STONEWALL: THEN AND NOW By Dale Madison I remember that fateful night on June 29, 1969, and the next day listening to the CBS News with Walter Cronkite and learning of what had happened the night before. It had been a hot steamy night in New York, and the word had just been received that Judy Garland had just been found dead in her New York apartment. Tensions were running high in Greenwich Village, where many of the closeted gays lived and partied. That night, NYPD raided the Stonewall Bar as was their usual habit, harassing and arresting customers. But what happened next was not expected. Two hundred people—who far outnumbered the police—began to push the police out. The owners of the bar had recently replaced the glass windows with plywood, because of privacy concerns, and the cops— intimidated—began to retreat. For hours, drag queens and bar customers held the cops at bay. It was the opening salvo of the modern LGBT Rights movement.

Making a SPLASH: SCOT NEWELL

T

he road to being an “award-winning bartender” has been a long and winding one for Georgie’s Alibi bartender Scot Newell. For example, Newell laughingly notes that he got into bartending through “necessity.” “I was working in New York as a lighting designer, and it certainly helped to propel me into the creative area that I am now in, but it just wasn’t paying the bills,” he recalls. “Anyone who has ever lived in New York knows what the bills are like. One day, I was offered a job doing lighting at Caroline’s Comedy Club. They explained that there were not too many hours available for lighting and stage management, but they could offer me a few shifts bartending.” His first leg on that road had begun. “I was at Caroline’s for several years, before I decided I really wanted to get out of New York,” Newell remembers. “I had an offer to go to Provincetown to redo a retail store. I moved to do the job, and there I got another offer to redo the Post Office Café. I really never planned to stay in P-town, but I ended up there for eight years. After finishing the decorating projects, I really didn’t know what I was going to do. I was at the A House—which is a very well known bar in P-Town—for eight years. During the summer months, it was great. People called it ‘Little Bar Scot.’ “The winter months weren’t so pleasant,” Newell says. “It was cold, rainy, snowy, and there was not a lot to do. So after eight years, I decided to winter one season in Florida. I had met George Kessinger—the creator of Georgie’s Alibi—in P-Town, and had known of the reputation of the man and the bar. I applied for work while I was down here, but like a lot of other people, I didn’t hear a word.” Newell laughs. “But I wouldn’t quit trying! I kept bugging Georgie to the point that it had become a joke. It was either ‘I was going to get a job,’ or there would be a restraining order issued,” he half-jokes.

After getting his job at Alibi, Newell again decided to pursue his creative side, and in 2002, he presented his design portfolio to the Art Institute of Fort Lauderdale. He enrolled that day, and completed the four year program in just three years, graduating Magna Cum Laude with a bachelor’s degree in Interior Design. In 2004, he incorporated his Great Scot Enterprises brand. In 2010, Newell got a call from his former employer, George Kessinger, who was living in Palm Springs, California. Kessinger had previously sold the Wilton Manors Alibi, and moved to the desert, opening Azule and the Palm Springs Alibi. In partnership with the Tourism Board of Palm Springs, Stoli Liquors, and LoGo TV, they created the Palm Springs Stoli Summer Splash Cocktail Challenge, events held across the U.S. and Canada at the top LGBT bars and nightclubs, with favorite local bartenders competing against one another to stir up the best signature cocktails, and win a trip to Palm Springs for the finals, which was precisely what Scot did. After winning the regional competition, held in Fort Lauderdale, he captured the national first prize. Today, Newell holds court at the original Georgie’s Alibi in the Shoppes of Wilton Manors every Saturday morning, beginning at 11 a.m., and he can be found there throughout the week, as well. Here is the recipe for his award winning cocktail: > 3 oz. of Absolut Citron >1 oz. of pomegranate liqueur >A splash of each of the following: sour mix, cranberry juice, and 7UP. >Garnish with a lemon wheel and Pomegranate seeds. Justin Bieber: “Believe”

