TOKADO COFFEE Tokado Coffee, owned by world champion coffee roaster Naoki Goto, has nine varieties of carefully selected beans on hand at any given time. You can choose your brew based on its provenance or roast level—light, medium, medium-dark or dark—or have a staff member recommend a cup based on your preferences. (Different shapes of cups are used for different roast levels.) Suzukake has been making wagashi (Japanese sweets) in Fukuoka for almost 100 years. The shop uses select ingredients to create traditional sweets with a modern flair. It is now known nationwide for its sweets and chic interior design. The cafe, the only one in Japan, opened in 2008 when the head shop moved to Hakata. It offers Western-style dishes, like spaghetti Napolitan or curry rice, as well as anmitsu and other desserts, carefully prepared and served in gorgeous dishes. After you eat, don’t forget to grab a souvenir from their fully stocked sweet shop next door.

在博多經營百餘年，活動與生活中不可欠缺的和菓子店『鈴懸』。使用嚴選在地素材，將傳統的和菓子製成代表四季的產品，並舉辦交流試吃會等做法來收集評價。2008 年總店與茶店共同開業，全國唯一的鈴懸咖啡店，在日本是眾所皆知的時尚美味和菓子店，用餐必點用著精美器皿盛裝的紅醬義大利麵、咖哩飯及甜品 (¥950)。用完餐後非常推薦在店內自豪的茶點區選購精緻的甜點作為伴手禮。

FUKUOKA - THE NOODLE CITY

石磨手打蕎麥地酒木曽路

「木曾路」於 1977 年創業，在 2 代店長宮崎猛先生返鄉後將店做了大幅度的調整；至今為止猛先生除了嚴選蕎麥的品種及產地外，他還盡可能的直接到全國各地的蕎麥農家拜訪。每天早晨在自家磨出的蕎麥不管是色、香、味都完美無缺，並會因為產地和品種的不同來調整當日磨製喬麥粉的方法。如果重視滑溜順口的話就選擇「二八蕎麥」，想要品嚐蕎麥最原本的風味就來個「十割蕎麥」；由鰹魚和昆布燉煮的高湯，能讓蕎麥的味道更加昇華。在充滿日本食文化的城市內首屈一指的堅持手做蕎麥麵名店「木曾路」品嚐蕎麥麵的話，應該就能徹底感受到他的魅力。

KISOJI Kisoji was founded in 1977, but 15 years ago, the second-generation owner, Takeshi Miyazaki, returned to Fukuoka and revamped the soba shop after his culinary training in Tokyo. He sources different kinds of soba from farmers all over Japan to create delicious seasonal dishes from hand-ground soba flour. Most soba-makers won’t change the flour-to-binding agent ratio, but Miyazaki will make slight adjustments depending on the provenance of the soba. He also employs different noodle-making techniques to achieve different effects: nihachi style for a smooth, slurpable noodle, or juwari style to emphasize the soba flavor. The broth, made from thickly sliced bonito, kombu kelp and soy sauce, also enhances the flavor. Kisoji also serves local sake, a practice Miyazaki brought back from Tokyo, where sake and soba go hand-in-hand. (Tipplers can opt for the sake sampler.) Four huge floats, each 10 m tall, 2.5 t and with 12 traditional flags, are carried through the town during the day. 다자이후 텐만구 여름 텐진 축제

텐진사마(스가와라노미치자네)의 탄생을 축복하는 축제. 아이들이 가마를 짊어지고 행진하는 행사 등이 열리며 유카타 콘테스트(당일 접수, 참가 무료)도 개최된다. 25일 밤에는 신령을 달래기 위해 연못 주변 천 개의 촛불이 밝혀지며 여름밤을 환상적인 광경을 물들인다.

SEOUL SISTERS

Right now, you’re closer to South Korea’s capital than Japan’s. Fukuoka is 883 kilometers (or around an hour and a half by airplane) from Tokyo, compared to just 540 kilometers (or an hour and 20 minutes’ flight) from Seoul.

HAKATA THEN, FUKUOKA NOW

If history had gone just a little differently, we would have been welcoming you to Hakata, not Fukuoka. The two were once separate places: Hakata, a busy port that served as Japan’s gateway to East Asia, and Fukuoka, a samurai town that sprang up around the castle built by a 17th-century feudal lord. (You can admire what remains of it in what is now Ohori Park.) In 1889, it was decided that the two towns should merge — but what to call the new city? The council was called to vote; the result was a tie. The decision fell to the chairman who, being from Fukuoka himself, declared in favor of his hometown. And so Fukuoka + Hakata = Fukuoka, despite the fact that Hakata was the larger city at the time. As a gesture to disappointed Hakatans, the council named the shiny new train terminus Hakata Station — which is why anyone traveling here by Shinkansen still arrives in Hakata today.

