THE TRUTH ABOUT GOOD FATS, BAD FATS AND HOW TO EAT HEALTHY FATS WHY DOES THE BODY NEED FAT? Fat is a primary source of energy and the body must consume essential fatty acids to support basic body functions. The body converts fat into energy, builds nerve tissue and hormones, and controls inflammation. Fat also helps the body absorb vitamins A, D, E and K from the foods provided to the body.

But consuming too much fat can cause obesity. Calories from fat turn into body fat more easily than calories from carbohydrates or protein. Dietary fat can mess with your appetite, so you can't tell when you're full. Certain fats also raise total cholesterol and blood pressure, which may increase the risk of certain cancers, heart disease and diabetes.

FOOD DRINK MAGAZINE

FEBRUARY 2022

The truth about good fat, bad fat Good fats, also known as unsaturated fats, exist in two forms, monounsaturated and polyunsaturated, which are essential for the body and when balanced with other nutrients can help keep the body healthy. .

Good fats help absorb vitamins, create a feeling of fullness so you don't overeat, speed up your metabolism, and help regulate blood sugar. They may also reduce the risk of obesity and diabetes, high blood pressure and cardiovascular diseases. Bad fats exist in the form of saturated fats and trans fats. When eaten regularly or in excess, the body produces bad cholesterol that clogs blood vessels, increasing the risk of cardiovascular disease.

20

FOOD DRINK MAGAZINE

FEBRUARY 2022

Limit Trans Fats Trans fat is a type of processed fat commonly found in processed foods. Biscuits, cakes, donuts, pretzels, snacks, frozen foods, french fries, onion rings, etc. are foods high in trans fats. Trans fats lower good cholesterol (HDL) and increase bad cholesterol (LDL) and triglycerides. To avoid trans fats entirely, check the ingredients list and avoid partially hydrogenated oils on product labels. Trans fats are called trans fats - an abbreviation for trans fatty acids. This is a type of fat that is especially harmful to the body and is recommended by nutritionists not to use, even in small amounts. This type of fat comes from vegetable oils and is hydrogenated during food processing, especially fried foods.

21

FOOD DRINK MAGAZINE

FEBRUARY 2022

Eat a Small Amount of Saturated Fat ISaturated fats are found naturally in animal fats, dairy and foods such as red meats (beef, pork, lamb, veal, poultry skin), whole milk, rich cheeses. fat, butter, cream, palm oil, coconut oil... Although trans fat increases the risk of heart disease more than saturated fat, it is also important to limit the amount of saturated fat consumed on a daily basis. That means significantly reducing your intake of red meat and dairy-laden foods each day.

22

FOOD DRINK MAGAZINE

FEBRUARY 2022

Increase the intake of good fats in food Monounsaturated fats are abundant in oils from canola, olives, avocados, peanuts; Legumes (chickpeas, black beans, red beans, peas), olives, seeds, nuts, peanut butter, and raw avocados are also foods with healthy monounsaturated fats. Polyunsaturated fats found in vegetable oils such as corn, sunflower; Nuts such as sesame, sunflower seeds, corn, soybeans, other grains, legumes, nuts and seeds are also high in good fats. Fatty fish including salmon, herring, sardines, and mackerel contain omega-3 fatty acids.. Flaxseeds, flaxseed oil, and walnuts all contain them. Consuming these fats can help lower your total cholesterol levels. Omega-3 fatty acids may also reduce your risk of inflammation or heart failure if you're at risk for heart disease.

23

FOOD DRINK MAGAZINE

FEBRUARY 2022

INCLUDE GOOD FATS IN YOUR DAILY MEALS 1.Boost your breakfast Instead of having high-fat cream cheese or a bread for breakfast, cook up a batch of oatmeal and add in some flaxseed to give your body a little boost of omega-3s sooner. Replace high-fat whipped cream with some whipped cream, milk (or non-dairy varieties).

2.Light lunch Add avocado to sandwiches and salads instead of condiments or dressings to reduce saturated fat. Add skinless chicken to your favorite salad instead of bacon. Skip the high-fat cottage cheese and swap it for a reduced-fat variety.

3.Fat-friendly dinner For dinner, mash nuts and sprinkle them over your favorite salmon or oily fish before cooking. Use canola or olive oil instead of butter to saute your favorite veggies. Skip the cream-based sauces and opt for margarine or nut butter sauces instead.

4.Eat smarter

Eat olives for a mid-day or late-night snack instead of chips or cookies. You'll still get a tasty treat, but with a higher amount of monounsaturated fat and fewer calories. The benefits of good fats are huge, and like all things healthy eating, moderation is key. Enjoy, take control of your diet and you'll start to see healthy changes.

