The GFLGLCC:
A Homegrown GLOBAL Chamber of Commerce
Y
ou might not know that Keith Blackburn, President and CEO of the Greater Fort Lauderdale Gay and Lesbian Chamber of Commerce (GFLGLCC), is a local business and community leader by all the time he spends out of the country—until you realize that his travels directly benefit and impact local businesses and allied trades in the place he calls home. “Nearly 28 percent of travel in South Florida has been related to the LGBT community—that’s huge,” Blackburn told the Florida Agenda earlier this year. He wants to see more of that market spend its tourism dollars in Greater Fort Lauderdale, but Blackburn has a deeper dream for the Gayborhood and its surrounding communities. Long-term, he and his chamber partners want to see the area become an international hub for global commerce, to make it a commercial center as well as a tourist destination. To help accomplish that, the GFLGLCC has teamed up with the National Gay and Lesbian Chamber of Commerce (NGLCC) to help facilitate the first U.S. Government-backed trade mission to Bogotá, Colombia. The trip (which will be held from September 11 through 15) marks the first U.S. government-certified LGBT trade mission, which was made possible through a Memorandum of Understanding that was signed last year between officials of the NGLCC and the U.S. Department of Commerce.

Blackburn sees this as an opportunity for local business owners to take part as credentialed delegates to the inaugural LGBT Summit of the Americas, which will be held in conjunction with the trade mission. The summit will bring LGBT business leaders from the U.S. face to face with their counterparts in Colombia, Argentina, Brazil, Chile, Peru, Mexico, and Uruguay. Among the speakers who have been invited to attend are the Honorable Angelino Garzón, Vice President of Colombia, and the Honorable Peter McKinley, U.S. Ambassador to Colombia. The trade mission, says Blackburn, is an opportunity for South Florida-based LGBTcertified businesses to meet buyers and business leaders, and to personally meet officials in Bogotá (including the U.S. Embassy’s commerce attaché) and build valuable connections that are crucial to international export and import trading. Blackburn, a native of Washington, D.C., has spent much of 2012 building the kinds of alliances he hopes to foster in Bogotá, traveling this spring to the ITB-Berlin show, the world’s largest travel trade expo. The Fiesta Begins on Las Olas
I
t’s tough to miss the bar in Rocco’s Tacos, the popular Mexican eatery on Las Olas Boulevard. It stretches across the entire west wall of the restaurant, with five shelves full of assorted liquors, including 220 types of tequila alone. Twice we tried counting the entire inventory, running out of fingers and toes long before we hit a tally of 350 bottles. The bartenders—female, cute, and obviously having a good time—take the vast stock in stride, seeming to have a sixth sense about how to find any particular label. Surrounded by carved wood, the bar looks like it belongs in a vintage pub, and sets the tone for this place that is at-once seasoned and current. This is an eatery full of attractive people having a raucous time, confirming Rocco’s Tacos place as the current in-spot to go for a good time. The fact that the food keeps pace with the high energy level of the joint is in itself a bonus. For that we can thank executive chef James Fellmann and co-owner Jason “Rocco” Mangel. The house specialty, as you might guess from the restaurant’s name, is Tacos. Select between chicken, roasted pork, spicy beef, chorizo, mushroom, shrimp, skirt steak and blackened mahi ($2.95-$4.25). Having tasted them all, on multiple occasions, we give five-stars to all the varieties, though the Cochinitas Achiote (slow-roasted pork) is particularly succulent. All tacos come in hard shell or soft corn tortillas. For California purests there is a platter of three California Fish Tacos, filled with lightly-battered and fried Mahi Mahi, cabbage slaw and avocado ranch dressing, nustled in place by a heap of spice white rice and black beans. At $17, this is an expensive choice, made all the more so because it doesn’t really taste that great. (Where California Fish Tacos are concerned, we set the bar quite high, thanks to repeated visits to Mamá Testa Taqueria in the Hillcrest District of San Diego. Mamá, who knows these things, swears catfish is the fish of choice—not too fried, and not too covered in Mexican slaw.)

At Rocco’s Tacos, every item on the menu comes with a price tag, including customarily free chips and salsa. They are given the authentic name of Totopos and cost $3. For that price, you get a basket of homemade corn chips seasoned with cumin, cinnamon, and perhaps cayenne, although the exact recipe seems to be a house secret. For $12, the servers will bring a serving cart to your table and prepare Guacamole from scratch with your choice of three different degrees of wam! We opted for medium hot, which was the perfect complement of pepper to avocado. For a meal with more substance, explore the tasty Molcajetes. Traditionally, a molcajetes is a bowl made from volcanic rock. The Rocco’s Taco version uses the molcajetes as the baking dish for a fajita-like concoction that comes in three varieties: Seafood (shrimp, scallops, A Unique and Delicious and mahi mahi, Seafood Molcajete served with poblano chiles, calabaza squash, and charred tomatoes), Carne (skirt steak, chicken, and chorizo, prepared with three pepper rajas, rojo, and tequila) and Surf & Turf (steak, chorizo, chicken, and shrimp). This specialty act doesn’t come cheap—$22 for a molcajetes serving one; $38 for two. In case you’re missing the point, there is a recurring theme here—expensive and fun. his week, Guy Magazine salutes the first responders of our community and our country, and since it’s been a while that we planned a date night together, I thought this would be a great chance to combine a fun and intimate night for two with a classic edge-of-your-seat film that will get the heat going—both on and off the video screen.
BURN, BABY, BURN!
T
here are—unsurprisingly—a large number of great Hollywood movies that center on the heroism and courageous deeds of first responders. The action/ adventure/thriller films that feature the larger-thanlife exploits of men and women behind the badge is astronomical (and well-deserved, based upon the real heroism of actual responders), so for this date night, we will focus on the men and women who also risk their lives on a daily basis fighting the destructive force of fire.
WHERE’S THE FIRE?
N
o lie: For me, there’s nothing that invokes the image of a firehouse quite like a steaming hot bowl of chili. I am a big fan of the Great American Dish (although since I’m not a fan of kidney beans, I usually don’t include them in my recipe), and You & Romantic Co. can enjoy this simple and filling course right in front of the big (flat) screen.
FOUR ALARM CHILI Ingredients: • 1 lb of ground sausage meat • 1 lb of ground beef • 1 medium onion, chopped • 1 green pepper, chopped • 1 can of diced tomatoes (seasoned if you prefer) • 1 can of kidney beans (if you like them, but see my preferences, above) • Hot sauce (to taste, but remember: This IS Four Alarm Chili) • 1 Tbsp of butter • 1 Tbsp of olive oil • Complete Seasoning

