Florida Congresswoman Talks Wilton Manors Mayor with Cuban LGBT Activists Announces New Benefits for Washington, D.C. – Ileana Ros-Lehtinen Domestic Partnerships (R-Fla.) met with two Cuban LGBT rights activists in her Capitol Hill office to discuss human rights in Cuba. The Washington Blade, who had exclusive access to majority of the meeting, identified the activists as Wendy Iriepa Diaz and Ignacio Estrada Cepero. Cepero founded the Cuban League Against AIDS in 2005, and has dismissed Cuban government claims that people with HIV/AIDS receive anti-retroviral drugs and other treatments under the Cuban health care system. Diaz, a transgender woman whom Cepero married in 2011, criticized Mariela Castro, daughter of President Castro and the director of Cuba’s National Center for Sexual Education (CENESEX) who has publicly backed LGBT rights in the country. Ros-Lehtinen told The Blade, “It’s very important for the U.S. Community to understand what is the status of LGBT rights and the denial of rights in Cuba. Mariela Castro, as part of the regime, has been on a propaganda tour internationally and here in the U.S. especially trying to sell this facade that is really non-existent in Cuba.

Wilton Manors Mayor Gary Resnick con-firmed that the City Commission of Wilton Manors has adopted a new policy of providing a tax equality benefit for employees with domestic partners, through a letter to the editor in the August 6 issue of the Sun Sentinel. “As an early support of domestic partner benefits, I pushed for the city to offer employees domestic partner benefits, since first elected in 1998,” said Resnick. Resnick states, “If an employee has a domestic partner who receives health insurance, the employer’s payment of its share for such insurance is taxable. Depending on the employee’s tax bracket, this may cost the employee an additional $500 to $1000 per year in federal income. If the employee was married, however, the employee would not be taxed on the same $3,000 the city pays for insurance for his/her spouse.” Resnick goes on to state that Wilton Manors realized that the IRS tax treatment “amounted to unequal treatment for domestic partners compared to married couples.” Therefore, the Committee proposed that the city should adopt the tax equity benefit, taking

note from cities such as Hallandale Beach and Miami Beach, who have already taken similar steps this year. “Under the Affordable Health Care Act, commencing January 1, 2015, all employers with more than 50 employees must offer their employees domestic partner health insurance benefits,” says Resnick. “As a result, it is widely believed that before such date, the IRS will revise its rules to create equal tax treatment for married and domestic partner couples.”

Two-Year-Old Boy Assaulted for Wearing a Pink Headband Katie Vyktoriah was doing some quick, innocent shopping in a Polk County Walmart when she and her two-year-old son received more than they bargained for. According to the story (which she submitted herself via A Mother Thing), Vyktoriah’s son Dexter “loves to be Batman and Superman and Spiderman,” but his favorite color also happens to be pink. “He loves Dora the Explorer,” says Vyktoriah. “He has been known to wear my skirt as a dress, and he

delights in cuddling with his mama.” After struggling to get her two boys ready to do some basic shopping, Dexter fought to keep her lace flower headband on his head (which she says he had been wearing all day). Thinking nothing of it, they set off for the store. Heading toward the checkout, two girls giggled, asking if Dexter was a boy or girl. When Vyktoriah told the girls he was a boy, an man walked up to them, yelling, “That’s a boy?!” After confirming Dexter’s sex, the man grabbed the headband off of the boy’s head, cupping the side of his head, telling the two-year-old, “You’ll thank me later, little man!” When Vyktoriah got in between the two, the man told her, “Your son is a f***ing fa***t. He’ll get shot for it one day.” While Vyktoriah is upset over the issue, she is more concerned about the futures of her children. “The fact that homophobia is so rampant, that gay marriage is still seen as dirty because homosexuals are ‘lesser’ somehow and don’t deserve the same rights as straight folk, that people like that man in Walmart even exist makes me fear for my kids and their futures.”

