What Is Nigiri Sushi? INigiri (握り) sushi is very commonly eaten in Japan. It is often thought of as basic, or entry-level, form of sushi. In fact, nigiri is often just referred to as sushi. Unlike maki rolls, nigiri does not use nori seaweed for rolling. Instead, it uses shari rice. When ordering nigiri at a restaurant, diners will order by color (white or brown), rather than type of fish.

What Is Temaki Sushi? Temaki (玉巻) translates to hand roll in Japanese. It is raw fish or vegetables wrapped up in nori (dried seaweed). Pros and Cons of Chopsticks Not everyone is a pro with chopsticks. Using them can take some practice, but if you’re in Japan, it’s expected that you know how to use chopsticks properly. There are advantages and disadvantages to using chopsticks that go beyond being able to grab food effectively. In fact, there are several cultural differences between using chopsticks versus silverware. For example, when you’re finished eating at a restaurant in Japan (and many other Asian countries), it’s customary to leave your chopsticks sticking straight up out of your bowl or plate. This signals that you have finished eating and want someone else to clear your dishes for you. It also shows respect for those around you by not leaving dirty dishes on the table for others to clean up after you leave. Some people find it rude when others don't do this and they'll let their feelings be known by loudly clearing their throats until someone gets up from their seat!

Putting Together a Menu and Avoiding a Blunder When choosing what you’re going to order, start with your budget. Take note of how much money you have in your wallet or purse. This may seem elementary, but some restaurants charge different prices for different items on their menu. For example, several $4 appetizers might lead up to an $8. If you don’t have enough cash on hand for all of your choices, it will be difficult not to make compromises as it comes time to order.

How To Choose Wine That is Good for the Earth

Walk into any wine shop with the mission of buying an environmentally-friendly wine and you’ll see lots of different designations- natural, organic, biodynamic, sustainable. It’s enough to make your head spin. What are the differences? How do you verify their claims?

Conventional

First, let’s define conventional farming. Wine is, after all, an agricultural product that is made from grapes. Conventional farming means that pesticides, herbicides, and fungicides can be used in the growing process. These chemicals can contaminate the surrounding soil and water. Additionally, they can be toxic to animals as well as to beneficial insects and plants. In conventional winemaking, additives in the winemaking process are allowed. The U.S. allows over 72 chemicals to be added to wine. Wineries are not obligated to publish or share what additives are put in their wines. However, the majority of wine additives are safe. One of the most commonly used additives for example, is commercial yeast to aid the fermentation process. Another is tartaric acid (which naturally occurs in grapes) to increase acidity if the vineyards were too warm or grapes were picked too late that year. The most polarizing of the common additives are sulfites 28

What is the big deal with sulfites? Sulfites have been used in winemaking since the early 1900s to protect wine against oxidation and bacteria growth. However, 1% of the population is allergic to them, typically presenting as asthma. In 1987 a U.S. law passed requiring added sulfites to be put on labels. It is worth noting that wine naturally produces sulfites during the winemaking process. Most of the population isn’t affected by added sulfites. In fact, more sulfites are found in french fries and dried fruit than a glass of conventional wine. The vast majority of wines you’ll find on wine lists or in a store are conventionally grown and made. Although some of these wineries take care to implement environmentally friendly practices, it is impossible to know or prove unless they submit to third-party certification.

Natural Natural wines are a trendy buzzword in the industry, but what makes a wine ‘natural’ is largely undefined. Generally, it is accepted that natural wines contain grapes grown without the use of chemicals and are made without additives in the winemaking process. However, some natural winemakers will add sulfites or other additives during the winemaking process. There is no third-party certification body to verify or define what it means. It’s a producer-by-producer basis. This requires a lot of research on the consumer’s part.

Biodynamic Biodynamic wines follow the same metrics as certified organic wine, but the difference between the two is that biodynamics is a spiritual-ethical ethos. The concept was created in 1924 by Rudolph Steiner, an Austrian philosopher and scientist. Biodynamics follows a specific planting calendar dictated by astrological occurrences. Two certification bodies exist: Demeter and Biodyvin.

Organic Certified organic wines fall into two categories. The first label you might encounter is organically grown grapes. Certified organically grown grapes mean that the grapes are grown without chemicals. The wine itself can contain additives. A wine that is certified organic is made from grapes that are organically grown and also cannot contain any additives. Biodynamics views the vineyard land as a singular ecosystem. Great care is taken to encourage biodiversity and enhance the soil. To be sure, biodiversity is important for the environment. Healthy vineyards exist in harmony with a diverse number of plants, animals, and microorganisms. Not unlike the benefit of probiotics in humans, biodiverse vineyards attract birds and insects for natural pest control. Additionally, biodiversity encourages utilizing native plants for water and soil protection. 30
