RICK ROSS:
“God Forgives, I Don’t”
I
mean this in a good way: Rick Ross is like a big kid who is recording—in this case musically— all of the cool things that happen to him, and he shares them with his peeps with that same child-like wonder. For example, in last year’s GQ profile of the Carol Cityraised rapper, Rozay waxes about his first trip to the Cannes Film Festival like he was entering his first competition: free-style “Took the team over, ended up f***ing around, getting some Ferraris, Lamborghinis, going to the Eden Rock, kicking it with a few homeys. Shout-out to Leonardo DiCaprio.” Or as he raps on the second track on his latest album, “God Forgives, I Don’t” (“Pirates”), “Dreams of getting cream and never to be extorted/Seen so many things, be preposterous not to record it.” The title—and story behind the release—of “God Forgives” render many of the tracks with a deeper meaning, when considering that the album was originally planned for a December release, which was delayed because of Ross’ well-publicized, life-threatening seizures in October. That layers a fascinating reality to lyrics like the ones on track “911”: “If I die today, on the highway to heaven/Can I let my top down in my 911?” Along with his introspective soul-searching, the depth of Ross the Boss’ quickness of mind is also well on display. On “Sixteen,” he demonstrates that little-kid appreciation for the musical form in all its incarnations (and faces), and his glee at being in the Pantheon:

here really is nothing quite like the simple pleasure of dining outdoors. Alfresco dining (from the Italian words al fresco, or “outside,” at “a fresh temperature”) is simply a fancy term for eating outside. You don’t have to look any farther than the numerous sidewalk dining spots that dot the landscape in the Gayborhood and beyond to know how popular it is to eat outdoors, especially in South Florida, where the temperature and weather is picture-perfect.
A
lfresco is a style of dining that is casual, and often party-like, in its atmosphere. Hosting an alfresco dinner is a great idea for entertaining friends at home, when you don’t feel much like dressing up (although as a host, you should always look your best, even when you “dress down”). An alfresco dinner party means setting the table in the grass, and dining by candlelight with the trees and stars overhead. Whether serving for two or 10, the outdoors screams romance way more effectively than eating inside—and you don’t have to worry about Bruschetta crumbs or pieces of Brie staining the carpet!
Look at the Skies: They Have Stars in Their Eyes… An alfresco dinner setting should invoke the outdoors, with the table and chairs inspired by vines, peonies, and rustic-

looking, vintage finds from local thrift stores and flea markets. Use burlap placemats, and scatter Pimm’s cup-sized vases, filled with softcolored flowers. Use candles to light the dining area—a gazebo would be perfect for this—and make a candelabra that has vines (preferably real ones) wrapped around it. Cream-colored plates and light-green-toned glasses complete the look au natural.

Since you’re eating outdoors, you may as well cook outdoors. Serve pitchers of iced sangria (like the recipe I featured in our April 26, 2012 piece, “Celebra el Cinco de Mayo!”), and kick things off with an assortment of grilled crostini (Italian for “little toasts”), topped with delicious summery wonders, like this grilled eggplant and ricotta delight:

Grilled Eggplant
INGREDIENTS • 1 medium eggplant, cut lengthwise into ½-inch slices • ½ cup of ricotta cheese • 3 tablespoons of balsamic vinegar • 2 tablespoons of freshly chopped oregano leaves • ¼ cup of grated Parmigiano-Reggiano (grated parmesan cheese works, too) • 1 baguette (Italian or French bread), cut into ½-inch slices • 2 garlic cloves • Extra virgin olive oil • Pinch of crushed red pepper • Salt

reheat grill. Brush each eggplant slice well with olive oil, and sprinkle well with salt. Place eggplant slices on the preheated grill, cooking each one on both sides until the eggplant is soft and pliable, and is nicely charred. Remove from grill, and let cool. When eggplant is cool enough to touch, chop it up coarsely, and place the pieces in a large mixing bowl. Add ricotta, vinegar, oregano, Parmigiano, and crushed red pepper, and combine. Season with salt. While grill is still hot, grill the baguette slices on both sides. Remove bread, and rub each piece with a raw garlic clove, and brush them lightly with olive oil. Top each piece of bread with the grilled eggplant mixture. Can you say, “mmmm?”