Ingredients (Dip): reheat oven to 400 degrees. On the stovetop, melt the butter and olive oil in a large saucepan, and add onions and peppers, frying for 5 minutes. Remove casings from the sausage and add the sausage meat and ground beef to the same saucepan, stirring frequently, making sure to break up the sausage pieces and integrate it into the ground beef, onions, and green peppers. Add canned tomatoes (one 12 oz. can works, and we especially enjoy the “flavored” ones, try garlic and oregano, or hot bell pepper-seasoned for extra spiciness), seasoning, and HOT SAUCE to taste. Stir the entire mixture well, bringing to a boil, then put the lid on the saucepan, and turn down the heat to a simmer. Cook for about 15 minutes, stirring occasionally. Serve in a bowl, HOT. To compliment this great tasting chili, serve homemade (store-bought works in a pinch) cornbread, and delicious fried squash on the side: Slice one zucchini and one yellow squash into thin rounds (no more than ¼-inch thickness), and dip them in flour mixed with salt and pepper. Fry them in a skilled until they are crisp on the outside. Yum. In our Memorial Day issue, we tried out this tasty variation on a classic side dish (May 24, 2012: “A Memorial Day to Remember!”): Italian-style Deviled Eggs. Boil four eggs at a time, then cut in two and remove the yolks. Mix the yolks with salt, pepper, paprika, minced garlic, and olive oil, and then place the mixture on top of the egg whites. It makes for a cool contrast to your smoking spicy chili. For beverages, serve iced tea, lemonade, cold beer, or a hearty red wine.

ow that dinner is under way, it’s time to choose a movie. There are loads of great, thrilling, and fun action, thriller, suspense, adventure (and even comedy) films that feature first responder protagonists. Here’s a short list of film fare that goes great with our date night theme: “Always” (1989): A romantic drama directed by Steven Spielberg, starring Richard Dreyfuss, Holly Hunter, and Audrey Hepburn in her final film role. This handholder depicts the spirit of a recently-dead expert pilot mentoring an inexperienced flyboy, as the ghost watches the rookie fall in love with his surviving girlfriend. Talk about self-sacrifice. “Backdraft” (1991): Triple Academy Award-nominated Daddy-in-Uniform action thriller starring Kurt Russell, William Baldwin, Scott Glenn, Robert De Niro, and a hot Jason Gedrick as Chicago firefighters on the trail of a serial arsonist (played by a creepy Donald Sutherland, father to equally-creepy Kiefer). “I Now Pronounce You Chuck and Larry” (2007) A “buddy” comedy starring Adam Sandler and Kevin James, the movie’s depiction of same-sex marriage in New York actually preceded the 2011 enactment of the Empire State’s Marriage Equality Act, which legalized marriage for gay couples. Although the film got slammed by critics for its crude humor, a GLAAD spokesperson who screened it told Entertainment Weekly, “The movie has some of the expected stereotypes, but in its own disarming way, it’s a call for equality and respect.” “Collateral Damage” (2002): Starring Arnold Schwarzenegger as a Los Angeles firefighter looking to avenge his son and wife’s death at the hands of a terrorist. “The Towering Inferno” (1974): The granddaddy of all first responder epics, the action scenes were directed by Irwin Allen, creator of the original ocean-borne disaster, “The Poseidon Adventure,” and features an all-star cast (headlined by Paul Newman and Steve McQueen) trapped in a blazing super luxury high-rise—with no place to go but down. Enjoy date night, and make sure you start some fires— and some first responses—of your own.

Bartender of the Month September 2012
T
om Kauffman’s life is, in many ways, like the Beatles’ song, “The Long and Winding Road.” Growing up in Rochester, New York (home of Eastman-Kodak), the talented BOOM Nightclub bartender dreamed of working for the world leader in film and camera production, and following graduation, he saw his dream fulfilled, being hired to join the industry giant’s construction and maintenance team. “Some of the projects we developed had to be within 200 thousandths of an inch, to make sure that everything ran correctly. One project took nearly five years to complete,” remembers Kauffman. After the technological revolution of digital photo production, Kauffman found himself looking for gainful employment. “After 28 years [with Kodak], I started my own construction business. I was married—but was always ‘curious.’ I decided to go into a gay bar, and I realized that I was gay.” Kauffman’s acceptance of his sexual identity brought him to patronize the largest leather bar in Rochester, the Bachelor Forum, a local LGBT landmark for 30 years. “I was there one night, and they were short-handed, so I started helping out with bar backing,” Kauffman recalls. “At closing, the owner asked, ‘What time can you be here tomorrow?’ I ended up on the bar very quickly, and was there for two years.” The warm, intoxicating breezes of South Florida had been calling his name for some time, so in 2004 he packed up a U-Haul, and embarked for

