Dorset’s largest indoor shopping centre, which includes national retailers such M&S, BHS, Primark and Beale as well as a host of independent specialists, has invested in a new collection of Christmas decorations which will grace the centre from Tuesday November 13. As well as the new decorations, Dolphin shopping centre has a jam-packed calendar of festive events right up until Christmas Eve, with carol performances from the RNIB Choir, Salvation Army, Westfield School and Bournemouth District Concert Band. e much loved Dolphin shopping centre and Poole Town Centre Partnership Santa Parade will be taking to Poole’s high street on Sunday November 18 from 10am. Lighthouse, Poole’s Centre for the Arts present emerging contemporary storytelling theatre company Valise Noire on November 17th, a brand new collaboration by the venue’s Resident Visual Artist Hazel Evans and Resident Storyteller Michele O’Brien, who together will be performing two contrasting shoe-themed shows in one day. Crying for Poole

I

n 1958, plenty was happening in the world. Rex Harrison and Julie Andrews were embarking upon the first run of My Fair Lady at the Drury Lane theatre, Gatwick Airport was opening, Wolverhampton Wanderers were winning the Football League title and the late Michael Jackson was born. Openings, successes and births – all the kind of things that would these days be covered by newspapers. But in days of old the Town Crier of the area would announce such events to the world. In 1958 David Squire took over this role for Poole, one that he has now held for 54 years with no sign of slowing down. David was born in 1942 in West Street, Poole. His mother Violet was deputy headmistress at the now demolished Hamworthy Middle School. A local character, neighbour and owner of Valentine’s antiques in Poole, Jack Valentine, was responsible for David’s arrival into the town crying scene. He was on the search for someone to assist in the Beating of the Sea Bounds, itself a tradition that dates back to 1612. e Society of Poole Men provide the jury men to perform the perimeter check of Poole’s sea area, awarded to Poole by the Winchelsea Certificate of 1364. In David’s own words, a town crier needs ‘a strong pair of lungs, a good sense of humour and a liking for trailing around in a fancy uniform that is too hot in summer and too cold in winter.’ Jack saw this potential and put David forward for the Sea Bounds ceremony that day as the intended crier for the event was unwell. e rest as they say is history. David carried out his duties for over 25 years until 1974 when he faced a challenge for his role. ‘It was in this year that the council decided I should be held in an official capacity with a salary of a whole pound per year, something I have yet to claim! It is believed that this is the same remuneration package as that assigned to the ale-taster and rat catcher!’ Around that time David appealed for a new bell to use when carrying out his duties. e council delved into the depths of their offices and found him a bell of over a century old, the one he continues to use today. One memorable day, in fact the day of the bell’s first public outing, saw it claim an unfortunate victim. At a barmen and barmaid race for a charity fair, competitors were due to run on the strike of the third bell, but as David recalls ‘One contestant heard one clang of the bell and leapt forward just as the bell swung again. e bell beat him by a knockout and he was removed for treatment. I believe he collected 17 stitches at Poole Hospital! Happily, no such incidents have occurred in the subsequent 25 years.’ Experiencing a career that has taken him into activities as diverse as wedding cars, taxi driving, electrical buying and concert organising, David has long since retired from full time employment, And despite the highs and lows of his professional career, the highlight of which was delivering a wedding cake to Buckingham Palace for the wedding of Prince Charles and Lady Diana Spencer, town crying has been a constant in his life. e role of a Town Crier in the UK is said to date back to Norman times, but historians suggest that the tradition actually started in ancient Greece as proclamations of war or peace were announced. Town criers of years gone by have often had less pleasant news to deliver, including plague information and the details of hangings due to take place. It is also believed that in 1651 the town crier of Lyme Regis was tasked with publicising

David Squire the reward on offer for the capture of King Charles. ese days, the practical need for town criers may be gone but the penchant for tradition means they remain a highly occupied group. Proudly representing his town countrywide, David has two highlights from his town crying events thus far. ‘After victory in the National Town Crier Championship of 1992 held in Hastings, I was able to go forward and represent both Poole and England in Markham, Canada in 1993.’ at year also provided him with the National Best dressed award and countless further best dressed titles followed. ‘I also immensely enjoyed representing Poole at the introduction of the Lieutenant Governor of Jersey at the 2003 Battle of Flowers’ As he nears his 70th birthday, David chooses not to compete in the championships these days. After gaining more than sixty accolades at such events, he now prefers to concentrate on his civic duties, of which there are many. Mayoral functions often require his services, and he can frequently be seen in the summer leading carnival processions, with a hearty cry of ‘is everybody happy?’ to which the reply is nearly always yes. It is this interaction with the public that gives David the most pleasure from his role. ‘You have to possess the ability to get along with people. You are after all a showman – when the uniform is on, you are on public view at all times.’ at is not to say that his presence is totally absent from the contests. He has passed on his wisdom to the next generation, with Iain Mitchell, recently appointed West Moors Town Crier, already following in his footsteps with best dressed awards as he ventures down the same traditional path. So after more than 53 years of proud representation, are there any plans of retirement on the horizon? ‘Hopefully in 2018 I shall be 75 with 60 years service for Poole under my belt and will look to be in the record books for the longest serving crier for any one town.’ Doubtless the town of Poole will be giving him a hearty cry of their own if he succeeds n

He has proved a hugely engaging host of the hit Radio 4 and BBC4 comedy show, I’ve Never Seen Star Wars. He has written an absorbing book, God Collar, a coruscating look at modern faith. And he has been a fixture on such terrific Radio 4 comedies as I'm Sorry I Haven't A Clue, e Now Show and Just A Minute. In addition, he has written and starred in three series and four specials of his widely loved Radio 4 series, Giles Wemmbley-Hogg Goes Off. Meanwhile, the Daily Telegraph raves that, "Rare is the stand-up show that makes you laugh, think and then fight back tears. is is it." When we chat in the run-up to the tour, Marcus finds it hard to contain his excitement about hitting the road once again. A stand-up who is effortlessly funny in any setting, he begins by extolling the virtues of live comedy. "What I love is that it is such a straight deal: the audience show up and I have to make them laugh. I adore the simplicity of that contract. "I choose to talk about things I'm passionate about. But I don't mind if people laugh at my naivete and utopian ideas or my objections to the way things have been done – just as long as they laugh!" Marcus, who has a very loyal following, continues that the other aspect that draws him to stand-up is the fact that, "It's such a great adventure. I love going to a different town every night. Wherever I am, I have a good look around. I do my research, read the local papers and talk to the audience about what it's like there. at makes every night different and exciting." What subjects will Marcus be covering in "e Brig Society", then? First up is our current government. "I haven't done a stand-up tour since the coalition came to power, and I can't wait to talk about that," says the comedian, who has always been passionately engaged in politics. "e thrust of the show is to expose the nonsensical thinking

