W
ell, it’s fall and that means it’s time for Cool October, Four Seasons Resort and Club’s annual fundraising event benefiting cancer research and treatments for patients right here in Irving, TX. This is now the 31st year in which our members and staff work together to raise money for such a great cause. What started out as the Terry Fox Run in 1992, has now grown into the multiple events that currently make up Cool October. Over the past several years, we have raised more than $2.6 million dollars for the Irving Healthcare Foundation in support of cancer services at the Baylor Scott & White Charles A Sammons Cancer Center– Irving, the city’s only not-for profit hospital. How cool is that? I’d like to thank our Cool October Committee, chaired by BOG member, Sharon Pfaff, all of the 2015 Committees, and the Four Seasons staff for
coming up with some new ideas to add to the list of already exciting events that support the cause. Along with the Cool 18 Golf Tournament and Golf Marathon, the Tennis Marathon, Spin-A-Thon, and now for its second year, the Cool October Concert featuring the band “Live 80,” the committee has added the new “Fashion at the Four Seasons Luncheon” taking place in Café On The Green restaurant (which I am told is already sold out). And lets not forget about the “Chili Cook-Off!” This year you can participate as a team or individual with prizes awarded in multiple categories. So please gather your favorite recipe and friends and cook up your best chili! As you can see, there are plenty of ways to participate in helping to support such a great cause. I’m sure we all know of someone that has been affected by this terrible disease. So, by working together let’s continue to bring the best possible research and treatments to our fellow friends and neighbors of Irving! Sincerely,

4TH OF JULY Spending Independence weekend at Four Seasons Resort and Club has become quite the popular tradition for members and guests! The property is transformed into a fun and festive venue decorated in red, white and blue! This year’s festival and fireworks show didn’t disappoint. Members and guests enjoyed a weekend full of activities for the whole family! The Driving Range was transformed into a carnival complete with laser tag, larger-than-life bounce houses, a flip book photo booth, food trucks and we can’t forget the incredible live music by COVER DOWN! For dinner, Members could attend the very popular Independence Day BBQ in the Pavilion or dine with friends on the Members Lounge Patio. At dusk we glittered the sky with a spectacular show that had people cheering and feeling proud. If you haven’t experienced our Independence Celebration, we strongly suggest you partake in 2016! The best part, Four Seasons Resort and Club is taking room reservations now! FE RRARI COCKTAI L PARTY The Sports Club was the place to be on June 20, 2015. More than 35 Ferraris along with Schumackers winning 2013 Formula 1 car were on display as members of the Sports Club and Ferrari Club of Dallas mixed and mingled! Italian bites, a live DJ and Fashion by Ferregamo also glittered the Club! It was an event for the books!

Upcoming Junior Golf Events Each month, we host a play day for the kids. These are 9 hole tournaments and we dabble into different formats to keep the kids interested in the game. These monthly events will continue into the fall.
Junior Club Championship On August 1 - 2 we had our Junior Club Championship on Cottonwood and TPC. We had an 18 hole division and a 9 hole division and tee prizes for each of the players. The weather was perfect and there was some GREAT golf played! Congratulations to our newest Club Champions! Alex Trimmer posted scores of 41-39 to take the 9 Hole Club Champion crown and Joe Ramirez is our 2015 Junior Club Champion with
We also have our Parent-Child event on October 18 on Cottonwood Valley! We will have a 9 and 18 hole division and will break the tournament into 3 different formats; best ball, alternate shot, and scramble. This tournament was a huge hit last year and I would anticipate this year to be no different. Be on the lookout for more information and registration.
Junior Golf with Grady The revamped Junior Golf program is 18 months strong and has grown to over 75 kids. We have added two additional instructors to our staff, Tim Kunkle, Assistant Junior Golf Coordinator and Sean Speed, our PGM intern from Sam Houston State. Tim and Sean have added stability, experience, synergy and professionalism to our program.

itting the ball in the center of the clubface is the most important characteristic in improving your distance. Choking down about 1/2” on a driver, fairway metal or hybrid can increase the percentage of hitting in the center of the clubface. These clubs are long to begin with and are difficult to find the center of the clubface consistently. What distance you might give up in width of the backswing you will more than make up for centeredness of contact by shortening the length of the club.

Not enough can be said about the lasting friendships that golf has brought us all. Let’s offer a big welcome to the new Sports Club members that have also joined the WGA. COOL OCTOBER Our Commitment Since 1992, the hotel employees, Sports Club members, local corporations, and community partners have raised just over $2.6 million to directly support cancer services at the Baylor Scott & White Charles A. Sammons Cancer Center at Irving via the Irving Healthcare Foundation. Every single advancement at the Cancer Center has been either fully or partially funded by Four Seasons Dallas, and we are their largest corporate donor.

CH E F’S CORN E R KABOCHA SQUASH SOUP 1 Kabocha Squash 1 Yellow Onions 1 Bay Leaves 1 t Chinese Five Spice 5 C Vegetable Stock ¾ C Heavy Cream Kosher Salt to taste Method: Cut and clean out the Kabocha Squash. Chop into medium pieces along with the onions. Heat skillet and sauté onions and the five spices in blended oil until translucent. Then add all ingredients. Bring to a boil and simmer until squash is soft, about 30 minutes. Turn heat off and remove the bay leaves and blend with the stick blender until smooth, pass it through a fine chinois. LOBSTER RELISH GARNISH Salt One 1.5 - pound lobster 1/4 cup Diced Red & Yellow Tomatoes 2 T. extra-virgin olive oil 1 ¼ tablespoons fresh lemon juice 1/4 cup Sliced Sautéed Oyster Mushrooms 1/2 tablespoon coarsely chopped basil 1/2 teaspoon finely grated lemon zest Freshly ground white pepper Bring a large pot of water to a boil. Salt the water. Carefully add the live lobsters, cover and cook over high heat until they’re bright red, 6 to 8 minutes. Using tongs, transfer the lobsters to a bowl and let them cool slightly. Remove the rubber bands from the claws. Crack the claws and knuckles and remove the meat. Using scissors, slit the tail shells and remove the meat. Remove the dark intestinal veins from the tails. Cut the lobster meat into 1/2-inch pieces. NOTE: (You can use frozen cooked lobster meat if you wish) In a bowl, mix the olive oil, lemon juice, tomatoes, basil and lemon zest. Add the lobster and mushrooms, season with salt and white pepper and toss. Garnish Soup with lobster mixture with desired amount.
