MILITARY DADDY ALERT: 160 of Her Majesty’s Coldstream Regiment of Foot Guards—also known as the Coldstream Guards—will march in a military-rendition of “Park Life,” by the band Blur. The Coldstream Guards is the oldest regiment in the British Regular Army in continuous active service, originating in Scotland in 1650.

The Opening Ceremony showcases the best that the Host Nation has to offer. It features a parade of the competing nations, and the highly-anticipated entrance of the Olympic Flame, which is passed through the athletes to the final Torchbearer, who ceremoniously lights the Cauldron, signaling the start of the Games. The Flame will continue to burn for the entirety of London 2012. The Parade of Athletes features a procession of 10,000 athletes, representing the 204 nations that are competing in the 2012 Games. (Teams enter in alphabetical order, according to the language of the Host Country—except for the Greek team, which enters first for the Olympics, and the team of the Host Nation, in this case, Team Great Britain, which marches in last.) Once the Games have been declared open, the Olympic Anthem will be played, and the Olympic Flag will be unfurled horizontally, carried into the Stadium, and flown from its place of prominence and honor. A member of Team Great Britain will intone the words of the Olympic Oath. The athlete—holding a corner of the Olympic Flag in his left hand, and raising his right hand—will say, “In the name of all the competitors, I promise that we shall take part in these Olympic Games, respecting and abiding by the rules which govern them, committing ourselves to a sport without doping and without drugs, in the true spirit of sportsmanship, for the glory of sport and the honor of our teams.” NBC plans to stream all 32 sports events live online, at nbcolympics.com. he London 2012 Olympics Closing Ceremony on August 12 will include a Handover of the Olympic Flag by London Mayor Boris Johnson to Mayor Eduardo Paes of Rio de Janeiro, the host city of the 2016 Summer Olympics. At the Closing Ceremony, the 10,000 competing athletes march together, instead of by nationality, a tradition that began at the Melbourne 1956 Olympic Games as a way to bring the athletes of the world together as “one global nation.” Three national flags are hoisted, to the accompaniment of the respective national anthems: the flag of Greece to honor the birthplace of the ancient Olympic Games, the flag of the Host Nation (Great Britain), and the flag of the country hosting the next Summer Olympic Games (Brazil). Following the parade of athletes, the Victory Ceremony will feature highlights footage of the previous two weeks’ events. t’s been 10 years since “Waiting for My Rocket to Come,” the debut album for Jason Mraz, was released. If his latest release, “Love Is A Four Letter Word” (Atlantic) is any indication, Mraz has matured considerably in the time that has passed. Combining his trademark acoustic technique and lyrics skills, with a smooth soul vibe on such tracks as “5/6,” “Frank D. Fixer,” and “The World As I Know It,” Mraz makes it easy to fall in love with the disc’s dozen songs. And the Mraz of old can still be found on tracks like “Living in the Moment” and “Everything Is Sound.” JASON Singer John Mayer MRAZ doesn’t just share the same initials as Jason Mraz—they share a similar musical sensibility, having arrived on our radar around the same time, about a decade ago. Like Mraz, Mayer has matured over time, making the title of his new album, “Born and Raised” (Columbia), particularly applicable. Mayer is almost unrecognizable on the opening track, “Queen of California,” on which he could pass for an Allman Brother (think: Cher’s second hubby). In fact, much of the album has a “rootsy” feel, even “Speak For Me,” on which he sasses, “Now the cover of a Rolling Stone/Ain’t the cover of a Rolling Stone,” while reassuring us he isn’t “mad about it”—a JOHN reference to his infamous MAYER interview for the mag