Washington, D.C. – According to Buzzfeed, Sen. Jeff Merkley (D-OR) is drafting a resolution that will ask the International Olympic Committee to oppose Russia’s anti-LGBT legislation. The resolution would also demand that the Russian government guarantee the safety of Olympic athletes and spectators. If passed, Merkley’s resolution would be the Senate’s first formal statement regarding the new Russian law, which was signed by Putin in June. The resolution was drafted in response to a statement made by Vitaly Milonov, St. Petersburg legislator of the United Russia Party, who stated on July 30 that the gay propaganda law would be enforced during the Olympic games. Merkley responded to the statement via Twitter before penning the legislature: “Outrageous. Olympic discrimination against LGBT athletes and spectators is 100% unacceptable.”

New York, NY – A poll conducted by Reuters shows that majority of people in America believe that samesex marriage laws should be decided on by the Supreme Court. The poll, which took place between February 28 and July 30, shows that 32.6% of Americans believe that the responsibility is the Supreme Court’s, 26.3% think it should be made by state voters, 11.2% want it to be made by state legislatures, 9.9% voted for U.S. Congress to make the choice, and an overwhelming 20% “don’t know.” While the latter is quite amount of people, 32.6% is a sizeable jump from the 26.5% that was initially reported on March 1, just days after the survey began. Over 40% of respondents under the age of 30 think that the issue should be decided on by Supreme Court, with

respondents over 50 are seemingly split down the middle, with 29.9% choosing the Supreme Court and 28.3% picking state voters.

Protest at Russian Consulate in San Francisco San Francisco, CA – To raise awareness for Russia’s hostility toward LGBT people, activists protested outside of the Russian Consulate in San Francisco, according to ABC. Protestors waved a large rainbow flag outside of the building, protesting the Sochi olympics with volume. San Francisco Supervisor Scott Wiener told ABC, “You start with the laws that start marginalizing and criminalizing entire groups of people and it’s just outrageous. There needs to be more focus on this, and Russia needs to be forced to back off.” Following the passage of the recent gay propaganda laws, gay and lesbian Russians have been beaten and harassed, with no legislature protecting them.

Nixon Tape Surfaces: Homosexuals Are ‘Enemies of Strong Societies’ Atlanta, GA – In a recording published by CNN last week, former president Richard Nixon expressed serious concerns against the LGBT community. Throughout the recording, Nixon touched on how a “damn baseball game” was interrupted by an episode of “All In the Family” that was “glorifying homosexuality,” centering on one of Archie Bunker’s gay friends. Nixon went on to state that the downfall of the Greek and Roman civilizations were due to homosexuality. “You know what happened to the Greeks,” Nixon says in the recently unearthed tape. “Homosexuality destroyed them. Aristotle was a homo, we all know that. So was Socrates. But he never had the influence television has. The last six Roman emperors were fags. You see, homosexuality, immorality in general, these are the enemies of strong societies. That’s why the Communists and the leftwingers are pushing it.”

Albuquerque, NM – Ron McCoy and partner Chris Bowers landed in Albuquerque, New Mexico with plans to attend Albuquerque Pride weekend, but when they stepped onto a shuttle bus at the airport, they likely didn’t feel very welcome. After boarding the shuttle, the couple chose a seat towards the front of the bus, taking each others hands as they settled in. McCoy told Albuquerque’s KRQE, “I saw him look at us, look down at his hands, and he looked so angry. He just blurted out at me, he goes, ‘Okay, if you’re going to do that, you’re going to the back of the bus.’” Mostly in shock, the couple complied, heading to the back of the bus. Once the shuttle stopped at its destination, the couple came forward, confronting the

A woman on the shuttle, Bernadette Aguirre, jumped in at this point, upset by what she had seen, telling KRQE: “I told the bus driver that I was completely appalled that anybody would be treated this way.” McCoy says, “And the driver looks back at us and goes, ‘I’ll show you what’s appalling,’ and he points to us.” While the Albuquerque International Sunport Airport has issued a statement that the behavior was “absolutely unacceptable,” Sunport contracts their shuttle services through a company called Standard Parking, who refuses to accept that there was any discrimination made on the driver’s part. The company says that the driver has been working for them for over 10 years, defending that they’ve never had a problem with him to date. The couple has filed a complaint with the American Civil Liberties Union and are considering legal action.