Fort Lauderdale. Arriving, he found employment in the local Levis-and-leather scene at Scandals Saloon. “It was a great ride,” says Kauffman, “but then I had to have surgery on my wrists, and was no longer able to do the high/fast production that’s required at Scandals.” It wasn’t long after his convalescence that Kauffman says he got a call from the management team at BOOM. “They were beginning an early morning shift, opening at 9 a.m.,” he explains. “I am very much a morning person, and I enjoy that early morning crowd because I actually have an opportunity to converse, and I love getting to know the customers—so I jumped at the chance.” Kauffman says his bar regulars—and new patrons who stroll through the Shoppes at Wilton Manors in the morning—are a big part of what makes his days consistently fun. “I have a great nucleus of regulars. Someone once asked me, ‘Who goes into a bar at 9 a.m.?’ I responded, “What if you are a night auditor, or work security and you get off at 7 a.m.—you stop and grab a bite to eat, and then it’s Happy Hour. Not everyone works from 9 to 5.” You can catch Tom Kauffman behind the bar at BOOM Monday through Friday, from 9 a.m. to 3 p.m. His signature drink is the “Cocksucker.” (You can giggle.) A Man for His Community:
Dr. Jay Heider, DDS
W
hile still a young man living in Dayton, Ohio, Dr. J. Michael Heider (“Jay” to his friends) was impressed by the big difference he saw his hometown dentist making in the lives of people in his community. Although only one man, that dental practitioner had a positive impact on many people—including the future Dr. Heider, who earned his Doctor of Dental Surgery (DDS) degree at Ohio State University in Columbus, and completed his general practice residency at Miami Children’s Hospital. “I really loved South Florida, so I decided to stay here and begin my practice,” recalls Heider. “This was not too long after the Gay and Lesbian Community Center (GLCC)— now the Pride Center at Equality Park—opened. I read an article about the GLCC, and decided to check it out. I showed up one day, looked at the services, and decided to volunteer.” Heider had been introduced to the future Pride Center during a difficult time. “Unfortunately, I volunteered at one of the Center’s darkest periods,” he relates. “I continued to volunteer, because I believed in the Mission Statement of the Center.” Heider explains: “At that point, there was lots of internal politics involved [in the organization]. There was a lot of controversy surrounding the person who was executive director. I was asked to serve on the board of directors.” As Heider, who became president of the non-forprofit’s board, recalls, “During this dark time, local businessman Ed Nicholas took the reigns as the GLCC’s executive director, and donated his time to clean up and begin aggressive fundraising efforts to get the Center back in the black. It worked. During that year, money began to flow in, and the board

tried to get Nicholas to stay on. He said, ‘No, I’ve given it a year and helped to turn it around.’ So we began the search for a new executive director. The board interviewed several candidates—and then enter Paul Hyman. It was a great decision,” Heider adds. With a professional executive director to take the reins, Heider says that as president, “My personal mission was to keep it up and going, and continue its vital services to the community.” The GLCC would soon experience major changes. “In 2007, Tarragon Development purchased the property on which the Center was located, to build a large complex, so the Center had to move. We occupied a couple of locations while we continued the search for a permanent site,” Heider remembers. The Pride Center at Equality Park on North Dixie Highway in Wilton Manors was the ultimate fruit of those labors of love and hard work. In recognition of those contributions, the Pride Center at Equality Park (under its new executive director, longtime community activist Robert Boo), will honor Dr. Heider and other board members, past and present, at an event on September 30. Heider, who is celebrating 28 years with his partner, realtor Thom Carr, says he is glad to have been a part of the Pride Center’s past and present accomplishments, and anticipates a bright future for it, and the community it serves. “I am honored that the Pride Center has seen fit to recognize me. The time I donated came from my heart, and there is such a need for the services it provides,” he adds. We might say the same about him.

HEROES FOR REAL
F
or millennia, philosophers and folklorists have discussed the concept of Archetypes: Universally-recognized prototypes that represent deeply-held cultural ideas, memories, and associations. One of the most well-recognized of these is the Hero, a cultural ideal since the earliest civilizations which, at its core, is represented by a person who, facing danger and adversity (often from a position of weakness), displays courage and a will for self-sacrifice—what we call “Heroism”—for the greater good. Although the definition—and the earliest religious Hero cults from Antiquity—originally referred to military courage, it has since come to fill the cultural and psychological need for heroes we can see, approach—and touch, encompassing a moral excellence that is hard to achieve, except among those who are exceptional. Among these are our country’s First Responders—those who provide first-on-the-scene emergency care, as represented by Police Officers, Firefighters, Emergency Medical Technicians, and Paramedics—as well as those who support and assist, as in the case when more experienced or skilled providers are not yet on scene or available.

The Moveable Feast
“If you are lucky enough to have lived in Paris as a young man, then wherever you go for the rest of your life, it stays with you, for Paris is a moveable feast.” Or so wrote Ernest Hemingway. Then again, Papa Hemingway killed himself, proving, we suppose, that an occasional refresher visit to Paris is never out of place. As with most things in life, the gays among us have a special gift for appreciating art, culture, rudeness, and depravation. And Paris has all four in abundance. Fortunately, the Parisians, in their love of all things flamboyant, have grouped the homosexual community mainly in an area known as Le Marais (”The Swamp”), in the 3rd and 4th arrondissements. The average vacationer in Paris will make the rounds of the standard top ten must-sees: Musée du Louvre (1st arrondissement-Porte des Lions, Galerie du Carrousel, or Pyramid entrances), the worldfamous museum situated in a French palace housing the Mona Lisa and the Under the Eiffel Tower Venus de Milo; Notre Dame Cathedral (Place du Parvis de Notre Dame, 4th arrondissement), the most architecturally stunning Gothic Cathedral in the world; Eiffel Tower (Champ de Mars in the 7th arrondissement [midwest Paris]), the iconic symbol of Paris for much of the world; Musée d’Orsay (1 Rue de la Legion d’Honneur, 7th arrondissement), a bright and airy gallery housing the largest collection of painting, sculpture, and decorative objects produced between 1848-1914; Sorbonne University which forms the historic soul of the Latin Quarter (Place du Sorbonne, 5th arrondissement), the center of scholarly pursuits in the city; the Arc de Triomphe which crowns the end of the Champs-Elysées (Place Charles de Gaulle, 8th arrondissement), the most famous shopping street in all of Paris; the Centre Georges Pompidou

