As someone who follows a plantbased diet, an egg and sausage heavy meal like brunch can sometimes be a challenge. Here are my favorite ways to eat vegan at brunch.

BRUNCH WITHOUT MIMOSAS

IS JUST SAD, LATE BREAKFAST Brunch: part breakfast, part lunch, all delicious. There's no meal quite like it. A sugary cinnamon roll can be disguised as a meal. Mixed drinks can be ingested before noon. A dress code of Sunday's finest or haggard sweatpants are both acceptable. It's almost a lawless terrain.

Food is such a centric part of our community, and the meal of brunch combines eating with a social hour aspect that just a regular lunch or dinner don't touch. Brunch isn't to be enjoyed alone, but surrounded by friends, family, a significant other or even a date.

I know you aren't supposed to pick favorites of your magazine-children, but this brunch-centric issue really butters my biscuit. From sampling hashbrowns inbetween shots to artfully slathering maple syrup atop a stack of pancakes, our team had a great time bringing all your brunch fantasies to life. We made messes, got our hands dirty and had way too much fun playing with our food (sorry, mom!) It was a dream come true.

Whether you serve up your Sunday morning meal with bottomless mimosas or coffee and Advil, Fargo has some options for you. So next weekend we invite you to wake up to smell the hashbrowns and dive in forks first to brunch.

A Meat-Free Kitchen One of my favorite things about Wild Terra is that they have a completely meat-free kitchen, meaning no cross-contamination that might make me ill! Their new brunch menu is completely vegetarian with many options available to be made vegan..

2 Do the Twist Arguably one of the most vegan-friendly spots downtown, Twist's brunch menu doesn't disappoint. It's hard to resist their Butternut & Brussels Sprout Hash or Southwest Scrambler, both completely vegan...and filling!

3 Endless Toast If you know me, you know how I feel about Young Blood Coffee...it's basically my second home at this point. For a lighter brunch, I enjoy their house-roasted coffee and one of their many toast options.

4 Co-Op Hot Bar The hot bar at Prairie Roots Food Co-Op is a favorite lunch spot for me, but on Sundays, they have a special brunch offering from 9 a.m. to 2 p.m. This brunch hot bar usually has equal amounts of vegan and non-vegan options to choose from. Bonus: after you eat, you can go ahead and get your groceries for the week!

5 Babb's Oatmeal I'm not the type to get excited about oatmeal, but Babb's Coffee House has changed my mind. Their hefty portion of oatmeal is served with cranberries or raisins, your choice of nuts, brown sugar and your choice of milk (almond for me!)

cones. What once started as a pastry made for accompanying a cup of tea is now a staple of most coffeehouses and bake shops. It's a British classic that can take on many forms. I make a point to try out a scone whenever I cross paths with one as they can be rather unique in texture, sweetness, shape and flavor. I’ve met scones that were smooth, round and more like bread with their chewiness and density. Some have been rather dry and lacking flavor, making them more biscuit-like and requiring they be dunked in tea or coffee. They’ve also been sweet and soft textured like a cupcake. It really is all about interpretation as we constantly find ourselves experimenting with new flavors and pushing the boundaries of tradition. Whether they are cooked on a griddle or baked in the oven, sweet or savory, they deserve to be a part of any brunch spread. You can cut them into small triangles to create mini scones or make them whatever shape you’d like. The key takeaways when recreating this recipe is to measure correctly, know when to stop stirring/kneading and be gentle with this dough. The goal is to create a light, flaky and tender brunch-worthy pastry that makes you slow down for a minute and appreciate all it has to offer, as well as how awesome brunch is because brunch means you slept in and you don’t have to decide between breakfast and lunch. That is a definite win-win situation.