ondon, England – Secretary of State John Kerry announced on Friday that U.S. State Department will immediately begin offering visas to married same-sex couples in the same way it does for heterosexual couples. On Friday morning, in the U.S. Embassy in London, Kerry made the announcement that was made effective immediately. “I’m very pleased to be able to announce that effective immediately, when same-sex spouses apply for a visa, the Department of State will consider that application in the same manner that it will consider the application of opposite-sex spouses,” said Kerry. “And here is exactly what this rule means: If you are the spouse of a U.S. Citizen, your visa application will be treated equally. And if you are in a country that doesn’t recognize your same-sex marriage, then your visa application will still be treated equally at every single one of our 222 visa processing centers around the world.” Kerry added, “One of our most important exports by far is America’s belief in the equality of all people.” Last month, Janet Napolitano, Secretary of Homeland Security, confirmed that Americans could now sponsor foreignborn same-sex couples for citizenship in the same manner that heterosexual couples can. Following up on the historic striking down of DOMA by the Supreme Court, Homeland Security issued the statement, confirming that married gay and lesbian couples will be treated the same for immigration purposes. Julian Marsh and Traian Popov from our very own city of Fort Lauderdale were the first to receive approval for a green card based on their marriage. Now, same-sex couples pursuing visas are granted the same right. When announcing the change, Kerry said the State Department was “tearing down an unjust and an unfair barrier that for too

Q&A

BY GRANT JAMES

P

lanting Peace is a non-profit organization that is giving back so much more than peace itself. The organization recently opened the Equality House, a rainbow-colored house that faces evil incarnate: The Westboro Baptist Church headquarters. Equality House held a lemonade sale earlier this summer, inspired by fiveyear-old Jayden Sink, to promote peace. While the Westboro Baptist Church hurled a crude rebuttal on their marquee, Jayden, her father, and the Equality House were unshaken. The event was so successful and inspiring, that Equality House has decided to do it again, this time on a national level. I spoke with Planting Peace founder Aaron Jackson regarding the Westboro Baptist Church, Jayden and their national lemonade fundraiser on August 10. Grant James: Tell me a little bit more about Planting Peace and the Equality House. Aaron Jackson: Planting Peace is a non-profit organization that promotes peace in a hurting world. So far, we’ve opened six orphanages around the world, protected 600 acres of rainforest in South America, brought life-saving medication to 14 million starving children, planted roughly one million trees, and of course, founded the equality house. That’s a hell of a lot of good deeds. What’s the upcoming lemonade sale all about? Earlier in the summer when Jayden Sink’s dad, Jon Sink, contacted us to have a lemonade stand in the front lawn to benefit us, we honestly didn’t think much of it. In the following few days though, the simple lemonade stand got quite a bit of attention. Because of its success, the Sinks decided to come back at the end of the summer for Jayden’s last lemonade stand of the year. Since she had so many fans and supporters from her last stand, we decided to include everyone this time, and ask parents and their kids all over the world to join in with their own lemonade stands for peace. So on August 10th, we are inviting everyone to host a lemonade stand benefitting the charity.

philanthropy.

How can people contribute who aren’t local to any stands? If you’re not local and there aren’t any lemonade stands in your area, you can contribute online at www.equalityhouse.org. You can also sign up on our site to become a member of the equality house movement.

If you could work on an equality event with any politician, who would it be? Jimmy Carter is my all-time hero, so I’d love to do any kind of event with him for the charity.

