The Rise of the Chain Restaurant

I have recently returned to the country of my upbringing for a few months after spending the last 15 years in Spain and France. One thing that has struck me on my return to Britain is the number of “branded” or “chain” eating establishments.

22

ISSUE #16

Dave WINTERIDGE

FOOD DRINK MAGAZINE

NOVEMBER 2021

ISSUE #16

Every town now has the same bland chains taking over the individuality of those towns. McDonald’s we all know about, but now we have a 765 on every corner, café Nero next door, Ask Italian, Wetherspoons, Nandos, KFC, various plastic pizza outlets and even such distinguished names as The Ivy. The one thing they all have in common is a standard menu and even, in some places, standard decor. Why are British town centres now overrun with chain restaurants? I think most of the answer can be summed in one word - cost.

In the past it was easy to search out a “free house”, a pub that was free from any tie with a brewery, and enjoy a pint and a meal that was cooked by someone on the premises who understood about food and flavours and took pride in their work. Since my return I have discovered that many of those independent free houses have been taken over by large brewery groups and branded. But the takeover is not limited to just pubs. We have for some time seen the rise of, mainly budget, hotel groups such as Holiday Inn, Travelodge, Premier Inn and Ibis and it is now happening to our restaurants.

If you want your restaurant in a prime location in the centre of town it is going to cost you a huge amount in rent and business rates.

As a small operator are you willing to take the risk of investing all your savings in

this enterprise? Restaurants are notoriously risky ventures. On top of the financial risk there is the issue of the hours you will need to work and the staff you may need to employ.

23

FOOD DRINK MAGAZINE

NOVEMBER 2021

One way the chains are keeping costs down is by having all their food items centrally produced and portioned. They know the exact cost of every menu item and the exact portion size. When curries arrive in individual plastic portion pouches and all the “chef” has to do is reheat the product and open the package, there is no way you can compete with the cost or the consistency. They have enormous buying power because they are supplying the entire group with the same products and, because the portion size is exact, it is easy to work to a gross profit percentage. It appears that customers are happy to accept that their meal will be exactly the same in London as it is in Manchester. Further cost savings for the chain restaurant come in the form of recruitment. An entire HR department will take the responsibility for hiring staff rather than you the independent restaurateur having to pay for advertising and then finding the time to interview and train. By having the menu centrally produced the chain restaurant has also taken away the need for certain skills in the kitchen and again saving them the cost of a highly skilled chef. With very little food preparation required they can offer straight shifts and keep the kitchen open all day long rather than the more traditional lunch and evening service with the restaurant closed in the afternoon.

24

ISSUE #16

You may have gathered that I am not totally a fan of such large branded eateries but I do understand they have their place in our restaurant culture. We all work hard for the money that we earn and are choosy about where we spend it. Do you take the risk of an untried, independent restaurant or do you play it safe and go to the familiar brand where you know it will be ok. But is okay good enough?

I would like to think that we will continue to see new openings of small restaurants where everything is cooked on site and served in an environment that has some originality.

After all, its menu is a lecture on all things dairy. Even the non-cheese burgers come with a dab of butter, and they have a whopping 59 different frozen custard varieties to choose from, including chocolate and vanilla - despite the custard is made daily, only one variety (along with chocolate and vanilla) is offered every day. When it comes to purchasing a franchise restaurant, cost will limit your options more than anything else. Another crucial component in launching a restaurant franchise is experience. The keys to a franchise unit are not given to anybody by the parent company (franchisor). Starbucks Celebrates 50 Years

From a Row of Stores to a Café Empire

52

FOOD DRINK MAGAZINE

NOVEMBER 2021

ISSUE #16

Starbucks changed the coffee shop sector forever. The chain began by mucking up the US market before expanding globally. However, the organization is groaning under the weight of the crisis and is under pressure to restructure. Starbucks is by far the largest café chain in the world, with about 33,000 locations, yet it all started tiny. On March 30, 1971, three college buddies who shared a passion for fine coffee started a modest cafe in Seattle. As a result, they unwittingly laid the groundwork for a firm that US investor Howard Schultz was meant to turn into a global café empire. After five decades, it may be found in nearly every major metropolis.

ECONOMIC FACTS The economic crisis, on the other hand, is having a hard time hitting the US firm - on its 50th anniversary, Starbucks may look back on one of its most challenging years. The balance sheet was shattered by pandemic branch closures and revenue losses. The earnings fell by 30% year on year to $622 million in the three months ending in December, although it was still much better than the two prior quarters.

