ILTON MANORS— On Monday morning, January 28, the residents of the Wilton Tower on Northeast 20th Street witnessed the arrival of emergency vehicles, police cruisers, a Broward Sheriff’s Office (BSO) Crime Scene van, and eventually the county Medical Examiner’s truck, each of which had responded to reports of the tragic death of a popular local bodybuilder, fitness trainer, and one-time Colt model, Christian Bouthillette, who lived at the high rise with his partner of 7 years, Frank Angiulli. Although the official ruling from the county Medical Examiner’s office upon the manner of Bouthillette’s death— including a toxicology report—could take up to two weeks to be released, official sources close to the case who declined to be identified told the Agenda that the 52 year old Montreal-native was discovered dead and “unattended” in his bath tub. The management of the luxury apartment building—which is located behind Dairy Queen and Tropics restaurant, near the south end of Wilton Drive—expressed sadness over Bouthillette’s death, and Community Manager Heather Sparks posted a note of condolence and sympathy near the building’s elevators, explaining the cause of his
passing as a massive heart attack. The source close to the case told the Agenda that Bouthillette’s exact cause of death won’t be known until the toxicology is completed, but that source referred to an online report that Bouthillette had been arrested last weekend in Miami-Dade County for cocainerelated offenses. The same source also stated that a note had been found at the scene of his death by investigators. Bouthillette, whom neighbors say was warm and friendly, was an awardwinning bodybuilder, a nationallyrecognized trainer, and a popular Colt model whose images are available online. He welcomed visitors to his fitness Website (bodyimagefitness.us) with a friendly open manner that his friends say was second nature to him. “Hi. My name is Christian,” he wrote on the site. Bouthillette, a Montreal native, graduated from high school in 1977. According to his self-written Web bio, “I started bodybuilding at the age of 21 in Spain. I studied science of education in Montreal, and was a track and field athlete. After being diagnosed with periostitis (the inflammation of the periosteum, a layer of connecting tissues that surround the bone) my tibia was affected and I could no longer jump or run. So I turned to bodybuilding to
keep fit and healthy.” After winning numerous bodybuilding competitions—including the 1995 Canada Cup, 1st Place in mixed pairs, the 1998 National Physique Committee (NPC) New York Grand Prix, 1st Place in super heavy weight, and the 2004 NPC East Coast, 1st Place in super heavy weight—Bouthillette “started [his] dream job” in 1998 as a personal trainer. Ken Hunt, the owner of New York City-based Steel Gym, knew Bouthillette for more than 10 years, and had employed him in both New York and Miami. “Christian was a very dear friend of mine,” he told the Agenda. “He was a
sweet person whose biggest muscle was his heart.” Hunt said that plans were being made to hold a memorial event in Bouthillette’s memory. He says he had spoken with Bouthillette’s partner, and been told that his friend had died from a massive heart attack. Hunt described Bouthillette as a “friendly” and “serious” person, who was sometimes “guarded” around others, especially those who only saw him at face value. “I remember being at Fort Lauderdale Beach with him last year,” Hunt recalled. “He was very friendly, but I remember

SUNSHINE STATE Manors Police Arrest Kids in Distress Predator WILTON MANORS — At a press conference on Monday, January 28, Wilton Manors police announced the arrest of a man charged with sexual assault upon two teenagers. The minors were residents of Kids in Distress, the Northeast 26 Streetbased counseling and health center with a mission to prevent child abuse, preserve families, and treat children who have been abused and neglected. Brian Denby is charged with three counts of lewd and lascivious battery on a child 12 to 15 years old, and two counts of lewd or lascivious exhibition. Police had circulated an artist’s rendering of their suspect, which was posted around the community Wilton Manors Police Sgt. Charles Howard told reporters that Denby encountered the teens sometime after 3 a.m. on January 7, after approaching the Kids in Distress facility. After talking with the underage victims, Denby jumped the fence and proceeded to perform sexual acts with two of the teens. Surveillance cameras at Kids in Distress captured images of the man Howard identified as Denby walking near the shelter’s entrance, stopping to talk to the teens. Detectives say that witnesses reported him jumping the fence, and performing sexual acts with the two girls in the open. The victims and witnesses did not inform shelter officials about the assaults until days later. Administrators alerted police once they were aware of the crimes. Howard said. Kids in Distress serves approximately 10,000 children each year; many of them are homeless or the victims of neglect and abuse. The victims, who were described as being in their early teens, are receiving counseling in a different care facility. Howard told the Agenda that at least four other children witnessed the assaults. Investigators received an anonymous tip on Friday from someone who knows Denby. The informant told police that Denby had bragged about his assault upon the teens. Detectives learned that their suspect was on a weekend cruise that had left the Port of Miami on Friday. When the ship docked on Monday morning, federal agents and Wilton Manors police were
waiting for him. Last week, administrators fired two child care workers who worked during the overnight shift for negligence in failing to keep tabs on the teenagers during the incident. Officials with the shelter say that because it is not a lock-down facility, the teens had access to the environs outside their living accommodations. Nevertheless, the overnight care personnel should have been aware of the presence of a predator and been able to respond accordingly.