offered to us as 'e Big Society’. e government seem to be saying to us, 'is is a bit difficult – why don't you do it?' 'No, you do it because we pay you to do it!’” So, Marcus adds, "e show is saying, 'If they want us to do it, why don't we?' I divide the audience up into different departments and put someone in charge of education, the banks, the libraries and transport. We appoint Brig Society ministers. It's a good way for me to talk about what we might do better and how we might make a difference.” A comic with a lifelong fascination with politics, Marcus says that in the show he will also be addressing the issue that, "is government is made up of incredibly wealthy, privately educated, white English middle-class men. I'm not incredibly wealthy, but I went to boarding school at the age of seven. So I know these people, and I know why they can't empathise with real people, because I can't either! ere is a confessional element to this show. "ey're not intrinsically bad people. I don't think David Cameron and George Osborne wake up every morning and think, ‘How can we screw the British people?' But when you have millions of pounds of personal wealth, it takes a massive leap of imagination to picture what it's like to be wondering how you can afford the next meal or the next pair of school shoes. So I'll be exploring how difficult empathy can be for politicians." Alongside these tremendous sections, Marcus will also be discussing the subject of British awkwardness. Always bursting with superb comic ideas, he reveals that, "I will be trying to help people overcome their natural British reserve. Wherever you go in this country, people always hate the inhabitants of the next town. One of the aims of ‘e Brig Society’ is to bring together disparate communities and make them forgive each other for past transgressions." One of the elements that makes Marcus such an outstanding stand-up is his insatiable curiosity about the world. He observes that, "As a comedian you have to talk about what you're passionate about, and what I'm passionate about his social politics. at is what connects us all. How do we get around? Do we talk to our neighbours? And are we ready for the Chinese? "Social politics has always been my thing. I'm sure that's connected to the fact that I went to boarding school at seven and was in rehab by 17. During that time, I met some very interesting people who have inevitably left me very curious about how the puzzle fits together. I've met people from very diverse areas and that has given me massive curiosity about things. Why and how does that work?" Marcus carries on that, "I'm very childish, but that's a useful quality for a comedian. When I was on that programme, I put magic in Room 101. When I watch magic, I don't think, 'Isn't that enchanting?' I think, 'How did you do that? Where's the card?' at's what my brain is like, and I hope that ‘where's the card?' attitude is very good for comedy. Don't accept everything they tell you at face value." So how does Marcus see the future panning out? He smiles that, "I have been very blessed that I have never had a career plan. I have simply tumbled from experience to experience, and I'm incredibly grateful for that. I hope to God that this ride never ends, because Christ knows what I would do then. I would have to become a magician!" Finally, for all his excellent, thought-provoking ideas, Marcus would like to point out that he is first and foremost a comedian, not a politician. "I think of myself as enlightened, but fortunately I'm just a comedian. I don't run the government – which is a mercy for everyone." But, he concludes with one last laugh, "If I ever run out of jokes, I'm going into politics. at's a major threat! MEMORIES OF SANDBANKS

Chain Ferry and Shell Bay

“W

e lived in Bournemouth in the 1930s and the chain ferry was the way we departed from the conurbation to explore the wonders of Dorset’s dramatic coastline, our Jurassic playground. We had no car and so to reach the delectable sands of Shell Bay, we had to catch a bus to Sandbanks and then travel as foot passengers on the ferry across the narrow entrance to Poole Harbour reputed to be one of the largest natural harbours in the world. e ferry was and still is run on a chain even though the old ferry has been superseded by new improved models and it is probably the only sensible way of crossing this narrow opening in view of the strong coastal currents; even this method of transport although tied to the strongest of cables is carried somewhat sideways by the tides. We marvelled at the thickness of the metal chain and wanted to take a closer look, but Father warned us to stand very clear of it, because the cable had considerable movement and was capable of maiming one for life.

So the excitement of the day out began before we reached our destination and once aboard the ferry, we rushed up to the top deck to see the vast panorama of the harbour and to view our destination: the widest expanses of sand that we had ever seen with only a scattering of people; hoorah! Before we reached the other side in a matter of about 15 minutes, Father insisted on our going below to look at the engine turning the cog wheel which grasped the enormous chain. Once landed, we hustled to the sea side of the peninsula where there was a large ramshackle hut which served light refreshments and then ploughed our way through the softest of sand which was never disturbed by the tide; this was hard work and it seemed an eternity before we had reached a mini-headland and were able to walk over firm sand at the water’s edge in Studland Bay. Father jollied us along this arduous part of the walk by telling us that the sands would sing to us if we swished our feet along and sure enough they did, but I was a wee bit disappointed because I was anticipating a jolly tune and discovered that what we heard was only one note

regardless of the way we moved our feet. However, it was good fun finding out how much noise my two sisters and I could create if we shuffled in unison. Rounding the curve we discovered innumerable shells as one might expect from its geographical name, ‘Shell Bay’; we were especially delighted by one particular shell which was about the size of a thumb nail with extensions and which had a convenient small hole one end from which its inmate must have escaped when it outgrew its shell. Both sides of this beautiful find were pearl-like and, when we arrived home, we were able to extend the enjoyment of our wonderful day out by threading together some of these attractive finds to make excellent necklaces. Another shell which we collected was the topshell if some of its pinkish outer covering had been rubbed off revealing the pearl-like nacre; fan shells also attracted us because of their fine symmetrical shapes but razor shells and mussels in abundance we largely ignored. Occasionally, one of us would discover a cowrie shell and then there were huge whoops delight. After lunch we were left to do some exploring of our picnic spot. e wide beach was everywhere backed by great sand dunes covered with marram grass which holds the drifting sand in place largely because of its long straggly roots which delve deep down to find water and nourishment. Father warned us that the blades of this grass were sharp; of course we believed him but I had to try for myself, because, not having any experience of pampas grass, I could not conceive of grass having a knife like edge; a small cut on my hand proved evidence. We were therefore careful not to rush through the grass with our bare legs when we played hide and seek amongst the dunes. Typically childlike we discovered an even more exciting pastime; we collected our wax covered thick cardboard dinner plates and took them to the steepest and least vegetated dune and sitting on them cascaded down to the beach below in a flurry of sand. Needless to say these improvised toboggans did not last long and so on future trips to Shell Bay we tried to remember to take an old tin tray. A suitable time having elapsed since eating, we went for our swim; the warm water was soft and caressing to my ankles and the

waves were mere ripples because this was a beach facing east and much protected by the curve of the bay out to the promontory of Old Harry rocks. I waded out and out and yet out again and still the water did not reach much above my knees so when I tried to swim my tummy got in the way! But it was great to splash about. Naturally we would have liked to explore the inviting land beyond the dunes which seemed to be full of small paths, but Father had warned us that it was the land of snakes and in particular ‘vipers’. Such a word struck terror into our hearts so we never explored beyond the dunes. On occasions though our parents would guide us through the colourful heather and gorse to view a quite expansive lake which was called the Little Sea and which was framed by just a few willows and pine trees. e fun was nearly over as the homeward trek began; we always seemed to be somewhat late to catch the ferry back so we had to follow the quickest route which was a stretch of tarmac nearly two and a half miles long, which ran in a dead straight line except for one minor bend and we children were not allowed to lag behind. Luckily cars were few and far between and there was supposedly an infrequent bus service but we never saw one until we arrived at the ferry. e heather sprinkled with clumps of gorse extended for miles either side and although most attractive in bloom did little to raise our spirits. Nearly always we just caught the ferry; otherwise we were faced with a long wait especially after six o’clock when it ran only once an hour.” e chain ferry is the shortest route connecting Bournemouth and Poole with Swanage and the Isle of Purbeck and carries vehicles and foot passengers every day, weather permitting. e idea of operating a car ferry service here was largely the brainchild of Frank Aman from Totland Bay on the Isle of Wight. With his two sons, Gerard, an engineer, and Arthur, a stockbroker, he was instrumental in starting the Bournemouth-Swanage Motor Road and Ferry Company in 1923 and maintained the family connection with the business until 1961. Stone for the slipways and the road foundations came from quarries on the Isle of Purbeck, mostly from the cliff-face quarry at Seacombe, which is between Dancing Ledge and St. Aldhelm’s Head.