MATT KEARNEY that got him into some hot water. Mayer also explores a similar soul-course as Mraz on “Something Like Olivia,” and “Love Is a Verb.” Mat Kearney, whose voice is reminiscent of Coldplay front man Chris Martin, is firmly in Mayer and Mraz’s camp on “Young Love” (Aware/Universal Republic). This is especially true when it comes to matters of the heart, a subject Kearney covers throughout the disc, beginning with “Hey Mama,” and continuing on “Ships In the Night,” the funky “Count on Me” and “She Got the Honey,” and the personal “Rochester,” which he describes as his “father’s story.” Someone who should consider abandoning his hushed vocal style is Joshua Radin: It’s—an affectation, perhaps?—something he’s been working with since his 2006 major-label debut. his songs, something he probably doesn’t want to happen, if he’s even aware of it. Take “Anywhere Your Love Goes,” from his new album, “Underwater” (Mom + Pop). It’s an admirable piece of songwriting which would benefit from a more effusive performance. That’s pretty much the way the rest of the disc goes, which is unfortunate, because Radin is backed by a Who’s Who of musicians (including Benmont Tench, Jim Keltner, Matt Chamberlin and Roger Manning, Jr.), who make the songs sing. Now, if only Radin did the same. Produced by John Flansburgh of They Might Be Giants, “Artificial Heart” (Jocoserious) by Jonathan Coulton is proof-positive that bros have a sense of humor. Not quite as funny as Ben Folds at his wittiest, the 18 songs on the disc—including “Sticking It to Myself,” the deceptively-romantic “Today with Your Wife,” “Je Suis Rick Springfield” (sung in French!), the TV theme-song-glossy “Good Morning Tucson,” and the acoustic heartbreak of “Now I Am an Arsonist” (featuring vocals by Suzanne Vega)—may not have you laughing out loud, but they have the power to make you smile.

Pass the Sunday Gravy Traditional Italian Sauce to Make You Shout

have to thank my friend, Carl Marzola—“Don Carlo,” as we like to call him—for reminding me (on Facebook, no less) how much I enjoy making the traditional Sunday “gravy” (as the old school paisans refer to the traditional tomato-and-meat-based sauce that accompanies Italian fare up north). People should recognize that there is a profound difference in the cooking of northern and southern Italy. The cuisine prepared in the north of the “Boot” reflects its geographic origins, just like the heavy, tomato, garlic, and olive oil-based sauces possess the stamp of the hilly badlands of the Mezzogiorno (or “midday” in Italian, and pronounced meddso-jorno), or Southern Italy. It is estimated that between 1880 and 1920, about 4 million Italian immigrants arrived in the U.S. Many sought housing in the older sections of the large northeastern cities in which they settled—places such as Boston, Newark, N.J., Cleveland, and the biggest “Little Italy” of them all, on Manhattan’s Mulberry Street, in New York City. To these often overcrowded, substandard tenements, they brought their old world recipes (and other customs; See: the “Black Hand,” the “Five Families” of Il Cosa Nostra, and similar “cultural oddities”), and a delicious addition it has proved. Most Italian immigrants were employed as laborers, and so their work weeks (all six days) were occupied by back-breaking, physical work. Because of this, Sundays were especially important to Italian-Americans. It was literally a day of rest. Although not all were churchgoing, most Italian families gathered at home on Sunday for a celebration of the abundance they had found in America. For a newly-arrived Italian, the ability to earn ten dollars a week as a brick-layer, a tunnel-rat, or a dockworker meant opportunity beyond anything in

Naples or Sicily. Not only could he earn a living wage and house his family, he could also feed them— well. This meant that he could afford to feed them MEAT. Long after those first-generation ItalianAmericans had moved off on their own, they continued to gather at “Mom’s house” for Sunday afternoon meals. After World War II, returning Italian-American veterans joined the growing migration to the suburbs, taking with them their “old family recipes,” and assuring that “Mom’s Sunday Gravy” became as much of a staple in North Jersey and on Long Island as it had been around the cramped kitchen table on Mulberry Street. Like an Italian grandmother—or Nonna—stirring her pot of basil on a Brooklyn fire-escape, I love to make cooking Sunday Gravy into an all-day affair, as well as a salute to the many flavorful meats that Mamma loved to simmer in her homemade sauce. Roll up your sleeves, throw on some Frank, Dean, and a little Rosemary Clooney—George’s aunt!—for good measure, pour yourself a nice glass of vino—and let’s make Sunday Gravy. Continued on Page 42