Officials with SunServe—a 501(c) (3) nonprofit providing progressive care for minorities, youth, seniors, families, and those with life-challenging physical or emotional conditions—say that the purpose of its HOPWA program will be to develop solutions to the barriers to long term and stable housing for PLWH/A. Among the staff are Director of Case Management Gary Hensley, who has a lengthy record in the HIV/AIDS field, and Case Manager, Advocate, and Community Liaison Tiffany Arieagus, who has worked in the HIV/AIDS arena for over a dozen years. Fort Lauderdale Playwright’s “Proposition 8” opens at Lynn University BOCA RATON — Fort Lauderdalebased writer Dan Clancy’s play about a gay couple’s decision to initiate California’s Proposition 8 legal challenge will have a workshop production as part of Lynn University and the Jan McArt Theater’s series of New Play Readings. Palm Beach County Tax Collector Implements Domestic Partner Policy WEST PALM BEACH — The office of Palm Beach County Constitutional Tax Collector Anne Gannon has instituted a policy which will help offset additional taxes paid by employees who elect to provide health insurance to their domestic partners, an action taken at the request of the Palm
Beach County Human Rights Council. Under federal tax laws, unmarried employees with domestic partners and samesex married couples are taxed on the imputed value of employer-paid family health insurance benefits, a situation that does not apply to opposite-sex married employees possessing the same family coverage, who are not taxed on the value of that same family health insurance coverage. Federal legislation to amend the Internal Revenue Code to end the taxation of health insurance benefits provided to domestic partners was first introduced in 2003 by U.S. Sen. Bob Graham (D-FL), but there has been no progress made to enact it at the national level in the past decade. “My employees whose families are based on domestic partnerships pay more federal taxes than married employees for the same family health insurance coverage,” said Gannon. “That is unfair. I won’t wait any longer for Congress to end this inequity.” Gannon’s tax equity policy provides employees who elect to insure their domestic partners with an annual tax equity reimbursement of $500 to mitigate the impact of the additional income taxes paid by employees with domestic partners. Last month, Palm Beach County Property Appraiser Gary Nikolits implemented a similar tax equity program for his employees. In the public sector, only Hallandale Beach and Cambridge, Massachusetts have taken steps to address this tax inequity. West Palm Beach Mayor Jeri Muoio recently informed the Palm Beach County Human Rights Council that her city will consider a tax equity program for its municipal employees, and attorneys for the cities of West Palm Beach and Miami Beach are working together to draft a policy which
they hope will become a nationwide model for public employer tax equity programs. H
Boeing Reverses Position on Married Same-Sex Pension Benefits CHICAGO, IL — In a retreat for the world’s second largest aerospace and defense contractor, the Boeing Company has announced that it will provide the same pension survivor benefits to samesex married couples as it currently offers its traditionally married employees, ending what seemed an intransigent position the engineering, space, security, technology, and financial multinational had taken in November. At that time, the aerospace giant told the Society of Professional Engineering Employees in Aerospace (SPEEA), the union which represents 23,000 Boeing engineers and technical workers, most of them in Washington State, that in spite of that state’s voter-approved legalizing of marriage equality, Boeing would deny gay couple equal benefits because federal law did not require it.