(Place Georges Pompidou, 4th arrondissement), a monstrous architectural anomaly that attracts street performers, art historians and students using its library; Montmartre (18th arrondissement), a neighborhood with its art-drenched history and charming, village-like streets located at the summit of Paris with its beautiful Sacre Coeur Basilica; the Père Lachaise (Rue de Repos, “Porte du Répos,” 20th arrondissement); according to an old lover of mine, it is the most hauntingly lovely cemetery in the world, where Chopin, Collette, Marcel Proust, and Jim Morrison are laid to rest; and a Boat Tour up the Seine (rhymes with “den”) River, the equivalent of taking a gondola in Venice, but on a larger scale. There are two airports in Paris— Charles de Gaulle and Orly, with CDG the airport of choice since American Airlines and Air France fly non-stop from Miami. (Trivia point: In the current economic Hôtel du 7ème art climate, there are no non-stop first class flights from either Miami or Fort Lauderdale.) All business-class airline, OpenSkies, flies from Newark into Orly, but is of little interest to those of us down here in the hurricane zone. There are many reasonably-priced hotels (and many, many more unreasonably priced ones) in the city. But for high camp, there is nothing that outdoes the Hôtel du 7ème Art (20 Rue Saint Paul, 4th arrondissement). A twin-bedded room with private bath at the Hôtel du 7ème Art will set you back 75 euros per night. It’s in the center of Marias, it reeks with romance thanks to the posters from classic American throughout the place, and you’re guaranteed to hear a recording of Frank Sinatra singing “I Love Paris” at least ten times a day. “We’re with Frank on this one.” Next week, we’ll cover the waterfront and the hottest clubs in town. or those with the luxury of the larger drawing surface on the iPad, we’ve looked at a number of sketch apps (GUY, Aug. 29, “Art Apps: The Only Way to Run Away Without Leaving Home”) that really fit the bill nicely. If the artistic muse strikes you but you happen to own an iPhone, Android, or other smart phone, never fear: There are a cool slew of apps for these platforms that allow you and your innerPicasso to run wild. One easy-to-use, basic Sketch Free sketching app is Sketch Free. A drawing-centric app, part of its fun is the undisciplined nature of what you create, although it features a number of cool special effects that automatically augment the edges of lines, among other things. Sketch Me: FREE (but with ads on Android). Picasso offers stronger emphasis on digital painting, and drawing for fun (as opposed to honing your craft as a sketch artiste). Pistachio Imitate Life: FREE (ad-supported). Pistachio for the iPhone and iPad is like my bf— strong and simple (I’m going to pay for that later). Basic in its limited number of undo steps, and reminiscent of the old Etch-O-Sketch of childhood in its “primitive,” somewhat jagged lines, it nevertheless is up to the task for most

SketchBook Mobile SketchBook Mobile, available for both iPhone and Android,, has more “going for it” than Pistachio, but that also translates to a less pickup-and-draw learning curve, and more involved steps even for sketching something easy like Fluffy on the inside of a matchbook. With one click, you can find and watch shows, share them with your friends, and keep up on the buzz about your favorite celebs. Its watch-list allows you to organize favorite episodes or series, movies, sports programs, and stars, along with when and where to watch them. If you have a Colin Farrell jones, for instance, you can learn where you can catch “Total Recall” (say, on Hulu, HBO GO, or iTunes—but NOT yet Netflix), and cross-reference where his other movies are being shown. By tagging his name or clicking on sites like the ones above, you can receive updates and notifications about times and dates those programs can be seen.

hroughout America there is a growing and unsightly trend popping out—literally— among men. The growing condition is called “Man Boobs,” or its proper name gynecomastia. This condition causes swelling or enlargement of the male breast, and effects one in four men, especially after age 50. With the rise in obesity, expect to see even more “Man Boobs” among your friends, or even you, if you’ve packed a few pounds and failed to take them back off. This condition can start as early as a male’s teenage year when puberty’s hormonal changes turn boys to men. While teenage chests usually stabilize and the condition dissipates after a few years, the same reversal isn’t true as we naturally age.
Nutrition and diet are two of the simplest ways to escape this growing problem. There are certain kinds of foods that promote this condition in men of all ages. For instance, over-consumption of soy products is known to aid in this problematic disease by raising estrogen and estradiol levels far past their normal ranges. Men having too much estrogen and a lack of testosterone will find this is a major contributing factor in the development of “Man Boobs.” Eating more foods that boost testosterone is very beneficial to fighting this problem, including an increase in the consumption of lean cuts of red meat, as well as organic free-range eggs. These two foods contain cholesterol, which plays a crucial role in the production of testosterone in men. There are quite a few other foods that will help boost your testosterone levels as well, such as oysters, asparagus, figs, almonds, nuts, brown rice, salmon and avocados. Try using condiments like flax seed oil and hemp seed oil in your food. This will increase your levels of omega-3 and omega-6 essential fatty acids, which also help the production of testosterone. Eating more cruciferous vegetables such as broccoli, cauliflower, cabbage, kale and Brussels sprouts are beneficial to lowering chest fat, as well as eating foods with highfiber complex carbohydrates such as oatmeal, whole grain rice, bran cereal, quinoa, spelt and buckwheat. These types of food provide more sustained energy without the insulin and sugar spike induced by other refined carbohydrates, which cause your body to store fat and encourage

development of the dreaded boobs. Having high-fiber carbohydrates also aids the digestive system and promotes efficient expulsion of waste products, helping the body be more efficient. Eat a variety of fruits and vegetables, such as avocados, apples, apricots, bananas, blueberries, papayas, raspberries, beet greens, bok choy, carrots, collard greens, green beans, celery, sweet peppers, spinach, tomatoes, squash and zucchini. These are high in fiber, vitamins, minerals, and diseasefighting free radicals which help your body function optimally. Doing regular exercise is another helpful way to fight drooping pec muscles, which compounds the appearance of gynecomastia. Using lighter weights and higher repetitions will give you your best results, for doing chest exercises in this fashion will help keep chest muscles looking very defined and lean. Be sure to switch up your exercise program often. This will guarantee to shock and confuse the muscles, giving you better results and keeping exercise new and exciting. Using these two simple techniques will help tremendously in the fight against an unflattering, fat, and sagging chest. While it’s true we’re all getting older, it’s just as true that there is absolutely no reason why you have to give in to Mother Nature. ou might not know that Keith Blackburn, President and CEO of the Greater Fort Lauderdale Gay and Lesbian Chamber of Commerce (GFLGLCC), is a local business and community leader by all the time he spends out of the country—until you realize that his travels directly benefit and impact local businesses and allied trades in the place he calls home. “Nearly 28 percent of travel in South Florida has been related to the LGBT community—that’s huge,” Blackburn told the Florida Agenda earlier this year. He wants to see more of that market spend its tourism dollars in Greater Fort Lauderdale, but Blackburn has a deeper dream for the Gayborhood and its surrounding communities. Long-term, he and his chamber partners want to see the area become an international hub for global commerce, to make it a commercial center as well as a tourist destination. To help accomplish that, the GFLGLCC has teamed up with the National Gay and Lesbian Chamber of Commerce (NGLCC) to help facilitate the first U.S. Government-backed trade mission to Bogotá, Colombia. The trip (which will be held from September 11 through 15) marks the first U.S. government-certified LGBT trade mission, which was made possible through a Memorandum of Understanding that was signed last year between officials of the NGLCC and the U.S. Department of Commerce.

