WE GOT A SITUATION Not a lot of people know this about me, but I LOVE reality television. It's like the most mindless form of entertainment and I am here for every second of it. The Bachelor? Watch it like a hawk. Keeping Up The Kardashians? You know I'm keeping up. Rock Of Love? Potentially the biggest trainwreck I've ever seen. Flavor Of Love? Yeah, I'm not proud of this. Anyway, all of those shows pale in comparison to the Mecca of reality television. No, it's not the Real World nor is it any variation on Real Housewives. The ultimate reality television series is without questions Jersey Shore. Few things stack up with the antics and arguments from the colorful cast. The original series paved the way for the future of the genre. Not only that, but its subsequent spinoffs, especially Jersey Shore: Family Vacation, have been massive commercial successes. So many people write off reality television because of its characters and presentation. There is some validity within that, though. I mean, imagine if this was your television show proposal: Six young adults from Italian-American neighborhoods party the summer away at the legendary Jersey Shore. It sounds kind of terrible, right? And many still hold this opinion of Jersey Shore. Its original cast is at times crass, ruthless

and relentless. However, beyond all of the drama lies a real family relationship between friends. The character I have always gravitated towards was Mike "The Situation" Sorrentino. In the original Jersey Shore, Situation was known for his manipulative ways and callous disregard for others. He was the villain of the show and admitted it wholeheartedly throughout the show's six seasons. I have always found villains interesting so I found Mike's role captivating. On the surface, he was just a big asshole. Behind closed doors, he was a man battling with himself. That dichotomy hooked me into the original series. Fast forward eight or so years now. The character of Mike "The Situation" Sorrentino is seen in the exact opposite light. We learn in Jersey Shore: Family Vacation that Mike had severe substance abuse issues during the show's initial run. This is what drove him to be so villainous initially. Sorrentino went through rehab multiple times and even had a prison sentence for tax evasion which was profiled on the show. Through the face of that incredible adversity, The Situation turned into one of the more wholesome individuals on television. His care for his fellow "family members" shines through, which is the complete opposite of the Mike we saw eight years earlier. That's why I connect with reality television. Yes, it's usually a trainwreck, but beneath all of that are story arcs that carry on for decades. Mike's journey is relatable to so

many and that is why he has become so beloved. As a longtime viewer of the series, seeing Mike thrive actually makes me emotional. Power of television, baby! One of the things that continues to stick with me from that show is an often-used quote by The Situation. He says "turn your Ls into lessons." I have been reflecting a lot recently because this is my final issue as editor of Fargo Monthly. There has been no shortage of "Ls" taken in my three and a half years at Spotlight. Like The Situation though, I'd like to think I did my best to turn those losses into lessons. These are lessons I take with me as I head onto my next adventure. Thank you all for reading.

The New Dining Experience In Town

Britt echoed her sentiment, saying, “I love the variety and constantly learning new things. From accounting, to short order cooking, to website building, to growing a team – I have loved it all… Seeing the friendships and relationships (and sometimes families!) created is so amazing & rewarding!” A new and exciting restaurant is coming to town, and it’s like no other in the FM area. 701 Eateries is the innovation of the sister-in-law team of Shelby Terstriep and Britt Belquist, their husbands, Chad Terstriep and Alex Belquist, and their hometown friends Eric and Sarah Myhre. While the Myhres are new to the team, the Terstrieps and Belquists are no strangers to the restaurant business. Britt and Alex opened their first restaurant, Brew (now Brew Ales and Eats), in Perham, MN in 2011 after culinary school. Shelby and Chad joined them in ownership shortly after when Britt and Alex began expanding their business. Today the team also owns City Brew Hall in Wahpeton, ND, Brew Bird in Fargo, ND, and partnered with other business owners on Up North Pizza Pub in East Grand Forks, MN. Owning a restaurant is a dream come true for this team. When asked what she likes best about being an owner, Shelby said, “I love seeing old buildings transformed into bustling ‘neighborhood parties.’ I love the creativity and constantly trying to figure out how to do something better. I love seeing our staff get raises, benefits and new opportunities.”

