Dousset told the Sun-Sentinel that he plans to return to FAU once the suit is settled. “I really liked the school, and the teachers,” he told the Sun-Sentinel. “I have a French mindset. I don’t stand for discrimination. I was raised under the principle that all people are equal and that we all have the same rights.”

“It hurt,” Dousset told WPTV. “It was insulting. It was highly discriminative. I couldn’t believe it. I showed up at the registrar’s office that day feeling very confident that it wouldn’t be any issue.” The lawsuit, filed May 14 in Florida’s Fourth District Court of Appeal in West Palm Beach, asks that the state recognize same-sex marriages performed in other states, where it is legal. While they originally said that the university does not comment on any pending litigations, FAU released a statement claiming that they are obligated to follow Florida laws, including the ban on same-sex marriage. “Florida Atlantic University, and every Florida state college and university, is bound to follow all the laws of the State of Florida unless they are deemed uncon-

oca Raton, FL – A Florida Atlantic University student is suing the school because it will not recognize his marriage to another man, according to a report from WPTV. When Gildas Dousset asked for in-state tuition rates, the university failed to recognize his marriage to partner Paul Rubio, a Florida resident. Rubio, a travel journalist, met Dousset while he was in Paris in 2008, reports the Sun-Sentinel. The couple had a whirlwind romance and eventually married in Massachusetts in 2013. Though the two married last year in Massachusetts, the state of Florida does not recognize their marriage. In Dousset’s suit, he claims that the school’s policy violates the U.S. Constitution.

Equality Florida: ‘GOP’s Van Zant’s Homophobic Scare Tactics Are Reprehensible’ Tallahassee, FL – Speaking at the Operation Education Conference in Orlando, Florida, State Rep. Charles Van Zant (R-Palatka) made anti-gay statements while railing against Common Core, making a claim that the curriculum is designed to “turn children gay.” In a video that recently surfaced from the March conference, Van Zant urged his constituents to oppose being made to implement the new educational standard known as Common Core. “They are promoting as hard as they can, any youth that is interested in the LGBT agenda,” Zant said. “These people….will

whenever an elected official conjures up homophobic scare tactics for political gain. His assertion that an educational program seeks to ‘make children gay’ is simply absurd. Harrisburg, PA – On Tuesday, a federal judge declared Pennsylvania’s ban on same-sex marriage was unconstitutional. Judge John Jones III ruled in favor of 23 Pennsylvania residents who challenged the law. “The issue we resolve today is a divisive one,” Judge John Jones said in a statement published by NBC. “Some of our citizens are made deeply uncomfortable by the notion of same-sex marriage. However, that same-sex marriage causes discomfort in some does not make its prohibition constitutional.” Following Pennsylvania’s ruling, 44 percent of the nation’s population live in states where gay marriage is legal. “We now join the 12 federal district courts across the country which, when confronted with these inequities in their own states, have concluded that all couples deserve equal dignity in the realm of civil marriage,” Jones wrote in a statement obtained by the Associated Press. If Jones’ decision is finalized, Pennsylvania would become the 19th state to legalize gay marriage.

Salt Lake City, UT - A federal judge has ordered Utah to recognize all samesex marriages performed in the 17-day period when gay marriage was legal. On Monday morning, Judge Dale A. Kimball ruled that the state must honor the 1,300 marriages that took place after a federal court struck down the ban in December, before the U.S. Supreme Court put a stop the licenses again, reports The Salt Lake Tribune. “Governor Gary Herbert and Attorney General Sean Reyes shall immediately recognize the marriages by same-sex couples entered pursuant to Utah marriage licenses issued and solemnized between December 20, 2013 and January 6, 2014
and afford these same-sex marriages all the protections benefits and responsibilities given to all marriages under Utah law,” Kimball wrote in a statement. Evan Wolfson, president of Freedom to Marry, issued a statement that praised the Utah ruling. “More than 1,300 committed couples paid their fees, were issued marriage licenses, stood before family and friends, and got married – and the court was right to hold that they should be treated as what they are: married,” Wolfson said in his statement. “Many others also want to take on that legal commitment and are being denied, the litigation continues, as must our work in Utah and nationwide. The appeals courts and the Supreme Court should rule against marriage discrimination, just as the judge did today. America is ready for the freedom to marry.”