How is Jayden doing? Jayden is doing great. She is very excited to be coming back to the Equality House – which she thinks is the most beautiful place in the world – after a long summer of lemonade stands and

Do you guys ever get threatened by them? Do they ever try to intimidate you because of what you’re doing? No, we don’t feel threatened by the Westboro Baptist Church. In fact, as neighbors we are pretty cordial to each other. We’re very civil in person. But of course they dedicate a lot of signs to us… after the first lemonade stand they changed their marquee to damn us to hell, as usual. They had written “F**s and enablers all burn in hell. Lemonade won’t cool any tongues.” But they keep a nice lawn.

What’s your end goal for Planting Peace and Equality House? It seems like there will always be something we can keep doing to work towards that, but I guess for now our end goal is to do as much as we can to end bullying, starvation, and the various other problems our world faces today. It’s a big goal obviously, but we like to think big around here.

August 7, 2013 H 9

Aside from the Westboro Baptist Church, what was the response like for the first lemonade sale? The response we had was incredible and unexpected. We had people in our lawn all day, includ-

ing a group of military members on motorcycle, who donated generously and bought up a lot of lemonade. As we advertised it on our Facebook pages, we had several people from all over the world reach out to us, saying they would love to come out and support, but couldn’t make it to Topeka, KS so we decided to set up an online fundraiser for people to donate to Jayden’s lemonade stand from afar. That was when everything really took off. The community support we had on the lawn was awesome, and the money poured in online in the thousands. Everyone really rallied behind Jayden and her message of peace. The support was just incredible.

eter Jackson is the definition of a gamechanger: He literally swapped out his career for another. British by birth, Jackson was born in Jamaica in 1962 (when it was a British Colony). He spent most of his youth in the Caribbean, which isn’t exactly known for its tolerance for homosexuality. When Jackson came out (at the age of 30), he didn’t have a support system: One of Jackson’s brothers didn’t speak to him for six years, and one sister still doesn’t. “Does it affect me?” Jackson asked rhetorically. “Yes, it hurts. But I have not allowed it to dampen my spirit.” Fortunately for Jackson, since his siblings moved out of the house and got married at early ages, he developed an independent spirit of sorts. Though he didn’t have a support system within his family, Jackson didn’t turn to drugs or alcohol for comfort. “A big part of it was simply my resolve that I had self worth, and I was not going to allow my sexuality to define who I was,” says Jackson. “I’m a lot of other things in addition to being a

gay man.” Love is universal, and to Jackson, he wouldn’t let one facet of his personality to affect his entire life. When Jackson decided he wanted to become a journalist, his father was devastated: “He told me that journalists were alcoholics, they were drunks, and they were homosexuals. He got one of those right.” Jackson told us that he knew had a passion for journalism around the age of eight, when he would read the daily paper religiously. Jackson went on to attend Emerson in Boston and became a journalist. At a very early time in Jackson’s career, he got into the business side of journalism, leading him to advertising and sales. At the height of his career, he served as vice president of sales and marketing for one of the largest privately-owned media chains in the USA, responsible for revenue development and growth for more than 120 newspapers in 12 states. Always a fitness enthusiast, Jackson became certified as a personal trainer in 1995 simply to gain knowledge for his personal benefit. As he transformed his own body, friends and friends of

friends asked him to help them achieve their fitness goals and so personal training became a lucrative side business to his career in the newspaper industry. While training a client in Fort Myers, Jackson realized how burnt out he really was on journalism. His client told him, “You’re such a good trainer. I don’t understand why you’re not doing this full-time.” A light bulb went off in Jackson’s head, and it was full speed ahead. Jackson opened Push Fitness in Oakland Park, creating a niche for himself with unique workouts and programs. From group training to one-on-one training (including specialized training for individuals living with HIV), Jackson believes his passion is what propels his business. “You’ve got to be passionate about what you do. Otherwise, what’s the point? The fact that I have a successful business is one part of it, but being passionate about it what really makes it enjoyable.” Peter Jackson is proof that it’s never too late to change your life completely.