A SLICE of Heaven. Now that you’re feeling creative, try your hand(s) at grilling a pizza (or actually a few, I’m thinking one per couple—more if you want to play with the toppings) as a tasty, Tuscan-style appetizer. Homemade pizza on the grill calls for homemade dough, but if time—or inclination—is a factor, you can purchase pizza dough frozen (or partially-cooked crust). Topping Ingredients •2 medium or 4 small pizza Crusts (homemade or frozen) • 1 tablespoon of olive oil • 1 tablespoon of herbs (fresh or dried) • ½ cup of freshly sliced plum tomatoes • 1 to 2 cups of mozzarella cheese (fresh or regular, grated or sliced) • 1/2 cup of Parmesan cheese (grated or shaved) • 1 package of sliced pepperoni • 1 cup of precooked mushrooms or sausage • 1 cup of precooked ground beef (seasoned with Italian Seasoning or Complete Seasoning) • ¼ of sliced olives • ¼ cup of jalapeno peppers • Italian Seasoning, or Complete Seasoning (“Condimento Completo”) Preheat the grill to the hottest setting (about 450 degrees). Roll the pizza dough into an artistic shape. Put the dough on the grill for 2 minutes per side. (The thickness of the dough and the heat of the grill will determine how long, especially if you prefer it crispier or “doughier.”) Once the dough has grill marks on each side, it’s ready to be TOPPED! (So to speak.)

Homemade Tuscan-style Pizza
R
emove the pizza from the grill, close the lid, and turn off ONE side. Brush the pizzas with olive oil, and transfer them to the side of the grill that is turned off, cover with mozzarella cheese, and bake until the cheese is melted. Add Italian Seasoning or Condimento Completo and toppings, as desired. (Some suggestions include topping one pizza with basil pesto, baby mozzarella balls, and sliced tomatoes, or baby asparagus with sliced ham and Fontina. You can also set out a variety of toppings—as suggested in the ingredients, above—and let your guests create their own.) Green Leaves. Since you already have the grill—and your guests—fired up, throw your salad greens on it for an alfresco twist. Grill some tasty (and low-carb) romaine, and add a drizzle of creamy basil dressing when you put it into wooden salad bowls. The Main Event The right piece of meat makes every night perfect (tell me about it). Try this spicy “strip” joint stallion on for size. INGREDIENTS • 1 1-lb. New York strip steak • Olive oil • Salt • Pepper • 1 clove of garlic, minced • ½ tablespoon of chopped scallions • ½ bunch of parsley, chopped • 1 Serrano pepper, sliced thinly • Juice of 1 lime
Coat the steak with olive oil, and add a generous amount of salt and pepper. Combine it with the remaining ingredients (except for the lime juice), and let sit for about 15 minutes, while you heat up the grill to high heat (about 450 degrees). When the grill is hot, squeeze some of the lime juice on the grill (keep the rest for later). Place the steak on the grill over direct heat, and cook for about 4 minutes per side (until the internal temperature reaches about 130 degrees or medium rare). Remove steak from grill, and let stand (covered) for 5 to 10 minutes. Slice across the grain, and top with the remaining lime juice. Serve immediately. W
e admit it. We’re a sucker for a Pilgrim Wrap. Although we were first introduced to the sandwich years ago while living in Provincetown, Massachusetts, land of the Mayflower, we recently reacquainted ourselves with the joy of this taste treat at Pilgrim Wrap: Stork’s Bakery, Unbelievably Coffee House & Tasty! Café in Wilton Manors. The local variety serves up a delicious sliced oven-roast turkey combo with cornbread stuffing, cranberry vinaigrette, chutney, beefsteak tomato, lettuce and mayo in a spinach wrap. At $8.49, it’s the signature sandwich of Stork’s, a local institution for the past 15 years. Over that time, there’s been a few changes to the menu, but the Pilgrim Wrap has always made the cut. In case you’re new to the neighborhood, or haven’t stopped by recently for a fast, wholesome meal, Stork’s blends a menu of salads, sandwiches, soups, and quiches with their famous housemade desserts. This day, we tasted our way through a fresh-from-the-stove Creamy Veggie Soup ($8.95), a smack-your-lips Caprese Salad with field greens, tomato, mozzarella, basil, chives, and cracked black pepper ($7.99), a Baked Eggplant Lasagna ($10 per pound) that had just the right amount of heft to counter the light tomato sauce, and a large slice of Storkberry Pie, which, if you haven’t tried it, is heaven between a crust. The Storkberry, which should have its own patent, is a unique blend of strawberries, cherries, blackberries, raspberries, and blueberries, with a flaky lattice-work oatmeal crust, at $4.00 per slice. At breakfast, the spotlight is on Stork’s 13 different whole bean blends of coffee, with Snickerdoodle Decaf our vote for the moment, though they’ve got an equally large variety of fresh brewed teas. Where else could you find a tea called Get Gorgeous, which, when consumed,