Salem, OR – U.S. District Judge Michael McShane struck down Oregon’s ban on same-sex marriage Monday, saying that the law violated the constitutional right to equal protection. “Because Oregon’s marriage laws discriminate on the basis of sexual orientation without a rational relationship to any legitimate government interest, the laws violate the Equal Protection Clause of the Fourteenth Amendment to the United States Constitution,” wrote McShane in his ruling. McShane is one of nine openly gay members of the federal judiciary, according to the Human Rights Campaign. “The state’s marriage laws unjustifiably treat same-gender couples differently than opposite-gender couples,” McShane wrote in his ruling. “The laws assess a couple’s fitness for civil marriage based on their sexual orientation: opposite-gender couples pass; same-gender couples do not. No legitimate state purpose justifies the preclusion of gay and lesbian couples from civil marriage.” The judge also asked that the ruling go into effect immediately. Shortly after the ruling’s release, NOM filed for a stay with the Ninth Circuit Court of Appeals, which was denied.

Seattle, WA – A gay Boy Scout plans to deliver a petition with over 120,000 supporters to Amazon this week, asking that the company cuts ties with the Boy Scouts of America. Pascal Tessier, a 17-year-old Eagle Scout, is asking Amazon to remove the BSA from its AmazonSmile program, which allows shoppers to donate 0.5 percent of their purchases towards a charity of their choice. Tessier has pointed out that the AmazonSmile admission policy requires that eligible charities “do not engage
in, support, encourage, or promote … intolerance, discrimination or discriminatory practices based on race, sex, religion, nationality, disability, sexual orientation, or age.” Amazon appears to be standing their ground on the issue, even after GLAAD representatives contacted Amazon and referenced the policy. Tessier plans to deliver the petition Wednesday to Amazon headquarters in Seattle, according to the Huffington Post. Tessier will be joined by GLAAD and Scouts for Equality. The date also lines up with the opening of the Boy Scouts National Meeting in Nashville.

ichael Sam, the 6’ 2”, 255-pound defensive lineman from the University of Missouri, made National Football League history by becoming the first openly gay athlete to be drafted by the NFL several weeks back. As if that weren’t enough to get our attention, the African American celebrated the moment by kissing his white boyfriend, former Missou swimming star Vito Cammisano, as the ESPN cameras rolled. And as historic as the draft pick was, it is the kiss—no, make that multiple kisses--that the emotional pair shared that has continued to make headlines around the world. While the vast majority of the feedback has been positive, there have been those in the testosteroneworld of über-masculinity known as the NFL who found it difficult to stomach. Miami Dolphins safety Don Jones tweeted “OMG” and “Horrible” seconds after the kisses were aired live on ESPN. Jones was called on the carpet by the Dolphins, removed from team activities, fined an unknown amount of cash, and sent to “educational training” for his actions, in addition to taking the tweets off-line. Derrick Ward, who was part of the New York Giants squad when the team won the Super Bowl in 2008, wrote, “Man U got little kids lookin at Michael Sam and Vito Cammisano the draft. The classic novel and Academy award winning film One Flew Over the Cuckoo’s Nest is given the stage treatment by local Andrew Living Arts Studio. Dale Wasserman’s adaptation of Ken Kesey’s break-through novel concerns the action of the residents at a “loony bin” in the 1960’s. The stern and vindictive Nurse Ratched is a camp-friendly nightmare, at odds with new patient “misfit” Randal McMurphy, who awakens both the staff and the other residents. Written in 1962 between the Korean and Vietnam War, the play reflects a time when poets, singers and artists united in opposition against social injustices. Honduran-born comedian Carlos Mencia tackles topics as diverse as everyday hypocrisies, absurdities, ethnic stereotypes, race relations, immigration, war, patriotism, capitalism, pop culture, current events and family. Carlos is best known for his wellreceived Comedy Central show, Mind of Mencia. Despite some rather unfortunate public relations moments (including backlash after his inappropriate joke: “I’m glad Hurricane Katrina happened. It taught us black people can’t swim”), Mencia has maintained a successful career as a comedian. WANT MUSCLE? TIPS TO GAINING SIZE Q: What tips or advice would you give to someone wanting to gain muscle size? A: First and foremost, focus on increasing your strength rather than your size. The best way to do this is to make compound sets the foundation of your workouts – these are exercises such as the Bench Press, Lunge and Cable Chop which work multiple muscle groups and allow you to use heavier weight. To work the biceps, for example, you might immediately think of a single joint exercise like a Dumbbell Biceps Curl. Replace that with a compound exercise like a Seated Row and you will work not only your biceps but muscles in your upper back. The benefits: you’ll burn more calories, your overall strength will
increase and your biceps will grow faster than doing the Bicep Curl alone. A few other recommendations: • There are dozens of training methods, none of which is perfect, but the concept of progressive overload – making each set heavier than the last while decreasing the number of reps – and training to failure are universally accepted as effective in building muscle quickly. Don’t stop at eight reps on your third set of Incline Bench Presses if you can squeeze out two or three more! Work out with a gym buddy or trainer so you will have the help you need to lift heavy and achieve failure. •L imit your strength training to one hour. After that time, the body increases