THURSDAY 8/08

Grease is the Word In 1971, a little Broadway musical named “Grease” was born. The production invited viewers to travel back in time to the 1950s to reminisce the days of greasers, sock hops and teenage rebellion, because why not? 1978 saw the release of John Travolta’s last good feature film, based on the 1971 production of the same name, which brought the songs up to “cult” status. Thanks to the film, “Summer Loving” has been covered more times than Anthony Weiner’s weiner, and Olivia Newton-John is still touring (surprisingly enough). The film went on to surpass the stage production in terms of popularity and revenue, but the musical has

still seen its fair share of revivals, making it Broadway’s fourteenth longest-running show. Running until August 9. 8 p.m. Parker Playhouse. 707 NE 8th St, Fort Lauderdale, 33304.

FRIDAY 8/09

Galanga’s New Happy Hour Check out Galanga’s new happy hour from 5-7 p.m, Monday through Friday to take advantage of $5 saketinis, $4 beers, $5 appetizers and $10 entrees in the elegance of the Wilton Drive spot. The restaurant may be under new ownership, but it offers up some serious competition, including one of the community’s favorite deals: two-

for-one lunches (weekdays with the purchase of two beverages). The restaurant offers a variety of Thai dishes and sushi rolls to customers, as well as catering deals for virtually any occasion. Galanga is a great place to catch up with friends over dinner or drinks, but the contrasting sleekness and comfort of the space itself makes it a versatile spot for any event. Open 12 p.m. 3 p.m. for lunch and 5 p.m.- 10:30 p.m. for dinner (open til 11 on weekends). Galanga Thai Kitchen & Sushi Bar. 2389 Wilton Dr, Wilton Manors, 33305.

Madonna’s birthday (08/16) is essentially a holiday within the gay community. This year Madge turns 55 (allegedly), and The Manor is honoring the “material girl” with their own Madonna-themed party, called “Madonna-Rama.” Not to be confused with Bananarama, Madonna-Rama will feature a video and music tribute to the queen of pop, with a guest DJ sed by Ed Bailey and special drag performances by Erika Norell and crew. In the Noche Latina room, celebrate Champagne Bordeaux’s birthday party with hostess Viva Mirage and DJ Larry Larr. $3 Iced teas, and as always, no cover. 10:30 p.m. The Manor. 2345 Wilton Dr, Wilton Manors, 33305.

Snow In Miami In a very confusing analogy, Variety states “Snowshow is to clowning what Cirque du Soleil is to circus.” Basically, Snowshow is a creation of Slava, one of the original clown pioneers of Cirque du Soleil. The production has been compared to a cross between Cirque du soleil and Blue Man Group, blending a whimsical atmosphere with comedy, music and snow. Yes, actual snow. This year’s production is a follow-up to last year’s sold-out performances in over 80 cities around the world including New York, Paris, Los Angeles, Rome, Hong Kong and more. See what The Times is calling an“unmissable” production that’s fun for all ages. After all, you’re never too old for the circus, right? Right? 7 p.m. Adrienne Arsht Center. 1300 Biscayne Blvd, Miami, 33132.

OneRepublic You may remember OneRepublic from their 2007 single, “Apologize,” most likely the re-remixed version from Timbaland that received major play on radio stations across the world. It seemed as if the world was Timbaland’s oyster in 2007, with singles “Give It to Me,” “The Way I Are” and “Apologize” all climbing the charts from his album “Shock Value.” OneRepublic’s single “Apologize” broke many records, including the biggest radio airplay in the history of Billboard’s North American