In contrast to its modern look, the building, located at 701 N. University Drive, has been part of the Fargo landscape for 100 years. Built in 1920, the building originally was home to Acme Dairy and most recently Rosie’s Laundromat. The fresh and fun restaurant concept splits the building’s three floors into three different types of dining experiences. The lower level, the Dain Room, offers a private event space with room for 30-40 people. It boasts a state-of-the-art sound system, framed tv for customer use, and wine cellar and whiskey tasting area. The Prairie Kitchen, located on the main floor, is perfect for a casual and fun meal. A wood fired grill, Scandinavian décor, and a menu that boasts classic midwestern plates, all come together to make one feel at home while dining out.

Lian is the Outreach & Strategic Initiatives Intern for the ND Small Business Development Centers. The ND SBDC helps North Dakota small business owners to start, manage and grow their companies through providing free, professional business advising services, technical assistance and training in a range of areas such as business planning, market research and financial analysis. For entertainment and fresh air, visit the upper level to dine and play at Camp Lonetree. The indoor “cabin” leads to a four-season rooftop patio that includes shuffleboard and campfires in the summer and curling and private dining igloos in the winter. The restaurant itself isn’t the only aspect of this business venture that’s out of the ordinary. 33

701 Eateries is partially funded through a revenue sharing note. Investors, or members, can invest in the restaurant at five different contribution levels. Through this revenue sharing note, the more business 701 gets, the more quickly the investor will be paid back, increasing the interest return on their repayment amount. This model ensures that the more successful the business is the more successful the investor will be. At the 701, investors are more than just investors, they’re a part of the family. Those who are interested in becoming members to receive business perks and a return on investment can now find 701 on “Mainvest” by searching 701 Eateries. 701 Eateries has been a long time coming. The ownership team first began the process back in 2018. After seeing potential in a historic building in downtown Fargo, they sought out funding to purchase and renovate the building to turn it into a full-service restaurant and bar. In their quest for funding, they were referred to the North Dakota Small Business Development Centers (ND SBDC) and Paul Smith, Fargo Center Director for ND SBDC. He also assisted with their business planning and financial projections required for their loan application. “The business plan (and projections) helped to create a road map for us as we start hiring and training staff and moving to opening,” Shelby said. “It was instrumental to us receiving a SBA loan… we would not be able to do a project of this size without it!” They obtained a SBA 504 loan through their lending partner First Western Bank & Trust, and SBA’s partner, the Lake Agassiz Development Group. Thanks to the partnership with the ND SBDC, the business owners were able to purchase and renovate the century-old building and turn it into something special. “I am grateful to have been involved in this project, which is a big part of the revitalization of this area on the northwest edge of downtown Fargo,” Smith said. “It has been exciting to see the unique vision of the owners take shape and the opening now just weeks away.” The 701 team attributes their success to their team and the people who have been with them since the start of each restaurant opening. The owners were excited and ready to open their doors to customers on May 14. Shelby said, “We hope the community will embrace 701 with all of its nostalgia, great food, drinks, and quirkiness!”

GiGi's Playhouse seeks community support in response to a crushing fire that destroyed North Dakota's only Down Syndrome Achievement Center.

n Tuesday, May 11, a fire tore through a South Fargo strip mall. Among the affected organizations was GiGi’s Playhouse, North Dakota’s only Down Syndrome Achievement Center. No individuals were harmed, but the building is a total loss. All services have been put on hold. The Playhouse expanded its building in September 2019 to suit the growing need of its services. Shortly after, programs were moved to a virtual format in light of the Covid-19 pandemic. Before the fire, plans were in place to return to in-person learning by this summer. Now they are left with the

