BUSINESS PROFILE

Wilton Creamery

Such Stuff as Dreams—and Ice Creams—Are Made by

Cliff Dunn

o Enter Wilton Creamery and you enter a world that shouldn’t reasonably exist on this mortal coil; not really. It is a stunningly colored world (a “dairy bar” in the owner’s parlance; a Wonderful World of Dishes for the rest of us) where ice cream is dished out in an upscale, Art Deco environment that is as visually appealing as its wares are, well, delicious. Wilton Creamery is the dream of D.J. Colby and his partners Joe Casalena and Carl Matroka. The ingredient-driven ice cream shop, which opened on June 21 during Stonewall Pride weekend, is located in the Island City Lofts (nestled between The Manor and Village Pub on the north side of Wilton Drive). Colby says it is a place whose time has come. “When I first moved to Florida, I was struck by the fact that there’s really no good ice cream here,” says Colby, who hails from New Jersey— the part closer to Philadelphia than Manhattan—and who trained in culinary school. That chef experience informs the sensibility behind the tastes at Wilton Creamery, including the shop’s most popular flavor, “He’s Not Worth it,” and other popular entries like Sea Salt Caramel. The parlor’s split-level environs welcome guests to indulge their inner kid, with a menu selection that is anything but self-conscious. Colby and his partners have created a huge selection of can’t-put-itdown-until-the-last-bite treats, including ice cream sundaes, shakes, and specialty desserts (like the Pumpkin Pecan Ice Cream Pie, pictured, and the Ice Cream Nachos), as well as frozen treats served by the scoop and cone. Wilton Creamery’s Sundaes are made with fresh, premium ice cream, and served with complimentary syrups and toppings with fresh whipped cream. The

(courtesy of Wilton Creamery Facebook)

selection includes masterpieces like the Strawberry Cheesecake Sundae (made with vanilla ice cream, sweetened cream cheese, fresh strawberries, Nilla Wafers and strawberry whipped cream), the taste-pleasing Firecracker Sundae (vanilla ice cream with Ghirardelli white chocolate sauce, strawberries, and topped with popping cotton candy), the one-of-a-kind Chocolate Jalapeno Sundae (intense Dutch chocolate ice cream with jalapeno and chocolate syrups, topped with chili cocoa powder), and the decadent Chocolate Shop Sundae (caramel turtle fudge ice cream, hot fudge, mini M & ’s, Vanleer semisweet chocolate chips, and crushed Heath Bar topped with white or dark chocolate whipped cream). The non-dairy Sundaes (which include such original flavors as Strawberry Basil, Chocolate Dream, and Raspberry Meltdown) are made with coconut-based ice cream, and served with vegan syrups and toppings. “There’s an untapped market in vegetarian and vegan ice cream,” Colby explains. “Based on our sales, I have to believe that fully a third of Wilton Manors is lactose intolerant.” Better get that checked.

share with us on guymag.net

theguymag

There are non-dairy beverages made with a combination of fresh fruits, unusual syrups, nuts, and a choice of almond or soy milk. Colby says Wilton Creamery Smoothies contain fresh Greek yogurt, fresh fruits, and unusual syrups, made from ingredients like healthful agave, Ghirardelli white or dark chocolate, and raspberry. The menu also includes a wide selection of Milkshakes, Malts, Banana Splits, Coffee (Hot and Iced), Hot Tea, and Bottled Beverages. And the parlor is always introducing new ice cream flavors, like the recently unveiled Maple Walnut, Reese’s Peanut Butter Cup, and No-Sugar-Added Kahlua Almond Fudge. Colby hopes to reeducate the local market about the year ’round appeal of frozen desserts. “Up north, there are lines outside ice cream shops in the coldest weather,” he insists. “Besides which, you should eat something when it’s cold out—it keeps your body temperature cool and able to stay more active.” He and Wilton Creamery are giving the locals reason to change their habits, cold weather or otherwise.