J

ustin Bieber instantly became a teen heartthrob with the release of his first stateside single, “One Less Lonely Girl,” in November 2009. My then-22-year old partner in crime—who shall remain nameless—introduced me to Bieber’s sound, and explained the extent of her Bieber Fever.” When I responded with kneeslapping, red-in-the-face, uncontrollable laughter, she turned pale—and I realized that she was 100 percent serious. Within weeks, “Bieber Fever” had spread like wildfire. Everyone wanted to fondle this poor 15-yearold Canadian boy with the all-too-perfect lesbian-esque haircut. Three years later, after what seems like 10,000 hit singles, Bieber released his third studio album, “Believe.” On opening track “All Around the World,” Bieber joins rapper Ludacris with one simple message: “All around the world, people want to be loved/all around the world, they’re no different than us/all around the world.” On lead single “Boyfriend,” Bieber reassures every neurotic pre-teen fangirl that “if (he) was your boyfriend (he’d) never let you go, never let you go.” Words like “swag,” “fondue,” and even the name “Buzz Lightyear,” all make appearances in “Boyfriend,” providing an adorable visual of an extremely wholesome Bieber. “One Love”

and “Catching Feelings” stand out, with Bieber’s sweet vocals front and center. At 17 tracks, the album is a bit long. Many of the songs sound alike, and some sounding like “B” tossed-away sides from an R&B circa band, boy 1998. Guest spots from Drake, Nicki Minaj, Big Sean, and Jaden Smith don’t really add much. What really stands out on “Believe” are Bieber’s well-developed vocals, and his eternally-catchy hooks. At times, he has a definite air of vintage Jackson 5 about him. The album is a great step forward for the singer, with beautiful vocals, and some very memorable moments. /10

ondon’s Hot Chip has made quite the name in the underground electronic/indie scene. Their 2008 single “Ready for the Floor” is the band’s most notable to date, with 3.2 million views currently on YouTube. “Ready for the Floor” was the perfect breakthrough single for the band: and fun, Fresh, importantly, most danceable. “In Our Heads” is the band’s fifth studio album, and focuses more on their spastic, keyboardlead breakdowns, and strange vocal samples. Their “One Life Stand” from 2010 was tame in comparison. Opening track “Motion Sickness” uses a quirky percussion sample to give you a good indication of where the album is heading. “Don’t Deny Your Heart” is pure 80s synth-pop, while lead single “Night and Day” relies completely on a neurotic Continued on Page 38

On “These Chains,” a strange, high-pitched vocal sampling in the background serves as chorus, and is definitely one of the highlights of the album. ADAM’S “SUMMER MARGARITAS”

T

he Margarita is the most common tequilabased cocktail in the United States, consisting of tequila that’s mixed with orange-flavored liqueur and lime or lemon juice, and usually served with salt on the glass rim. It is served shaken with ice, on the rocks, blended with ice (the “frozen margarita”) or without ice (“straight up”).

umerous stories claim to recount the true “history” of the Margarita. The most commonly-accepted is that it was first made in 1941 at Hussong’s Cantina in Ensenada, Mexico, and named after Margarita Henkel, the daughter of the German ambassador. Another tale has it first prepared at the Rancho La Gloria Hotel, halfway between Tijuana and Rosarito, Mexico, and named in honor of a former Ziegfeld Follies dancer, Marjorie King. Yet another origin yarn offers the year 1948, and the legendary Balinese Room in Galveston, Texas where, the head bartender is credited with making the drink to celebrate singer Peggy Lee—whose real name was Margaret, or “Margarita,” in Spanish. hatever the “facts” of its birth, the Margarita is as popular today in South Florida’s watering holes as it was in the Golden Days of Hollywood, when Orson Welles was pouring them into Dolores Del Rio. The drink is in many ways a perfect cocktail, combining elements of sweet and tart, and the addition of traditional salt on the rim of the glass will help your body retain lost fluids (like those you sweat out drinking too much alcohol) in the sub-tropical South Florida climate. ere are four delicious variations on the perfect Margarita, and one recipe for a granita—a semifrozen dessert that originated in Italy (and is similar to gelato and sorbet), and goes great with a “floater” like rum—or tequila. ULTIMATE MARGARITA • 1 lime, halved • Coarse salt • ½ cup, freshly squeezed lime juice, from about 4 limes • 1 tablespoon sugar • ¼ cup, orange-flavored liqueur • ¼ cup, Triple Sec • 1 cup gold tequila • ½ can, good quality lager-style beer • Lime wheels, for garnish • Ice ombine lime juice, sugar, orange liqueur, Triple Sec, tequila, and a big handful of ice in a cocktail shaker (or blender). Shake well, for approximately 30 seconds. Add a splash of beer and strain into saltrimmed glasses filled with ice. Garnish with a lime wheel. To salt the Margarita glasses, rub the outside rims of four big glasses with a cut lime, and press them lightly into a plate of kosher salt, to coat.