SAVED BY THE STORM

Fukuoka owes its survival to kamikaze — but not that kind. Back in the Middle Ages, the Mongol Empire was one of the greatest threats to Japan. Having conquered Korea, they prepared to invade the closest part of the archipelago from there: Kyushu. In 1274, a Mongol fleet attacked. They made it as far as Hakata Bay before a typhoon wrecked their ships. Wary of a second attempt, the Japanese built a wall along the coast for defence, the remains of which are still visible today. Sure enough, in 1281 the Mongols tried again, this time with a vast force of some 140,000 soldiers. The wall couldn’t withstand them. The samurai on shore were outnumbered. But what’s this? A second storm rolling in? To everyone’s amazement, another typhoon turned up at just the right moment and scattered the Mongols’ fleet. The Mongols never attempted to invade Japan again. The Japanese put the triumph down to “divine winds” — kamikaze — which is the origin of the word.

TUNA’S A STEAL

A trip to the grocery store will cost you less in Fukuoka than in most other Japanese cities. Here you’ll find some of the lowest food prices in the country — including, at just ¥286 per 100 grams, Japan’s cheapest tuna.

FUKUOKA MADE JAPAN ZEN

Next time you’re sipping on a green tea and contemplating the nothingness of existence, remember that you can thank one of Fukuoka’s historical characters for both. A roving Buddhist monk, Eisai, first learned about Zen — and its practitioners’ favorite drink — in China during the 12th century. He returned to Kyushu bearing both Zen scriptures and tea seeds. He would go on to found Japan’s first Zen temple: Shofukuji in Hakata. The temple continues to train monks to this day — and still practices one of the oldest forms of tea ceremony in Japan.

EVERY FUKUOKAN HAS JUST ENOUGH BEACH TO DIP A TOE

Fukuoka City boasts an impressive 133.6 kilometers — 83 miles — of seashore. That works out at 9.1 centimeters per inhabitant. We’re calling dibs on the golden sands of Ikinomatsubara.

EAT OUT EVERY NIGHT FOR THE NEXT 25 YEARS

With 4.2 restaurants for every 1,000 people, Fukuoka is second only to Tokyo for the highest concentration of restaurants in Japan. In fact, in those terms it beats Singapore, New York, Hong Kong and most other major cities in the world. TripAdvisor currently lists 9,398 restaurants in Fukuoka — which means that if you dined at a different one every day, it would take you around 25 years to try them all. You’d also have to eat a heck of a lot of motsunabe, the offal hotpot that’s a specialty of Fukuoka: the city has more motsunabe restaurants per capita than any other Japanese city. It’s also got the second most gyoza restaurants, the third most ramen restaurants and, more surprisingly, Japan’s highest concentration of Spanish and Mexican restaurants.

FUKUOKA IS NO PLACE TO BE A CHICKEN

Fukuokans are Japan’s biggest chicken-eaters, with each household purchasing an average of 21,446 grams of the meat per year. And that’s just the stuff they cook at home: Fukuoka has some 660 restaurants that specialize in yakitori — grilled chicken skewers — to feed the city’s poultry habit.

CENTURIES AT SEA

Hakata has centuries of history as one of Japan’s most important ports. In the 12th century, it was the heart of Japan’s trade with China, and by the 17th, it was a point of entry for the earliest European seafarers, who marked it on their first maps of Japan as “Facata”. Today the port welcomes more long-distance travelers than any other in Japan, hitting a high of more than 1 million ocean-liner passengers in 2015.

A YOUNG CITY

Fukuoka has one of the sprightliest populations in Japan: 19.5 percent of its residents — nearly one in five — are aged between 15 and 29. And there are more on the way. With 9.6 new babies per 1,000 people, Fukuoka has one of Japan’s highest birth rates.

SUMO WRESTLE BLINDFOLD? A FUKUOKAN CAN!

Every year in early December, a sumo wrestling match takes place at the Masue Goro Inari Shrine in Fukuoka Prefecture — with a difference. These wrestlers are fully clothed, for a start. And they’re women. And they’re blindfolded. No one’s entirely sure where the tradition comes from, but it’s supposed to symbolize life’s uncertainty and struggles, as well as the importance of relying on others for help. Since March 2015, Fukuoka is home to the world’s first hydrogen refueling station powered by… sewage. That’s right: the city collects wastewater, separates out the sludge (genuine technical term), allows it to ferment and turns the resulting gas into hydrogen — which can then be used to power clean cars. The process produces enough hydrogen to refill around 65 fuel cell vehicles every day.

He penned it after performing here in 2010: so surprised was he by the crowd’s enthusiasm — apparently they knew all the words and even more impressively, all the dance moves — that he wrote a tribute.