promises to produce the clearest skin this side of Snow White? At breakfast-time, it’s an aroma orgy inside the shop, as coffees fence with baked goods for bragging rights to um-um good. Yet as great as the café and coffee are, Stork’s shines when the bakery is placed front-andcenter. There is nowhere else in town with as consistently a great German Chocolate Cake: Moist chocolate with coconut sweetness, tempered with a sprinkle of pecan at $4.15 a slice. Another favorite, which is often out of stock, is the White Chocolate Pistachio Cheesecake ($4.15). It should be illegal, and maybe it is, since it seems to vanish from the display case as soon as it arrives. It’s a white chocolate pistachio ganache that’s made sinful with the addition of pictachio pieces that circle the rim of the outside of the cheesecake. The first bite will tell you you’re in big trouble. Those who know German Chocolate such things swear by Cake... MMMM! the Kahlua Marble Cheesecake ($4.15), with its coffee swirl atop a dark chocolate crumb crust. While it’s too adult for us to even try, the baker insists it’s a winner. So, too, is Stork’s within the community. It is not unusual to see the company logo on charity fundraisers for not-for-profit organizations, particularly within the LGBT arena. They continue to be a major presence during the annual SmartRide (this year, it’s November 1617), as well as the monthly Tea Cruise benefiting the Brian Neal Fitness and Health Foundation. PANASONIC TC-P50X5: 50-Inch Plasma, For Under 6-C’S
W
hen purchasing a new TV, I look at two criteria (neither which, for me, relates to the other): size and price. For lots of electronics, prices are so affordable (even in this cruddy economy) that I prefer to shop for televisions with an eye on both. When it comes to a TV, priced under $600, there’s not much that can compare to the Panasonic TC-P50X5 plasma. At 50-inches, it’s larger than most TVs in that price range—and plasma televisions have generally better contrast ratios than LCD sets. And speaking of which: Although there are loads of LCD models available in the below-$600 price range, most of them are a lot smaller than 50 inches. Can we all agree that, all things being equal, a larger screen size is usually the better option? A common problem for LCDs is motion blur—something only partially fixable with higher refresh rates (120Hz, 240Hz, etc.), and something you won’t find in this price range. In addition, most LCDs have poor off-axis viewing (where picture quality worsens significantly when viewed from the sides, above, or below the head-on screen)—a problem that’s made worse with less costly LCDs. For videophiles, the single biggest drawback of the TC-P50X5 is its resolution: 1,024 x 768 pixels (by comparison, most modern TVs are 1,920 x 1,080). But at the distance most people sit from their sets—about 10 feet—it’s hard to see a noticeable difference between the resolutions. And resolution is just one aspect of picture quality.

Other factors can make a lower resolution image can look better, including contrast ratio, and, as noted above, plasmas have better contrast ratios than LCDs. This is one instance where you can take 50-inches with no problem. WATCH THIS: $549.99 (Suggested retail).