task of rebuilding what has become a second home to many. GiGi’s Playhouse promotes an inclusive environment for people with Down syndrome of all ages and their families. Their programs help in the development of motor movements, literacy, math, and basic life skills. Free assistance can begin at the earliest possible diagnosis around the 20th week of pregnancy and can continue through adulthood. The primary need of GiGi’s Playhouse is financial support to move forward. The estimated cost to rebuild and return to normal operations is $3.5 million. Tell us a bit about yourself: I grew up in San Jose, California, and worked in kitchens all through high school and college. I have a degree in soil science, and really appreciate the link from agriculture to cooking. I met my partner in California, and she was offered a job in her hometown of Bismarck, and I tagged along for the ride. I really like it here in the Northern Plains - especially seasons (which don’t really exist in the parts of CA I’ve lived). I had the opportunity to open and run a fine-dining kitchen here in Bismarck which was an amazing experience. After getting out of the food industry, I transitioned to the “farm” side of “farm to table”, and I teach sustainable agriculture at United Tribes Technical College here in Bismarck. I like working in agricultural education, but I still wanted to create recipes and make things with local, seasonal produce. A few years back we used the produce from our garden to make hot sauce as a Christmas gift for family and friends. The feedback was great, and we’ve since expanded to other goods to spice up everything, every day.

Describe what you create under Morningside Heights Provisions? We make small-batch hot sauce, craft mustards and cocktail infusion kits. The hot sauces range from mild to quite hot, but the flavor is always our first focus. With both the hot sauces and the mustards, we strive to create “better than basic” provisions. In essence, we want our products to be more interesting than the average goods. Our cocktail kits come from our shared experience working in - and enjoying fancy cocktail bars. Great drinks often require a ton of ingredients, and that can be daunting for a home bartender. Our cocktail kits are designed with all the niche ingredients already inside and shelfstable - dehydrated fruit, bitters infused sugar, spices and even at one point the marshmallows from breakfast cereal. Just add your favorite spirit and enjoy! Tell us where your name came from? Since this all came from our home, we’re named after the name of our development here in Bismarck. No relation to the Upper West Side neighborhood in NYC. Just pure local pride.

Your personal favorite thing you've created so far? Has to be a toss-up between the Habanero Jerk hot sauce - spicy, smoky, deeply flavored and perfect on pizza, and The Volunteer mustard. It’s yellow mustard with a ton of fresh dill. It’s perfect for summer great in potato salad, on brats or anything off the grill. With the theme of tacos, tell us what products of yours would pair best with a real good taco? It’d be crazy to not shout out the LA Taco Truck hot sauce for this. It’s designed as an homage to the LA taco scene. When you get a street taco in LA there’s usually a salsa bar on the side, and one thing that’s near-universal is a mixed pickle called Escabeche. It’s never the same, but always has some pickled peppers, onion, carrots and other tasty goodies. For our LA Taco Truck-inspired hot sauce, we make a quick pickle of onions, habaneros, serranos, carrots and garlic, then blend that up with a ton of fresh cucumber for a bright, fresh, and pretty spicy sauce. What's one piece of advice you'd give to a novice home chef interested in going next level? Get good at the basics - you don’t need to use 25 ingredients to make a good dish. Knowing how to roast a chicken, cook a steak to temperature, make a stock, cook an egg the way you like it or any other

simple thing. When you’re comfortable, experiment! But maybe don’t try out a new recipe for the first time when you’re having a dinner party - stick to what you know you can knock out of the park. What is your favorite thing about having your own business? I love having customers get excited about something new I’m developing. Whenever we launch a new product there are always people who are excited to check out what we’ve made. It’s great to be able to start with an idea, develop it and get other people as excited about it as I am. What is the most challenging thing? I work a 40 hour a week job in addition to making all of these things. Scheduling is very important but can be tough to make sure I’m all ready to go, especially during the busy season. What advice would you have given yourself 10 years ago?