Ferry No. 1 began the service on July 15th 1926. It was steam-driven and originally constructed to carry 15 cars at any one time, later modified to accommodate 18 cars. e service was popular from the start and in the first short summer season 100,000 passengers and 12,000 cars were ferried across the 400-yard harbour mouth. e service continued until the outbreak of World War II when a restricted service was introduced. After the fall of France, the ferry was taken over by the military and closed to the public for the duration. Studland Bay and the surrounding heath became a battle-training area for the troops who were to take part in the D-day landings in France. At the end of the war the ferry was in need of an extensive refit and the road too required substantial repairs to bomb and shell craters, as well as the removal of tank traps and ‘Dragons Teeth’ obstacles so it was not until 1946 that the service was resumed. For a short while a second ferry was used during the extended refits of Ferry No. 1. Ferry No. 2 was also steam-driven. It was a small ferry that had been purchased after it became redundant on the East to West Cowes service on the Isle of Wight. With space for only 8 cars and was really too small for use. During the 35 years that it was in service Ferry No. 3 proved to be very reliable. Diesel-electric powered, it carried a maximum of 28 cars. It was equipped with three Ruston diesel engines and normally operated on two of these; this meant that at least one engine acted as a spare at all times and also repairs could be carried out without making any changes to the scheduled service times. Annually the ferry carried something in the order of 650,000 vehicles of various sorts, up to the

then 10 ton weight limit, and well over 1 million people. Ferry No. 3 helped enormously to popularise the service, which, over the years, attracted a hard-core of regular users and provided a unique experience for visitors to the area, many of whom were prepared to wait in quite long queues in order to travel on the ferry. In 1961 the Raglan Property Company took over the business and in the 1980s the company was sold on to its present owners Fairacres Group Ltd. and many improvements have since been made. Both slipways have been completely rebuilt, mains electricity laid on to Shell Bay, the old wooden buildings at Shell Bay replaced with a modern office, a roundabout and new toll booths constructed at Shell Bay and a new computerised toll system introduced. Some of the latter changes were made to improve the method of toll collection prior to the introduction of the latest ferry, the fourth to operate this service but the first to actually have a name Bramble Bush Bay - after a small bay located close to the Shell Bay side of the crossing. is current diesel-hydraulic propelled ferry came into service in January 1994 and has a nominal capacity of 48 cars but can quite easily accommodate 52 without difficulty, also buses, coaches and large trucks. Despite new and improved roads on the Wareham route round Poole Harbour, this crossing remains at least as popular as ever, if not more so. een charity runner Wayne Lyle travelled from Southend in Essex to take part in the 5k route from Bournemouth Pier to Boscombe Pier and back in memory of his mother. She attended Lewis-Manning Hospice before passing away at Forest Holme in 2010. Wayne came in 1st place in the 5k event in just 19 minutes and his nephew Aaron Baker from Poole was close behind completing it in 25 minutes. Wayne said: “I take part in around 30 charity runs each year but Hospice 10k has a special place in my heart. My mother really loved her time at Lewis-Manning Hospice and it is my chance to give something back to the charity and say a big thanks to the staff and to see some of them at the event.” Wheelchair user Ben Whitney came in 1st place in 32 minutes in the 10k route from Bournemouth Pier to Southbourne and back again and Harry Lauste was the fastest 10k runner with 38 minutes. Maria Tidy, Fundraising Manager at Lewis-Manning Hospice, said: “We had a great turn out this year and we are grateful to those who pushed themselves to the limits in aid of three great local causes. We’d like to say a huge thank you to Carlton Video Productions and James Marshall Photography for capturing the event free of charge.” e funds raised at the event were split equally between the three hospices which provide free care for local people living with cancer and other life-threatening illnesses. A festive feeling AT THE DOLPHIN SHOPPING CENTRE

T

he countdown to Christmas has begun and the Dolphin Shopping Centre in Poole is this year spreading the festive cheer to shoppers. Dorset’s largest indoor shopping centre, which includes national retailers such M&S, BHS, Primark and Beale as well as a host of independent specialists, has invested in a new collection of Christmas decorations which will grace the centre from Tuesday November 13. As well as the new decorations, Dolphin shopping centre has a jam-packed calendar of festive events right up until Christmas Eve, with carol performances from the RNIB Choir, Salvation Army, Westfield School and Bournemouth District Concert Band. e much loved Dolphin shopping centre and Poole Town Centre Partnership Santa Parade will be taking to Poole’s high street on Sunday November 18 from 10am. e Parade, which will include Christmas themed entertainment for the whole family, will be treating audiences to a new addition this year with the Julia’s House Santa Shuffle, which sees ‘Santas’ racing in aid of the local children’s hospice, so if you’d like to get involved visit www.juliashouse.org e free event will be a feast for the eyes with celebrity appearances, real reindeer, fun characters, chocolate treats, characters from hit movie Madagascar, balloons, music, dancing

Entry to the grotto is £4.50 and each child will receive a special wrapped gift chosen especially by Santa himself. e Dolphin shopping centre management team is keen to make Christmas shopping as easy as possible for customers this year by offering extended shopping hours in the run up to the big day. Late night shopping will commence from Monday December 17 and lead up to Christmas with trading until 9pm. Christmas Eve hours will be 9.00am to 5.30pm and on Christmas Day the centre will be closed. ith a 1920’s theme, the renowned Beales’ Girls Night Out event featured a catwalk celebration of the latest autumn and winter styles, beauty makeovers and skincare advice opportunities, style demonstrations, bra-fitting guidance as well as free champagne and canapés. Guests were treated to a catwalk show which highlighted the latest styles including chunky knitwear, faux fur and metallics; all from top fashion brands at Beales. Brands showcased included new women’s wear brands First Avenue, Crew Clothing and Iron Fist, and men’s wear brand James Aubrey. e latest ranges in the Beales womenswear label ‘GEM’, the ‘Broadbents and Boothroyds Casualwear’ for men, both designed by fashion icon George Davies, as well as Beales own label ‘Beales Collection’ were also displayed. Also in attendance were popular 2011 X-Factor contestants, e Risk, who took to the catwalk to perform for an admiring audience and kick-off the fashion show. Aside from the latest fashions, crowds watching the show were entertained during the penultimate scene by a professional dance act who have worked with some of the world’s biggest recording stars including Kylie, Take at, Cheryl Cole, Rihanna, Mariah Carey and X-Factor contestants. For the final scene, light snow began to fall on stage as e Risk, dancers and the models walked the runaway to celebrate the forthcoming festive season. Following the show, guests flocked to the beauty department to indulge in a little pampering. ‘ Lifely’ Ghosts N

ow that the long winter evenings are approaching and with Halloween festivities in mind it is the time of the year traditionally to think about ghost stories. ere is no definitive view as to what is a ghost; generally thought of as a ‘spirit’ and often concerning a deceased living thing, our perception of what we may label as ghostly depends at any particular time upon one or more of our senses: sight, sound, smell, touch, taste and psi (6th sense). ey are often reflections of strong emotional experiences that have become imprinted on a place or object and therefore we should expect to find them at places where feelings can be strong e.g. churches, monasteries, hospitals, orphanages, workhouses, prisons or barracks. It is noticeable that local monastery sites: Christchurch Priory, Wimborne Minster, Breamore near Fordingbridge and Beaulieu Abbey are well provided with ghostly tales. Concentration of strong feelings may also arise at inns and hotels where people have said farewell to loved ones travelling to distant lands, or where the availability of alcohol has encouraged violent acts

or opportunities for sexual pleasure has been widely indulged. Sight is a major sense and not surprisingly many stories involve ‘sightings’ of some kind. Monks, sometimes accompanied by chanting, have been reported on numerous occasions at the former monasteries. Funeral processions form some stories and a phantom coffin has been seen beside the B3078 near Wimborne. e church at Boldre is supposed to be haunted by two medieval archers seen kneeling at the altar. Many reports mention ladies in long dresses - Nightingale House part of the Herbert Hospital in Westbourne where a female figure seen may be Florence Nightingale - and figures of men in old fashioned costume. Marler House in Westbourne is haunted by a tall male figure in a cloak with a tall hat. A First World War soldier smoking a cigarette was seen in a first floor corridor of Christchurch Barracks by a security guard. When challenged, the figure slowly disappeared like his cigarette smoke. A figure of a Civil War soldier in armour with his horse has been seen in a Bridge Street back garden and sounds of pilgrims going to Christchurch Priory singing