THE FRIVOLIST

JIVE TURKEYS

Five Non-Traditional Meals You Can Make This Thanksgiving Turkey is the unequivocal king of the Thanksgiving dinner table, but if you’re tired of bowing down to a Butterball every fourth Thursday of November, there are alternatives. From Southern-style cuisine to a succulent Coastal feast – and even a vegetarian-based menu thrown in for all you PETA card carriers – here are five non-traditional ways you can celebrate for what you’re thankful while still stuffing your face. BY

MIKEY ROX

SOUTHERN BBQ

2

COASTAL

Southern-style BBQ – or Soul Food as it’s otherwise affectionately known – includes many meaty staples like brisket, pulled pork and slow-smoked ribs. To feed a crowd, however, finger-lickin’ fried chicken is a wise option to keep the meal affordable – and to ensure that everyone can partake. (Even among carnivores, there may be those who have sworn off red meat or pork for various reasons, but chicken is generally foolproof.) There are a million and one recipes for amazing fried chicken that you can find on the Internet, but “Southern Living’s Best Fried Chicken” says it all. This New York Times-approved recipe is simple in its preparation, and it includes a secret, indulgent ingredient that takes it to the next level – bacon grease. (If this is your first time frying chicken, it’s not a bad idea to take a crash course before heading to the kitchen; Bon Appetit magazine has a great article on “7 Common Fried Chicken Mistakes and How to Avoid Them.”) For a complete meal, prepare a generous portion of greens (collard are the southern essential); melty macaroni and cheese (Martha Stewart has a few “wow!” recipes), honey-glazed carrots; candied yams (don’t forget the mini marshmallows on top); and, if you can, homemade cornbread baked in a well-seasoned cast-iron skillet. You don’t have to live on the Cape to enjoy the bounty of the sea at Thanksgiving. Thanks to the increased popularity of farm-raised seafood, shellfish – like buttery lobster – is available year-round at reasonable prices. Nothing can replace New England lobster, of course, but for an easier-on-the-wallet substitute, this may be the way to go. You’ll save even more money by purchasing lobster tails instead of whole lobster – which you really don’t need unless you’re a lobster purist or making a stock from the carcasses – and there are innumerable ways you can prepare it. Since this is a special occasion, I recommend a “Broiled Lobster Tail with Brown Butter Sauce” – like the preparation from Simply Recipes. For your sides, mix in a few Low Country boil elements like corn on the cob; black-eyed pea salad; apple-cabbage slaw; baked potatoes; and Cheddar Bay Biscuits, the Red Lobster-branded box mix you can find at your local grocer.

If you have the good fortune to dine al fresco this Thanksgiving, take advantage of the pleasant weather and plan your meal to complement Mother Nature’s good grace. Sunset Magazine has a wealth of South of the Border-style recipes to help you get your fiesta on, which begins with a cool ceviche made with fresh seafood like shrimp or fish. For your mains, prepare a selection of Mexican favorites likes enchiladas, tamales and tacos. To make these dishes decidedly more Thanksgiving-y, replace the traditional protein in these dishes – usually chicken, beef or pork – with chile-and-spice-grilled turkey. To add a little color to your plate, Sunset has recipes for roasted chile-lime broccolini, a fall salad with nuts and pomegranates, and chorizo and apple stuffing. Finish on a sweet note with Mexican chocolate cakes with cinnamon ice cream. It’s not easy being a vegetarian on Thanksgiving, but there are plenty of ways you can skip the meat in favor of fruits and veggies. For a hearty main dish, try “Baked Acorn Squash with Chestnuts, Apples and Leeks or Ricotta-and-Fontina-Stuffed Shells with Fennel and Raddicchio,” both courtesy of Food & Wine magazine. Load up your plate with other earthy additions, like creamed spinach, spice-roasted cauliflower, whipped sweet potatoes with bananas and honey, and green bean casserole with crispy shallots, the recipes for which you can find on FoodNetwork.com. Members of true Italian family treat every Sunday like it’s a proper banquet, which makes it all the easier to create a Thanksgiving menu filled with Old World flair. Better Homes and Gardens has done the legwork for you with its “Thanksgiving Menu: Italian Thanksgiving Recipes” that doesn’t rely on a main dish as a centerpiece but rather several small, standalone dishes to create an abundant supper. Pop in a DVD of The Godfather while you nosh on an antipasto platter, seafood bruschetta, bouillabaisse, mini crab cakes, fennel and orange salad, and sautéed spinach. If your family demands dishes with more substance, show off your culinary chops with roast lamb, pumpkin ravioli, or a spinach and four-cheese manicotti. And after the kids clear the plates, relax with an energy-boosting espresso and light-and-tasty Tiramisu. Oceanfront Thanksgiving Feast

Melissa Etheridge

o Cooking a Thanksgiving feast requires so much time and energy that, perhaps, a traditional family celebration is less inviting than a waterfront dinner at Beauty and the Feast. From 1:00 p.m. to 8:00 p.m. the oceanfront restaurant will be offering a prix fixe menu featuring an unlimited wide variety of small plates, feast dishes, and gourmet food stations. Some of the dishes offered include cipollini smothered green beans, orange blossom honey baby carrots, double cut pork chop grilled with roasted pepper demi-glace, different styles of turkey, and desserts like pumpkin cheesecake and apple crumble bread pudding. 1:00 p.m. Beauty and the Feast. 601 N. Fort Lauderdale Beach Blvd. Fort Lauderdale. 33304.