Blackburn sees this as an opportunity for local business owners to take part as credentialed delegates to the inaugural LGBT Summit of the Americas, which will be held in conjunction with the trade mission. The summit will bring LGBT business leaders from the U.S. face to face with their counterparts in Colombia, Argentina, Brazil, Chile, Peru, Mexico, and Uruguay. Among the speakers who have been invited to attend are the Honorable Angelino Garzón, Vice President of Colombia, and the Honorable Peter McKinley, U.S. Ambassador to Colombia. The trade mission, says Blackburn, is an opportunity for South Florida-based LGBTcertified businesses to meet buyers and business leaders, and to personally meet officials in Bogotá (including the U.S. Embassy’s commerce attaché) and build valuable connections that are crucial to international export and import trading. Blackburn, a native of Washington, D.C., has spent much of 2012 building the kinds of alliances he hopes to foster in Bogotá, traveling this spring to the ITB-Berlin show, the world’s largest travel trade expo. The Fiesta Begins on Las Olas
I
t’s tough to miss the bar in Rocco’s Tacos, the popular Mexican eatery on Las Olas Boulevard. It stretches across the entire west wall of the restaurant, with five shelves full of assorted liquors, including 220 types of tequila alone. Twice we tried counting the entire inventory, running out of fingers and toes long before we hit a tally of 350 bottles. The bartenders—female, cute, and obviously having a good time—take the vast stock in stride, seeming to have a sixth sense about how to find any particular label. Surrounded by carved wood, the bar looks like it belongs in a vintage pub, and sets the tone for this place that is at-once seasoned and current. This is an eatery full of attractive people having a raucous time, confirming Rocco’s Tacos place as the current in-spot to go for a good time. The fact that the food keeps pace with the high energy level of the joint is in itself a bonus. For that we can thank executive chef James Fellmann and co-owner Jason “Rocco” Mangel. The house specialty, as you might guess from the restaurant’s name, is Tacos. Select between chicken, roasted pork, spicy beef, chorizo, mushroom, shrimp, skirt steak and blackened mahi ($2.95-$4.25). Having tasted them all, on multiple occasions, we give five-stars to all the varieties, though the Cochinitas Achiote (slow-roasted pork) is particularly succulent. All tacos come in hard shell or soft corn tortillas. For California purests there is a platter of three California Fish Tacos, filled with lightly-battered and fried Mahi Mahi, cabbage slaw and avocado ranch dressing, nustled in place by a heap of spice white rice and black beans. At $17, this is an expensive choice, made all the more so because it doesn’t really taste that great. (Where California Fish Tacos are concerned, we set the bar quite high, thanks to repeated visits to Mamá Testa Taqueria in the Hillcrest District of San Diego. Mamá, who knows these things, swears catfish is the fish of choice—not too fried, and not too covered in Mexican slaw.)

At Rocco’s Tacos, every item on the menu comes with a price tag, including customarily free chips and salsa. They are given the authentic name of Totopos and cost $3. For that price, you get a basket of homemade corn chips seasoned with cumin, cinnamon, and perhaps cayenne, although the exact recipe seems to be a house secret. For $12, the servers will bring a serving cart to your table and prepare Guacamole from scratch with your choice of three different degrees of wam! We opted for medium hot, which was the perfect complement of pepper to avocado. For a meal with more substance, explore the tasty Molcajetes. Traditionally, a molcajetes is a bowl made from volcanic rock. The Rocco’s Taco version uses the molcajetes as the baking dish for a fajita-like concoction that comes in three varieties: Seafood (shrimp, scallops, A Unique and Delicious and mahi mahi, Seafood Molcajete served with poblano chiles, calabaza squash, and charred tomatoes), Carne (skirt steak, chicken, and chorizo, prepared with three pepper rajas, rojo, and tequila) and Surf & Turf (steak, chorizo, chicken, and shrimp). This specialty act doesn’t come cheap—$22 for a molcajetes serving one; $38 for two. In case you’re missing the point, there is a recurring theme here—expensive and fun. his week, Guy Magazine salutes the first responders of our community and our country, and since it’s been a while that we planned a date night together, I thought this would be a great chance to combine a fun and intimate night for two with a classic edge-of-your-seat film that will get the heat going—both on and off the video screen.
BURN, BABY, BURN!
T
here are—unsurprisingly—a large number of great Hollywood movies that center on the heroism and courageous deeds of first responders. The action/ adventure/thriller films that feature the larger-thanlife exploits of men and women behind the badge is astronomical (and well-deserved, based upon the real heroism of actual responders), so for this date night, we will focus on the men and women who also risk their lives on a daily basis fighting the destructive force of fire.
WHERE’S THE FIRE?
N
o lie: For me, there’s nothing that invokes the image of a firehouse quite like a steaming hot bowl of chili. I am a big fan of the Great American Dish (although since I’m not a fan of kidney beans, I usually don’t include them in my recipe), and You & Romantic Co. can enjoy this simple and filling course right in front of the big (flat) screen.
FOUR ALARM CHILI Ingredients: • 1 lb of ground sausage meat • 1 lb of ground beef • 1 medium onion, chopped • 1 green pepper, chopped • 1 can of diced tomatoes (seasoned if you prefer) • 1 can of kidney beans (if you like them, but see my preferences, above) • Hot sauce (to taste, but remember: This IS Four Alarm Chili) • 1 Tbsp of butter • 1 Tbsp of olive oil • Complete Seasoning