FROZEN WATERMELON MARGARITA • 1 ½ cups, cubed watermelon • 1 cup, tequila • ½ cup, lime juice • ½ cup, orange liqueur • 2 tablespoons, confectioners’ sugar • ½ teaspoon, salt • 3 cups, ice n a blender, puree cubed watermelon, tequila, lime juice, orange liqueur, confectioners’ sugar, salt and ice. Divide among four glasses; garnish with lime and watermelon wedges.

WHOLE CITRUS MARGARITA • 4 navel oranges, cut into ¾ inch pieces • 2 lemons, cut into ¾ inch pieces • 2 limes, cut into ¾ inch pieces • ½ cup, superfine sugar • ½ cup, orange liqueur • 1 ½ cups, good quality tequila (recommended: 100 percent agave) • 10 cups, ice • Fine salt, for the rims of the glasses • 10 lime wedges ut oranges, lemons, and limes through a juicer. Pour the juice into a large pitcher. Add sugar, and stir to dissolve. Then stir in orange liqueur and tequila. Pour salt onto a small plate. Run a lime wedge around the top of each glass, and dip the glass in the salt. Fill each glass halfway with ice, and pour in the juice mixture. Garnish with lime wedge and serve.

CUCUMBER-CILANTRO MARGARITA • 4 thin slices, peeled cucumber • 2 tablespoons, fresh cilantro leaves, plus 1 sprig • 2 tablespoons, sugar • 3 lime wedges • 2 ½ ounces, silver tequila • 2 ounces, orange liqueur • Juice of 1 fresh lime • Large ice cubes • Kosher salt uddle three slices of cucumber, two tablespoons of cilantro leaves, sugar, and one lime wedge in the bottom of a cocktail shaker. Add tequila, orange liqueur, and lime juice. Fill shaker with ice and shake very well. Rub a rocks glass with the remaining two lime wedges, and coat with salt (optional). Fill a glass with ice and strain the cocktail into the glass. Garnish with cilantro sprig and remaining cucumber slice.

PURPLE POMEGRANATE GRANITA • 3 cups, pomegranate juice • 1 teaspoon, chopped fresh lavender flowers, plus small flowers for garnish • 2 tablespoons, fresh lime juice • ½ cup spiced rum (optional) hisk pomegranate juice and lavender in a chilled stainless-steel bowl. Add lime juice and rum, if desired. Freeze until icy around the edges, about 20 to 25 minutes. Whisk, then continue to freeze, whisking every 20 to 25 minutes, until slushy, for about 2 hours, 30 mintes. Cover and freeze overnight. Scrape the granita with a fork, then scoop into martini glasses. Garnish with lavender.