We don’t mean it’s bad. In fact, we’re pretty proud of it. It’s Japan’s only museum dedicated to… toilets. As anyone who’s used the high-tech facilities here will know, Japanese toilets are a wonder to behold (and bestride). Toto, the company that invented the famous built-in bidet model — and the world’s largest loo-maker — has had its headquarters in Fukuoka Prefecture for nearly a century, and last year it opened a museum to document its achievements. Attractions include some of the earliest flush toilets, an extra-wide model designed for sumo wrestlers and famous bathrooms that once served the prime minister’s office and state guest house in Tokyo.

STARTUP CENTRAL

Japan isn’t especially known for its startup scene, but Fukuoka is doing its best to change that. The city already has the highest rate of new startups in Japan (7 percent) and, by offering incentives that include Japan’s first and only Startup Visa for foreign entrepreneurs, it hopes to attract even more. So far, made-in-Fukuoka ventures include Ikkai, a “task marketplace” where students sell their services, and anect, developer of a flea market app.

OUR BASEBALL STADIUM IS THE STUFF OF SCIENCE FICTION

Fukuoka’s Yahuoku! Dome, home of the SoftBank Hawks, isn’t always a dome: its glittering roof can be retracted to convert it into an open-air arena. When it was built in 1993, it was the first stadium in Japan to feature the mechanism, which explains why it made it into a science-fiction film. The Dome has a cameo in the 1995 monster movie Gamera: Guardian of the Universe, when scientists lure man-eating pterodactyls inside the open-topped stadium in order to close the roof and trap them inside. (Closing the roof in real life takes around 20 minutes, so we assume they took some artistic license.)

JAPAN’S SECOND VALENTINE’S DAY BEGAN HERE

If you’re new to Japan, you may not be aware that here we celebrate romance twice a year: once on Valentine’s Day, like the rest of the world, and then again exactly one month later. March 14 is White Day: the day that men reciprocate the Valentine’s gifts given to them by women. The tradition reportedly has its roots in Fukuoka, where, in 1977, local confectioner Ishimura Manseido dubbed March 14 “Marshmallow Day” and began marketing the gooey white candy specifically to male customers as a gift for the lady in their life.

COMMUTING’S A BREEZE...

The average Fukuokan spends a mere 34.5 minutes getting to work or school each day — that’s a precious four minutes less than the nationwide average. Hey, a lot can happen in four minutes.

HOME OF THE WORLD’S HEAVIEST STRAWBERRY

Seriously. It weighed a whopping 250 grams, measured 25-30 centimeters around and was grown by Koji Nakao of Fukuoka in January 2015. He holds the Guinness World Record to this day (as for the strawberry, Nakao let his daughter eat it; she says it was delicious).

f you thought geisha belonged to Japan’s past, think again. A small but dedicated group of women continue to keep the tradition alive right here in Fukuoka. We met their newest member: an English-speaking, world-traveling geisha who dreams of performing abroad. Say “geisha” and most people wouldn’t think of 21st-century Japan. Old Kyoto, perhaps, but not many would picture downtown Fukuoka. And even fewer, no doubt, would imagine a globe-trotting graduate in commerce. Allow us, then, to introduce you to Koharu, the most recently qualified geisha — or geigi, as such entertainers are known here — working in Fukuoka today. She’s not the only one: Hakata Kenban, the association that trains and manages the city’s geigi, has 17 active performers. When Koharu joined in July 2014, though, she was the first new apprentice in five years.

BANDIT GEISHA

Times have certainly changed: around a century ago, Fukuoka boasted five separate kenban and more than 2,000 geigi. The city’s geigi gained a reputation throughout Japan as direct and spirited entertainers. They even earned themselves the

在一個世紀以前，在福岡有五個券番、並有兩千人以上的藝妓。當時福岡的藝妓們因為率直、豪爽的娛樂氣氛廣受好評並在日本逐漸打開知名度，還獲得了「馬賊藝者」的稱號。小春說博多藝妓現今仍保有以往聞名的寬容、開朗以及友善；小春和藝妓學姐們現在依舊持續著從事表演傳統舞蹈、三味線和鼓的演奏以及接待賓客等等傳統技藝活動。直至今日，也仍然常常在料亭裡招待來客。

優雅的大使們

和傳統的藝妓不同的地方是，福岡的藝妓常常被邀請參與遊行集會、祭典等活動。在福岡 5 月的「博多 Dontaku 港祭」、12 月的慣例活動「博多 Odori」都會看到她們的身影。在海外觀光客人數不斷增加的現今，只要有

nickname “bazoku geisha,” bandit geisha — not because of any criminal activity, but because they were considered as gutsy as any horse-riding outlaw. Today, Koharu says, Hakata geigi are still known for their openness, brightness and friendliness. She and her colleagues still practice the same arts — traditional dance, playing the shamisen (lute) and tsuzumi (drum), welcoming guests and making conversation — that their predecessors did, and often they still perform them in the same setting: ryotei, exclusive restaurants reserved for high-level entertaining.