Ingredients (Dip): reheat oven to 400 degrees. On the stovetop, melt the butter and olive oil in a large saucepan, and add onions and peppers, frying for 5 minutes. Remove casings from the sausage and add the sausage meat and ground beef to the same saucepan, stirring frequently, making sure to break up the sausage pieces and integrate it into the ground beef, onions, and green peppers. Add canned tomatoes (one 12 oz. can works, and we especially enjoy the “flavored” ones, try garlic and oregano, or hot bell pepper-seasoned for extra spiciness), seasoning, and HOT SAUCE to taste. Stir the entire mixture well, bringing to a boil, then put the lid on the saucepan, and turn down the heat to a simmer. Cook for about 15 minutes, stirring occasionally. Serve in a bowl, HOT. To compliment this great tasting chili, serve homemade (store-bought works in a pinch) cornbread, and delicious fried squash on the side: Slice one zucchini and one yellow squash into thin rounds (no more than ¼-inch thickness), and dip them in flour mixed with salt and pepper. Fry them in a skilled until they are crisp on the outside. Yum. In our Memorial Day issue, we tried out this tasty variation on a classic side dish (May 24, 2012: “A Memorial Day to Remember!”): Italian-style Deviled Eggs. Boil four eggs at a time, then cut in two and remove the yolks. Mix the yolks with salt, pepper, paprika, minced garlic, and olive oil, and then place the mixture on top of the egg whites. It makes for a cool contrast to your smoking spicy chili. For beverages, serve iced tea, lemonade, cold beer, or a hearty red wine.

ow that dinner is under way, it’s time to choose a movie. There are loads of great, thrilling, and fun action, thriller, suspense, adventure (and even comedy) films that feature first responder protagonists. Here’s a short list of film fare that goes great with our date night theme: “Always” (1989): A romantic drama directed by Steven Spielberg, starring Richard Dreyfuss, Holly Hunter, and Audrey Hepburn in her final film role. This handholder depicts the spirit of a recently-dead expert pilot mentoring an inexperienced flyboy, as the ghost watches the rookie fall in love with his surviving girlfriend. Talk about self-sacrifice. “Backdraft” (1991): Triple Academy Award-nominated Daddy-in-Uniform action thriller starring Kurt Russell, William Baldwin, Scott Glenn, Robert De Niro, and a hot Jason Gedrick as Chicago firefighters on the trail of a serial arsonist (played by a creepy Donald Sutherland, father to equally-creepy Kiefer). “I Now Pronounce You Chuck and Larry” (2007) A “buddy” comedy starring Adam Sandler and Kevin James, the movie’s depiction of same-sex marriage in New York actually preceded the 2011 enactment of the Empire State’s Marriage Equality Act, which legalized marriage for gay couples. Although the film got slammed by critics for its crude humor, a GLAAD spokesperson who screened it told Entertainment Weekly, “The movie has some of the expected stereotypes, but in its own disarming way, it’s a call for equality and respect.” “Collateral Damage” (2002): Starring Arnold Schwarzenegger as a Los Angeles firefighter looking to avenge his son and wife’s death at the hands of a terrorist. “The Towering Inferno” (1974): The granddaddy of all first responder epics, the action scenes were directed by Irwin Allen, creator of the original ocean-borne disaster, “The Poseidon Adventure,” and features an all-star cast (headlined by Paul Newman and Steve McQueen) trapped in a blazing super luxury high-rise—with no place to go but down. Enjoy date night, and make sure you start some fires— and some first responses—of your own.

om Kauffman’s life is, in many ways, like the Beatles’ song, “The Long and Winding Road.” Growing up in Rochester, New York (home of Eastman-Kodak), the talented BOOM Nightclub bartender dreamed of working for the world leader in film and camera production, and following graduation, he saw his dream fulfilled, being hired to join the industry giant’s construction and maintenance team. “Some of the projects we developed had to be within 200 thousandths of an inch, to make sure that everything ran correctly. One project took nearly five years to complete,” remembers Kauffman. After the technological revolution of digital photo production, Kauffman found himself looking for gainful employment. “After 28 years [with Kodak], I started my own construction business. I was married—but was always ‘curious.’ I decided to go into a gay bar, and I realized that I was gay.” Kauffman’s acceptance of his sexual identity brought him to patronize the largest leather bar in Rochester, the Bachelor Forum, a local LGBT landmark for 30 years. “I was there one night, and they were short-handed, so I started helping out with bar backing,” Kauffman recalls. “At closing, the owner asked, ‘What time can you be here tomorrow?’ I ended up on the bar very quickly, and was there for two years.” The warm, intoxicating breezes of South Florida had been calling his name for some time, so in 2004 he packed up a U-Haul, and embarked for

Fort Lauderdale. Arriving, he found employment in the local Levis-and-leather scene at Scandals Saloon. “It was a great ride,” says Kauffman, “but then I had to have surgery on my wrists, and was no longer able to do the high/fast production that’s required at Scandals.” It wasn’t long after his convalescence that Kauffman says he got a call from the management team at BOOM. “They were beginning an early morning shift, opening at 9 a.m.,” he explains. “I am very much a morning person, and I enjoy that early morning crowd because I actually have an opportunity to converse, and I love getting to know the customers—so I jumped at the chance.” Kauffman says his bar regulars—and new patrons who stroll through the Shoppes at Wilton Manors in the morning—are a big part of what makes his days consistently fun. “I have a great nucleus of regulars. Someone once asked me, ‘Who goes into a bar at 9 a.m.?’ I responded, “What if you are a night auditor, or work security and you get off at 7 a.m.—you stop and grab a bite to eat, and then it’s Happy Hour. Not everyone works from 9 to 5.” You can catch Tom Kauffman behind the bar at BOOM Monday through Friday, from 9 a.m. to 3 p.m. His signature drink is the “Cocksucker.” (You can giggle.) A Man for His Community:
Dr. Jay Heider, DDS
W
hile still a young man living in Dayton, Ohio, Dr. J. Michael Heider (“Jay” to his friends) was impressed by the big difference he saw his hometown dentist making in the lives of people in his community. Although only one man, that dental practitioner had a positive impact on many people—including the future Dr. Heider, who earned his Doctor of Dental Surgery (DDS) degree at Ohio State University in Columbus, and completed his general practice residency at Miami Children’s Hospital. “I really loved South Florida, so I decided to stay here and begin my practice,” recalls Heider. “This was not too long after the Gay and Lesbian Community Center (GLCC)— now the Pride Center at Equality Park—opened. I read an article about the GLCC, and decided to check it out. I showed up one day, looked at the services, and decided to volunteer.” Heider had been introduced to the future Pride Center during a difficult time. “Unfortunately, I volunteered at one of the Center’s darkest periods,” he relates. “I continued to volunteer, because I believed in the Mission Statement of the Center.” Heider explains: “At that point, there was lots of internal politics involved [in the organization]. There was a lot of controversy surrounding the person who was executive director. I was asked to serve on the board of directors.” As Heider, who became president of the non-forprofit’s board, recalls, “During this dark time, local businessman Ed Nicholas took the reigns as the GLCC’s executive director, and donated his time to clean up and begin aggressive fundraising efforts to get the Center back in the black. It worked. During that year, money began to flow in, and the board