eBay, Marriott Join List of Companies Supporting GayMarriage Legislation WASHINGTON, DC — Marriott International Inc. and Bristol-Myers Squibb Co. have joined with more than a dozen other major companies in supporting efforts to repeal the Defense of Marriage Act (DOMA), the 1996 federal law that defines marriage as solely between one man and one woman. Along with eBay, Inc., operator of the world’s largest web-based marketplace, Aetna, the nation’s third-largest health insurance company, has also joined the business coalition organized by the Human Rights Campaign (HRC). “We are proud of our longstanding commitment to diversity, inclusion and equal treatment of all our employees within our benefits programs,” said Marriott Chief Human Resources Officer David Rodriguez. “Joining the Business Coalition for DOMA Repeal affirms that commitment, and we urge Congress to pass this important legislation.” Nine states and the District of Columbia now allow same-sex couples to legally marry, and the White House has stopped defending DOMA, which is being challenged at the U.S. Supreme Court.H

SCIENTISTS MAY HAVE FOUND GENE THERAPY KEY TO TREATMENT IN HIV/ AIDS FIGHT

UEENSLAND, AUSTRALIA —Researchers at the Queensland Institute of Medical Research in Australia report that they have developed a form of gene therapy that has the potential to cure HIV/AIDS, by turning the HIV protein against itself in order to stop it from replicating. Animal trials of the treatment are set to begin this year and if they are successful, the study authors say that a single treatment could replace multiple-drug therapies (“the cocktail”). In a video statement posted on January 21, the Queensland Institute reported, “Associate Professor David Harrich has found a promising way of stopping HIV from causing AIDS. The human immunodeficiency virus (HIV) is currently treated with a cocktail of drugs to stop the virus from causing acquired immunodeficiency syndrome (AIDS). But there is no cure or vaccine.” Harrich, whose research is published in the current issue of Human Gene Therapy, told reporters that the treatment is a way of “fighting fire with fire.” HIV works by entering and killing a person’s T-cells, which results in a collapse of the immune system. Doctors now use drug therapy to help prevent the virus from developing into AIDS. But many patients must take dozens of pills a day for the rest of their lives. A person successfully undergoing the therapy would still have HIV, but the virus would remain latent, allowing a patient to maintain a healthy immune system, and preventing it from mutating into AIDS. It could also mean an end to drug therapy—and its often excruciating side effects. The Queensland research was announced only a day before the publication of a similar potential breakthrough by scientists at Stanford University in California. According to a paper published on January 22 in Molecular Therapy, the Stanford study “describes the use of a kind of molecular scissors to cut and paste a series of HIV-resistant genes into T-cells.” According to a statement from the university, “By inactivating a receptor gene and inserting additional anti-HIV genes, the virus was blocked from entering the cells, thus preventing it from destroying the immune system.” Like the Queensland announcement, the Stanford therapy could potentially replace lifelong treatments using the cocktail. In both studies, the researchers were quick to note that the therapies do not represent a “cure” for HIV, but a means to offer immunity to it. The Queensland and Stanford announcements represent two promising developments in the war against HIV/AIDS. Among the most dramatic in recent years was the announcement in 2007 by scientists in Berlin, Germany, who successfully performed a stem cell transplant on Timothy Ray Brown, an HIV-positive man known as the “Berlin Patient” who seemed to be cured of the virus. More than four years later, Brown is reportedly still HIV-free.H

NEW YORK, NY — On Monday, January 28, the Boys Scouts of America (BSA) announced that it is considering a dramatic reversal of its controversial policy that excludes gays from membership in the organization, and from serving as scout leaders. The policy change, if enacted, would permit local Scout units—and the civic and religious groups that sponsor them— to decide for themselves whether to maintain an exclusion of gays or open them up to gay candidates. Scouting spokesman Deron Smith insisted that, “the Boy Scouts would not, under any circumstances, dictate a position to units, members, or parents.” The Boys Scouts has a long history of excluding gays. Protests over the no-gays policy increased after a U.S. Supreme
Court ruling in 2000 that upheld Scouting’s right to exclude gays. In the backlash, Scout units lost sponsorships from public schools and other entities that mandate nondiscrimination policies. A number of local Scout councils also voiced opposition to the national policy. Major corporate donors have likewise expressed their displeasure, including worldwide shipping company UPS and pharmaceutical giant Merck, who ceased donations to the Boy Scouts from their charitable foundations. The decision by BSA to oust scout leader Jennifer Tyrrell, a lesbian mother who served as den mother of her son’s Ohio Cub Scout pack, as well as refusing the Eagle Scout application of a gay California teen, Ryan Andresen, have also generated considerable negative fallout for Scouting.