Market hopefully at least monthly - and at the Drekker Craft Market June 13. Keep an eye on the Facebook page for all events. How can our community support you - especially in this pandemic recovery time? I’m fortunate that I’ve been able to keep my full-time job throughout this pandemic, so I’ll be fine. And I’d love to sell you some tasty goodies at markets this summer. But as someone that ran a kitchen, I know how razor-thin the margins are for the owners, and how hard it’s been for the workers both front and back of the house. The large restaurant chains have deep pockets and can wait this out, but I worry about the local places. Support your favorite local joints to make sure they’re able to stay open as we continue recovery! How can we keep in touch? Tanzania To Fargo Habari Gani I hope this article finds you excited about the looming Summer solstice! This month I wanted to chat with a dear friend of mine who paved the way for me before I came to the FM area: Sir Ikania Kaale. In life, it is important to always recognize those that came before you who make a new home a better place for you. Ikania is one of the people who welcomed me to Fargo as a brethren from East Africa and encouraged me to thrive in the FM area. For those who do not know Ikania, he may appear as an introvert, but he is a social butterfly once you get to know him. He also loves spending time with his loved ones. Ikania grew up in Dar es Salaam (Tanzania) but he spent a significant part of his life away from home in boarding school and the USA. Ikania enjoys time with family and friends plus the outdoors keeping active through running and biking. What's more, Ikania loves reading books, listening to audiobooks, traveling and meeting new people. Next time if you see Ikania, ask him why he loves Fargo! Where do you call home? They say that home is where the heart is. Over the years there have been many places I called home. From the southern highlands of Tanzania where I went to boarding school to the beautiful coastal city in Tanzania where I grew up and where my parents, my siblings and my extended family reside with their families. The slopes of Kilimanjaro are where my family originates from. Growing up I spent most of my Christmas holidays at my grandparent’s homestead on the slopes of the Kilimanjaro. One of my earliest memories that has been etched in my brain is from the homestead. I remember brushing my teeth in the backyard while looking at the tallest free-standing mountain in the world, Mount Kilimanjaro. To date that has got to be some of the most beautiful scenery, I have ever had the privilege of experiencing, and to call that place home is the icing on the cake. My journey in the USA started out in Hamden and New Haven, Connecticut, and eventually led me to Fargo, North Dakota, where I have lived for 19 years now. Despite the brutal winters my time in Fargo has been a great pleasure and privilege of a lifetime. I have met countless individuals who have made a lasting mark in my life. That said, where I call home is where my heart has felt the most affection which is all the aforementioned places. The story of your passion for traveling and how did you land in Fargo? I have always had an adventurous spirit and a passion to venture into the unknown, so much so that as a young boy my dream was to become an airline pilot. My very first solo travel adventure came when I was at the ripe age of 14 heading to my boarding school about 10 hours from home by bus. I can still see my nervous self on that day when I close my eyes. The anxiety of moving to a new place very far from home and meeting new people was both nerve-wracking and exciting at the same time. That same spirit of adventure ended up landing me all way from Tanzania to Fargo, North Dakota.

What are your favorite activities in Fargo during each season? Although on paper Fargo is said to have four seasons, after the many years of living in Fargo I can speak for a lot of people. I know that Fargo has two seasons namely: “Nice” and “Nasty”. When the weather is “Nice” I like to spend as much time as I can outside. If I am not running or biking, then I am hanging out with some friends and family in the outdoors. There are bonfires, balcony impromptu gettogethers, road trips around the Midwest and camping trips just to name a few. When the weather is “Nasty” I spend a lot of time nursing my sore muscles from countless shoveling and snow pushing. I also try to make it to the ski resorts in the area despite my novice status in skiing. In recent years, prior to the pandemic, my family and I started a tradition of frequenting family-friendly concerts in the area, mostly Christian music concerts. We enjoy them very much and we are looking forward to the post-pandemic time when we can go back to attending concerts again. Why should people care about life outside the Midwest? As a young boy, it was very intriguing to see how frequently my dad watched and listened to the international news. In fact, sometimes it was kind of annoying cause he would interrupt my scheduled Tuesday evening broadcasting of MTV Rap Music Videos. Nowadays my kids get to enjoy listening to the news with me whenever they jump into my car to go places. With the technological advancements today, information is literally at our fingertips. We should all be very grateful because there was a time people had to go the extra mile to get updated on world issues and current affairs. All people from all walks of life are more the same than they are different. By learning other people's experiences, we all learn to appreciate what we already have and strive to improve what needs to be improved in our communities and the communities outside ours.