TIP OF THE WEEK: OMEGA-3 FATTY ACIDS OFFER MANY HEALTH BENEFITS It’s well known that salmon is a rich source of high-quality protein and omega-3 fatty acids, a “good” fat which helps reduce the risk of heart disease and diabetes and has anti-inflammatory properties. But now research suggests omega-3 fats also play a role in weight loss as salmon and other foods high in omega-3’s increase blood levels of a hormone called leptin, which makes your belly feel full. A weekly serving of salmon will give us an adequate supply of omega-3’s. If you dislike eating salmon, supplement with Omega 3-6-9 capsules available at drug and vitamin stores. Tip: Store them in the refrigerator and you will digest them easier.

its production of the hormone cortisol which has the effect of blocking testosterone and wasting muscle. Guys who spend three hours in the gym are not having efficient workouts. • Vary your workouts every 8 to 12 weeks and include total body workouts which will work all muscles and increase your overall strength. Incorporate new exercises. Work opposing muscle groups in the same workout (e.g., chest and back or biceps and triceps). • Incline and Decline Presses and Flyes (for your upper and lower pectorals, respectively) are staples in building your chest. To make your presses about 30% more effective, try replacing your standard grip with a reverse grip. • Supplementation plays an
important role in building muscle. A whey protein isolate (at least 50 to 60 grams a day) together with creatine monohydrate can do wonders to build lean muscle. Mix the whey protein with 5 grams of creatine in 250-300 liters of Gatorade and drink one of these 30 minutes before and another immediately after your weight training. My current personal favorite pre-workout drinks are Pump Igniter by Top Secret Nutrition and C$ Extreme by Cellucor. • Add unilateral exercises (working one arm or leg at a time) to your program to even out any imbalances you may have and prevent injury. One-arm Lat Pulldowns and Unilateral Dumbbell Bench Presses are among my favorites. These exercises create
instability which is fantastic to strengthen your core as your muscles are working not only to move the dumbbell but to keep you stable as well. • Proper nutrition, of course, plays an integral role in building muscle. Eat small meals five to six times a day, cut out fast food and sodas and drink plenty of water. ere is a sweet and savory one…. I’m still stuffin’ crêpes! (See the recipe for crêpes at floridaagenda.com/2014/04/30/ crepes/ ) Preheat your oven to 350 degrees. Lay your first crepe out. Spread ¼ cup of the jam on. Layer 2 slices of prosciutto and top with a slice of Gorgonzola. Fold crepe into quarters. Repeat procedure with remaining crêpes Place the crêpes on a baking sheet and bake until the cheese begins to melt. Serve immediately. Note: This is a very filling dish and I find that one crepe per person is quite sufficient for a quick dinner, especially when served with a side. I love to make a big tossed salad with greens and tomatoes as a side dish for this one. But do it your way, you are the chef.

