Transitioning from the pristine, allchrome, perfectly organized kitchens in culinary school to the cramped, greasy, and often disheveled kitchens of the real world can be a rude awakening for someone who isn’t prepared for what awaits them. In spite of some of the things Culinary School may forget to tell you, rest assured that formal training is definitely still a great place to start! Culinary school is the perfect place to go to learn how to clarify butter, control food costs, shape an apple into a swan, and many other technical skills of the industry. Going to practicums and baking labs is the perfect way to get a glimpse of the career that one is about to embark on without fully diving in. Not to mention, the camaraderie one find in a learning kitchen is unmatchable: Being able to laugh and learn from mistakes is a lot less stressful and more rewarding and less anxietyinducing that having to learn on the job, when the mistakes come at a higher cost. The truth of the matter, though, is that the only way to learn the food industry—and I mean really learn— is to put on those non-slip shoes, tie that apron, make sure your mise is ready, and put all that learning into action. Cooking is the last thing I want to discuss when I smell like onions and hate. So my go-to answer is “whatever I can microwave.”

I know that there is cooking involved, but these sorts of shows are still reality tv and edited to make good (if you can call it that) television. I really don’t feel like these types of shows are a good representation of the industry and tend to romanticize quite a lot for the sake of entertainment, but that’s a topic for another time.

Sure, this seemed like something I wanted to do in culinary school, but once I was fully submerged in the industry, I understood how hard running a restaurant is and realized that was not for me. Restaurants are the top form of small businesses to shut down and fail. On paper, it seems like something fun and profitable. However, restaurants tend to lose more money than they make with overhead costs, maintenance, certifications, labor, and products all chipping away at the final profit; it is a headache I chose not to have. Are Cook And Chef The Same Thing? Simply put, all chefs are cooks, but not all cooks are chefs. Chef is a title given to those in command of the kitchen. I have never had this title; it is something I, and many of my peers, believe is earned by those in a head or sous chef position. The word chef actually has no connection to food or cooking; “chef” is the French spelling for “chief” or “boss.” So calling your line cook buddy a chef is sort of like saying “you’re a boss,” which is not necessarily a bad thing. ------------------------This is just a taste of the questions I get asked, and I don’t mind answering questions about what I do for a living. I enjoy giving insight into what it’s like to work in a professional kitchen and trust that my answers will be brutally honest, but maybe keep the inquires to a minimum if I just finished a 12hour shift?