ne of the downsides of a modern world is that technology hasn’t kept pace with sloppiness. Not every moment of life is greeted with pristine hands—especially when one finds oneself in the kitchen. Although iOS and Android technology make accessing the world’s best recipes— literally—a snap, it hasn’t figured out a way to keep Chef’s sticky fingers from crudding-up the touchscreen. The new Gilt Taste app (from e-commerce site Gilt Groupe), available for iPad, marries appealing recipes with a workable touchless interface. The app’s 140 text recipes are presented in a straightforward fashion. The app utilizes the iPad’s built-in camera to track hand movements, allowing you to turn the pages of the recipes without actually touching the tablet: All you do is place your hand in front of the screen, brush it from right to left—like you were turning the page of a book—and the page flips to the next step. (Waving your hand in the opposite direction from left to right brings you back to the previous step.) I
n 1864, Henry Wells, founder of Wells Fargo Bank said, “We have one very powerful business rule, it is concentrated in one word: Courtesy.” It’s nice to see that, 144 years after the death of Wells (who also started American Express), that watch word is still very much alive in the bank that bears his name. The Wilton Manors branch (or “store,” as the company calls its local operations) at Five Points has something of a Gayborhood backstory. Construction on the building—located at the conjunction of Wilton Drive, Dixie Highway, and Northeast 26th Street—was started around three years ago, but there was a lengthy gap in construction times. Then all at once, or so it seemed, the building was completed, occupied and staffed as if it had been part of the local scenery for ages. In June, the Five Points Wells Fargo store participated in the Stonewall Summer Pride Festival and Parade, entering the cavalcade with a beautiful stage coach drawn by four stunning horses. “As a symbol of our heritage, image, and values, we have re-created these beautiful coaches,” says Wilton Manors store manager Mitch Bloom. “We have these placed around the country. The one this year used at Stonewall was brought from Atlanta,” he adds. “Jack, the dog on top of the coach, is so amazing. He is the brother of the original mascot, Jack, who died last year.” Bloom is proud of his company’s commitment to LGBT rights, and their involvement in the community. As Blooms relates it, twenty five years ago, Wells Fargo made a commitment to create a welcoming workplace environment

for LGBT team members. In 1987 Well Fargo included “sexual orientation” in its corporate non-discrimination statements, and in 1992, the 160-year-old financial services company’s legendary stagecoach made its first LGBTcentered appearance at Los Angeles Pride. Within the decade (1998), they extended benefits to domestic partners. In 2004, they added “genderidentity and expression” to the non-discrimination policy. In 2010, they became a lead sponsor with GLSEN’s Safe Space campaign, funding 15,000 “Safe Space Kits” to help protect children across the country. “Wells Fargo has a Pride Team Members Network, which is comprised of not just the LGBT community, but also those who are allies and friends,” says Bloom. “They come out in droves to help with any event that we have. I am the vice president of the team, and am so proud to serve. We have over 70 active members, and they are out there whenever there is an event.” Bloom and his team members keep Henry Wells’ commitment to courtesy and community involvement in the forefront of their minds. “We are having at least one team at the Poverello Bowl-A-Thon on August 11, and we will have a booth there to answer questions.” Bloom says that Wells Fargo is committed to helping the individuals who comprise our village in these trying times. “Our Opportunity Package allows someone a new opportunity to have a checking and saving account,” he explains. “If you have had problems with credit, some banks shut you out of the system—that’s not the way we work,” adding, “Every person needs a second chance.”

The Grand Place, Brussels, is a hub of tourist activity

here are 125 or so brewers in Belgium, a country the size of Maryland. Now, we know this fact because we’ve visited, oh, a good 20 or so of these establishments where the beer and ale samples run freely. It was all very righteous, we assure you, since we were touring Trappist, Cistercian, and Benedictine monasteries when we happened upon the occasional brew. Our favorite was the Trappist Abbey of Saint Sixtus of Westvleteren, near Belgium’s border with France, where the monks produce three different beers. Each brand has a different color cap (green, blue and our favorite yellow), which also contains all the prudent information about the brew, since the bottles feature no other labeling. Clever monks. It is, of course, the same with chocolates. Slightly less ecclesiastical in nature perhaps, but no less enjoyable. We discovered, while touring the capital city of Brussels, that the country annually produces 172,000 tons of chocolate, and nearly a ton of it is given away free on tours of factories and chocolate shops. Of these, we recommend the chocolatemaking demos given each Saturday and Sunday at 4 p.m. at La Maison des Maîtres Chocolatiers Belges (Grand Place 4, 2-888-6620). How can you not love a country that gives away candy? Another tasty bit of trivia: Belgium has more castles per square mile than any other place in the world. Of the lot, our favorite is the Royal Palace (Place des Palais, 2-552-2020), Royal Palace, Brussels the official digs of King Albert II and his Queen, Paola (though the pair actually live in a chateau on the grounds of the Royal Castle of Laeken). It is just as well, since the royals fling open the doors and allow mere mortals to haunt the halls from July 24 through September 9. For all the hundreds of palace rooms, you would think that finding a place to stay in Belgium would