CREATIVE TYPES In the introduction to her book, The Animals: Love Letters Between Christopher Isherwood and Don Bachardy (Farrar, Straus and Giroux, 2014), edited by Kathleen Bucknell, Bucknell writes, “From February 14, 1953 until January 4, 1986, the conversation between Christopher Isherwood and Don Bachardy never stopped.” One of the greatest true gay love stories of all time, the relationship of legendary author Christopher Isherwood and visual artist Don Bachardy was immortalized in the acclaimed 2007 doc Chris and Don: A Love Story., and readers can now get another intimate glimpse into their lives through this collection of correspondence. Lauded (and openly gay) British composer Benjamin Britten (The Young Person’s Guide to the Orchestra), who collaborated with other queer writers of the time, including W.H. Auden and E.M. Forster, is given the biographical treatment in Benjamin Britten: A Life for Music (Henry Holt, 2014) by Neil Powell. Influential (and somewhat controversial) 20th century “cultural impresario” Carl Van Vechten is the subject of The Tastemaker: Carl Van Vechten and the Birth of Modern America by Edward White (Farrar, Straus and Giroux, 2014). A familiar
face during the Harlem Renaissance, Van Vechten’s circle included Langston Hughes, Gertrude Stein, Zora Neale Hurston, Bessie Smith and F. Scott Fitzgerald. A coffee table book, A Journey Through Literary America (Val De Grâce, 2014) by Thomas R. Hummel, with photography by Tamra L. Dempsey, takes readers on a wondrous voyage through New England, the South, the West, the Midwest and beyond, focusing on “the places that America’s great writers had described in their own words.” The writers, living and dead, represented include Raymond Carver, Phillip Roth, Toni Morrison, John Updike, Rita Dove, Ernest Hemingway and William Faulkner. Queer voices, including Langston Hughes and Willa Cather, are also present, as is E. Annie Proulx, straight author of the novella Brokeback Mountain. Edited by Robert Kirby, Qu33r: New Comics from 33 Creators (Northwest, 2014) includes Diane DiMassa, Ed Luce, Justin Hall, Jennifer Camper, Steve MacIsaac, Amanda Verwey, David Kelly, Jon Macy and Eric Orner, providing personal essays in images. Ethereal Queer: Television, Historicity, Desire (Duke, 2014) by Amy Villarejo, a professor of Performing and Media Arts at Cornell University, takes a close look at the representation of queer life on television and how it has evolved from the 1950s to the present day.
STRONG WOMEN Best known as the straight-talking lesbian host of the popular Bravo series “Tabatha Takes Over,” Tabatha Coffey publisher her first book, It’s Not Really About The Hair: The Honest Truth About Life, Love, and the Business of Beauty in 2011. The follow-up tome, Own It! (It Books, 2014), subtitled Be the Boss of Your
Life – at Home and in the Workplace, contains more useful advice delivered in Coffey’s trademark style. Journalist and blogger Kelly Cogswell tells her own story in Eating Fire: My Life as a Lesbian Avenger (University of Minnesota, 2014). Abandoning her Southern Baptist roots for a new and queer life in the East Village of the `90s, Cosgrove immersed herself in activism, plunging into the explosive, fire-eating world of the Lesbian Avengers’ brand of inyour-face action, protests and marches, all in the name of making the world a safer place for “baby dykes,” lesbians and women everywhere. Before there was openly gay football player Michael Sam, there was out, 6’8” WNBA Mercury Phoenix player Brittney Griner. Her memoir In My Skin: My Life On and Off the Basketball Court (It Books, 2014) by Brittney Griner with Sue Hovey follows her from her Houston childhood to college at Baylor University (where she played basketball) to her career as a professional athlete.
PERSONALS The “pilgrimage” in the title of Does Jesus Really Love Me?: A Gay Christian’s Pilgrimage in Search of God in America (Harper Perennial, 2014) by Jeff Chu takes the writer on a 20,000 mile trek through almost 30 states resulting in more than 300 interviews with people asking and answering similar questions in regards to their own spiritual journeys. A memoir by Pacific Northwestbased writer Ross Eliot, Babette: The Many Lives, Two Deaths and Double Kidnapping of Dr. Ellsworth (Heliocentric, 2014), traces the writer’s experience during the time he acted as caretaker for Professor Albert Ellsworth, whose Southern French high society childhood and later gender reassignment surgery to become Ba-
bette, bracket a life that makes for a lively read. Consisting of 26 personal essays, In A New Century: Essays on Queer History, Politics, and Community Life (University of Wisconsin, 2014) by award-winning writer and newly retired university professor John D’Emilio, looks at history and its lessons, strategizing and making change, and the under-valued gay community in Chicago. Over the course of the 12 “Essays on the Body” in You Feel So Mortal (University of Chicago, 2014), Peggy Shinner touches on subjects ranging from feet to posture, from shoplifting to self-defense, from bras to nose jobs, from anti-depressants to autopsies, and places in between and beyond.
LOCATION, LOCATION, LOCATION Growing out of South Africa, journalist Mark Gevisser’s obsession with Holmden’s Register of South Africa street guide, Lost and Found in Johannesburg: A Memoir (Farrar, Straus and Giroux, 2014), “charts” the writer’s “intimate history of Johannesburg.” For Safe Space (Duke, 2014), Christina B. Hanhardt, Associate Professor of American Studies at University of Maryland, College Park, drew on research in Manhattan and San Francisco to trace the way queer activism and the development of urban communities have intertwined for the past 40 years. And anyone who has seen hetero takeover in Chicago’s Boystown, NYC’s Chelsea, San Francisco’s Castro, Washington DC’s DuPont Circle or Boston’s South End neighborhoods will find something to relate to in sociologist Amin Ghaziani’s There Goes The Gayborhood? (Princeton, 2014).