There Is No Problem a Burrito Can’t Solve

T

ijuana Flats on Sunrise Blvd. is a one-room joint of the place-your-order and-wait-for-the-magic-tohappen type. Around 7 p.m. on any night, the place is a chatty, crazy kind of fun where it’s likely you’ll end up becoming best friends with the folks at the next table. Everyone, from the wait staff who cashier your order, to the kitchen staff who prepare it, to the manager who may just end up serving it, likes to talk. It’s this slap-ya-on-theback sort of camaraderie that is as intriguing as the food. We’ve eaten at Tijuana Flats maybe ten times over the past two years, so we know this menu well. It breaks down rather easily, as most things Mexican do, into burritos, chimichangas, tacos, nachos, flautas, tosdadas, enchildadas, and quesadillas. At TF’s, you not only get to choose your meal, you get to choose the size of your meal—as in the quantity of food on your plate. Burritos, for instance, come in three sizes—the Regular—about the size of Rhode Island; the Tijuana— about the size of Pennsylvania; and the Megajuana— think Texas. Our favorite is the Blackened Chicken Burrito Tijuana Size at $6.19. For that price you get a whole-wheat tortilla, filled with the aforementioned chicken (done delightfully moist), tomatoes, lettuce, onions, jalapenos, and sour cream—with your selection of 15 different hot sauces from the “pump your own” serving bar. Hot sauces are a specialty here, with Tijuana Flats

serving their own “Smack My Ass & Call Me BLACKENED CHICKEN BURRITO Sally” brand in varying intensities from mild to five-alarm fire. And regardless of where on the menu you may wander, you’ll eventually end up back on the sauce, so to speak. Tuesday nights is Taco Tuesdaze where for $4.99 you can get two large crispy tacos, with lettuce, chopped tomatoes, onions, jalepenos, plus chips and a drink—and yes, hot sauce. A deal that packs the place. On Thursday night, think Throwback Thursdaze during which $5.99 gets you a regular burrito, chips and a drink. Same fillers, same sauces. The bargain remains in your pocketbook. Lighten your potbelly with the Norrito Bowl, a burrito without the tortilla, served in a bowl and topped with a light salsa-based rice, black beans, pico de gallo sauce, fresh guacamole and green onions. All for only $6.19. If calories are no object, that rush right over and order a Chimichanga, which are stuffed full of cheese, chicken or beef, all the toppings and lightly fried. The Megajuana Carnitas Chimichangas go for $8.59. The chain was started just up the road in Winter Park, Florida back in 1995 by Brian Wheeler, and Brian is still at the wheel along with his pop Chester who’s CFO, and industry insider Camp Fitch (ya gotta love the name) who’s co-partner and chairman. The restaurant now numbers some seventy plus eateries, spread over several states, with Florida getting the lion’s share. From the murals on the wall, to the funky drawings on the menus, nothing is taken too seriously at Tijauna Flats--except the food, which is consistently great, fast, and plentiful. The company gives back to the community through its Just in Queso Foundation that to date has donated $670,000 to those in need. Check out the action any night of the week. Sidelines Sports Bar:

Turning “6” Into a Very Lucky Number

I

t is hard to believe that it’s been six years since Laurie Whittaker and her partner of 18 years, Jennifer Morales, took over the space once occupied by the defunct Club Circuit on Wilton Drive. Even more difficult to believe is how they reformed the failed dance club into Sidelines— one of the most popular sports bars in all of South Florida, and into a nationally-known LGBT destination spot. “Once Circuit closed, we contacted the owner of the property, because we wanted to make a plan [to occupy the space],” says Morales, who in addition to being Whittaker’s significant other, is the marketing guru behind the club. “We wanted a State of the Art sports bar,” Whittaker added. “Something like no one else would have. We also knew that we were going to be involved in the LGBT community. We were not just going to sit here to serve drinks—we really wanted to serve the community.” That has translated over the course of six years to close to $500,000 that the pair and Sidelines have donated back into the local community. Those dollars have been poured into local charities and service organizations, including the Florida AIDS Walk, the Smart Ride, The Poverello Thrift Store and Food Bank, Tuesday’s Angels, and many other causes. “The community becomes your family and, frankly, you have to take care of your family,” says Whittaker. Morales, who, as previously noted, tackles the job of promoting and marketing the concept bar to the outside world, says that her and Whittaker’s efforts have paid off with respect to branding and name recognition. “We’ve been featured on ‘Deco Drive,’ and we’ve had local news anchor Adam Kuperstein, who had a great