What are clichés and misconceptions of the African continent or Tanzania do you hear often? How do you debunk them? The biggest misconception of the African continent that I have heard quite a bit is that of war, hunger, diseases and deaths. Unfortunately, most of the news from Africa that makes the news cycles in the international news media is that of war, hunger, diseases and deaths. Do not get me wrong, there are some war-torn countries and areas in Africa that are battle-scarred with ruin, hunger, diseases and deaths. But not all places are like that. Growing up in Tanzania, I was fortunate not to experience any wars. In fact, I grew up in a busy and bustling city of about 6 million people. For the most part life over there is no different from life in any big city. What do you like about having a family in the FM area? What is your favorite family activity in the FM area? The FM area is very family-friendly. No matter where you go you are more likely to meet a familiar friendly smile. The community offers a lot of activities for kids most of which are through Fargo Parks and Recreation. It is amazing for us parents to see the kids make connections and grow together through all the activities they go to. One of our favorite family activities is to go watch my son play in a rock band at concerts held by Elevate Rock School twice a year. We also enjoy watching the kids competing in soccer games through TriCity United, Baseball through Fargo Parks, go jump around at the Sky Zone and sledding on many mini hills around town that also double as dikes keeping the Red River in check during the flood season. What is your vision 2030? Where will you be and why? The ultimate dream is to eventually make my way back to Dar es Salaam where it all began. The timeline is a little fuzzy at the moment, but the dream is still alive.

Mental Fitness: The Segway To Physical Wellness Overcoming your own thoughts will help drive you to success in your health and wellness journey. I did not start exercising on a regular basis until I was 25 years old. Sure, I played my sports as a kid, took weights class in high school, but does that really count? Chances are, I was messing around in weights class to avoid the squat rack. Nevertheless, it took me nearly 26 years to understand the importance of physical health. But there is another element that so often dictates our physical health. It's our mental game that lends its hand to helping our body achieve physical results. However, if you're mind is not straight and set on the goals in front of you, the chances of you reaching those results become drastically lower. Your mind and body are interconnected in so many different ways, but this is just one. I remember the first real "exercise" I did was on an app called Beachbody. I am sure most people know of it, but for those who don't, it is essentially a platform featuring hundreds of at-home workouts by trainers. Some people give it a hard time, but I think it is a great tool for those who are just starting to exercise. I know I needed direction initially and Beachbody provides that.

Anyway, the first program I did on Beachbody was called T20 with Shaun T. The trainer is fairly reputable for his Insanity courses (which will get you in shape, by the way), but I had little knowledge of him originally. All of the sudden, I had a guy on my television screaming at me to go harder. As an overweight person at the time, I can tell you that my frustration was ENDLESS. I would often ask: "What's the point. I'll never look like any of these people in the video anyway." Or I would say: "I can't keep up. I'm too out of shape." On occasion, I would even mute my television while working out. I would exercise in complete silence just because I was so reliant on excuses. I was creating excuses for myself. While I was working out, I knew these excuses would keep stacking up to the point where I would just stop exercising and eating right altogether. In the past, I would have done just that. I would have quit, just like I had done a few times before. For the first time in my life, this was different. Excuses were no longer going to command my thought process. I began leaving the television volume on and as much as I hated Shaun T at times, I didn't let it become an excuse. That's what transforming your mindset looks like. It's a key to any degree of wellness. So, how do you get your mind right? Take these pieces of advice as you look to focus your mind on physical wellness.