Makes 12 Standard Scones

Chorizo and Cheese Savory Scones Ingredients

• 4 cups all-purpose flour, spooned into a measuring cup and leveled • 2t. Baking powder • 1 t. Salt • 1/4 t. Black pepper • 1 cup Unsalted butter, cold and cut into ½” cubes

• 8 oz. Cured chorizo, cut into ¼” pieces (optional) • 6 oz. Cheddar cheese, cut into ½” cubes • 6 oz. Sour cream • 2 oz. Half and half, plus more for wash • 1 t. Baking soda • 1 Large egg • Coarse salt

Step One Prepare Ingredients. Though not required as cured chorizo is fully cooked, I sautéed it to enhance the flavor and crisp it up a bit. A few minutes over medium heat does the trick. Let cool to room temperature before adding to dough. This is also a good time to preheat your oven to 350F.

Step Two Given that we are baking here, we need to measure carefully and thoughtfully. In a large bowl combine the all-purpose flour, baking powder, salt and black pepper. Whisk together thoroughly.

Step Three Cut in Butter. Add the cold, cubed butter to the dry ingredient mixture and cut in the butter using what I call the “money-making” hand gesture. Similar to the motion associated with snapping your fingers. Do this just until you get a coarse mixture with relatively even, pea-sized pieces of butter throughout. These pieces of butter are what create the flakiness of the scones so be sure not to overwork the mixture.

Step Four Wet Ingredients. In a separate bowl, combine sour cream, half n half, baking soda and the egg. Combine thoroughly until a consistent color with no streaks of egg yolks. Create a small well in your dry ingredients and pour the wet ingredients into it. Using a wooden spoon or a spatula, stir just until the liquid mixture has absorbed into the dry ingredients.

Step Five Combine. Stir in your chorizo and cheddar. Now, put down the spoon or spatula! Using your hands (because baking can be messy and that is definitely part of the fun) get in there and fold/flip the dough while lightly kneading with the heel of your hand just until it comes together in a ball. Resist all temptation to make it smooth and perfectly round. We want to protect all those little butter pieces by not melting them with the heat from our hands or overworking the dough which will result in tough scones.

Step Six Shape. Place the mixture on a work surface and cut in half. We’re going to go with the traditional triangular shape so form each half into a round disk (no need to be perfect here) about the length of your hand from the bottom edge of your palm to the tip of your middle finger (roughly seven inches.) If you want to make mini scones, divide the dough into quarters, press into smaller circles and decrease baking time by a third.

Step Seven Cut, Brush and Bake. Cut each circle into six equal triangles. Separate on to two baking sheets (six scones per sheet) and brush lightly with half and half. Generously sprinkle with coarse salt and bake in preheated oven for 20-25 minutes, rotating halfway through. They should be firm when lightly touched on top and be golden brown around the edges. Let cool slightly before enjoying. They keep for two to three days in an airtight container.

DRINK OF THE MONTH

When temperatures rise above 30 degrees and spring begins to peek its sunny face around the corner, Fargo breathes a sigh of relief. Chef’s Table mixologist Adam Nehk dreamt up this gin-based cocktail Warm Weather Waiting while in the dead of winter, preparing for this much anticipated spring. This beverage is a nice, light summer cocktail with floral notes, perfectly enjoyed in the spring or even in the cold while daydreaming of the sun to come.

Warm Weather Waiting

2 oz Beefeater Gin 4 fresh raspberries ¾ oz chamomile-infused honey ¾ oz strawberry shrub A few dashes of peach bitters Dash of lemon juice Egg whites • Add ingredients into shaker • Reverse dry shake ingredients together • Double strain mixture into a glass • Let sit for a few moments to allow the froth to gather and settle at the top • Garnish with dried chamomile

Nehk prefers using housemade ingredients in most of his drinks. Nehk uses chamomile from Tochi for his chamomile-infused honey syrup. Using products from local vendors adds a special touch to cocktails.

Reverse dry shake with egg white: Shake ingredients with ice first. Strain out the ice and shake a second time, but with egg white. When shaking with egg white, make sure to shake very hard for 30-45 seconds to emulsify the egg whites. Shaking in this method adds a nice froth on top.