值得保存的文化

小春雖然獲得了親友們的支持，但另一方面，將藝妓和花魁 ( 遊女 ) 混為一談，對於小春的決定心存疑惑的人也不在少數。在了解了藝妓的意義之後，看著小春今日的活躍身影，所有人，都在為小春加油。除此之外，在友人的幫助之下，她更確信

Port Festival in May, as well as the Hakata Odori performance in December. As more and more foreign tourists arrive, the city’s geigi increasingly find themselves entertaining visitors from overseas. The first time Koharu saw geigi close up was at an event at Hakata Port, where they were greeting travelers off a cruise ship; now she does the same thing herself. What led her there? her, she’d traveled to Germany for her family’s jewelry business and to Cambodia with an NGO. But when she saw geigi in action, with their white make-up and bright kimono, she decided to switch paths and embark on the demanding process of training to be like them.

A CULTURE WORTH PRESERVING

While those close to her were mostly encouraging, some had reservations about her choice. Like many people, they assumed that geisha were the same as oiran — courtesans. (They’re not.) Now, having learned what geigi really do and seen Koharu do it, they approve. Koharu says she is lucky to have the support of friends, too, who appreciate traditional Japanese culture. They assured her throughout her apprenticeship that what she was doing was important, she says. She also benefited from the assistance of the Fukuoka Chamber of Commerce and Industry, which paid her a salary while she was training as part of its efforts to promote traditional art and culture.

FULL-FLEDGED

It took months of music, dance and conversation lessons from senior geigi — all of them strict teachers, Koharu says — but she is now a full-fledged geigi herself. It’s a privilege, she says. ocated on Hakata Bay facing the Genkai Sea, the city of Fukuoka is known throughout Japan for its delicious fish. One of the most loved fishes of local Fukuokans is saba, or mackerel. Packed with fatty acids, saba comes into season in the fall and winter, but Fukuokans enjoy it year-round. Any way you serve it—raw, as sashimi, marinated in dressing or grilled—saba is delicious. In fact, it’s no stretch to consider saba the most popular fish in Fukuoka. So, why do Fukuokans love it so much?

Fukuoka is Saba City!

Fukuokans Like it Raw!

Northern Kyushu, where Fukuoka is located, is one of the few places in Japan where you can eat saba raw. Saba, like all oily fish, spoil faster than white fish, so in many other parts of Japan, they are typically lightly pickled or eaten cooked. So, why did people in this area start eating raw saba? The reason can be found in the geography. The fishing grounds of the Genkai Sea lie just beyond the mouth of Hakata Bay. Having grown up in turbid waters, fish caught here are heartier, and when in season during the colder months, they are fattier as well. Fishing boats land their catches directly at the Fukuoka City Seafood Market, which is only a 10-minute drive from the city center, and there they are auctioned off daily. In Fukuoka, it only takes a short time for fresh saba to reach your plate, and that’s the main reason it can be eaten raw here. Another reason is that the saba from this part of the ocean carry almost no Anisakis parasites. Many Fukuokans who’ve been eating raw saba since childhood without any problems can attest to this.

福岡是鮮少能夠直接生食鯖魚的地方

即使是在日本，也只有從福岡開始到北九州是能夠生吃鯖魚的珍貴地區。在日本有「鯖魚活著就開始腐壞了」這個說法，表示鯖魚是一種很腐敗很快速的魚，在其他地方普遍會將鯖魚醃漬或煮熟後來吃；這是因為活鯖魚身體裡有一種消化酵素，鯖魚死亡之後這種酵素會開始消化自己，也就更容易沾染腐敗菌了。那麼為什麼在這個地區從以前開始就能吃到生的鯖魚呢？其秘密正是在於「地利」。在博多灣旁有一個叫玄界灘的優良漁場，在這洶湧海潮中孕育而出的鯖魚，將當季的鮮味和肥美的油脂蓄藏其中。這樣的鯖魚從船聚集的中心地只要開車 10 分鐘就能到達福岡市鮮魚市場，並且每日被叫賣出售。從海中到人們吃下肚只花了很短的時間，正是能夠在這裡生吃鯖魚的最大理由。此外，還有另一個因素是在這個海域補獲的鯖魚幾乎沒有叫「海獸胃線蟲」的寄生蟲存在。「從小就開始生吃鯖魚了，沒有生過一次病，也幾乎沒有聽過別人說起」大部份的博多人都接納這個說法。