tried to get Nicholas to stay on. He said, ‘No, I’ve given it a year and helped to turn it around.’ So we began the search for a new executive director. The board interviewed several candidates—and then enter Paul Hyman. It was a great decision,” Heider adds. With a professional executive director to take the reins, Heider says that as president, “My personal mission was to keep it up and going, and continue its vital services to the community.” The GLCC would soon experience major changes. “In 2007, Tarragon Development purchased the property on which the Center was located, to build a large complex, so the Center had to move. We occupied a couple of locations while we continued the search for a permanent site,” Heider remembers. The Pride Center at Equality Park on North Dixie Highway in Wilton Manors was the ultimate fruit of those labors of love and hard work. In recognition of those contributions, the Pride Center at Equality Park (under its new executive director, longtime community activist Robert Boo), will honor Dr. Heider and other board members, past and present, at an event on September 30. Heider, who is celebrating 28 years with his partner, realtor Thom Carr, says he is glad to have been a part of the Pride Center’s past and present accomplishments, and anticipates a bright future for it, and the community it serves. “I am honored that the Pride Center has seen fit to recognize me. The time I donated came from my heart, and there is such a need for the services it provides,” he adds. We might say the same about him.

HEROES FOR REAL
F
or millennia, philosophers and folklorists have discussed the concept of Archetypes: Universally-recognized prototypes that represent deeply-held cultural ideas, memories, and associations. One of the most well-recognized of these is the Hero, a cultural ideal since the earliest civilizations which, at its core, is represented by a person who, facing danger and adversity (often from a position of weakness), displays courage and a will for self-sacrifice—what we call “Heroism”—for the greater good. Although the definition—and the earliest religious Hero cults from Antiquity—originally referred to military courage, it has since come to fill the cultural and psychological need for heroes we can see, approach—and touch, encompassing a moral excellence that is hard to achieve, except among those who are exceptional. Among these are our country’s First Responders—those who provide first-on-the-scene emergency care, as represented by Police Officers, Firefighters, Emergency Medical Technicians, and Paramedics—as well as those who support and assist, as in the case when more experienced or skilled providers are not yet on scene or available.

The Moveable Feast
“If you are lucky enough to have lived in Paris as a young man, then wherever you go for the rest of your life, it stays with you, for Paris is a moveable feast.” Or so wrote Ernest Hemingway. Then again, Papa Hemingway killed himself, proving, we suppose, that an occasional refresher visit to Paris is never out of place. As with most things in life, the gays among us have a special gift for appreciating art, culture, rudeness, and depravation. And Paris has all four in abundance. Fortunately, the Parisians, in their love of all things flamboyant, have grouped the homosexual community mainly in an area known as Le Marais (”The Swamp”), in the 3rd and 4th arrondissements. The average vacationer in Paris will make the rounds of the standard top ten must-sees: Musée du Louvre (1st arrondissement-Porte des Lions, Galerie du Carrousel, or Pyramid entrances), the worldfamous museum situated in a French palace housing the Mona Lisa and the Under the Eiffel Tower Venus de Milo; Notre Dame Cathedral (Place du Parvis de Notre Dame, 4th arrondissement), the most architecturally stunning Gothic Cathedral in the world; Eiffel Tower (Champ de Mars in the 7th arrondissement [midwest Paris]), the iconic symbol of Paris for much of the world; Musée d’Orsay (1 Rue de la Legion d’Honneur, 7th arrondissement), a bright and airy gallery housing the largest collection of painting, sculpture, and decorative objects produced between 1848-1914; Sorbonne University which forms the historic soul of the Latin Quarter (Place du Sorbonne, 5th arrondissement), the center of scholarly pursuits in the city; the Arc de Triomphe which crowns the end of the Champs-Elysées (Place Charles de Gaulle, 8th arrondissement), the most famous shopping street in all of Paris; the Centre Georges Pompidou