A NEW FRONTIER Navigating LGBT Adoption in the Sunshine State

he historical journey to legalized gay adoption in the Sunshine State has been a winding one. Florida Statute 63.042 allows any minor or adult to be adopted by married or unmarried adults, including anyone capable of “serving as an effective parent.” But the law also states that, “(3) No person eligible to adopt under this statute may adopt if that person is a homosexual.” Critics of this unfair discrepancy were loud and relentless in point it out. State law didn’t prohibit gays from being foster parents, but it prevented them from adopting their own foster kids. The courts refused to intervene, until the landmark case known as In re: Gill, 45 So. 3rd 79 (Fla. App. 2010), when the 3rd District Appellate Court affirmed a lower court ruling in Miami that declared Statute 63.042(3) unconstitutional, and granting adoption of foster children to their gay foster parent. In its decision, the court ruled there was no rational relationship between the legal ban and the best interests of Florida’s children. “Under Florida law, homosexual persons are allowed to serve as foster parents or guardians, but are barred from being considered for adoptive parents. All other persons are eligible to be considered case-by-case to be adoptive parents, but not homosexual persons—even where, as here, the adoptive parent is a fit parent and the adoption is in the best interest of the children,” the appellate court found.

Give us some background into the progression from 1977, when the state legislature prohibited gay adoption, and why Florida resisted all legislative and judicial attempts to repeal the law. In my personal opinion, the ban on so-called ‘gay adoption’ was based on religious conservatism. This pre-dates my adulthood, but look back at the 1970s Anita Bryant era and see how homosexuals were treated. The legislature would take advantage of any possible way they could to deny civil rights to that group, and they believed they were justified for religious reasons.

What are the methods/ ways for LGBT couples to adopt in Florida? LGBT couples CANNOT adopt in the State of Florida, unless they are married (which they can’t legally under state laws), or unless they undertake a procedure called “second parent adoption,” in which a non-married partner (who doesn’t have to be LGBT) is also legally recognized as a parent to the child. The concept of second parent adoption is perfectly legal and legitimate, but is more readily recognized in more liberal areas. It gets more “controversial” as you move north up the state, if you know what I mean.

The methods/ways for LGBT persons to adopt in Florida are no different than anyone else. There are private agencies, the Florida Department of Children and Families (DCF), foster-to-adopt via DCF or its community-based partners and private attorneys.
How do private adoptions work?
With a private adoption, you find a particular child. The prospective birth mother and child could be found through an attorney, or through a service. With a private adoption, the adoptive parents are generally responsible for the biological mother’s medical expenses and legal fees. You don’t—and can’t legally—pay for the adoption itself, but other expenses could include paying for the birth mother’s living expenses.H