후쿠오카는 고등어를 생으로 맛볼 수 있는 몇 안 되는 곳

일본 내에서도 후쿠오카를 비롯한 북큐슈는 고등어를 생으로 먹을 수 있는 몇 안 되는 지역입니다. 고등어는 빨리 상하기 쉬운 생선으로 잘 알려져 있어 다른 지역에서는 식초에 절이거나 구워 먹는 것이 일반적입니다. 고등어가 잘 상하는 것은 섭취한 먹이를 소화하기 위해 체내에서 작용하는 산소가, 고등어가 죽으면서 고등어 그 자체를 소화하기 시작해 부패균이 발생하기 때문입니다. 그런데도 이 지역에서는 예로부터 고등어를 생으로 먹어왔습니다. 그럴 수 있었던 이유는 지리적 이점에서 찾아볼 수 있습니다. 하카타만 너머의 겐카이나다에서 잡히는 고등어는 살이 탄탄하고 제철을 맞으면 몸 전체에 기름기가 오릅니다. 그 고등어를 실은 배는 도시 중심에서 차로 10분 정도면 갈 수 있는 후쿠오카시 생선시장으로 들어옵니다. 바닷속에서 헤엄치던 고등어가 우리 입을 즐겁게 해주기까지 걸리는 시간이 짧다는 것이 고등어를 생으로 먹을 수 있는 가장 큰 이유이지요. 또한 이 해역에서 잡히는 고등어에는 아니사키스라는 기생충이 거의 없다는 것도 이유로 들 수 있겠습니다. ‘어렸을 때부터 생으로 고등어를 먹어왔지만, 식중독에 걸린 적은 한 번도 없고 그런 이야기를들은 적도 없다’는 하카타 주민들이 많은 것도 충분히 이해가 갑니다. Goma Saba: Fukuokan Soul Food

Whether it’s served as sashimi or grilled with salt, Fukuokans love saba. The sheer number of local restaurants that carry saba dishes on the menu is a testament to the fish’s popularity. The most famous dish of all, however, is goma saba—raw mackerel dressed with sesame and soy sauce. Many Japanese-style pubs and Japanese food restaurants serve this dish, and many locals even serve it at home. Since the flavoring is a little rich, it goes well with rice and sake, but Fukuokans of all ages love goma saba. Each restaurant and household has its own flavor. Although the simplest version of the dish just uses sesame and soy sauce, other variations include sugar, mirin (sweet cooking sake) and sake. It is often topped with chopped green onions, wasabi or shiso, and sometimes it is served with finely chopped daikon radish or wakame seaweed. The best time to enjoy goma saba is when the fish is in season in late fall and early winter, but you can find it on the menu almost year-round, so why not try it whenever you go out?

超級 ~ 喜愛鯖魚的福岡市民。以生魚片、鹽烤鯖魚等各種調理方式品嚐鯖魚。市內有不少專門提供鯖魚料理的店家。鯖魚是深得民心的魚類，而諸多鯖魚料理中最受歡迎的莫過於「胡麻鯖魚」了；使用新鮮鯖魚切成片狀、蘸上胡麻及醬油等調味料，在居酒屋或日式料理等、大部分的飲食店內都能吃到。其實，「胡麻鯖魚」不止店裡才有，也是一般家庭餐桌上的必備料理。稍微調味後的濃郁口感配上白飯或酒都十分對味，從小孩到大人廣為各年齡層所喜愛。只用胡麻及醬油簡單調味、或是砂糖加味醂、酒等等各式各樣的料理方式調味。撒上蔥花或山葵、紫蘇等、也可將白蘿蔔切細絲狀或添加一些柴魚非常適合。不同的店家或家庭創造出自己獨特原創的口味。雖然最好的賞味期是秋冬時節，但幾乎整年店裡都有販賣，所以推薦無論到哪家店都先點來嚐嚐比較看看唷！

Saba Mirin: The Fukuokan Standard!

Of course, raw is not the only way to enjoy saba in Fukuoka. Restaurants offering set meals will afford you the chance to try one of the many other delicious ways the fish can be prepared. Japanese people love set meals, simple combinations of rice, miso soup and a main dish. Many set meal restaurants offer saba-based meals, but the most “Fukuokan” of them all is saba mirin. This dish is made by soaking saba in a mixture of soy sauce and mirin, then letting it dry and serving it with rice. The sweetness of the mirin counters the richness of the fish, making for a delightful dish. In Tokyo and other regions of Japan, people are not accustomed to eating sweetened dried fish, so saba mirin is a popular souvenir among out-oftown visitors. You can find it easily in the basement of any department store (where foodstuffs are typically sold). Other popular dishes include shio saba (salted dried saba) and saba simmered in miso.