THE LAST PICTURE SHOW BY GEORGE DAUPHIN
I
n the original 1950 movie Sunset Boulevard, William Holden finds himself inside the world of silent movie star Norma Desmond (played by Gloria Swanson). “Haven’t I seen you before?” Holden asks Swanson. “You’re Norma Desmond,” Holden insists, after Swanson tells him to get out of her house. “You used to be in silent pictures. You used to be big.” “I am big,” Swanson says with appropriate flair. “It’s the pictures that got small.” The month-long Classic Film Festival, which comes to an end on May 22nd, is designed to make the pictures big again. Movies like The Wizard of Oz, Dr. Zhivago and North by Northwest were shown as they were originally meant to be seen — on the big screen. The same type of movies that would be shown at the Gay Pride Center movie club — only in a movie theater with all that goes with it, including the smell of popcorn, to enhance the experience, not just a group of men on folding chairs watching a TV screen. The Festival is held at The Last Picture Show theater (AKA Tamarac Cinema 5), which is, in its own right, a relic of motion picture history. The hallways of the The Last Picture Show — and the walls surrounding its significant, old fashioned, concession counters — pay tribute to the classic movies and stars of yesteryear. Some walls pay homage to sports heroes, such as Babe Ruth and Mickey Mantle, or music greats, such as The Harry James Orchestra or the Beatles. They are all full-size posters as well as original photographs. The Last Picture Show is coowned by Arthur E. Friedman, who is also the producer of films such as Price of Glory and Beyond

Friedman got his start as a mail clerk at Columbia Pictures in the late 50’s and went on to become one of the country’s top movie distributors/representatives and theater owners, mainly in New England. He is presently writing a memoir, Tinseltown Tango, which is guaranteed to be one of the classic accounts of Hollywood lore. Friedman and Morrie Zryl, General Manager of The Last Picture Show, are two of the most knowledgeable people I’ve ever met when it comes to the history and trivia of the movies. A tour of the theater by Zryl is worth making the trip to Tamarac, which is not that far, when you consider that it’s directly West on Cypress Creek Road until it becomes McNab, much of which are sections without traffic lights. When I suggested a Ken Russell film festival would be of interest to a gay audience, Zryl ran through what seemed like all the movies that Russell directed and who starred in them. He really knows his stuff. (I don’t know about Florida, but when I was in New York, there was a gay cult following of Russell’s The Boyfriend because of its star, Twiggy.) Ken Russell aside, Arthur Friedman wants to show more classic films at the theater. But it all depends on what’s