Double strain: Instead of using a traditional Hawthorne cocktail strainer or a slotted spoon, strain this drink through a fine mesh strainer. This keeps chunks like ice out, making a much smoother drink.

Strawberry shrub: A shrub is made in a similar manner as a house-made simple syrup. To make this shrub, combine equal parts of fruit, sugar and vinegar (1.5 cups each, in this case) into a mason jar. Then place this jar into boiling water. This method means there’s no water in the actual mixture, unlike a simple syrup, which is equal parts water and sugar. The end result allows the vinegar to cut the sweetness of the fruit flavor extracts, resulting in a sweet and sour taste.

Nehk has over 11 years of bartending experience in the Fargo-Moorhead area. He now serves as the bar catering manager and mixologist at Chef’s Table Catering. In this position, he dives into his talent of cocktail creation with specialty drinks for private events, corporate events and weddings. He’s continuously satisfied tastebuds in town, winning various awards and placing in the semi-finals of High Plains Reader’s Cocktail Showdown and Bartender Battle.

Getting Real With Dining Out

f there’s one thing Fargo-Moorhead doesn’t have a shortage of, it is great restaurant options. With all the recent growth in the last 15 to 20 years, the area now has an up-and-coming brewery scene, as well as a diverse collection of unique ethnic choices. From sushi, steak and burger joints to Middle Eastern and heritage-rich Scandinavian and German classics, FargoMoorhead offers a variety of tastes for any palate.

This unfortunately doesn’t make it any easier selecting a good, healthy option when out to eat. Whether it be in the Fargo area or across the country, I frequently get questions from clients related to making healthier options while dining out. In summary, there are really two ways you can attack it. The first being that you have Spartan-like discipline in choosing only super healthy and lowcalorie options off the menu. I’ll be honest;

that isn’t a whole lot of fun if you’re like my wife and me and we’ve finally arranged a babysitter and carved the time out of our schedules to enjoy a night out. If we can finally get out of the house and enjoy a fantastic meal, we’re going to get what we want. Now, the second method, the one highly preferred by my clients and that I most encourage, involves a little bit more

planning but allows you to enjoy what you want within reason. Here’s how you attack it: Prep for the Night Out Eat less leading up to it and/or after it. Plain and simple. If you know you’re going out to eat, keep your calories lower throughout the rest of the day. I like to recommend trying to eat half of what you’d normally eat so that you save up some calories for that meal out. Emphasize proteins and vegetables at your other meals to help keep you full until you hit the town. Fill Up the Tank Beforehand As I previously mentioned, be sure to eat just enough throughout the day so that you aren’t compelled to chew your arm off when you finally sit down at a restaurant. You can also help prevent this by frequently drinking water throughout the day and shortly before heading out to eat. Putting down a large glass or two shortly before, as well as drinking water throughout the meal, will help keep your appetite in check, preventing you from crushing too many calories.

Doolittle’s Their half sandwich and salad option is just the right amount for a weekday lunch. My Top 3 Guilty Pleasures Lucky’s 13 Pub If you’re a bourbon and onion lover like me, you’ll love their Drunk & Dirty burger. Kobe’s Get squirting sake, flying vegetables and entertained all at once at their teppanyaki grill. Blackbird Woodfire Their sausage and green apple pizza is one of the best pies in the area.

