Among the most iconic sweets of the season, Marzipan stands out as a quintessential Goan delicacy. Typically crafted from a paste of ground almonds or, more commonly in tropical regions, cashew nuts, marzipan is shaped into intricate molds representing various Christmas motifs, such as bells, holly leaves, Santa’s face, reindeer, and wreaths. These sweet, bite-sized delights are not only a treat for the taste buds but also a feast for the eyes, with their vibrant colors adding to the festive atmosphere. The process of making marzipan is as much about creativity as it is about craftsmanship. The molding of these sweets brings everyone together. Children eagerly participate, excited by the chance to shape the sweets, while elders pass down the techniques that have been honed over generations. Marzipan, with its exquisite sweetness and festive symbolism, is more than just a dessert—it is a tangible expression of Christmas joy. Goan Milk Cream: A Rich, Creamy Fudge of Delight Goan Milk Cream, a rich, creamy fudge made from FOOD & HOSPITALITY MAGAZINE
milk, sugar, and cashew nuts, is another beloved Goan Christmas delicacy. Its decadent, velvety texture and sublime sweetness make it a holiday favorite. While the process of making milk cream can be labor-intensive, the resulting confection is more than worth the effort. It holds a special place in the hearts of all Goans, often appearing as a highlight in the Christmas hamper. Given its long shelf life when refrigerated, milk cream is typically prepared in advance, allowing families to savor it throughout the holiday season. This rich dessert is a product of patience, love, and shared effort, capturing the essence of Goan Christmas gatherings. Kormolas: A Flourish of Tradition and Craftsmanship Another traditional Goan sweet that graces the Christmas table is Kormolas, which are similar to Shankarpali but shaped in a more intricate form. The dough used for both sweets is the same, but Kormolas are uniquely pinched at the ends to form patterns resembling flowers or conch shells. These intricate shapes, though seemingly complex, are easy to master with a bit of practice, and the process of shaping the dough becomes a fun, collaborative task for the whole family. Preparing Kormolas, like many other Goan sweets, requires not only skill but also patience. Coffee transcends being merely a popular beverage; it serves as a cultural cornerstone, an economic engine, and a catalyst for conversation and creativity. From its origins as a simple bean to its present-day status as a global commodity, coffee has shaped economies, cultures, and even individual lives. Consumed for at least 1,124 years, this beverage can have some severe health risks that remain unknown to many. Though coffee is believed to have numerous health benefits, its side effects can impact us in various ways. Caffeine Chronicles: The Role of Caffeine The primary stimulant in coffee, caffeine, is one of the most commonly consumed psychotropic drugs worldwide. Caffeine is a central nervous system stimulant that enhances alertness and performance. It is widely used by individuals to combat tiredness, improve concentration, and boost energy levels. Despite its many positive effects, the consumption of caffeine can lead to significant side effects that may harm the body over time. INGREDIENTS 2 medium sweet potatoes, peeled and cubed 1 onion, finely chopped 2 garlic cloves, minced 1 tsp grated ginger 1 can coconut milk (400 ml) 2 cups vegetable broth 1 tsp ground cumin 1/2 tsp ground cinnamon
Method Roast the Sweet Potatoes: Preheat your oven to 200°C. Toss the sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized. Cook the Base: In a large pot, heat a drizzle of olive oil over medium heat. "Despite working with a reduced team, we successfully catered to homes across Goa, delivering bread, cookies, and more. It was a challenge, but one that we embraced head-on." Beach Pollution - A growing environmental crisis