I
n the interest of privacy and maintaining the anonymity of an otherwise “innocent party,” I will try to paint in broad brushstrokes here, but if you spend anytime walking, driving, or otherwise “cruising” the streets and byways of the Gayborhood, you may have had occasion to encounter a fairly regular sight, that of an attractive (a word that barely does justice to the subject, if truth be told) twenty-something, usually bare-chested and standing on the corner of one of the sleepier residential sidestreets that feed the Drive. I also remember the young man from my days socializing in downtown Fort Lauderdale and seeing him with women going into various clubs that I managed at the time (including Dicey Riley’s, with the late Richard Cimoch). This putatively straight kid, who spends more time at the gym than I have allotted hours for “Walking Dead,” which is no small feat—can often be seen pacing back and forth down his street, speaking on his cellphone, shirtless and deep in conversation. I have had occasion to see him— actually a lot of occasions—because my paths to and from work often cross those of his home turf, and I therefore have just as many occasions to bear witness to the behaviors of other members of our tribe who happen upon him while he is “peacocking”—displaying himself, strutting—unsuspecting and without the benefit of inoculation that prolonged exposure to the sight of him has bestowed upon me. I have listened to friends speculate upon the nature and reason for this guy’s posturings. These friends are convinced that he is gay for pay, and at least one “well-informed” local confirms this.
Many of these once-unwary passersby first encountered him when they turned down his street and—BAM!— glimpsed him texting, or posting to Instagram, or—sometimes—facing the sky, his eyes closed. What happens next could be the subject of a sociology—or is it anthropology?—paper. I have seen cars literally stop mid-street, bicyclists risk permanent maiming and brain injury when they nearly collide, and pedestrians “stutter-step” into moving traffic because they mischanced to glance his way. Don’t get me wrong: the guy is handsome (okay, hot), but I’m not going to get killed by a passing Schwinn just to sneak a gander. It wouldn’t be dignified.H

But that wasn’t the deeper part of Christian. It’s really a terrible loss.” While officials wait the official ruling from the medical examiner, his loved ones try to make sense of their loss, and take comfort from the memories they retain of their friend. On his training Website, Bouthillette himself wrote that he gained tremendous satisfaction from “Helping people get what they want and reach their goals like I did; using the experience and knowledge I’ve acquired during my career in bodybuilding.”H

The chemistry between the powerhouse illusionist/magician/comedy team of Penn & Teller has always fascinated audiences. That’s the Ticket: Jon Lovitz, Chris Kattan, and Tim Meadows “Saturday Night Live” alumni Jon Lovitz, Chris Kattan, and Tim Meadows take to the stage for an evening of laughs and memories from their long comedy careers. On SNL, Lovitz made famous the tagline “Yeah, that’s the ticket” as Pathological Liar Tommy Flanagan, and later contributed his voice to the short-lived but groundbreaking animated series “The Critic” (remember “It stinks?”). Kattan brought down the house with hilarious turns as “monkeyboy” Mr. Peepers and the sexuallyambiguous Mango, and later costarring with fellow SNL player Will Ferrell in “A Night at the Roxbury.” With 10 years under his belt, Meadows had one of the longest tenures at SNL. REEL ADVICE “Near-Death” Experiences By GREGG SHAPIRO
A
make an attempt to come to terms with the shards of their brief marriage. Ronald Harwood, who wrote the screenplay based on his play Quartet, keeps the action stagey and theatrical, which alternately suits and stifles the material. Making his feature film directing, Hoffman proves himself to be as natural behind the camera as he is in front of it. But Quartet really belongs to the duo of Smith and Collins. Courtenay and Connolly are perfectly fine, but the screen practically glows whenever Smith and Collins illuminate it. Professional scenery -hewers Al Pacino and Christopher Walken show great restraint in Fisher Stevens’ action comedy “Stand Up Guys” (Lionsgate). When Val (Pacino) is released from prison after a 28 year prison sentence for murder, old friend Doc (Walken) is there to greet him with a ride in his ancient Buick and provide him with a place to stay in his crowded flat/studio. Doc, retired from the mayhem biz, prefers to paint sunsets. However, he has one last job to do, involving Val. Vengeful mob boss Claphands (played by character actor Mark Margolis of “Breaking Bad” and many other recognizable performances) has saddled Doc with the chore of wiping out Val for the murder of his only, and he only has a few hours to get it done, so their reunion has a time limit. Making the most of the time they have left, Val and Doc raid a pharmacy (where they score Viagra), visit a bordello, go dancing (with Pacino recycling some of his “Scent of a Woman” moves), steal a car, take a former partner-in-crime (played by Alan Arkin) for the ride of his life, help rape-victim Sylvia (Vanessa Ferlito) get revenge on her perpetrators, and finally address the events that led up to Val’s lengthy prison stay, and “Warm:” Zombie Hotties why taking the fall made