(Place Georges Pompidou, 4th arrondissement), a monstrous architectural anomaly that attracts street performers, art historians and students using its library; Montmartre (18th arrondissement), a neighborhood with its art-drenched history and charming, village-like streets located at the summit of Paris with its beautiful Sacre Coeur Basilica; the Père Lachaise (Rue de Repos, “Porte du Répos,” 20th arrondissement); according to an old lover of mine, it is the most hauntingly lovely cemetery in the world, where Chopin, Collette, Marcel Proust, and Jim Morrison are laid to rest; and a Boat Tour up the Seine (rhymes with “den”) River, the equivalent of taking a gondola in Venice, but on a larger scale. There are two airports in Paris— Charles de Gaulle and Orly, with CDG the airport of choice since American Airlines and Air France fly non-stop from Miami. (Trivia point: In the current economic Hôtel du 7ème art climate, there are no non-stop first class flights from either Miami or Fort Lauderdale.) All business-class airline, OpenSkies, flies from Newark into Orly, but is of little interest to those of us down here in the hurricane zone. There are many reasonably-priced hotels (and many, many more unreasonably priced ones) in the city. But for high camp, there is nothing that outdoes the Hôtel du 7ème Art (20 Rue Saint Paul, 4th arrondissement). A twin-bedded room with private bath at the Hôtel du 7ème Art will set you back 75 euros per night. It’s in the center of Marias, it reeks with romance thanks to the posters from classic American throughout the place, and you’re guaranteed to hear a recording of Frank Sinatra singing “I Love Paris” at least ten times a day. “We’re with Frank on this one.” Next week, we’ll cover the waterfront and the hottest clubs in town. or those with the luxury of the larger drawing surface on the iPad, we’ve looked at a number of sketch apps (GUY, Aug. 29, “Art Apps: The Only Way to Run Away Without Leaving Home”) that really fit the bill nicely. If the artistic muse strikes you but you happen to own an iPhone, Android, or other smart phone, never fear: There are a cool slew of apps for these platforms that allow you and your innerPicasso to run wild. One easy-to-use, basic Sketch Free sketching app is Sketch Free. A drawing-centric app, part of its fun is the undisciplined nature of what you create, although it features a number of cool special effects that automatically augment the edges of lines, among other things. Sketch Me: FREE (but with ads on Android). Picasso offers stronger emphasis on digital painting, and drawing for fun (as opposed to honing your craft as a sketch artiste). Pistachio Imitate Life: FREE (ad-supported). Pistachio for the iPhone and iPad is like my bf— strong and simple (I’m going to pay for that later). Basic in its limited number of undo steps, and reminiscent of the old Etch-O-Sketch of childhood in its “primitive,” somewhat jagged lines, it nevertheless is up to the task for most

sketching needs (also like my bf). Crack This Nut: $2. SketchBook Mobile SketchBook Mobile, available for both iPhone and Android,, has more “going for it” than Pistachio, but that also translates to a less pickup-and-draw learning curve, and more involved steps even for sketching something easy like Fluffy on the inside of a matchbook. Some Fuss, No Muss: $2. Windows Phone 7 users can try Fantasia Painter Free, which is similar to Sketch Free, and includes a pretty wide selection of paint and sketch effects. here’s a great line in the 1987 campvamp thriller, “The Lost Boys,” in which grandpa tells his grandsons that he doesn’t own a TV set. When they point out that he has a weekly subscription to TV Guide,, the old sage replies, “Read the TV Guide, Guide you don’t need a TV.” I was raised in the 1970s—so you understand the intimate relationship I share with television (by which I mean the institution, rather than my actual monitor—although I was strangely attracted to my mom’s old 13-inch black and white Magnavox, but I digress). TV Guide Mobile brings the pocket-sized family fave into the 21st Century, making it easy to track your favorite programs, and also learn about new ones. With one click, you can find and watch shows, share them with your friends, and keep up on the buzz about your favorite celebs. Its watch-list allows you to organize favorite episodes or series, movies, sports programs, and stars, along with when and where to watch them. If you have a Colin Farrell jones, for instance, you can learn where you can catch “Total Recall” (say, on Hulu, HBO GO, or iTunes—but NOT yet Netflix), and cross-reference where his other movies are being shown. By tagging his name or clicking on sites like the ones above, you can receive updates and notifications about times and dates those programs can be seen.

Fighting “MAN BOOBS” with Nutrition
T
hroughout America there is a growing and unsightly trend popping out—literally— among men. The growing condition is called “Man Boobs,” or its proper name gynecomastia. This condition causes swelling or enlargement of the male breast, and effects one in four men, especially after age 50. With the rise in obesity, expect to see even more “Man Boobs” among your friends, or even you, if you’ve packed a few pounds and failed to take them back off. This condition can start as early as a male’s teenage year when puberty’s hormonal changes turn boys to men. While teenage chests usually stabilize and the condition dissipates after a few years, the same reversal isn’t true as we naturally age.
Nutrition and diet are two of the simplest ways to escape this growing problem. There are certain kinds of foods that promote this condition in men of all ages. For instance, over-consumption of soy products is known to aid in this problematic disease by raising estrogen and estradiol levels far past their normal ranges. Men having too much estrogen and a lack of testosterone will find this is a major contributing factor in the development of “Man Boobs.” Eating more foods that boost testosterone is very beneficial to fighting this problem, including an increase in the consumption of lean cuts of red meat, as well as organic free-range eggs. These two foods contain cholesterol, which plays a crucial role in the production of testosterone in men. There are quite a few other foods that will help boost your testosterone levels as well, such as oysters, asparagus, figs, almonds, nuts, brown rice, salmon and avocados. Try using condiments like flax seed oil and hemp seed oil in your food. This will increase your levels of omega-3 and omega-6 essential fatty acids, which also help the production of testosterone. Eating more cruciferous vegetables such as broccoli, cauliflower, cabbage, kale and Brussels sprouts are beneficial to lowering chest fat, as well as eating foods with highfiber complex carbohydrates such as oatmeal, whole grain rice, bran cereal, quinoa, spelt and buckwheat. These types of food provide more sustained energy without the insulin and sugar spike induced by other refined carbohydrates, which cause your body to store fat and encourage

development of the dreaded boobs. Having high-fiber carbohydrates also aids the digestive system and promotes efficient expulsion of waste products, helping the body be more efficient. Eat a variety of fruits and vegetables, such as avocados, apples, apricots, bananas, blueberries, papayas, raspberries, beet greens, bok choy, carrots, collard greens, green beans, celery, sweet peppers, spinach, tomatoes, squash and zucchini. These are high in fiber, vitamins, minerals, and diseasefighting free radicals which help your body function optimally. Doing regular exercise is another helpful way to fight drooping pec muscles, which compounds the appearance of gynecomastia. Using lighter weights and higher repetitions will give you your best results, for doing chest exercises in this fashion will help keep chest muscles looking very defined and lean. Be sure to switch up your exercise program often. This will guarantee to shock and confuse the muscles, giving you better results and keeping exercise new and exciting. Using these two simple techniques will help tremendously in the fight against an unflattering, fat, and sagging chest. While it’s true we’re all getting older, it’s just as true that there is absolutely no reason why you have to give in to Mother Nature.
