And because this is the West, Jackson’s restaurant scene refuses to be stuffed into some clever food magazine’s niche. Indian, Asian, Austrian, Swiss, Barbecue, French pastries (but of course), Subs, Steaks, Organic, Comfort Food, Tex-Mex, Noodles, Brew Pub fare, Pizza, Ice Cream and more can be found in this high-altitude dining room. So, what do you want when you don’t know what you want? From cowboy cuisine to continental creations, from sushi to biscuits and gravy, Italian to Thai, tacos to tempura, no appetite or pocketbook gets sniffed at or slighted here. Farmers’ markets, chili cookoffs, chefs creating and delighting on the town square, brew-fests, and the latest nod toward dining’s celebration, Jackson Hole’s FoodSHIFT–America’s first weeklong sustainable FoodFest–all attest to the valley’s move into the year-round culinary spotlight. Front and center in some valley reaches, other notable meal tables are tucked away in nooks and haunts that locals prize for their role in Jackson’s culture. Jackson Hole. Jackson has played host to presidents, vice presidents, actors, diplomats, sports gods, and every imaginable kind of eccentric. And fed them all, we might add. The palate that can’t be pleased in this valley really hasn’t been created yet. The hungry who fail to discover something here to satisfy a gustatory yearning would no doubt also find fault with trees. Or flowers. Perhaps even motherhood. Is hunger the best sauce, as the quixotic Cervantes so deftly put it? Or just one of countless sauces? No matter.