LGBT hero and activist Melissa Etheridge will be performing her signature hits at the Pompano Beach Amphitheatre. Etheridge became an underground star in 1988 with her self-titled debut album, which peaked at #22 on the Billboard 200. It wasn’t until 1993’s Never Enough, her third album, in which she became a mainstream success, The hits from that album includes “I’m the Only One,” and “Come to My Window.” Since then, Etheridge has battled breast cancer, won numerous Grammy Awards, become a gay icon, and even received a star on the Hollywood Walk of Fame. 8:00 p.m. Pompano Beach Amphitheater. 1806 NE Sixth St. Pompano Beach. 33060.

Leather Masked Ball The premiere annual dance party and charity event of South Florida’s Leather Community, the Leather Masked Ball, was the brainchild of Ira C. Smith and Eric Lawrence way back in 2006. Since then, the Leather Men’s Brotherhood has acquired the ball, building upon its tradition. Proceeds from this year’s event help support The Pet Project, Tuesday’s Angels, The Pantry of Broward, and The Leather Archives and Museum. DJ Brian Norwood will be spinning a night titled Cellblock 9. 9:00 p.m. Bill’s Filling Station. 2209 Wilton Drive. Wilton Manors. 33305.

The White Party The annual HIV fundraiser takes place at the Perez Art Museum this year. The White Party has been around since 1985, created by Frank Wager as a fundraiser for fledgling not-for-profit Health Crisis Network. Since then the party has come to symbolize the community solidarity fighting against a destructive disease. The party has also grown considerably in length, having become one of the biggest gay parties in the world. It is now more a White Party Week than just a White Party. Still, the main event takes place tonight and promises to be as fabulous as any other. 7:00 p.m. Perez Art Museum. 1103 Biscayne Boulevard. Miami. 33132.

Looks and Listens by

Like Ira Sachs’ Love Is Strange, the Brazilian film The Way He Looks (Strand), the full-length feature debut by writer/director Daniel Ribiero, isn’t just one of the best gay movies of 2014, it’s one of the best movies of the year. Period. Blind teen Leo (Ghilherme Lobo) and best friend Givoana (Tess Amorim) enjoy the last lazy days of summer lounging by the pool and talking about first kisses before school begins. Once classes start, it’s business as usual. The class bullies are mean to Leo. But things are about to change for Leo with the arrival of new kid Gabriel (Fabio Audi). Paired up to work on a class project together, there is electricity between the boys. Each has an unexpected effect on the other. Leo, who only listens to classical music, is turned on to Scottish pop group Belle and Sebastian by Gabriel, who even gets Leo to dance with him in Leo’s room. Gabriel becomes increasingly aware of and sensitive to Leo’s needs as a visually impaired person. Meanwhile, Leo is doing everything he can to be more self-sufficient, something that doesn’t sit well with his over-protective parents Laura (Lucia Romano) and Carlos (Eucir de Souza). In fact, Leo is researching the possibility of studying abroad. This growing desire for independence also threatens Leo’s relationship with Giovana. The Way He Looks is remarkably insightful in terms of the way small, but meaningful details, can eventually amount to something much greater. Leo sleeping in Gabriel’s sweatshirt, for instance, is one potent example. Gabriel’s concern for Leo, applying sun-block to his skin and later rinsing it off in the shower, is another. More than just a story of first gay love, it’s a perceptive portrait of friendship and the eclipses that can occur, whether you can see them or not. (The Way He Looks opens in theaters on Nov. 26.)