便宜又好吃的平民好夥伴白飯的最佳絕配「鯖魚」

當然在博多不光只能吃生的鯖魚而已。在「鯖魚」文化很深的博多，在街上都能隨意品嚐到各種手法調理而成的鯖魚料理。最能充分感受到的就是街上的定食餐廳；白飯配上味增湯及小菜，這些日本人不管是誰從小就吃習慣的定食組合，是日本美食的原點。幾乎每家店的招牌料理都是鯖魚，其中最有博多風味的一道菜就是「味醂鯖魚」。使用醬油及味醂製成的醬醃漬成魚干，將甜味和鯖魚的鮮美合而為一，配上白飯是一口接一口。在關東等地區沒有吃甜味魚干的文化，因此是非常熱門的博多伴手禮；在百貨公司的地下食品街都買得到；其他像是「鹽味鯖魚」或「鯖魚味噌煮」等，也都是超人氣的定食配菜。

SABA SANDWICH

SABA MENTAI

One dish that has become more common in recent years is the saba sandwich. Mackerel sandwiches, which are popular in Turkey, seem to have found a new home in Fukuoka, and their popularity is on the rise. The sandwich in the photo is from City Bakery, located on the second basement floor of Solaria Plaza. The saba, which is flavored with curry, comes in a sandwich with red cabbage.

Saba mentai is a fusion of saba and Fukuoka’s most well-known souvenir, karashi mentaiko (spicy cod roe). Although the naming is slightly different, each karashi mentaiko maker has its own version of saba mentai. This unique combination of two local favorites has become a popular souvenir in its own right.

『鯖魚三明治』

SABA MISO Tatsumi Sushi, a famous purveyor of sushi on the second basement floor of the Iwataya department store, sells saba miso—a paste of mackerel sashimi and miso. Fresh-caught saba is blended with miso and raw ginger, and the concoction goes great with a steaming hot bowl of rice. It can also be eaten as is, making it a great partner for sake, or be used as a dip for vegetables. Available at Iwataya Main Building.

『味噌鯖魚』

在最近數年間，已經能看到咖啡廳或烘焙坊在賣鯖魚三明治，說到鯖魚三明治的話最有名的當然是土耳其了，但是特愛鯖魚的福岡也將它引進，並且變成一種風潮。照片是位於 Solaria Plaza 地下二樓的「City Bakery」販賣的鯖魚三明治，是用紫高麗菜夾上咖哩風的鯖魚的三明治。

최근 몇 년 동안 카페나 베이커리 등에서도 만 나 볼 수 있게 된 사 바 샌 드 . 고등 어 를 끼 운 샌드위치로 유명한 곳 은 터키이지만 고등 어를 좋 아하 는 하 카타 에서도 서서히 유행하기 시 작 했 습 니 다. 사 진 은 솔 라 리아 플 라자 지 하 2층 시티베이커리의 사바샌드. 적채 위에 카레맛고등어를 얹고 이를 빵으로 감쌌습니다.

『鯖魚明太子』

是由標準博多伴手禮「辛子明太子」搭配上鯖魚而成；名稱雖然多少有一點點不一樣，但是同樣是會在辛子明太子的店裡看到的商品。「鯖魚明太子」簡直就是，名產 × 名產的超完美演出。肥美鯖魚和微辣辛子明太子的絕配組合，已經變成超人氣的博多伴手禮。

사바멘타이

전 국 적 으 로 유 명 한 후 쿠오 카 명란 젓 ‘카 라시 멘타이코’와 고등어가 만난 사바멘타이. 명칭은 저마다 다르지만 같은 상품을 명란젓을 판매하는 가게 에 서 만 나 볼 수 있 습 니 다. 명 물과 명 물 이 만난 기적의 콜라보레이션인만큼 여행 선물로도 인기가 좋 습니다. 살 에 기름 이 오른 고등 어와 매콤한 명란젓이 환상의 조합을 선보입니다.

在百貨公司「岩田屋」地下 2 樓的「Tatsumi 壽司」所販賣的「老爸的味噌鯖魚」；「Tatsumi 壽司」是不使用醬油而用鹽或柑桔來提味的博多壽司名店。店裡用新鮮的鯖魚加入生薑、味噌做出的「味噌鯖魚」和熱騰騰的白飯相當搭配；直接當做下酒菜或拿來沾小黃瓜等等的生菜也很棒。

사바미소

백화점 이와타야 지하 2층 타츠미스시에서 판매 중인 ‘오야지노 사바미소’. 타츠미스시는간장에 찍지 않고 소금이나 영귤 등으 로 맛 을 내는 초밥으로 유명한 하카타의 맛집입니다. 신선한 고등어 살과 생강, 된장 등을 버무린 사바미소는 따 끈따 끈한 밥과 찰떡궁합. 그대로술안주처럼 먹어도 좋고 오이 등의 채소를 찍어 먹을 수도 있습니다.

FUKUOKA’S SPECIAL SWEETS Fukuoka is home to many famous Japanese sweets. During the Edo era, Nagasaki was the only port from which the invaluable commodity of sugar entered Japan. Since the Kuroda Clan of Fukuoka was in charge of protecting Nagasaki, it was granted special permission to purchase sugar directly from the merchants. The popular sweets of this bygone era have undergone a few changes, but the people of today still know and love them.