No Comparisons I would always look at the cast members in these Beachbody videos and say "why can't they put normal people on here?" I mean this diplomatically, but every person in those videos is hot. They're shredded and they're in incredible physical condition for the most part. That opens the door to the dreaded comparison complex. I fell victim to it, too. Seeing people on your television that may look or perform better than you initially can be demoralizing. I would offer this change in your mindset. Rather than compare, compete. Is there someone you strive to look like or perform like in the gym? Follow their lead and as time goes on, try to compete with them. High tides raise all boats and there is a level of synergy that can be achieved when competing with others. Think about it this way, Arnold Schwarzenegger, the best bodybuilder ever created a lifting program that is still in use today. The "Blueprint" is used by fitness enthusiasts around the world. Why? One, because who wouldn't want to look like prime Arnie AND they are looking to build on what Arnold accomplished. They're not literally competing with Arnold, but they are trying to elevate what he accomplished in many ways. Will you be able to do exactly what your "counterpart" does overnight? Of course not, have accurate expectations. Yet, keeping the mindset of competition over comparison can help get you over a mental hump.

No Ego This one is simple and it is actually more reliant on outside sources than you may believe. Friends, family and other casual gym-goers can create an ego for you. They'll either shoot you a positive or negative glance or say something about what you're up to. Maybe you're not lifting enough or maybe you're not running fast enough. What we don't realize is how much pressure that puts on us as individuals. It also brings about another comparison complex in some ways. First of all, never let anyone (unless a trained professional) tell you how much to lift or how fast to run. The first few times I did pushups regularly, I could not even do five in a row. Imagine the looks I would get. However, I had to use those five reps as a starting point, right? We all need to start somewhere and if that means doing five push-ups or walking on the treadmill, so be it. There is nothing wrong with lifting light or starting slow because you need something to build from. You may not be able to bench 100 right away, but at least you are doing it! Rather than say "I can't", say "I am."

No Excuses I was having this conversation with my lovely girlfriend the other day. She had taken the day off from working out and was frustrated because, in her mind, she had "created excuses for myself to not work out." Now, my first reaction was to say something about making up for it tomorrow. As I thought more about what she said, I told her

that excuses are okay. At times, excuses are an inevitability. We are only human and we're bound to go through instances where we create excuses for ourselves. Ideally, we don't want to make excuses, but what impresses me the most is how my girlfriend has the mental fitness to admit when she creates excuses. Oftentimes, we never want to take responsibility for our shortcomings. In a scenario like this, the sole responsibility was on her. She recognized that and took responsibility for making excuses. It's less about having "no excuses!" and more about recognizing when you are making excuses. That is where you grow the most.

No Quit I'll be the first to admit that I have quit before. It takes a mentally strong person to avoid quitting especially when it involves any level of physical activity. Here is my plea to you: don't quit. That is simple enough advice, right? But how many of you reading this will actually take it into account the next time you're doing something difficult? Will you just give in or will you move forward? If you choose to move forward, take pride in that, you are getting better whether you know it or not. What did I say above? Regardless of your fitness level, if you choose NOT to quit, you are, by default, a mentally strong individual. That alone is enough to hang your hat on. Stay mentally sharp and physical results will follow.

n the heat of summer, the goal at my house is to keep the oven off as much as possible. One summer I tried to cook and bake everything on and in my grill. I was mostly successful but a few things pushed the boundaries of what is edible. Ultimately, a new cooking method requires some trial, error and practice. By the end of summer, I felt as if my grill and myself had a better understanding of each other. We had found our groove. Pizzas, kebabs and grilling all the veggies are on top of our summer grilling list. When cooking for a crowd, nothing beats kebabs and grilled peppers with onions. Simple perfection and easily prepped ahead of time. Of course, the classics make an appearance as well hotdogs, brats and burgers. But what about dessert? Last summer, amid all the changes, Square One hosted a virtual cooking class all about grilled desserts. It was an opportunity to do something a little different and at a location where we normally would not host a class. I cleaned up the outdoor grill space at my house and Chef Randall Toenges and myself set up a little outdoor studio. Participants fired up their grills and logged on to take their dessert-making outside. These recipes utilize mostly pantry staples, fresh fruit and some prepared items (but you can always make your own from scratch if you prefer) such as pound cake and cheesecake. Now check out these recipes from Chef Randall, fire up your grill and end your summer nights with a crisp beverage and some grilled desserts while breathing in this most beautiful time of year.