It’s amazing what someone will say when a movie camera is pointed at them. With encouragement from the late filmmaker Shirley Clarke, queer African-American raconteur and hustler Jason Holliday goes about “telling it all” in the pre-Stonewall, black & white film and one-man-show Portrait of Jason (Milestone/Oscilloscope). Answering questions posed to him by voices (including Clarke’s) from out of the frame, Jason begins by introducing himself with his given name and proceeds to tell the tale of how Jason Holliday was created in San Francisco by Sabu. He “dug” being called Jason, a name that suited his personality. Even Miles Davis called him Jason. The name gave him the strength to be himself in NYC. Jason, who hustles and describes himself as

“a stone whore,” will do anything to keep from punching the clock from nine to five. “Ballin’ from Maine to Mexico,” Jason hasn’t got a dollar to show for it, but he sure had a good time. What he really wants to do is perform. Staying well lubricated in Clarke’s Chelsea Hotel flat, Jason admits he “doesn’t mean any harm, but harm is done.” A “male bitch,” he goes out of his way to “unglue people.” Working as a houseboy for various well-to-do clients, Jason has plenty of stories about his bosses. A born entertainer, Jason utilizes his bag of props, which contains a picture hat, feather boa and other things. Impressions of Mae West and Scarlett OHara, lead to more anecdotes about Katharine Hepburn, Tennessee Williams and “white boy fever.” Promising to never “get hung up on one of

those boy-boy marriages,” a drunk and rambling Jason gives us glimpses of his past (daily beatings by his Alabama-born father, Brother Tough), his present (sexual escapades at the Y, with a muscle man in LA and hustling in San Francisco) and his future (the quest to raise money for his cabaret act), and is never less than beguiling. Jason, who has “vacationed” on Rikers Island and done time at Bellevue following being arrested for gay sex, maintains his sense of humor throughout. As much a portrait of Jason as it is of the time (1967), Clarke’s film is like an unearthed time capsule. The DVD includes a wealth of bonus material including the film’s trailer, audio outtakes, a radio interview with Clarke, a few of Clarke’s shorts and more.

FITNESS

How to Handle the Holidays by Tom

bonanTi

o

Here we go again! Another whirlwind season of holidays are rapidly approaching as 2014 dances uncontrollably to a close. Parties, concerts, eating, and drinking are all characteristic festive features of this glittering season of good cheer. I don’t mean to be some prophet of gloom, but may I remind you that the average adult American gains an average of 5-12 pounds during this festive time of plenty. That’s right, the time between Thanksgiving and New Year’s Day can wreak serious havoc upon your waistline as well as the serious fitness goals you’ve achieved in 2014. Here are a few pointers to help you stay happy, healthy, lean, and fit during the holidays. Never skip breakfast! The holidays will add extra demands to your already hectic schedule, but never fudge on the first and most significant meal of the day. By regularly eating complex carbs soon after you get up, you may be able to avoid overeating at lunch, dinner and at those holiday parties. Eating 4 or 5 smaller meals every two to three hours after breakfast will keep you from picking away at cookies and other junk. You’ll feel fuller, less likely to binge, and your body will have a steady, healthy supply of carbs and protein for those holiday workouts. Avoid holiday splurges and binge eating. Never eat without thinking and never consider yourself invincible when it comes to avoiding the bulge. Holiday foods are notoriously high in sugar, sodium and saturated fats. A little here and a little there can add up to ugly inches on that hot butt and tiny waistline. Re-gift candy and fruit cakes before you even think of breaking into them. They make marvelous, thoughtful gifts …for others. Do not be a slave to your chaotic lifestyle, which is certain to be compounded by holiday commitments. Take control and don’t let the merry mayhem wreak havoc with your eating habits. Evaluate your schedule and make time to fit healthy choices into your regime. Get to the gym and especially remember to do your cardio. Plan nutritious meals and bring food to work

60

share with us on guymag.net

theguymag

with you. Take low calorie veggie trays and other healthy dishes with you to holiday parties so that you’ll have something to eat while others are slamming back the egg nog. If you are an emotional eater, the yuletide season is sure to cause you heartache. Stress at work, family squabbles, increased expectations from friends, holiday depression and loneliness can all be compounded at this time. Stress can increase levels of the hormone cortisol in your body, causing you to feel more hungry than usual. Figure out how to manage your stress levels, not only during the holiday seasons, but all year long. Find a good friend to talk to, listen to music, get a massage--in short, treat yourself nicely. Everybody needs a daily calorie budget. Make sure to read labels. Experts recommend reading labels for calories per serving and the amount of calories per serving coming from fat – if it’s one third or less, it’s probably a decent option. Next, look for the amount of sodium and fiber you’ll be getting. Comparing product’s labels will take extra time, but like choosing any delicious treat, you want to get to learn about the product inside before you taste the merchandise. You are not a victim to the holidays. The holidays are not about whining relatives and excess. They are about good friends and relaxation. Contact trainertomb@aol.com with your fitness questions.