후쿠오카 명과

후쿠오카에는 예로부터 여러 명과가 전해져 내려오고 있다. 에도 시대, 귀중했던 설탕이 해외에서 일본으로 들어오는 유일한 창구는 나가사키였다. 그 나가사키의 경비를 담당했던 후쿠오카・쿠로다번은 설탕을 직접 사들일 수 있는 특권을 가지고 있었다. 당시 귀중했던 설탕으로 탄생한 후쿠오카의 명과는 때로 현대적인 모습으로 변신하면서 시대를 넘나들며 사람들의 사랑을 받아왔다.

福岡銘菓

福岡從以前就流傳著各式各樣的銘菓 ( 著名甜點 )。江戶時代時，從海外輸入貴重品砂糖的唯一門戶就是長崎。當時負責鎮守長崎的福岡 ‧ 黑田藩眾們，掌握著能夠直接購買砂糖的特權。使用當時珍貴的砂糖孕育而生的福岡銘菓，隨著時代推演變成現代風的姿態，超越時代並被人們喜愛。

Saemon: Hakata Burabura The basic building blocks of traditional Japanese sweets are an (bean paste) and mochi (glutinous rice). A simple combination of these two ingredients, the Hakata Burabura is the archetype of Japanese sweets. But as simple as it may be, the secret of this confectionery’s long-standing success lies in the dedication to maintaining a consistent flavor. The whimsical package design features a kasahoko (lit., “umbrella pole”), a kind of hand-held float that was used in the Hakata Matsubayashi, the precursor to the Hakata Dontaku. According to lore, those who walk under the kasahoko will achieve perfect health. Hakata Burabura were first produced in 1974 to commemorate the extension of the Shinkansen bullet train to Hakata Station in 1975. They are made by Saemon, a traditional sweets maker that’s been in business since 1929.

Ishimura Manseido: Kenjo Tsuru no Ko Tsuru no Ko are egg-shaped white sweets with a marshmallow outside and a center made from yellow an. In fact, you might mistake them for real eggs at first glance! These sweets, which have been in production for over 100 years, were first made as a means to use up the egg whites left over from other sweets. Kenjo Tsuru no Ko are the highest quality products in the Tsuru no Ko lineup. Since the Meiji era, they have been presented to the Imperial Family as exemplars of Hakata sweets, and the production method remains unchanged to this day. Each sweet is handmade by veteran confectioners using only the finest of ingredients. Founded in 1905, Ishimura Manseido is a long-standing confectioner that offers a wide variety of both Japanese and Western sweets.

Hiyoko Hompo Yoshinodo: Hiyoko One glance at the cute chick-shaped Hiyoko sweets is sure to make you smile. Popular with people of all ages, these sweets from Fukuoka are now known and loved nationwide. The second generation owner of the shop, which was established in 1897, is said to have come up with Hiyoko after seeing a chick in a dream. After some trial and error, the Hiyoko as we know it was “hatched” in 1912. In an era when sweets were typically either round or square, the realistic, chick-shaped Hiyoko turned the industry on its head. The inside is made from egg yolks and string bean an, while the outside uses a special flour ground and milled right here in Kyushu.

Josuian: Tsukushimochi This mildly sweet mix of kinako (soy bean flour) and brown sugar syrup comes in a package that looks like it has been wrapped in a tiny furoshiki (traditional wrapping cloth). Since it was first created in 1977, Tsukushimochi has remained popular for its elegant presentation and refined flavor. The mochi is made from carefully selected rice and water, and the kinako flour is made from the rare Tamahomare soy bean. The brown sugar syrup is packaged separately, so you can add as little or as much as you wish. The president of Josuian, Kojiro Mori, says the sweet is based on his grandmother’s homemade kinako-mochi. In the 1830s, the precursor to Josuian, which was also run by the Mori family, used to make sweets for temples and shrines. The current company was renamed Josuian, borrowing its name from another name used by Fukuoka’s founding father, Kanbei Kuroda.

Chidoriya Honke: Chidori Manju Simple yet delicious, the Chidori Manju is the trademark sweet of Chidoriya Honke. Consisting of a sweet paste of white string beans wrapped in a baked crust, you’ll find it tough to stop at just one! Founded in 1630, Chidoriya was one of the first local confectioners that learned how to make Portuguese sweets like castella and bolo—the latter of which it tweaked to make an original round cookie, the maru-boro. The name Chidori Manju was taken from a classical Japanese poem about Sugawara no Michizane, a Heian-era scholar who was later deified as the god of learning at Dazaifu Tenmangu Shrine. In Japan, chidori (in English, plover) have been considered lucky birds since olden times.