t nearly 80, Dame Maggie Smith remains one of the hardest working women in show business. Not only did she appear (and steal every scene) in “The Best Exotic Marigold Hotel,” she also left her unmistakable mark on “Quartet” (The Weinstein Company), directed by Dustin Hoffman. The foursome of the title refers to the quartet from Verdi’s “Rigoletto,” performed, in their youth by Jean (Maggie Smith), Reggie (Tom Courtenay), Wilf (Billy Connolly), and Cissy (Pauline Collins), all of whom now reside in Beecham House, a community for retired musicians. Each character brings along a set of traits that are at turns amusing and tragic. Flirtatious Wilf, the “dirty old man,” peppers his speech with innuendo and his pursuit of young Dr. Cogan (Sheridan Smith) borders on sexual harassment. Everyone loves dizzy Cissy whose mental faculties fail her on a regular basis. Poor, put-upon Reggie keeps track of all slights against him, but is nevertheless a good friend. However, it’s grand dame Jean’s arrival that creates the most havoc and operasized drama. The unfaithful ex-wife of Reggie, Jean’s superiority complex stirs up all sorts of hard feelings. (Not to mention the fact that it was kept from Reggie that Jean would be the newest resident.) Reggie, who never recovered from Jean’s betrayal, is dazed by her presence. Since life is especially short, Reggie and Jean

him a stand up guy. Nevertheless, the entire time both men are aware that one of them must kill the other. As resourceful as they are grumpy, Val and Doc may be down, but they’re not out. Like an AARP Butch and Sundance, the alterkockers make plans to go out in a blaze of glory. “Stand Up Guys” may not earn the Academy Award-winning trio of Pacino, Walken, and Arkin Oscars, but it’s an entertaining and occasionally touching movie. The comedies “Zombieland” and “Shaun of the Dead” went a long way to revive the element of humor in the Cinema of the Undead. Jonathan Levine’s “Warm Bodies” (Summit) takes the genre one step further in the direction of romantic-comedy. Yes, “Bodies” has some heat. Narrator R (Nicholas Hoult of “A Single Man”) is one of the most articulate walking dead in a post-apocalyptic America. He divides his time between shuffling around an abandoned airport, hunting humans, collecting things, and avoiding the vicious and malicious skeletal Bonies (the most deadly zombies of all). As it happens, when a zombie eats the brains of one of its kills, the memories

of the dead person become the zombie’s. When Julie (Teresa Palmer), the daughter of Grigio (John Malkovich), America’s militaristic leader goes on a salvage mission in the zombie zone with her boyfriend Perry (Dave Franco) and best friend Nora (Analeigh Tipton), a deadly encounter causes Perry’s affections for Julie to be transferred to R (who ate Perry). Borrowing from “Romeo and Juliet”—among other sources—“Warm Bodies” is both lively and clever. It gets most of its life source from Hoult, who gives the character R a sense of humanity not usually found among the walking dead. In addition, the performance by Rob Corddry as R’s closest zombie friend almost steals the show. As far as cold weather entertainment goes, “Warm Bodies” is hot. H
MOJO RESTAURANT Where Style Meets Flavor By RICHARD DAVID CHAMBERLAIN
W
hen Domenick Falcione and Anthony DeMaio opened Mojo Restaurant in August 2010, it was nearly 30 years to the day after they first met over a game of craps at Caesars Palace in Atlantic City, New Jersey. Three decades is a great run, and to look at their newest venture, it shows no sign of stopping.