• 4 lbs of ground beef • 4 lbs of ground veal • 4 lbs of ground pork • 4 pork chops (bone in) • 2 lbs. of Penne Rigate pasta • 1 gigantic yellow onion • 1 head of garlic • 1 fresh batch of basil • 1 batch Fresh parsley • 1 egg • 1 long ring of hot Italian sausage • 4 slices of bread (white or wheat) • 1 cup of milk • 2 cups of grated Pecorino Romano cheese • 1 cup of dry white wine or cooking wine • 3 large (29 oz.) cans of tomato sauce • Extra virgin olive oil • Oregano • Salt • Pepper • Sugar • 4 bottles of wine • 1 loaf of fresh Italian bread

ice the onion into bits. Dice five cloves of garlic. Chop up the basil. Put all the GROUND meat (beef/ veal/pork) into a very large bowl, and add salt, pepper, a little oregano, ½ cup of grated cheese, and one egg. Place the four slices of bread into a cereal bowl, and fill it with milk. In a big pan on medium low heat, SLOWLY sauté ½ of the onion, ½ of the garlic, and ½ of the basil in 2 tablespoons of olive oil. (When I say slowly, I mean really slowly—if you burn the garlic, all is lost. Burnt garlic will be the only thing anyone tastes.) When the onions are translucent, it’s ready (approximately 15 minutes). When the onion/garlic/basil mixture is finished sautéing, add it to the bowl of meat and other seasonings. Squeeze out the milk bread, and add the wrung-out bread into the meat bowl.

IT’S A MESSY BUSINESS, PAISAN Mix for 5 minutes, kneading it together into one glorious mass that is evenly blended. Add two tablespoons of olive oil to a large spaghetti pot, and sauté the rest of your onions, garlic, and basil—once more, SLOWLY and medium low, taking care not to burn the garlic. When the onions are translucent, add three cans of tomato sauce. Add half a can of water (for each can—so 1 ½ cans), and use it to rinse the remaining sauce still in the cans. Pour this water into the pot; it will cook off over the next three hours. Sprinkle some oregano into the sauce, and stir in a tablespoon of sugar. Simmer on medium low heat. Pour an inch of oil in the bottom of the sauté pan, and turn oven to medium high. Scorch the oil until it is hot. Shape the meatballs in your hand (whatever size you like, although I like large meatballs). Add them to the scorching hot pan, keeping a little space between each one. If the oil is hot, they will brown quickly on each side. Don’t worry if they’re still undercooked in the middle—they will be cooking for three hours in the sauce. When each side is browned, place the meatballs on paper towels, and add the next batch to the pan (this should happen about three to four times, with four to five meatballs in each batch). When finished, add browned meatballs to the sauce. I always add (bone in) pork chops to my Sunday sauce; they completely

fall apart while cooking in the tomato sauce, and they add a ton of flavor. With the same oil you used for the meatballs, brown the pork chops, remove them from the pan (patting some of the oil with a paper towel), and add them to the sauce. Cook the sausage, and add it to the sauce. Take the pan—which should have little pieces of meatball, pork chop, sausage, onions, etc., dotting the bottom—and put it back onto the stovetop on medium high heat. Add enough white wine to cover the bottom of the pan, and then add a little more. Simmer for a couple of minutes until the alcohol cooks off, and pour the brownish wine gravy into the sauce, stirring it in. Allow the gravy to simmer on low heat for three hours. During the next three hours, the sauce will relinquish a large amount of fat and oil. While it simmers, skim off about 50 to 60 percent of the oil, stirring the rest in for flavor (your own personal taste may require taking out more of the oil, or leaving more of it in). Cook the pasta al dente, which means “to the tooth” in Italian, or cooked so as to be still firm when

it’s bitten—about 10 to 12 minutes. Drain it and transfer it to a big serving plate (we don’t use a bowl for Sunday dinner). Take a fistful of Pecorino Romano cheese, and cover the pasta with it, then toss it a little, to help the gravy adhere to the pasta. Spoon the gravy over the pasta, stirring it in, and covering—but never drenching—the pasta. Sprinkle the dish with parsley and a little more cheese. Place some meat around the outer ring of the serving plate, and take the whole pot of sauce and meat and place that on the dining table. Let your guests decide how much gravy they like, and let them hand-pick their meatballs, sausage, and pork. If you want to go for the whole traditional serving set up, use a red and white checkered tablecloth, or something simple—and set the table with wine, Grappa, and whatever else your guests enjoy. Place several bowls of fruit and berries, along with olives and cheese, and a bowl of olive oil (for dipping the Italian bread). Now everybody—MANGIA!

