn’t matter what kind of weather it is,” reasons the 66-year-old, who splits his time between London and Norfolk, with his wife Liz and their 11-yearold twin daughters. “It’s nice to have a rest in the summer, but summer is also a nice time in the restaurant. The market stalls are full of incredible fresh vegetables, fish, herbs... People walk around with a big smile on their faces. It makes you happy.” Contaldo - who tries to bat away being called a chef, preferring to refer to himself as a cook (“You can call me a chef when I am 100 years old. It is a chance for me to live longer”) - was born on t he Amalfi Coast and has been whipping up meals since he was nine-years-old, having been bitten by the foodie bug when he

started helping out in his father’s friend Alfonso’s restaurant. Frequently swapping recipes and tips with Oliver and his other great pal Antonio Carluccio, who he travelled around Italy with to film 2011 cookery series Two Greedy Italians, Contaldo’s daughters have also felt the benefit of his wisdom, and learned to cook at a “very, very, very young age”. “At the age of seven, they could make their own risotto,” he reveals proudly. “They can go into a restaurant and choose whatever they like. They do that. I’m a cook you see, it’s a part of the culture. You never know where they might be [later on in life], it’s nice to know they will be able to make something to eat.” Even though their father will be within arm’s reach of the kitchen this summer, the family will make plenty of trips to Norfolk, to relax in their 200-year-old cottage and enjoy the nearby seaside. “I was born near the sea,” Contaldo says. “The first thing I heard was the sea. “The sea was my swimming pool and the beach was my playground. I do miss the sea.

When I first came to England, the nearest place to see the sea was Brighton, and I couldn’t wait to go and run my fingers through it. “It would transport me to my home town, because the sea goes to every corner, every channel, everywhere. If I touch the sea, it is a touch to my home town. The sea is peace to me.” Although the sea is no longer in daily touching distance, Contaldo seeks solace in his plate, loading up on pasta dishes with plenty of fresh fish. And rather than being stodgy and heavy, he insists that pasta is the perfect meal for summer. “Summer pasta is good, everything is fresh and in season,” he says. “Use your imagination and think, ‘I’ve got this nice ingredient, it will go well with the pasta and make a lovely marriage’. Just don’t experiment too much. “You can give it a go and say, ‘You know what? Gennaro said it was good and he was right!’” If you want to put Contaldo’s boast to the test, here are three summer pasta recipes from The Pasta Book.


PARMA HAM & RED PEPPER WITH TAGLIERINI For the base: n 1 /2 a red or white onion, peeled Serves n 1 red pepper, deseeded 2 n 90g higher-welfare slices of Parma ham n 1 /4 of a fresh red chilli n 1 large firm tomato n 1/2 a bunch of fresh flat-leaf parsley, leaves picked n 200g taglierini pasta n S ea salt and freshly ground black pepper n Extra virgin olive oil n Zest and juice from 1/2 an unwaxed lemon n P armesan cheese, for grating Start by preparing your ingredients. Very finely slice the onion, pepper and half the Parma ham. Finely slice the chilli. Quarter the tomato, cut out the seeds and finely dice the flesh. Finely chop the parsley leaves. Put the finely sliced Parma ham into a large dry frying pan over a high heat and cook for five minutes, or until crispy. Transfer to a double layer of kitchen paper to drain. Cook the taglierini in a large pan of boiling salted water until al dente. Meanwhile, return the frying pan to a medium-high heat with three tablespoons of oil. Add the onion, pepper and chilli and cook for a minute or so. Roughly slice the remaining Parma ham and add to the pan, stir in most of the parsley leaves and season lightly with salt and pepper. Reserving some of the cooking water, drain the taglierini and add to the sauce. Add the lemon juice, diced tomato and a good grating of Parmesan. Toss well over the heat until lovely and glossy, adding a splash of the cooking water to loosen, if needed. Divide between your plates, sprinkle over the crispy Parma ham and add an extra grating of Parmesan. Finish by sprinkling over the lemon zest and the rest of the chopped parsley.

SI MP LE TU NA BU CA TI Ingredients: n 200g bucatini pasta n Sea salt n 1 large clove of garlic, peeled n 1 fresh red chilli n 2 anchovy fillets n 4 ripe cherry tomatoes n Extra virgin olive oil n 1 x 180g tin of quality tuna, in olive oil n 1tbsp baby capers, rinsed n Juice from 1/2 a lemon n 100g wild rocket, washed

Cook the bucatini in a large pan of boiling salted water until al dente. Meanwhile, finely slice the garlic and chilli, then roughly chop the anchovies and tomatoes. Heat three tablespoons of oil (use the oil from the tin of tuna for added flavour, if you can) in a frying pan over a medium heat, then add the garlic, chilli, anchovies and capers. Fry for two minutes, then add the tomatoes and toss well. Reserving some of the cooking water, drain the bucatini and add to the sauce. Toss well over the heat until lovely and glossy, adding a splash of the cooking water to loosen, if needed. Flake in the tuna, then add some lemon juice and most of the rocket. Toss well to warm the tuna through and wilt the rocket, then season carefully with salt and more lemon juice. Serve with a drizzle of oil, and a scattering of the reserved rocket.

Ingredients: n 2 peppers, mixed colours if possible n 200g orecchiette pasta n Sea salt Serves n 1 firm tomato 2 n 12 black or green olives, stone in n 2 sticks of celery, trimmed n 1/2 a bunch of fresh flat-leaf parsley, leaves picked n 4 sprigs of fresh basil, leaves picked n Extra virgin olive oil n Juice from 1 lemon Place the whole peppers on a griddle pan over a high heat (or under the grill) for about 20 minutes, or until blackened all over. Remove to a bowl, cover with cling film and cool.

With lots of basil packed in, this pesto is a good option for livening up everyday dishes.

Morrisons Green Pesto, 89p for 190g (Morrisons) Thanks to the generous amount of oil in the jar, this purse-friendly sauce spreads easily on sandwiches and is especially nice on crusty bread with mozzarella and tomatoes.

Meanwhile, cook the orecchiette in a large pan of boiling salted water until al dente, then drain and refresh under cold water to stop it over-cooking. Scrape the blackened skin away from the cooled peppers, then deseed and chop the flesh into 1cm chunks. Quarter the tomato, cut out the seeds and dice the flesh. Crush the olives with the palm of your hand, pull out and discard the stones, then tear in half. Finely slice the celery, then put it all into a large bowl. Roughly chop and add the parsley leaves and most of the basil leaves. Add the orecchiette to the bowl with four tablespoons of oil and half the lemon juice. Toss well with your hands, then season to taste with salt and a squeeze more lemon juice, if needed. Serve with a drizzle of oil and a scattering of the reserved basil leaves.