While downright delicious food has a lot to do with the steady flow of repeat customers into the sophisticated eatery on North Federal Highway, no small amount of credit must go to the love they share for each other and the restaurant business. It shows in the design of their home-away-from-home, elegant in a fresh stylized way that combines light turquoise stripes with white furniture, stainless steel with neon blue, and an up-lit bar in red, all complimented by crisp white linen. Bottom line, of course, a restaurant is all about the food it serves, and at Mojo, it’s a blend of American cuisine tweaked with Italian, and influenced by a fondness to surprise. A perfect example is the Clams and Linguine entrée ($18) that combines little neck clams and a lovely fresh flat noodle sauced with a clam broth that has been marinated in garlic, scallions, parsley, and chili flakes, and drizzled with extra virgin olive oil.The result is a plate that is poetic in colors and presentation, displaying various experiences of hot and spicy, and sweet and cool, as it dissolves on your taste buds.You’ll swab up the last of the broth with some perfectly baked, thinly-sliced French bread when you think
no one is looking. (Of course, someone is.) Nothing escapes the gaze of Anthony, who doubles as handsome host and front-of-the-house guardian. Domenick is the executive chef and is hidden in the kitchen, creating new ways to combine traditional standards. The Char Sui Pork Chop ($25) is one of his crowning achievements, as he melds a 10-ounce center-cut chop and stuffs it with a chorizo cornbread cherry stuffing that again mixes spice and sweet to superb results. When the plate arrives, you’ll notice the crisply-browned sweet potato corn jalapeno fritters surrounded by seasonal vegetables. Don’t look long, because if you haven’t eaten them, your dining partner is sure to.The succulent combination gives a new meaning to the word “yum.” If you love duck, you will be amazed at the flavors shared in the crispy Duck Breast ($25). In this version, the poultry is perfect pink in the center and served with sautéed red sauerkraut sweetened with apples, some raspberry butter, and delicious cauliflower that’s creamy with a goat cheese puree. Other recommended entrées are the bacon-wrapped Mojo Rubbed Filet ($36), Organic Salmon ($25) with an orange ginger glaze, and the wonderfully spiced Jumbo Lumped Crab Cakes ($26) with celery apple slaw and sweet potato fries. The Jumbo Lumped Crab Cake is also available as part of the Bar Bites menu, which between 5-7 p.m. Monday through Friday is half-priced at $5 per item. (Sorry, the Crab Cake is the exception: It’s $13 per cake, anytime you order it.) The Happy Hour pricing makes it easy to sample Mojo’s wonderful FishTacos— either blackened, grilled or fried—and served with a crispy creamy slaw, or the duet of Meatballs that mixes veal, beef and pork with secret herbs and spices. PEACH MELBA By JEAN DOHERTY
T
he Peach Melba was invented in the late 19th Century by the French chef at the Savoy Hotel in London to honor the Australian soprano, Nellie Melba.The classic dessert combines two popular summer fruits: peaches in a raspberry sauce, accompanying vanilla ice cream. Ingredients • 4 fresh ripe peaches • ½ lb of fresh or frozen raspberries (or jam) • 4 oz of caster sugar • 1 pint of creamy vanilla ice cream • 2 soup spoons of dry cherry brandy • 1 oz of thin roasted almond slices
Although born in Dublin, Ireland, Chef Jean Doherty spent most of her life in Lyon, France, the gastronomical capital of the world. Together with Vero, her partner of 25 years, Jean has owned and run multiple restaurants including Fort Lauderdale’s Le Patio.

Dip the peaches in boiling water for 30 seconds, and then rinse and cool them down in chilled water. Cut into in two halves, core and peel them carefully, and put them face down on a plate. Make a light syrup with the 2/3 of the sugar and the quantity of water necessary to cover the peaches: heat the sugared water and let it boil for three minutes. Pour the cherry brandy into the syrup, carefully putting the peaches into it, and
poach them gently for five to 10 minutes, according to the degree of maturity of the fruit.Take the fruit out of the syrup and put them flat side down, and drain until they come to room temperature. Mash the raspberries together with the remaining 1/3 of the sugar using a fork. (or just use raspberry jam). Put the raspberry purée, the half peaches and four empty service cups into the fridge. When time for dessert comes, put into each cup: first a scoop of ice cream, then two halves of poached peaches, topped with some raspberry purée and a few almond slices and serve quickly.You can also top with whipped cream—you are the chef. PRAGUE Eastern Europe’s Gay Mecca By ROBERT ELIAS DEATON