Control Portion Size We all know restaurant food isn’t the healthiest. Nor are portion sizes typically the least bit appropriate. It’s not uncommon for a full plate of restaurant food to easily push over the 1,500 calorie mark – that’s the caloric requirement for an entire day for many people! Ask your server for meal options with smaller portion sizes or at the very least, consider splitting a meal with your significant other or others in your group. Eating more slowly and concentrating on how the food actually tastes will also help reduce your overall intake. Prioritize Macros A restaurant’s main goal is to have you walk out the door entirely satisfied and full. One way they accomplish this is by stuffing you full of cheap carbs before your meal actually arrives – think breadsticks, buns and bread. Now, don’t get me wrong, I could eat breadsticks or buns slathered in honey butter until I almost exploded, but it’s just not healthy for anyone, right?! Prioritize more of what you want to or should eat by focusing on healthier sides and dishes at the beginning of your meal. Salad greens, proteins and vegetables should take priority. Now, that doesn’t mean carbs or fats are the enemy by any means, but putting down a large combination of them will not only fill you up and prevent you from eating what you really need, but they’re a wicked combination of unhealthy when placed together – think pizza or creamy sauces over pasta. Going out with friends or family and taking in a good meal, in my opinion, is time very well spent. Don’t feel like you have to give up everything you love, however, and completely behave with the menu choices you make. In the end, it really comes down to an overall balance throughout the week by consistently selecting healthy options with some splurges and favorites sparingly tossed in here and there to quell cravings and keep you satisfied. Be mindful of your choices and rather than living to eat, adopt a healthier mindset of eating to live.

You’ve moved a ton and our readers may wonder, why? Growing up, we moved as a family multiple time for my dad’s career. Since I moved to the US in 2008, I have relocated for school – undergraduate degree in Canada, Master’s in France and China- and for work opportunities. I’ve always been a seeker for adventure and new experiences, hence the moves to Morocco and multiple states in the US, including North Dakota! What is your favorite city you’ve ever lived in and why? Montreal for its cultural diversity, it’s welcoming vibe and the constantly evolving entertainment scene. A close second is Barcelona, again for the local diversity, but also for its unique ambiance, its history and for being so close to many European fun places.

What is the hardest versus the easiest thing to do when moving? The hardest thing is to leave friends and family behind and start from scratch every time. The easiest thing is also starting from scratch. As my friends rightfully say, it is an opportunity for a blank slate, a new adventure. You get to write a new story each time. Do you have tricks to make the physical move easier? Don’t wait until the last minute to pack, really! Start with a closet cleanup and get rid of what you haven’t used in six plus months. One, you’ll have less to move and two, items in good condition can contribute to local charities. Another trick is to pack by room (the ones you use least to most) and label your boxes. It can get messy and frustrating when you need access to

work that have community activities. I also do not miss any Folkways events to meet great people. • Embrace it. You made this move happen and it may not last forever, so you might as well make the most of it.

That’s when friends and family are awesome if you haven’t found a new home yet! Alice’s top 5 things to do when moving: • Stay connected with friends from your previous home(s). Moving does not mean forgetting; real friends will stick around regardless of where you live. Use social media to show them around so they come visit! • Find a place to live in a vibrant neighborhood and take time to make your home cozy. Nothing worse than coming home to boxes. My tip – make your bed first! • Lookup local activities and go. It’s ok to go alone! Check out Facebook for community events. • Find a local group to get involved in frequently. What do you care about? Sports? Food? Outdoors activities? Volunteering? All of the above? Think about your passion and use that as a channel to network. I personally joined WIT (Women in Technology) and organizations at

Top things to avoid when moving? • Think about your set high expectations. Think about it: if you don’t have expectations, you can only be pleasantly surprised. • As much as you love to Netflix and chill, finishing a show in three days isn’t going to cut it. Get off your couch! • Overpacking. What do you really need? Do your research, your surfboard may not be useful in ND, but your golf bag will definitely come in handy. What do you tell your family and friends when they ask you why are you still in Fargo? I originally moved thinking “12 months, one winter, and that’s it.” Eighteen months later, I am still here and just survived a second winter. I tell them that I am grateful to live in a city where I can have such a great work-life balance, enabling me to focus on my career while being able to enjoy personal time and have an impact in the community. Favorite Fargo event or activity? By far the Red River Market/ Christkindlemarket where I spend most of my Saturdays when I am in town in the summer and fall. It is a fun way to get to know local vendors and meet people. 5 words to describe your Fargoesque Experience? Community. Kindness. Opportunities. Welcoming. Cold.