American rock/country band Alabama is now in their 40th year of making music: That’s a little over two Justin Biebers if you need some sort of unit of time to fully grasp the longevity of their career. Alabama was formed by cousins Randy Owen and Teddy Gentry who grew up together in – you guessed it – Fort Payne, Alabama. The band decided they wanted to pursue music full-time in 1973, quit their day jobs, and moved to Myrtle Beach in South Carolina. There, they landed a gig playing at The Bowery for the summer as the house band with little to no pay (they lived primarily off of tips). Q: Can you recommend a good exercise to tighten my butt? A: Absolutely! You are referring to your gluteus maximus, called glutes for short, which are a group of three muscles located at the back of each hip. While many guys give the “glamor” muscles of the chest, back and arms almost all of their attention in the gym, the glutes deserve attention as they are actually the largest and strongest of the 639 named muscles in the body. They are extremely important, too, with responsibility for keeping the body upright. They also play an anti-gravity role to allow us to climb stairs and hills. A toned, round bubble-butt is always an attention-grabber! And the good news is the glutes usually respond quickly to resistance training. The best exercise to tighten the glutes, hands-down, is the squat. This compound exercise (meaning it incorporates multiple joints and muscle groups) is largely considered one of the best exercises you can do – period. It works the glutes, quadriceps and hamstrings (front and back of your upper legs, respectively) as well as the calves and core. There are dozens of variations of the squat ranging from the Body-Weight Squat (great for beginners) all the way to Barbell Squats using heavy plates (advanced). Search YouTube for video demonstrations of other squat exercises and be sure to incorporate these into your workout program.

NO BUTTS ABOUT IT: BEST GLUTE EXERCISES

To perform a basic Body-Weight Squat: 1) S tand with your feet shoulder width apart and your arms stretched in front of you at shoulder level. Your back should be naturally arched. 2) Push your hips back, bend at the knees and lower your body as low as you can. 3) P ause, then use your hips and knees to lift your body back to the starting position. Perform three sets. As you build confidence, try holding a set of dumbbells at your sides while squatting to add to the degree of difficulty. Another great exercise to tighten the glutes is the lunge. Again, there are many variations of this terrific exercise. Use Google or YouTube for videos or contact me for a free demonstration.

ASK THE FITNESS MAN

TIP OF THE WEEK ORGANIC KETCHUP IS BETTER FOR YOU The big difference between store brand and organic ketchup has nothing to do with the amount of calories, sodium, or sugar in either – rather, it’s the amount of the cancer-fighting pigment called lycopene in the organic brands which acts as an antioxidant in the body. Organicallygrown tomatoes have twice as much lycopene as regular tomatoes. Lycopene, which gives tomatoes (and other fruits and vegetables such as watermelon and apricots) their red color, is not produced by the body. It has been shown to reduce the risk of prostate cancer in men. EXERCISE SPOTLIGHT Weight-plate Front Raise

PHOTOGRAPHY BY TOBYSPHOTOS.COM.

Guy Beeman demonstrates the Weight-Plate Front Raise.

August 7, 2013 H 15

This is a great exercise for your front and middle deltoids. Grab the sides of a weight plate with both hands and hold it in front of you at waist level, standing with your feet shoulder-width apart. Brace your core. Without bending your elbows, lift your arms until they are parallel to the floor. Perform three sets of 12, 10 and 8 respectively, adjusting the weight with each set to increase the challenge.