time,” Morales brags. “We’ve been featured on the Bloomberg Business Report, too. We’ve been very blessed with great press,” she adds. Whittaker is equally proud of the House that Time and Patience Built. “Do you realize that when we opened, there were only six LGBT sports bars in the country? Now there are more than 30,” she notes proudly. “We sort of set a standard for part of the industry.” That standard includes providing lots to do for the bars valued patrons, including 16 widescreen televisions, three pool tables, darts, and other amusement activities that keep guests having fun and coming back. Add entertaining bartenders to the mix, and you have a formula for success. Morales and Whittaker note that it isn’t just LGBT patrons who come to Sidelines to enjoy a “gay old time.” “We have one group of Green Bay Packers supporters whose mix is roughly 70 percent straight,” says Morales. “They come in for every Packers game, and they have a blast. Fred Belgie heads this group—and they pack the place”—but what would you expect from Packers fans? The bar also reaches out to other local groups, as well as to those who are “just visiting.” “This year during ‘Fleet Week,’ we had at least 12 men in uniform come in, and they commented ‘What a great place,’” Whittaker reports. “Of course, they all took turns showing how butch they were at the boxing machine, which has become one of our most popular amusements,” she notes. Morales says that hospitality is the key to Sidelines’ warm, friendly, and convivial vibe. “All we really want at the end of the day is for people to come in, relax, talk with each other,” she offers, adding with a smile, “and of course it’s always nice to turn a little profit so that we can continue to support our community.”

s with most things, the next generation of the current “next big thing”—social networking— has made the leap from desktop to smartphone. As with other forms of the medium, Path (available for iPhones and Androids), tracks where you go, who you are going with, and what music is providing the soundtrack. In keeping with this age of “personal reporting,” the app includes a feature that chronicles your sleep and waking habits (can anyone say “ego?”). The retooled Path will even send shout-outs when you deviate from your normal patterns. Let me take a moment to tell you about one of the things I like most about Path—and, conversely, explain something that I find annoying about a lot of other social media. “Dunbar’s Number” is a formulation devised by the British anthropologist Robin Dunbar, and measures what he called the “cognitive limit to the number of individuals with whom any one person can maintain stable relationships.” This number of people—roughly 150—represents the approximate total amount of personal information that your brain can store about your family, friends, and associates. (Needless to say, that 150 far surpasses the 5,000 “friends” that Facebook permits you; just imagine how your brain feels.) Like your brain, the Path app sets limits on the number of individuals with whom you can

share information, by restricting accounts to— you guessed it, 150 contacts, enabling you to share your most personal info with—you guessed it, your actual family and/or closest friends. eadphones have become for the TwentyTens what basketball shoes were for the last 20 years of the 20th Century: prime ground for celebrity endorsements. The Signeo SOUL by Ludacris SL150 has lots of bass—what did you expect?—but not much more to back it up. Vocals and horns sound clean, but the distortion on the low end reminded me of the final horrendous moments of Lenny Kravitz’s “American Woman” cover. There’s excellent sound isolation, and the eggshell white color will make the cans easy to find in the dark, but the downside—including an overpowering bass that’s about as subtle as a South Central drive-by shooting— outweighs all. Slater and Carroll: The “Chicks” from “Chic” (Optique)

T

he “Test of Time” is a phrase that is bandied about so much that it has lost all meaning. That’s why—when you find someone who has been around town for nearly 25 years, at a time when you have seen businesses come and go by the hundreds—it makes you wonder, what is their secret? Maybe friendly competition drives the love that built and continues to operate at Wilton Manors’ Chic Optique. Julie Slater first opened All Eyes Optical in 1984, in the Westgate Square Shopping Center, in Davie. Karen Carroll and her former partner opened Chic Optique in The Shoppes of Wilton Manors nearly 12 years ago. When Slater and Carroll met, Carroll had just relocated from New York, and was looking for part-time work. An ad in a local gay rag led Carroll to apply to a job at a local optician. “We had known each other for some time,” recalls Carroll of their early relationship. “It was sort of love/hate, since in reality we were competitors,” adds Slater. “One of the most important items in the success of any business is staffing. Our optician, Marcus Rowe, is our newest member of the Chic Optique family—a very important part of this team,” Slater says. Carroll and Slater’s business model is built, in part, on competitive pricing, a large selection in stock, and building a sense of “community” with their customers. “We want to have people feel completely comfortable in our office and