Beaulieu Abbey and chanting to pipes and drums have been heard from Town Bridge nearby. A tall mariner with grey hair and a naval coat buttoned to the neck is one of four ghosts inhabiting the Angel Inn Lymington. Early last century there were reports of several little people dressed in brown playing in and around the bushes of the Branksome Park estate. Sometimes children are heard but not seen. On the site of the Cottage Homes, a former children’s orphanage, in Christchurch children’s footsteps and the sounds of them playing could be heard upstairs in houses which were empty or outside in the early hours of the morning. Other ghostly sounds involve people whispering or sobbing. A ghost at Hamworthy whistles to call out his lover and just outside Poole Harbour near Old Harry Rocks where all onboard ship were drowned, the eerie cries of the crew and the peal of bells can be heard at night as a warning to passing sailors. ere are many reports of horses being seen or heard, footsteps and the sound of something heavy being dragged across a floor, doors being opened and closed and chains rattling. Observations involving the sense of smell are less frequent but have still been reported, particularly the smell of incense around the monastery sites. At Candlesticks 32

in Ringwood an old-fashioned fragrance of lavender or lily-of-the-valley wafts around the building when one of the ghosts is present. A house Dunford Road Parkstone was haunted by the dead grandparents of the resident family and they were aware of the smells associated with them such as beer, tobacco and violets and the sound of the grandfather’s scissors (he was a barber). e baby in his pram would apparently chuckle and stretch out to someone not visible to the others. People near to the ‘presence’ of a ghost frequently mention a sudden drop in temperature. Apart from this sensation, stories involving the sense of touch are generally an experience of something pushing past them (on the staircase leading to St Michael’s Loft in Christchurch Priory Church on more than one occasion) or that people have felt they were not alone or were being watched although no-one was there. e Crown Inn and adjoining buildings at Ringwood has such a ghost but the consensus is that it is friendly and wants to look after them. e owners of the Old Vicarage at Hinton Admiral are indebted to their helpful ghost who warned them that their cellar was flooding by suddenly opening the cellar door with a loud crash. e White Hart in Ringwood has a ghost obsessed with tidiness and put tools away in

boxes when workmen are not looking. Violet Stuart Wortley of Highcliffe Castle believed it to be full of ghosts and wrote as such in her letters but did not seem at all perturbed by them, although her maidservants were frightened. Some ghosts have even been given a name by their hosts. Jenkins, who is seen in full evening dress standing on a flight of stairs, is one of the many reported sightings in Poole High Street. Not all ghosts appear to be friendly though. In 1927 at Bottlebrush Down on B3081 road an archaeologist saw a Bronze Age horseman 50 yards from the road. ey both looked at each other and the horseman travelled parallel with the car brandishing a weapon until he vanished with his horse into a round barrow. Others have been similarly followed and frightened by this ancient ghost. People camping near Rockbourne Roman Villa have reported intense feelings of fear and an evil atmosphere, like a mist, hanging over them at night. Sometimes the ghosts appear mischievous: Annie haunts a property in Mill Lane in Wimborne where she moves furniture and other objects, breaks plates and turns on and off electrical items. Kinson Church condiments off the pub tables. One of the ghosts who inhabits Candlesticks restaurant in Ringwood regularly turned round the ornaments on the window sills overnight. Jolliffe House in Poole Old Town has a ghost who teases the cleaners by leaving handprints in places they have just polished and the King Charles Inn, one of Poole’s many haunted pubs, has a ghost which hides things. One of the items which went missing was a wedding dress. Inns certainly feature widely at locations where ghosts are reported. ese stories may be made up to entertain and to give local colour to a pub; they may have arisen due to smuggling activities, which was once the main industry of this area. Smugglers did not want witnesses or people to investigate locations where they hid their goods. Hence ghost stories could be invented to deter the curious from visiting certain places especially after dark. is may have been reinforced by tales of ferocious animals roaming the countryside at night: a large hound near Badbury Rings, a similar animal in Talbot Woods and another around Beaulieu Abbey and there have been sightings of a large catlike animal in West Hill Road Bournemouth, Western Avenue Branksome and on Canford Heath. An early 19th century cottage called Mount Talbot stood on what is now

Strange people reputedly haunted the cottage and weird noises were apparently heard at night. e cottage may well have been used to house contraband as it was on the smugglers’ route from Canford Cliffs to Kinson. Similar tales were heard about a bungalow at Hampreston near Ferndown, also on a smuggler’s route inland and at Pylewell Home Farm on the Lymington River. On the Ringwood Road at Bransgore a misty figure is said to emerge from the gate to St Mary’s Churchyard and cross the road diagonally to the barn at the ree Tuns Inn. At the Cat and Fiddle, Hinton Admiral and the Queen’s Head in Burley, both formerly smuggling inns, ghostly noises have been heard. Renovations of the latter uncovered an unknown cellar believed to be the hiding place of smugglers as it contained pistols, bottles and coins. e former mill and forge on Poole Quay has been found to have tunnels connecting it to St James Church which might account for the eerie sounds of opening and closing doors late at night. Similarly St Andrew’s Churchyard in Bournemouth is said to be haunted and blocked off passages in which to hide contraband have been found. As can be seen there are natural explanations for ghosts and many ‘hauntings’ involve some kind of noise

which can be a product of building settlement, the noise from winds, the temperature effects on wood, plastic and metal, even the movement of rodents or insects. Visual reports may, in some cases, be due to the effects of light and shadow. But not all ghostly effects can be easily explained away as having natural causes though. ere are still many questions left unanswered. For example: Why can some people see ghosts but others cannot? Why can they see ghosts in some places but not in others known to be haunted? How are ghosts seen by children but not by their accompanying adults? Why do some dogs react to the atmosphere in haunted places and refuse to go into certain rooms? Why are the reports of ghostly animals confined to those with a close association with humans such as horses, dogs and cats but not other animals? Why are there not more ghosts from ancient or prehistoric times?

BFX! NEW ANIMATION AND VISUAL EFFECTS FESTIVAL COMES TO BOURNEMOUTH

T

he first BFX festival will take place in Bournemouth next summer celebrating British talent and creativity in animation and visual effects. At the heart of the festival will be a competition for visual effects students from around the country and the winning students will win an internship at a leading UK film and visual effects studio. is will be combined with public screenings of the best of British visual effects, workshops on how to get involved with the industry, a conference, an exhibition and the awards ceremony itself. e festival is being organised by e International VFX Hub, a collaboration between the award-winning National Centre for Computer Animation at Bournemouth University (NCCA) and the Faculty of Media and Performance at the Arts University College Bournemouth (AUCB). e competition will be held on the Bournemouth University and AUCB campuses and will replicate a film studio with participants working in groups of up to five to produce a short

visual effects or animated sequence. Teams will be mentored and monitored by industry practitioners throughout the competition and a panel of carefully selected industry judges will have the task of picking a winning team. e remaining festival activity will take place across Bournemouth and will be open to the public. It will cement the area as a leading creative hub in the UK and raise awareness of the visual effects industry. It will also encourage young people to take up the necessary STEM subjects at school to help them get a good foundation if they want to be involved at university and beyond. EVERYONE LOVES A BADDIE AND THEY DON'T COME MUCH BIGGER THAN A BOND VILLAIN. SPANISH ACTOR JAVIER BARDEM, WHO PLAYS JAMES BOND'S BLEACH-BLOND ADVERSARY IN SKYFALL, RECENTLY RELEASED, TALKS ABOUT HIS CHARACTER'S DISTINCTIVE LOOK, TAKING DANIEL CRAIG ON AND BEHIND-THE-SCENES ACTION. BY SUSAN GRIFFIN

