I’M A CULINARY WRITER. THESE 5 KITCHEN TIPS CHANGED MY LIFE Recently, I started to go “all in” on my culinary work. It’s been a major change to my life. I got some cool foods to try to cook from actual companies, I started to brush up on my copywriting...and oh yeah, I got a mouse in my apartment and had a complete meltdown in the supermarket. It was about that time that I realized that I am going to be dealing with a lot more serious things if I’m going to write about this full-time. So, I started to give my kitchen an overhaul shortly after I got the mouse out. Here’s what worked for me: 20

Get spice organization boxes. I belong to Spice Breeze, a monthly subscription box that comes with spices from around the world in small envelopes. It’s great. But, those little envelopes ended up being kind of a nightmare after a while. After a mouse got in, I realized I had to protect my spices. So, I bought tiny spice boxes for the kitchen, crammed the envelopes in them, and organized them by region of origin. It cleared up a massive amount of space.

Practice FIFO.

In economics, this means First In, First Out. It’s a form of inventory or something. It means that the stuff that’s about to expire is going to be the stuff that you end up using first. This ensures that you don’t have any food go to waste. On a similar note, I’ve learned that I should never buy fresh stuff I don’t intend to eat within three days. Unless it’s canned or frozen, I usually end up forgetting about it until it’s too late and I have to salvage ingredients. Yuck!

IThe French know everything there is about running a fast kitchen, it seems. The practice of mise en place is widely used in the bartending and professional culinary world. This means “put in place,” as in, everything has a special place. In practice, this means putting stuff back and rinsing tools off the moment you’re done with them. Needed to add a dash of pepper to your sauce? Great, put it back in the cabinet immediately after, don’t leave it out on the counter. When you’re done cooking, you’ll still have pots and pans to clean in many cases. However, the overall amount of cleaning you need to do? Way, way less.

Fresh grouper is one of my favorite fish, but I haven’t always liked preparing it. If overcooked, it can be dry and tough. But I recently tried pepper-crusted grouper with a sweet balsamic glaze that was very tasty. The pepper crust gave it an unusual taste and added a bit of crunch as well. Try substituting other fish for grouper if you like; haddock or salmon are both excellent choices for cooking in a similar way. I usually have all three on hand—it’s easy to switch them out when needed, although sometimes I may use frozen if fresh isn’t available.