treat them like family, and back that with great service and care,” Carroll explains. “The other side to success in business is your community involvement. We get requests every week for donations to various non-profit groups, and we know that sector in our community has been adversely affected in the recent years. We try to donate a gift certificate to as many as we can,” she adds. The women have a long history of support for service organizations. A short list of their beneficiaries includes the Poverello Food Bank and Thrift Store, Broward House, Care Resource, and Tuesdays Angels. In addition, Slater takes part every November in the Smart Ride, helping to raise thousands of dollars to benefit six HIV/AIDS organizations from around the Sunshine State. This year’s ride is scheduled for November 16 and 17, and will cover 165 miles, from South Miami to Key West. Slater plans to ride each one of them. “You have to be involved,” she says simply. While Slater rides, Carroll joins the support crew, making repairs along the way, and basically performing “the dirty work,” as they describe it, laughing. Abdominal fat: Bearly essential

A

bdominal obesity is a horrible self-induced disease that is plaguing America at large, and the gay community specifically. Yes, bears, we are talking to you.

O

besity concentrated at the waist has been linked as a precursor to many other health related diseases. The biggest concern for excess visceral and central fat is its link to type 2 diabetes, both correlated well with each other and with the waist circumference. Cardiovascular disease is not far behind as the one of the top related symptoms. The bear community compounds their by problem by cultivating the look, while achieving this debilitating disease. Abdominal fat is no joke when it comes to your overall health and look. The proud “beer belly” that is sported by this group will in turn be the death of them. CUBS and BEARS are now warned: abdominal fat is bearly essential. Body fat comes in quite a few different forms. Visceral fat--the one that is targeted in this article--is also known as organ fat or intra-abdominal fat. This is located at the peritoneal cavity packed in between the internal organs and the torso. Subcutaneous fat is found underneath the skin and tends to pocket itself in specific areas. Intramuscular fat is dispersed throughout the skeletal muscle, like marbling in a piece of red meat. Of all the fats listed, visceral fat is the most detrimental to your health. The “pot belly” or “beer belly” are cute nicknames for excess visceral fat, where the abdomen protrudes excessively. There is one easy way to tell if you have too much visceral fat--use a tape measure around your waist. No need for a body mass index (BMI) test, your waist size alone will tell you if you have too much visceral fat and are putting yourself at risk to a slow, early grave. Waist size over 38 inches is not a fashion statement, regardless of your height. If your stomach is sticking out past your chest and you can’t see your crotch, it is time to do something about it.

Visceral fat can be easily avoided by eating a proper diet. Variety is the spice of life, and that is true for your diet too. Eat a wide variety of carbohydrates, proteins, dairy products and healthy fats for a complete diet. Portion control is also another easy way to prevent and fight abdominal fat. Eating smaller meals throughout the day or “grazing” is the way a human is supposed to eat. Breakfast, lunch and dinner are the three main times of day for eating by tradition, but eating five or six small meals a day is much easier for the body to burn the energy consumed. Large meals are like throwing large logs in a fire place to burn. It takes a long time to break down and burn up that energy. But if we eat smaller portions, just like kindling, it takes less time to burn, leaving less unused energy to be stored as fat. Less stored fat means less visceral fat, leaving a leaner, healthier you. Exercise always helps to burn calories and helps prevent fat storage production. Light weights and resistance are all that is required when eating smaller portions, meaning less strenuous exercise and more ultimate results. There is no need to do 500 crunches a day either, twisting the torso is the best way to achieve an all around tapered look around the mid-section, shaping the sides, as well as the front. The moral of this article, your belly of today will be your health problem of tomorrow. Eat wisely. Bear are fun to hug, but not to lift in a coffin.
