It’s been a good year, but a busy one, and I’m hoping to wind things down a bit in the last few months. It’s good to take a break, even though it’s not always easy. taste Dark Chocolate Brownies High expectations for a brownie, but these little fellers can do it. Trust me. We’ve done it 4 times and we’re still nuts about them. They’ve also been given a healthy make over with a couple of smart ingredient swaps. Instead of butter, we’re substituting with coconut oil. By using a combination of almond meal and wholewheat flour, the brownies taste nuttier while still retaining good structure. And what’s a brownie if not, a sweet ending? I use medjool dates and my all round favourite local brand of truly unrefined cane sugars, Natura Sugars Dark Demerara sugar. The result is a caramel-y fudge-like taste that ticks all the boxes.
• Ganache • 100g 70% dark chocolate • 60ml coconut milk • 200g berries, for topping (optional)

3. Sift the whole wheat flour, almond meal, cocoa powder and salt together into a bowl. Add the chocolate mixture to the dry ingredients and mix to combine.
Ingredients • 160g Medjool dates, pitted & soaked in boiling • Water for 10 minutes • 100g (1/2 cup) Natura Sugars Dark Demerara • Sugar • 100ml coconut oil • 5ml (1 tsp) vanilla extract • 3 eggs (xl) • 115g whole wheat flour • 100g almond meal • ½ teaspoon baking powder • 50g (1/2 cup) cocoa powder • A pinch of salt • 80g walnuts, toasted and roughly chopped
Method 1. Preheat the oven to 170 C. Line and grease a 20cm square baking tin with parchment paper. 2. Drain the water off the dates and transfer to a processor. Add the Natura Sugars Dark Demerara Sugar, coconut oil, vanilla and eggs to the dates. Blitz until smooth.
4. Add the walnuts and fold through. 5. Spoon the batter into the tin and smooth over. Bake for 18-20 minutes. Cool completely in the tin. 6. To make the ganache, melt the dark chocolate and coconut milk together and whisk until glossy. Spread the ganache over the cooled brownie and top with berries, if using.

Tunisian Chickpea Soup There are a couple of pantry cupboard staples that I’m never without, chickpeas being one. For any hummus lover, tinned chickpeas are essential. I also have dried chickpeas on hand, but for a quick fix, tinned is the way to go. This form the basis of today’s soup. Other core ingredients are barley, coconut milk, spices and vegetable stock. I guess you could say this soup recipe is a store cupboard special. I love that a couple of basic ingredients can be turned into a wholesome and satisfying meal.
Ingredients • 15ml (1 tablespoon) olive oil • 1 large brown onion, finely diced • 1 clove garlic, minced • 5ml (1 teaspoon) turmeric • 10ml (2 teaspoons) ground coriander • 5ml (1 teaspoon) ground cumin • A pinch of nutmeg • ½ teaspoon dried red chilli flakes • 2 x 400g tinned chickpeas, rinsed and drained • ¼ cup barley, rinsed and drained • 1 litre (4 cups) vegetable stock • 400g tin coconut milk • 15ml (1 tablespoon) lemon juice • 80g (2 cups) baby spinach • �alt and black pepper • �oasted almond flakes, to serve
Method 1. Sauté the onion in the olive oil until softened, about 7 minutes. Stir in the garlic and cook for another minute. 2. Add all the spices and ‘dry fry’ to release all the aromatics. This should only take about a minute or two. Now add the chickpeas, barley, stock and coconut milk. 3. Cover partially and simmer for 35-40 minutes. The barley should be tender. 4. Transfer a third of the soup to a blender and blitz until smooth. Add the pureed soup back to the saucepan and stir through. Season lightly with salt and black pepper and add the lemon juice. Add the spinach to the soup and heat through until the leaves are wilted. 5. Ladle into bowls and scatter over the almond flakes and drizzle with a some coconut milk, if you like. Another week, another UCOOK meal! When you order a UCOOK meal, you are given the recipe and the ingredients (portioned out to the exact quantities needed). Because you're actually still cooking the meal yourself, it's impossible not to feel proud once the meal is made (even though all you did was follow the instructions). Just this week I made the most incredible vegan bunny chow, and when my husband told me it was delicious, I couldn't help help but feel that I had done it all on my own. "Why yes, thank you, what can I say? I'm just good in the kitchen." I'm NOT good in the kitchen, but I am with a little helping hand. So what exactly is UCOOK? UCOOK came about in 2014 when two friends, David Torr and Chris Verster Cohen, noticed a gap in the market for convenient, healthy dinner solutions. After officially launching the business in 2015, they were quickly joined by a few friends, and proceeded to operate the young start-up out of a garage in Cape Town, packing each box themselves. From 24 boxes in their first delivery round to tens of thousands in 2018, a warehouse space in Joburg and Cape Town, and now a team of 50, UCOOK has established itself as South Africa’s favourite dinner kit service in just 3 years. The company has stayed true to its principles of sustainable and ethically sourced ingredients, and fully supports the idea that good food makes a big difference in people's’ lives. I've tried a few different subscription services in the past, but I always seem to come back to this one. First, it's only three boxes, which allows me four other days to do my own thing. Second, you're still cooking yourself, so you know everything is fresh and there's nothing soaked in preservatives just to keep it looking good. Then, lastly, the food is just so good. Quite simply, everything else aside, I have enjoyed every single meal that they've provided for me. Also, coming from a family of food lovers, what sets them apart is their quantities (usually just the right amount, or slightly more - never too little).