SALVADOR DALI

Salvador Dali is well-known for being a hedonist on almost all fronts. Decadent painting? Yep. Pet aardvark? Yep. Making weirdly sexual sculptures with lots of nude models? You betcha. Unsurprisingly, Dali was a massive fan of eating fine food as well. It was even mentioned in the documentary about Jodorowsky’s Dune. Dali himself was a bit more proactive about his foodie love. He actually penned a cookbook himself and also did the artwork and took photographs of the recipes. Much like Monet and Price, he was a fan of french cooking. 28

ANTI-ANXIETY AND ANTI-SADNESS FOODS Diet when we're sad, why do we stuff ourselves with sweets? Emotional hunger causes us to succumb to carbohydrates and sweets. However, these are far from the foods that help us achieve emotional equilibrium..

When we're depressed, stressed, or haven't had enough sleep, we reach for pasta, sweets, and other things that are supposed to make us feel better. However, the pleasure our taste receptors provide is a double-edged sword because it is not only ephemeral, but it can also be harmful in the long run. 35

FOOD DRINK MAGAZINE

THEN WHAT ARE OUR OPTIONS?

FEBRUARY 2022

We should eat "items that provide nutrients and other things that help build dopamine and serotonin, precursors to happiness," according to Nela Berlanga, a pharmacist and nutrition specialist, and Pilar Román, a nutritionist from the Kilosout team. Although there is no such thing as an antistress diet, these experts emphasize that eating a well-balanced diet can help a lot: "The body and mind are in order when we eat sensibly and naturally, preventing stress from affecting your stomach, nervous system, and defenses. "Your emotional and physical stability is directly related to how you nourish yourself. The best strategy against stress is to eat well and in a balanced fashion, rather than eating specific foods. Abusing fats, carbohydrates, and salt causes our bodies to become unbalanced." Berlanga and Román advise "enhancement of all vitamin-rich foods." The vitamins A, C, and E assist us in avoiding the creation of free radicals. Citrus fruits, broccoli, peppers, melons, and tomatoes all contain vitamin C. Carrots, melon, broccoli, Brussels sprouts, and spinach all contain vitamin A. Nuts and vegetable oils are good sources of vitamin E. Those belonging to the group are also significant. B vitamins are also vital since they help to strengthen the central nervous system and relax the body.

36

FOOD DRINK MAGAZINE

FEBRUARY 2022

Brewer's yeast, dairy products, beef, cereals, avocado, cabbage, and green beans all contain them. "Mineral consumption, such as potassium, magnesium, or calcium, helps us keep anxiety at bay," they add. "The calcium in a glass of warm milk before bed can be really helpful in helping us fall asleep," says a natural tranquilizer. Magnesium is found in vegetables (which are best consumed uncooked). It's also found in nuts, grains, and seeds, but you have to eat them whole because magnesium is lost during the crushing process. "Bananas enhance our levels of serotonin, the hormone of good vibes," since they stimulate the normal functioning of nerve cells and are high in tryptophan. These experts also caution us about the dangers of allowing anxiousness to take over when we sit down at the table. "When we are scared or agitated, we can eat without thinking and in an uncontrollable manner, allowing emotional hunger to control us." These unpleasant feelings encourage us to form risky food relationships. We slip into a cycle of continual pecking when we eat sugary meals, which cause a rapid and a false sense of well-being followed by an abrupt disintegration."

Eat on time and in a timely manner. "Being aware of the act of eating and allowing the body and mind know that we stop when and when we need to nourish our bodies throughout the day and give our best at each moment." "Keep an eye on our vitamins and minerals." According to the World Health Organization, any hypocaloric diet below 1,500Kcal should be supplemented with vitamins and minerals." Consume nutritious foods to help you feel better: " E l cacao In addition to the pleasure that its flavor provides, it includes chemicals that have a relaxing effect. However, not everything works out. You must take it without sugar or milk, and you must know how to limit the amount. If you don't think you're capable, don't even attempt. Fruits and vegetables (vitamins and minerals), dairy, lean meats (vitamin B3), fish (omega 3) and whole grains (fiber is important for healthy body functioning and, above all, to protect your stomach, which is one of the most impacted by stress) should all be included in your pantry.

5 Things Culinary School Won’t Teach You

FOOD DRINK MAGAZINE

FEBRUARY 2022

It’s Friday at 9:30pm. The ticket machine begins to explode with a brand new set of appetizer and entrée tickets as the kitchen enters yet another rush for the night. Sweat dripping from your forehead, a brand new burn is smarting, your Chef is yelling for another Roasted Lamb dish (even though you SWEAR you already gave him that land for plating), and you start to think, “Is this what I went to culinary school for?” Yes, my friend, it is. Welcome to the World of Restaurants. Buckle in, because it is going to be a hot ride. Transitioning from the pristine, allchrome, perfectly organized kitchens in culinary school to the cramped, greasy, and often disheveled kitchens of the real world can be a rude awakening for someone who isn’t prepared for what awaits them. While the hustle and bustle in both settings can be both challenging and physically demanding, the job takes on a whole new level of intensity when there is an actual customer on the other end waiting for their meal. With that in mind, there are a few things to keep in mind when it’s time to begin your career in the kitchen:

In spite of some of the things Culinary School may forget to tell you, rest assured that formal training is definitely still a great place to start! Culinary school is the perfect place to go to learn how to clarify butter, control food costs, shape an apple into a swan, and many other technical skills of the industry. Going to practicums and baking labs is the perfect way to get a glimpse of the career that one is about to embark on without fully diving in. Not to mention, the camaraderie one find in a learning kitchen is unmatchable: Being able to laugh and learn from mistakes is a lot less stressful and more rewarding and less anxietyinducing that having to learn on the job, when the mistakes come at a higher cost. The truth of the matter, though, is that the only way to learn the food industry—and I mean really learn— is to put on those non-slip shoes, tie that apron, make sure your mise is ready, and put all that learning into action. Don’t be surprised when you graduate from school, land your first job in a professional kitchen, and begin to notice that things seem... off. Welcome to the real kitchen, Chef!

COMMON QUESTIONS I GET AS A COOK SARA SNOW

Evans KOECH

FOOD DRINK MAGAZINE

FEBRUARY 2022

Cooking professionally is considered a cool and unique career to pursue, and it can be fascinating, especially for those whose exposure to the industry primarily comes from watching TV. So naturally, when folks find out what I do, they have questions, and after some time, I began to notice the same questions What Is Your popping up. It often Speciality? becomes the topic of kitchen discussions, Look, I know cooking competition shows comparing the always seem to have a frequently asked “specialty dish” questions cooks challenge of some kind, seem to get. where the “chef” cooks Here are some questions that many of my colleagues and I get frequently asked.

their signature dish, and a lot of head chefs have something they are known for, but the line cooks are the ones that make that dish every night.

57

I don’t have one. I’m a line cook, and I make whatever menu items I’m in charge of that night. If I was head chef, maybe, but I don’t have one. However, when I’m asked, I just say, “I can cook a perfect steak.” However, that answer does not always seem to satisfy, which brings me to the next question.

FOOD DRINK MAGAZINE

What’s Your Favorite Thing To Cook? Personally, I just enjoy cooking in general and trying new things. However, I’m usually asked this question by wellmeaning rideshare drivers on my way home from a grueling Saturday night shift. Cooking is the last thing I want to discuss when I smell like onions and hate. So my go-to answer is “whatever I can microwave.”

FEBRUARY 2022

In my defense, you do something for 60 plus hours a week and tell me you want to do it in your time off. I prefer to cook some dishes over others, but I do not have just one thing I would call my favorite.

When Are We Going To See You On TV? Oh, reality food competitions, thank you for giving our relatives something cringy to ask us. For me, the answer is you

58

are not. I didn’t get into cooking to become a TV star. If that is your goal, then great, but I don’t know a lot of cooks that have much respect for cooking competition shows, or celebrity chefs for that matter. I know that there is cooking involved, but these sorts of shows are still reality tv and edited to make good (if you can call it that) television. I really don’t feel like these types of shows are a good representation of the industry and tend to romanticize quite a lot for the sake of entertainment, but that’s a topic for another time.

FOOD DRINK MAGAZINE

FEBRUARY 2022

Will You Show Me How To Cook? Absolutely! I do not mind showing others a few cooking tricks and easy recipes to try. If you are willing to learn, I am here to help! Cooking is a skill, and like any skill, it takes practice. It is like that cute Pixar movie with the cooking rat said, “Anyone can cook.” Just keep in mind, I’m not available on the weekends.

When Are You Going To Open Your Own Restaraunt? I’m not, nor do I have any plans to. Sure, this seemed like something I wanted to do in culinary school, but once I was fully submerged in the industry, I understood how hard running a restaurant is and realized that was not for me. Restaurants are the top form of small businesses to shut down and fail. On paper, it seems like something fun and profitable. However, restaurants tend to lose more money than they make with overhead costs, maintenance, certifications, labor, and products all chipping away at the final profit; it is a headache I chose not to have. For those restaurant owners with thriving businesses, I salute you! 59 51

FOOD DRINK MAGAZINE

FEBRUARY 2022

Are Cook And Chef The Same Thing? Simply put, all chefs are cooks, but not all cooks are chefs. Chef is a title given to those in command of the kitchen. I have never had this title; it is something I, and many of my peers, believe is earned by those in a head or sous chef position. The word chef actually has no connection to food or cooking; “chef” is the French spelling for “chief” or “boss.” So calling your line cook buddy a chef is sort of like saying “you’re a boss,” which is not necessarily a bad thing. ------------------------This is just a taste of the questions I get asked, and I don’t mind answering questions about what I do for a living. I enjoy giving insight into what it’s like to work in a professional kitchen and trust that my answers will be brutally honest, but maybe keep the inquires to a minimum if I just finished a 12hour shift?