“In Between Men” Hits iTunes “In Between Men,” the popular gay drama series that helped pioneer the ten-minute format when it began broadcasting over the Web last fall, released to iTunes this week. Created by executive producer Quincy Morris, directed by Jennifer Gelfer, and starring Nick Mathews, Ben Pamies, and Chase Coleman, the show follows the lives of friends in New York City living “in between” a gay world whose clichés they don’t relate to, and a straight world they don’t belong.

hrough wild adventures, racy storylines, joys, and pains, “In Between Men” examines the relationships they share with one another, their colleagues, lovers, and their city. According to Morris, the show offers a more accurate reflection of how the majority of gay men live today. “‘In Between Men’ is not a show about men trying to be straight or denying their sexuality,” he explains. “The characters are proud to love themselves and other men.” Morris contends that while network and cable television have begun introducing more gay characters to popular sitcoms, they continue to represent a narrow view of the community, often painting gay men as the ‘feminine sidekick.’ “Most shows on TV play off the stereotype of gay men being sissies,” he argues. “They don’t represent the fullness of a gay Diaspora that is rich with many types of personalities. Gay men are still men. For many, being gay only means being attracted to other men.” The men of “In Between Men” value their manhood, and project traditional standards of masculinity. They are average guys who choose to not trade their testosterone for estrogen simply because they sleep with other men. Dalton, the lead character, played by Nick Mathews, is a young man at the top of his game. He finds little in common with the superficiality of most guys, and struggles with a lonely love life, wondering if he should settle for Mr. Almost-Right, or hold out for someone better. Jacob, played by Max Rhyser, is the artistic, bisexual character. “Though I don’t personally believe bisexuality is as common as people claim it is, it was important to me to have a bisexual character,” explains Morris. In TV and film, bisexual men are often depicted as villainous

liars and cheaters: Endangering lives, betraying women and men by engaging in sexual behavior behind their partner’s backs. Morris says he wanted to show that not all bisexual men live like this. he notification system on your smartphone is a lot like a dog trainer. For the purposes of this metaphor, you are, unfortunately, the dog. Being notified all the time by your Android or iPhone means that you are at the beckand-call of your tech, constantly pulling it out—your phone, I mean—to find out what just happened. If you’ve ever checked your smartphone because you thought it vibrated— and it turned out to be nothing at all—you’ve likely enabled way too many notifications. Set your phone to silent, and check it periodically to determine if there’s anything new you need to know about. If you require notifications as they happen for work reasons, or if you simply prefer to be more in-the-know, cherry-pick your notifications to receive things you consider important, and ignore what you can look at later. This generally means editing each app’s notification settings. It will minimize your distractions through the day, and help you avoid being at the mercy of your hardware. Good boy. Sit.

t a time when most non-profits are struggling to make ends meet, along comes Matt LaMarianna and a new venture on Wilton Drive—one that is, by all indications, thriving. Boomerangs thrift store, which opened on November 11, 2011—or, 11/11/11, as LaMarianna notes— supports the efforts of pet rescue organizations. “I started in the non-profit work in Boston,” LaMarianna explains. “I had just lost someone to HIV/AIDS, and it was someone very important and special in my life. After his passing, I started helping at the AIDS Action Committee. I got my start at merchandising in the thrift store that was run by the committee.” He had found his calling, but the geography wasn’t a perfect fit. “I really enjoyed the work,” he recalls. “Then, one wintery, blustery Boston day, I decided ‘enough’” with the cold weather. After moving to the warmer climes around Tampa/St. Pete, LaMarianna continues, “I’d heard that Wilton Manors was the place to be if you’re in the LGBT community. I kept passing this one place, and the windows were blacked out, but the place intrigued me. I actually thought that it was part of the Mexican restaurant [Acapulco Lindo] next door, so I kept asking around. My mom left me some money, so I put all that into opening my own 501 (c) (3) [non-profit organization], the Animal Rescue Fund. As you know, all gay men love their pets,” he adds with a smile. “I am sort of like ‘Aunt Bea’ from ‘The Andy Griffith Show.’ Once she left television, she adopted cats galore. I am that way with dogs, so I am sort of the crazy cat lady—except with dogs,” LaMarianna impishly explains. He takes seriously, though, the work he has chosen for himself and for Boomerangs. “‘Boomerang Buddies’ is our inaugural big-adoption event. It’s going to be on Sunday, August 5, from