Grilled Peaches with Spicy Agave-Lime Drizzle: Ingredients: • • • • • • • •

1/4c. plain greek yogurt 2T. water ⅛ jalapeno (optional) 1 lime Pinch of sea salt ¼.c agave nectar 2 peaches 2T. candied almond slices

Directions:

Combine water, jalapeno (seeds and all) and zest of ½ of a lime in a small saucepan. Bring to a boil and remove from heat. Let mixture steep for 5 minutes. Strain and stir in agave nectar. Let cool. Light your grill to medium heat and halve your peaches, removing the pit. Brush the flesh of each peach half with olive oil.

Desserts Grilled Pound Cake with Strawberries, Balsamic Caramel and Rosemary Chantilly

Grilled Pineapple and Brown Sugar Relish

Ingredients:

• 4 skewers (if wood, soak beforehand in water) • 4 - 2” thick slices of pound cake, cut into 1-½” cubes • 8 ounces fresh strawberries, hulled • Balsamic Caramel • 1/4c. balsamic vinegar • 1t. brown sugar • 1/4c. prepared caramel sauce • 1 pinch sea salt • Rosemary Chantilly • 1/2.c. heavy whipping cream • 2t. powdered sugar • 1/4t. fresh rosemary, chopped finely

Directions:

Combine balsamic vinegar and brown sugar in a small saucepan. Bring to a boil, reduce to a simmer. Continue to simmer until mixture is ⅓ its original volume.

Once it’s the consistency of maple syrup, remove from heat. Stir in caramel sauce, sea salt and set aside. Whip heavy cream and powdered sugar in a chilled bowl to form medium-stiff peaks. Fold in rosemary. Keep cool. Heat grill to 350F. Place alternating pieces of pound cake and strawberries evenly on the skewers. Lightly oil your grill and place skewers on oiled grill grates. Toast the cake on all sides while basting the strawberries with the caramel sauce, reserving some sauce for garnish. Once the pound cake is toasted, plate the skewers and garnish with remaining balsamic caramel and whipped cream.

1 pineapple 2T. + 2t. vegetable oil 4T. butter 1c. dark brown sugar 3T. dark rum 3/4c. heavy cream Couple pinches of sea salt Poundcake, cheesecake, biscuits, etc.

Directions: Heat grill to high. Peel whole pineapple, core and remove top. Slice into approximately 1” thick slices. Brush slices on both sides with oil and place on the grill. Grill until golden brown and caramelized on both sides - about 6 minutes per side. Remove from grill and cool.

Once cooled, rough chop the pineapple to obtain a crushedlike consistency. Melt the butter in a saucepan over high heat. Add brown sugar and rum. Cook, whisking until the sugar has dissolved and the mixture is smooth. Whisk in heavy cream and cook until it comes to a boil and thickens slightly. Add crushed pineapple and boil the mixture for another minute or so. Add sea salt. Remove from heat and let cool slightly before topping your chosen dessert.

Jessie has long attributed her love of folk music and songwriting to her musician father and what he was playing on his guitar and his records and tapes while she was growing up. She fell in love with the stories and the people in these songs, their triumphs and failures. Jessie’s new album pays tribute to those songs and songwriters who influenced her, celebrating the traditional songs as well as covering music by John Prine, Guy Clark, Nanci Griffith, Kathy Mattea, among others. Unfortunately, during the recording of “Playing Favorites” Jessie was diagnosed with a rare form of cancer that resulted in a tumor that was blocking nearly 90% of her airway. This diagnosis sent her to Mayo Clinic for a series of surgeries to removed the tumor and hopefully, declare her cancer free. Throughout diagnosis and treatment, Jessie pushed to release the album, which now, more than ever, felt so very important to her.