One of the reasons why I jumped on board with UCOOK was because of my recent voyage into vegetarianism (pescatarian for my husband). Finding meals to make that are still exciting and tasty has been a challenge. 3. Top three books? Hard one, I know!
I always planned to write something, but I didn't plan for 'writer' to be my job title. I thought writing books was something one did in one's spare time or when retired! But while doing my masters in Biochemistry, I started to realise that scientific research wasn't for me and that I wanted to write and be published NOW, not in the distant future!
Nope. This is not a valid question. (Ha ha!) Can I go with series instead of books? Harry Potter, Throne of Glass, His Dark Materials ... (I also need to fit The Mortal Instruments and several others in there somewhere!)
2. Tell us about your first novel. My first book I completed was an other-world YA fantasy where magic and angels and demons (spelled deemons because ... why not?!) exist. A girl wakes up in the middle of nowhere with no memory of who she is or how she got there, aaaaand ... lots of stuff happens after that! Only one other person has read that book so far. I haven't been back to it since finishing it and moving on to Creepy Hollow!
4. Are you self or traditionally published? What advice do you have for others? My books are all self-published. My advice for others is to figure out exactly what your publishing goals are, and that will determine which publishing path you pursue. If you just want to WRITE and are willing to put up with doing a bit of self-promotion and marketing (because I think pretty much every author is expected to do that these days), then getting a traditional publishing deal might be right for you. If you’re interested in being in control of all other aspects of your writing career (the cover design, the pricing, the promotional strategies, the publishing schedule,

Organizing promotions and marketing campaigns, checking the status of various ads, answering emails, organizing newsletter subscribers, designing book covers and promotional graphics, updating meta data on already-published books, packing parcels to send to readers, etc. (Sometimes I am also sleeping, eating, or reading!)
9. If you could have dinner with three authors OR literary characters, who would it be? You know this is impossible to answer, right? Hmm. Sarah J. Maas, J.K. Rowling, and Laini Taylor. I think. This exact list would probably change on a weekly basis! But in all seriousness, if this is a dinner in which I actually interact with people and eat food (instead of sitting in awed, intimidated silence), then there are a bunch of superawesome indie author role models I'd love to meet. 10. What does a typical day look like for you? I'm not a morning exerciser, so my days do NOT start with exercise! I try to start most days with some Bible reading and talking to God. After that, I generally stick to this rough structure: write in the morning, all other work in the afternoon. But if I'm close to a deadline, writing can either take up the entire day (and most of the night!).

6. Do you remember the first wedding you photographed?

My very first wedding was a real challenge, one of the moms at my kids school convinced me to take her wedding photos. It was a newbie photographer’s nightmare, portraits on the beach at noon in summer, and should have put me off weddings for life. Seems it did the opposite! My first few weddings were through friends and family, I only started advertising once I had a portfolio to show, and had a better idea of what equipment to use and how a typical wedding day flows.
I am a creative person and I like making beautiful things. I derive great joy from making flower crowns and headdresses for photo shoots, and make custom orders for clients. This has fast become a sideline business for me, as well as an alternative creative outlet. I love reading and watching movies, holidays on the beach and strolls in nature. I love to laugh and drink wine and cuddle my cats.
7. If you could travel anywhere in the world with your camera, where would it be?

has a switch blade and a set of playing cards. He is mostly black and grey which I don’t have much of, so he is pretty special. I also have 2 little cotton reels and a sewing needle on my foot that always reminds me of my gran. The design was based on actual vintage cotton reels she gave me, and also represents me as a fashion designer. And I have a portrait of my other Gran from 1945 on my shoulder with roses and moths which I love because it’s based on an actual old retouched photo. I do love my fly girl (pilot) with her Miss Hap B25 Bomber and its bombs underneath. She was the first tattoo on my arm and was what started my sleeve. She represents my love of history, and my ‘Miss Happ’ clothing brand. Other tattoos include a 1957 chev in seafoam green, a big old school diamond, a rosie the revitor style pinup, sacred heart, a sailor from WW2, a Japanese zero fighter plane from WW2, a beach pinup, a zombie pinup, a butterfly, a large classic sail boat with a crab and seashells, swallows, and anchor, a little horse shoe, a bird of paradise, and a few classic roses.