Starbucks CEO Kevin Johnson, on the other hand, sees the worst-case scenario. Johnson recently told the US magazine "Fortune" that business in the most major markets of the United States and China should be completely recovered shortly. The crisis had no long-term consequences, according to the 60-year-old, who succeeded longtime CEO Schultz in 2017. "We are more resilient and stronger now than we were before the epidemic," he added. Johnson inherited a terrible history and has faced several hurdles since Corona. The hot beverage business is very competitive; for example, Coca-Cola entered into rivalry with Starbucks in 2018 when it acquired the Costa café chain.

St"The pandemic containment efforts are also having a negative impact on Starbucks Germany," says Europe spokesman Annick Eichinger. Despite the challenging scenario, Starbucks

. Another big rival is the German billionaire family Reimann, which owns Peet's Coffee, Stumptown, and Espresso House under the German name Balzac, as well as the coffee giant Jacobs Douwe Egberts through its JAB Holding. Starbucks has been operating in Germany since 2002, when it opened its first coffee shop in Berlin. There were 136 branches here last time I checked. maintains the bulk of its locations operational. Starbucks intends to stand out in the face of tough competition in 2021 by continuing and expanding efforts like the Rewards incentive program, which allows consumers to accumulate stars in exchange for special discounts. In the United States, Starbucks competes against low-cost competitors like as Dunkin' Donuts and McDonald's, which are not only cheaper, but also have more drive-thrus. These pick-up counters proved to be a valuable trump card for drivers throughout the epidemic. Starbucks, on the other hand, has long promoted drive-thru and digital offerings.

MANAGEMENT POSITION

coffee connoisseurs, who had known each other since their undergraduate days in San Francisco, decided to sell Starbucks. Schultz took advantage of the situation. After it, there was a quick expansion. Schultz breathed new life into the business by merging the concept and quality of European cafés

Johnson built on the groundwork laid down by his predecessor Schultz, who had decided years previously on a "e-commerce on steroids" approach involving applications and delivery services in order to capitalize on a "seismic change in customer behavior." Schultz was the company's face for decades, revolutionizing US cuisine with espresso, iced coffee,

with the infrastructure of trimmed-down US fastfood restaurants, but without adopting their franchising structures. He was able to establish Starbucks as a quality standard in America, selling mugs of coffee for four dollars and above in a culture that had not previously been accustomed to high sophistication and low pricing for hot beverages. The barista profession is well-established in the workplace today, due in part to Starbucks.

latte macchiato, and snacks, growing it from a small local chain to a nearly worldwide chain with yearly sales of billions. At the age of 29, Schultz was employed as the director of marketing at Starbucks in 1982. Back then, a business trip to Milan opened his eyes. Impressed by the Italian espresso bars, he attempted, but failed, to persuade the Seattle Starbucks proprietors to adopt a similar concept. Jerry Baldwin, Zev Siegl, and Gordon Bowker, the founders of Starbucks, did not share his vision, so Schultz started his own company, Il Giornale, which offered espresso and ice cream based on the Italian concept.

IN CONCLUSION Schultz went public in 1992, when Starbucks only had 140 locations. Only McDonald's and Subway have more outlets globally than the business, which now has over 30,000 café-restaurants. Starbucks established its first store in Italy in 2018, marking the company's first foray into the European heartland of coffee culture. Schultz had quit as CEO at the start of the millennium, but returned after the 2008 financial crisis. Schultz ultimately handed up the scepter in 2017, and the 67-year-old subsequently stepped down as chairman of the board of directors the following year.

COFFEE The Other Drinking Scene Of NJ

If anyone has ever met me, you already know I love to drink. Most of the time, it’s hard to find me without a glass of merlot in my hand. However, I’ve also learned about another drinking scene that took me by surprise: coffee. My home state of New Jersey is filled to the brim with cool coffee shops that raise the middle finger to the status quo that is Starbucks. I could say it’s a hipster thing, but it’s really not. Everyone kind of goes there, either for a date or for a place to just chill out. Drinking coffee, as a foodie, has many benefits. First off, it is a great way to gauge a place’s wares without worrying about a DUI. Second, it’s easier on the wallet. Third, coffee actually doesn’t make me pass out.

Where Should You Get Your Coffee? So far, I’ve noticed a couple of popular joints around the Garden State. These are my faves near me...

Extreme Pita

Extreme Pita was started in Waterloo, Ontario, in December 1996. Despite what may appear to be an apparent aim, their goal at the time was not merely to develop the best-tasting pita sandwich possible. Instead, they set out to give their clients the option of trying something new; the opportunity to eat at a restaurant that actually understands active lives and health concerns. "Inspiring Healthier Living" is more than a marketing catchphrase for them; these words, and the principles they symbolize, are the core of the company. These have not altered since the day we initially welcomed you into our home. Fees for the franchise: $20,000