available in digital, according to Morrie Zryl. The classic movies that were shown this past month were not on film— they are high definition digital versions of the originals. That means no scratches, marks or cuts. Gone are the interruptions that used to plague screenings, when the film would break or the projectionist needed to switch reels. It also means that whether you sit close to the screen or far back, you get the same resolution. “I think if you were to show a movie like All About Eve on the big screen, you would definitely get a gay audience interested,” I told Arthur Friedman. “All About Eve,” Friedman agreed, “is a great movie and certainly qualifies as a classic. Perhaps that will be on the list for next year’s festival.” “I hope it will be more often than
that,” I said. “Well, maybe one in the fall.” And so, it seems the idea of a Classic Film Festival has a future. In the meantime, The Last Picture Show remains a terrific neighborhood theater that seems to have a soft spot for newly released small features that tell a story, as much as the action movies that appeal to a younger audience. It was one of the few theaters that had a long run of Philomena last year, and I have more recently enjoyed seeing John Turturo’s Fading Gigolo. They are also not afraid of foreign films, such as The Lunchbox, currently being shown at The Last Picture Show. The Last Picture Show is located at 10036 W. McNab Rd., Tamarac, FL 33321. hen it comes to dining on vacation, travelers tend to fall into two categories; those that play it safe and familiar and those more adventurous folks who want to sample all the local delicacies. If you’re one of those people that likes safe and familiar, stop reading and go download the list of KFC stores worldwide. If you want a bit of adventure in your dining, read on. Spring rolls can be found in most Asian cuisines, but in Vietnam it is almost the official national dish. Try nem nuong cuon, grilled pork sausage wrapped in rice paper with lettuce, cucumber, carrot, daikon and mint, the most popular version (be sure to try the accompanying sauce, usually a house specialty). Chao tom cuon, switches out cold shrimp for the pork sausage. Both can usually be had at food carts as well as practically every restaurant in the country. They’re a favorite late night treat among locals. In the Balkans they may not agree on much, but cevapcici is a favorite that crosses all borders. Depending on where you are, Croatia, Bosnia, Serbia or Montenegro, it may be made with pork, lamb, beef or a combination of the three. Ground meat is combined with onions and garlic, formed into sausages and then grilled, boiled or fried and served with bread, often homebaked, to make sandwiches. The condiment of choice is ajvar, a roasted red pepper and olive oil spread. Most Americans think of Italy when they order gnocchi. However, in Uruguay, the dish is so popular that the 29th of each month is known as “Dia de Noquis,” or Gnocchi Day. The custom derives from the fact that at the end of the month money has often run out, and the combination of potatoes, flour and an egg makes for a budget-friendly dish. Many Uruguayan restaurants offer a variety of gnocchi dishes with the classic, noqui de papa, or potato gnocchi, being the favorite. Fancier versions are flavored with cheese, tomatoes, spinach or even seafood. By now, everyone has heard of tapas, the Spanish “small plates” menu. Meze (also spelled mezze), is the Middle East/Medi-
terranean take on the same idea. Depending on where you are, a meze platter could include labne (strained yogurt cheese), baba ghanoush (seasoned diced eggplant), muhammara (a hot pepper dip with breadcrumbs, garlic, salt, lemon juice and olive oil) or tabbouleh (bulgur, finely chopped parsley, mint, tomato, scallions, lemon juice and olive oil). Stuffed grape leaves, filled with rice or a combination of rice and lamb, are usually included in the platter. Eat it all with warm pita bread. The traditional Quebecois dish poutine is made with French fries, brown gravy and cheese curds. There have been bastardized versions popularized around the world; such as “disco fries” or even KFC’s mashed potato-version. Poutine is currently the trending dish in the restaurant industry and you’ll find versions including meat, caramelized onions and assorted vegetables. However, nothing beats the original and the key is fresh cheese curds (you know they’re fresh when they “squeak” when bitten) and homemade gravy. Chile is one of the world’s top avocado producers, so it’s no wonder that its national dish, the completo, features avocado. Start with a hefty bun holding a jumbo hot dog (size queens rejoice, it’s twice the size of an American hot dog) pile on avocado, tomatoes, sauerkraut, mayonnaise, chili, sauce and cheese. It’s a messy dish, served with plenty of napkins. If the sugar-coated, crispy pastry deliciousness of a Spanish churro doesn’t give you enough of a sugar rush, try dunking the fried dough into a steaming cup of thick hot chocolate as they do in Spain. Forget Wheaties, this is the breakfast of champions. Saag paneer, spicy creamed spinach with chunks of cheese served with a side of warm naan (a pita-like bread) is an Indian favorite. Paneer is a unique non-melting cheese that might be mistaken for tofu (which is sometimes substituted to make this a vegan dish). Peru’s favorite dessert, queso helado, translates literally as “cheese ice cream.” While that sounds delish, there’s actually no cheese in the dish. The name stems from its traditional preparation, which makes the dish look more like sliced cheese than a scoop of ice cream. It is a sort of cinnamon flavored frozen rice pudding made

from sweetened condensed milk, often with a touch of coconut. Try it from any of the push-carts or local shops. In Morocco make certain to end your meal with ktefa; crispy pastry layered with sweetened almonds and creme anglaise, a custard-like sauce. Some find that the scented orange flower water-based syrup makes it smell a little soapy. If you’re going to be trying all these local dishes, it’s best to follow a few simple rules to avoid problems. Be sure your dish is served hot, and take a look at the restaurant, cart or kiosk before ordering. Does it look clean and well kept? Is it busy? If so, the food will not be stored as long. Remember that you can contaminate your food as easily as the food vendor. Wash your hands before you eat, especially if you’ve been shopping and handling merchandise
or money. Keep in mind that you must use “safe” water to wash. Finally, if you have special food restrictions, such as allergies or are a vegetarian, and are traveling in a non-English-speaking country, it’s a good idea to have a phrasebook on hand to help translate the menu. Before you go on your trip, go on-line to Google Translator and type in phrases you might need, such as; “Does this dish have nuts?” or “What kind of meat is in this?” Don’t ask, “Does this dish have meat in it?” Definitions of meat vary widely. Even in the U.S. my vegetarian husband was once served a dish with lamb, even after he told the chef that he didn’t eat meat. Bring Pepto-Bismol tablets with you just “in case” and, of course, those with compromised immune systems should avoid potentially risky dishes.