Looking every inch the debonair spy, in a navy suit with gold pocket handkerchief, Daniel Craig seems as proud as punch. And no wonder - he is promoting the launch of the latest Bond movie Skyfall, the 23rd instalment in the longest-running film franchise of all time which is currently celebrating its 50th anniversary. e stakes could hardly be higher as Craig dons the iconic tuxedo once again. "I love playing Bond, it's an honour and I get a big kick out of doing it," says 44-year-old Craig. It's his third outing as the legendary secret agent, following Casino Royale in 2006, which saw the actor bring a dramatic depth to the MI6 man, and Quantum Of Solace two years later. "I had an opportunity when they gave me Casino Royale to sort of wipe the slate clean, because they said we were starting again," says Craig. "Bond's a soldier, a person who tries to hide his emotions and be in control all the time, and playing around with and pushing those boundaries is interesting." As a huge fan of the franchise, Craig insists he's always wanted to bring back certain elements that the films are famous for - and what better time than in its golden anniversary year? 40

e result is an epic movie, laden with glamour in the shape of the mysterious Severine (Berenice Marlohe) and field agent Eve (Naomie Harris), a brilliant villain in the bleach-blond vision of Silva ( Javier Bardem), a sprinkle of kitsch, plus gadgets galore thanks to the welcome return of Q, played by the king of geek chic, Ben Whishaw. And of course, Bond wouldn't be Bond without a streak of droll humour, something that's been missing in Craig's two former outings. "I love Mike Myers but he really ruined it for us [in the spoof spy Austin Powers movies] because he took the best Bond gags," says Craig. "But I always maintained that if we could get really good writing then the jokes would come, and they have in this." e laughs are never to the detriment of Bond's emotional journey though, in keeping with the visions of Sam Mendes, the Oscar and Olivier-winning director who helms this gargantuan movie. "I put everything that I ever wanted to put in a Bond movie into this movie," says grey-haired Mendes, 47, looking relaxed in jeans and a jumper.

"ere were times when I thought this is no way to make a living because the pressure never seemed to let up, but it's like childbirth. You get to the end of it and think, 'Oh, that wasn't so bad'!" ere is no bigger Bond fan than Mendes as far as Craig's concerned. It was at a party in New York in 2009 when the pair, who first worked together on the gangster movie e Road To Perdition, first talked about collaborating again. "I was picking his brains about the next Bond movie because I respect him as a director and I think he has great ideas," Craig recalls. "As the conversation went on, we said the things we loved about Bond and I ended up offering him the job, which isn't my job to do," he adds, laughing. e timing couldn't have been more perfect for Mendes. "I wanted to come back to England to make a movie. I wanted to make a big-scale movie, to work with Daniel again, and I needed a challenge," he says. But unlike the film's protagonist, the road to Skyfall has been far from smooth as financial problems at the MGM studio sparked doubt as to whether Bond

move, but those who've seen it are as thrilled by that as they are with an action sequence, and that for me was the great challenge of this movie," says Mendes. Bardem, 43, who won an Oscar for his dark role in No Country For Old Men, was surprised by the relaxed environment on set. "Sometimes it felt we were doing a very low-budget independent movie," he says. "We were messing with the scenes, playing around, getting it wrong, getting it right and it was a delight and that was all Sam." It was Craig who first approached Bardem about being part of Skyfall. "I've been a fan since I was a kid but that's not the right reason to do something. "It's really about the material and whether you can bring something to a role," says Bardem, wearing slacks, a shirt and brown corduroy jacket. e blond mop he sports in the film is long gone. On reading the script, the actor found there was a lot to play with. Describing Silva as "an angel of death", he says: "In this case, there is a man suffering, a man full of pain and frustration who simply wants to fix the situation. "Silva has a very personal objective; he's not trying to destroy the world. He's a man seeking revenge and within that journey there was room to be funny or aggressive." Bardem wasn't so keen to throw himself into the stunts. "I had a glimpse of it but I'm a great believer in stunt doubles," he reveals, laughing. "I saw Daniel doing it himself and it was crazy." But as Craig puts it: "I love the fact Bond takes a lot of battering, and so he should - he's an agent." Even when that agent's middle-aged, it seems. A running theme throughout Skyfall is that Bond's getting on a bit. "Well, he is," says Craig, smiling. So it begs the question, how old is too old? "I'm contracted for another two Bond films and that seems a fair number, but I'm not going to make predictions, because people need to go and see the movie and until they do we can't make another one. "But I'm not going to outstay my welcome. Someone else can have a crack at this."

"It's possible for a man to be on a personal journey and for there to be an awful lot of action at the same time," says Mendes. "In this movie Bond's pushed to the limit, it kills him in a sense, brings him back and he's a shadow of his former self. "He has to work himself back to who he is, and even the audience don't know what stage of rehab he's reached when Silva says to him, 'Look at you, you're barely held together by your pills and drink'." And so to the mysterious Silva, who's sure to be anointed one of the franchise's most memorable villains. "Javier brings this mischief and relish to the table," says Mendes of Spanish-born Bardem. "When I shot the first scene between Javier and Daniel, I could feel the fun they were having with it and wanted to encourage more." e scene he's referencing, laden with all sorts of tension, is already proving a talking point. "It's a seven-minute dialogue scene in which two people barely

HELICOPTER FLYING TRAINING AT THRUXTON RACE CIRCUIT

H

demonstrates his or her skills to an examiner and thereafter the pilot may self-fly hire helicopters of the same type and share the experience with their family and friends. Having qualified as a Private Pilot, many individuals wish to upgrade their skills by learning to fly other helicopters. e obvious choice for most is to learn to fly the R44 which is a 4 seater version of the R22. With controls virtually identical to the R22, this can be achieved in as little as 5 hours and a test. Fundraisers get forest fit for Forest Holme Hospice

ast month, fundraisers gathered in the beautiful grounds of Moyles Court School in the New Forest to take part in a three hour boot camp challenge in aid of Forest Holme Hospice. Top instructors from Forest Fit Club put participants through their paces in the sunshine, tackling four exercise zones; ‘Sand-Hill Sprints’, ‘Ultimate Endurance’, ‘Outdoor circuits’ and ‘Ab Blast’. So far the endurance event has raised £571.50 for the Poole hospice, with donations still being received. Hannah Parsons, corporate fundraiser for Forest Holme, said: “We created the ‘Fundraise & Get Forest Fit’ event to offer a unique and inspiring way to fundraise and were delighted with the turn out. “We want to give a big thank you to the staff at Forest Fit Club, who did an amazing job at motivating each of the teams, and to all our fundraisers for showing so much enthusiasm and for continuing to smile throughout the final 15 minutes of exercise! is is a fantastic total and will go a long way to improving the care of our patients here at Forest Holme. “ MYFood generously donated Power Snacks and AECC Chiropractors were on hand to revive participants with mini treatments throughout the challenge. Ramping up the central heating at night can lead to dried-out skin and frizzy, brittle hair. Dr Idzikowski advises: "When the central heating is on and the room is hot and dry, we can toss and turn to cool down. Either use a humidifier or place a bowl of water by the radiator. is will help to make your skin and hair less arid." Sleeping on your back in a slightly raised position aids the body's natural drainage process to avoid puffy eyes and a bloated face. Even though I was blessed with thick eyebrows and a natural arch, I raged war against them with a pair of tweezers long before the fashion for bold, defined brows a