TRAVEL

SAN ANTONIO, TEXAS The Alamo Is Just the Beginning BY ROBERT ELIAS DEATON

“R

emember the Alamo” is more than a battle cry in San Antonio, Texas. It’s a way of life in America’s eighth largest city (with a population of 1,200,000). Of course, the Alamo (300 Alamo Plaza) is the most popular tourist attraction in town, and a trip to the mission is de rigueur for anyone visiting. This is more than the place where Davy Crockett and Jim Bowie lost their lives defending Texas’s independence against the Mexicans. It has come to stand as a symbol of resistance despite impossible odds. And, truth be told, it is an inspiring place. But that certainly is not the beginning and end of San Antonio tourist sights. Our personal favorite is the River Walk, which is a network of walkways that meander along next to the San Antonio River, one level below the street. It extends from the Alamo to the Rivercenter Mall (a shopping center with an AMC Theater); past the Arneson River Theater, a 600-seat outdoor arena whose stage is on the opposite side of the river from the audience seats; along Marriage Island (which is an islet in the river used for weddings: and past La Villita Historic Arts Village (which was originally an Indian settlement and became one of San Antonio’s first neighborhoods). Further along River Walk is the remnants of HemisFair ’68, a world’s fair whose themed character was a dragon named Luther, created by Sid Krofft. Krofft later reinvented Luther as the character H.R. Pufnstuf, who was the star of his own NBC series. River Walk continues to flow next to the Tower Life Building (home to the first Sears, Roebuck store in the city), the San Antonio Museum of Art (housed in the original Lone Star Brewery) and ends in the now closed Pearl Brewery (currently being redeveloped by new owners into a residential and retail site). Okay, when you’re thinking gay nightclubs in San Antonio, your choices are lead by Bonham Exchange (411 Bonham). Five dance bars in one, each with its own d.j., Bonham Exchange is large, loud, and full of go-go boys who wear next to nothing—just like you love it. Bar crawl alert: the drinks at Bonham Exchange are STRONG. Yes, even for you. While we’re talking go-go, the boys are sizzling hot at Heat (15 N Main Ave) where the ultimate White Party is held next Saturday, August 17. For those into leather, run, do not walk, to the Annex (330 San Pedro Ave) where on Friday and Saturday nights, leather rules. This is, of course, still Texas, the state where the two-step rules. The cowboys come out to play at Silver Dollar Saloon (1812 N Main Ave), where country music is the sound of choice. Expect plenty of cowboy boots and hats among the men who call the Silver Dollar home. Yes, there are drag shows, and yes, there is pool, but the real entertainment is on the dance floor. Flying into San Antonio from Fort Lauderdale is easy enough with a connecting flight on United Airlines through Houston, Texas, for an inexpensive round-trip fare under $300. Getting to San Antonio and enjoying the place is a given. Still, Texas is a state that does not recognize same-sex marriages, and has paid the price in tourism dollars because of it. Many in the LGBT community have insisted that travel to Texas be boycotted. We, at Guy Magazine, recommend you not only travel to Texas, you prove to Texans that you find them great despite their politics. Lead by example.

RECIPE

/floridaagenda

BY CHEF JEAN DOHERTY

floridaagenda.com

T

he bouquet garni (French for “garnished bouquet”) is a bundle of herbs that is usually tied together with string and added to a soup, stew, sauce, or poaching liquid to give flavor. The bouquet is boiled with the other ingredients, and is removed before serving. There is no generic recipe for bouquet garni , but most recipes include parsley, thyme and bay leaf. Depending on the recipe, the bouquet garni may include basil, burnet, chervil, rosemary, peppercorns, savory and tarragon. Sometimes vegetables such as carrot, celery (leaves or stem), leek, onion and parsley root are also included in the bouquet… and, as I always say, “You are the chef!” Sometimes, the bouquet is not bound with string, and its ingredients are filled into a small sachet, a net, or even a tea strainer. Traditionally, the aromatics are bound within leek leaves, though a coffee filter and butcher twine can be used instead of leek leaves.

/floridaagenda

THE BOUQUET GARNI

Simply bunch a bay leaf, a few sprigs of thyme and parsley, (I always use rosemary in mine) then tie them up with string. Et voila! The size of a bouquet garni will depend on the size of your dish. In other words, the more servings you have the more you’ll need. That makes sense, doesn’t it? Although born in Dublin, Ireland, Chef Jean Doherty spent most of her life in Lyon, France, the gastronomical capital of the world. Together with Vero, her partner of 25 years, Jean has owned and run multiple restaurants including Fort Lauderdale’s Le Patio.

DINING

THE TOP FORT LAUDERDALE DINING DEALS THIS SUMMER BY GRANT JAMES TARPON BEND’S $5 BURGER Tarpon Bend is one of Fort Lauderdale’s best kept secrets. Well, it was, until they opened a second location in Coral Gables. Aside from their killer seafood, Tarpon Bend has excellent burgers. On Mondays, the restaurant offers up those delicious bad boys for just 5 bucks with purchase of any beverage, which is a deal considering it’s a 10 oz burger, made fresh daily. The name of the night says it all: Big Cheese for Little Buck. 5 p.m. and on. Tarpon Bend. 200 SW 2nd St, Fort Lauderdale, 33301.