10 to 4. The event will raise funds for Lady Luck Pet Rescue, Good Karma Pet Rescue, Stray Aid and Rescue, and, of course Animal Rescue Fund, which is our own organization. I am so excited about having this event. We will have the mobile van for spay and neutering on site that day, and it will be a great way for us to showcase the new store,” LaMarianna adds, with fatherly pride. “This has been a labor of love for me. It’s been my dream-come-true. Facebook has been such an amazing resource for us to spread our message, because you know what it’s like to struggle to find advertising dollars, and with social media, you have an unlimited audience, worldwide.” LaMarianna acknowledges the realworld challenges he and other not-forprofit groups face. “It’s still tough out there, but we are paying the bills, and in this economy, that’s saying something. I would love to find a larger space, but I want to stay on the Drive if I can. It’s so important to have the visual, and to be ‘in the face,’” he notes. WATER, WATER, EVERYWHERE

ou are not drinking enough water--plain and simple. How do we know? Because it takes 100 ounces of fresh water to adequately hydrate the human body. For years, nutritionists and researchers have advised us to drink eight 8-ounce glasses of water a day. And even that dose seems extraordinary to most people. More recent research, however, has revealed that 64 ounces isn’t even close to the real needs of the average human body for adequate hydration.

Other than oxygen, water is the single most essential element in your daily diet. It’s easy to understand why, when you realize that about 60 percent of the human body is made up of the stuff. The brain has even more—70 percent! The most obvious source of water loss from the body is through urination and sweating. Less obvious, but no less important, are the two quarts of water you expel through breathing. The air you breathe out is 100% humidity! So drink up. The human body requires water to facilitate nearly all its functions. Still, humans seem to be the most reluctant species on the planet to drink enough of this cleansing liquid. Even if we include the copious amounts of coffee, tea, soda and juices consumed on a daily basis, the total water intake of any single individual is still likely to be low. Fast fact: A new study done at the University of Connecticut demonstrates that up to five cups of coffee, or an equivalent amount of non-sugared soda counts toward your daily intake without any negative diuretic effects from the caffeine consumed. Drinking water, even the minimum amount, can help aide in the prevention of disease, and alleviate some of the physical side effects many people experience throughout their day. Thirst is not a symptom of moderate dehydration. By the time you actually feel thirsty, you are severely dehydrated and need an immediate input of liquids. The most common side effect of dehydration is hunger. That’s right. The stomach makes little distinction between too little food and too little water. Normally, all of us get plenty of food. It’s the lack of water that is creating our hunger

sensation, as well as chronic fatigue, dry skin, light-headedness, and dry mouth. Have these symptoms? It’s a sure-fire sign that you are not drinking enough water throughout the day and need to bump up your intake. Lack of adequate water increases the damage to our body’s cells, thus creating irritability, a decrease in coordination and the ability to focus on the task at hand, consistent headaches, increased blood pressure, kidney dysfunction, and chronic back pain. Improper water intake also affects the lymph system, which serves as the body’s main way of detoxification, removing impurities, bacteria and dead cells. Drinking adequate water is the best way to keep the immune system at its optimal, as well. Good water does not only come from a glass or bottle. Eating well-washed fresh fruits and vegetables is an excellent alternative source of water, full of important vitamins and minerals, as well. Oh, and before we forget to mention it, alcohol does not count toward liquid consumption. For each drink or beer you consume at the bar, the body requires an additional eight ounces of water to counter alcohol’s diuretic effect. Ideally, drink one glass of water between orders at the bar just to keep from losing fluids while having fun. Plus, after a night on the town, drink a glass of water with some sugar and a dash of salt. You’ll wake up without your usual hangover. Water to the rescue once again!