I decided to end the laborious task of colouring in every morning with the help of semi-permanent make-up. Tracie Giles uses hypoallergenic pure mineral pigments which are colour blended to suit your skin tone and hair colour. My technician matched me to a medium blonde II. e first two-hour procedure is all about tweezing, shaping and defining the brow with a pencil before using a digital cosmetic tattoo device to apply the mineral pigment. Once happy with the shape ("Eyebrows should be sisters, not twins," says Pauline), she then spent half an hour on each brow scratching in the pigment and tracing it over the pencil. e first application is without local anaesthetic and the pin pricks are painful, but repeated strokes are then swabbed to relieve the pain. Pauline tweezed and pencilled them in again with a pencil before repeating the same scratching procedure to intensify, sharpen and define. e pain threshold was the same, but much quicker as Pauline was simply building on the colour. e results are so impressive, the pin pricks quickly become a distant memory. My new brows have opened up my eyes, framed my face and I wake up bright-eyed and bushy-browed with an extra, pencil-free 10 minutes in my day ■

GIVE BIRDS A BOOST OF BERRIES TIPS ON THE BEST PLANTS TO GROW FOR BERRIES WHICH WILL NOT ONLY ADD COLOUR TO YOUR GARDEN BUT ATTRACT BIRDS AS WELL - PLUS, FIND OUT WHAT ELSE NEEDS DOING IN THE GARDEN THIS MONTH. BY HANNAH STEPHENSON

Gardeners should be continuing to refill their bird-feeders and baths during the cooler months, when the birds really need them, but it's worth looking at some berried treasures to plant in borders as well. Indeed, with some plants, such as pernettya and snowberry, the berries are the main attraction as their flowers are small and insignificant. Don't just think of red when you consider adding a shrub with berries to your garden. eir colours range from white to black and most colours in between. As they contain the reproductive part of the plant, berries are perfect for increasing your stock of plants. e birds have a habit of helping with propagation, by spreading seeds all over the garden. And there are quite a few trees which will provide them with food throughout the autumn and winter months. e rowan tree, mountain ash and whitebeam, which all belong to the genus Sorbus, carry abundant crops of berries from autumn onwards and provide some fantastic autumn leaf colour as well. e golden-berried rowan, Sorbus 'Joseph Rock', provides both colour for gardeners and food for blackbirds with its abundant berry crop. For the best of both worlds, plant a Sorbus sargentiana, which has pinnate leaves which turn brilliant red in autumn, large sticky red buds in winter and huge clusters of white flowers, followed by bright red berries for the birds. Another good garden stalwart that provides masses of fruit is the herringbone cotoneaster, with its dense tapestry of branches and small, glossy leaves also providing good nesting sites for small birds and homes to many of the insects on which they feed. It's a compact, deciduous species bearing pinkish white flowers followed by bright red berries and reaches a maximum height of around 1.5m (5ft) and is particularly suitable for training against

a sunny wall. If you prefer orange berries, go for the semi-evergreen C. simonsii, which grows a little taller and produces a new set of leaves in mid-autumn which may last until spring. Of course, no berry-rich garden should be without at least two varieties of holly, as they need a male and a female to pollinate. An abundant crop of scarlet or yellow autumn berries should appear as long as a male form of holly is planted near to every three to five female plants. Often persisting through most of the winter, the fruits provide vital cold-weather food for many types of songbird, while deciduous forms with persistent bright red fruits include 'Sparkleberry' and Ilex verticillata 'Winter Red', with its dark green, toothed foliage. Birds aren't interested in all berries, which is just as well, because if you only plant their favourites, you may have little colour left by Christmas. So plant some specimens which the birds will leave alone, such as Skimmia, Aucuba and the guelder rose (Viburnum opulus), which tend to be their least favourites. Ivy berries, which usually ripen later in the winter when food is scarce, are extremely valuable to bids, while crab apples are also appreciated in winter. When considering your food supply for the birds, remember that fruiting wall shrubs including pyracantha and flowering quince will need to be pruned after flowering each year to keep them close to the wall. You may lose a few young berries, but the rest will ripen better and the shrub will look neater if it doesn't outgrow its space. BEST OF THE BUNCH HEDGEHOG ROSE (ROSA RUGOSA) is is another stalwart for wildlife, as the red hips which appear in autumn provide much-needed food for birds. And it's a great survivor, withstanding neglect and harsh treatment and coming back year after year. Derived from the Japanese rose, it has upright, thorny stems and repeat-flowers, producing fragrant magenta or white blooms with a centre of yellow stamens, followed by large, tomato-like hips. Hedgehog roses will grow in any fertile, moist but well-drained soil in sun or partial shade. Every three to four years, cut out one or two old shoots to the ground in winter. If the shape is becoming untidy, wayward shoots can be shortened at any time. GOOD ENOUGH TO EAT... TIDYING THE ASPARAGUS BED Your tasty asparagus spears harvested from April to June may seem many moons away now, but if you want a better crop for next year, it's time to tidy up the bed and it should only take a few minutes. e asparagus ferns turn yellow as they die down and need to be cut off at ground level to make space for next year's crop. Also remove weeds from the bed as asparagus does not like competition and mulch the soil generously with well-rotted organic matter. Anyone growing asparagus will understand how much space it needs. It's a shallow-rooted perennial crop which doesn't like disturbance and occupies the ground full-time, and it takes a couple of years to settle in. But despite the fact that you can't pick much for the first three years, once established it won't often let you down. If you do get thin spears, it's generally down to weak plants that have been harvested too early, cut too heavily in previous years or not fed sufficiently n

o mark the 75th Anniversary of the historic site of the Pinewood Studios in September 2011 the massive 35ft high Elizabethan fire surround which forms the main entrance was painstakingly restored by students from the Buckinghamshire New University. is was a tricky and prestigious job and the MA. Furniture Conservation, Restoration & Decorative Arts students spent nine days restoring colour and finish to the vast 16th century solid oak structure, bought to Pinewood from Ilam Hall in Derbyshire in 1930. e university has been acknowledged as a source for talent in the various aspects of care and restoration for more than twenty years with many worthy patrons to their credit, but there is traditionally a problem exposing such skills to the commercial world. ank fully that has been addressed by a new enterprise called Bucks Conservation, the aims of which are to channel commercial conservation and restoration projects to BA (Hons) and MA Furniture Conservation, Restoration and Decorative Arts recent alumni. I know about this because I was invited to attend its official launch at Fernandez & Wells, Somerset House, London on Monday 8 October 2012. is was followed by a guided and private tour of e Courtauld Gallery, which if you haven’t visited is well worth the time as it is, as it rightfully claims to be, one of the finest small art museums in the world. So access to educated restoration of our heritage will be more readily available than ever and by no means restricted to furniture. Indeed the massive chandelier in Halton House in Buckinghamshire has just received some tender loving care from some recent alumni and wonderful it now looks indeed. To compliment the growth of interest and talent in restoration and conservation one of the most reassuring things in the last decade has

been the establishment of young artisans creating truly beautiful work in all areas of the decorative arts. At the risk of sounding as if my life revolves around going to launch parties and visiting shows – which I can assure you it does not – I was invited to the opening of PAD. Set within a vast fabric structure in Berkley Square, London, this is without question London’s leading fair for 20th Century art, design and decorative arts. Inspiring a unique spirit of collecting, PAD epitomises how modern art, photography, design, decorative and tribal arts interact to reveal astonishing combinations and create the most individual and staggering interiors. Prominent international galleries from major cities across Europe, North America and Asia come together to offer an exceptional panorama of the most coveted and iconic works available on the market today. Anyone receiving this magazine for more than twelve months may remember that I reported on this last year and was absolutely entranced by the furniture made by the Irish phenomenon Joseph Walsh. He astounded again this year with a ‘shelf ’ sculptured from a multitude of laminates to form as if made of petrified fabric blowing in the wind. is recent fair was by far the best I’ve seen with such innovations that gladden the heart, and a leading gallery in this respect is Pearl Lam Design. At PAD they were