TACO TUESDAY Taco Tuesday has virtually become a national holiday. It’s essentially just another excuse for people to drink margaritas and eat large quantities of tacos, and really, who can blame them? While every Mexican restaurant has their own version of the weekly celebration, our personal favorites are T-Mex in Downtown Fort Lauderdale, Rocco’s Tacos on Las Olas and any Tijuana Flats location you so desire. T-Mex does two-for-one tacos, Rocco’s offers an all-you-can-eat deal for $15, and Tijuana Flats serves up two tacos, chips and a drink for $5. The tacos are flavorful at each establishment – it just depends on how hungry you are. •T -Mex Cantina: 954-463-2003. 204 SW 2nd St, Fort Lauderdale, 33301. •R occo’s Tacos: 954-524-9550. 1313 E Las Olas Blvd, Fort Lauderdale, 33301. •T ijuana Flats: Various locations. Visit tijuanaflats.com for more information. SUNDAY BRUNCH AT ROSIE’S Rosie’s Bar & Grill is a self-proclaimed place to “see and be seen,” especially during Sunday brunch. The term “brunch” was first used by writer Guy Beringer in an issue of British magazine, Punch, to describe a “Sunday meal for Saturday-night carousers.” The original use of the word is still pretty accurate. A good chunk of people that you’ll see at Rosie’s on a Sunday are going to be familiar faces if you too were out the previous night. The Fat Elvis is essentially everything you would want on your plate after a night of bar-hopping: A ripe banana, covered in crunchy peanut butter, stuffed in challah bread, rolled in French toast mix, fried, and topped with whipped cream and syrup. The entirety

of the brunch menu is fresh and and delicious (the $3 Bloody Marys and $5 Mimosas don’t hurt either), so get there before it ends at 2 p.m.! We’re pretty sure Beringer would approve of a modern day brunch. Rosie’s Bar & Grill. 954-563-0123. 2449 Wilton Dr, Wilton Manors, 33305. LUNCH AT RUMORS After Rumors Bar & Grill opened their new kitchen, it didn’t take long for word to spread: It was delicious, fresh, and open daily. If you’re looking for typical bar food, you won’t find it here. Yes, there are still the bar food staples – fries, onion rings, nachos, burgers, wings, etc. But they also serve up some truly diverse grub: Alligator bites with an apricot plum sauce (a spicy version is also available), gouda mac and cheese nuggets, fresh salads, subs, sandwiches, wraps and more. The menu can accommodate pretty much any of your needs, ranging from a light, health-conscious choice to a heavier, savory meal, making it a great option for lunch. With the purchase of any lunch entree (Monday through Friday), you get a free alcoholic beverage, so if you’re hungry and thirsty, this is your new favorite spot. Rumors Bar & Grill. 2426 Wilton Dr, Wilton Manors, 33305. WINE DOWN WEDNESDAYS AT DAPUR “Tapas” is a fancy way of saying small plates (or “appetizers” as we used to call them), and at Dapur, the plates are flying out of the kitchen. The menu is a fusion of Asian foods, with everything ranging from Korean BBQ ribs to kobe beef sliders which have ditched the traditional bun and replaced it with crispy rice patties instead. The sushi bar gets creative without being too unfamiliar (seriously, who would think to combine pineapple and strawberries with tuna?), and the selection of sake is nothing short of phenomenal. On Wednesdays, Dapur offers something special to get you through your hump day: Wine Down Wednesdays. As the name implies, the lounge is really trying to help you wind down, relax, and enjoy a bottle of wine – at half price. It doesn’t get much better than that. Dapur Asian Tapas & Lounge. 954-306-2663. 1620 N. Federal Hwy, Fort Lauderdale, 33305.