Our precious waters, once a cradle of life, now bear the heavy weight of our waste. The pulse of the sea and the breath of mankind are poisoned by the very hands that once cherished them. What was once a paradise has become a cry for help, as our beaches, beautiful but scarred, bear the silent marks of pollution’s stealth. In recent years, beach pollution has become an alarming concern, turning our once-vibrant shores into sites of degradation. Famous for their breathtaking beauty, these beaches once attracted both local and international tourists, but now they are overwhelmed by the storm of waste. Pollution is not just an eyesore; it is a creeping disaster that threatens not only the environment but also the livelihoods of those who depend on these beaches. Each piece of glass shard, every fragment of plastic, and the microplastics scattered along the shore are part of a growing problem. These contaminants are slowly infiltrating our beaches, harming the local biodiversity and disrupting ecosystems. While local authorities are doing their part with beach cleaning initiatives, the impact of these efforts is limited. These one-day annual events do 76
little to address the root causes of pollution or create long-term change. The presence of beach cleaners is noted, but their efforts alone are not enough to combat the scale of the issue. The focus must shift to creating greater awareness about the dangers of pollution, encouraging consistent action throughout the year. Plastic pollution is a particularly pressing issue. Despite widespread knowledge of the environmental and human health risks posed by plastic, its use continues to grow. As a nonbiodegradable material, plastic persists in our environment for hundreds of years, slowly breaking down into microplastics that contaminate our oceans, beaches, and wildlife. This poison not only harms the environment but also poses hazardous health risks to humans, as these particles enter the food chain. Littering, too, is a serious environmental challenge. A walk along beaches like Miramar reveals disturbing scenes of plastic garbage bags, discarded milk cartons, and chocolate wrappers scattered across the sand. Stagnant waste decays and produces unpleasant odors, highlighting the urgent need for better waste management systems.

Effective waste disposal and education on proper waste practices are vital steps toward a cleaner and healthier environment. In addition to waste, construction materials are often carelessly discarded on beaches. As more houses are built near the coast, construction debris ends up on the shore, only to be swept away by high tides. This further contributes to the pollution problem, as building materials such as cement and metal can be harmful to both the land and sea. Despite regulations, construction by the beach is still allowed, and the careless disposal of materials exacerbates the problem. Another major issue is illegal sand mining, a practice that continues to harm coastal environments. Sand is extracted from beaches, riverbeds, and dunes, disrupting the natural habitat and causing long-term damage. This unlawful activity leads to soil erosion, flooding, loss of fertile land, and the destruction of aquatic ecosystems. The ecological balance of riverine and coastal systems is disrupted, and the water quality suffers, further threatening the environment. These invisible invaders breed illness—gastrointestinal afflictions, skin infections, and the silent suffocation of breath, all for those who dare to touch the water stained by this poison but the harm does not end there. These waters, once pure, now overflow with nutrients—nitrogen, and phosphorus—that fuel algal blooms, suffocating the very life they once nurtured. Oxygen vanishes, leaving behind a graveyard of marine creatures, as the cycle of life is choked by the very waste we cast aside. Even seafood becomes tainted, carrying the poison that once polluted the seas, now ready to poison us in return. Industrial chemicals, too, mingle in this unholy brew, turning the ocean’s pulse into a poisoned whisper. Biodiversity fades, ecosystems collapse, and life is lost in the wake of human neglect. To heal this wound, we must forge better systems—wastewater treatment and stormwater management—and open our eyes to the urgency of proper waste disposal. The time to act is now, before our beaches, once a

symbol of beauty, become nothing but the remnants of our disregard. Coastal erosion is nature's quiet reclaiming, where waves and winds slowly devour the land, reshaping beaches and cliffs. Over time, this steady force threatens habitats, displaces communities, and erodes the beauty of shorelines. Accelerated by rising seas and human activity, the damage deepens, leaving coastlines vulnerable. Yet, through thoughtful restoration and protective measures, we can slow the tide, preserving the shores for future generations. Humans are the primary source of beach pollution. While we build and develop infrastructure, the negative impacts of these actions are often 78
overlooked. Even seemingly small actions, like fishmongers discarding unsold fish, contribute to pollution and environmental degradation. The waste is thrown into the water, creating unpleasant odors and polluting the air and water, all of which harm the local community and wildlife. As we continue to witness the deterioration of our beaches and waters, it is essential to take responsibility for the pollution we have caused. We must not only focus on cleaning up but also on raising awareness, enforcing regulations, and encouraging sustainable practices. The health of our oceans and beaches is in our hands, and it is time to act before the consequences become irreversible.