presenting six international artists and designers from very different design scenes, one of whom, André Dubreuil, produced the most amazing fusion of ancient and modern chinoiserie. A major piece entitled Mr Big was a version of the traditional cabinet on stand but what a cabinet and what a stand! Using steel, copper, stone and enamel it’s a ferocious yet beautiful and functional work of Art. In contrast Christian Elwes of Entwistle was showing, from their tyribal inventory a stylized and most elegant ceremonial bird head club, or Poro Wa Ramaru, from the Kanak peoples of New Caledonia. Visually it stops you in your tracks, as no doubt it would if you were hit by it, but it is of such compelling sculptural form that it symbolises wealth and high rank rather than being a combat weapon. Nevertheless stunning in every sense of the word. At PAD there is lighting the intricacies of which defy understanding, décor that makes you want to go home and start again and furniture and accessories that make you smile and covet. Overall it is the imagination and the ingenuity of the young designers and artisans that make for such a great show. I especially like the way so many are taking tradition and twisting it around with new ideas, materials and techniques. Zoe Ouvrier is a name to watch if you are thinking about antiques of the

future. She creates unique pieces from carved wood as well as paintings and lace-adorned decorative screens. Using plywood that has first been painted and then intricately and painstakingly engraved, Ouvrier’s works display the motifs of plant stems and the roots, nodes, and shoots often concealed underground. e resulting artworks are a beautiful tribute to nature and expert craftsmanship. Speaking of which, names and craftsmanship that is, I have recently been reminded of one of the great names in the world of Art Nouveau bronzes, Bruno Zach. Zach was born in the town of Schitomir, Ukrainein in 1891, the year my grandfather formerly established his antiques business in Tring, and died in 1945. He studied at the Vienna Academy and subsequently worked for various foundries in Vienna producing the finest quality bronze works including western, oriental, sporting, animalier, art deco and erotic subjects, sometimes incorporating ivory carved to replicate the unclothed parts of the model. One of his most desirable figures is entitled ‘e Riding Crop’ of which there were two versions. One stands 32 inches high, of which there were more than ninety produced and the other, at just a third of that height, of which no more than six are recorded. Asked to find an example of the latter I went to the one person I know who might help, David Hickmet. David’s Gallery 85 is at that number in Portobello Road and sure enough, and as luck would have it one of his ‘finders’ – David has people all over the world sourcing his speciality – had just located the one illustrated. A perfect example with a patina that guarantees authenticity, just like a piece of my 18th century furniture. So horizons are broadened all the time and with pieces from Elizabeth I to Elizabeth II it’s been a busy month n

But equally important is making the right decor choice, says colour and design manager at Dulux Rebecca Thompson.

“Colour affects our mood and is particularly key in setting this room’s atmosphere. While soft neutrals conjure a serene, restful space, that doesn’t mean you can’t have colour which is so popular in homes currently,” she says. “Greens and blues are popular, and I’d favour a rising star in the colour palette, indigo. It’s a striking, rich statement shade inspired by dreamy, ocean landscapes hidden from everyone but deep sea divers. “It tones with warm neutrals or other soothing tones of blue or purple.” Get the look with Indigo Night from the Dulux Paint Mixing range, one litre emulsion, £14.89. The essence of country style is pared-back decoration, with the emphasis on texture and quality and natural materials. Hotel chic For contemporary hotel design invest in neutral bed linen, in crisp cotton and natural fabrics, a quality duvet, and pile up fluffy pillows, says Topping. “A plain decor scheme can be enlivened with a wall of pattern whose colours tie in with the neutral shades on the wall,” he says. “Opt, ideally, for a generous sized headboard and

streamlined furniture to add subtle but understated style. Overdress the bed, with an abundance of covers, quilts and a runner to create a lavish effect.” Minimise clutter, he advises, and enhance the room with soft lighting using sidelighters and dimmers. “This style of room should cocoon you and black-out blinds and inter-lined curtains will avoid any chinks of light from disturbing your sleep.” Boudoir buys A Zinc bedstead, from £2,999 (mattress extra), from Dreams, upholstered in a metallic weave available in lush tones of taupe, mink, silver, nickel and amethyst, also has a 26-inch TV concealed at the foot. The White Company has made this ‘hotel’ style its own with its range of classic headboards and beautiful bedroom furniture. The buttoned Richmond, from £695, is one of my favourites, as is its white lacquer finish Linden four poster bed, from £2,500. Another great choice is a Jennifer upholstered bedstead, with button edging, £1,099 for a double, from John Lewis. Bedding The Dorchester bed linen, made in Egyptian cotton, from £32 for a pillow case, and a Belmont Velvet Quilt, from £250, would make a decadent finishing touch. Both from The White Company. Stephane Jouan, Recipe page BEEF MEDALLIONS British beef is regarded as some of the best in the world and fillet of beef medallions are just delicious. The head chef at the Seaview restaurant based at The Sandbanks Hotel, Stephane Jouan, tells you how to cook fantastic beef medallions with a red wine sauce.

FILLET OF BEEF MEDALLIONS WITH RED CABBAGE MOUSSE AND RED WINE SAUCE SERVES: 2 PREPARATION: 1 HOUR COOKING TIME: 3 HOURS 45 MINUTES INGREDIENTS:

• 2400g of fillet of beef, untrimmed on the bone RED CABBAGE MOUSSE:

250g red cabbage 50g dark brown sugar 2 slices of smoked bacon 100ml white wine vinegar 1 spring of thyme 1 bay leaf 750ml chicken stock 45ml double cream 5 whole eggs

METHOD

1. Marinate the cabbage in the dark brown sugar and white wine vinegar for 30 minutes 80

2. Add all the remaining ingredients. Bring to the boil and cover. Braise for approximately two hours before cooking at 80°C for 12 minutes 3. Drain excess the liquid and remove herb stalks and bacon 4. Liquidise cabbage with double cream and add the eggs 5. Pre-heat the oven to between 165°C-175°C. Butter eight dariole moulds, placing baking paper on the bottom of each. Add mixture to moulds. Place the moulds into a roasting pan, pouring boiling water into the pan until it comes about half way up the side of the inner dishes, and put the roasting pan into the oven. Cook for 20 to 30 minutes. FOR THE RED WINE SAUCE:

• A few beef bones - Ask your butcher for just a few bones • 1 carrot, chopped • 1 onion, chopped

2 sticks of celery, chopped 1 leek, chopped 200ml red wine vinegar 1 bottle red wine 1 sprig of thyme 1 bay leaf 500ml chicken stock 500ml veal stock

METHOD

1. Pre-heat the oven to 180°C. Roast the bones and all of the vegetables in a casserole dish for 30 minutes 2. Remove from the oven and place on the hob. Add the red wine vinegar and wine and reduce by half over the heat 3. Add the chicken and veal stocks and cook in a low oven for two hours 4. Season the fillet with salt and pepper and sear in a frying pan, with a dash of vegetable oil, for seven minutes to obtain a medium steak. Rest the steak for five minutes before carving and you are ready to dress