be a simpler task than it is. The bed-and-breakfasts tend to fill up quickly (having only one or two rooms apiece), and the classier hotels will cost you your first-born child, or some amount that seems as pricey. Fortunately, there’s a nice middle ground in the form of the Royal Windsor Hotel Grand Place (5-7 Rue Duquesnoy, 2-505-5555) where a chic room will set you back around $115. Royal Windsor Hotel Grand Place is nestled in the heart of Brussels’ city center, within walking distance of the famous Grand Place, Galeries Royales, Sablon Antique Fuse Club, Brussels Square, plus the Fuse Club (208 Rue Blaes/Blaesstraat). Once a month, Fuse houses La Demence, one of the largest international gay parties in Europe. You’ll have to hustle to make the next one on August 14, starting at 10 p.m. and running until 11 a.m. the following morning. Until the last decade or so, Belgians were conservative where gays were concerned. affeine has been stimulating Americans with its get-up-and-go power for years. Up to 90 percent of Americans consume some sort of caffeine to get through their days. The U.S. has made caffeine a big part of its morning ritual, with that morning zip from coffee or energy drinks an essential part of the day. Without this morning stimulant to sharpen the mind and calm the nerves, most Americans would grumble at the start of their workday, or any day at all for that matter.
In reality, caffeine is a very powerful drug and can make most peoples’ minds crave its addictive influence. When consuming anything within your diet, moderation is the key. Overloading this substance in the body can have very adverse side effects and create a possible addiction. The recommended amount of daily caffeine consumption is 300 milligrams (about two cups of coffee). But most Americans consume on average 600 milligrams or more per day. If you are drinking four 8 oz. cups or more of coffee or energy drinks a day, you are in the upper ranges of abusing this drug. The international medical community does recognize caffeine withdrawal as a medical syndrome and drinking more than the recommended amount will put you into this category. These shocking facts may curb some of your over-indulgence when that next coffee craving or energy drink fix comes to mind, if your insomnia doesn’t get to you first. That’s right: Too much caffeine during the day causes insomnia at night, making that next morning start even tougher without our fix of the good stuff. Irritability can be another side effect of the withdrawal symptoms, making the brain crave caffeine to stay awake. Coffee can have a varied range of caffeine in each 8 oz. cup. Ground coffee, using the home-brewed drip method, can have anywhere from 100 to 200 milligrams of caffeine per 8 oz. serving. The caffeine intensity can vary among famous brand coffees. Starbucks® and McDonalds® have much less than your homebrewed Maxwell House. These restaurant-bought coffees and lattés are on the lower end of caffeine for three to five times the price. (Only Starbucks®

Pike Place has more than 330mg in a 16 oz. serving.), Caffeine-wise, you may want to worry about the coffee you make at home first. Energy drinks and soft drinks can really throw you for a loop with their caffeine levels. Energy drinks seem to be all the rage, but surprisingly they’re also on the low end of the scale. Red Bull® has 80mg in an 8.4 oz. can, whereas Monster® and Rockstar® have 80 mg in an 8 oz. serving. Topping the charts of the energy drinks is 5 Hour Energy® with 207 mg in a 2 oz. serving. Soft drinks do not follow far behind with their caffeine production. RC Cola tops the chart at 48 mg of caffeine per 12 oz. serving, followed by Coca-Cola® (even diet) with 47 mg. By comparison, Pepsi® contains far less, with only 37 mg, followed by Dr Pepper® at 36 mg. Chocolate cannot be left off the list, holding as much as 70 mg in a 2 oz. serving of Baker’s chocolate. Sweet or dark chocolate is not far behind, with 40 mg for a 2 oz. serving, followed by 12 mg in a 2 oz. piece of milk chocolate. Tea is also another caffeine culprit. The longer you brew tea, the more caffeine can be extracted from the leaf. A one-minute brewed tea can have 9 to 33 mg, whereas a three-minute tea can have 20 to 50mg. Now the next time your energy is feeling low, don’t be afraid to have some caffeine. Just remember to know how much is in the cup or glass before it becomes a problem.