rague is the capital of the Czech Republic, and the gay center of Eastern Europe. Sexual freedom is evident throughout this city of “live and let live,” and any gay, lesbian, transgendered or bisexual person will be made to feel immediately at home, surrounded by architectural history and art. What makes this open acceptance of sexual diversity so amazing is that not so very long ago—just a little over two decades in fact—there were no freedoms in this city at all. Before 1989 and the Velvet Revolution, Prague was the capital of Czechoslovakia, then part of the Communist Eastern Bloc. Today, there are still some remnants of the city’s Soviet domination, though you have to look closely to find them. What shines apparent is a thrill ride of Eastern European efficiency, cobblestones, and Old World charm. Getting to Prague is far more of a challenge than enjoying this wonderful city once you’re there. From Fort Lauderdale International Airport, it’s a 15 hour, two-stop plane trip aboard Delta and KLM, before you’ll get to disembark at Prague Václav Havel Airport (PRG). Located six miles west of city center, it’s a short taxi ride into town and your selection of hotels. Our favorite by far is the Hotel Paris
Prague (U Obecního Domu 1080/1). Built in 1904 as an Art Nouveau gem, this grand hotel was seized from the original owners during wartime and only recently returned to them for restoration and an incredibly detailed fluff and fold that has polished its historical significance. You can book a single room for 100 Euros a night, with free Internet wireless, full breakfast, and use of the hotel’s fitness center. The Hotel Paris Prague is just around the corner from the Municipal House, located in Old Town at Náměstí Republiky 1090/5. This is another building which is an architectural delight, having been completed in 1913. It houses the 1,500 seat Smetana Hall, where the Prague Royal Orchestra calls home. On its ground floor and in its basement, several enormous restaurants make it easy to experience authentic Czech cuisine on the cheap while surrounded by art nouveau stained glass windows and Bohemian furniture. They are heavy eaters in the Czech Republic, where meat and potatoes rule. You’ll get a whole new appreciation for super-sized when you experience a Municipal House dinner, eaten to the accompaniment of an accordion player—a remnant of the city’s literal Bohemian past. For a touch of home, try the James Dean (V Kolkovně 1), a 1950s-style

American diner smack in the middle of Old Town, right off the Old Town Square. The red leatherette booths look like they began life as back seats from 1952 Chevy Bel Airs. The menu selections are thick with hamburgers, hot dogs, French fries and onion rings, with the expected portraits of Hollywood stars showcased on the walls. For entertainment, it’s hard to beat the Vinohrady Theater (Náměstí Míru 6,) a breathtaking Art Nouveau treasure with appropriate gold gilding on nearly every ceiling. The building sits on the
side of the grand church of St. Ludmila, a twin-towered celebration to the patron saint of Bohemia. It is a central meeting spot in the elegant residential Vinohrady neighborhood, known for its wealth, fine architecture (Neo-Renaissance, Art Nouveau, Pseudo Baroque, and NeoGothic styles) as it is for its gay inhabitants who recognize a classy place to play. Eating slower gives your body a chance to recognize that it is getting full, thus enhancing a slimmer
and trimmer you while vacationing. It takes 15 minutes for your brain to recognize that your stomach is full.Taking the time to reminisce about the day’s events between bites not only brings you closer to the people you with whom you are are sailing, but it also gives the body a chance to process the delectable dishes the chef has prepared for you. When there is buffet-style dining on the ship, most people’s decision-making choices go downhill.This plethora of food is often too much for some people to handle. A buffet is set in place so that you have a variety of tastes and choices, so use it for just that. Try sampling a small amount of all the foods that attract you at the buffet line, but refrain from making a pile of any one thing while filling your plate. Be adventurous when choosing your items, try healthy choices that are different than your usual foods at home. Taking small plates back from the line keeps your portion sizes down. And remember, you’re not denying yourself
anything because you can always go back for more. If you do go back to the buffet table, try replacing your second helping with fruit. Fruits have natural sugars that can be just as sweet as desserts that use cane sugars. Fruit also has lots of hydration and insoluble fiber; both of these are requirements if you are going to have a few drinks while setting sail. There is also plenty of table-side dining available on any cruise line and I strongly encourage this style of eating. Cruise liners large and small offer sit-down restaurants. If your willpower is weak, this is a great alternative to the buffet line. Sitting at a table and being served a gourmet meal while sipping on a glass of fine wine sounds good to almost everyone, so take the time to treat yourself while vacationing and make your evening meal an experience. Additionally,table-side dining can make your meal on the high seas that much more of an intimate experience if traveling
with your significant other. This is a great time to splurge on romance, rather than dessert. Your partner and your waistline will love you for it. Remember to use these eating tips while you are cruising around the world, and look just as fabulous as the places you are about to explore.