Toundo: Niwaka Senpei These crunchy, habit-forming crackers are modeled after the comical masks used in the Hakata Niwaka, a style of traditional improv comedy performed at dinner parties or on the street. Niwaka Senpei first went on sale in 1906. They were conceived when the head of Hakata Station asked the president of Toundo if he could provide a “Hakata-esque” souvenir. The crackers are made from locally grown flour and fresh eggs, and the subtle yet delicious flavor harks back to a simpler time. Each package comes with a cardboard Niwaka mask, which is sure to evoke good memories of your time spent in Hakata.

Fugetsu: Yuki Usagi The Yuki Usagi is a popular rabbit-shaped sweet consisting of white bean an wrapped in marshmallow. The red and white rabbit is a symbol of good luck taken from a folktale associated with Sofukuji Temple. According to the tale, a Buddhist monk who was studying in China rescued a rabbit and took it with him on the boat back to Japan. The boat encountered a violent storm, and when it was about to go under, the rabbit jumped into the ocean and calmed the storm, allowing the boat to continue safely to Japan. Fugetsu first opened as a cafe in Tenjin in 1949. It later expanded into the restaurant business, and began making and selling Western-style sweets and breads to accompany its cakes and other offerings. The now popular Yuki Usagi was born in 1965.

Royal Apetito: Sweet Potato Royal was one of the first restaurants to successfully adopt Western culinary culture back when Western-style sweets and foods were still rare in the area. Its trademark Sweet Potato has been a best seller for more than 60 years. This delectable sweet makes the most of the natural sweetness of sweet potatoes, which are grown in Kagoshima, and the cream, butter and eggs are also made in Japan. What’s more, it contains no preservatives or artificial colors. Royal’s founder, who had ties to the occupying U.S. forces in the 1950s, was a pioneer in the restaurant industry. He expanded his business on the back of catering contracts with JAL for their domestic terminals and in-flight meals.

npanman is part of every Japanese family; based on the illustrated books by Takashi Yanase, this beloved hero has been on TV since 1988. In his world, he offers pieces of his head (made of bread filled with anko, sweet red bean paste) to those in need and spreads love and courage. The museum is conveniently located in central Fukuoka, inside the modern Hakata Riverain complex. It is the fifth Anpanman Children’s Museum in Japan, and the first in Kyushu. There’s so much to see, do and taste, with performances, workshops, activities, souvenir shops and delicious Anpanman food and drinks!

Welcome to Yamakasa - Welcome to Fukuoka! You’ve probably already spotted some half-naked men running around town. These men in loincloths are participants in Fukuoka’s most anticipated annual festival, Hakata Gion Yamakasa. The highlight of the festival kicks off at exactly 4:59 am on July 15th, when thousands of men from seven districts race through the streets carrying decorative, one-ton floats. Spectators line the streets cheering them on by shouting “Oisa! Oisa!” and splashing them with water to keep them cool. Although the teams are timed, the event is not considered a race. The most successful team must exhibit cooperation and solidarity. This teamwork is not limited to just the runners. Local townspeople also participate by preparing for the festival and building floats almost a year in advance. We hope you’ll find this special map of use on the morning of the 15th. Don’t sleep in, and if you bring a camera, have a plastic bag handy because it gets really wet!

Since the final Oiyama race is spread out over a 5 km route, there’s no bad place to watch the event, but here’s our top tips on where to get the best view:

Take It All In

Try Higashimachi-suji, the street parallel to Taihaku-dori: it slopes down toward the port, so a spot near the bottom at the intersection with Meiji-dori allows for a nice view of the floats coming from quite a distance away. Be careful, though, as the street is quite narrow!

Double the Fun

The intersection of Showa-dori and Taihaku-dori is a good place to see the floats more than once. Catch them a second time as they race down parallel streets.

Gentlemen, Start Your Floats

If you want to watch the race from the starting line, stake out a spot in front of Kushida Jinja Shrine no later than 4 am (the earlier the better). After watching three or four starts, move to another place along the route for a different view.

Avoid the Crush

If you hate crowds or can’t manage waking up so early, try and catch one of the pre-Oiyama race events. Usually held in the late afternoon hours, they are less crowded than Oiyama. The stronger afternoon light also makes it easier to capture the action on camera.

Hakata Gion Yamakasa Gion Manju

Every year in July, it is tradition for families in Hakata to share Gion Manju to keep them safe from harm during the Yamakasa period. Bearing the sacred symbol of Gion Shrine, this sweet continues to be beloved by Hakata locals as a good-luck charm and a vital part of Yamakasa.

Ishimura Manseido, a part of Hakata history. Our main store is right on the Yamakasa finish line. 2-1 Susakimachi, Hakata-ku, Fukuoka: this is and has been the address of our main store for generations. It also marks the so-called boundary of old "Hakata" and "Fukuoka", and the goal (finish line) for the Oiyama, the climax of the Hakata Gion Yamakasa run in the early hours of July 15. This year, once again, the dedicated men of Yamakasa will run past our store. The Ishimura Manseido main store will be open from 4am on the morning of Oiyama, July 15.