little butterfly I had wanted on my tummy when I had a nice six pack at the age of 16 I would without a doubt be regretting it now at age 43 WITHOUT that six pack! Remember that your body changes, as do your likes and style. Above all, remember that you get what you pay for, and cheap isn’t always the way to go. You will have to look at every day for the rest of your life, and if it’s something you can’t hide, it will bug you every single day. 4. How have people reacted to your tattoos?
A bit of both. The style is mostly old school, but I do have other elements that are a slightly different such as my sacred heart and bird of paradise. I am not big on script or long verses – for me it’s more about the bright colour and the boldness of the style. That being said, I do have the words “Life is a gamble”, “Lucky 13” (the year I got engaged) and “Stay True”. I am a visual and creative person so having bright colours and bold tattoos reflects my personality well.
I once got into a conversation with an older lady at the local Postnet about tattoos and religion, but it ended well after hearing my stories. She was an artist and could understand that this was the way I expressed myself. Mostly people want to touch you (please don’t!) and ask things like “was it sore?” (it hurts like hell!) and “does it wash off?” to “does the skin feel colder where the tattoo is?” (no it doesn’t!). When I first started getting my tattoos just on 10 years ago I was already working for myself and had my own business, so I was lucky to not have any constraints in my work environment. Nowdays you turn on the TV and you will see everybody from sport stars, to chefs, fashion designers, and actors rocking tattoos. It has become far more acceptable, and people aren’t as surprised any more. Also, I dress in 50’s style, and have bright pink hair, so there is a LOT to look at. I seem to get more comments about my hair and dress style than my tattoos. For me its about changing perceptions and educating people. I may have tattoos, but I am still me. It’s about respecting each person, and looking beyond what is on the outside.
3. Any advice for first timers?

Every artist generally has a style that they are strong in. So, look at the artist’s portfolio and go with someone who is strong in the area you like. Also, don’t rush into anything. I got my first tattoo at the age of 34. I knew who I was as a person and that made a big difference. Had I gotten that

1. How many tattoos do you have?
3. How have people reacted to your tattoos?
Too many to count. 65% of my skin is covered. My tattoos are eclectic and indicative of when in my life I had them done. They range from plain black symbols, to colourful new school designs (Alice in Wonderland, Care Bears, My Little Pony), candy, to roses and lockets, to skulls, to old school designs of cats, tigers, etc. I am fascinated by tattooed idols such as the recently deceased Zombie Boy, and Lucky Hell, the sword swallower, so I have pieces of each on my leg. I also honoured the tattoo culture by getting an old school tattooed lady on my leg. I have a portrait of Lemmy, lead singer of Motorhead, as well as a sabertooth tiger skull on the side of my head in a biology sketchbook style.
Mostly favourable as they are very colourful. Kids love it, adults too. I tend to get harrassed in malls, so I usually cover up in crowded places. I’ve had strangers literally try undress me to see what else I have hidden underneath my clothes! They’re thankfully in the minority, and even if they are being improper, it’s usually because they like what they are seeing. I’m an attorney at law, working exclusively in High Court litigation, and people see me mostly in business suits. They are quite surprised when they see the tattoos peeking out underneath my sleeves.
2. Inspiration for your most recent tattoo? Where did you get it done? My most recent tattoo is a large tiger on my stomach, by Francois Crumbs Coertzen at Tattoomania. I have the outline done, but it still needs colour and background added (grey bands with cherry blossoms). I’m a cat lady and found tigers to be so majestic.
4. Do you have any plans for another one? I have about 65% covered at the moment. The plan is to eventually have my full body covered (everything except for face, neck and hands). It's a work in progress. I am saving my back and butt for a huge tattooed lady I want to get. A lekker fat one, in grey and black but with her tattoos in the original colour ink which was available in the early 1900's. I love the tattooed ladies of way back, and the associated side show acts.

Relax at Club Mykonos Club Mykonos is described as ‘Your little piece of Greece on the West Coast’, so it’s no wonder I love it so much. Greece remains one of my most loved overseas holidays so far. This was my second visit to Club Mykonos, and will definitely not be my last. Situated in Langebaan, and right on the shores of the lagoon, it is the perfect place to get away from it all. There’s nothing quite like waking up to the sound of the sea at your doorstep. Also, if you’re anything like me, you’ll spend a lot of time just walking around and taking photos of everything. It’s so picturesque that it looks like you’ve stepped inside a postcard. At Club Mykonos you have a range of accommodation types to choose from. This time we were lucky enough to stay in the new Marina Village, which offers ultimate luxury right on the water. Here you can enjoy the quayside lifestyle, and open your windows each day to the most beautiful view of both the marina and the ocean. We spent most of our time on the balcony, basking in the sun during the day, and wrapped up with warm blankets and glasses of wine at night. It’s incredibly peaceful, and just the sort of place you want to go for a romantic and quiet getaway. These luxurious 2 bedroom units sleep a maximum of four (so great for families), with two en-suite bathrooms, and the most comfortable bed I’ve slept on in a long time. What’s nice about staying at Marina Village is that despite the privacy you get, you’re also only a very short walk away from the restaurants and shops. Which suited us just fine, as we sat one day to get out the cold, enjoying a few drinks at Dockside Café and Lounge. If, however, you’re looking for more of a beach vibe, you can take a short walk through Club Mykonos, to the beach on the other side. Here you’ll find a few restaurants right on the beach to enjoy a meal or a few drinks. I think that’s what makes this place so special – there’s something for everyone. We had a great time. So much that I’m already planning my next trip back. If you’re in need of some relaxation (who isn’t?) I can highly recommend a few days at Club Mykonos.