5. Sieve the sauce and pour over the fillet of beef. Serve with the red cabbage mousse and a spoon of red currant jelly. W

hen those balmy summer evenings are nothing more than a distant memory and it’s cold and miserable outside, we often turn to the traditional comfort of good food, ‘Soul Food’, with all its connotations of warmth and richness. So, with this thought in mind, we headed out on a dark, wet and stormy autumn evening bound for the welcoming safety of the Marriott Hotel Bournemouth and the culinary refuge of its superb Highcliff Grill. With Executive Chef Mathew Budden directing the kitchen taskforce and his food ethic of sourcing local Dorset and Hampshire produce, combined with a philosophy of producing true, classic, quality dishes, expectations were running high…… …and I was ravenous! Choosing from the menu was an ‘agony of decision’. I thought I was there until my husband said he wouldn’t share his starter of seared Portland Scallops, cod cheeks, peas and smoked bacon with gem lettuce and that I would have to eat my own choice

(definite sharing issues). So it was that I selected the white crabmeat with cucumber, radish and crisp shoots. Our individual starters were delicious (although I cannot vouch for Mr Non-sharer’s) and with the initial urgency of hunger sated, I began to relax and appreciate the atmosphere of the room. It is all too easy to have preconceived ideas of what a hotel restaurant will be like; a large, impersonal, purely functional area. I can honestly say that the two dining rooms at the Highcliff Grill are none of these. Nothing is forced or pretentious, it’s all about the food and it was a pleasure to be waited on by staff that have an intimate knowledge of the menu and a genuine enthusiasm for their work. A signature dish of the Highcliff grill is their 35-day, dry aged, fillet of beef on the bone; 18 ounces of pure protein. Served with duck fat chips, roasted bone marrow, Béarnaise sauce and Dorset watercress, this is not a meal for the faint hearted. When it was brought to the table my husband’s face lit up. As steaks go, it was magnificent and served on the bone gave it that delicious

e Team sweetness that us true carnivores adore (I only have his word for this). In a nod of respect to my waistline (it was only a nod, well I kind of bobbed my head in that direction), I had the Jurassic Coast rose veal loin, rissole of shank with wild mushrooms and spring greens. I was delighted to see a reappearance of veal on a menu and this creation delivered two quite different textures and delicious subtleties of flavour. Fit to burst we were content to just drink our wine and stiff armed the offer of the dessert menu, then in a moment of weakness, foolishly made the fatal mistake of ‘just having a look’. Too good to resist we ‘plumped’(and I mean plumped) for the Dorset apple cake with blackberries for me and the dark chocolate mousse for Mr Mine-All-Mine; both were topped with honeycomb and ice cream. And it wasn’t just ice cream, mine was heavenly and made with clotted cream and the food hog’s was salted caramel. Replete and rotund we drank our coffee (with absolutely no

room for a waffer thin mint) and watched the lights of the boats twinkling out at sea. What a wonderful way to spend an evening. With hindsight we should have booked a room and stayed overnight. Next time, and there will definitely be a next time, we’ll be able to totally relax in the knowledge that we won’t have go forth into that miserable night but can stay safe, smug and contented in the warmth of the Hotel and drift off to sleep with a belly full of delicious food. www.bournemouthhighcliffmarriott.co.uk www.highcliffgrill.co.uk n

Salvatore’s Legacy Is ‘Most Expensive Cocktail’ alvatore Calabrese broke the record for the world’s most expensive cocktail in the world with his ‘Salvatore’s Legacy’ drink which was made up of ingredients more than 200 years old. Salvatore Calabrese says Salvatore’s Legacy, made using ingredients dating back to before American independence and the French Revolution, will set you back a cool £5,500 per glass.

Salvatore, whose nickname is ‘The Maestro’, made the costly concoction using 1778 Clos de Griffier Vieux Cognac, 1770 Kummel Liqueur, Dubb Orange Curacao circa 1860 and two dashes of Angostura Bitters circa 1900s. Guinness World Records confirmed the record, which beat its previous record holder, a cocktail costing £3,766.52 that is found on the menu of The Skyview Bar of Burj Al Arab Hotel, Dubai, United Arab Emirates. Salvatore said he was proud to make ‘liquid history’ after breaking the record with the cocktail he mixed in his selftitled bar, Salvatore’s at Playboy Club, in London. He said: ‘It’s official, I am proud to say that history was made as well as consumed in my bar. ‘In front of a crowd, I needed very steady hands to open the 84

vintage bottles and pour these precious ingredients into my own mixing glass, which I have had for 40 years.’ Salvatore has more than 30 years’ experience of creating drinks, developing his talent for combining flavours at an early age, whilst working in a bar in Maiori, a small village on Italy’s Amalfi Coast. In his 20’s, he moved to London, taking a position at Dukes Hotel in St James’s where he developed a niche market for special cognacs and was famed for his martini’s. He worked at other prestigious bars in London’s Mayfair before opening his own in Old Park Lane. He has become an expert on cognacs after spending many years tracking down, collecting and serving some of the world’s oldest and rarest vintages. His personal collection is worth more than £1m and is displayed in his bar at Playboy Club London. Enthusiasts travel from around the world to sample his collection that stretches back to 1770. It was ingredients from this collection that he used to make the world’s most expensive cocktail. Nothing like an exquisitely expensive cocktail to annihilate that bonus you just got. Mind you, maybe £5,500 a glass is a tad out of our price range, unless you’re a banker of course.

FIRST DRIVE: RANGE ROVER THE LATEST SET OF WHEELS ARE TAKEN FOR A SPIN. BY IAIN DOOLEY

C

ast your mind back to 2002 and the introduction of what has become a long-lived, high-tech luxury SUV to rival not just other 4x4s but also offerings from the luxury saloon market: the third-generation Range Rover. A decade later and there's a new one promising to raise the premium 4x4 to new heights. Admit it, we all know that the arrival of a new Range Rover is guaranteed to put rivals in the shade. e question is, by how much.

From a visual inspection alone the answer is 'considerable'. e car's sleek profile is striking. Unlike engineering, assessing design is a subjective activity, so here's a solid number to consider: 450. at's 450 kilograms, as in the amount of weight saved thanks to the use of lightweight materials and clever thinking from the engineers. Don't forget, such a saving has a positive affect on fuel economy, emissions and handling. At almost five metres in length it's a good thing the car's been to

Weight Watchers. It remains an imposing machine but now it's a fraction lower than its predecessor. is is small change compared to the car's generous wheelbase - 42mm greater than before - which has increased rear legroom. Anyone who thinks a Range Rover can't compete with a Mercedes S-Class really needs to take a back seat. Along with the car's plush yet modern new interior, complete with tastefully appointed materials and minimalist switchgear, the visual overhaul is complete. What you can't see is the work that's gone on under the car's lighter skin to achieve new levels of on-road refinement and stability plus considerable improvements to the off-road experience. Central to the car's performance is a height adjustable suspension system boasting enhanced amounts of wheel travel. Opt for the 'Dynamic Response' feature and the car will attempt to further minimise pitch and roll - the sworn enemies of high-sided 4x4s. It gets more interesting when venturing off-road, as the car's refreshed Terrain Response system can now detect the terrain you're driving on and adjust the throttle, suspension, transmission accordingly. With a Range Rover it's a given that its powertrain will boast the best technology, and this model is no different. e standard 50-50 torque split is accompanied by a low range transfer gearbox that can be switched even when on the move, while a locking centre

differential is there to save you when the going is particularly tricky. Rejigging the car's ventilation system has led to a considerable increase in its wading depth to a massive 900mm. Power comes from a trio of engines all connected to an eight-speed auto gearbox. First up is the 510 horsepower supercharged petrol V8 motor. With this realistically destined for oil rich nations, the six and eight-cylinder diesels make more sense. Boasting 258 and 339 horsepower respectively, these engines offer smooth yet willing performance - especially the latter. at a six-cylinder motor is even offered in such a car is proof that the weight loss programme has been successful. Of course, the V8 diesel delivers a feeling of invincibility that you can't get anywhere else. And it sure helps when you're towing. Whisper it, though, because the V6 diesel variant is no slouch.