Tell us a bit about yourself I’m originally from the magical city of Minot, moved to Upstate NY after high school. That’s where I fell in love with printmaking, paper and graphic design. After college went into graphic design but missed the handmade element. When we moved back to North Dakota, I got to focus more on making for myself. I love learning new processes and forms of making art. Outside of art, I love nachos, hip -op (but real hip-hop like Tribe, Nas, B.I.G.) reading self-help books and hanging with my tiny humans having dance parties.

Describe your handmade business I started by making gifts for friends, then they would order gifts for their friends and it kept growing from there. I’ve done a lot of hand lettering, papercutting, painting and quilling. It’s only been about a year that I’ve been quilling hardcore but it’s fun to see how much I’ve changed in just a year. I like to call myself a Rebel Quiller because I don’t use it in the traditional form. Normally quilling is under glass or on paper (greeting card). I like it on wood, mixing the fragile with the strong surface and I love to fill the surface with lots of details and texture. To me, it’s more like a medium like painting with paper. What is one of your most favorite items you have made? I think my first United States that I made. It won the National Mod Podge Day award! You have a graphic design background – how has this influenced your quilled art? Graphic design is a constant form of inspiration for me. It’s also a good reminder for me that sometimes less is more. I tend to over complicate or want to add more and more – graphic design definitely helps me with refinement and editing.

What are your most essential tools? I love, love, love Sharpie fine tip pens in black only, 5 x 7 Strathmore sketchbook, my slotted tool for quilling, headphones and caffeine. What advice would you have given yourself five years ago? Don’t let the internet comparisons crush your dreams. There will always be someone better but there will never be another you! What would you say to someone who is interested in taking their handmade business more full time? There will be more failure than success but if you love it, just keep pushing. It’s not easy or comfortable to follow your dream. Surround yourself with a supportive community and ask for help!! What can our community do to support you as a maker and artist? Social media shout outs, go to each others’ shows, share experiences and processes. Fargo has been amazing, so keep on doing what you’re doing Fargo!

ove Your Buns may be a new nonprofit in town but it is here for a very important reason. Last fall, Executive Director Sara DCamp, learned that her rectal cancer became Stage IV, meaning it had metastasized. That sent her on a mission to increase awareness of the signs and prevalence of rectal cancer, empower informed decision making and improve quality of life in survivorship. "In short, we’re the people who want you to love your buns," said Natalie Wolff, Secretary for Love Your Buns. "That means taking care of yourself and being healthy, but also we want you to know that you are not too young to have colorectal cancer. Don’t explain away the symptoms you are experiencing simply because the odds might suggest that it’s unlikely for you." Being a new nonprofit, they are still getting their feet under them but they hope to engage the community by having walk and talk support groups that are focused on cancer patients and survivors. They really want to stress that anybody is able to have rectal cancer. "We want to stress the importance of recognizing the symptoms of rectal cancer and not ignoring them," said Wolff. "Whether you can’t afford the copay, don’t like going to the doctor or

The longer you wait, the more you’re going to wish you paid that $30 copay because the bills associated with cancer treatment pile up very quickly." Along with education, Love Your Buns hopes to empower patients to know what questions to ask when they go to the doctor. Long term, they hope to establish programming around oncological physical therapy for current and post-treatment patients. Despite being a new nonprofit, they have received a lot of positive feedback, including feedback on their fun logo, which was designed by DCamp.

Watch their website for upcoming walk and talk events, which are focused on cancer patients and survivors, but all supporters are welcome.

"People are generally shocked to learn a 33-year-old mother of three was diagnosed with Stage III rectal cancer," said Woff. "Colorectal cancers are typically associated with older people but that’s not always the case. We’ve had people from other states who we don’t even know purchase Love Your Buns merchandise and we see pictures on social media. We’ve also been finding connections in this region and across the country of people who have either faced young onset colorectal cancer in the past or are currently facing it. Many of these connections also include friends or family members of those who sadly lost their lives to this disease. The stories are all very similar, and it’s clear that we need to find a voice and be heard. Love Your Buns is ready to take on the challenge of being that voice, and we’re working hard to get the word out!"
